y first job this month is to thank everyone who has voted in our Good Food Awards. As you read this we’ll be in the process of tallying up the thousands of votes we’ve received ready to name our 2019 Restaurant of the Year and the awards’ other titles, ready for a big reveal in our next edition! Next, I’ve the pleasure of introducing our in-house illustrator Jocelyn Lawman. You’ve probably noticed our amazing front cover design this month. Well, we’ve been so impressed with Jocelyn’s excellent work that we’ve invited her to join the Pride team to create our covers in 2020 and beyond. We’ll meet her properly in a special feature later in this edition! Also in this magazine, we’ll meet Paul & Amy Wilkinson, recent stars of Channel Four’s Grand Designs, enjoying a look around their amazing contemporary property near Boston. The Imps are Coming to Lincoln!

IMP-ATIENT TO KNOW MORE? FIND OUT ABOUT LINCOLN BIG PROJECT BELOW

LINCOLN The Imps are coming to Lincoln, following on from the Baron’s Charter Trail in 2015 and the Knights’ Trail in 2017. Next year, visitors to Lincoln will see 30 of these fellows being placed around the city, each with its own colourful design created for their sponsors. Lincoln BIG are organising the Imp Trail. Chief Executive of the business group Sarah Loftus says: “We want to create IMPmania in the city and we’ve got some great reasons to go for it.” “Statistics show that the Lincoln Barons Charter Trail in 2015 attracted 210,000 visitors and, at auction, the Barons raised £166,800 for charity. Facebook posts reached 67,694 people and the Barons’ website had more than 88,000 views. Two years later, the Lincoln Knights Trail 2017 worked even more

magic, attracting 280,000 visitors and raising £178,000 at our charity auction. Facebook posts reached 247,842 people. The Knights’ Trail website had 140,000 views.”

LINCOLN This month Santa will be along on his sleigh, but an equally magical form of transport, albeit one more suited to spring and summer will soon be returning to Lincoln. As part of the regeneration of Lincoln’s 50-acre Boultham Park, the site’s lake will be restored in 2020 along with the chance to enjoy rowing boats for the first time since the 1960s. Heritage Lottery Funding is currently being sought and the Friends of Boultham Park are working with the Lincolnshire Wildlife Trust

and LDS Design landscapers to deliver the project, which will involve the management of 37 trees in poor health, as well as measures to restore the quality of the water. “We’ve consulted with people about the sort of activities they would like to see, and the most popular were biodiversity activities, community events and activities, and occasional boating,” say the Friends. “We’re developing an Activities Plan which will be aimed at increasing enjoyment of the park, volunteering and training opportunities.” n


SLEAFORD FOUNTAIN UNVEILED BY MARQUIS

SLEAFORD An historic fountain in the centre of Sleaford has been restored following fundraising work led by Sleaford & District Civic Trust. The Marquis of Bristol, Frederick Hervey unveiled the fountain then took the first drink from it after a £40,430 restoration project completed by Carre Heritage. The fountain was also blessed by the Vicar of Sleaford Rev Philip Johnson.

Grade II listed and created in 1874, the fountain was constructed in memory of the 6th Earl and 2nd Marquis of Bristol, and was closed in 1927. The fountain was originally intended to prevent people falling ill after drinking water from the Slea. It’s still fed from a spring under the Market Place, and will reduce the number of plastic drinks bottles being consumed in the town. n

Albert Glover reunited with his MG J2 car... after 70 years!

SCUNTHORPE Christmas came early for Scunthorpe motorist Albert Glover after the 93-year old was reunited with his first car after 70 years. Albert paid just £100 for his red MG J2 car about £500 in today’s money - but parted with it in 1950. With a top speed of just 65mph, only 2083 were made, but Albert was overjoyed to be reunited with his after daughter in law Dawn discovered the car would be at an MG charity event. Today, the car is worth around £45,000! n

BARTON Kitchen giant Wren is demonstrating confidence in North Lincolnshire and in a post-Brexit economy with a £120m expansion of its headquarters at Barton upon Humber. The company was founded in 2009 and relocated its headquarters to Barton in 2013, on a 180 acre site. Today it employs 4,500 people has 82 showrooms, generating revenues of £490m. The expansion of its headquarters will create 535 jobs immediately, 1,285 when at full capacity, operating 24 hours a day. The company was ranked first in Indeed’s list of the 15 best UK workplaces in the job site’s retail sector category. n

IT’LL BE A HAPPY NEW YEAR for tourism businesses across Lincolnshire in 2020, as new figures confirm that the value of spending by visitors to Lincolnshire has increased by a further seven percent, reaching £1.58bn in 2018. Last year, the county attracted around 21m visitors - a 2.5 percent rise on the previous year. The tourism sector in Lincolnshire employs 20,000. n

EAST LINDSEY DISTRICT COUNCIL ON THE MOVE...

