A
very warm welcome to our December edition as we all become very excited indeed for the forthcoming season of festive celebrations. In this edition we’ve tried to bring our readers the highlights of a Lincolnshire Christmas.
We begin this edition with nine pages of gifts for him, for her, for youngsters and for our four-legged friends, curated by our editorial team from the kind of local independent businesses that deserve our support throughout the year, but especially during the festive shopping season. We’re also bringing to our readers’ minds the best Lincolnshire food and drink to celebrate the season, and as well as products for your own Christmas table, we’ll pay a visit to a unique restaurant in the Vale of Belvoir where Rich Stevens and his brigade have created a tasting menu with no fewer than 20 courses. March 2023 saw the appointment of the new Bishop of Lincoln The Right Reverend Stephen Conway, who provides us with his Christmas message later in this edition, and remaining in Uphill Lincoln, we’re enjoying a look around a beautiful Georgian property currently on the market, and meeting Csaba Vass, one of the sculptors working on a very cool new event for the city, Lincoln’s Ice Trail! Lincoln Santa Run returns for 2023 LINCOLN It’s all ho, ho, go in Lincoln this month as the Lincoln Santa Fun Run takes place on Sunday 17th December. The event features over 2,000 participants dressed in festive red running a single lap or two laps (two or four kilometres) of the circuit. This year’s route begins in Castle Square and finishes in Minster Yard. As well as being popular with participants, spectators love the sight too, but the event, organised by Rotary Club of Lincoln Colonia, has a serious side too. This will be the 18th consecutive year for the event, which raises thousands of pounds each year for local charities. The event’s charity partners for 2023 include United Lincolnshire Hospitals Charity, LIVES, the Lincs & Notts Air Ambulance, RAF Benevolent Fund, St Barnabas and Marie Curie. n Find out more about the event at www.lincolnsantafunrun.co.uk.

Lincs & Notts Air Ambulance has made the shortlist for the Lifetime Achievement Award in the Air Ambulances UK ‘Awards of Excellence’ this year. Chris was nominated in recognition of his contribution to the sector and the impact he has made during his 19year Helicopter Emergency Medicine Services career. “Chris is one of the most modest pilots you could meet and he’s a calming influence on his team. With Chris flying you know you are in a safe pair of hands!” says the team.
Chris was born on the Isle of Wight but moved to Australia as a toddler. He came to the UK and ‘fell into flying’ when he joined the Army Air Corps in 1983. After 21 years in the Army, Chris became a HEMS pilot, first flying with Great North Air Ambulance, then the Yorkshire Air Ambulance before moving to Lincolnshire. Chris is known as the father figure at LNAA as he’s always looking out for the team, leaving chocolate bars and treats on desks when he can see they’re having a rough day. n See www.ambucopter.org.uk.
LOCAL HOUSEBUILDER MAKES A SPLASH WITH £10,000 DONATION TO SCHOOL...
MARKET RASEN Lincolnshire housebuilder, Chestnut Homes, has donated £10,000 to a Market Rasen primary school to help renovate its pool for swimming lessons. Market Rasen Church of England Primary School had been trying raise a total of £40,000 to help breathe new life into the 15 by 20 metre pool. And, through a range of community fundraising efforts,
they clocked up an impressive £30,000, with Chestnut Homes coming forward to provide the remaining funds needed to help them reach their goal. The pool was originally built in the 1930s and until now has been funded by the local community. The money raised will go towards a range of upgrades including a new liner, sides and flooring. n

Restoration of Boston’s historic Dolphin Lane is now complete...
A major project to restore Boston’s Dolphin Lane has come to a successful end. “Since starting the project this spring, the team has spent over 9,400 hours on the project – including removing 480 square metres of current paving and laying 3,500 new York stone setts,” says Richard Davies of Lincolnshire County Council’s executive member for highways, “Now that the works are finished, the lane is far more welcoming. This means a more attractive retail environment that will hopefully lead to higher footfall for the businesses here.” n 9

