iving in the countryside affords us the luxury of realising that every season has its own unique charm. Winter, whilst damp and cold, at least brings a countryside bejewelled with crystals of ice, cosy nights by the fire and of course, a large glass of red in hand, alongside the enjoyment of hearty winter food. Speaking of food, we’re delighted to announce this year’s Good Food Awards winners, including our flagship Restaurant of the Year title. Just a reminder that our readers have voted for their favourite places to dine across the county, and were free to vote for whoever they wished, with no commercial bias, making them the most comprehensive and trustworthy titles in the county.
One of Lincolnshire’s most famous sons is Tennyson, who also had a taste for good food and wine. We’re presenting three of his winter poems in this edition with some pictorial examples of why winter is one of our favourite seasons. Elsewhere we investigate a cookery school with a difference, looking at the most stylish ranges from country brand Fairfax & Favor and we’re taking a trip back 100 years to see what life was like on Lincoln’s High Street in 1920! LINCOLNSHIRE Lincolnshire horse racing coach Sue Ringrose has been selected as a finalist for the Uk Coaching Awards. The showpiece event, held at The Tower Hotel London, celebrates the outstanding work of a diverse network of coaches who promote healthy and active lives, unlock potential and provide a platform for people to thrive. nominated in the Coach developer of the Year category, Sue Ringrose has been instrumental in embedding a coaching culture within horse racing, with coaching currently provided to over 90% of apprentice and conditional jockeys. placing technical innovation at the heart of her coaching, she uses racehorse simulators, video race replays and coaching apps and has, in the last 12-months, trained over 50 coaches to pass their coaching qualifications with a 100% pass rate.

Eagle-eyed viewers watching actor Timothee Chalamet playing Henry v in new Tv drama The king may also see a cameo from Lincoln’s Cathedral Quarter. That’s because the city was used as a filming location for the production, with the Cathedral itself used to stage a recreation of the king’s coronation. The series is loosely based on Shakespeare’s Henry iv and Henry v plays, and stars Timothee Chamalet, Great Gatsby actor Joel Edgerton, Twilight star Robert pattinson and Lily-Rose depp, daughter of Johnny depp. The film was directed by Hollywood’s Brad pitt and the series will stream on netflix this winter. The king is set to be one of the Tv provider’s most popular releases in 2020. n

Alfred, Lord Tennyson
Alfred, Lord Tennyson, former Poet Laureate was born in August 1809 in Somersby. The author of Charge of the Light Brigade, and In Memoriam, Tennyson was one of Britain’s most popular poets. He was selected Poet Laureate in succession to Wordsworth. In Memoriam is a poem by the British poet Alfred, Lord Tennyson, completed in 1849. It is a requiem for the poet's beloved Cambridge friend Arthur Henry Hallam, who died suddenly of a cerebral haemorrhage in Vienna in 1833, aged 22. It contains some of Tennyson’s most accomplished lyrical work, and is an unusually sustained exercise in lyric verse. It is widely considered to be one of the greatest poems of the 19th century, as well as a highly personal lament following the death of his best friend who was rumoured to also be his lover. The original title of the poem was The Way of the Soul. The poem was especially read by Queen Victoria after the death of Prince Albert in 1861. A bronze statue (erected in 1905) of Alfred, Lord Tennyson, by George Frederic Watts, shows the poet looking at a flower in his hand and with his Siberian wolfhound (borzoi) Karenina at his side, stands in the grounds of Lincoln Cathedral. The Tennyson Society exists to promote the study and understanding of the life and work of Alfred, Lord Tennyson. It has a world-wide membership. Founded in 1960, its president is The Lady Willoughby de Eresby. n

Asking our readers to name the ‘best’ restaurant in Lincolnshire’ is a pretty broad brush stroke. We’re a large county, for a start, and tastes & preferences differ dramatically. That’s why, last year, we decided to change our categories to ask for a few more specific recommendations and perhaps why, this year, we see more pub restaurants in more specific categories and more ‘fine dining’ oriented venues reflected in our list.
Top of the list is the excellent Jew’s House. Having trained at the Wig & Mitre and then Winteringham Fields under the epic Germaine Schwab, Gavin Aitkenhead and partner Sam opened The Jew’s House in 2006.
Gavin’s food is so beautiful and well-executed it’s almost guilt-inducing to eat it. It’s Michelin quality but without the pretentiousness, and different enough from typical restaurant menus, making it seem as if more effort and creativity has gone into creating his dishes. The place, the food and the couple themselves are lovely. Definitely a well-deserved win. 24
Winteringham Fields as always features in our list. With its out of the way position in the far north of the county, its owners Colin & Bex McGurran provide an à la carte dining experience during lunchtime service and a mandatory eight course menu surprise with optional flight of wine.
Colin is a keen advocate of foraging and has also curated possibly the finest cheese trolly in the county, in between his appearances on TV. Meanwhile, North Lincolnshire is also home to the Pig & Whistle, offering dining excellence courtesy of The Lincolnshire Chef, Stephen Bennett.
Another well-known Lincolnshire chef is Paul Vidic. Having set up, or put on the map, different Lincolnshire pub restaurants, The Bell at Coleby has been his lair since 2011. It’s excellent, naturally.
A dining sortie to the south of the county, too, to visit The George at Stamford. Traditional, luxurious, with lovely service and that oak-panelled dining room. Timeless. n

Commended is the marco pierre-White affiliated doubletree by Hilton Steakhouse with its 35-day aged steaks, chateaubriand and t-bone options.

In what’s likely to be one of the most debated categories in our list, the Best Sunday Lunch title in our awards goes to norton disney’s Green man. Until recently the restaurant was run by Becky pinfold and matt kerekes, and very popular it was... especially for Sunday lunch. Since our voting closed, however, the pub restaurant has come under the management of the building’s owner.
We hope that its provision of its Sunday Lunch will continue to be as good; the new owners have promised us an even higher quality dining experience, which is a really compelling prospect! Stamford’s George Hotel, then, remains our readers’ next recommendation. The hotel’s British Sirloin is carved at your table, pink and succulent, served with homemade horseradish and a huge Yorkshire pudding ... perfect. Step up Friskney’s Barley mow, and Bassingham’s Five Bells, as well as Boston’s Supreme inns, each of which are commended by our readers in our awards. n

