Between the hustle and bustle of daily life and all variety of stressors, sometimes mental and physical health end up on the backburner. Autumn Francesca, a champion of alternative healing and mindfulness practices, is trying to help South County reprioritize well-being with the first-ever Intention Fest at Saugatucket Veterans’ Memorial Park in Wakefield. Well into her own healing journey, Francesca has spent years looking for ways to enable others to achieve better health, too, and came up with the idea of facilitating mindfulness in a fun, community-focused setting. “We’re so distracted with so many other things in place of our healing,” she says. “The festival’s purpose is really to inform and inspire people to be well, healthy, and live a life of peace. It’s paralleling my own journey over the past 10 years.”

12 SORhodeIsland.com • September 2022 With Rhode Island edging into what is ex pected to be the first heat wave of summer – and with just weeks until the September 13 primary election – the Democratic candidates for governor are turning on the jets.

Secretary of State Nellie Gorbea, one of five major Democratic candidates, staged a news conference outside the Statehouse [in July] to call on Gov. Dan McKee to do more to extend abortion coverage for women on Medicaid or who have the state employee insurance plan. Without specifying particular actions, Gorbea called for McKee to be more force ful on the issue. “I’m calling on all of my colleagues that are running for governor to stand firmly and to put pressure on the governor to exercise leadership and make sure that women in Rhode Island are able to exercise their right to choose whether or not to have an abortion and not be limited by financial reasons,” Gorbea said in an interview.

The current fight for the state’s top job has so far featured few of the issue-oriented campaign events typical of years past. It’s not really clear if that’s due to COVID fatigue or other reasons. But now, with the mercury zipping past 90 and Rhode Islanders flocking to beaches, the candi dates are cranking up their e orts.

A recent Boston Globe poll suggested a tight race in the Democratic primary for governor between McKee, Gorbea, and former CVS Health executive Helena Buonanno Foulkes. Buonanno Foulkes called on McKee in May to do more to expand abortion coverage. She also went on the air immediately after the US Supreme Court overturned Roe vs. Wade to propose a regional coalition of states in strong support of abortion rights, McKee’s campaign called Gorbea’s criticism an attempt to grab headlines. An executive order signed by McKee earlier this month would shield women who seek reproductive health services here from legal liability in other states. But the coverage gap cited by Buonanno, Foulkes, and Gorbea has persisted despite

the introduction of bills meant to close it for the last three years – and that’s a sore point for many supporters of abortion rights. Legislative leaders have signaled the issue may get more attention when the next General Assembly session starts in January. (Rhode Island adopted a law in 2019 to ensure abortion rights.) McKee became governor last year when his predecessor, Gina Raimondo, landed the job as US Commerce secretary. In another sign of a new stage in the race, McKee’s campaign unveiled its first TV commercial. McKee’s 90-something mother, Willa, wearing oversized sunglass es, gets a co-starring role while helping to burnish his record on issues like the accel erated phase out of the car tax (a move led by the legislature), new investment in a ordable housing and the passage of laws imposing new restrictions on guns.

Two other Democrats, Matt Brown and Luis Daniel Munoz, are among the oth er candidates running for governor, and they’ve registered in the single digits in polls. There is also an Independent candi date, Zachary Hurwitz, who qualified for the ballot, according to the secretary of state’s o ce. Earlier this year, just how beloved Wick ford is was proved on a national scale when it earned the top spot of USA Today ’s an nual survey, “10 Best Historic Small Towns in America,” ahead of the likes of Gettys burg, Pennsylvania; Abilene, Kansas; Taos, New Mexico; and more. It’s a special honor for the historic vil lage within the town of North Kingstown. The ranking was no surprise, however, to boosters and residents of the seaside community, who came together to sup port the designation in a joint effort of local businesses and civic groups helping to make Wickford number one. “North Kingstown Chamber of Com merce, the Wickford Merchant Associ ation, the Town Council, and HistWick (the Wickford historical association), all played a role,” says Kristin Urbach, ex ecutive director of the North Kingstown Chamber of Commerce. “When we heard Wickford was in the top 10, the Town Council president encouraged supporters to vote. It was a collaboration of all these associations in town and various groups that promoted voting.” A social media campaign launched by the chamber included photos highlighting the benefits of living, visiting, and work ing in the village. “The history is remark able, as is the beauty of Wickford,” says Urbach. “The residents and businesses all take great pride in maintaining and preserving their properties. “HistWick is a neighborhood organiza tion that started in the ‘90s and their goal was to preserve and protect the historic houses,” explains Mary Ann Hackett, pres ident of the association. “We have nine or 10 of these markers. For example, Ten Rod Road was a cattle drive during colo nial days, where people brought their cat tle down to Wickford Harbor to ship out to different parts of the country. At one point in the 1800s, almost all the businesses on Main Street were owned by women. “Many of the husbands of these women were sea captains so they were gone; the women were trying to maintain the homes and businesses,” explains Hack ett. Today, many Wickford establishments remain female-led, and business continues to go strong on Main Street, even during the pandemic. “During COVID, because it wasn’t inside a shopping mall, many busi nesses said they had their best year ever,” says Hackett. “Wickford is hopping!”

