F

or those beginning to feel the pressure building up on all sides, June/July could prove to be a much needed distraction. Not only do you receive the latest issue of Food Magazine, but there is also one of the most significant food and beverage industry trade fairs, looming large on the horizon. Of the two predominant features of our June issue, the first is our Foodpro 2011 preview. Taking place from the 10th to the 13th July, at the Sydney Convention and Exhibition Centre, there is no question that this year’s event is going to be hugely important for the food and beverage industry. Despite the fact it occurs only every three years, Foodpro has established itself as a sort of axis around which the industry revolves. Many of the exhibiting companies have been planning and preparing for this show for the better part of a year; being there will be something close to mandatory,

if your company is considering serious growth this year; and for anyone interested in understanding the current and future state of the industry, Foodpro is a must. Our coverage also includes a Foodpro floor plan, along with the corresponding exhibitors list, so it might be useful to

each category. The standard has been exceptionally high this year, with well over 100 submissions split over the 14 awards. And with such stiff competition, tensions are going to be running high by the time we get to the Awards night. In the meantime, you can take a look over the finalists,

The second major focus of this issue is, of course, our very own Food Challenge Awards. After months and months of preparation, innumerable meetings, discussions, decisions and revisions, we are now only a matter of weeks away from the 7th annual Food Challenge Awards. The nominations are now all in and our hardworking and diligent panel of judges is busy pouring over the entry forms and picking winners for

which we have catalogued from pages 22 to 48. Elsewhere, we take a look at steps that are being taken to improve the supply chain for organic produce; we consider what this year’s budget means to Australian food manufactures; and we take a look at the different types of conveyor equipment currently on offer. Food Magazine’s Q&A Keith Cullen, Director of Innovative Processing, CSIRO Food and Nutritional Sciences

Keith Cullen I grew up in…Melbourne and I have lived most of my life there. It’s a very liveable city with a wonderful diversity. My career has been spent entirely in the food & beverage industry so it has been a great place to be based. In high school, I was passionate about…science and sport. Not surprisingly I went on to study science at

Monash University. My first job was in the brewing industry at Carlton & United Breweries. My current role involves…managing the CSIRO Food & Nutritional Sciences Food Processing Centre. This is a state of the art facility which assists food companies to develop and implement new technologies and processes, solve technical issues and innovate.

My work is helping to better the food industry by…helping the industry to develop and adopt emerging technologies, to innovate and to maintain a strong competitive advantage. The most challenging part of my role is…the huge diversity and complexity of challenges that food companies bring to CSIRO Food & Nutritional Sciences for our help.

Before my current role, I worked…as the Product Development Director for Campbell’s Soups leading and managing their research and new product development activities. In a FMCG food company it is a case of innovate or perish. The most successful food and beverage companies value and continue to heavily invest in research and new product development to support their growth initiatives.

The best parts of my role are…the people I work with, and working across the whole breadth of the food industry.

Studies/training that has helped me in my current role includes…my science degree and training in leadership, management, creative thinking and strategic planning.

The thing that gets me out of bed in the morning is…(apart from a good cappuccino) being part of a great organisation (CSIRO) that is working across the whole food chain in Australia

My favourite food is…the simple and humble lamb roast. When I was growing up my only experience of eating lamb was as a roast or a chop. It’s amazing to see how lamb has come of age in recent years with its popularity and the vast variety of dishes now being cooked using lamb.

T

his year’s Foodpro, the first since 2008, is billed to be the largest show of its kind in Australasia. The pre-eminent trade event for the food and beverage processing industry, Foodpro 2011 will be showcasing the most comprehensive display of food processing developments and technologies in Australia this year. The triennial event will be filling five large halls at the Sydney Convention & Exhibition Centre, Darling Harbour, between Sunday 10 to Wednesday 13 July 2011. Foodpro was last held in 2008 and post-event research proves the value of exhibitors and visitors.

For example, in 2008: • nearly 300 exhibitors presented food processing machinery, ingredients and additives, packaging and ancillary food industry products and services • more than 8,000 people – most of them key food industry buyers and decision makers visited the show • 70% organised a quote or appointment during the show • 77% were likely to buy something they saw at the show at a later time • 94% would contact an exhibitor after the show either ‘likely’ to ‘very likely’ • 6% placed orders or made purchases during the even – that’s nearly 500 people negotiating sales on the spot! • The average sale at the show was $75,955 (excluding outliers) • 66% said they would use the Show Catalogue to contact exhibitors after the Exhibition.