Fans of seafood should certainly make a pilgrimage to Scunthorpe in 2020 as the town’s San pietro has been voted the county’s best restaurant for fish.
Owner and Chef patron pietro Catalano’s mediterranean heritage shines through with great dishes prepared by him and Head Chef Chris Girst. italian cuisine - specifically pietro is from Sicily - is predicated upon freshness and vibrancy; good qualities for a fish dish. during our visit, San pietro’s menus offered king scallops, bream with brown crab and fennel risotto and soft shell crab or a roast hake and mussel ‘bouillabaisse’ style dish.
meanwhile, The pig & Whistle at Healing, is not too far away and closer to the spiritual home of fish in England; Grimsby. its menus offer a mussel risotto, smoked haddock or half pint of prawn starters, plus scallops and oxtail or smoked haddock fishcake main courses.
There’s also an Oscar Cleeves sourced fish and chip dish on the bar menu and Chef patron Steven Bennett works with premier Seafood and Seafish to promote local fish.
Everyone has their favourite chippy, but Lincoln favourite Burton Road Old English Chippy was voted the Uk’s second best restaurant in the national Fish & Chip Awards, making this takeaway and restaurant worth a visit if a more traditional fish dish is on your wish list. n 31

Debate desserts and you basically split the nation into chocolate versus fruit... with vanilla as a sort of common ground. To our mind, the best pubs and restaurants are those which offer both a thick, rich, gooey chocolate offering as well as something more refreshing and tart on their pudding menus.
Bicker’s Red Lion reopened in autumn after a six month hiatus following a kitchen fire caused by an electrical fault. Thank goodness the place is once more available to diners, because it’s gloriously rustic, provides great food and is utterly rewarding to visit. dessert wise, we’ll point you towards its sticky toffee staple, or its apple and blackberry strudel; caramelised and delicious.
Also commended is the ‘almost too good to
eat’ desserts at Winteringham Fields, which verge on molecular gastronomy from a Green Apple Baked Alaska to a chocolate soufflé which is well-executed, and presented with a milk sorbet and chocolate praline flavour.
Step forward The Brownlow Arms, too, with classic desserts like crème caramel and triple chocolate brownie - simple but well produced and more-ish.

Forever Flowing
BuBBleS is month Carissa Smith explores the finest fizz and raises a glass to Dom Pérignon in the spiritual home of Champagne, the Abbey of St. Peter in Hautvillers... Words: Carissa Smith.
Champagne is synonymous of luxury, a drink to mark those special life moments. many people use the term Champagne as a generic term for sparkling wine however Champagne more accurately describes wine produced in the designated Champagne wine region in northeast France and created using méthode champenoise. Of all the Champagnes there is one name which is truly iconic – dom pérignon. dom pérignon is one of the most recognised Champagne brands of all time, named after Benedictine monk dom pierre pérignon. Legend has it on the 4th August 1639 Benedictine monk dom pierre pérignon invented champagne after tasting the results of a botched batch of wine, with his famous statement, ‘Come quickly, i am drinking the stars!’ Sounds to us like he’d already had enough...
master at the Benedictine Abbey in Hautvillers, not far from Epernay in the Champagne region of northeast France. Hautvillers is thus generally considered to be the birthplace of Champagne.
Since bubbles in wine occur naturally, nobody could be really be credited with the invention of sparkling wine. However dom pérignon perfected the art of producing a clear white wine from black grapes by clever manipulation of the presses; enhancing the tendency of Champagne wines to retain their natural sugar in order to naturally induce secondary fermentation in the spring... and dom pérignon was a master at deciding when to bottle these wines in order to capture the bubble.
Sparkling Conversation
The monk also introduced cork fastenings, instead of wood which was originally used to seal the bottles. The cork were fastened to bottles with hemp string soaked in oil in order to keep the wines fresh and sparkling.
Prosecco from the Veneto region of Italy and Cava from Catalonia and English sparkling wine - all use méthode champenoise, but can’t be called Champagne as they lack the latter’s Geographic Indication status.
Like many historical claims, unfortunately ‘the night they invented champagne’ is more fiction than fact and the first documentation of this statement was published in a Champagne advert dating from the 1880s, rather than the 17th century.
However, while as the date of the invention of Champagne may be unknown we do know dom pérignon made an enormous contribution by developing the techniques that finally produced a successful white wine from red wine grapes, something vintners had been trying to accomplish for years. dom pérignon (1963-1715) was the cellar
The first vintage of dom pérignon was produced from the grapes of 1921 and was only released for sale in 1935. in 1935, 300 bottles of a 1926 vintage precursor to dom pérignon were sold to Simon Bros. & Co., the company that imported moët to Uk.
While these bottles were almost identical to the subsequent dom pérignon releases, they did not display the dom pérignon name, rather ‘Champagne specially shipped for Simon Bros & Co’s Centenary 1835-1935.’

“dom pérignon is a prestige cuvée, or tête de cuvée, which is the top Champagne that a producer will make. dom pérignon is always a blend of pinot noir and Chardonnay.” >> The wine received immediate attention in the marketplace and 100 boxes of the 1921 vintage were shipped to the United States shortly thereafter, this time displaying the dom pérignon name.
Until the 1943 vintage, dom pérignon was produced from regular vintage moët & Chandon Champagne that was transferred to the special 18th century-style bottles after extended cellaring. it was, thus, effectively an ‘oenothèque’ release of moët & Chandon vintage Champagne in a different bottle. From the 1947 vintage, dom pérignon has been produced separately from the start. dom pérignon is always a vintage Champagne. To be a vintage each bottling contains grapes only from a single year, showcasing that vintage’s unique characteristics. Thus, means dom pérignon is not made in weak years.
From 1921-2009 dom pérignon Champagne has been produced in 42 vintages. Richard Geoffroy, who is the current chef de cave of dom pérignon and has been since 1998 will only make and release the wine in vintages that will age more than 20 years. As a rule, Richard produces no more than six vintages each decade. dom pérignon is aged for a minimum of seven years in bottles before release, but some releases are aged for much longer. dom pérignon releases each vintage three times. The first release is typically around
nine years, the second around 18, and the third around 25.
This ageing gives the wine complexity and richness. most bottles of dom pérignon are first-release bottles, but if a bottle has ‘p2’ or ‘p3’ on the foil, you’ll know that it’s a second or third release, respectively. As of September 2019 the current release of dom pérignon is from the 2009 vintage. The number of bottles produced in each vintage is not precisely defined, and the production numbers are a guarded secret but educated guesses are around four million bottles per vintage. in 1959 a rosé version of dom pérignon was first produced. The rosé is often more expensive than the standard dom pérignon, and 26 Rosé vintages have been produced until 2006, with the 2006 vintage being the current release.
dom pérignon is made by moët & Chandon and the quality comes from specific vineyards and the fact they choose whether to make the wine each year. dom pérignon is a prestige cuvée, or tête de cuvée, which is the top Champagne that a producer will make. dom pérignon is always a blend of pinot noir and Chardonnay.
The percentage of these two key grapes changes from vintage to vintage however is it usually somewhere between 50/50 & 60/40 favouring one of the grapes. Each bottle of dom pérignon always contains a blend of grapes from the original plot in the Abbey of Hautvillers and grapes from Grand Cru vineyards, all from the Champagne region. dom pérignon has the perception of being the best; it is unique, delicious and expensive. The most expensive bottle of dom pérignon is the 1959 vintage. This bottle is now very rare and finding one is like a searching for a needle in a haystack. The last bottle of 1959 dom pérignon sold for just over £33,000. n