REMARKABLE NHS STAFF RECOGNISED FOR THEIR DEDICATION AND COMPASSION LINCOLNSHIRE Local mental health and learning disability nurses, healthcare support workers, pharmacists and psychologists are among the winners of this year’s Team LPFT Values Awards at Lincolnshire Partnership NHS Foundation Trust (LPFT). The twelfth annual LPFT awards was attended by approximately 250 staff and volunteers, many of whom were shortlisted from nominations made by colleagues, service users, carers, families, and members of the public. The ten award categories – which included leading by example, innovation and improvement, service user engagement and experience, and working together – all demonstrated the fantastic work happening every day in Lincolnshire’s local NHS services.

BOTTON’S PLEASURE BEACH FOUNDER PASSES AWAY AT 86 Skegness folk have been paying their respects after hearing that the founder of Botton’s Pleasure Beach Jimmy Botton has died at the age of 86. His son James Botton says his father will be remembered as ‘a very nice man’ who ‘touched the lives of so many people’ in the town. Jimmy purchased the resort in 1965 from Billy Butlin. n

A Christmas Greeting from the Bishop of Lincoln
STEPHEN CONWAY Appointed in May 2023, Bishop of Lincoln The Right Reverend Stephen Conway wishes the Diocese a Happy Christmas and shares his thoughts in a special address to our readers... Words: Bishop Stephen Conway.
“SINCE MY APPOINTMENT as the Bishop of Lincoln in May this year, I have received a wonderful welcome across Lincolnshire, on all sorts of occasions, including receptions and parties.”
“I was talking about Christmas to some young children recently and one boy said that the heart is a muscle that needs building up, so the more you love, the more able to love you become: love breeds love.”
“Have you ever been at a party or some kind of function where you are talking to someone and they are already looking over your shoulder to see if there is someone more interesting to talk to? Or do people even just look through you as though you were invisible?”
“This invites a response from all of us: Christmas is a special time for paying attention to those whom we love, near and far.”
“As a bishop I often have to go to gatherings where conversation with a succession of people is the norm. Even though I am so tall at 6’ 5” that it is hard to look over my shoulder anyway, I always feel valued when someone talks to me as though I were the only person in the world for him or her for the length of that conversation. Because I know how good that feels, I always try and behave the same way.” “At Christmas, Christians celebrate the coming of Jesus Christ, the Son of God, the most real person we believe ever lived, who came into our world to reveal the extent of God’s love for each of us.”
“My late Grannie used to tell me to put my hand on my heart at Christmas and to think what it might be to feel God’s heart beating in love. That heart is beating for my family and yours, beating for the whole world.”
The Diocese of Lincoln: n The diocese traces its history back to 679 and the original part of the see of Leicester, extending from the Thames to the Humber. Some time between the years of 1072 & 1092 Remigius de Fécamp, became the first Bishop of Lincoln under William the Conqueror. n The Diocese of Lincoln also included Oxford and Peterborough until 1541, and Bedfordshire & Huntingdonshire as well as Leicestershire until 1837.
“This is God showing us that he is giving us his full attention, not wavering for a moment from what it means to be a human being in the real world.”
n The diocese comprises 515 parishes and includes 640 churches. It’s divided into the three Archdeaconries of Lincoln, Stow & Lindsey and Boston – the latter established in 2013. There are 22 deaneries and a bishopric of Lincoln, Grimsby and Grantham.
“In Bethlehem God acquired skin which could be touched and could reach out to us. He came not to make himself the centre of attention or he would have come to somewhere grander than a little town in a backwater of the Roman Empire. No, he came to show us once and for all that we are at the centre of his heart.”
n The diocese’s mother church is Lincoln Cathedral, more properly known as the Blessed Virgin Mary of Lincoln or St Mary’s Cathedral. Construction began in 1072 and the building was consecrated in 1092. The tallest building in the world at 160 metres until the collapse of its central spire in 1311, the Cathedral is 147m long, 24m wide, and its two towers are 83m tall.