Today’s Wickford sees unique events that draw huge crowds throughout the year. “We’ve seen a 50 percent increase in weddings since 2019,” says Nicole Mattiello, vice president of business development at Pranzi Catering & Events. Based in Providence, Pranzi began exclusively as a catering busi ness back in 1997, but in 2018, dipped its toes into the rental business with Pranzi Tents & Events. Today, the company practically has it all: a large and growing inventory of rentals and decor, state-of-the-art tents, a cater ing team, in-house pastry chefs, and even their own in-house floral ser vices and design team. “With rentals, we are involved in over 150 weddings per month and we cater 50 weddings per month,” says Mattiello. “We have a wedding all 12 months of the year now – there really is no more ‘wedding season.’” While bookings are a sweet relief after a pandemic-driven drought, the wedding industry faces new challenges in an effort to keep up with the growing demand – the same struggles many are now all too famil iar with: supply chain disruption, in flation, and staffing shortages. “We are doing the best we can.” In Pranzi’s case, Mattiello says sep arating the rental and catering ends of the business has helped, with in ventory kept and stored in two ware houses located in Quonset and West Warwick, and culinary goods coming from Providence. At the moment, their team consists of 75 employees in the rental company, and 200 in the catering, but Mattiello says, “We are currently employing the most staff we ever have in company his tory, and we are still hiring in every department for multiple positions.” When it comes to weddings, Mati ello has a dual perspective, since she is also currently planning her own. “My best advice is to find a venue first and reserve early,” she instructs. Catering and rental companies aren’t the only ones feeling the heat this wedding season. Brid al shops are encountering lon ger-than-anticipated shipping of dresses, limousine companies are coping with the rising cost of gas, and available dates are dwindling. According to sources like The New York Times , 2022 is shaping up to be a bridal boom year – even for Little Rhody.

“There’s a lot of amazing plac es to get married in our tiny lit tle state, and as a floral designer, that is such a wonderful oppor tunity,” says Polly Hutchison, owner of Robin Hollow Farm in Saunderstown. She believes flowers make a wedding – and not just because it’s their busi ness. “The living colors and tex tures of flowers bring any space to life. Combine that with good decisions around signage, decor, and the like, and your event will beRobingorgeous.”Hollow’s niche in the wedding industry is unique be cause of the fact it is a cut-flow er farm, meaning its colorful blooms are planted, grown, picked, and fashioned into strik ing displays – all in the same place and, often, by the same hands. “Because of the broad nature of our business, rang ing from home delivery through farmers markets and full-scale wedding decor, we are a bit of a unicorn in that we have folks who cross-train in farm tasks and design so that we can flex depending on the jobs at hand.

“We are extremely fortunate here at Rob in Hollow,” Hutchison continues. “That said, the floral industry as a whole has been hit very hard, with vase and supply shortag es as well as price increases that are much higher than the national average.” Because Robin Hollow grows many of their own flowers, they are able to control their qual ity and availability. Hutchison also credits her dedicated team, whom she is grateful for in such a tight labor market.

The buzz on local honey – where to find it, what to do with it, and why bees are so important to almost everything we eat

I t’s a hot and sunny summer Saturday morning and the Coastal Growers Market held at Casey Farm in Saunderstown is a treat for the senses. The aromas of manure and farm animals permeate the air. A red-faced eight-year-old with a fistful of wildflowers props himself on an old stone wall and lifts his head to catch a tiny ocean breeze wafting from the east. Yardstick-tall kids squeal with delight at the possibility of coming nose-to-snout with piglets. Canvas pop-up tents form a perimeter ripe with shopping opportunities: a red-haired teenager examines the ingredients on a bottle of lotion from Herbalicious Skincare; a coastal grandmother chooses flowers from Robin Hollow Farm; a man in a Yankees shirt tells another in a Red Sox hat that Pat’s Pastured eggs have “the most amazing yellow-orange yolks you’ve eva, eva seen!” A stone’s throw away, the Casey Farm tent o ers its own amazing yellow-orange-hued product: heavy jars of thick, golden honey, straight from its own apiary.

