What’s on your bank holiday to-do list? The tantalising prospect of socialising outdoors has meant that sorting the garden has shot to the top of mine. I won’t have a built-fromscratch outdoor kitchen and living area done by March 29 (over-ambitious plans are a bit of a bank holiday tradition in my house), but I can have a good tidy up and refresh the borders with new plants. Indoors, I’m determined to nail down my colour scheme and get busy with a paintbrush. The real homes in this issue are full of colour, from Kerryanne’s bold grey kitchen (page 20), to the pastels in Anna’s bedroom (page 34) and the bright pink handrail on Deborah’s stairs (page 48). Such different approaches to colour have left me spoilt for choice. When it comes to my own home I just can’t decide!

ABOUT ME I’m Kerryanne McQueeney Hubbard, 38. I’m a freelance fashion designer (@the_creative_saint). I live here with my husband Christopher, 38, a conveyancing solicitor, and our children Henry, four, and twins Edward and Prudence, two. OUR HOME A 1929 three-bedroom semi-detached in Middlesbrough, bought in May 2015. WHEN WE MOVED IN The house was bland and dated, which was surprising considering it had lots of quirky windows and original features. AND NOW It feels so fresh, current and bright with our updates. The rooms all flow seamlessly now, too. STYLE TIP Vivienne Westwood says: ‘Buy less, choose well, make it last.’ I live by this quote, as I have wasted so much money in the past on buying fast-trend items and not loving them.

Kerryanne’s new home had good bones, but the decor was dull. Luckily, she had plenty of ideas for how to brighten things up
B
efore we bought this house we had been living in a Victorian flat, which although lovely, wasn’t going to be big enough, as we had plans to start a family,’ says Kerryanne. ‘So the search was on! This property, which is on a main road, I remember so well as a child, as I used to walk past it often. I loved the stained glass windows and the original doors, which have a really unique shape. It was these quirky and original features that made me fall for it all over again as an adult.
Lifting the gloom
The house had barely been updated since it was first built in 1929, so it needed a big revamp. It felt really dark and gloomy, even though there are lots of windows, but the way the rooms had been laid out made it feel a bit grim. Our challenge was to make it feel brighter and more spacious. I became a bit obsessed with getting light to flow through the house!
Tidying up
One of the first things that we did was to completely declutter, so that we could properly see the size of the rooms and make sure the furniture we were getting would fit comfortably into the spaces. We then stripped the wallpaper off the walls and skimmed them for a smooth finish. The floors in the hallway and living room are original. I initially painted them a much darker shade than they are now, but then I had second thoughts and I’ve since taken them back to their original shade, and I much prefer them like this. They suit the house. We replaced the gas fire in the living room with a vintage surround and new tiles. This works really well juxtaposed with the concrete-effect finish on the opposite

MODERN MIX ‘Graphic lines and figurative faces are a key trend for interiors at the moment’
wall. I achieved this by mixing some grey paint with some white, to get the exact tone I wanted, and then I applied it with a sponge to create the concrete look. It was really simple. I didn’t want to do the whole room grey though, so the other side has been done in a more neutral shade, but with the same effect. We’re really pleased with it.
Creating space
At the back of the house we removed the wall between the kitchen and dining space. This meant we could create a big open-plan kitchen-diner that feels light and spacious. It’s great being able to have the children playing in the same space as us while we’re cooking and getting meals ready. The existing kitchen wasn’t that old and the quality was good, although it was poorly fitted and the appliances were cheap. I wanted a modern-look kitchen, but with a traditional Belfast-style sink. This was a bit of a sticking point because the kitchen fitter needed to specially make the part that the sink

Using a damp cloth, wipe down the wall surface, making sure that it’s clean and free of dust. Paint the wall with soft grey paint, using sweeping strokes. Follow up with a wet cloth to soften and blend to the edges of the wall. Use a scrunched-up damp cloth and dab on extra texture. With an almost dry brush add vertical strokes with white or very light grey paint. Use a wet cloth to blend the white paint and work it into the base layer for a textured look. Work in smallish sections so that the paint doesn’t dry between the brush and cloth steps. And step back to check out your work from a distance every so often.

