“I am extremely proud to be Canadian and being able to celebrate the food of those around me is a very satisfying achievement. For me to create a dish and say ‘Oh these beets were grown in Milton, and this Goat Cheese came from Woolwich, and these organic sprouts were grown in the Niagara Region and these apples came from Chudleigh’s Farm,’ I say that with a strong sense of pride.”

John shared that the team is very committed to paying a high level of respect to each ingredient they use and where those ingredients come from. They truly enjoy getting to know each member of their local network and have developed strong and loyal relationships with a number of farmers, suppliers and purveyors nearby.

Canadian cuisine and buying locally are two of the driving goals behind their company. SUMMER 2016

“It’s a mutually supportive dynamic. We support their business and they support ours,” John elaborated. When planning an event with a larger number of people in attendance, John said it is crucial to keep a few key items in mind. The first might seem obvious, but it is often overlooked. It is important to understand your demographic and who will be eating the food. This goes hand in hand with number two, which is to create a balanced menu. “For each course, we recommend having a balanced variety of beef, seafood, chicken, vegetarian and gluten-free options to offer. They say you can’t please everyone, but we beg to differ on that. Now more than ever we encounter a wide range of allergies and intolerances to food, so we operate on the basis of always being prepared for these. We want to ensure guests with dietary restrictions get to enjoy their experience just as much as the person next to them,” John explained. The third thing John stressed to keep in mind is quantities. Having too much food is better than not having enough. Accurately predicting how much you will need is difficult, but when you have as much experience as John, Stefan and their team do, it becomes much easier. John and Stefan Catering is hired for everything from wedding ceremonies to family birthday parties to corporate events. The team started out working with mostly residential clients, but through nothing more than word of mouth, they have quickly gained recognition throughout the Greater Toronto Area as a highly-skilled catering company for any occasion. “It really is unbelievable to look back on our growth and how quickly its happened. We could not be more grateful to our local partners and clients for the part they’ve played in our success. Our next step has been our dream since we were just kids. We want to open a place of our own. A great spot right here in Oakville that we, and others, can call home,” John said.

Our MAIN goal for the business has always remained the same. We want to provide a very customized experience to our clients.

Since they began their journey in the culinary industry, this dedicated duo has always dreamt of owning their own restaurant. The vision for their space is gastro pub inspired. A gastro pub is a restaurant that specializes in high-end beer and bistro-style cooking. “It’s comfort food, if you will,” John explained. The premise will be to incorporate some fan favourites they’ve developed over their years of catering, and have both menus and beer and wine lists that change weekly. They want to craft an atmosphere that is relaxing but, as the night draws on, becomes entertaining and exciting. “It’s all about creating an ambiance for guests that is unlike any other spot in town. By: Erica Nelson I myself am not a parent, so I would never speak to the feelings or thoughts that mothers and fathers have on a daily basis. The hopes and dreams they must have for their children, the fear they must feel when their child walks out the door everyday; consistently praying for their well-being and that they make the right choice when life presents them with a difficult decision. I imagine this to be incredibly overwhelming at times. And, unfortunately, strong and dedicated parenting can only go so far. Sometimes things outside of their control take over.

utton B n i m enja B . .a .k dy A n When Chase Sandy was only four years old, his a S e parents Jeff and Tamara heard the four words that all parents Chas dread, “Your child has cancer.” It was February 20th 2010, a date the Sandys will never forget, that Chase was diagnosed with Stage III Nephroblastoma (aka Wilms’ Tumour), which is cancer of the kidney. The life they had brought into this world, and cared for deeper than anything in their lives prior, was now in danger.

Chase and his parents were embarking on the hardest battle they may ever have to fight. For Chase, bike riding, hide-and-go-seek and recess had now been replaced with chemotherapy, surgery and countless visits to the hospital emergency room. This is a life no child deserves to live. In the first 7 days of his diagnosis, doctors confirmed that the histology of Chase’s tumour was favourable, which meant he had very high chances of survival. Chase began his chemotherapy almost immediately and received treatment weekly for the following four months. It was after these four months that specialists felt his tumour was small enough to operate on. Dr. Helene Flageole and her team at McMaster Children’s Hospital performed Chase’s surgery to remove his left kidney. The surgery took a total of 10 hours, but Chase’s parents described it as a lifetime. Chase was in the Critical Care Unit for several days following his surgery, which was then followed by a week of radiation therapy at Juravinski Hospital in Hamilton.

The next five years of the brave child’s life were constricted by quarterly visits to McMaster for blood work, CT scans, ultrasounds and ECGs. Due to the chemotherapy Chase underwent, he will be monitored the rest of his life to ensure there is no damage to his heart. But for Chase, Jeff and Tamara, none of this really matters. All that matters is that he is still here, brightening the days of those around him with nothing more than his smile and quick wit.

Since their journey began, the Sandy family has wanted to do something to give back to those in need like they were. Tamara says she and Jeff were incredibly lucky to be surrounded by supportive friends and family since day one of Chase’s incredible story. Their employer, Halton Region Police Service, was extremely accommodating to the two parents. Tamara’s work partner, Andy Forde, spent six months changing his shifts around to help ensure Tamara could be with Chase whenever she needed to be. The entire team at Halton Regional Police Service organized a collection to provide financial support to the Sandy family. Seeing their friends, family and community come together to help support them during their tumultuous year really inspired Tamara, Jeff and Chase. This year I was lucky enough to attend a yearly fundraiser called Chase’s Gift.

We watched so many families at McMaster struggle financially. Some had to quit their jobs to be there for their children. We knew how lucky we were during our fight against cancer with Chase. We wanted to help other families in our area,” Tamara shared. Since 2014, the Sandy family has worked with friends, family and other members of the community to organize a toonie auction and raffle event in Burlington, ON.

“This entire experience has turned Chase into a very compassionate young man who is able to empathize with people on a very high developmental level. He’s been nicknamed Benjamin Button by a friend for his ability to talk to adults,” Tamara explained. The funds collected through the fundraiser are distributed to a number of causes that help families like the Sandys. This past year, a portion was given to Camp Trillium, a year-round recreational experience for children with cancer and their families. A large portion was allocated to individual families who need assistance financially. In some cases, the parents are receiving unemployment insurance and/or did not have a benefit plan through their work to assist with medication costs, etc. In others, the child battling cancer is from a single-parent family, and the financial support from Chase’s Gift would allow the parent to cover some of his/her household expenses directly. The rest of the funds were used to purchase gift cards for other families of McMaster Children’s Hospital to help pay for hospital parking, fuel for their cars, meals, etc. No parent or child should have to endure the fight the Sandys have fought. No child should have to spend an entire year of their life inside a hospital, wondering when they’ll get to run around with their friends again. But should anyone encounter adversity such as Chase and his family, let us hope they turn it into as positive an experience as they have.

The event has been appropriately titled Chase’s Gift. This night was unlike anything I have ever experienced. Watching over 300 people come together to support a cause as honourable and admirable as this one was a truly moving experience. The night was filled with nothing but positivity, and it was Chase that exuded the most positivity of all.
