A ROOM TO LOVE
HAVE YOU EVER READ AS MUCH about kitchens as you have this past year? It seems that every design section of every newspaper and magazine we pick up has a story about making your kitchen better, creating the perfect dining nook and why you need the latest rice cooker. It’s true that we owe our kitchens a debt of gratitude for serving us so well. And so, it’s especially satisfying to be able to deliver this great package, dense with product info and inspiring real-life examples of swoon-worthy kitchens. I thought by now I knew exactly what I wanted in my own country kitchen reno (see page 28). But there were a few things in this issue that stopped me in my tracks and made me rethink some key details just in time to switch gears. The kitchen by Jordy Fagan and Alana Firestone of Collective Studio (starting on page 60) caught my eye for its fresh take on hardware. Instead of the usual white or yellow metal pulls dotting cabinets and defining fridge doors, the designers chose white on white. How chic! How fresh! Why didn’t I think of that? Thank you, ladies. My solid brass hardware on my black sink wall has now been plated in matte black! And can we discuss the wood-burning cookstove and “speed rack” (see page 64) in the Kitchen Report by the newest member of our design team, Rosemary Poole? LET’S CONNECT You could design a whole kitchen around a marquee @houseandhome stove like that beauty. I won’t be buying one this time @lyndareevesdesign around, but that built-in “speed rack” for cooling @lyndareeves pans straight from the oven is brilliant. I’m trying to incorporate one. There’s so much in this issue to take in — you’ll soon see for yourself.

Remembering
HOLLY You may have heard that Holly Dyment, one of Canada’s most talented designers, left us this past November at the age of 61, after a heroic battle against lung cancer. I knew Holly from the very beginning of her long career as an incredibly talented colourist and interior designer. In the summer of 1994, Holly won our Style Search contest and graced our cover with her then four-yearold son, Andrew. Her exuberant, original mix of vintage and new elements in rooms that were a riot of rich colour and charming details captured our eyes and our hearts. Over the years, Holly continued to evolve as an interior designer until she made her leap to jewelry design. Inspired by trips to India, she worked with talented artisans and built a hugely successful business. From all of us here who knew Holly, our deepest condolences to her family and friends.

CHRISTMAS IN DECEMBER We received several letters from readers wanting more holiday in the December 2020 issue. Sarah K. Russell of Conifer, Colo., said, “After the rough year everyone’s had, so many of us are looking forward to the joys of the holiday season,” while Jamie Flick of Kelowna, B.C., said, “A couple of cedar boughs does not cut it.” As longtime subscribers know, the timing of our holiday issue is always hotly debated, but the consensus has been that earlier is better. Our November issue is always jampacked with holiday stories — and our website is full-on festive from November to the end of December.

boards, serving trays, bowls and utensils in eye-catching shapes. “Old wood is so much better than new wood — I’ve gone to some crazy places to find it,” says Alexis. TREE HUGGER CRED: Every last scrap of antique oak, maple, walnut or ash Alexis and Fred get their hands on is given new life. “We started making spoons because we had all these little pieces of wood that were still stunning,” says Alexis. Conveniently, the eco-friendly ladles function as sculptural bowls for dip and olives because, as Alexis puts it, “Who likes a soggy charcuterie?” BIG BREAK: A wall of serving boards the duo crafted for Santa Monica, Calif., designer Windsor Smith in 2019 caught the eye of client and Goop founder, Gwyneth Paltrow. “She followed me on Instagram, and I said, ‘Let’s make the boards for Goop,’” says Alexis. “She replied, ‘Let’s make them for Goop and my house.’ ” The lifestyle brand also collaborated on an exclusive line of party-size holiday boards.
COLOUR WASH Designer Arren Williams is following his mod collection of furniture for Hudson’s Bay with cheerful pieces for bath and bed. Cotton shower curtains in graphic prints bring fresh energy to bathrooms and can be paired with matching beach towels. “An eyepopping shower curtain is an instant mood-lift to your morning routine,” says Arren. SUSTAINABLE DESIGN
REST ASSURED Kotn, the Certified B Corporation Canadian fashion brand known for its feel-good cotton T-shirts, is creating items for home. Five styles launch the collection — two bedding sets, a bedspread, a quilted comforter and tea towels — each made with sustainably sourced Egyptian cotton. H&H connected with co-founder and chief creative officer Mackenzie Yeates for all the details.
DID CREATING THESE PIECES SUSTAINABLY INFLUENCE THE DESIGNS? Natural fibres have character — there’s something unique about each one, and that’s visible in our undyed Alabaster pieces. It’s a natural creamy hue created with no added dyes, so you can see the slightest bit of colour variation throughout. Nature creates a sense of calm; we wanted to capture that feeling through our collection. WILL YOU ADD NEW PIECES SOON? Over the next year, we plan to add more styles and textures for every room in the house. We’re also looking to collaborate with more artisans and celebrate traditional craftsmanship.

Fashion designer and pop culture icon Diane von Furstenberg has teamed up with H&M Home to launch accessories decorated with her signature prints and vibrant colour combos. “With this collaboration, I want people to take charge of their decorating,” announced the designer, who stepped into the fashion sphere in 1974 when she created her trademark wrap dress. The line will include vases, cushion covers, blankets, candles and more. Stay tuned for a launch date!

