America: home of the brave. That mantra takes on a whole new meaning when competitive eating is concerned. It’s both disgusting and impressive to see how much these competitive eaters put away in a small timeframe, and none are better at it than Joey Chestnut.
This absolute legend goes through hot dog eating contests like most of us go through Maccas at 2.00am, and there’s no sign of him slowing down.
His latest conquest came during the patriotic Nathan’s Famous Fourth of July Hot Dog Eating Contest.
This year, he churned through 62 hotdogs (!!!!!!!!) after a rain delay to win his eighth ‘Mustard Belt’ in a row, and 16th belt overall.
My god that’s a lot of wieners. It was no small feat to be sure, but it didn’t beat his effort in 2022 where Joey scoffed 63 hotdogs while tackling a protestor dressed as Darth Vader.

AI – THE TWO simple letters increasingly causing conjecture as the world wonders how they will shape our future. In reality, these two letters have divided society ever since the ‘parmA’ versus ‘parmI’
debate first reared its head.
That is a ‘style over substance’ argument though and has taken time and attention away from what should really be discussed – what makes the perfect parmigiana.
We take things seriously at The Tradie, so extensive hands-on research and community collaboration has been undertaken to ensure readers are getting the informed analysis they deserve.
First of all – and this is an issue which caused the most passionate responses – the chips
should not be underneath the parmigiana. Perhaps a side issue, but the perfect chip should be crispy on the outside and fluffy on the inside. Several minutes spent sweating underneath the weight of a parmigiana is completely counterproductive to this, devaluing each chip’s quality, and that is without even mentioning
There may be no finer sight on a Friday afternoon than this
the unnecessary difficulty added to the parmigiana cutting process.
Keep them to the side, let them have their own space to both breathe and shine and everyone’s a winner.
Of course, these two are often not the only items on the plate.
Sometimes it’s a gourmet salad with tomato, feta
and more, sometimes it’s just salad leaves, and sometimes it’s coleslaw. Opinions sought during our research did not particularly favour one option, however the overall agreement was that these are an extra which is not always needed – the 12th man, to put it in cricket terms – and therefore any additional joy you get from the side salad is a bonus.
Now on to the parmigiana itself. The thickness can vary widely, however The Tradie’s preference is to keep it relatively thin
and flat and with a bigger surface area on top for the good stuff.
Quality ham is a nonnegotiable, while the breadcrumbs should be nicely cooked and not too thick or overpowering.
It should be covered liberally in sauce – a delicious, thick tomato sauce that does not have an artificial taste.
The cooking process can make or break the final product.
A perfect parmigiana should look almost overcooked on top, with
the cheese well and truly melted and evidence of this being in the crispy brownness.
If you can get delicious, melted cheese right to the edge rather than looking sad, rubbery and undercooked, you have nailed it.
Do all of this while keeping the chicken itself juicy and tender inside – and you have hit the jackpot.
Another element which should come into
consideration is price. There was much debate about a ‘magic number’ during The Tradie’s community consultation, however the concise summary settled on $25 as being a figure which people are happy to see in a pub’s menu.
The $25 to $30 range was considered largely acceptable, albeit with expectations starting to rise as the price did.
If the first digit on the parmigiana’s price is a three – the pressure is well and truly on to reach
levels of perfection outlined here.
Not all readers will necessarily agree with all criteria – that is the nature of debate on topics of passion –however remember each point made has been developed through sourcing many opinions and not one thing named in the article received passionate rebuttal when proposed, which should be considered a win.