LINCOLN CATHEDRAL AND THE FIRST CHRISTINGLE SERVICE
A tradition which began in the Cathedral back in 1968 was the beginning of something really memorable for youngsters... THIS YEAR around 5,400 Christingle services will take place across the country, with young worshippers clutching their orange, with its candle, sweets and red ribbon. The service was popularised in Lincoln with the first such service held at the Cathedral in December 1968, raising money for The Children’s Society and bringing the creation back into modern worship. In fact, it’s thought that the origin of the Christingle was the Moravian Church in Germany, which was founded in the 15th century.

Pensom expected about 300 attendees to the service but was overwhelmed when over 1,500 arrived, and within a couple of years there were 20 around Christingle services in the UK all contributing to the charity. In 2022, over 2,000 Christingle celebrations light up the country and raise around £1.2m each year to help continue the work of The Children’s Society which threatened by abuse, exploitation and neglect.
The Christingle’s popularisation in Lincoln is attributed to John Pensom, a charity worker who wanted to raised funds for The Children’s Society and designed the service, held on 7th December 1968.
Traditionally a Christingle service takes place between Advent (four weeks before Christmas) and Candlemas (2nd February), with Christmas Eve being the most popular time to celebrate. n

ICE TRAIL This month sees a brand new and very cool attraction making its debut in Lincoln, with Csaba and the team from Icebox commissioned by the City of Lincoln Council to create 20 bespoke ice sculptures for visitors to enjoy in Castle Square and around the Cathedral this month... IF YOU FEEL THE COLD, spare a thought for Csaba Vass. As Pride goes to press he’s working hard to create the City of Lincoln’s icy flagship event in its programme of Christmas entertainment, creating bespoke ice sculptures, brand new for 2023 for the public to enjoy around Castle Square and the Cathedral on 9th and 10th December. Csaba is from the Transylvanian region of Romania, his home town flanked by the Carpathians and Apuseni ranges. After studying at the University of Art and Design (UVT) and having become interested in sculpture, he studied and worked in the US from 2001 to 2009, where he first witnessed sculptors working with blocks of ice. Fascinated by the process, Csaba too joined the profession, and the rest is history until he joined Icebox – the company creating the Lincoln Ice Trail – back in 2009. Icebox is headquartered in the Vauxhall area of London and consists of about 25 staff but only two of those are specialist sculptors. Csaba reckons that he creates 1,500 sculptures each year, mainly for corporate clients and each vastly different in their size, shape, design and imagination. But surely ice is one of the most challenging materials to work with given its weight, fragility and tendency to, er... melt?
“Every material has its own characteristics,” says Csaba. “I’ve worked with stone, timber and metal. One thing I’d say about ice is that it’s very clean. You don’t breathe in fumes or fine dust, for example.” “That’s not to say it doesn’t present its own challenges as a material, but that’s all part of the fun!” It’s thought that Icebox is one of only six or seven such businesses in the UK. The firm uses commercial ice makers by a firm called Clinebell which are usually put to work creating ice cubes for drinks in bars. In this application though, instead of making many small blocks of ice, they’re designed to create single blocks around 25cm deep, 50cm wide and a metre in length. Each one weighs about 130kg. The blocks are made from water, but water that has passed through a reverse osmosis filtration system to ensure it’s free from minerals and is as clear as possible. Among the firm’s work is the creation of drinks luges, and so all of the firm’s work has to be food-grade hygienic, and the company is subject to regular inspections like any restaurant or commercial kitchen. Commissions vary from ice logos for drinks with commercial motifs carved into them