In 1989, the National Honey Board initiated the designation to coincide with honey collection season, which typically finishes in September as bees get ready to secure their hives for winter.

This 300 acres of land has been farmed since the mid 1700s, and you can bet that honey bees have played a role in shoring up Casey Farm all along, making it a prolific source of fruits, vegetables, herbs, flowers, eggs, maple syrup, and more. But it’s the honey that might be its most precious crop because the process involved in making it sustains everything that lives and grows here. Then, of course, there’s the sublime taste of it. As a sweetener for tea or cocktails, a condiment for ricot ta toast or chicken and waffles, and an ingredient in your lip balm or facial soap, honey has never been more popular, thanks in part to the sustainable food movement and con sumers who love it. Chefs and baristas love it, too, and local establishments from Main Street Coffee in East Greenwich to The Salted Slate in Providence maintain their own hives and use the honey in their recipes. Think you might like to start an api ary – a collection of beehives – of your own? Even people wary of insects might find the complex infrastructure of beehives and the docile nature of honey bees a pleasure. Plus, jars of your own honey will make you the hit of holiday gift-giving season! Mello suggests ensuring the area is free from any lawn care treatments that involve the use of pesticides. Murphy estimates the cost to a beginner would be about $500. This would include the bees, a beginner hive, a protective suit and gloves, a smoker, and a few small tools. If you wanted to get into honey collection, you’d have to spend a bit more, Murphy says – an uncapping tank, extractor, and bottling tank would run about $2,500. And bee practical about it: the best time to start a hive is in spring.

To simplify things: “Honey is essential ly bee vomit,” says Jim Murphy, resident beekeeper and director of sustainabil ity at Rhode Island College (RIC). Mur phy cares for four hives containing up to 60,000 honey bees in a garden on the Providence campus. Here, the bees col lect nectar from vegetables such as cu cumbers and tomatoes and herbs such as mint and basil, as well as the clover that grows on acres of grass on the RIC campus. They store the nectar in a sort of auxiliary stomach and then regurgitate it into the hive, using it for their own nutri tion. To collect honey, he explains, some of the honey is extracted from the comb using a spinner and then filtered into jars. There are four queen bees in residence at RIC – queens Latifa, Beatrice, Donovan, and one still needing a name. “The kids get a kick out of their names and make suggestions for the fourth,” says Murphy, talking about the educational program he runs for grade schoolers who visit to learn about bees. But bees aren’t just for fun and games. “Honey bees pollinate 80 percent of all pollinated food,” says Mur phy. “Or, to put it another way, one out of every three bites of food you take has been pollinated by a honey bee.” Honey contains mostly sugar, as well as a mix of amino acids, vitamins, minerals, iron, zinc, and antioxidants. While its potential in recipes seems endless, the uses for honey in other applications is even moreso. Hon ey has been around for more than 8,000 years, and can be used to treat asthma, sore throats, fatigue, dizziness, hepatitis, constipation, eczema, ulcers, diabetes, skin infections and wounds, as well as cardio vascular, neurological, and gastrointestinal diseases. It can be more helpful to those with pollen allergies than a double-dose of over-the-counter allergy meds.

Whitney McGinnes can relate to that. An amateur beekeeper on Block Island since middle school, she has long su ered from seasonal allergies. When her father decided to start keeping bees on their prop erty, she grew aware of the calming e ect honey can have on allergies and began taking it to alleviate her symptoms. She now assists bee keeper Tracy Finn, an islander who manages about 20 hives. Togeth er, they maintain an observation hive, where K-8 educators can bring students to learn more about the many benefits of beekeeping and honey. Just being around the hives, McGinnes began to notice, helped alleviate her allergies. “Beekeeping is like therapy for me,” she explains. It was another young beekeeper who introduced local honey to her employers at Main Street Co ee in East Greenwich. Lexi Cole and her dad also began raising bees on their property in Coventry when she was in middle school. She is pleasantly addicted to the process of bee keeping. There are about 320 di erent varieties of honey, and as Cole explains, they vary in color, odor, and flavor, depending on what the honey bees are pollinating and when. Cole says that like wine, a very sophisticated palate might detect the presence of blueberries or as paragus in spring, strawberries and tomatoes in summer, squash and apples in the fall, in addition to whatever flowers are in bloom. The color is typically darker in the fall for example, according to Cole’s experience with her own honey. The springtime honey that is for sale now at Casey Farm is light yellow “because of all the flower pollen,” says Lindie Markovich.