East Lindsey District Council is set to move from its current headquarters at Tedder Hall, Manby, to a new site on Mareham Road in Horncastle. The move will see the council build a new education facility, public sector hub and council offices with education provided in conjunction with Boston College. The new education facility’s course provision will be linked to the requirements of local employers allowing adult students and apprentices to access education, including university level courses. The District Council has agreed to allocate £6.23m to the project and is also seeking funding of £1.52m from the Greater Lincolnshire Local Enterprise Partnership towards the total project costs of £8.25m. n

THE INTERVIEW

“The house doesn’t just represent somewhere to live, but a space to be a family and to celebrate a relatively short period of their life which has seen them rocket to success through hard work and good humour...” THE GOLDEN HOUR. It’s a term photographers use to describe a special time, typically half an hour fore and aft of sunlight or sunset. You can be in an everyday place but in that hour, the light becomes just that extra bit special, as if imbued with a little magic that makes it shine a bit softer, a bit warmer, giving it an almost ethereal glow. It’s the photographic equivalent of that inchoate quality that turns a house into a home, turning a building into something far more personal. On this particular day, at the ‘golden hour’ I’m watching the sun take its leave over the brand new home of an old school friend of mine, Amy Wilkinson, and husband Paul. We’ve bumped into one another once or twice in the quarter of a century since we’ve left school, but more recently I joined the four million people who watched the couple create their dream home on a 16 acre plot a few miles north of Boston, designing a thoroughly modern house comprising a series of interconnected circular buildings all clad in timber and built beside their lake.

On TV the place looked nice. Personally I favour older properties and on point of fact so do Paul and Amy – so I didn’t expect to love it quite as much. But honestly, the TV programme didn’t do it justice. In person it’s bigger, more beautiful, lighter and especially magical at night when the carefully considered architectural lighting brings the building to life… I was surprised just how much I fell in love with the place, but perhaps a bit of that is the fact that it’s not just a house; it’s Paul and Amy’s home. It’s impossible not to fall in love with such a warm, funny, welcoming and thoroughly lovely couple, so perhaps their character, casting a halo over the house and turning it into their home is a partial explanation for the feel of the place.

And for the couple themselves, the house doesn’t just represent somewhere to live, but a space to be a family and one in which Paul could retire (although I bet he won’t!) and for the couple to celebrate a relatively short period of their life which has seen them rocket to success through sheer hard work, good humour and taking gambles – as Paul puts it, going ‘all in, every time.’

What’s even more impressive though is the way Paul used to live as he built his businesses. Born in Boston and raised in the South Holland Fens – Whaplode and Moulton – Paul left school at 15 to pursue a career as a gamekeeper, becoming such a keen shot that he has represented the UK in competitive fieldsports on no less than five occasions. “My father shot too but he was just about the worst shot I’ve seen! I was nine when I gained my license and even took a shotgun into school for ‘show and tell…’ with permission from the headteacher, and with no cartridges, obviously. Needless to say it was a different time, you wouldn’t be able to do that these days, but that’s growing up in the country for you!” “I left school to become a gamekeeper and after four years, moved to an adjacent estate near Spilsby, which is now a 15th century Grade II* listed country house hotel. Back then though it was a privately-owned country house with lots of woodland that needed managing.” “I had a lovely time there and an older colleague, Roger Hawkes, took me under his wing. I moved to another country estate and at 19, until it was sold to another owner, I ran my own private shoot, then a simulated game shoot too. Both were really successful.”

Especially extraordinary is that during his early career Paul lived outdoors throughout the year, surviving on his knowledge of fieldcraft, which in turn proved a good asset to his career. “One of the estates had a caravan but with no windows or doors so I didn’t bother. I slept outside all year round. I was pretty hardy and it wasn’t unusual to wake up with a dusting of snow over me in the winter months.”

Living in the wild, catching and cooking his own food and being surrounded by woodland all year round, day and night, gave Paul an extraordinary insight into the natural world. As any devotee of the countryside living in Lincolnshire appreciates, management of the countryside, shooting, foraging and cooking are inextricably linked. >>

>> Paul’s appreciation for - and his understanding of - the natural world became unsurpassed, enabling him to live in the wild. Living as such also meant his accuracy as a shot was unrivalled, and that his understanding of the various pests that would otherwise plague the estate and need controlling was uncanny. So, in 1997 he set up as a pest controller, trading as Pestforce to work with householders, farms and businesses to reign in the rats and show Mickey Mouse who’s boss. For a number of years, he worked as a one man band, but given his not inconsiderable talent and vast knowledge he was soon in demand.

It was also around this time that he met Amy, and together they set about unpicking the problem of how to expand the business given that the company’s success and apparent inability to expand were both predicated on the company’s dependence on Paul’s knowledge.

“Amy is my rock. Her good humour and the banter we have with each other was an essential pressure valve given how busy we were.”

Paul is still today renowned for his sunrise walks – just a couple of gundogs, a sunrise and a flask of coffee. On one such occasion, he saw the dawn not just of a new day, but of a new way to pass on his skills, hitting upon the idea of franchising his knowledge with training to provide investors with ‘a business in a box.’