“We’re creating 20 sculptures for the event in Lincoln and these are mostly one or two block works, up to 300kg in weight...” right up to ice bars, pool tables made of ice and full-size replicas of thrones, cars, animals and people. As part of their range of services, Icebox will first create a design informed by their experience of how to actually create an ice sculpture. Understanding the way ice works – and melts – helps to inform the team of what’s practical, and what will last longer before melting, building endurance into the design. Each sculpture last about eight hours outdoors, although conditions vary significantly. “Larger sculptures can be made of multiple blocks,” says Csaba. “We’re creating 20 sculptures for the event in Lincoln and these are mostly one or two block works, up to 300kg in weight.” “In the first instance, we use CNC machines to cut down the blocks so we don’t have to cut off large sections of ice manually. This also helps us to recover smaller complete blocks of ice which can be used to carve smaller parts of a sculpture, preventing us from having to create large ice blocks for each element.” “Each sculpture that we produce varies dramatically; some are created from a single block, but others are made from individual pieces which are then kept in our cold store and assembled in situ. One commission I worked on featured 1,500 individual pieces!” “When a sculpture needs its individual pieces assembled, water is our glue, and the weight of one section on another – and the fact that both sections are ice – quickly ensures the water in between fuses them together.” >>

>> “The studio is about -8°c but honestly, I don’t feel the cold in there,” says Csaba. “I wear two pairs of socks and we have to wear very well-insulated non-slip safety boots, a thick jacket and gloves.”
“What I can tell you is that the Ice Trail will feature some really impressive examples that show off the potential of ice, and really reflect Lincolnshire as a county, which will help to get everybody in the festive spirit!”
“Once the CNC machine has cut the excess off the block, I carve everything manually using a chainsaw initially, then die grinders – rotary tools, like a larger, more industrial Dremel-style device – then eventually chisels and hand tools for more delicate details.”
“As well as displaying each sculpture along the Ice Trail, we’ll also be hosting some live demonstrations of the process and inviting the public to see live ice-carving!” In addition to enjoying the city’s ice sculptures, visitors to the event will also be able to enjoy Glüwein and hot chocolate in City Square, and a traditional carousel located on the Dean’s Green of Lincoln Cathedral... we think it’ll be a very cool way to begin your festive celebrations in the heart of Lincoln!
The company can also add colour to their work, in the form of ‘poster paint’ style pigments and they can embed items like flowers in their designs too. The ice can be left smooth and crystal-clear, or it can be frosted, and of course, an ice sculpture can also be backlit too. “I’d never been to Lincoln before, so from having had a meeting about what we could create, I’ve really enjoyed learning about the area and we’ve come up with some wonderful ideas... although I am sworn to secrecy!” 40

Restaurant Jericho This month we visit a unique and wonderful restaurant in the Vale of Belvoir which offers a tasting menu experience predicated upon the availability of fresh seasonal ingredients... Words & Images: Rob Davis.
‘UNIQUE’ is a word that tends to be overused, – especially in the field of marketing – but on this occasion, there’s justification to describe Restaurant Jericho as such. It’s an unusual restaurant in the Vale of Belvoir and it’s home to Rich and Grace Stevens who are self-taught restauranteurs, and therefore never followed a conventional career path into hospitality. Instead, they’ve made their own successes and mistakes, worked through any mistakes free of dogma or established industry precedents, innovated accordingly and have consistently reinvented their offering of food post-pandemic, to ultimately establish Jericho in September 2022. Grace works at front of house and alongside Rich in the kitchen are chefs Joel and Archie. The restaurant follows a tasting menu format and services just 12 covers a night. Three chefs, 12 covers. That’s one chef for every four diners. But that level of staffing is necessary because of the intricacy of producing Jericho’s 20-course tasting menu. Yes… 20 courses. 20. Two-zero. The family farm upon which Rich was brought up is 200 years old and he’s a fourth-generation farmer, with experience in both the livestock and arable sectors. He also worked in engineering and eventually sold high-end farming machinery before returning to livestock as a smallholder. After embarking on a butchery course Rich set up Dickies in 2017 as an artisan butchery, farm shop café and ‘secret summer steak club’ specialising in a small number of covers and rustic dining for locals. The latter was successful… too successful as it turns out. More staff, more covers, more hassle and the kind of compromises you’re forced to make when scaling up all meant Rich fell out of love with Dickies. Then Covid came along, with further adaptation of Dickies to facilitate social distancing.

