Echuca tourism hub WEll-KnoWn hospitality idEntitiEs, KErriE and scott pitts, havE rElocatEd thE much-lovEd cErEs rEstaurant to thE port End of high st, thE hub of food tourism in Echuca-moama. moving from its birth home at the old flour mill site in nish st after five years, ceres has changed more than just its location, with a shift from exclusively fine dining to a more casual alfresco experience, with possibly the best sidewalk dining location in all of Echuca-moama! despite leaving behind the unique and rustic interior of the old mill, scott explains how the high flow of car and people traffic has more than doubled their kitchen workload. “We did 1000 more meals in our first week here and have served 2900 people in just two weeks,” scott says. With a change in pace from night-time fine dining at the old mill site, ceres’ new hero (or signature style) is its lunch menu with an emphasis on deli produce including antipasto platters, fresh salads and in the near future, scott’s very own home-made cheese (sourced from a local dairy). despite the new location and increase in pace, scott and Kerrie remain true to their philosophy of great-quality food using the freshest and whenever possible, local produce. “the produce is still and will always remain very much the driving force in what we do,” scott says.

breakfast is also a new addition to the ceres menu and is being revisited by scott who, in 20 years as a chef, has rarely cooked a breakfast menu. however it has not taken long for scott to once again become familiar with the humble egg … and cooked just the way you like it! “We cooked 28-dozen eggs on our sunday,” scott says. regulars to ceres will be pleased to know that despite the many changes, diners can be prepared for the same attention to detail and great-tasting produce they have come to expect. “We are still doing what we have always done and we are doing it well,” scott says. tapas is still a star at the new ceres and you will be spoilt for choice when it comes to ‘where’ to enjoy your zucchini flowers filled with goat’s cheese, or the everpopular arancini served with garlic aioli. upstairs would be my choice, where you can take in the entire length of picturesque high st. scott’s signature double-roasted duck (featured in autumn 2010 Homescape) with sautéed spinach and cherry jus is still a mainstay on the menu – thankfully! Where were you born and raised? I was born in Ambermere (then a maternity hospital in Shepparton) and raised on an orchard in Shepparton East. My father built the house which is still standing on the corner of Central Ave and Benalla Rd. I went to the Shepparton East Primary School, Shepparton High School and then finished my last few years at Albury Grammar School. When did you take up real estate as a career? I started my working life in a Melbourne chartered accountant’s office then moved back to Shepparton in the late ’60s. Initially I worked in insurance before moving into real estate in the early ‘70s, and I eventually retired in 2008 when I was elected a councillor. However, and because of some unfortunate circumstances, I found myself as mayor almost straight away so it was a steep learning curve back then. How busy are you? Every day is a full day and most weeks there are some civic commitments every day of the week, including weekends. I am fortunate to have a supportive wife, Prue, because a lot of the time the role and commitments involve the mayoress as well … so you do need that understanding by your partner. What do you consider your greatest achievement as mayor? Going out and selling the council as an institution of some note. The community can and should feel proud of their council … they are ordinary, everyday people who step up with a desire to contribute and make a difference.

What about the lake redevelopment in Shepparton? I think it’s magnificent and to me represents the positiveness and symbol of the municipality. Most days I walk around the lake and it gives me a great deal of pride to see the council’s employees working to achieve and maintain what I think is a worthy and enticing family-friendly asset for our community. It’s been a team effort.

this 100-year-old farmhouse has been transformed into a classy, truly liveable family home that is equally at ease tucked away on 4ha just 4km north of Kyabram, as it would be in the hamptons of long island. in fact, there’s a hint of the hamptons style to this cleverly planned and executed renovation which has been sealed with an in-ground pool and beach-style cabana, bright open living spaces and design elements that have been sympathetically merged into the original genesis of the house. there’s a strong sense that everything just works in this hidden little gem. nothing competes for your attention, yet there is so much to take in, nicely parcelled into 20sq of efficient living space for a busy family of five. but the calm, relaxed and easy atmosphere is very much a product of design – passive green design. lisa, who works in the family business, malijo sustainability, specialises in home and community sustainability projects. it’s not until lisa and steve explain the extent to which they have adhered to the philosophies that are the basis of lisa’s work, that you understand these two are the unsung heroes of this striking renovation. While the end result is easy living, the journey has been a little more of a hard slog.

lisa and steve first fell in love with the potential of the 13sq weatherboard the minute they rounded the long country driveway three years ago, having searched for a home they could work with and renovate to passive and green principles. “the house was sound structurally which was most important, but it was all wrong. it faced the wrong way, it was dark, with a west-facing front and no northerly aspect,” lisa says.