Amy created the startup booklets and coordinated the two-week intense training courses, and initially the packages were sold on Ebay. 18

The first eight sold so quickly that the couple realised they were seriously underselling themselves. Refining their offers and creating ringfenced areas for the burgeoning number of franchisees, Paul & Amy were soon working flat out, quickly coordinating 250 technicians across the UK and Ireland. They created several new offices to accommodate the business but didn’t get a chance to move in to either of them before they outgrew their use. On at least two successive occasions had to begin building premises that were larger instead. “Our operatives were handling 2,100 jobs a day, we were soon turning over £18m and I was up at half past two every morning seven days a week handling admin and answering emails,” says Paul. “The business became a runaway success, consuming every waking hour. Amy and I had no life for 15 years, certainly no family holidays. Amy was soon juggling children and work, it was a complete rollercoaster; exciting, scary, enjoyable, surreal.”

Paul says that the mobile phone maker Blackberry had to create for him a custom phone which could handle call waiting for more than the 10 people to which the queue was otherwise limited. Growing a business is perhaps one of the most stressful and all-consuming activities, but when that business explodes so suddenly and when that expansion is so prolific and relentless, it takes quite considerable strength of character to adapt, not to mention a strong relationship when the business owners are a husband and wife team with a young family.

“From the moment Amy and I met, I was absolutely in awe of her. She was always funny, great company and I was absolutely in love right from the outset. We were soulmates and best mates. But meeting at this point in our lives meant our relationship quickly had this extra pressure. Happily she stepped up to this other role too. We were working relentlessly, making decisions as we went along. All the while the business’s growth outpaced any decisions we made to try and keep up with its expansion.”

“Amy was handling that growth year after year, supporting an exhausted husband, being a great mum to young children and never once complained that I was working 18 hour days, or that we had so little time together as a family, at a point in our lives when we should just be enjoying all of the little moments and milestones that having children brings. She was my rock. Her good humour and the banter we have with each other was an absolutely essential pressure valve given how busy we were. Amy understood that the franchisees were buying into me, and that I had to be available.” The business’s growth continued relentlessly for eight years and soon Pestforce became one of the largest businesses in the industry anywhere in the UK, indeed, in Europe. Eventually it attracted attention from a would-be investor, and it took Paul just two weeks to agree the sale of the business… although he admits he wrestled with the decision, changing his mind on a number of occasions, even on the morning the transaction was due to complete.

“It was the most reluctant retirement attempt ever!” Paul admits. “Like leaving a disco with loud music then afterwards stepping out into silence, the change of pace overnight was surreal. We had our first holiday, but letting the business go and learning to relax was difficult.”

From his early days setting up his own shoots Paul established himself as a serial entrepreneur and soon had the business equivalent of itchy feet. Ever since he’s traded in farm machinery, building materials… anything. “I’m always excited by the transaction, by the deal. I love turning one into two, so I still trade for the thrill of it and even now I enjoy taking business risks – going ‘all in.”

At the time Paul was also representing the UK in the British All Round Championships, shooting professionally and taking part in

the World Five Man Team shoot series - essentially making him one of the best guns in the world. At the same time, still craving being busy, he and Amy were renovating the first of around 10 properties, and eventually redeveloping and creating a new retail development in Boston’s County Hall. Having lived in period properties, Paul then happened across an established 16-acre plot near Boston. He first saw the plot at 2am and made the decision to purchase it at 6am, completing the transaction at 8am then breaking the news to Amy at about 8.15am, hopefully waking her up with a strong cup of coffee. The couple wanted to create a similar property to their existing home on his newly acquired site.

Planning permission for their preferred, more traditional style of home would, the planning officer stated, prove tricky. A development that would almost certainly achieve permission, they advised, was one of ‘architectural uniqueness,’ in other words, they had to ditch the dream of a period property and think a little differently.

Initially reluctant to embrace the contemporary, the couple worked with Swineshead architect Robert Lowe and designed one of the first round houses in the county, achieving planning permission in 2018 and setting themselves a build target of just over a year.

In the process they also attracted the attention of Grand Designs. Typically, the Channel Four programme provides schadenfreude for envious viewers who enjoy watching Mr and Mrs Malcolm and Cressida Islington from such trendy enclaves of the capital bite off more than they can chew and screw up a restoration, going over budget and over schedule. As a trendy London couple’s marriage hangs by a thread and their home hangs by a single piece of lime render, Kevin McCloud typically takes great delight in pointing out the error of their ways whilst delivering his uniquely pretentious commentary on the property’s context, vernacular, theme… etc etc… The producers, then, must have been rubbing their hands with glee. An unusual house; circular - so infinitely trickier to build - a short build time, a team which had never attempted a round house before, a lakeside location and a couple of Lincolnshire carrot crunchers project managing. What’s more, all of the contractors’ work was completed on the strength of a handshake; no contracts, no paperwork. >>