lit up the whole ‘catch ’n’ cook’ scenario. Stars have been born. And the messaging is fantastic, usually denouncing the waste or over-consumption of our fisheries resources and promoting healthy lifestyle in the great outdoors.
Steamed on a beach, mouth watering goodness
After many years in the charter industry, one of the greatest pleasures for me is simply cooking a seafood meal for people in a remote environment. I take pleasure in it and try to take pride in it. When you are out amongst the elements, hunting within nature’s confines, the cuisine tastes all the sweeter for you having been involved in it’s capture. In this article, let’s cruise around the far north to discover what’s worth eating.
Practicing catch and cook in the tropics requires a sensitivity of conditions.
As soon as an organism is taken from the water, it begins to decompose. Heat is the primary concern and every effort should be taken to prevent spoiling and wastage. Eating things super fresh is usually best and it encourages you to only take what is needed. Storing product fresh or chilled is a never-ending escalation of inconvenience.
Most seafood available to travelling anglers comes in the form of fish, crustaceans and mollusks. Some pretty strict rules and regulations govern the collection and storage of all three. Best have a browse at your chosen state’s rulebook (size and possession limits) for clarity as a shoulder shrug doesn’t cut it any more with fisheries inspectors.
Besides the simple rods and reels most fisherman is carrying around with them, those wishing to eat their catch might employ all manner of personal equipment and gadgetry to get the job done. A multi-tool and a sharp knife are two very good start points. Something always needs to be cut or fashioned when you are bush cooking. Hard twigs can be whittled quickly into forks with a little imagination. Paperbark becomes a paper plate.
As nice as it is to eat traditionally cooked marine and freshwater delicacies, jazzing things up a little can do wonders to the finished product. These days carrying condiments, herbs and spices in small packaging can really enhance the flavours of a simple bush meal.
A couple of small sandwich bags with salt and lemon goes a long way with flavour enhancement. Wasabi, soy and vinegar in your kit bag helps cover a range of seafood bases.
A sharp knife and a lighter are my only two ‘must-haves’ for turning fish into food. Without preaching too much, I think most people understand the health benefits of consistent fish consumption. Seafood is generally quick to cook and doesn’t need the extensive hardwood into coals scenario often needed for bush cooking. A beach or sandy riverbed are two of the safer places for a lunchtime campfire. A quick hot fire made of driftwood or flood debris can see you cooking in no time.
We get a bit fussy in Australia with what constitutes a good meal. This is a luxury many can’t afford but in the sparsely populated north, it never feels too hard to secure fish to eat. Preparation for cooking fish on an open fire/coals can be as simple as gut and gill. Scaling is a great option if you have foil or plan to encase your fish or smoke it above flame or on scented leaves. Much of the richness in fish is within and adjacent to the skin. The gelatinous membrane connecting flesh with skin holds plenty of flavour.
Australia’s far northern coastline and inland waterways hold a richness of species diversity almost unrivalled. By world standards our fisheries are in good health and a busy angler can live off the fat-of-the-land so to speak. The Great Barrier Reef coast adds an enormous buffet to this richness with too many colourful and oddly shaped fish to mention. Our freshwater species count is much lower than many countries with superior freshwater habitat, as northern Australia is seasonally dry.
Experiment with edible fish, plenty of species will surprise you. It also helps spread the catch effort and prevent overfishing of select species. We have come a long way in using every available part of a fish and soon this will spread to cooking species not previously given a five-star rating. I enjoy picking apart a hole fish and eating all the bits others missed. For example, the tiny bits of flesh surrounding the bones at the base of the dorsal fins is very rich, as is the flesh on the tail wrist. The cheeks and tiny pieces of flesh encased in the skull are not to be missed.
A method I love employing when cooking fish on a beach dates back thousands of years I suspect. Dig a decent sized pit, start a hot fire in the bottom of it. When it turns to ash and coals, place scented leaves on top, followed by the fish on the thick leaves, followed by paperbark (or even a wet mat or towel) then sand covers the edges ensuring no steam escapes. This earthen oven should be left for a comparatively long cook, around 45 minutes to an hour and then carefully unwrapped, the fish gently rolled or flipped onto a platter. A touch of salt and lemon equals smokey deliciousness. Not a single ounce of flesh is wasted, a fish eaten this way seems to go a lot further.
Making numus is another favourite. Simply use a lean whitish flesh such as queenfish or small trevally (remove blood line), diced into small thin pieces. Soak in a mixture of vinegar and citrus juices, add spice, sweetness, herbs, ginger or garlic in whatever quantities you desire and consider onion and chilly for
zip. It can be concocted in a flash and eaten a half-day later, preferably chilled. Serve with beer! Sashimi which is basically raw fish has really exploded in the past decade amongst fishing Aussies. It requires very little preparation and limited condiments to be absolutely delicious out in the wilds. Fish such as northern bluefin tuna, Spanish mackerel, thread fin salmon and tea leaf trevally are amongst the tastiest in my opinion. The secret is to have them bled and chilled very quickly, the flesh quality improving once it has set firm. A dash of chilled soy sauce mixed with wasabi as a dipper and watch the vultures descend!
Fish as we all know is a delicate substance to cook. You only want it cooked for the bare minimum and this point is reached when the flesh first breaks apart. At this defining moment it will still be succulent and moist, however go much past this point and dry, poorly textured flesh is the result.
Brace of crays, fresh is best