Drink it Like a SOmmELiER ADVICE ON HOW TO ENJOY CHAMPAGNE AT ITS BEST...!
Richard Geoffroy, the long serving chef de cave of Dom Pérignon prefers to drink Champagne from a proper crystal stem glass as it gives the wine room to expand rather than a flute tulip or other dedicated champagne wine glass. Champagne mustn’t be served too cold. Around 10 degrees is the ideal temperature, even up to 12 degrees, as it allows the aromas to fully express themselves. You do not remove the foil around the cage of champagne, as bottles have a traditional antique foil which is meant to remain adhered to the bottle. Instead, just pull the tab through the foil and remove the cage as if the foil were not there. Everybody knows Champagne and salty food go hand in hand. Moët & Chandon cellarmaster Benoit Gouez says, “If you want to fine-tune a match with Champagne, you have to play with salt.” The reason is salt and fat tend to coat the palate; Champagne bubbles help to break these flavours up. Benoit adds that foods with a lot of texture, like crunchy chips or tiny beads of caviar, mimic the wine’s bubbly nature and can make the drinking experience more enjoyable, ensuring salty food is always a safe pairing for Champagne. n

100 years of history. Welcome to Lincoln’s High Street in 1923. note the neater stucco frontage of the row of buildings currently occupied by Hotel Chocolat and Samuels the Jewellers. Less recognisable is number 300 High Street.
That glazed and iron portico is long gone, as is The Saracen’s which dated back to the middle ages but was given the frontage pictured here at the start of the 19th century. Shortly after this picture was taken, the Spread Eagle in 1924 became the Hotel de Luxe, named by flush entrepreneur H H Leven who spent £20,000 doing the place up.
doubtless the economic depression of the 1930s took its toll and the hotel passed into the ownership of Lincoln Hotels Ltd, the latter finally closing in 1959... our sincere thank to Steve Richardson of Lincoln Camra who provided this insight.
You’ll also notice Home & Colonial Tea Stores. The grocer was founded in 1883 on London’s Edgware Road and by 1900 it had 100 stores. By 1903 it had five times that many, making it and the CoOp perhaps the first supermarket chains. By 1960 Home & Colonial still had a presence on the Uk’s High Streets and was making profits of £4m, but through the latter half of the 20th century, it was amalgamated into companies we now know as debenhams and Safeway. Lincoln’s Waterside Shopping Centre opened in 1991, but here, you’ll see footwear retailer manfield.
A renowned cobbler from northampton, moses manfield and his sons Harry & James were one of the first companies to ‘cut out the middleman’ and sell their footwear directly to the public. They soon had shops in London, Liverpool, manchester, Birmingham, Sheffield and London as well as Lincoln... in fact, 70 shops by the time this photograph was taken.
By the time the company was converted into a plc in 1950, there were 93 branches and the company’s overdraft was a worrying £760,000. There were record profits and eventually a takeover by US firm Sears in 1956. The name endured on the High Street until a management takeover which created the firm we now know as dolcis. Speaking of worrying overdrafts, HSBC bank can be seen just across the road from the Guildhall. The area was formerly known as Baxtergate, and was situated just outside the city walls. The bank used to be an inn called The Falcon prior to the mid-15th century - and once hosted king James i who attended a cockfight at the premises in 1617.
its name was changed to The Reindeer in 1716, before it was remodelled in 1848 and became The Lincoln & Lindsey Banking Company in 1893, then the London City & midland Bank in 1913. it was extended a year after this photo was taken by W G Watkins architects and became midland Bank in 1923, then HSBC in 1998. n

PLOUGH MONDAY HISTORY
Farmers have been ‘ploughing their own furrow’ for centuries, and celebrating the act of doing so with traditions like Plough Monday. is month we look at one of agriculture’s oddest and most anachronistic traditions, celebrating an activity that’s still right at the heart of farming... Words: Laurin Dempsey.
Nocton in Lincolnshire was recently the home of the 69th British National Ploughing Championships... just ahead, in fact, of Plough Monday, traditionally celebrated this month. The Championship took place in Lincolnshire in October at Nocton, near Lincoln, where more than 250 top ploughmen – and women – from all over Britain competed, on a site provided by Beeswax Dyson Farming. The first day of the event saw thousands of visitors and happy ploughmen in fine weather, despite rain the day before. However, the second day was a challenge when the weather changed overnight to rain which continued into the following afternoon and left walkways similar to what can often be seen at Glastonbury! Unfortunately the weather affected many parts of the event, with some competitors’ equipment unable to cope with the conditions, trade stands covered in mud and the steam ploughing engines sinking. However, spirits would not be dampened and ever smiling faces kept the great atmosphere going and a good time was had by all... fast forward a month or so and ploughing is also celebrate with the tradition of Plough Monday.
The tradition falls on the first Monday after the twelfth night of Christmas, which is also the night of the Epiphany. It marks the beginning of the English agricultural year and when ploughmen traditionally returned to the fields to prepare the Spring crops. In Medieval times it was common for ploughs to be blessed by the Church on Plough Sunday (the Sunday prior) before they returned. Still celebrated in some parts of the North and East of England, the tradition is to trail a plough around local houses to collect money to pay for a community feast. As agricultural work was scarce throughout the Winter months, farm labourers disguised themselves by blacking their faces with soot to get money by dragging their decorated plough around the larger houses in the villages. As they dragged the plough they would shout out ‘Penny for the Ploughboys.’ They were often accompanied by musicians, an old woman or a boy dressed as an old woman, called the ‘Bessy,’ and a man in the role of the ‘fool.’ >> Opposite: Jethro Tull’s inventive influence in the plough can still be seen today. His genius design allowed for grass and weeds to be pulled from the ground and left on the surface to die.