THE INTERVIEW

>> Unfortunately for the production team, they’d reckoned without the competence and hard work of Paul & Amy and the determination of all of the people that worked on the house feeling honour-bound to do a really good job for two lovely people. If Kevin and the team were poised to keep the cameras rolling as the complex build went horribly wrong, they’d have a long and eventually fruitless wait. Lincolnshire folk don’t do ‘problems.’ No. We do ‘hard work’ and we do ‘getting the job done.’ It’s the respect that all of the people who worked on the house had for the couple that ensured they were so keenly invested in making the house as good as they possibly could for Paul & Amy. With no significant setbacks, hiccups or foul-ups the build progressed smoothly, despite slight aggro from Paul’s back, upon which a lifetime of shooting and an old injury from an impatient driver crashing into him had taken a toll. Watching the programme back, there almost seemed a sense of relief from the programme’s production crew that they could finally inject a sense of drama into an episode where everything else went frustratingly smoothly. e programme returned to the house to film more than 15 times during its construction, spending two or three days at a time at the house and eventually shooting 540 hours of footage - producing each episode of Grand Designs costs in excess of £100,000, the producers told the couple. Completed in spring 2019, the house represents not just a nice place for a nice family to live, but somewhere which celebrates the strength of Paul and Amy’s relationship and their ability to cope with anything from a wildly successful business to a complex property build. Approach the house and you’ll see the long driveway is lined with formative trees.

Right now the house is visible for miles but once they’ve matured, they’ll hide the house until the big reveal. Elevated from the ground, the entrance hall is light and the lounge area provides a panoramic view of the lake. e kitchen is also semi-circular and the sun tracks round the curve of the room, with its large windows, giving it all-day light. Seating arranged in a semi-circle in front of the huge run of curved work surface ensures Amy and Paul can cook and face guests at the same time… and of course, there’s the illuminated ‘lazy river’ sink. e spiral staircase leads to a glass balustraded balcony with doors to bedroom around the circumference and all of the bedrooms have views for miles and miles over open fenland. e whole house is pristine and bright, with natural light, shiny surfaces and loads of life. Even if your preference is toward older homes, it’s impossible not to fall in love with its vibrancy and the fact that huge open spaces are juxtaposed by smaller snugs and cosy spaces. Paul and Amy’s master suite also has a curvaceous bath overlooking open countryside and a large balcony with incredible views, ideal for those who want to wake up and drink in every refreshing dawn, then fall asleep with every sunset. And then, of course, there’s the lake, at the end of which are a number of holiday lodges and pods – Amy’s business, successful partly though her hard work and partly because of her welcoming personality. As the sun sets over the house it’s impossible not to have masses of admiration for the house, for the couple themselves and for the life they’ve lived. Nice as it is, a building is just a building, until it’s filled with personality and life. Paul & Amy’s house is certainly full of that; a well-deserved, hard-earned, crowning achievement of a life of hard work, determination and good humour. n

ONE IN THREE PEOPLE in the UK die every year without writing a Will. Is this understandable? Perhaps so – some will push it to the back of their minds, while others may think it is an unnecessary cost, or do not consider themselves old enough. Here are some of the ‘truths’ behind the myths often associated with Will-making and urges everyone to make it a New Year’s resolution: • If you make a Will today you will die tomorrow. Not true, no one knows what the future holds and that is the very reason why everyone should take good advice and make proper plans;

• Wills are just for old people. No, everyone over the age of 18 should have a Will; • Only rich people need Wills – everybody usually has something, and sometimes fail to realise what assets they have; • ‘My family can sort out everything when I die’. If a person dies without making a Will, any decisions

about your assets will be determined by law – not the family; • My husband/wife will get everything. Not necessarily true if you have children, the intestacy laws can be complex;

• Common law husband/wife will get everything. There is no such thing as a common law spouse. If you are unmarried your partner will not be entitled to anything and may have to make a legal claim against your estate;

“ A Will is probably one of the most important legal documents you will ever sign...”

• ‘I’m ok, I made a Will years ago. Your assets and circumstances change so you need to review your Will. If you have married, then your Will may no longer be valid;

• If I make a Will no one can dispute it. Not true. There is a specific Act allowing certain categories of people to make a claim against your estate even if you have excluded them in your Will so get proper advice; • My friend will look after my children if I die. Unless there is someone else alive with parental responsibility the courts will decide. In your Will you can appoint a Guardian of your choosing;

ARTIST MEET PRIDE’S COVER

is month we’ve the pleasure of introducing Jocelyn Lawman, our new resident artist. e illustrator’s background in creating beautiful watercolours will come in handy not just for creating the 2020 covers of the area’s finest magazines but for local families looking to commission their own bespoke Christmas cards and portraits… Images: Pride’s Chief Photographer Dean Fisher and Jocelyn Lawman.

According to the adage, a picture can tell a thousand words. In the case of illustrator Jocelyn Lawman’s work though, that word count seems a significant underestimate. We adore Jocelyn’s work so much that we’ve invited her to undertake the position of Pride’s Resident Artist, creating our cover artwork and illustrations throughout 2020.

In addition, Jocelyn will also continue to work on her own private commissions, creating watercolour images of families – couples, children and beloved pets – watercolours of clients’ homes and bespoke greeting cards.

We recently joined Jocelyn in her studio to see how the artist creates her watercolour illustrations and to find out how an instinct for art has translated into a career working for some of the UK’s most well-known beauty brands too.

“Art was always a profound pleasure for me,” says Jocelyn. “I was schooled hight her in at the county at Lincoln College of Art & Design and completed a BA (Hons) in Fine Art at Newcastle university.”