FIELD MADE GOODS Starting a new business during a global pandemic may seem like a daunting task, but for the owners of Field Made Goods, it was a chance to help each other succeed. Four makers — candle designer Laurel Munro (East City Candles), ceramicist Caitlin O’Reilly (Cylinder Studio), apothecary Melissa Condotta (Sunday’s Company) and woodworker Bethanie Kaye — combined their efforts to create a one-of-a-kind shop that brings their output under one roof. You can find candles, ceramic plates and mugs, plant-based skincare and handmade wooden bowls and candlesticks in the 400-square-foot retail space in Picton, Ont. Housed in a late-1800s building, the store’s original interior was old-fashioned and lacklustre, so the quartet renovated. “This is something we’re really proud of,” says Laurel. “It’s a concept you don’t find very often, especially because everything we put on our shelves is made by us.” 24 H&H MARCH 2021

I
FIRST FELL IN LOVE with the English country kitchen during long stays as a houseguest in Dorset in the south of England. My great friends had the quintessential country kitchen with the big Aga hob, larder, huge antique dresser filled with dishes and, of course, the country work tables where we sat shelling peas, rolling dough and chatting away the hours. When it came time to design our lakehouse kitchen, my inspiration file of photos, plus those fond memories, were ready to go. First came the layout. For me, it’s always lower cabinets, sink wall, stove wall, and fridges around the perimeter of the room, leaving the centre free for a farm-style work table. Add a separate pantry or larder for food and small appliances, plus a big glassfronted cabinet for dishes and linens, and you have my perfect combo that I’ve had in every kitchen that I’ve loved best. Next come the style details. I knew I wanted a classic painted kitchen with

Shaker-style lower cabinet doors. A visit to the NYC Plain English showroom two years ago was so inspiring; I was instantly smitten. You have to go and see the quality of the cabinetry, the saturated hues in those drab English paint colours and the attention to detail — like the fridges that were totally hidden behind tall closet doors. I was familiar with “panel-ready” fridges, where cabinet panels are attached to the fronts of appliances. But “integrated,” I learned, is a different approach, where you build your “closet” and then hide your fridge in behind for a seamless look. In fact, in this style of kitchen, the stove is really the only appliance that’s featured front and centre. More inspiration came from deVOL Kitchens, another London-based custom shop whose Haberdashery line inspired the glass-fronted display cabinets I’ve planned to sit on our counters, flanking the kitchen sink. Next, it was time to find a custom shop close to home that would be
able to build what I wanted. I turned to Bloomsbury Fine Cabinetry to make our cabinets to my design specs. I can’t say enough about this company’s craftsmanship and expertise in making exactly this style of exquisite painted and natural wood cabinets. You might remember the emerald green kitchen from our March 2020 issue. That was a Bloomsbury kitchen. What colour would this kitchen be? The decision was largely based on sight lines. The kitchen and dining room are now one big room panelled in natural fir board-and-batten from the original circa-1920s summer house. For me, CONTINUED ON PAGE 109 that meant that SEE SHOPPING LIST

“I love these open shelves,” says Peter. “And I like white or off-white dishes so everything is one colour.”
“There’s an effortless, unfussy feeling in my home.” In 2008, Peter bought the adjacent studio apartment and incorporated it into his own unit, partly so he could build a bigger kitchen. During the renovation, he borrowed space from his existing foyer to expand the cooking zone and transformed his original entry closet into a pantry with a wine fridge. Michelle Obama, Beyoncé and Scarlett Johansson are just some of the clients who flocked to designer Peter Som for his colourful, original clothes. But recently, he’s been swapping pinking shears for a chef’s knife and indulging his love of cooking. With the launch of his lifestyle website, petersom.com, he’s building a new fan base with his take on entertaining and decorating. “The kitchen is probably where I’m happiest,” says Peter. The recipes he develops in his Manhattan apartment display the same originality that kept fashion’s cool crowd in thrall.

“Any way to find more storage is a great thing.” Peter found the Tommi Parzinger secretary in a Chelsea antique store many years ago; it has a leather top with a walnut bottom.

Upholstering a lounge chair in a velvet leopard print, then layering the rest of the living room with pillows in zigzag and zebra patterns were natural moves for this master of the mix. Peter leaves his books stacked on the floor to give the space personality. “I took down the built-in bookshelves for the renovation, and I never put them back up,” he says.

“I had lived in my apartment for 15 years before renovating it, so I really understood the space and what I wanted to do with it,” says Peter.

“MY PLACE IS AN AMALGAMATION OF THINGS I’VE PICKED UP ON MY TRAVELS THAT REALLY ARE PERSONAL TO ME” “I chose a seagrass rug since I’m a beach bum at heart.” Peter also selected a neutral for the walls to better show off his art. “One of my closest friends is a curator, so I go to openings with her and learn,” he says. He keeps his cherry red bike (top left) in the bedroom to match a Brutalist red chest (bottom right). “Once the dealer sprayed it red, it became a sculpture,” he says. “If I like something, it will somehow fit in my apartment, regardless of the period it’s from, or the designer.”