Agriculture is the oldest industry in the world – humans were ploughing fields and sowing seed before we could even write. Before ploughs, early farmers would use branches or sticks to create furrows on the surface of the soil for seeds to be sown. In a bid to become more efficient, man eventually invented purpose-built hand-held hoes. There is evidence of these being used by the ancient Egyptians some 4,000 years ago. Eventually, after generations, man also domesticated wild animals – and thus the animaldrawn plough was born – so that the camels, oxen or even elephants could do the difficult work while men lazed around being fanned by palm leaves. Ploughing has come rather a long way since those early days of sticks and oxen – but though the plough has evolved since the early simple scratch plough, its principle remains very similar. This device is still used in some parts of the world and does exactly what it says on the tin: its wooden frame is dragged through the topsoil, breaking it up to create a path to be planted.

Less fertile soil must be churned to bring nutrients to the top – which is where the nifty turn plough comes in; cutting down into the earth and turning the soil as it's dragged along by an animal.

Then came heavier iron mouldboard ploughs: these more heavy-duty tools would include a wheel – thus reducing the amount of time taken to plough a field and enabling workers to cultivate greater expanses.
With the Industrial Revolution came steam power – enabling ploughs to be pulled by machines, rather than horses or cows and high volume farming was born. In 1837 John Deere created the first steel plough – this was even stronger than the iron plough and thus able to work soil previously unsuitable for agriculture... though the basic principal of ploughing remains the same, today’s ‘horse power’ arms race between tractor manufacturers has ensured made this staple of agriculture is more relevant than ever before! n

While the specifics of each celebration may differ, it is the exchange of money which crops up again and again. it is thought that the money taken in by plough teams would help maintain a ‘plough light’ in the local church, but after the Reformation this tradition fell off and the money began to be used for festivities instead.
plough monday plays were popular in parts of Lincolnshire, nottinghamshire and East midlands. They were similar to that of Christmas mummers plays - mumming being best described as early pantomime. The plays are based loosely on the legend of St George & the dragon and are intend to show the struggle between good and evil.
Controversially these days, dancers may have their faces blackened or otherwise disguised. disguising the face in this way is well-known in English social history: men wishing to pursue proscribed activities would black their faces to avoid recognition: such activities could include both smuggling and morris dancing.
instead of pulling a decorated plough, during the 19th century, men or boys would dress in a layer of straw and were known as Straw Bears who begged door to door for money. The straw costume would often weigh about five stone! The tradition is maintained annually in January, in Whittlesey, near peterborough where on the preceding Saturday, the Straw Bear is paraded through the streets of Whittlesey. n
molly dances developed in East Anglia: these dances were performed in January, as part of the plough monday celebrations. The costumes worn by molly dancers are very individualistic, but largely based upon working outdoor clothes and hobnailed boots.

Traditionally, the new year is an opportunity to embrace a new challenge. Roughly two years ago, father and daughter nick and Steph received the keys of their new pub restaurant, the Cross keys at Grasby.

They opened the doors to customers eager to see what the new owners have made to the pub restaurant, equidistant between Brigg and Caistor, then awaited their response.
But what superlative could do Steph’s provision of ‘British food with a modern twist’ justice? As our photos demonstrate there’s remarkable flair in presentation, technically flawless chefcraft and a warm welcome at front of house thanks to nick.
Steph decided she wanted a new challenge, having worked at Lincoln’s White Hart, the city’s doubletree by Hilton, and the Horse & Groom dining pub. She and nick set up the Cross keys and are part of a team that also comprises chef de parties malika Garwell & Tom Soulby, and sous Steven Rendall. At front of house alongside nick is Sue Chaperon, assistant manager, and together

they’re all doing great things for local diners. “We’ve a great team, and that’s something that’s difficult to achieve but helps enormously when you’re trying to run a busy dining room, so i’m really grateful for them, and for the way we all work so well together!” says Steph.
The kitchen takes advantage of Lincolnshire’s wealth of local ingredients and suppliers, creating dishes which are elaborate and appealing in their appearance but grounded in just one or two good quality ingredients which are allowed to shine through and make each dish special.

menus include an à la carte or plat principal with about eight starters and main courses apiece, plus a separate list of seven pub restaurant-inspired classics, the kind slow cooked pies, sausage & mash and Grimsby haddock & chip options that would provoke mutiny from customers upon their attempted removal from the menu. Grill options include the ubiquitous gourmet burger, Steph’s iteration of which features a black sesame seed roll and streaky bacon.

Happily, even in the case of the latter, all of the Cross key’s dishes are the result of plenty of effort. There can be no corner cutting in the pursuit of excellence, reckons Steph. it’s a philosophy reflected in the fact that she creates all of her bread, desserts, ice creams, sorbets, sauces and so on all in house. Local suppliers include Ashby Butchers, and premier Seafood whilst eggs, honey and potatoes are all sourced from the village.
no labour is spared in the her dishes’ creation, nor their presentation, with our halibut dish served with a sort of sushi-esque parcel of asparagus and a brown shrimp beurre noisette. Likewise the redoubtable soufflé has proved ignominious to even the most experienced
chef. And in a busy kitchen, when you’re juggling 40-odd covers, it’s a brave chef who attempts to put one on the pudding menu.
Yet, here we are with an impressive example with white chocolate and raspberry, textures of meringue and a well-deserved side order of chutzpah for the chef who created such a beautifully fluffy, golden example of a pud that could easily have been a chef ’s downfall.
during January & February, the log burners and cosy bar, the steak nights and Sunday roasts, the real ales and library of gins will leave you wanting to revisit again and again. Long story short, approaching their second anniversary, it’s very easy to see that this is a pub restaurant which is overdelivering on its remit of good food, delivering instead some pretty stunning fine dining dishes that are as good to eat as they are to admire.
To brave a night out in cold January you need a pretty compelling excuse. Well, excuses don’t come more compelling than the rather excellent Cross keys. Try it and enjoy it! n

The split is fairly even between ‘home-cooks’ students and ‘professionals’ – i.e.: home cooks looking to attend a course for pleasure and those seeking to establish or gain new skills in their business.

Which came first… the chicken, the egg, or the family firm? Well, at Lincolnshire’s Fairburn’s Eggs, it’s most definitely the chicken. According to the family’s Sarah Louise Fairburn, in such a rapidly changing market, rearing fresh, unique new breeds of hens is the secret to producing a great product and growing a sustainable business. When Fairburn’s Eggs was founded in 1951, it certainly wasn’t of the same scale at which the company operates today. The third generation of Lincolnshire farmers now have 94 units across 21 farms, with 5,000,000 laying hens producing an egg-ceptional 884,000,000 eggs every year – that’s 17,000,000 each week!
To give the firm its proper name, L J Fairburn & Son Limited is now being run by managing director, daniel Fairburn. daniel is supported by his wife Sarah Louise heading up the companies Brand & Sales strategy, and sisters Caroline Fairburn-Wright and Sarah Hall looking after the office and milling operations.