“but the garden was amazing, and we knew it was for us.” What followed was 18 months of intense planning and research before steve and lisa, who were owner builders for the project, secured the services of local builder leigh huggard to start the renovation, and reshape the orientation of the home towards the north. lisa and steve made the most of the solid slab that acts as a thermal mass for heating and cooling in their living area by laying tiles over the top, and they installed 1kW of pv solar panels for solar electricity, and a solar hot water service. they maximised cross-ventilation, with strategically placed double-glazed windows and french doors, and the only conventional heating and cooling in the home is a split-system unit that is supported by ceiling fans.

The weatherboard house has been transformed into a charming, family-friendly home.

the 3.6m ceilings were dropped in part to 3m, “so the house doesn’t have to work as hard”, but the original pressedtin ceiling in the kitchen has been retained, as has the old fireplace that has melded the old with the new. “i think we’ve been sympathetic to the old girl,” lisa says. “tarting her up into a contemporary home wouldn’t have cut it. We didn’t want a big house with all that energy consumption, and the final floor plan is 20sq. We added about 10sq including the alfresco area. it’s only as big as it needs to be.” taking into account their three children, bodhi 8, charlee 7 and Xan 6, you may be forgiven for wondering how everything fits, yet there are wide open spaces and cosy nooks for privacy rubbing up against each other with ease. steve worked on a lot of the renovation himself, after hours and on weekends, tackling everything from painting and

fencing to roofing and insulating the home. “We lived in a bit of a jumble for a while; we even cooked eggs in the bathroom at one stage,” he says. the couple used all local tradesmen and had nothing but praise for their cabinetmaker leigh morris of mbm designs, Kyabram, who bought into the vision, and produced solutions for ensuring the new kitchen cabinetry worked flush with the uneven original floorboards. steve and lisa were industrious in using recycled and existing house materials where possible – the pool cabana is the remodelled veranda that used to sit on the north of the house. both say going owner builder for a project like this is not for the faint-hearted, but the money saved allowed them to pay for the in-ground pool – a big decision for lisa. “i wrestled with the pool, because i know they are inefficient beasts,

but it was a lifestyle choice for the kids and their friends,” she says. “We do have solar heating for the pool, but because even then you need a pump that guzzles energy, we don’t use it much. We are just very diligent with the pool blanket that traps heat and prevents evaporation.” a 100,000 litre rainwater tank is one of the home’s clever green features, while lisa’s imported windmill, purely for looks, towers over the tank ensuring the authenticity of the old farmhouse is maintained. steve pays a lot of attention to the rambling garden around the home, but credits the previous owners with its beauty. an east-west-facing pergola shrouded in deciduous grapevine provides shade in the hot months, and new eaves over the north-facing windows protect the home in summer while still allowing sunlight to penetrate in winter.

travis auld, thE boy Who grEW up in tatura and is noW at thE hElm of afl nEWcomEr, thE gold coast suns, is EntEring onE of thE most EXciting phasEs of his lifE as thE club hEads into its inaugural sEason With somE of thE gamE’s biggEst namEs and an EnviablE linE-up of talEntEd young rEcruits. Establishing an afl club from scratch has been a huge challenge, but travis says the rewards far outweigh the difficulties he has faced as chief executive officer of the gold coast suns. the beachside community has embraced the football club and has put its wholehearted support behind the team. “When i arrived we had six staff and an old stadium. We didn’t have offices and we had eight contracted players. now we have a new 25,000-seat, $144 million stadium. We have 54 staff and 53 contracted players. We have a vibrant and exciting culture,” the former mooroopna secondary college student says.

With a star-studded list that includes the ablett brothers gary and nathan, former brisbane lion best-and-fairest winner michael rischitelli and 2008 hawthorn premiership player campbell brown, along with coach, former West coast Eagles great, guy mcKenna, the gold coast suns are aiming to be competitive in their first afl season.

the youngest son of tatura greyhound trainer Jim auld and his wife tanya, travis was appointed gold coast suns cEo in June 2009. “there’s no better challenge than to start up an afl team so it’s very enjoyable. it’s absolutely the ultimate test. there’s no cushioning around you; you’re accountable for every decision you make.”