Unique finds play nicely with Art Deco accents in Carlo Colacci’s eclectic home.

Carlo Colacci, co-founder and president of Drake General Store, has been known to bring his work home with him — at least when it comes to The Drake Hotel’s signature style. “We like fun fabrics and colours, and interesting materials,” he says of the west end Toronto home that he shares with his wife, Laura, and their three kids, six-year-old twins Milo and Serafina, and four-yearold Luna. That design philosophy plays out in one-of-a-kind furniture, quirky tile and an eye-catching palette of dusky pinks and bright blues, with plenty of natural texture for balance. The home needed both personal touches and practical updates, so Carlo called on his Drake design conspirators: Aránzazu González Bernardo and Michael Fohring, the principals of Toronto design firm Odami. The duo came up with a plan that highlighted the home’s architectural details — think

elaborate baseboard, door trims and crown moulding — but still felt contemporary, playful and eclectic. Carlo and Laura took it upon themselves to refresh the laundry room and basement bathroom, which hadn’t been touched since the ’80s, and the designers tackled the dated and dysfunctional front entrance and staircase. The goal was to layer in design moments that reflect their love of Art Deco and cool vintage finds without compromising on kid-friendliness, such as arched doorways, eye-catching light fixtures and interesting furniture silhouettes. That’s why each of the rooms feels carefully considered, but not precious. In the entry, the staircase is now a showstopper, 48 H&H MARCH 2021

thanks to its curvaceous railing and pink-hued walls while a built-in wardrobe and Corian-topped bench add much needed storage. “We really wanted the bench, the stairs and the wardrobe to read as a whole,” says Aránzazu. “We chose to paint the back wall of the staircase to give it more depth and make it feel as though it were carved out of a volume, giving the sense that those three elements were treated as a single unit.” Quirky and architectural furniture appears throughout the home — but it’s durable, too. A lacquered goatskin-covered coffee table grounds the living room (a $400 vintage shop find from Buffalo, N.Y.), but these days it’s morphed into a stage for the kids’ dance parties. “The kids have five wardrobe changes a day,” says Carlo — not surprising for a family with such a strong sense of style. 50 H&H MARCH 2021

FOR SHAUNA WALTON’S CLIENTS, whose weekly ritual of pizza-making guarantees splashes of stone-staining tomato sauce, marble counters were out of the question. With two young daughters eager to help, the couple knew they needed a hardworking quartz surface to cook on. “Still, marble had to play a part,” says Shauna, who instead used a dramatically veined marble for the backsplash and island front, turning the surface into the star of the kitchen in a family-friendly way. “The island is the pièce de résistance,” she says. “It’s the first thing you see when entering the kitchen.” The clients had called in Shauna to spearhead the renovation of their 1930s Toronto home. “The kitchen was teeny-tiny and falling apart,” says the designer. The brief was to create a space that was functional and edgy while staying true to the home’s original (and coincidentally trending) details such as arches and brass hardware. “The new cabinet knobs and pulls came with a big price tag,” says Shauna. “But at the end of the day, it’s the jewelry, SEE SOURCE GUIDE

and sometimes you just need to have it!” A little dazzle was the driving force behind the curved light fixture over the island, too. “I immediately fell in love with its simplicity,” says Shauna. “It was perfect since we had so much going on in the backdrop.” A simple all-white kitchen wasn’t enticing to this design-minded couple, who didn’t need much convincing to green-light black cabinets, an arched window with mullions and a banquette upholstered in Kelly Wearstler’s Graffito fabric. Sacrificing upper cabinets for slim marble display shelves next to the vent hood was a harder sell, but a counter-toceiling pantry, installed to balance out the space, persuaded them. “All the dishes, including the kids’ stuff, are housed in that tower,” says Shauna. The brass sconces above the range are yet another clever moment of form following function, a mantra that never falls out of fashion. “Once the kiddos have crashed, the parents dim the lights, turn on the sconces and enjoy a glass of wine,” says Shauna. Plenty of open shelving was perfect for homeowner Jennifer, who’s an avid collector. “Nobody collects things they want to hide,” says Tommy. Cabinets, sink, Ikea; GE fridge and range, TA Appliance.
JENNIFER JOHNSTON IS A DEDICATED VOLUNTEER, mother and grandmother who works three jobs to help support her family, so it’s no surprise that her community nominated her Woodville, Ont., home for a makeover on HGTV Canada’s Family Home Overhaul. Designers Trish Johnston, Tommy Smythe and Brian McCourt, who also looked after contracting, happily stepped in to update Jennifer’s leaky and dysfunctional 19th-century home for her busy life. The former galley kitchen, in particular, looked more like a hallway than the heart of the home. What Jennifer really needed was an open space where she could “cook, hang out, and nourish her family and friends,” says Trish. Conveniently, an existing extension at the back of the house was perfectly suited for this kind of activity. With the help of a few handy community helpers, Brian knocked down some walls and, just like that, the kitchen and living room were neighbours. enough to withstand the wear and tear of daily traffic, and matte white appliances that felt “friendlier than stainless steel,” says Tommy. Large-scale vintage lantern pendants were a splurge, but just right for illuminating the island where Jennifer bakes cookies with her grandkids, who live nearby. Bringing together three designers with different styles can be a recipe for disaster, but in this case, the only hot debate was the cabinet colour. “Every other decision was easy-breezy,” says Trish, whose pick, a grey-toned olive green, eventually won out. Tommy’s idea to clad the island and case the fridge and cabinets in the same chevron walnut used for the perimeter counters, for instance, was a unanimous hit. “It anchors the other design elements and connects the workspace with the lounge areas,” says Tommy. Now, guests can help themselves at the built-in bar and there are plenty of seats to accommodate everyone. Jennifer’s collected treasures pepper the room, and every inch of the home feels as special as its owner.