Happily, it also makes each of them well-practiced in producing toast soldiers and a dippy egg, so i joined Sarah Louise for a late breakfast – egg farmers rise rather early in the morning - to find out more about the business.
As one of the largest egg producers in the Uk, the family have had to balance an increase in volume and the growth of their business with the retention of their values – welfare and integrity. As a country, we consume 13,148,000,000 eggs each year. Each of us, individually, consumes about 200 eggs a year. We’re surprisingly self-sufficient too, producing around 87% of the eggs we consume in the Uk on our own farms, although Sarah Louise says this still isn’t enough and we should be moving to be 100% self-feeding in the Uk farming supply base of eggs.
56% of that market is retail sales to consumers, the rest is to the food industry. in the retail sector, about 65% of the eggs we buy are from the big four supermarkets, 22.6% from discount supermarkets whilst less than 3% are purchased from markets, farmers and farm shops, or at the farm gate. Happily, the Uk’s 41,000,000 estimated laying flock of chickens are living in better conditions than ever before, with 63% of consumers in the retail sector opting for free range and 2% choosing eggs from barn raised layers.
in order that you don’t end up with egg on your face, you’ll need to get up pretty early in the morning to see the Fairburn family in action. The firm’s chickens - most of which are isa Warren, Hyline Brown (with its proven ability to lay more first class quality eggs than any other breed) or Bovans Brown breeds - prefer to lay early in the morning. The company has also pioneered its own bespoke breed, the British Blue® and with ambitious plans to change the face of the way we buys eggs more exciting varieties are in the Fairburn innovation pipeline… Around 6am the collectors begin the first of two or three collections, beginning with a walk through the units - each of which have between 3,000 and 30,000 chickens in them.
After a stroll through to check the welfare of their birds, they’ll turn a central conveyor belt on and begin... well... collecting the eggs. Each chicken typically lays one eggs a day, and with such a rapid turnaround, this morning’s eggs could be the very ones you’re eating for breakfast the following day. The company is totally integrated and manages its whole supply chain, purchasing its chickens at just one day old and rearing them to pullets (point of lay hens) - adolescent chickens - and once they’ve finished listening to terrible music, experimenting with makeup and refusing to do their homework, they’re moved to the laying sheds. The chickens are kept for 76 weeks - the whole of their productive lives - and enjoy a diet of grains, typically wheat and maize – with 80,000 tonnes grown on Fairburn farms a year.
The Company also purchases from other Lincolnshire farms supporting the local economy. The business is one of the largest producers and packers in the Uk, and is one of the only egg producers which farms, mills, rears, breeds and sells its own grains to other producers all in-house.
“Welfare is the most important aspect of the whole industry,” says Sarah Louise. “if you look after your birds they’re happier, healthier and produce a better product. As we are in control of the whole aspect of producing standard eggs, eggceptionally, we wanted to

Speaking of the premium-ness of Fairburn’s product offering, the firm’s British Blue® eggs are from the first flock of blue laying hens to be raised in the Uk from breeding, rearing and point of lay, with hens housed in state-of-the-art ultra-high welfare housing. The breeding flocks are even being tended to, by hand, by nanny Judy Fairburn, with the kids mucking in on weekends and holidays too. Eggs Benedict à la Lincolnshire!
Makes Two. Preparation Time: 10 mins. Cooking Time: 10 mins. eight lincolnshire pork sausages eight eggs 1tsp white wine vinegar four english muffins Softened butter For the hollandaise sauce four egg yolks 2 tbsp lemon juice 250g unsalted butter, diced and chilled cayenne pepper Sea salt & black pepper (optional) Recipe: Rachel Green.
Preheat the grill. First make the hollandaise sauce. Place the egg yolks and lemon juice in a fairly large bowl and season. Whisk all the ingredients until they have blended together. Place over a pan of just simmering water, making sure that the bowl is not in contact with the water. Whisk in the butter, a few cubes at a time, until the sauce begins to thicken. Continue adding the butter, whisking all the time and adding a splash of water if the hollandaise looks like it is becoming too thick. If the sauce begins to separate, remove from the heat immediately and add a teaspoon of cold water to the mixture. Once all of the butter has been incorporated, season to taste with sea salt and lemon juice. Remove from the heat and keep the hollandaise warm.
Next, prepare the eggs and sausages. Preheat the grill to a moderate heat and grill the sausages for 10 - 15 minutes. At the same time, poach the eggs in a large saucepan of barely simmering water to which you have added the white wine vinegar and the salt. When the eggs and sausages are almost ready, cut the muffins in half and place them in the toaster or under the grill. When the muffins have been lightly toasted, butter them generously and place in the middle of a warmed plate. Remove the sausages from the grill and place on top of each half muffin. Place a poached egg on top of the sausages and finally spoon the warm hollandaise sauce over the egg. Sprinkle with cayenne pepper or a twist of freshly ground black pepper and serve immediately. n

known as Eco Warriors the St Hugh’s pupils have installed new recycling bins for paper throughout the School, they have been out litter picking in the village and are transforming part of the Headmaster’s garden into an environmentally friendly garden with bee friendly plants which are rich in nectar for all pollinating insects. At home they are returning all non-recyclable plastics to supermarkets to encourage them to invest in plastic-free
food shopping. This all follows on from the School’s initiative to reduce the use of plastic water bottles by introducing metal ones for pupils and replacing the plastic sachets of condiments in the dining room with pump dispensers. Many crimes against architecture have been committed when beautiful old buildings are made to serve as commercial properties. And when they’re returned to life as a family home, there’s usually a lot of reinstatement of original features to be completed before a building is restored to something approaching its original charm. Jo and nathan Teeuw moved into their architecturally used and abused property over 12 years ago, and began restoring the grand old girl - a late Georgian three-storey building constructed in 1830 - back to her former glory. it’s now on the market, and it’s looking really good, having been thoughtfully and comprehensively restored. Even better, though, than the use of natural materials - oak, stone and red brick - clean neutral palette and the wealth of original features, the house, on the village’s High Street, offers complete versatility with open plan rooms that can be repurposed into bedrooms, reception rooms or whatever its next owners require.
Originally two shops, with an archway between, the couple filled in the space creating one large property, and incorporated the two flats above. The result is a property that spans three floors and has over 2,500sq ft of living space. Floorboards were replaced with reclaimed solid oak flooring and brick or stone floors and in the kitchen and sitting room were installed two Aga wood burners. The kitchen was replaced with a large, open-plan configuration, Mercury range