“I loved the city, its people, its vibrancy and would spend hours ‘people watching’ and completing quick sketches of people in one of Newcastle’s busiest thoroughfares, Eldon Square in the heart of the city.”

“I had really been encouraged by my peers at school who looked at a couple of pieces I’d produced – a Pierrot figure, and a white feather, from memory – and exclaimed ‘wow!’ That catalysed my confidence and encouraged me to fill sketchbook after sketchbook with quick simple portraiture.” Doing so enabled Jocelyn to work in a highly instinctive way. She observes that in the Victorian era, ladies were encouraged to ‘learn’ art in a formal, structured way, breaking pictures down into simpler shapes.

That approach would yield very samey looking pieces. By contrast Jocelyn’s instinctive approach gives her work an individual, warm and characterful look and she soon began to pick up commissions. “We spent summer holidays at my grandfather’s rustic barn conversion in the

Dordogne, which was a lovely agricultural area, providing lots of inspiration. I created sketches and illustrations for pleasure but upon graduating I moved to London and landed a job with Proctor & Gamble.

My role was in marketing brands like Max Factor, Vidal Sassoon, Pantene, Herbal Essences and Clairol. I liaised with agencies and found my real skill was creating a tangible brief for a designer to work with. I was a good intermediary between the brand managers and the designers, which was essential to ensure I was commercially successful in the role – and it was a huge achievement to visit the supermarket and see our vision there on the shelves - but unfulfilling creatively.”

“My husband and I relocated to Dorking to start a family and start a new business as an illustrator. I created illustrations of every pupil – about 130 kids – at our children’s school every three or four years, painting them individually and in their friendship

groups. There was a terrific number of illustrations, but it was so rewarding.”

“Moving back to the area, as my children were growing up, gave me a better work/life balance and enabled me to take the plunge and to take on more commissions.” “Today I still retain commissions like the Olsen Animal Trust and an ongoing Superhero Series - a grass roots paratriathlon event founded by Paralympian Sophia Warner.”

Jocelyn also works hard creating her private commissions – usually portraits and properties – creating bespoke Christmas cards for private householders. In Jocelyn’s studio are chests full of illustrations – thousands of them. Everything is digitised but often the client receives the original illustration. Though she sometimes has to resort to working from a photograph, for surprise gifts for example, Jocelyn usually visits the 29

home she’s painting, preferring to see the subject in real life.

“I start and finish on the same sheet. I usually work on A3 cartridge paper, and my initial weapon of choice is a gnarly 3B pencil sharpened with a craft knife.” “I sketch the bare bones of a design completely freehand, really lightly but I mostly ‘draw’ in watercolour so there are as few pencil marks remaining as possible.”

“I prefer not to go over outlines in black ink, but if the client prefers that or the artwork lends itself to it, I’ll normally use an Edding pen.” “I spend about 15 minutes on an initial sketch and if I’ve met the client, I usually have the image half-drawn in my head by the time I’ve driven home.”

“In total a commission can take up to two hours. I scan it in to digitise it and to make the background pure white, but I don’t do much in Photoshop at all, it’s handy for filing images and for removing smudges but otherwise everything is hand-drawn.”

“Moving back to the area in 2015 has given me and my family a much better quality of life. There are better schools, I’m closer to family and of course lots of inspiration for my work.”

“I absolutely love the place so to be able to illustrate the county over the coming years and see my work in print, but also to reach new clients keen to have commission their own illustrations will be lovely!” n

For several years now, Pride Magazines has tried to be a little different in the way we present our magazine, from the bond paper we use to give the publication a luxury feel to the way we eschew the usual county scene on the cover in favour of quirky artwork. “The cover is like a shop window for a magazine not just in terms of content, but also in terms of giving readers an idea of the title’s position in the market place and its values,” says Editor Rob Davis. “Our decision to use illustrations rather than cover photographs was possible because ‘newsstand appeal’ is less of a concern to us compared to other county magazines because our distribution is predominantly a free one, directly through the letterboxes of properties in council tax bands F, G and H.” “Because we don’t need to sell magazines on newsstands we have more freedom with our choice of cover artwork, choosing what looks quirky, not a cover image which will ‘sell magazines.’” “The use of illustrations mean we’re not constrained by what images it’s possible to achieve with a camera or what we can obtain in spite of the weather, or time of year.”

“In our cover conferences the whole of the team is responsible for contributing ideas, and when we’ve an idea for a cover image which reflects the content of the magazine and which we all agree will look great, we hand a brief over to our illustrator Jocelyn Lawman. “Jocelyn hand-draws images taking anything up to two hours per image, ensuring that each image can incorporate a regional variation for our Lincolnshire, Rutland and Stamford magazines.” “She’s is great at incorporating our briefs, and our Christmas cover took three hours, with each element hand-drawn in a large format before being composited to create the final image.” “Jocelyn works with pencil to lightly sketch her idea on A3, but she ‘draws’ in watercolour, mixing each colour up and building up the light, shadows and colours in each image.” “The artwork is scanned in, gently retouched then placed on our page where we add the magazine’s masthead and ‘teasers’ to let readers know what our most important features are, before it’s sent off to our printers in high resolution.” n

Home is where the heart is, especially over the festive season... and for its regular diners, Stallingborough Grange is ‘home from home.’