WHEN REAL-ESTATE AGENT SASHA FIRESTONE and her tech sales leader husband, Josh Rotman, can host dinner parties again, it’s safe to say their kitchen makeover will be the talk of the table. “The peninsula is such a conversation starter — it feels like a beautiful piece of art or furniture,” says designer Jordy Fagan of Collective Studio, who worked alongside partner Alana Firestone to combine the former kitchen and dining room into a single gathering place where the couple can entertain and keep an eye on their one-year-old son, Yale. Sasha originally called on her cousin Alana to help choose paint and furniture for their newly purchased 1940s-era home in Toronto, but the scope of the project quickly escalated. “The kitchen was closed off and had an awkward layout, so we showed them that if we opened up the space, they could gain a generous peninsula and a banquette with tons of storage below,” says Alana. Sasha knew these upgrades would be a major selling point down the road, so the designers got to work, gutting everything but the existing red oak hardwood flooring, which was sanded and restained. The 10-foot-long peninsula was built with touch-latch cabinets on both sides and houses big appliances like the couple’s Vitamix. To inject drama, the peninsula, a new vent hood and the floor-length pantry were all clad in a reeded oak treatment so new that the millworker was caught off guard. “He said, ‘I don’t know how to do that, but I’ll play around,’ ” recalls Alana, who later approved the samples on the first try. The kitchen’s clean, unified feel is the result of counter stools that disappear into the black-stained dowels of the island facing and custom-made MDF hardware intentionally painted the same crisp white hue as the cabinets. “We wanted everything to blend in, especially the panelled fridge,” says Alana. Installing bonecoloured semi-flush-mount lighting kept an airy feel despite the eight-foot-high ceiling. These days, the family gathers at the banquette and enjoys their own company, but the occasion platters stored beneath the seat will be pressed into service again very soon.

THE NEW WOOD COOKSTOVE When chef Amy Thielen designed her kitchen in Two Inlets, Minn., one must-have was a traditional wood cookstove like her grandmother had used at the old family farm. After much research, the award-winning author and host of the Food Network classic Heartland Table chose the De Manincor Eco E80 for its streamlined, energy-efficient design. She sees the resurgence of wood cookstoves as a shift toward simplified, improvisational cooking. “It’s not an exact science,” she says. “A lot of it is intuition. You check the temperature gauge, put the food in, and that’s that.” 64 H&H MARCH 2021
The rest of the kitchen is low-key and multipurpose, with a rural-meets-restaurant vibe. Clear Norway pine walls and brick tile floors sit beside elements that you’d find in a commercial kitchen, like the speed rack (left of stove). It’s a place to rest items hot from the oven and can provide additional storage. Behind the stove, a blackened steel backplate has two racks while a ledge between the stove and the backsplash offers ideal ambient heat conditions for proofing bread. For several seasons now, we’ve seen a steady march back to warm woods. Textured Wall Tile Tiles with uneven surfaces and subtle variations bring a sense of craft to sleek spaces and can even read as art. This spring, ceramicist Cathy Terepocki of Yarrow, B.C., is launching a collection of tiles made from local clay. Each tile installation is marked with the geographic coordinates of the region where the clay was harvested by hand, and a portion of the sales goes to environmental causes.

MIXED MATERIALS For this kitchen in Halifax, designer Jonathan Legate used slab-front walnut cabinets to create a moment of modernity within the home’s 1930s Tudor architecture. The surrounding white recessed-panel cabinets recede into the background, allowing the wood to take centre stage. “I really wanted the window and the warmth of the walnut to be the only things you focused on,” says Jonathan. In the main work area ( foreground), the cabinets shift yet again, this time to a warm blue-grey (Farrow & Ball’s Light Blue), chosen to evoke the south of France and help give the whole room a Napa Valley–inspired feel. TRAVEL MAY FEEL LIKE A DISTANT MEMORY of late but, for a fortunate few, like Lisa and her husband, Philip, home is a constant reminder of time spent abroad. “Philip and I did a tour of Europe three years ago and fell in love with the clean lines and homey feeling of Scandinavian interiors,” says Lisa. The couple — who are accountants and have two daughters, Ava, 13, Grace, 10, and a golden retriever named Ollie — was also inspired by a hotel in Warsaw, Poland, that combined traditional and modern styles with a high-contrast palette. When it came time to build their four-bedroom, four-and-a-halfbathroom home in Kitchener, Ont., Lisa and Philip worked with designer (and fellow black-and-white enthusiast) Shirley Meisels to bring their Continental design aspirations to life. “I really do love black as a design element,” says Shirley, who’s at the helm of Toronto firm, MHouse. “It doesn’t have to be heavy: it can be there for drama, like in the powder room, for fun, like in the laundry room, or to ground a space, like in the kitchen,” she says.