Created in handsome red brick and topped with slate, with smart white keystones and lintels, there’s a delicious sense of non-
conformity about the house, from its slight kink on the middle (it’s situated just on the village green, following the slight curvature of the road) to the decidedly un-English sub-tropical garden at the back. Jo is Creative Director within a communications agency by trade, specialising in mainly projects which concern corporate sustainability, working for an impressive list of clients. Moving from her native London to be near the Teeuw family - who have horticultural form as family owners of Gee Tee Bulb Company in Moulton Seas End - Jo and husband Nathan were able to establish a superb garden with non-native plants. “We almost have a tropical micro-climate in the garden with some thriving palm trees and banana plants,” enthuses Jo. >> 87

There’s also a useful old brick built garden store, and we have a driveway down the left hand side of the house for off-road parking.” Jo’s three daughters were all born and raised in the time she has lived at the house, and she says it’s a terrific family home with plenty of space, lots of storage - especially in the eaves - in a safe, green, happy place to raise a family. EQUINE TREASURE
The term magnificent is much overused in daily life, but is a fair narrative for the trophy which appeared at the Golding Young weekly valuation day in Stamford. The massive silver chest which contained this beast of an item gave a slight indication of its proportion, but still one could only gasp when the heavy bound lid was lifted and the Glenda Spooner Perpetual Challenge Trophy (later the Ponies UK Patrons Cup) came gleaming back at me. It is up there with some of the more famous pieces seen in the world of sport, coupled with its most famous of Victorian makers James Barclay Hennell and its association with one of the most astute names in the history of equine welfare, writing and judging, it will appeal to many people when offered in a forthcoming sale at Golding Young Grantham.
Glenda Spooner (1897-1981) was associated mainly with the welfare of horses and ponies, but applied her hand to a great many projects: she was the chairperson and secretary of the Ponies of Britain Club, helped run the Old War Horse Memorial (later the Brooke) Hospital and wrote many books both fiction and non fiction regarding the welfare and technical aspects of all levels of horse breeding and ownership, her name remains associated with a welfare farm in Somerset and she even won this trophy three times between 1958 and 1960.
The trophy itself is a mixture of Victorian skill and excellence from one
of the great silversmiths James Hennell. In 1851 he was described as a 23 year old silver plate worker, by the production of this trophy in 1880 he was at the forefront of Victorian design and quality, he was taken over by Holland, Aldwinckle and Slater in 1887 and this piece was produced at the pinnacle of his powers.
The trophy oozes class. It has a hallmarked horse finial and was always an equine related piece; only becoming the named cup in what appears 1958. It exudes a razzmatazz of style and elegance, its size 71 cm and weight (with base) nearing 200 ounces coupled with the repousse and chased decoration of swags, masques, scrolls, flower heads and acanthus leaves is showing off the skills of this great producer, it is truly sensational.
In determining a value, it really shouldn’t be anywhere near a weighing scale as it is a talking piece, typical over the top Victoriana which dominates a room and would be difficult to match. My advice is to come and see it, this is what Victorian silver is all about, illustrating the skill of the producer and having the association with famous makers and famous names in the world of showing ponies. We use beech hardwood for our frames and never use wood that has knots in. All of our frames are glued, screwed then doweled. We’ll never use staples to construct our frames and we’ll never use mdF.” Typically Ed and the team put ten times the man-hours into the construction of their products than the four or five hours it takes an ‘out of town furniture warehouse’ to create their products. Crowther & Sons also
use upwards of 10 layers in the construction of sofas, which is around double the number of layers used to create lesser products, that are mass-produced and then heavily discounted. “Our materials are not the cheapest, and certainly not the easiest to work with, but the pay off for that is the strength and longevity of our products.”
And of course, every piece Ed and the team makes is completely bespoke. A couple of centimetres longer? Lower? Firmer or softer padding? no problem. Every detail can be tweaked according to your own taste. Being able to choose from an extensive fabric library at the nettleham showroom of over 30 leading fabric brands, with new collections added regularly and expert advice and guidance on colours, is only the beginning of Crowther & Sons’ bespoke

A Winter proposal for a Caribbean Wedding! A proposal of marriage in winter is perhaps the best Christmas gift you can give to your partner, but Lexy and Will looked to the warmer climate of the Caribbean for their summer wedding! It was the long hot Summer of 2016 when Lexy and Will met. it was when Lexy was working as a waitress at another wedding... the nuptials, in fact, of her future mother in-law, Will’s mum. Whilst serving Will a drink the two exchanged a look of familiarity and later found each other on Facebook and soon realised where they knew each other from - they attended the same primary school and lived down the road from each other whilst growing up!

inside a beautifully wrapped box - which was deceptively heavy, containing a brick to throw Lexy off the scent - and a Cd. The Cd, incidentally, played Can’t Help Falling In Love With You by Elvis presley - the couple’s personal anthem.
Whilst the song was playing, Will went down on one knee and listed all of the things he loved about Lexy. “He said i’ve made him the happiest he has ever been and presented me with the most beautiful sapphire and diamond ring.”
“We used to hear our song everywhere we went when we started seeing each other, and the lyrics are still very special to us. We were in our pyjamas, in tears on our living room floor... what a perfect Christmas morning!”
“All we knew is that we wanted a private venue that was exclusive to us. We were really struggling to find the right place until we saw irnham Hall.”
“my wedding dress was everything i hoped it would be and more. i bought it from Blush Bridal in Bourne, where Simone and Liz were amazing. They went above and beyond to ensure that i was happy.”
With memories linking back to newspaper cuttings and Christmas nativity videos that they both featured in at school, the couple went on to become teachers themselves.
Opening Christmas presents is an enjoyable moment for most households on the morning of 25th december but for Lexy that morning was especially exciting as Will proposed with a Christmas gift in 2017.
it wasn’t until march 2018 that Lexy and Will started planning the wedding and looking at venues. After looking online, Lexy and Will both fell in love with just one special venue and booked their date on the phone before even visiting!