“a playing list has never been built this way before. the average age of our players is under 20. they’re very young but very talented. We want to be competitive week in, week out. Win, lose or draw we want fans to walk away saying, ‘those guys really had a crack’,” travis says.

it’s been a rapid climb up the ladder for this talented 38-year-old, having spent almost 12 years at Essendon football club where he rose to the position of chief operating officer and was in line to take over from former cEo peter Jackson when he retired.

“i got into football by accident. i’m actually a chartered accountant. i was working for a chartered accounting firm in melbourne. the Essendon football club was a client of the firm’s and i was doing some work for them. back in 1995-96 i discovered salary cap breaches at Essendon as part of the annual audit and so the new cEo at the time approached me to head up their finance department. i’d never thought about working for an afl team,” the la trobe university bachelor of business graduate says.

“there’d been discussions about me stepping into peter Jackson’s role when he left, but during that time i had discussions about this opportunity with the gold coast football club. the interview period spanned six months and i became quite attached to the idea of being involved in a new club and heading up to the gold coast. it was a difficult decision, ‘do i stay with a 140-year-old club with a huge supporter base or chase the dream and start with a blank canvas?’ ”

travis hasn’t looked back since moving to the gold coast with his wife stacey and their two children isabella, 8 and thomas, 7. “part of my role was to work with our list manager to present opportunities to players at other clubs who we targeted, like gary ablett, campbell brown and michael rischitelli. that took a lot of work demonstrating what we thought was an enormous opportunity for us and for them,” travis says. “the most difficult thing has been the volume of work that needs to be done to build a football club. very early on we spent time establishing the culture we want here and the set of values to underpin that. those values were established with the community here, 10 players and six staff. We had to spend a lot of time keeping those values alive as others came into the club. my view is the biggest difference between a successful club and an unsuccessful club is the character of the people at the club. that’s been very rewarding for me.”

and so has the response from the gold coast community. “the community here demanded their own football club. We have 11,000 members and over 50,000 registered fans. We’re a member-owned club. We spend a lot of time out in the community and the guys do their bronze medallion with the surf lifesaving club and then they go out and patrol the beaches. “the gold coast is a fantastic place. it’s great in terms of building an afl club because we don’t have the scrutiny we would have in melbourne, however we have the necessary support and passion within our community.”

it’s also the perfect place to raise a family travis says. “the kids love the coast and thomas has taken up surfing. Every weekend you’re down the beach or swimming in the pool; they think it’s one big holiday!”

as much as he loves Queensland, the former tatura state school student still has strong ties with his hometown. “growing up in a place like tatura keeps you very grounded. the thing i love about all my mates i grew up with is that they never let you get too far ahead of yourself, no matter where you are or what you’re doing. When we get together you’re just one of the guys. those values stay with you forever.” [hs]

GoulburN river valley Take The TiMe To TurN off The beaTeN Track iN The picTuresque GoulburN river valley reGioN aND you’ll fiND ThaT There is aN aMaziNG varieTy of qualiTy aTTracTioNs To eNjoy. from fine wine and fresh produce to spectacular scenery and naturebased activities, there is a world eager to be discovered and well worth being promoted. so much so, that an organisation called goulburn river valley tourism (grvt) has been established to promote the striking and diverse area from shepparton in the north to Kinglake and marysville in the south, and from Kilmore in the west to Eildon in the east. having to choose a name that truly represents such a large and diverse region of victoria could have been overwhelming for a start-up organisation, however grvt executive officer amanda mcculloch says choosing a name was easy. “there is one linking and common theme that ties the whole region together and that is the majestic goulburn river. all of the valleys of the region feed off it – from the valley of a thousand hills to the goulburn valley – the river draws everything together and is the lifeblood of our wineries, orchards, fishing and nature-based tourism offering.”