In the kitchen, Lisa’s favourite space, Shirley came up with a clever solution to ensure the cabinet profiles emulated those found in Europe. “French mouldings are more pronounced, so I had our cabinetmaker take existing door profiles and beef them up with extra trim,” says the designer. “The carved quartz island and brass vent hood were also details I fought for, because I knew they would truly make this an amazing space.” (Shirley nearly cried with happiness when both were installed, she says.) Interesting materials and unusual applications can be found throughout the sprawling 5,000-square-foot house. 74 H&H MARCH 2021
Take Lisa and Philip’s glam wet bar, which has snakeskinprinted tile, antiqued mirror and smoked glass. Then there’s the cloakroom with jet-black wallpaper and glamorous custom metalwork — another design slam dunk. Every detail of this home has been carefully considered. “I think this project was so successful because the clients had a vision, were very open to suggestions and trusted me and the builder completely,” says Shirley. “That’s how you get the best out of your team, by hiring good people that you can rely on, who have your back and who can help propel your dreams into reality.” SEE SOURCE GUIDE

WHO SAYS TRADITIONAL DESIGN is stuck in the past? Not Toronto designer Lindsay Mens Craig. In this gracious house for a family of three, the foyer is a piquant shade of beet. The black and white marble floors, laid out in a striking zigzag pattern, command attention. And just beyond, wallpaper in a stormy cloud motif sweeps across the dining room walls. “The house has classic elements, in terms of the trim profiles and moulding details,” says Lindsay, a partner at TOM Interior Design Studio, who designed the space for her former firm, Sarah Richardson Design, with assistance from Kelsey Eurig. “But I wanted to strike that balance between classic and contemporary.” She met the homeowners, Shannon Curé and Frank Ieraci — she’s in fashion, he’s in finance — five years ago. “They’re young and fun, so I didn’t want the house to feel serious,” she says of the couple, who are in their early 40s and have a seven-year-old daughter, Victoria. “Shannon is quite stylish; I didn’t want the inside to be too stuffy.” At the time, the family felt squeezed out of their 1,200-square-foot house. A hunt for new digs led them to Etobicoke, in Toronto’s west end, where they tore down a tired side-split to make room for a new house. Tucked deep into the lot beneath towering trees, the 5,000-square-foot brick home is classic Georgian, but cheeky details like the soaring windows look fresh. SEE SOURCE GUIDE

Such drama required a special eye, which is why Lindsay was on the scene from almost day one, devising the layout, plotting the electrical plan and making overall decorating choices to ensure the house felt lived-in and inviting. “It’s a dream to be involved from the beginning because sometimes designers think differently than architects and contractors,” says Lindsay of the roughly year-long project. “Designers think of the day-to-day things, like where an electrical plug is handy for a hair dryer.” “It seems a lot easier to put a design together than what’s actually involved,” adds Shannon. “But it takes an eye like Lindsay’s to pull rooms together so beautifully. Her skill of mixing old with new is something I’ve admired from the beginning.” In the living room, lively teal velvet and wool coexist with more neutral fabrics, and elegant millwork adds character throughout the house. The traditional, divided-room layout creates lots of empty spaces that needed to be filled, so panelled walls line the principal bedroom for warmth and splashy art adds punch. You’d never suspect the antique painting on the landing was a steal from a vintage shop. “The millwork makes the house feel cosy and complete,” says Lindsay. “And Shannon loves accessories and layers, and she makes it look effortless. As a traditional home, it makes sense stylistically.” “This house has life,” adds Shannon. And there’s nothing outdated about that. 84 H&H MARCH 2021

GOOD THINGS COME to those who wait. For designer and store owner Craig Parkes, that’s both a personal mantra and a decorating philosophy. When he and his partner, lawyer Matthew Hinton, and son, Fitzgerald, moved into their circa-1908 home in 2017, the herculean task of restoring the house to its original glory was the first thing on their list. Four years later, they’re still happily working toward that goal. For Craig, renovating is a long game; the more patience you have, the better the outcome. “Give it time, and the answers will always present themselves to you,” he says. “The best spaces take time and, when you’re patient, the right pieces eventually find you.” The groundwork for that approach started early. “I’ve had a passion for interiors since I was a kid,” says Craig, which he credits in part to spending time at his aunts’ houses, both of whom were creative nesters. “My mom would drop me off thinking I would play with my SEE SOURCE GUIDE