I would have loved a 1950s-style Smeg fridge, but I was on maternity leave at the time, and on a budget, so I painted the one we had with a wood/metal paint, so that it blends into the wall. I’d recommend anyone do it. Because I didn’t like the fridge, I didn’t mind if it went wrong, but fortunately it’s not an eyesore at all.
Cohesive style
To make sure the kitchen felt connected to the dining space, we fitted the same flooring throughout to give the sense of cohesion. I used patterned tiles to merge modern and traditional. Another way we created a connection between the two spaces was by adding a breakfast bar which crosses into both sections. I like the industrial look and so chose a timber top resting on scaffold

The bathroom was the worst room in the house – it was really shabby and dirty. I was happy enough to live in the other rooms as they were for a while, but this had to be changed as a priority. I initially wanted a freestanding bath and walk-in shower, but we were expecting the twins and didn’t have the money for that luxury, so we installed a budget suite. Despite this, I do like the space now, especially the tiles with the grey grout. I painted the ceiling using a roller, which was constantly breaking on me, so while I’d love to paint more ceilings in the house I can’t bring myself to do it. It’s really hard work! Our main bedroom was a fairly standard set-up. Like the rest of the

You’ll need a piece of wood cut to size and two lengths of rope. Drill a hole near each corner to thread the rope through. If you’re using reclaimed wood, sand it down, then paint or varnish to your preferred shade. Fold the rope in half and thread the ends through the two holes at one end, then create a knot on both sides of these holes. Do the same with the holes at the other end of the wood. Screw hooks into the wall, and use to hang the shelf securely.

house it was plain, but the previous owners had fitted a red carpet. The first thing I did here was to take the remaining grey paint used in the kitchen and paint the skirting boards and doors. I had some help from my sister-in-law, who’d just finished renovating her own place and was a bit disappointed she had no more rooms to decorate. We chose this beautiful pink tree wallpaper together, which has really transformed the space. It’s easy to create this mountain range design using Harris tools. Starting with a plain white wall, use a pencil to draw an undulating line for the top of the hills. With a thin brush (the Harris Ultimate Blade Brush is ideal), paint the line in dark blue-grey emulsion. Use the same brush to thicken the line and cut in at the skirting in the same paint. Fill in the hills area with the Harris Ultimate Jumbo Mini Four Inch Paint Roller Frame & Sleeve. When the paint is dry, mark out the mountain peaks with masking tape. Draw a wavy line near the top for the snow caps and paint in two shades of grey. Leave to dry, then remove the tape. Draw the sun by tying a piece of string to the end of your pencil and secure the other end to the wall with a drawing pin where the centre Get sharp lines and of the sun would be. s soon as we saw the house online, I immediately started sketching plans for what we could do with it,’ says John. ‘We bought the property on probate from an elderly couple who had passed away, so it hadn’t been touched for a while. The interior needed a total facelift, but this made it easier in some ways. It was just a matter of getting rid of everything and starting again. ‘When we visited, we both loved the width of the plot and the potential that came with it. It’s an end-of-terrace house and, because they were built in the 1950s, all the houses on the street have larger gardens than their Victorian neighbours. A side extension had been built in the 1980s, so I knew we’d be able to get planning permission for all the work we were planning.’

‘Creating a stylish kitchen that served the whole family was a priority,’ says Anna. ‘We wanted an airy, open space to entertain guests and family, so we built a rear extension and lowered the ground floor, as mid-century houses often have low ceilings that can make the space feel a bit poky. Kitchens can easily become purely practical and unrelated to the rest of the house, so we used raw materials to inject personality into the space. The exposed spruce beams were a way of adding character to ceilings that were otherwise completely flat. John’s been obsessed with having a concrete floor for as long as I’ve known him – he was building up to this moment! It’s a nice counterpoint to the pastel colour scheme and other finishes in the room. Finally, we went for floor-to-ceiling glass doors to let in plenty of light.