MEET THE CHEF RICH STEVENS
Eventually Rich decided that enough was enough and it was time to reinvent the site with a ground-up redefinition of what a restaurant on the site could offer. The restaurant itself has a unique look. Unsurprisingly, as Rich built it himself, with a vision of a timber frame and extensive glazing with an open kitchen, open flame cooking, plus high ceilings and skylights for a rustic industrial look. So, yes… not content with simply creating the restaurant, the enviably practical Rich also built the premises. >>
Working as an arable farmer and in the agricultural machinery sector, Rich diversified from livestock into butchery, founding an artisan butchery named Dickies on the site of Restaurant Jericho before reinventing the place as a tasting menu restaurant which opened back in September 2022. n

>> This included making the tables from mild steel, created the heavy industrial entrance door (cosy ‘nuclear bunker chic’), he installed log burners and his open fire ranges, then commissioned bespoke plates and hand-forged knives and cutlery from Tim Aucott in the Vale of Belvoir. He also created a kitchen garden with its raised beds outside the restaurant to grow their own produce. As slick as the restaurant looks, and as talented as the team are though, there’s a forehead-slappingly simple and back-to-basics approach to the composition of Jericho’s menu which poses a simple question: ‘what do we have to work with?’ It’s a question more chefs should ask, but don’t because it’s a hassle to work around lack of ingredients. Training junior members of the brigade is time-consuming and trying unproven dishes on menus is a risk. We exist in a world in which strawberries, asparagus and game are available all year round, regardless of seasonality. By contrast, Rich and the team start with what’s seasonal, local and what dishes will mean something to them or to the area, then construct their menu around that.
Rich and the team butcher their own meat, using the whole beast and they create their own charcuterie. They utilise game from local shoots which turns up on their doorstep. The restaurant’s independent fish supplier bypasses the fish markets entirely, and instead liaises directly with fishermen; if they’ve not caught it fresh, Rich doesn’t use it! Likewise the team uses raw milk from a dairy less than a mile away, free range eggs from three miles away and the chefs make their own yoghurt and cheese too. Bread is made in house, and the team reckons they’re about 80% self-sufficient in fruit, veg and herbs. “It’s an approach championed by Magnus Nilsson of the restaurant Fävikan,” says Rich. “It’s ‘creativity through constraint.’ Instead of saying we want to create something which uses strawberries, for example, and ordering them through a fruit and veg supplier, we accept that they’re not available, and have to work with what is available, changing our menus on a daily basis to suit availability. It’s a challenge, but it makes you sharper as a chef, more adaptable and it means your dishes are more authentic and seasonal.”

Rich’s dishes involve lots of preparation, to say nothing of the effort involved in making your own bread, cheese, and so on. It does mean, though, that the dining experience is varied and assiduous, with lots of techniques needed and 20 small, entertaining and imaginative dishes rather than three much larger and more conventional courses. Nothing about Jericho is typical, and what

Rich, Grace, Joel and Archie have created is a clean-sheet design of what they believe a restaurant should be, with cooking from the heart, no corner-cutting allowed and a genuine interest in seasonality and provenance. It’s achingly authentic, not at all pretentious or gratuitous, just a really genuinely great experience, with a lovely team demonstrating down-to-earth professionalism and also their uncompromising love of food. n