cousins, but I’d end up painting a bathroom,” he says with a laugh. When he finished school, Craig began working at Liberty, one of Vancouver’s early design houses, before co-founding his own ode to design, Parliament Interiors. “Antiques are something I’ve always held dear — I’m quite sentimental,” he says of the store’s mix of contemporary and vintage pieces, an ethos he’s brought to his own home. The 3,000-square-foot house had been divided into apartments from the 1950s through to the 1980s. Happily, some of the original elements had survived, such as the four-square floor plan, leaded glass windows and fir flooring. Upstairs, a principal ensuite was created from a third bedroom and, downstairs, a wall between the kitchen and dining room was demolished to create a more airy, contemporary space. Rather than take the opening up to the ceiling, though, Craig opted for a cased opening (see page 90) to echo the home’s DNA. “It now looks like it’s always been here,” he says. Meanwhile, the fir wainscotting in the foyer required careful study. Leaving it seemed dated (“but the wood is so beautiful”) yet painting it white didn’t seem right (“a decision that’s hard to reverse”). Many months of chats over cocktails SEE SOURCE GUIDE

later, the answer revealed itself: they would paint the walls — and ceiling — a saturated black. Overnight, the room went from tired and dingy to transformative. “Don’t give in to the impulse to just ‘get it done,’ ” says Craig. “Take your time and your style will always be more interesting and layered.” Throughout the house, a neutral palette sets the stage for Craig’s signature mix of vintage and modern elements. “This house is 110 years old,” he says. “Over its lifetime, it’s been witness to different design styles — Edwardian, Art Deco, ’80s modernist — so it makes sense that it would feature pieces from different eras.” Time has given the home a perfect patina, or almost perfect anyway: because the black foyer was such a success, Craig and Matthew are considering a dramatic paint treatment elsewhere in the house. “That space has yet to present itself to me!” says Craig. Spicy and Sour Soup with Shrimp and Tom Yum Paste SERVES 2
Tamarind Paste 1 cup water ¼ cup (80 g) seedless sour tamarind (dried or block) Tom Yum Paste ¼ cup large dried shrimp 1 tbsp + ¼ cup sunflower oil, divided 3–5 large dried red spur chilis 3 tbsp unpeeled Thai garlic cloves, or thinly sliced peeled regular garlic 3 tbsp thinly sliced shallots 1 tbsp paprika 1 tbsp Tamarind Paste (see above) or store-bought 1 tbsp coconut sugar Soup 2 cups water 2 stalks lemongrass, lightly bruised and cut into 2" pieces 5 thin slices galangal 9 unpeeled Thai garlic cloves (or 3 peeled regular garlic cloves), lightly bruised 3 medium shallots, cut in half and lightly bruised 5 fresh magrud lime leaves (also sold as Makrut and Kaffir limes) ⅓ cup Tom Yum Paste (see above) 10 fresh or thawed frozen medium shrimp (size 21–25), peeled, deveined, and cut in half lengthwise 5 oz. (170 g) oyster mushrooms, roots cut off, torn in half lengthwise 5 cherry tomatoes, cut in half crosswise 1 tbsp Tamarind Paste (see above) or store-bought 1 tbsp Thai cane sugar 2 tbsp Thai fish sauce 2 tbsp fresh lime juice ⅓ cup coarsely chopped fresh cilantro leaves and stems 2 green onions, cut into 2" pieces 1 stalk fresh sawtooth coriander, cut into 1" pieces 1–3 fresh bird’s eye chilis, lightly bruised

MAKE TAMARIND PASTE 1. In small saucepan over high heat, bring water to a rolling boil. Break tamarind into small pieces and drop into boiling water. Boil for 3 to 4 minutes. Heat breaks down tamarind pulp and makes it easier to separate fibres. If using dried tamarind, it will start to expand. If using tamarind block, it will absorb water and start to soften. 2. Over large bowl, strain through fine-mesh sieve, pressing out every bit of liquid and paste. I recommend using large bowl to help minimize mess. Make sure to scrape paste off bottom of sieve and mix it into liquid. Discard pulp in sieve. Allow to cool before using. Store in airtight container in fridge for up to 1 week, or in freezer for up to 3 months.
boiling, reduce heat to medium and add lemongrass, galangal, garlic, shallots and lime leaves. Boil for 5 minutes. Stir in Tom Yum Paste and boil for another 5 minutes. 2. Without stirring, add shrimp, oyster mushrooms and tomatoes. Increase heat to high and cook, without stirring, for 2 to 3 minutes, or until shrimp are pink and opaque. Make sure to wait until shrimp have had a chance to cook before stirring. 3. Stir in Tamarind Paste and cane sugar, and cook for another minute. Stir in fish sauce and lime juice. Remove from heat. Stir in cilantro, green onions, sawtooth coriander and chilis. Ladle into bowls and serve.
Grilled Chicken Satay Skewers MAKE TOM YUM PASTE 1. In small food processor, pulse dried shrimp until they look stringy, almost like floss. Set aside. 2. In small saucepan over medium heat, heat 1 tbsp of sunflower oil. Add chilis and cook until chilis turn dark red and skin starts to plump up and looks smooth, 1 to 2 minutes. Transfer chilis to stone mortar and pestle. (Alternatively, you can use small food processor.) 3. Return pan to medium heat. Add remaining ¼ cup of sunflower oil and heat for 1 minute. Add garlic and shallots and cook, stirring frequently, until cooked but not crispy, 2 to 3 minutes. Shallots will start to look transparent. Remove from heat. 4. Using slotted spoon, transfer garlic and shallots to mortar with chilis. Leave oil in pan. Pound garlic and shallots to fine paste. Add paprika and pound to mix. 5. Return pan to medium heat and allow sunflower oil to heat for 1 minute. Scoop paste out of mortar, add to oil and cook, stirring frequently, for about 2 minutes. Add shrimp floss, Tamarind Paste and coconut sugar. Reduce heat to mediumlow and cook until sugar is fully dissolved, 1 to 2 minutes. Store in airtight container in fridge for up to 3 days.