Water-based activities are considered a tourism marketing strength, with lake nagambie and lake Eildon popular drawcards for recreational boating enthusiasts, while the area is also home to some of the state’s most renowned wineries. complementing these attractions is the breathtaking scenery and nature-based tourism opportunities in the strathbogie ranges and alpine areas. “visitors will be able to use the tallarook to mansfield high country rail trail for horse riding, cycling and walking while taking in the beautiful surroundings. We are working on developing opportunities to work closely with the equine industry so that we can promote it as a tourist attraction. another of the region’s key strengths is the ability to host major events,” amanda says. “visitors want to experience the region and we have so much to offer them. We have a lot of large wineries and smaller niche wineries. the produce in the region is unbelievably good; there’s everything from mushrooms in avenel, to salmon

built circa 1900, the original 14sq weatherboard house has been extended to include a large guest wing for the couple’s visiting children and grandchildren. outside, there’s nothing the little ones like better than exploring the whimsical garden that surrounds their grandparents’ home. the owners bought the house at auction in december 2003 and began renovating the following year. an extension that was built onto the original residence during the 1950s and included the old kitchen and bathroom had to be knocked down as it was riddled with white ants. the couple rebuilt this section of the house and renovated the oldest part of the home before moving in in february 2005. the extension that includes the new kitchen,

meals area, dining room and laundry was under way and work began on the guest wing and new garage in January 2006. many of the original timber features, including the floorboards, ceiling and wall panelling in the front of the house have been restored, while the owners have chosen a charming french provincial theme for the 17sq extension – a reflection of the time they have spent in france. a luxurious cafe ole and cream colour scheme has been used in the entrance hall, complementing the rich, dark timber floorboards and 3.75m timber ceiling. the owners, who did most of the renovation and demolition work themselves, called on the expertise of a master plasterer to carry out the moulding and ornate cornice work required to restore the home’s victorian-era features. the front room has been converted into a classic library – this is the masterpiece of the home and it is simply breathtaking. the boutique grand piano, finished in highlypolished walnut, is just one of the many beautiful features in here. timber bookcases

There’s something unique about the pretty ‘Town of Flowers’, where everyone you pass on the street is smiling and residents go out of their way to help each other. Violet Town has captured a spirit that can be difficult to maintain in modern times, so much so that when people move to the town, they find it very hard to leave. Famous for drawing crowds to its huge monthly market, and as the hometown of former Killing Heidi band members, Ella and Jesse Hooper, Violet Town’s profile continues to grow as it becomes a popular destination for retirees seeking a

Violet Town Action Group chairperson and local historian, Robin Landvogt, and her husband Peter moved to Violet Town 33 years ago and have raised three sons there. Robin is heavily involved in running the town’s government-funded EcoLiving Project and she and Peter recently built

Robin says the community is known for its “can-do” attitude, recently banding together to revive the disused area around the picturesque Honeysuckle creek that runs through the town. With a $250,000 government grant and countless hours of volunteer labour, Violet Town residents have created a 3km walking track alongside the creek, revegetated the area and installed seats and signage. The result is a beautiful community asset that can be enjoyed by residents and visitors alike.

one of the town’s most inspiring and loved personalities, Trish delahey, has been running the town store with her husband malcolm for 25 years. Trish hands out welcome packs to new residents in town and keeps everybody informed about what is going on in the community via a noticeboard at the front of the store. “it’s a very caring community; everybody looks out for everybody. i had cancer 10 years ago and i couldn’t have had it in a better place. Everybody supported me. i felt so lucky,” the grandmother of four says. The delaheys’ store is the hub of the town and has employed many young people over the years. “That’s been one of the nicest things,” Trish says. “They become a part of our family and the highlight for me has been watching them grow into beautiful people.” Trish still visits her

customers who are now in the care of the Violet Town bush nursing centre and often ducks out to make deliveries to elderly residents who find it difficult to get to the store. Locals and passing motorists are thrilled that the Violet Town café – painted violet of course – recently reopened its doors. The café burnt down in 2009 and owners david and Anne smyth have been working hard to re-establish their business, a popular stopping point for travellers passing through town. Anne says, “We had so much support from the townspeople and we had people who travel through writing us letters, telling us how much they missed coming to our café.” The smyths have lived in Violet Town for 30 years. “it has been a great place to raise our four children. We always felt Violet Town was home,” Anne says. Also feeling very at home in Violet Town is Leading senior constable Pat storer – or ‘Policeman Pat’ as he is affectionately known by the school and kindergarten children. Pat, his wife Kate and daughter isabella, moved to Violet Town two-anda-half years ago. Pat says you would