Eventually all brides have to choose between a tight fitting dress or one with a full skirt, but bride Lexy knew she wanted both close profile glitz but also some ‘wow!’ factor which helped to narrow down her options.
“i found a Sottero & midgley gown which was encrusted with pewter embroidery and hand-sewn diamonds, pearls and beading from top to bottom.” “it shone in either pewter or gold depending on the light and it had a fish tail which gave me just the look i was after.” Growing up, Lexy used to go to St Firmin’s Church in Thurlby with her Grandmother. Consequently Lexy was determined to be married in the church.
With an incredibly accommodating parish vicar and the blessing of the vicar who conducted the service, marrying in the church was a wonderful way to start their much loved day. >> 123

“It is such a special time, so try to savour it – ensure as many jobs as possible are complete before the day so you can take it all in and relax!” >> “irnham Hall is situated between Bourne and Grantham,” says Lexy. “it’s a really luxurious and an elegant venue but it also has such a relaxed vibe, which was perfect for our ‘tropical theme.’” Lexy is of Caribbean heritage and wanted to incorporate her heritage into the day with bright colours, a cold buffet (in the hope of warm weather which, at 30 degrees, they definitely got) and a tropical vibe including a steel drum band and ‘Richi Blues’ mobile food van.
For Lexy the most memorable moment of the day was arriving at the church in the car with her father; “i was so nervous yet excited but as soon as i saw Will standing at the alter, watching me walking down the aisle, all of the nerves started to disappear.”
“Another moment was when our family and friends were throwing confetti over us as we walked down the garden steps, it is definitely a ‘wow’ moment when you have all the people you love and care about come together and celebrate with you. The day really was like a fairytale, and that was a word that our guests used again and again.”
Will says: “my most memorable moment was seeing Lexy walking down the aisle towards me. She looked so beautiful.”
“The weather was on our side. it felt like we were abroad! We had to be back the following weekend for our friend’s wedding and to start work but we’re looking forward to a belated honeymoon to the maldives next year!” n 124

A Lasting Power of Attorney (LPA) is a legal document that allows someone to make decisions for you (the donor), or act on your behalf if you are no longer able or capable to do so due to reasons such as illness, mental health condition, dementia, confusion, drowsiness or unconsciousness.
The person appointed to be your LpA becomes known as your ‘Attorney’ and can legally make decisions on your behalf. There are two types of LpA. property & Finance – this can be used when registered with the donor’s permission, even when they have capacity.
Health & Welfare – this can only be used when the donor loses capacity. it is the attorney(s) role to make decisions on general living conditions, medical treatment and if authorised end of life decisions for the donor.
it is a misconception to assume that if you are married, or in a civil partnership, that your spouse will be able to deal with your
bank account and pensions, and make decisions about your healthcare if you lose the ability to do so – this is not the case. Without an LpA, a spouse will not have the authority which could be devastating at an already difficult time, especially if the joint owner has their only form of income, such as their pension, paid into a sole account. Accidents, strokes, brain injuries and parkinson’s disease can also affect someone’s ability to make their own decisions, which can make managing financial affairs virtually impossible.
Charities who care for the elderly recommend everyone plans ahead by having at least one LpA which could save a great deal of money and ease the burden on relatives.
if you lose mental capacity without an LpA in place, it will be necessary for your family to apply to the Court of protection to have a deputy appointed to deal with everyday financial matters. This is a slow and expensive process that could cost
thousands of pounds, and if you have to use a solicitor, it could cost a considerable amount more. However, if you have an LpA in place, this will not be necessary.
You can choose more than one attorney, but you must decide if they are to make decisions jointly or separately. The role of an attorney involves a great deal of power and responsibility, so it is vital that you trust the person or people you choose.

The 2019 JdRF Ball at BOSTOn WEST BoSToN WeST GolF CluB was a brand new venue for the JDRF, Type 1 Diabetes charity’s annual ball, which for the previous seven years has been held in Spalding. A new venue, but same commitment to the charity, which provides clear up to date information on Type 1 Diabetes, an autoimmune condition, as distinct from Type 2 Diabetes which is at least partly related to diet and lifestyle. is year represents 30 years since the charity was founded, and today, the group conducts research into the origin, treatments and potential cures, in the form of research projects and clinical trials. e ball was organised by Jenny Carr, whose son oliver is 11 and has had the condition since the age of three. Held at Boston West, it was attended by over 100 people. n

A F uNDRAISING BAll at Boston’s Haven High School recently celebrated ongoing efforts to raise money for the Greg Mustill Patient Support Fund at e Royal Papworth Hospital, specialising in heart and lung conditions. e fund aims to alleviate the financial pressures put on families when loved ones are in hospital. It also helps towards the counselling provision that Papworth offers its patients. organisers have been able to raise around £40,000 over the last couple of years by hosting different events and due to the generosity of companies supporting the fund. Greg Mustill received a life saving heart transplant at Royal Papworth Hospital when he was 19 yrs old. His new heart gave him 14 more years with his family and allowed him to start a family of his own. e event was a collaboration between the Mustill family and Royal Papworth Hospital Charity. n

You’ll be quite ‘Taycan’ with the prospect of owning this month’s featured motor. at’s because Porsche is taking on Tesla with a four door, four seater super-saloon to rival Elon Musk’s Model S model. How does Porsche’s new Taycan stack up? Brilliantly. In fact, it may be the best electric car on the market today! Words: Rob Davis.
RIgHT NOW, I’m writing this on an Apple iMac computer. We’ve been using them in publishing since the 1980s, because back when Microsoft Windows had yet to be invented and most computers’ interfaces were indecipherable screens of text and obscure commands, Macs were different. ey had icons, menus and you could use a ‘mouse’ to draw on screen. It made the Apple Mac computer far easier to use than its rivals and especially suitable for graphics and publishing. Many think that Apple invented the mouse but in fact, the boss of Apple at the time, one Steve Jobs, saw it demonstrated at Xerox, and... well... nicked the idea. How on earth does this relate to the new Porsche Taycan, the firm’s all-new, all-electric sports saloon? Well, Apple didn’t invent the mouse, nor were they first to market. ey did, however, execute the technology better than any of their rivals. Likewise, Tesla was first to market with a modern, four-door, all-electric sports saloon, with the first European deliveries in 2013. Porsche’s Taycan may be late to the party, but it’s a better executed and much more desirable product. Sound familiar? e idea of a four-door Porsche was ridiculed, until the Panamera proved everyone wrong, selling about 10,000 a year in the US alone. And though the Panamera was also available as a hybrid, the new Taycan is the first
Porsche designed from the ground up as an electric car, which makes it the first in a completely new generation of car from the venerable sports car manufacturer. ree models are available. ere’s a Turbo (680ps power, £115,858), and a Turbo S 761ps, £138,826). e nomenclature is a bit misleading, given the fact that neither model has an internal combustion engine, let alone a turbocharger. Newly released though is the entry level model, the Taycan 4S. Entry level sounds a bit dispassionate, but in fact the 4S is still good for 530ps. For comparison, a Range Rover Sport with a 5.0V8 supercharged engine generates 525ps. Charge the car up and you’ll drive anywhere from 206 to 252 miles and of course you’ll emit not a single gram of carbon. Best of all the 4S undercuts the other models in the Taycan range, costing £83,367. Whilst that remains a considerable sum of money, it’s cheaper than either of the Turbo models, and should be cheaper to run than a petrol or diesel car, especially as a company car, which serves to offset that price further. Stylistically the Taycan is close to the Panamera, albeit a little smoother and with sleeker flush door handles. Blue is rapidly being adopted as the indicative colour of their electric vehicles, and you may prefer the optional Frozen Blue rather than the white of our demo car. >>