Rich and delicious, but very easy, this is a traditional festive dessert that’s lighter than a Christmas pudding and beloved by all!
BEST EVER YULE LOG Preparation Time: 30 minutes. Cooking Time: 10-12 minutes. Serves: 6 people. For the Chocolate Sponge: 4 large eggs • 100g (3.5 oz) caster sugar • 75g (2.6 oz) plain flour 25g (0.9 oz) cocoa powder • 1 tsp baking powder • A pinch of salt. For the Filling and Topping: 300ml (10.1 fl oz) double cream • 200g (7 oz) dark chocolate, finely chopped 50g (1.75 oz) unsalted butter • 1 jar of black cherry jam • Icing sugar, for dusting Fresh black cherries and chocolate shavings (optional, for decoration) Preheat your oven to 180°C (350°F) and grease and line a 30x20cm (12x8 inch) Swiss roll tin with parchment paper. In a large mixing bowl, whisk together the eggs and caster sugar until the mixture becomes pale and fluffy. This might take a few minutes. Sift in the plain flour, cocoa powder, baking powder, and a pinch of salt. Gently fold these dry ingredients into the egg mixture until fully incorporated. Pour the batter into the prepared tin and spread it out evenly. Bake in the preheated oven for about 10-12 minutes, or until the sponge is set and springs back when touched. While the sponge is still warm, place it on a clean kitchen towel generously dusted with icing sugar. Carefully roll up the sponge with the towel, starting at one of the shorter edges. Let it cool completely in this rolled-up shape. In a saucepan, heat the double cream until it’s just about to boil. 50
Place the finely chopped dark chocolate in a heatproof bowl and pour the hot cream over it. Let it sit for a minute, then stir until the chocolate is completely melted and the mixture is smooth. Add the unsalted butter to the chocolate mixture and stir until it’s fully incorporated. Allow the ganache to cool and thicken. Carefully unroll the cooled chocolate sponge. Spread a layer of black cherry jam over the sponge, leaving a small border around the edges. Next, spread a generous layer of the chocolate ganache over the jam. Gently roll up the sponge again, using the towel to help you get a tight roll. Place the seam side down. Spread the remaining chocolate ganache over the yule log, covering the entire surface. You can use a fork or a knife to create a bark-like texture on the ganache. Decorate with fresh black cherries and chocolate shavings, if desired. n

A patisserie showstopper that’s cute and versatile! Experiment with colours and pipe snowmen, holly or Santas on the top for an extra festive flourish!
FESTIVE MACARONS Preparation Time: 30 minutes. Cooking Time: 10-12 minutes. For the Macaron Shells: 125g ground almonds • 200g icing sugar • 100g egg whites (from about 3 large eggs) 40g granulated sugar • Red food colouring gel or crimson red cocoa powder For the Filling: 100g unsalted butter, softened • 200g icing sugar • 1 tsp vanilla extract 1/2 tsp peppermint extract • Red food colouring gel crimson red cocoa powder LINE two baking sheets with parchment paper or silicone baking mats. You may want to draw circles on the parchment paper to use as a guide for making uniformly sized macarons. In a bowl, sift together the ground almonds and icing sugar. If you have any large almond pieces left in the sifter, discard them. In a clean, dry, and grease-free bowl, beat the egg whites with an electric mixer until they become foamy. Gradually add the granulated sugar and continue to whip until you get stiff and glossy peaks. Gently fold the almond and icing sugar mixture into the whipped egg whites until the batter is smooth and glossy. Be careful not to overmix. If you’ve not substituted red cocoa powder Add a few drops of colouring gel (red, green etc...) to achieve your desired colours. Gently fold until the colour is evenly distributed. Transfer the macaron batter to a piping bag with a round tip. Pipe small circles onto the prepared baking sheets, leaving space between them. Let the piped macarons rest at room temperature for about 30-45 minutes until they form a skin. 52 52
In the meantime, preheat your oven to 150°C (300°F). Bake the macarons in the preheated oven for about 15-18 minutes, or until they have formed a firm shell and are set. The tops should not brown. Rotate the trays halfway through baking then Allow the macarons to cool on the baking sheets for a few minutes, then transfer them to a wire rack to cool completely. To make the filling, in a mixing bowl, cream the softened butter until it’s light and fluffy. Gradually add the icing sugar to the butter and beat until well combined. Add the vanilla extract, peppermint extract, and a small amount of red food colouring gel to the filling. Mix until you achieve a uniform colour and flavour. Match up macaron shells of similar size then pipe or spoon a small amount of the filling onto the flat side of one macaron shell. Gently sandwich it with another shell. Allow the macarons to mature in the refrigerator for at least 24 hours. This allows the flavours to meld and the texture to improve. n