Most people of the north get pretty fixated on mud crabs. And with good reason. They live in most places along the coastline and in the myriad of estuaries across Australia’s northern coast. Cook them on the coals, boil or steam them in salty water. I like adding a dash of vinegar and sugar to the pot, only giving them around nine minutes from boiling. Rinse and clean, bash the claws, eat warm and savour every delicious mouthful.
Prawns are another top end staple. They can be cast netted in a wide range of habitats across the north, seasonally abundant in many different forms. Crocodiles can be a particularly menacing threat to those wishing to castnet from the shoreline or creek bank, so be very careful! You don’t need too many prawns to put a quick feed together. I enjoy cooking them over the smokey embers of a very quick fire.
Lobsters win the prize for perhaps the coolest looking object you can eat. The northern varieties have vivid, rich colouration, giving them names like painted and ornate. They can be hand collected or speared around much of our northern coastline. Around shallow foreshore reefs and headlands and around much of the east coast Barrier Reef. Crays can be cooked quickly on the coals, being careful to lay them upside down for most of the cook time. Cutting them down the middle before a medium fry in garlic butter is a proven favourite.
Cherabin (freshwater prawn) and red claw crayfish are another two staples of the far north. Seasonally abundant in different areas, they can be either hand speared under a torch at night or trapped in a small opera-house pot with a variety of simple baits. Both have very delicate flesh and should be cooked quickly and very simply and require very little else then a tiny pinch of salt to enhance their flavour.
Crays on coastal rocks, always have a spotter!
Oysters are generally quite small on many of the rocky outcrops across much of northern Australia. However, pockets of larger black-lipped oysters can be found, usually by locals in the know. Suitable footwear, a container, a flat head screwdriver and a rock is all that’s required. And usually a couple of band-aids! They are massively rich when eaten direct from the rock and only a few are needed. Taken whole, the oysters can be kept and placed on an open fire, the cracked seal and a dash of saltwater bubbling out onto the fire indicates they are done.
Scallops and other bivalves such as small pippies and mussels can be procured by digging or collecting as you are free-diving. The good ones taste great but some of the ordinary ones taste very ordinary. The quickest of cooks on a small fire will have you tasting in no time. Mud whelks and mud shells are another two commonly eaten by locals as you venture into the remote north.
As with most of these critters, try to concentrate your taste buds on the firm muscular foot and get selective about the rest.
Squid (plus cuttlefish and octopus) are the meaty mollusca and can be cooked in so many ways it’s not funny. Mostly taken at night with a spotlight, speared or
jigged around bays and reefs. Besides making fantastic fish-baits, squid and cuttlefish might be flash fried in thin strips with whatever flavours you have at hand. Any combination of salt, pepper, flour, crumbs, herbs, oil and citrus will taste great if eaten hot and fresh.
Octopus are a whole other creature. The long tentacles need to be tenderised before being added to the final cooking process.
This is a just a quick sample of some of the delicious seafood varieties on offer for those cruising the far northern regions. More and more families hit the road these days, taking the kids for that once in a lifetime epic adventure. Catching a feed and turning into something the whole family can enjoy helps to forge memories that burn the brightest.
Learning the process of catch ’n’ cook can be a long road and happily one you never quite reach the end of. There is always something new to try and something to refine for next time. Everyone has different tastes and there is no right or wrong when it comes to seafood preparation. Trial, error, practice and a spirit or adventure should be part of every recipe.