Unsurprising, really, since the hotel was a private home built in the 18th Century until being converted into a 42 bedroom hotel in 1989. Celebrating its 30th anniversary this year, Stallingborough Grange has been owned and run for the past three decades by Heather Dutton and family. Little wonder then that this home grown hotel feels every bit like a private dining room, and not a bit corporate.

Also home grown is Head Chef Dan Blow, trained, tested and talented courtesy of North Lindsey College. He’s served as Head Chef at Stallingborough Grange for 20 years, so he’s got a firm grasp on exactly what diners expect when they visit the hotel. Compared to modern gastropubs elsewhere, Stallingborough Grange is, different; more traditional... and rather more elegant.

Stallingborough Farm Shop provides fruit and veg whilst Dan’s herb garden provides the hotel with all of its herbs whilst incurring zero food miles. All of the restaurant’s food is homemade from desserts to breads, to parfaits, burgers, chutneys and pickles. There’s also a tempting tiered afternoon tea option with homemade cakes and pastries.

GINGERBREAD COOKIE CHRISTMAS TREE STACK

Preparation time: 15 minutes. Cooking time: 10 minutes. 225g plain flour • 1/2 tsp salt • 1 heaped tsp ground ginger 1/2 tsp ground cinnamon • 50g butter • 100g brown sugar • 100g golden syrup melt the butter, sugar and syrup on a medium heat in a saucepan. sieve all the dry ingredients into a bowl. once the butter, sugar and syrup are melted add this to the dry mix and combine into a dough using your hands (food grade gloves are ideal for this). pop the dough on your worktop and roll out with a rolling pin to roughly 5mm thickness. i have used a star cutter and done roughly three of each size to maker a taller tree. Lay out your stars onto lined tins and bake at 180°c for roughly 10 minutes, or until brown.

once cooled you can make buttercream to decorate. Whisk your preferred ratio of butter and sugar until white and fluffy. use a concentrated food gel, like colour splash, green and cut a small hole in a piping bag and just pipe the colour on as your stack the stars together to make the christmas tree. i have also added sugar decoration balls; decorate to your taste! it’s a lovely, easy egg-free recipe to make and decorate with young children. my three year cannot get enough of these, and i cant wait for my youngest to be old enough to join in with him! n 59

RED VELVET MARBLE CAKE

Preparation time: 15 minutes. Cooking time: 10 minutes. For the Vanilla Sponge: 115g salted butter • 115g caster sugar 140g self raising flour • 1/2 teaspoon baking powder • 2 eggs For the Red Cake Batter: 115g salted butter • 115g caster sugar 140g self raising flour • 1/2 teaspoon baking powder • 2 eggs • 20g cocoa powder a few squeezes of Colour Splash red food gel. grease and line your loaf tin. use a tablespoon to add three scoops of the red velvet batter into the base of the loaf tin, leaving space for then adding three scoops of the vanilla cake batter next to the red velvet. do the same for a second layer, alternating red velvet on top of the vanilla and vice versa. once you have used all your cake batter get your cake tester and swirl the batter about to make it marble, without actually mixing it together to combine it; you want to marble it so you have two separate flavours marbled together. pop it in the oven at 170°c, and depending on your oven and tin it will need anything from 30 minutes onwards. keep checking until a knife comes out clean. you could top it with anything from chocolate ganache to buttercream! n 60

BAILEY’S CHOCOLATE TRUFFLES

once cold and set (it’s better to use food grade gloves as this is a very messy job!) use a teaspoon to scoop out your individual truffles and lay out on a plate or tray with greaseproof paper. once all truffles are rolled out pop back in the fridge or even the freezer until you’re ready for the next stage. ey last weeks and weeks so you can do this well in advance of christmas if you’re planning to have them for entertaining or to give to loves ones gift as presents.

ideally you need one steel mixing bowls, two regular breakfast bowl, the food thermometer, a spatula and a saucepan of boiling water.

ese have three layers so it’s your choice how many of them you do. melt the double cream and butter on a medium heat in a saucepan. put the chocolate, butter and salt in a bowl.

for the rich Bailey’s buttercream layer, use the same recipe as the chocolate buttercream for the cake, but you will use more Bailey’s so that it's a much stronger buttercream. use a couple of teaspoons to drop the cold or frozen truffles into the Baileys buttercream bowl and roll and around until coated, then pop back on their plate or tray.

once the cream is steaming but not boiling pour it over the chocolate and hand whisk until combined. is will be a thick ganache. en add the Bailey’s gently until combined. pop in the fridge until set.

once all truffles are coated pop them back, ideally in the freezer, or in a really cold fridge. for the chocolate coating it’s a good idea to temper the chocolate, as this makes the chocolate glossy and stops

Preparation time: 15 minutes. Cooking time: 10 minutes. 250ml double cream • 300g 70% Belgian chocolate • 150ml Bailey’s 1/ teaspoon salt • 1 knob butter 2

if you’re not too fussy it will be fine to just melt the chocolate and coat the truffles and put back in the fridge until set, but if you want some really well finished chocolate it’s worth the extra effort and time. you will need a food thermometer, which are really inexpensive and you can get them from supermarkets or any well known online next day delivery outlet.