Packaging in an age of visual literacy Over the years the packaging industry has experienced a distinct shift from consumers who wanted quality in the product and were therefore seeking a pack to protect the product, and not much else; to a world that has raised a generation on immersion in visual literacy. aining information about a product is no longer the challenge; this is now merely at the consumer's fingertips and this access will only grow as people of my generation begin to appreciate how flat the world is and how connected we ought to be if we do not want to be left behind. How important then is the visual impact of a pack for a generation that has grown up with visual stimulus from the day it was born? This generation's consumer has its fingertips permanently connected to a button of sorts and at the end of that finger is powerful, all consuming visual information. The question, therefore, is what ought we to be doing about the visual information on our packaging to ensure our product is the one that visually stimulates the consumer while also offering sufficient, reliable facts for an impatient information seeker? The past decade has seen a paradoxical

shift from consumers relying on brand security and recognition and a dependence on honest information supplied on the pack to a world tormented by mistrust and suspicion owing to the impact of 9/11 on our psyche. Conveyors: food processing in motion A wide range of conveyors exist, however, there are key factors to consider when choosing a system for use in food manufacturing, writes Rita Mu.

W

hile the date of when the first conveyor was invented is a hazy one (sources cite the 19th century, others say the 17th century), it would be rare to find a food manufacturer today, who did not rely on the technology. Conveyors have become critical components of any modern factory, providing both time and cost-saving benefits. And as industries evolved and changed over-time, so too have the designs of conveyor systems, however, the principle purpose in the working environment has remained the same; to alleviate the strain of bulk material handling tasks and fast-track production line operations. “Conveyors reduce or even totally eliminate time-consuming and unproductive manual processes, thereby giving better output and allowing management to deploy personnel to more efficient duties,” Bruce Granger, General Manager of Industrial Conveying Australia (ICA), told Food Magazine. “When planned and configured expertly, conveyors form the cornerstone of an efficient and profitable food and beverage plant and open doors to greater expansion. “By replacing manual systems with conveyors and the right control systems, management can rest assured that control of production is not in the hands of shop floor personnel but in the plant office, where it belongs.”

The basics Common types of conveyors include belt, gravity, spiral, and chain conveyors. Most systems fall under at least one of these main types. According to South Australian-based company, Live Industrial, belt conveyors are ideal for transferring irregular shaped products that may be difficult to handle, such as floppy sacks and satchels, bags of powder and flour, and raw food products, while chain conveyors are ideal for heavy loads, such as pallets, drums and stillages. According to ICA, spiral conveyors are useful for transferring products between floors, and gravity conveyors are ideal for providing gravity flow for boxes, drums, bags and bales. While there is a wide range of

industrial conveyors available, hygienic and food-grade components are a key factor that food manufacturers need to consider when choosing a system, says Granger. “Out of all the major industries, the food and beverage sector has some of the most comprehensive guidelines to ensure contamination risk is eliminated,” Granger said. “Hence, any company in this industry sphere – be it the smallest player through to the regional arm of a multinational - has a duty of care to ensure the components it uses fit the guidelines. “Components such as metal rollers for instance may be required to be made from food grade stainless steel; bearings may be required to be of inert plastic rather than sintered steel; or lubricants

ood Standards Australia New Zealand (FSANZ) has approved an application to increase the maximum permitted levels of a high intensity sweetener and an application to use a genetically modified soybean in food and notified the approvals to the Ministerial Council. FSANZ Chief Executive Officer Steve McCutcheon said three applications and a code maintenance proposal had been approved and the approvals notified to the Australia and New Zealand Food Regulation Ministerial Council. “Once FSANZ has notified the council that it has approved an application, the council has 60 days to either ask FSANZ to review the application or inform FSANZ that it does not intend to request a review,” Mr McCutcheon said. “FSANZ has approved an application from Cargill,

Mineral oil barrier breakthrough from BASF Cardboard packaging made of recycled paper often contains mineral oil residues from printing inks. At temperatures as low as room temperature, these residues can evaporate and come into direct contact with dried foods packaged in the box; including pasta, semolina, rice, and breakfast cereals.