It’s also a tantalisingly unique prospect for its next owners because 18 Eastgate is currently on the market, and though it offers the kind of Georgian architecture and generous amount of space that you’d expect from a property in a pretty rural village, this is a family home that’s right in the heart of Uphill Lincoln. “The nice thing about living here is that whilst you’d expect an area of a busy city to feel anonymous, there’s actually a really wonderful close-knit community feel about the area,” says Joe. Whilst he’s been involved in a few property projects before, Joe had never attempted anything on the scale of the restoration of 18 Eastgate, but when the property came onto the market, the allure of the building and its enviable position in the heart of Lincoln proved too good an opportunity. Purchasing the house in spring 2019, Joe embarked on its restoration and has had to source tradespeople with a range of skills from a blacksmith to create a custom insert over the well in the property’s wine cellar, to those specialising in lime render plasterwork in order to responsibly renovate the Grade II listed building and its fabric. Arranged over three floors, 18 Eastgate offers a total of 5,438sq ft of accommodation. All of the potentially troublesome elements of a period property have already been addressed, with new plumbing, wiring and
the property’s slate roof already enjoying a refurbishment, ensuring there are no unpleasant surprises awaiting its next custodians. The ground floor features a breakfast kitchen and study to the front of the property, and to the rear of the property a formal drawing room and dining room. >> A bushy, pretty wreath on the door is one of the joys of the festive season, and with an abundance of natural greenery in your garden, there’s no need to look very much further... in fact, Louth Florist and founder of Fig & Fern Claire Sutton is a keen advocate of both seasonality and sustainability in her work. Raised in Lincolnshire and previously working in HR, Claire pursued a career in floristry full time around the millennium, joining the British Flower Movement and choosing to bypass the mainstream commercial floristry world. “It does requires more thought, but once you become an advocate of British seasonal floristry you don’t tend to go back,” she says. “Much of my work as what I suppose you’d term an artisanal florist is for weddings and other events. My work has a look that’s markedly different from mainstream floristry but that’s because rather than sourcing imported flowers from wholesalers, including those who use imported blooms, I prefer to work with the seasons and express them in my designs.” “There are a few local suppliers I use regularly such as Sandilands’ Owl Garden Flowers, but in addition, my own garden is a great resource, allowing me to work a year in advance and ‘grow to use,’ as well as ensuring there is plenty of material to use for things like these festive wreaths.” >>