PREMIER PLUMBING SERVICE was launched in 1951 in Sebastopol, Ballarat, by couple Neville and Vawyn Donald whose sons eventually joined to begin running the family business.
“Premier Plumbing Service has a team of 30 people, and I always describe it as a bit like organising a football team every day,” chuckled Director Grant Donald.
“You need to find out who’s going to which job and where they are located, who’s going to be in the ruck, who’s in the wing and who’s a fullback and who’s a full-forward.
“Our typical days are flat out and we can’t afford any
downtime, so we always need to be well organised.”
That’s where Grant, his brother and co-director Jim Donald as well as nephews and coDirectors, Michael Donald and Tim Donald come into the picture.
It’s a full family affair at Premier Plumbing Service, with each director adopting a slightly different role and set of responsibilities to oversee the complex operation, which prides itself on doing a seamless job that’s often out of sight and out of mind.
Operating throughout the Southwest, West, and Central Victoria regions, the company has
a range of commercial and industrial clients it provides plumbing services for such as schools, day-cares, office complexes and the retail sector.
From installing sewer drainage, water services, civil stormwater drainage,
hot and cold water systems, gas reticulation, fire services including fire pump and tank systems, fire sprinkler systems, solar hot water, and backflow prevention devices, the Premier team have just about every base covered.

The Donald family has been a plumbing family for about four generationsThe Donalds progressively entered the industry and became licensed plumbers over the years.
“As we’ve reached the age of leaving school to do an apprenticeship, we began training as plumbers,” Grant said.
“For myself, that was in 1976 and my brother Jim was about 1970.
“We were brought up in the plumbing trade.
“We started our apprenticeships when we were around 15 or 16 years of age.”
Fortunately for the good folk of Ballarat and surrounds, the Donalds are nowhere near finished
as a plumbing dynasty. Jim’s Grandson is starting his work experience with the family and eager to study for a plumber’s licence like the other role models in his family.
With a growing diversity of work now undertaken by the Premier team, the need to expand the transport capacity within the business is as crucial as it is constant.
Premier Plumbing Services recently collected an NPR 45-155 AMT Tradepack back in December 2022 to ring in the new year with all the latest upgrades, including the Advanced Driver
Assistance System (ADAS) – now standard across Isuzu’s light-duty range.
“There is never an issue. We get our servicing done at Ballarat Isuzu and the new six-year warranty is fantastic,” Grant said.

“When Isuzu change the shape of the bullbar for example, we update,” Grant mused.

at the Brisbane Convention and Exhibition Centre will again showcase the latest toys and tech from the industry at its free trade show, hosting a tonne of

“This year we’ll be displaying some of our camera systems for pipe inspection, location equipment, FlexShaft machines which are used for cleaning drains with soft blockages and descaling.”
No-Dig Down Under is regularly attended by hundreds of plumbers or plumbing contractors looking to see how they can improve their services.
“It opens doors for new industries and sectors which are on the rise and are getting creative,” Darren said. “Attendees are able to see what we can offer and, depending on which products, they can also see the product being demonstrated.”
No-Dig Down Under will once again host the biggest players in the trenchless technologies industry
This year’s theme will be ‘better outcomes through trenchless’ as stakeholders come together to discuss how to grow the industry. As well as having a chance to chat with some of the top dogs in the industry, there’ll be plenty of social events offering the chance for attendees to network.
For those looking to grow their understandings of the industry, the Australasian Society of Trenchless Technology will deliver training sessions that can accrue CPD points. No-Dig Downunder will be held between September 12-14. The trade exhibition is free, with online registration available. The conference, training modules and social events are paid registration.
Expo will be an event tradies won’t wanna miss. As well as trade shows with all the latest toys and tools, the expo plans to tackle many of the issues facing tradies nationwide.
A particular area of focus for the inaugural event will be growing women’s participation in the sector.
This will include guest speakers from peak bodies such as National Association of Women in Constriction (NAWIC), The BCW (Behaviour Change Wheel) and Empowered Women in Trades (EWIT).
EWIT founder and Chief Executive Hacia Atherton said she was honoured to play a role in such important discussions
at Inside Construction Expo.
“I think it’s really great and it shows the shift in mindset that’s starting to happen in this industry,” she said.
“A shift from being an industry that’s exclusively for men to one where any gender can thrive, it’s fantastic to see that.
“I think there’s so much work to do in this space in terms of improving inclusivity – not just gender, but for people from different cultural backgrounds or identity.
“The more voices that are out there supporting each other and backing one another up, the more we’ll see the muchneeded change that needs to happen for all.”
Hacia comes from a fifth generation plumbing family, with her brother currently sitting as the CEO of the family business.
Despite being raised around the trade, Hacia never really considered plumbing as an option for her based on her gender.
“It was because of my own unconscious bias that trades and construction weren’t really for women, so I went off and got my accounting qualifications,” she said.
As soon as she returned to the nest, her father put her on the factory floor rather than a desk. It was here Hacia said she fell in love with welding and realised her potential in the trades.
“If I had this unconscious bias despite all this access and opportunity, how are other women out there going to be able to find their passion for trades?” she asked.
Hacia said there’s plenty of discussions to be had around improving diversity in trades, and the Inside Construction Expo will help improve dialogue around the topic.
“One thing I find disheartening is when I go into schools – there’s such a lack of awareness about the amazing career opportunities from trades all the way up to construction managers and OH&S,” she said.
“It’s one of the biggest industries in the country, but it’s not overly promoted or talked about within our schooling system.
“Having events and platforms like this is a really good way of getting the message out for parents and career councillors, inside and outside the industry, about the opportunities.”
Inside Construction Expo will have more than 150 guest speakers across multiple stages from companies and associations across the industry.
In addition, there’ll be boat-loads of space filled with exhibitors sporting all the exciting equipment tradies need on the job, from power tools to adhesives.