to create 500g 70% chocolate, measure out 333g into the steel bowl and put over the saucepan on the heat (a bain-marie) and put the other 166g (known as the seed in tempering) into one of the breakfast bowls. melt the chocolate to exactly between 55°c and 58°c. at this point take 166g of the melted chocolate into the second breakfast bowl and put aside to stay warm. add the seed into the melted chocolate in the steel bowl and mix in until melted to cool it down to between 27°c - 29°c. you may well need to just slightly put this bowl over the bain-marie as you’re melting the seed in because smaller quantities are harder to melt at this temperature. if the temperature exceeds 29°c to melt the seed just add a few extra Belgian chocolate chips until you cool it back down to 27°c-29°c. at this point add the second bowl with the melted chocolate to increase the temperature back up to between 53°c-55°c. if it's not quite there just pop it back over the bain-marie until you get it there. do not try and multi-task when tempering chocolate because the right temperature will come and go in a blink, so you need to be vigilant with your thermometer! n

Integrated appliances include induction hob with extractor above, split level ovens with warming drawers, microwave, dishwasher, fridge and freezer.

The oven features two warming drawers which Jane tells us she couldn’t live without. Pride of place in the spacious modern hall is a bespoke set of shelving, built by Rutland craftsmen, which is home to Mark’s favourite books from the world of sport. In contrast, the sumptuous sitting room with Scandinavian style wood burner mixes traditional comfortable furniture and antiques.

The first floor is reached via an oak staircase with glass balustrading that continues along a galleried landing. The master bedroom has two sets of double wardrobes, an additional storage cupboard and there is a well-appointed en-suite shower room. The guest bedroom also has an en suite whilst bedrooms three and four share a stylish Jack & Jill Bathroom. All four bedrooms enjoy the property’s panoramic countryside views. “As you look outside the kitchen window you have the unspoilt views of the Nene Valley meandering and sometimes you can see canal boats and cruisers gliding along the Nene, with the historic stone bridge in the background and the village of Wansford. IN THIS DAY AND AGE OF MEDICINE the biggest frustration can be getting any one to see you and assess why you suddenly have pain. The NHS has finite resources, they cannot respond to everyone who has pain, and often our General Practitioners are encouraged to treat with painkillers for many months before referring on for any investigations or opinions. This is not a criticism, that is the reality of an underfunded NHS. At the Avicenna clinic, we take your pain very seriously, having an assessment is the first stop in deciding where the pain is coming from, it then makes the choice of imaging much clearer and targeted.

Take for instance Mrs LM, with severe pain on the outside of her thigh, she was struggling to mobilise, to help her granddaughter look after her horse (which was probably the start of things as she had to walk uphill in a field for a good half hour to retrieve the horse) to enjoy life, and with an important holiday coming up, she feared she might have to cancel. Her GP suggested painkillers and whilst there was a bit of relief, it did not agree with her system. The pain was just getting her down, and so she made an appointment at The Avicenna clinic one Monday evening. 108

Firstly she had a thorough history taken. It cannot be underestimated how important a history is, because by the time all the questions have been asked and answered, a clinician normally knows what to expect to find on assessment. With Mrs LM although the pain was in an unusual place for hip problems which are normally felt in the groin, all the questions like ease of getting in/out of a car, or stairs, led the way to believing it was a hip joint problem. The examination then ruled out the lower back and ruled in a hip joint problem. Armed with this, the clinician discusses the case with Dr El-Madbouh, Consultant musculo-skeletal Radiologist, who agrees the best investigation would be an MRI of the hip.

Within 45 minutes of arriving at the clinic Mrs LM is in the Open MRI scanner (the only Open scanner in a 100 mile radius) and sure enough it shows damage to the cartilage at the back of the hip joint. A normal x-ray would probably not have picked this up, but the MRI takes images form all direction and it clearly showed the loss of a patch of cartilage and some swelling in the bone as a reaction.

Next stop the operating theatre, kitted out with everything necessary for day surgery

treatment and a special type of x-ray called a fluoroscopy machine, giving an ability to take images in real time, which is very important for the next step of injection some anaesthetic and steroid into the joint. Once set up, the injection took 5 minutes and immediately there was a change in the pain. This means we certainly had the right diagnosis, now to see if over the next 6 weeks if this is enough to stop the pain and give Mrs LM her holiday, most importantly, pain free. All this took about 2 hours in total.

Joint pain can occur anytime throughout the year, but in the cold and wet months of autumn and winter you may find it harder to cope with.

A change in weather will not cause arthritis but it can make the symptoms worse. When we are cold, our body restricts how much blood it sends around extremities so that it can focus on supplying vital organs. The most common type of arthritis is osteoarthritis. As we age, the cartilage that cushions our joints gradually wastes away, leading to painful rubbing of bone on bone.

An injury to a joint can also trigger osteoarthritis, even many years later.