Living in a small flat with two young children was difficult, so we wanted to give the kids their own space in the new house. There were two bathrooms on the first floor and we knocked into one of them to create the kids’ bedroom. It stretches almost the expanse of the house and there’s plenty of room for all their things. They don’t clutter up the downstairs family space now, which was a real drag in the flat – the first thing we’d have to do every night after putting them to bed was clear away toys. This layout is a lot more manageable. For the decor, I was inspired by island living. We lived in the Bahamas for a few years and Rufus was born there, so this scheme is a nod to our family’s story. I painted the beams white to look like a beach bar and followed up with palm tree murals on the walls. It’s all been done at a fairly low cost, as we’ll

Colour coordination
John was in charge of the architectural side of things, so I took the lead on choosing colours. I started with a key palette inspired by raw materials we’ve used in the house – the magnolia brick of the extension, the concrete floor and the exposed beams – and used colour to enhance them. One of our friends described the kitchen palette as “1950s ice cream”. I love that! It feels appropriate – everything from the colours to the materials are a nod to

the mid-century soul of the house. The sitting room is a real point of contrast. We didn’t lower the floor in here and the room is north-facing, so we decided to embrace the dark vibe by painting the walls and ceiling in Squid Ink. The dark tones work in the enclosed space; they make it feel moody and more grown up. Then, I brought in bursts of colour through the sofa, cushions and artwork. The kids don’t tend to come in here, so we’ve got our own cosy, adult idyll.

Thoroughly clean the wall with warm, soapy water to remove any dust and grease. Leave to dry, then apply a coat of primer. Transfer your design to the wall using the grid method. Mask up edges to achieve crisp lines. Think about paint. If the mural is in a sunny spot, check the UV qualities of your chosen paint to avoid it fading over time. Quality acrylic mural paints can be expensive, so use for details and block larger areas with ordinary household paint. Matt or eggshell finishes are less likely to reflect light off the mural. Remember to step back regularly as you paint to see what the mural looks like from a distance.

Combining skills
Inevitably, we didn’t agree on everything. We have quite different styles, eclectic versus utilitarian, vintage versus contemporary, so there was a little bit of arm wrestling over some elements of the design. What worked for us was allowing one another to have complete control over certain decisions and particular parts of the house, so the project has definitely benefitted from both our creative

We’ve made sure that the house serves the whole family, which has been even more important over the last year. I’m so glad we built a workspace in the side extension. Budget-savvy renovator Deborah has filled her south London home with character, without breaking the bank, thanks to her smart shopping know-how

orn and bred in this part of London, I was thrilled when this Victorian terraced property came onto the market on one of my preferred streets,’ says Deborah. ‘It wasn’t exactly love at first sight – the whole property was in a state of disrepair from top to bottom, and the rooms had an odd smell from not being used in some time. But it was on the market at a good price and I could see that, with lots of hard work, the potential was there to turn it back into a characterful family home for myself and the boys.
New layout
With the sale taking quite some time to go through, as I had to wait for power of attorney to be granted for the 95-year-old owner, I had plenty of time to think about the structural changes I wanted to make to the house. My first priority was to relocate the bathroom upstairs, as it was previously at the back, where the kitchen now sits. This layout felt old-fashioned and not practical for a family of four, so I decided to take some space from one of the bedrooms to make room for a family bathroom on the first floor instead. This meant that the kitchen could be relocated from the current dining room to the back of the house, creating access directly out into the garden through double doors. I also decided to open up the wall between the living room and dining room, to make that part of the house more open plan, and increase the amount of natural light coming into the space. I found the beautiful reclaimed doors on eBay and I’m glad to have the option of closing off the rooms if I want to,

Hotel refuge
The builders tackled the bulk of the work during the summer holidays after we’d moved in, and we stayed in a local hotel for three weeks while they were on site. As well as the main structural changes, they replaced all the windows, laid reclaimed floorboards and installed new plumbing to make the property habitable. It was certainly a challenging few weeks trying to entertain three boys on their holidays, while overseeing a renovation from afar. I learned that I had to be very fussy and ask the builders to run every little detail past me, as often they would

go ahead with design decisions that I wouldn’t have necessarily chosen. Once we were able to move into the house permanently, I then continued with the interior work myself to keep costs down. I really enjoyed getting stuck into projects around the house and was able to tackle new skills like tiling and putting up shelving, which really helped save in terms of labour costs.

When it came to designing the interior of the property, I was keen to reinstate some of the character that would have been part of the original Victorian build as, sadly, all the fireplaces and flooring had been ripped out by a previous

Mark on the wall where it needs to be hung, accounting for the drop of the bulb and what its use will be (for example, a bedside reading light), then fix in place with wall plugs and screws. Depending on your preference, you can drill holes into the wooden bracket

to thread the cable flex through, or simply wrap the flex around the bracket so that it is held securely in place. Complete the light fitting by screwing in your chosen bulb. Exposed filament bulbs are great for creating an industrial finish, or you may want to choose a bulb with tinted glass or add a small shade for a softer look.