M

ost of the plastic linings in the bagin-box systems in use today do not provide sufficient protection. Research conducted by the Food Safety Authority of the Canton of Zurich during 2010, showed that the evaporated mineral oils consist of about 80% paraffin and naphthene hydrocarbons and 15% to 20% aromatic hydrocarbons. Animal studies carried out by various organisations over the last years show that paraffin and naphthene hydrocarbons are highly likely to damage the liver, lymph nodes and heart valves, and the Joint FAO (Food and Agriculture Organization of the United Nations) / WHO (World Health Organization) Expert Committee on Food Additives (JECFA) has implicated aromatic hydrocarbons in causing cancer. Working to tackle the issue, BASF

offers the packaging industry a variety of barrier solutions that demonstrate a high effectiveness in preventing mineral oil residues from migrating from cardboard food packaging into food. This has been confirmed through a series of studies conducted by the official Food Safety Authority of the Canton of Zurich on the BASF products Ultramid®, Epotal® A 816, Ecovio® FS Paper and specially developed dispersions. In 2010, a study by Zurich Food Safety Authority scientists using a dedicated measuring method had detected alarming levels of mineral oil residues from cardboard packaging in food. The same method was used in the testing of BASF products. Four different solutions are available for coating every type of food packaging, including paper, cardboard and film.

Four barrier solutions for virtually every type of packaging • “During the tests, cardboard, paper and films were coated with materials from BASF and the results show that the migration of mineral oil residues was considerably decelerated. The time measured were far beyond the sell-by dates of the food products normally packaged in such materials,” said Heiko Diehl, member of BASF’s Packaging Network Team. The company offers the packaging industry raw materials for barrier coatings for almost all types of packaging and conventional production processes. • Ultramid® , the BASF polyamide, has been used to date for applications including oxygen-barrier, robust multilayer packaging systems to keep meat and cheese fresh. It is suitable for use as a barrier coating both for cardboard packaging and as an inner packaging component in bag-in-box systems. The water-based dispersion Epotal® A 816 is also suitable for film coating and hence for use as a barrier layer in bag-in-box systems. • Specially developed water-based acrylate dispersions are also available for paper and cardboard coatings. A variety of paper and cardboard grades coated with

these products on a lab and pilot plant scale have exhibited very good barrier properties against mineral oils. The new dispersions are also effective barriers against native fats and oils and flavorings. Preparations for industrial-scale product testing are ongoing. Developed for compatibility with the cardboard production process, these products are designed to provide easily implementable solutions with established technologies . • Ecovio ® FS Paper is a biodegradable plastic suitable for manufacturing coatings both for cardboard and biodegradable film packaging systems. Ecovio FS Paper complies with European standard EN 13432 for compostible packaging, offering an alternative disposal pathway for certified paper and cardboard packaging in addition to recycling.

Food exporters hit by the high Aussie $ With commodity costs reaching ever greater heights and investors getting spooked both by share price and currency appreciation, the high Australian dollar has caused the nation’s food export value to drop by 13 percent. By David Stone.

he Australian dollar hit US$1.10 during May, a 31 year high, making exports of Australian food more expensive and has presented the bleakest outlook for Australian economic growth since global financial crisis. The Australian Food Statistic report found Australia’s food exports for 2009-10 were valued at $24.3 billion, which was $3.7 billion lower than 2008-09. The main reasons for this drop, according to the report, were the lower grain export prices and the appreciation of the Australian dollar – which has continued to rise during 2011. In an article published in April, News.com.au reported Jamie Spiteri, senior dealer at Shaw Stockbroking, explaining that the strong Australian dollar was generating a lot of concern for exports and overseas earnings of local companies. “When you consider overseas funds that have invested money

here in Australia, that have share price appreciation on top of currency appreciation, they start to take the view that maybe it's time to take some profits off the table.” Australian food manufacturers are also coming under mounting pressure from cheaper foreign imports, which has meant that moving production to offshore facilities is becoming an increasingly attractive and viable prospect. Coca-Cola Amatil has already announced that it is considering