Chicken Satay Skewers 30 6" bamboo skewers 1 tsp coriander seeds, toasted ¼ tsp white peppercorns 2 tbsp thinly sliced lemongrass 1 2"-piece fresh turmeric, peeled and thinly sliced 1½ tsp sea salt, divided 2 tbsp water 1 tbsp evaporated milk 1 tbsp + 1½ tsp thin soy sauce 1 tbsp + 1½ tsp Thai oyster sauce 1 tbsp sweetened condensed milk 1 tbsp vegetable oil 1 tsp curry powder 1 tsp tapioca starch 1½ lbs. (675 g) skinless, boneless chicken thighs, cut into bite-size pieces ½ cup well-shaken coconut milk, for brushing MAKE RED CURRY PASTE 1. Heat small skillet over medium heat. Once pan is hot, add coriander seeds, cumin seeds and white peppercorns, and toast, stirring occasionally, for 2 minutes. Transfer to plate to cool. 2. Using stone mortar and pestle, grind toasted spices to fine powder. Add chilis, paprika and salt, and grind to paste. One at a time, and pounding to paste after each addition, add lemongrass, galangal, lime zest, garlic, shallots and shrimp paste. Store in airtight container in fridge for up to 1 week, or in freezer for up to 3 months. MAKE PEANUT SAUCE 1. In small food processor, combine coconut milk, peanuts, Red Curry Paste and turmeric, and purée. Transfer to small pot and bring to a boil over medium heat. 2. When sauce starts to boil, reduce heat to medium-low, and add thin soy sauce, fish sauce and coconut sugar. Stir to mix well and continue to simmer, stirring occasionally and scraping bottom of pot to prevent burning, for
10 to 15 minutes, or until oil rises to surface. Store in airtight container in fridge for up to 3 days. MAKE PICKLED CUCUMBER 1. In small saucepan over medium heat, stir together water, white vinegar, cane sugar and salt, and bring to a boil. When mixture is boiling, cook for another minute. Set aside to cool. 2. Add cucumber, chili and shallot, and stir together. Store in airtight container in fridge for up to 3 days. SEASON CHICKEN 1. Using stone mortar and pestle, grind coriander seeds and white peppercorns to fine powder. Add lemongrass, turmeric and 1 tsp of salt and pound to smooth paste. Transfer to large bowl. 2. Add water, evaporated milk, thin soy sauce, oyster sauce, condensed milk, vegetable oil, curry powder, tapioca starch and remaining ½ tsp of salt. Stir well to combine. 3. Add chicken, and toss to coat well with sauce. Make sure chicken is fully coated. Cover with plastic wrap and place in fridge for at least 1 hour to marinate. GRILL CHICKEN SKEWERS 1. Soak 30 (6") bamboo skewers in cold water for at least 30 minutes. Thread chicken onto one half of each skewer. 2. Prepare grill for direct cooking over high heat. Brush grill with coconut milk and let sit for a couple of minutes. This will prevent chicken from sticking to grill. 3. Place chicken skewers on grill and cook until they begin to char, 8 to 10 minutes. Turn and brush other side with coconut milk when chicken starts to dry out, cooking for another 6 to 8 minutes, until char appears on meat. Serve with Peanut Sauce and Fast Pickled Cucumber.
Stir-fried Flat Rice Noodles with Sweet Soy Sauce SERVES 2
Sauce 2 tbsp vegetarian mushroom oyster sauce 2 tbsp thin soy sauce 2 tbsp sweet soy sauce
1 tbsp white vinegar 1 tsp Thai cane sugar 1 tbsp water Stir-fry 4 tbsp sunflower oil, divided 1 block (14 oz./398 g) firm tofu, drained and cut into rectangles 1½" in length and ½" thick 2 eggs, beaten 1 tbsp minced unpeeled Thai garlic, or peeled regular garlic 1 cup peeled and thinly sliced carrots 1 package (5 oz./150 g) fresh shimeji mushrooms, roots discarded (about 1 cup) 20 snow peas, trimmed 2 stalks Chinese broccoli, leaves trimmed and peeled, stalks cut into 1" pieces 5.1 oz. (145 g) fresh flat rice noodles (if needed, steam for 30 seconds to soften, then pull apart to separate) ½–1 tsp chili powder ½ tsp white pepper 2 lime wedges MAKE SAUCE 1. In small bowl, combine mushroom oyster sauce, thin soy sauce, sweet soy sauce, white vinegar, cane sugar and water. Stir well and set aside. MAKE STIR-FRY 1. In large wok or skillet over high heat, heat 3 tbsp of sunflower oil. When oil is hot, add tofu and cook until edges turn brown, 1 to 2 minutes per side. Move tofu slices to one side of wok. 2. Add eggs to empty side. Whisk to quickly scramble eggs until fully cooked, 1 to 2 minutes. Move eggs to same side of wok as tofu. Reduce heat to medium. 3. Add remaining tbsp of sunflower oil to empty side of wok. When oil is hot, add garlic and sauté until garlic is fragrant, 10 to 20 seconds. 4. Add carrots, mushrooms, snow peas, Chinese broccoli, rice noodles and Sauce. Increase heat to high, stir everything together, and sauté until snow peas turn dark green and are soft to touch, 2 to 3 minutes. Sprinkle with chili powder, to taste, and white pepper. Squeeze lime juice, to taste, over top and mix well before serving. H&H MARCH 2021 101