I’ve never been one to follow trends as such, and the same goes for my style of home decorating. Instead, I spend time researching each piece as I find that unless I really love something, I will soon tire of it and end up replacing it. My go-to retailer for the majority of the house renovation has been eBay; I was able to source all of the replacement fireplaces from there, as well as most of my furniture and even the reclaimed Victorian floorboards which are one of my favourite finds! It can be time consuming, but using eBay was a great money-saving tool and it’s nice to

Open up a narrow kitchen by using shelving rather than bulky units on the walls, which can make the space feel enclosed. If wall cabinets are needed for storage, be sure to keep the colour light and choose a streamlined style with integrated door handles. Rather than run units the full length of both sides of the kitchen, leave a gap to widen the
space, like Deborah’s breakfast table nook. This visually breaks up the parallel lines and gives the room more breathing space. Fitting double doors at the end of a galley kitchen draws attention to the next space, whether that be outside to a garden or through to another room, and helps increase natural daylight, as well as adding more interest than a solid end wall.

ith my eclectic style and love of colour I was keen to ditch the neutral colour scheme we’d inherited in our new home,’ says Ruth. ‘I’m definitely more maximalist than minimalist, and I’d cover the walls in all my trinkets if Dean didn’t rein me in! I insisted on using a beautiful green for our kitchen, rather than a boring neutral colour.
A new plan
Previously we had a small galley kitchen. I didn’t mind the style of the cupboards, but they were a boring plain cream. The worktops were laminate wood effect and the tiles a lacklustre beige. We had a conservatory at the back of the house that was unusable: depending on the season, it was either too hot or too cold! So we knocked it down and built a new extension with a layout to suit our lifestyle better. This meant an open-plan kitchen-diner and a separate utility.

We started the extension in July 2019 and thankfully we finished the job before our son arrived in November. We were on a budget, so we decided to re-use as much of the existing kitchen as possible: the Belfast sink was beyond salvageable, but the units were good. Ideally we’d have put a real parquet floor down, but our funds didn’t stretch that far. We’ve still managed to achieve the look we wanted though, with a quality laminate floor.

To start, you’ll need craft paper, Blu Tack, a pencil, hammer, plate hangers, nails or picture hangers. Choose the plates you’d like to hang and arrange them by playing around with different configurations. Try to have a mix of shapes and sizes. Trace the plates onto a piece of paper and cut them out. Arrange and stick the cutouts on the wall and adjust. Use nails or picture hangers to attach the plates to the wall. If you’re hanging the plates above a piece of furniture remember to leave enough room between the plates and other objects.

in the new radiators. We hired a plasterer to skim the walls and an electrician to do the wiring. I was the one who had the tedious job of stripping the old cupboard doors and repainting them. We did all the decorating ourselves, which included painting, wallpapering and even creating panelling. It was tiring and stressful work, exacerbated by the fact we were both continuing to work full time, and felt like we were racing against the clock! Having a very active toddler and being pregnant meant I could only do so much painting before I was exhausted. Having said that, it was still worthwhile and really satisfying to see our ideas come together and finally be able to enjoy the fruits of our labour.’

Save on the cost of replacing a tired kitchen by reviving existing cabinetry

built-up grime. Repeat twice to make sure you’re left with a smooth canvas to work on and wipe off any residue with a clean, damp cloth.
Prep the cupboards
If you’re working on wooden cupboards, you’ll need to sand the surface of the door and edges using a fine-grade sandpaper. Just a light rub all over will do the trick and provide a good surface for the paint to grip to. Wipe surfaces down again once you’ve finished. If your cabinets are in high-gloss laminate, skip this step.
Start by removing the door handles and drawer knobs. Use masking tape to cover hinges and the edges of any glass panels to avoid unwanted paint marks. Cover the work surfaces and floor with dust sheets.
Clean the surfaces
Using a strong soapy solution (or sugar soap for wooden units) and a cloth, wipe down the front and edges of each cabinet thoroughly to remove any grease and

Apply a base coat
Depending on the surface of your units, apply either a wood or melamine primer to prepare them for painting. Use a small roller to apply it, rather than a brush, to ensure an even finish and avoid any drip marks. Some specialist cupboard paints don’t need a primer, so check before buying.