Rheumatoid arthritis occurs when your body’s immune system attacks the joints. The joints and inflamed tissues then become stiff, painful and swollen.

Another painful condition that flares up in cold weather is Raynaud’s disease. This affects the fingers and toes, but it is not a problem with the joints. The blood vessels under your skin go into a temporary spasm in reaction to the cold, cutting off normal blood flow.

Although pain is unpleasant, it’s your body’s way of telling your brain that something is wrong. Pain is a protective mechanism to stop further damage but arthritic pain doesn’t mean you should dive for the duvet and quit exercising altogether. Remaining active is vital. Exercise will help keep your joints supple, which can reduce

pain. There’re plenty of indoor activities available in this area to suit everyones taste. When you are not exercising wrap up warm, paying special attention to the hands, chest, legs and head.

Listen to your body, paying attention to pain in or around a joint can help prevent a more serious injury. Lincolnshire RSPCA’s

Enchanted Garden Ball e Lincolnshire and Mid Lincolnshire branch of the RSPCA recently held its third annual fundraising ball, with a theme of A Night in the Enchanted Garden. As a local branch the group is a separate registered charity to the national charity, and does not receive any government funding, instead relying on its three charity shops. With costs of around £8/day and £5/day to feed and house each dog or cat it rescues, the charity’s fundraising activities will help to cover the costs of looking after the nine dogs, 52 cats and two rabbits currently in its care - amounting to daily costs of over £338. A fundraising ball for over 150 people was held at Lincoln’s Doubletree by Hilton with grand raffle, three course supper and live music. n

TWITTER STORmS, Single use plastics. Unexpected items in baggage area. Climate change. Brexit. Crikey, modern life can be thoroughly rubbish. But such things are the price of progress. After all, who would trade all of the above for going back to living in caves without central heating? Who would abandon smartphones and online shopping? e very least we can say is that progress is sometimes… controversial. And so it is with the Defender. Pity the poor person charged with the responsibility of resurrecting an icon of British motoring; retaining the rufty-tufty, go-anywhere image whilst addressing the old model’s myriad faults; awful refinement, terrible crash protection, rubbish environmental credentials and a driving position only marginally preferable to being in traction on a mid-20th century orthopaedic ward. Even the most marginal change to the car was going to elicit outrage from the Land Rover faithful, so reinventing it from scratch meant that poor designer was always going to be sticking their head in a design noose.

e company covered 1,200,000 miles testing the car in desert, arctic and high altitude conditions. ey had to construct a tougher test track to put the new D7x platform through its paces and even developed a new test rig called 6DOF (six degrees of freedom).

e new model, much anticipated, is here. It’s civilised, air conditioned and computerised; a supercomputer (!) controls 85 ECUs and processes 21,000 messages at any one time. You’ll no longer want to stick a hay bale in the back or jet wash the droppings off the floor and worse still is a starting price north of £40,000 which has led to comprehensive criticism that the car is no longer a rugged back to basics farm workhorse, but just another luxury SUV. No, says Land Rover. e new model, whilst admittedly civilised, is not ‘just as’ capable, but ‘more capable, more hard-wearing and able to surpass the performance and ruggedness of the old model’ according to the firm, despite its new-found sophistication and comfort.

Defender prototypes were put on the rig for eight weeks, 24/7 - the equivalent of 150,000 miles - then shaken to the point of failure with heave, surge, sway, pitch, yaw and roll movements. Afterwards the cars, shaken to death, were torn down to see which bits failed first, then they were replaced and reinforced. Kill it. Resurrect it. Repeat. Don’t let the comfy interior fool you. Compared to a Range Rover, the chasiss, suspension subframes and arms, ball joints and bushes are all reinforced, as is the gearbox. ere’s more articulation in the wheels, greater ground clearance and improved approach and departure angles than any other Land Rover in history. It’s also easier to access the car’s abilities, with standard automatic gearbox, 4x4, low ratio gears and Terrain Response (‘idiot proof ’ off-roading tech) as standard. >>

>> At the moment there’s a single body style; a five door ‘110’ model which rides on air suspension. A longer ‘130’ people carrier’ version will follow, as well as a ‘90’ version with three doors. The latter will be shorter, riding on springs not air, both of which mean it’ll probably be the better off-roader. Currently you can choose a 200hp 2.0 diesel, a 240hp 2.0 diesel or a 300hp 2.0 petrol. There’s also a 3.0V6 400hp mild-hybrid petrol engine, whilst a plug-in Defender will also launch in 2020.

A third row of seats is available if you’re keen to take the whole family along and for the first time on a Defender you can specify a middle seat in the front to accommodate three front seat passengers.

Happily, Defender owners get a 360° surround camera and parking sensors as standard, whilst an impressive optional ‘Clearsight Ground View’ system uses the car’s screen to show you the car’s wheels, the ground and any obstructions but with the rest of the car removed, showing you just exactly what you’re driving on, or over... or through, since Defender can also now wade through water 90cm deep!

n Choose Your Wheelbase: From 1990 Defender models were distinguished by numbers that roughly correlated to their wheelbases; 90, 110, 130. Today’s Defenders’ numbers are more abstract.