Ben Farrell might consider his career as a chippy to be ‘bog standard’, but it’s certainly far from it. The 25-year-old Geelong carpenter works his tail off on a weekly basis, but for him it’s only the beginning…

“My music helped pay for my first car,” he said.
“I was tossing up between music or doing something more hands-on and then something just clicked for me, I had a lightbulb moment, I knew that I wanted to be a carpenter and so I threw myself into the industry.”
Ben completed his apprenticeship a couple of years ago and went full throttle from the start.
During weekdays, Ben’s working with Wade Builders, supervising younger members of the crew.
“When I arrived at Wade Builders, I just hit the ground running and I wanted to bring my skills to the team and that was my organisation,” he said.
“I’m over-organised so I fit in well with what was needed when I joined, within the first week they gave me the freedom to flourish and bring my organisation skills to the table.”
When he’s not with Wade Builders, Ben’s doing a bit of small-time construction such as pergolas and outdoor decking, and with the little spare time he has, Ben’s laying the groundwork for his business – Ben Farrell Carpentry & Repair Work.
How does he get it all done?
“I don’t really know,” Ben answered.
“I get really immersed in it and really love it. A lot people go home at the end of the day and switch off, but I can’t switch off. I have discovered my passion in life and I just live and breathe it.
“It’s good from the builder’s perspective, because I’ll go home and draw up plans – I am just trying to help them out as much as possible so in the morning we can get as much done throughout the day, I enjoy taking ownership of the work I am doing. It helps as im going for my building registration now, I feel like I can contribute more to wade builders with that extra knowledge.”
But without his partner Chelsea supporting him, he’d be in a world of trouble.
“She’s great about it, she knows I’ve got a massive workload and helps out where she can,” he said. “She’ll cook dinner for me and is super supportive of everything I do; I am so lucky to have such a great support like her.”
Ben’s brimming workload has him working on plenty of top-end projects, which is where he sees his career heading in the long run.
“My expertise is more at the high-end which will see me working with architects who are designing houses that are bespoke for clients, where I can be spending anywhere from six to 12 months on a single house,” he said.
With business cards, signs and even hoodies and hats done up sporting ‘Ben Farrell Carpentry & Repair Work’ lettering, Ben’s mind is well and truly set on making it on his own.
“I really like working with clients to understand where they’re coming from and what they want so they’re happy at the end of the job,” he said. “I have been lucky that people I have worked with have given me the scope to make cool and crazy designs come to life.
“That’s my market going forward, it’s harder to get into but it’s where my expertise is. If I can show people that in my carpentry, then hopefully people can recommend me onto others and I can grow my business.”
Ben’s obsession with work isn’t for nothing, and he’s got the hardware to prove it.
A collection of tradie awards sit on Ben’s shelves, including multiple Apprentice Of The Year finalists and certificates for best in fourth year and best overall apprenticeship.
“I didn’t even know the awards existed. I was just completely stoked,” Ben said. “After I won that first award, my boss kept nominating me and I just kept doing what I was doing, it really was a surprise.
“I started attending these awards nights all over Melbourne and they were a lot of fun, everyone was
dressed up in their suits and ties and my family came along and it was really something.”
When he can finally catch a break from work, Ben loves going off-road for a bit of camping and 4x4ing with his mates.
“I would love to do it more. Doing weekend work helps paying for some of those accessories I need to go camping with,” he said. “I try and get around and explore Victoria as much as I can, but it’s hard to find the time these days.
“I mainly set my rig up for touring, not necessarily with a big lifts and massive tyres. Just enough to get through most obstacles to get to remote campsites and secluded areas.”
Whether it’s camping, building his own business or working on-site, it doesn’t seem like there’s any stopping Ben when he puts his mind to something.