ABOUT ME I’m Natalie Anderson, 41, and I have a vintage fashion business @elevenmillionclothes. I live with my husband, Scott, 44, a site manager for a house building company, and our children, Lucas, 11, Hamish, eight, Lila, five, and Heath, two, in a Victorian, five-bed terrace, built in 1890, in Tynemouth. We moved here in February 2018 from a house around the corner – we needed more space once our fourth child was born! MY CHALLENGE The bathroom was originally two small rooms, which we turned into one large space. The ancient pink bath and avocado washbasin and loo had to go! MY WISH LIST A walk-in shower and a roll-top bath were top of the list. We chose a vintage look to complement the sustainable, natural materials and products I am drawn to.

e bought this house in February 2018,’ says Natalie. ‘We had been living locally in a smaller property, but with our fourth child on the way, we badly needed more space. We spotted this five-bedroom terrace and went for it. It needed absolutely everything done to it, but we were able to take out a bridging loan, which meant we could stay in our existing home for three months, so that Scott could tackle the kitchen and the bathroom in the new house.
Fitting it in
Scott has a full time job, so he was working on the house evenings and weekends, but luckily he’s in the construction industry, and had help from a team of mates and colleagues to get the basics at least ready for us to move in as a family that summer. Our lives are extremely hectic with four children and both of us working, but we manage. Scott does almost everything himself, to enable us to afford to get things as we want them.

Once we were confident that the house purchase was definitely going to happen we set about designing the space. The existing bathroom was cobbled together from two very small, awkward rooms. There was a horrific pink bath in one, that looked like it had not been used for 40 years, and a small avocado washbasin and loo in the other. We knew we wanted our family bathroom to be one large space, so we removed the wall between the two rooms and levelled the floor.

bath; it was going to be a bit of a squeeze but with some careful jiggling there was just enough room. We chose traditional styling for all the sanitaryware as we wanted the room to have a timeless appeal. I hate waste and I am passionate about sustainability so an up-to-the-minute design that might easily date in 10 years’ time was not something I would go for. The wood-effect ceramic flooring is extremely hardwearing and it’s ideal for a bathroom, as natural wood can suffer from water staining with young children splashing around.
Colour scheme
We both felt that old-fashioned wainscoting was the ideal decorative backdrop, and Scott cleverly created this effect with painted MDF. I chose apple green as the colour for the panelling because I love it, and I painted the bath with a contrasting cream for a soft, soothing two-tone colour scheme. The bathroom is definitely somewhere I seek to relax – it is honestly the perfect sanctuary at the end of a hectic day.
Perfect result
Heath, our fourth child, was due to be born in September, so it all felt pretty urgent, but we were just finished in time, so it was definitely worth all the hard work. The bathroom ticks a lot of boxes, but still feels light and spacious thanks to the two windows and the high ceiling. This house was a step up for us, but we are so pleased that we managed it.’

CREATE A WALK-IN SHOWER Install a shower tray and a shower into the corner of the room. Add an IP-rated bathroom light above, as it will be an enclosed space. Build a simple timber frame up against the edge of the shower tray to the ceiling. Fix plasterboard on one side and decorate in keeping with the rest of the room. Line the shower area with waterproof tile backing board and tile the inside of the shower. Add a shower screen to the front, or a folding screen for a spacesaving option. Natalie has used a rustic piece of timber as a support arm to secure the whole structure.

Which tiles – porcelain or ceramic?
Although they often look the same, and both can be used on the floor, porcelain tiles are denser and less porous than ceramic so will be more hard-wearing. Porcelain is also suitable for outdoor use, which can provide a seamless transition if your kitchen opens onto the garden. Look for a Porcelain Enamel Institute rating (PEI rating) of at least three; four or five is preferable.
Isvinylbetterthan linoleum?
Not better, just different. Vinyl is a man-made material, available in sheet or tile format. It can often be laid by a skilled DIYer – look for pre-coated vinyl that has the adhesive built in – removing installation costs from your budget. Linoleum is made from natural components like linseed oil, tree resin and pigments. Again, it comes in sheet or tile format but professional installation is required. Both come in a wide variety of wood-look designs, but the colour goes right through linoleum (vinyl is a printed surface pattern) giving it a longer lifespan.