Power to the People: Plug-in Performance Cars...
Jaguar iPace HSE £71,500: Jaguar’s first electric vehicle, designed from the ground up to be powered by motors. iPace has been deliberately designed to look conventional in order to not ‘scare off’ customers, and its SUV appearance is on-trend with the models which are selling well in today’s market. Leather seats, navigation, rear view camera and park assist are all standard in range topping HSE trim. It’s a touch slower than the 4S, but only on paper, reaching 60mph in 4.5 seconds, and will achieve 292 miles before charging. n
Tesla Model S 100kWh Long Range £81,745: The Taycan’s closest competitor, given that the Model S is a four door, four seater saloon, not an SUV. The Long Range version of the S 100kWh, however, has a whopping 379 mile range. It’s also slightly quicker than the Porsche, reaching 60mph in 3.7 seconds, though you’re unlikely to consider yourself short changed in a Taycan. Heated steering wheel & seats and navigation are standard. For £5,800 you can specify full self-driving, which will see your car automatically drive to meet you at the entrance to Waitrose via its ‘Summon’ feature! n
>> Fancier paint jobs are a ubiquitous option on even premium motors these days, the blue in question weighing in at £800 - quite reasonable - although a deep crimson red which is perhaps our favourite colour commands a wholly premium £1,683.
Audi E-Tron £82,310: Audi’s E-Tron is another sports utility vehicle like the iPace. In budget against the Taycan is the Launch Edition 55 Quattro flagship. 124mph top speed and 60mph in 6.6 seconds, it’s slower than the 4S but still very brisk. It has four wheel drive, four seats and a range of 221 miles. In this First Edition version, electric heated seats, panoramic roof, leather, climate control, powered tailgate, navigation, Virtual Cockpit, 360° camera, adaptive cruise control and keyless entry are all standard. n

You’ll need to delve into the options list too for a rear view camera (£480); adaptive cruise control (£1,238); or fancy leather trim (anywhere between £2,500 and £4,100). However, standard kit on the 4S includes heated part leather seats with electric adjustment, sat nav, climate control and cruise control, digital radio, powered boot lid and park assist front and rear.

You’ll struggle to fund a physical button anywhere but on the steering wheel.
Quite deliberately though, we’re saving the Taycan’s best ‘til last. Even modest electric vehicles feel rapid by virtue of their power being full and instant, rather than building power gradually with increased revs as is the case with conventional engines.
The 4S reaches 60mph in just four seconds and it would reach 155mph where legal, but the urgency isn’t as impressive as the comparative silence which makes all of that performance seem effortless.
The Taycan’s synchronous front and rear electric motors also provide four wheel drive for more reassured handling. And of course, being a porsche driver engagement is unsurpassed, making the 4S all the car you need if you’re seeking practicality, luxury, sportiness and eco-friendly credentials. n

exPect new cAr modelS APlenty, throughout 2020 Car manufacturers are lining up some of their most eagerly anticipated models. if you’re seeking a practical, go-anywhere 4x4, look out for the shorter (90) and longer (130) versions of Land Rover’s new defender, Aston martin’s dBX luxury off-roader (see left) plus large SUvs from Alfa Romeo and a maybach branded luxury mercedes GLS likely to cost £200,000. if you’re seeking a sports car, look out for Tesla’s all-electric roadster, Aston martin’s new vanquish and a volante soft top version of the current vantage. naturally there will be plenty of electric cars, plugging in, turning on and tuning in throughout 2020, with a plug-in version of mitsubishi’s Outlander and mercedes’s GLC. Tesla will also produce a smaller SUv sibling to its model X, imaginatively badged the model Y and designed to compete with smaller all-electric 4x4s. Aside from the gloss finish carbon fibre roof and rear diffuser, the eye is drawn to the model’s literal and figurative jewellery in the shape of its solid 18-carat gold wings badges front and rear, black anodised active front grille and its gold anodised side strakes and centre lock wheel nuts.
If you’ve been a very good boy (or girl) all year and fancy a belated Christmas gift, and if you have the necessary capital in your stocking, you can purchase what is essential day a modern day recreation of its 1959 DB4 Zagato. A quick motoring lesson; Zagato is the Italian coachbuilder which, under licence from Aston Martin, designs some of the brand’s most desirable limited edition models.
e DB4 was Britain’s fastest passenger sports car, it was a born winner, scoring a debut race victory at Silverstone in the hands of Sir Stirling Moss. A total of 75 DB4 gT. were built between 1959 and 1963. Of these only eight were lightweight models, most of which survive today. Around 4,500 hours of work go into each of the 19 DB4 gT Zagato Continuation sports cars being handmade at Aston Martin Works.
Recently it has turned its hand to creating a Zagato edition of the firm’s modern DBS Superleggera flagship, with a 760bhp twin-turbo V12.
Only 19 pairs of the cars will be created, some of which are still available to order. First deliveries will be made in early 2020. n
Aston has also allowed the coachbuilder to recreate a DB4 model, which was first produced in 1960. A recent original DB4 was auctioned in 2018 by Bonhams and achieved a £10.1m sale price. Purchase one of the modern Zagatos, and Aston Martin will also throw in a modern DBS Superleggera for free... call it... Christmas spirit. e DB4 recreation features a 4.7 litre six-cylinder engine which generates 380bhp. Both cars will be finished in an exclusive shade of red called Caithness Spicy Red. Well-heeled customers will be able to further customise each car by virtue of access to Aston Martin’s ‘Q’ Division. Whilst the standard DBS Superleggera is slightly overshadowed by its forebear, it’s still a profoundly impressive car and in Zagato edition, utilises the first automotive application of configurable carbon and metal 3D-printed interior finishes. A beautiful central ‘saddle’ design features a unique parametric, inter-locking form, available in a range of three materials and finishes.