TEST #1: PINPOINT ACCURACY
Angus drills into ceramics for a few reasons including bathroom renos, but 90 per cent of the time it’s to install doorstops.
“If you’re putting in a door, you want to be able to put in a doorstop. You can’t always go through the skirting board because there’s cupboards or something,” he said.
For this, accuracy is crucial.

“You get one chance with them, so when we do them we always need to use brand new bits every time,” he said. “Otherwise, you’re buggered. You have to ring the tiler to come back and do it again.”

For this test we hit up Patrick Reid from VRA Plumbing who was working on a site in Cranbourne, Melbourne.
Patrick’s well experienced with RIDGID’s plumbing tech, and is a massive fan of the FlexShaft line. He used the K9-204 on a stormwater drain that had become significantly blocked.
Patrick ran a camera in along with the cleaner which enabled him to see the kind of blockage he was dealing with.
“It is without a doubt the best product I’ve used for this particular task,” he said.

cast-iron drains to get through. We only needed the basic chain knocker to get through the four-inch pipe.
“It worked brilliantly, it got the drain flowing and the customer’s happy.”
The K9-12 is the smallest of the FlexShaft machines and is perfect for those quick, smaller jobs, and simple enough for a DIY, home handyperson or maintenance staff at a hotel to use.
A unique feature of the K9-12 is its built-in clutch which extends cable life and makes for maximum performance.
“If you do hit something you shouldn’t be hitting down the drain, it will clutch out on the unit before you do any damage,” Chris added.

TEST #1: CUT FROM THE RIGHT CLOTH
Angus put both jigsaws to work on some merbau he was using for a patio, and both the bow- and barrel-handled jigsaws come with Bosch’s awesome sawblade-guidance design. Jaws at the baseplate hold the blade in place closer to the surface, so there’s no bend outside of the blade in the material.
“Both saws were making perfect cuts,” Angus said.

“I found the switch fine for both,” Angus added.
Thanks to the precision controls mentioned earlier, the blades on both saws also last longer, and when you do need to switch up, it’s as simple as hitting the ejection lever for a quick swapping out.
“There’s so many little features that made things easy and quick,” Angus said.
There’s a lot of control from the screen interface on both tools, things like adaptive speed control (ASC) and switching the light on and off, but a number of things can also be easily adjusted from a phone – things like stroke limit and amount of speed limits if there’s only a few controls used regularly.
Bosch has made it easy to make quick cuts with little stress and fooling around with these jigsaws. Both the bow- and barrel-handled jigsaws are loaded with great features, and it’s also worth mentioning both jigsaws have a port for a dust adapter which makes clean up easy as.

TEST #1: WIRES CROSSED

“What we did was try and find any live cables a plaster wall,” said Toby.
“We needed to get in there and put on some knobs for towel racks.”
“The last thing you want to do is put a blade through a wall and hit live power, and with the latest distance-measurement function, the 200 C was able to give us a look at what lay hidden inside the wall.”
Thanks to the 200 C, Toby could see all kinds of objects, such as wiring and pipes.
“Thank goodness I didn’t start ripping through it,” he added. “I would’ve been in a world of trouble.”
Toby then used the 200 C to identify studs in the wall for his towel racks. While he does have a stud finder, Toby said the 200 C was simpler to use and more
“This tool is way more advanced than your conventional stud finder,” he said. “The interface is clean and clear, and I can even save shots of the walls if I need to refer to them later.”
These findings can easily be transferred to a laptop as well via USB-C or micro SD card.