New directions in the organic supply chain As the organic food sector has grown on a global scale over recent years, there has also been an evolution in how these food products are stored, shipped and monitored through the supply chain. ith the focus on product quality control, advanced supply chain technologies are being deployed throughout the organic food sector. Radio frequency identification (RFID) technology is already being deployed in the organic beef sector to help ensure both product quality and adherence to government food safety regulations (in Australia, the National Livestock Identification System legislation mandated, in 2005, RFID tagging for cattle stock). As a result of this push, organic beef producers in the country are tagging individual animals with RFID, ensuring rapid and accurate traceability as they move through the livestock chain. RFID technology is also helping organic beef producers to meet one of the key drivers to growth in the organic sector, as identified by Farmers of Australia’s General Manager, Holly Vyner – ‘buying food produced with animal welfare’ in mind. The Expert Committee on Organic Agriculture (ECOA) and Animal Welfare Task Force (AWTF) identifies in its publication ‘Animal Welfare on Organic Farms’ that in relation to cattle branding, ‘cattle should not be branded (given it can be a painful procedure for the cattle) alternative methods of identification such as RFID tags should be used.’

Today, the majority of organic food is sold through mainstream supermarkets and therefore local organic food exporters need to adhere to stricter international food safety regulations if they want to access growing global markets. Locating local The ‘100 mile diet’, made famous by two Canadians who only ate food from within 100 miles of the where they were eating, is widely touted as minimising the impact on the environment, contributing to the local community and in many cases, ensuring greater freshness due to lesser transit times. Obviously, of integral importance for people who are looking to follow the rigorous requirements of the diet (who are known as locavores) is the assurance that the food is in fact, from within 100 miles. In the case of this specific niche market, both RFID and bar code technology can help organic food retailers provide accurate and credible information as to where the food has come from and where it has been prior to coming in contact with the consumer. New generation of aseptic linear fillers KHS has launched a new aseptic linear filler that is capable of processing up to 12,000 plastic bottles of noncarbonated beverage per hour. Combining the Innosept Asbofill ABF 611, which fills 0.1 to 0.75-litre plastic bottles and the Innosept Asbofill ABF 711, which fills 0.25 to 2.1-litre; the filler is suitable for a range of liquids. Capable of handling either PET or HDPE bottles, the products are sterilised within the linear fillers according to the dry sterilisation process. The plastic bottles and closures are sprayed with

H2O2 aerosol, where it reacts on the surfaces and is then dried by hot air. An enormous advantage is that all surfaces are sprayed evenly, regardless of the size and shape of the bottles being processed. The result is maximum microbiological safety. Barrier inspection for multilayer thin-wall packaging INTRAVIS Vision Systems of Germany have released the BarrierWatcher Inspection system, which is able to inspect EVOH (Ethylene-vinyl alcohol copolymer) barrier layers for defects. EVOH is used as plastic packaging for food, medical, pharmaceutical and cosmetic goods. It creates a barrier to oxygen and carbon dioxide in food containers. This allows for

the quality and flavours of the food to be locked inside. It is either extruded or injection moulded as a multilayer structure with regular plastic materials such as PP or HDPE. The BarrierWatcher Inspection system checks for the even distribution of EVOH layers. There are two versions: a laboratory system with manual handling or as an inline system integrated with an injection

This new program is part of the estimated $9.4 billion dollars the Government is investing in Australian science, research and innovation in the 2011-12 financial year alone.

Funds for skills development To help skill our workforce, the budget includes: • $558 million in a new National Workforce Development Fund – partnering with industry to deliver more training outcomes designed to meet the needs of a growing economy • An estimated 130,000 industry-focused training places • $100 million to support new approaches to training to ensure skilled apprentices can gain their qualifications sooner • $101 million for mentoring to support apprentices and trainees through to completion of their training, including funding to provide advice to prospective apprentices on the right trade for them Vocational education and training (VET) to meet the longer-term needs of the economy • Additional investment of $1.75 billion over five years from 2012-13 under a new National Partnership with the states and territories, conditional on more ambitious reforms to make the VET system more transparent and productive. www.foodmag.com.au | June 11 | Foodmagazine 63