oz. Earl Grey–infused gin oz. Lillet Blanc oz. fresh lemon juice oz. Earl Grey syrup dashes lavender bitters Dried lavender, for garnish
MAKE INFUSED GIN 1. Using 2 to 3 grams of loose tea for every 6 ounces of gin, steep tea in gin for 5 minutes, then strain. (Alcohol extracts flavour quite quickly, so be careful not to oversteep, or gin will get overly tannic and bitter.) MAKE EARL GREY SYRUP 1. Brew strong earl grey tea (2 to 3 grams of loose tea per 6 ounces of water). Strain and, while it’s still warm, add equivalent gram measurement of sugar and stir. Refrigerate any leftovers. MAKE COCKTAIL 1. Add all ingredients (excluding garnish) to cocktail shaker; add generous amount of ice and shake vigorously for 20 to 30 seconds. Strain into chilled cocktail coupe and garnish with dried lavender flowers.

CONTINUED FROM PAGE 28 the kitchen cabinets must be dark and “furniture-like.” At night, when I viewed the kitchen from the dining table, I wanted it to disappear. The choice was Black Panther by Benjamin Moore, in a 20 per cent sheen level with visible brushstrokes. Once the colour and style of the lower cabinets (face frame, Shakerstyle doors, flush to the floor) was resolved, it was time to focus on counters, backsplash, appliances and fixtures — and to plan the rest of the room. I found I had room for a separate coffee bar with space for a toaster and coffee machine, plus breakfast supplies and a drawer microwave. Hidden behind tall cabinet doors, this would be the place where houseguests could help themselves to their morning coffee and toast. I’ve only ever had honed marble or granite counters, and I love both. For this house, I wanted to stick with natural stone, and I liked the luxe yet soulful look of soapstone, as well as its depth and warmth (the surface takes on the ambient temperature of the room). I turned to Peter Sellors of Greensville Soapstone Company in Burlington, Ont., for his expertise and chose “Stormy Black.” This beautiful, dusky black soapstone comes from Brazil and has a faint grey veining. Greensville is making the counters, as well as the backsplash, high shelf, bar and custom sink. For appliances, I stuck to what I’ve known and loved. This will be my fifth classic gas range with two ovens and eight burners. Simple and perfect. A pair of Sub-Zero fridges will be hidden behind tall cabinet doors. A freezer and wine fridge will be tucked into the adjoining mudroom. Finally, on the sink wall, we’ve placed two Cove dishwashers, side by side, beneath a pair of glass-fronted display
cabinets — deVOL style. The fridge wall and coffee bar are in and looking exactly as I hoped they would. How to light the combo diningkitchen space was a challenge. The kitchen end would have task lighting over the counters, general lighting from small, recessed ceiling pot lights, plus some decorative wall sconces. The coffee bar would have its own interior lighting. But what about the dining end, which is open to the kitchen? Would there be pendants or some other kind of ceiling fixture? I opted to run a series of four pendants down the middle of the combined space. I don’t know where the dining table will end up exactly, so that wasn’t a consideration. And anyway, I like the idea of moving my table without having to worry about chandeliers that need to be centred. As I write this, the lower cabinets are in and they look amazing. That happened just before Christmas, when the heat was finally installed! Being able to sit in our toasty-warm living room on a folding chair, contemplating the basket of fabric swatches before me as the snow fell outside the window was the best Christmas gift of all. This week, the soapstone counters go in and I may be able to take a few photos in time to make it to press! That, plus the stove being hooked up and the water turned on will mean that I can even make a “cuppa” in our very British kitchen. I can hardly wait.

If you don’t want to make any major changes, you could paint your cabinets taupe. This shade will work beautifully with your floors and freshen up your cabinets. Add black knobs, paint the walls white and install a simple backsplash of subway tile. Consider adding task lighting under the uppers. If you really want to change the look of your kitchen, order new Shaker-style door fronts for your upper cabinets, and have them painted the same taupe shade. Or replace your uppers entirely with taller ones with the same Shaker-style profile; this will help draw your eye upward. Then, to add wow factor, consider a new vent hood.