Preheat the oven to 180C/Gas 4. Put the rhubarb in a pan with 100g of the sugar and 2tbsp water. Cover and cook gently for 5 mins until the rhubarb is just tender. Turn into a bowl and leave to cool. Stir in the rose water.

Mix the remaining sugar with the flour and ginger. Rub in the butter until the mixture comes together to form crumbs. Tip out onto a lined baking tray and spread out in a thin layer. Bake for 10-15 mins, stirring the mixture once during cooking until golden. Set aside to cool. Whip the cream with the orange zest until it is just holding its shape. Spoon the rhubarb into the tumblers and put the crumble and whipped cream on top. Decorate with the pieces of stem ginger.

My TV has broken; is it worth getting it fixed?
If your TV is more than eight years old, it is probably not worth fixing. Repairing an old-fashioned CRT television (boxy, not flatscreen) is hugely expensive these days. Modern sets can often be repaired – like a computer, parts can be swapped in and out – so call a local repair shop or the manufacturer for a quote. You may also be able to see what the fault is via the service/fault menu screen.
You can ask the retailer for a repair or refund within 30 days of purchase. If it breaks within the first six months, and the retailer can’t prove that it wasn’t faulty at the point of sale, you’re entitled to a free repair or replacement. If they refuse, contact Trading Standards. Faults that occur after six months of use, provided you’re still under warranty, can be handled by the retailer or manufacturer.

How to tile a
SPLASHBACK Create a focal point behind your basin while protecting bathroom walls with a simple but smart splashback
W
ith the huge range of tiles on offer, a tiled splashback behind the basin can act as a style hero in your bathroom, offering practical durability, protecting the wall from splashes and making the area easy to clean.
Go for the same design or mix and match tiles for an eclectic look

WORK OUT THE WIDTH
Draw a vertical line on the wall marking the basin’s centre point to the height of the area to be tiled. Work out the width of the splashback in whole tiles, plus spacers and edging strip.

LINE UP AND LEVEL
Use a spirit level to see if the basin is straight. Start by lining up the centre of the first tile with the centre line. If it’s not even, fix a horizontal batten above the basin to create a starting point.

Spread adhesive using a notched trowel. Working from the centre, press the first tile firmly against the wall. Add a tile above it and one next to it, spacing evenly.

FILL IN THE GAPS
Push spacers firmly into the corners between the tiles. When the adhesive has set, remove the batten (if using). Cut and fix tiles into the bottom gap.

GET THE GROUT OUT
Using a grout spreader, work the grout into the joints, in long, upward diagonal strokes. Wipe with a damp sponge to remove excess. As the grout hardens, use a grout finisher to neaten the joints. When dry, wipe clean with a soft, clean cloth.

Preheat the oven to 170C/ Gas 3. In a bowl, mix the flour with ½tsp salt and toss the meat in it. Over a high heat,
warm the oil in a flameproof casserole dish. Add the meat and move around for 2 mins until sealed on all sides, then remove from the pan and set aside. Reduce the heat to medium, add the onions, put on the lid and cook for 10 mins, stirring occasionally.

Add the peppers, tomato purée, paprika, caraway seeds and stock cube. Season. Return the meat to the pan, add the chopped tomatoes and 150ml boiling water. Warm through on the hob, cover and cook in the oven for 1 hr 30 mins. Stir in the soured cream. Serve with pasta. Top with parsley.

JERK SALMON WITH MANGO YOGURT TAKES 30 MINS, PLUS MARINATING SERVES 4
HEALTHY CHOICE
1tbsp jerk seasoning 7tbsp Greek yogurt (0% is fine) 600g or 4 skinned salmon fillets 450g sweet potato, peeled 400g courgette, trimmed 1 mango, diced Juice of 1 lime 1tbsp fresh mint

Mix the jerk seasoning with 2tbsp of yogurt. Put the salmon in a shallow dish and coat with the yogurt mix. Cover and chill in the fridge. You can leave it overnight if you have time, but it’s still delicious if left for just half an hour. Spiralise the vegetables. Put the sweet potato into a microwavable dish with a splash of water. Mix the mango, lime juice, mint and remaining yogurt with plenty of seasoning. Grill the salmon until nicely browned. Microwave the sweet potatoes on high for 3 mins, remove and stir in the courgettes. Add a drizzle of olive oil and seasoning. Serve the salmon on the veg with the remaining yogurt on top.