be hard-pressed to find so many strong community groups anywhere else. “my role here is very different to what i’ve ever done before,” Pat, who previously worked at shepparton and Kyabram police stations, says. “i’m here to be a figurehead for the community. it’s the best job i’ve ever had. This will be my last stop.” it has been 175 years since famous explorer major Thomas mitchell camped on the banks of what he then called Violet Ponds – named after the violets that were growing along what is now known as Honeysuckle creek – and there’s no doubt he would be extremely proud of how the community has flourished. We arrived in cambodia’s capital, phnom penh, and took a short tour of the city on the way to our hotel. the rest of our day was free to look around and we were amazed at how the countryside looked much the same as vietnam, and everything was so much cheaper! of all the countries we have visited, cambodia is the only one where, once you negotiate a price for something, you happily pay more money (sometimes double). that night we walked around town and finished up at the fcc – the foreign correspondents’ club – established during wartime by international media and featured on the television program race around the World. the next day was a sad day; we travelled by tuk-tuk to the genocide museum (former m21 prison) – a former school transformed into a horrendous prison and torture camp during the reign of dictator pol pot. once we walked through the entry gates a terrible feeling came over us – we couldn’t believe that one human being could be so cruel to another human being. after this sobering experience we were invited to visit the Killing fields outside town, but most declined and headed to the russian market instead. We flew to siem reap with our new guide the next day and as we landed we found out that it was the first time he had ever been on www.homescape.com.au

a plane! We took off down town for some more retail therapy and discovered that in siem reap a pot of beer costs 50 cents, pirated dvds are $1.50 and an optometrist will sell you an eye test, frames and a pair of bifocals for $35! the next morning we headed off on a day trip to Kampong phluk – a cluster of three villages with houses built on stilts. in summer the houses sit some 6m above the ground, but in winter the water laps at the floorboards. locals survive on fishing, mainly shrimp. the highlight of our trip was a visit to the angkor ruins which, interestingly, maureen found more fascinating than our visit to ancient Egypt. during the 8th and 13th centuries a succession of hindu and buddhist kings created these magnificent stone temples. over the centuries much of the ruins were overgrown, but thanks to satellite mapping, most has since been reclaimed. angkor Wat ruins, which cover about 200ha, and angkor thom, just on 900ha, were our highlights, bearing in mind that to do justice to all the ruins it would take three to four days. it is extremely hard to describe these amazing sites; we can only say, “a picture tells a thousand words”. We hope you can visit cambodia someday soon. [hs]

hip, hip rosé! rosé has lost its wishy-washy image and autumn is the best time to savour a glass, only slightly chilled though, or you lose the complexity. no longer limited to the super-sweet Kaiser stuhl or mateus, we have some fairly serious rosé from the locals. garners rosé ’10: using strathbogie shiraz, this is a delicate wine with a corner-store lollie nose. auldstone cabernet rosé ’10: Just a touch of glenrowan muscat gives this wine a fuller feel in the mouth. then of course there’s always the chrismont rosate mezzanotte ’09. for those of you with a sweet tooth, autumn is also the perfect time to indulge in a rich, chocolate treat. so don’t let the kids have all the fun at Easter – try our wicked flourless chocolate and hazelnut cake recipe (Easter bunny won’t be able to help you with this one but a couple of chooks might come in handy!). cheers, mat and tim

flourless chocolate & hazelnut cake this caKE Will gEnErously sErvE 12 to 15 pEoplE. you can maKE WhatEvEr sizE caKE you liKE, Just halvE or third thE miX and cooKing timE. iNGreDieNTs: 450g dark (70% cocoa solids) chocolate 450g unsalted butter, softened 18 eggs 270g roasted and coarsely crushed hazelnuts 660g caster sugar 3tbs good-quality Dutch cocoa

MeThoD: pre-heat the oven to 180°c and line the base and sides of a 30cm round tin (you can make any shape or size, just vary the cooking time). melt chocolate and butter in microwave, stirring often, and allow to cool. beat the eggs and sugar on high speed until the mix has tripled.

in a separate bowl, mix the hazelnuts (we used neumos produce hazelnuts, grown locally … go team!) and cocoa together and gently fold through the chocolate and butter mix. gently fold this through the egg mix – gently; if you lose the air from the eggs your cake will be flat. bake in your pre-heated oven for roughly 75 minutes or until a skewer inserted comes out clean (this will vary greatly according to your oven). serve with pouring cream or warmed with a good-quality vanilla bean ice-cream.