WREATH MAKING with CLAIRE SUTTON
>> We joined Claire at Wootten Hall in North Lincolnshire for some advice on how to create a homemade wreath for your door this month with both sustainability and seasonality in mind. Claire is hosting at least two wreath making courses at the venue in December as well as half-day courses from her own studio near Louth. What follows are just a few of the many hints and tips Claire can impart during a course... and attendees will also a glass of fizz and patisserie treats from a professional chef during her workshops! For starters, Claire advocates the use of wreath bases made from vine, rather than those metal. Available from good florists, these are a little bulkier than metal, they’re made of a natural material and because they’re a bit bulkier, they require less material to be bound to them. Floristry wire is good for tying in materials like pine cones, but Claire prefers natural twine for tying in sphagnum moss, which provides body for the wreath and allows it to retain moisture. “Moss is something that should really be sustainably sourced in large quantities,” says Claire. “It’s not something you have to be too fussy about if you’re gathering it to use in a domestic setting, but as a florist I’m always mindful to use a supplier who can source it responsibly.” “The same goes for the foliage that you’d like to use. I tend to forage what I need from my garden and secure it to my wreaths, working clockwise around the whole of the circumference and having all of the material facing the same way.” “Here I’ve incorporated native fir, larch and spruce to ensure a good mix in the overall look, giving it a fuller, more ‘luxe’ appearance.” “My starting point is usually a preferred colour scheme and I do like to see where a wreath will be hung before I start working which is a good way of informing about colours and different decoration.”
“Black doors are fairly easy to work with as they’ll take most colours, but a deep red is my favourite. I’d choose sage for a grey door and for a sage green, lilac, purple or soft pink and so on.” “When it comes to decoration, it really is just a case of using your imagination and carrying through a colours scheme that you really love. In this example I’ve used some vintage velvet ribbon which I can reuse in the future, and I’ve used some red pepper berries too.” “I’ve also incorporated pine cones and I’ve retained a couple of bells which also have a couple of wooden clappers in, giving a cheery little clang when visitors come round over the season. It’s a little bit of festive joy that raises a smile, but the real satisfaction is knowing that you’ve created something and had a great time doing so!” n

Stuck for what to put on your Christmas list? Tired of large, unwieldy cars in town? We’ve a solution to stick in your stocking in the form of the nostalgic electric Mini eMastered by David Brown... a tiny town car guaranteed to put a smile on your face and remind you of your very first motor!
EVERYONE remembers their first car with fondness. And chances are... it was a Mini. BMW’s modern interpretation is good but somehow it’s a bit too... modern.
But even David Brown isn’t excused from the inexorable rise of electrification, and so here is their electric version of the classic bearing the name Mini eMastered.
Happily, back in 2017, enthusiasts David Brown Automotive recreated the original in a more faithful iteration, based on a 1960s Mini Cooper with a fizzy 1,275cc engine, a proper go-kart like driving experience and – more controversially – a price tag for the Mini Remastered approaching £100,000.
With prices from £125,000, the four-seater Mini E-Mastered is something that you’ll buy with your heart, not your head. But compared to a classic car, it’ll give you the sense of nostalgia but with unimpeachable build quality and reliability, not to mention rather more civilised modern mechanicals.
That price hasn’t stopped order books filling up nicely, and the company is set to satisfy its aim of producing about 250 vehicles a year: it’s a hand-built car, remember, not a mass-produced volume-selling model, with over 1,400 hours going into each example; 400 hours spent on painting alone.
Unlike BMW’s bloatey offering, the Mini eMastered looks like a genuine original Mini but its 72kW motor provides a range of 110 miles, and makes 60mph in 8.5 seconds.

Not only is it zippy it’s also quick to charge, taking just three hours, and being electric its power delivery is instant and silent. It’s a cinch to drive too thanks to an automatic gearbox, and inside there’s a modern infotainment system with Bluetooth that’ll pair with your Apple CarPlay or Android Auto device. There’s power steering and air con too; bet your first car didn’t have those luxuries! You can, of course, spend half the money and end up with a car twice as large... but that’s hardly the point. If you’re looking for a car that’s practical enough for commuting and shopping, brimming with retro charm, with modern mechanicals and the benefits of electrification, nothing but nothing will put a smile on your face like a Mini eMastered. n

The Black Tie Ball at Kenwick Park for
Cancer Research UK SIMON WEST and his committee recently organised a charity ball in aid of Cancer Research which was attended by around 100 people. The event was held at Kenwick Park near Louth and included an auction, three course supper and dancing to The Stolen Fridays. Cancer Research is the world’s leading independent cancer charity dedicated to saving lives through research, influence and information. The charity was formed in 2002, though its history goes back much further, to 1902, with the founding of the Imperial Cancer Research Fund. The charity raises money through donations, legacies, community fundraising, events, retail and corporate partnerships with over 40,000 regular volunteers contributing to its work. n Words & Images: Rob Davis.