In a small bowl, mix up all the ingredients for the salad dressing. In a separate, large bowl, gently toss together the spinach leaves, quinoa, cashews, macadamias and asparagus. When ready to serve, stir through the dressing and scatter with seeds.

TAKES 1 HR SERVES 4 8 skin-on chicken thighs (about 1kg) Juice and zest of 1 lemon 2tbsp olive oil 2 large garlic cloves, crushed 4 sprigs of thyme, leaves picked 1 fennel bulb, sliced 6 shallots, peeled ½ head broccoli, cut into pieces 300g sweet potato, peeled and cut into rounds 125ml dry white wine ½ stock cube

Preheat the oven to 220C/Gas 7. Place the chicken in a wide roasting tray and toss with the lemon juice and zest, olive oil, garlic and thyme. Season generously and cook for 15 mins. Remove the tray from the oven and slip the veg under the chicken. Mix the wine with the stock, pour into the tray. Turn the oven down to 190C/Gas 5 and return the tray for a further 40 mins until the vegetables are tender and the chicken is cooked through.

CHEESE SOUFFLE TAKES 20 MINS SERVES 1 1tbsp butter, plus a little extra for greasing 1tbsp plain flour 75ml semi-skimmed milk 1 egg, separated 30g Cheddar, grated 1tsp Dijon mustard 1tbsp Parmesan, grated A few slices of red onion Green salad, to serve YOU WILL NEED 1 large ramekin or similar ovenproof dish, approx 14cm diameter

Preheat the oven to 200C/Gas 6. Heat the butter in a small saucepan and add the flour. Slowly stir in the milk, stirring constantly, until the mixture has thickened. Remove from the heat and add the egg yolk, grated Cheddar and mustard. Grease a ramekin with a little butter and dust with the grated Parmesan. Whisk the egg white until doubled in size and frothy. Once the cheese mixture has cooled slightly, fold in the egg white, being careful not to overmix. Pour the mixture into the ramekin, top with sliced red onion and bake in the oven for 12–15 mins until risen and golden brown. Eat warm with salad.

Prick the courgettes and place them under a very hot grill (or on a barbecue) until just charred. Remove from the heat, then when cool, finely chop them.

Heat a frying pan or griddle pan to a medium heat and sear the steaks for 2 mins on each side. Remove and allow to rest. Mix together all the ingredients for the tzatziki, season well and stir in the chopped courgettes. Serve the steaks with the tzatziki and potato slices.

To make the winter slaw, mix the veg with the creme fraiche, mustard and lemon juice. Season and set aside. Place the pork onto a board and use a meat tenderiser to bash the meat to 3mm thick. (If you don’t have a meat hammer, place a piece of cling film over the meat and use a

rolling pin to flatten it.) Trim off any excess fat from the outside of the flattened steaks. Tip the flour, egg and breadcrumbs onto three separate plates. Season the flour and breadcrumbs with salt and pepper. Coat the meat in the flour, then the egg and, finally, the breadcrumbs.

Heat the oil in a pan, drop in a breadcrumb to check if it’s hot enough – once it floats and sizzles, add the schnitzels. Cook for 2 mins over a medium heat, turn and cook for a further 2 mins until golden brown. Remove, blot with kitchen paper and serve with the slaw and lemon wedges.

For the honeycomb, line a small high-sided baking tray with baking parchment. In a large saucepan, gently heat the caster sugar and golden syrup and let it come to a slow boil. Once the caster sugar has melted, turn the heat up and cook until the sugar has caramelised – if you have a thermometer this will be 170C. Add the bicarbonate of soda and stir really well until the mixture is foamy. Pour into the baking tray and leave to cool and harden. To assemble, layer 2 scoops of vanilla ice cream with honeycomb pieces and chocolate sauce into each serving bowl. Top with a Flake, honeycomb, a wafer and a maraschino cherry, if using.

Cut each piece of brioche into 3 and spread both sides lightly with hazelnut spread. Arrange in the ramekins in a spiral. In a bowl, mix together the eggs and sugar. Add the cream, evaporated milk and vanilla, and mix to combine. Pour this mixture evenly into the ramekins. Scatter over the chopped nuts. Allow the mixture to stand overnight in the fridge. Preheat the oven to 170C/Gas 3. Bake in the oven for 20 mins and serve warm with raspberries, cream or ice cream and a dusting of icing sugar.