Add the vodka, bitters, and honey, and mix well. Top with a splash of ginger beer. Garnish with a slice or strawberry and lemon, if desired. While it’s true that some bee pop ulations are on the decline due to pesticides, disease, habitat loss, and climate change, there are, according to Scientific American magazine, more honey bees on Earth now than ever before. But in the business of con ventional beekeeping – ever-growing to meet increasing demand for honey – honey bees are specifically bred to increase productivity. Megan Eddy, a manager and bartender at Main Street Coffee, quickly found uses for Cole’s honey. It’s in recipes such as an addictive honey-walnut-cinnamon cream cheese, as well as cocktails. The Bee’s Knees combines gin, fresh lemon juice, and honey shaken over ice and served up neat. The Strawberry Stinger starts by muddling two strawberries with two lem on wedges, then adding vodka, bitters, honey, and a splash of ginger beer shaken and served over ice. The honey imparts a subtle sweetness, says Eddy, and creates a balance among the ingredients. “And people just seem to love that the drinks include our own honey,” she says. “It adds that unique local ingredient to what would otherwise be something generic.”

As Je Mello, the beekeeper at Aquid neck Honey in Tiverton says, “No bees, no food.” It’s what compels Mello, nicknamed “Je the Bee Man,” to take to bee rescue. Mello started small-scale beekeeping 30 years ago and now maintains organic, chemical-free apiaries in four states that produce some of the most superior or ganic honey you can buy. Still, he’ll find out about a hive located in an inconve nient space – say, way up on a telephone pole on a main road in Middletown – and he’ll go to the rescue before the hive can be removed by a guy with a spray tank of pesticides. “We’ll shut down tra c and get up there in a bucket truck,” he says, explaining how he will remove the hive and relocate as many bees as he can. “I really love it,” relays Mello of both rescu ing and maintaining hives. Even though Mello is among the one percent of the population that has an allergic reaction to bee stings, he’ll never stop beekeeping. “It’s just the most amazing thing.”

When Rhode Island-based blogger and DIY content creator Carli Alves and her husband Justin first laid eyes on their 1945 South County Colonial, it wasn’t exactly love at first sight. Between the overgrown hedges, the hostas growing from the gutters, and the mildew that shrouded the faded yellow facade, they knew they had their work cut out for them. Having just come o the heels of a 140-year-old Victorian renovation, Carli and Justin had some tricks up their sleeve to turn this 1,700-square-foot forgotten house into a home for their family of six.

For Alves and her family, the kitchen is the place to gather. “While I love a formal dining room, it just didn’t match our more casual lifestyle,” she says. So she instead turned the home’s dining room into a sit ting room to enjoy cozy fires in the colder months, and in the kitchen, Alves built an almost 10-foot-long window seat to create a comfy dining nook for her family to set tle on at the end of a long day. “It was the perfect way to maximize the space and create a comfy-cozy feeling in the kitchen.”

Alves turned one side of the attic into an o ce/studio space for her four children to create art and music, and the other side became a hangout room for her teenage daughter. “Finishing these spaces added roughly 300 square feet to our home, giving us all a little more room to spreadAlthoughout.” the footprint of the main level bathroom is small, Alves gave it an unexpect ed treatment by installing shiplap vertically and painting it in a deep charcoal shade that added depth and drama to the small space.

“There are still a bunch of projects that we want to tackle in this home, including a second-floor bathroom renovation and basement we hope to finish, but for now we are enjoying the fruits of our labors.”

“The wall color was inspired by the wallpaper, and I figured if there was a space in our home to be a little dramatic, it was here.” Alves also chose a console-style sink that she modified herself to better fit the scale of the bathroom.

My late-summer schedule was packed with work and life commitments and I felt frayed at the edges. This year’s self-care resolution was as faded a memory as New Year’sAfterEve.checking out their extensive mas sage menu online, I decided to skip to the chase and ring the spa for a recommenda tion. The receptionist was a delight, guid ing me towards a treatment that made sense for my various concerns: stiff, old, perpetually overwhelmed. “Have you ever tried cupping?” she asked. With an audible intake of breath, I responded, “No, but I want to!” Island Rose Spa offers a Gua Sha Myofas cial Release massage that includes cupping – a centuries-old method using suction to work on fascia (animal horns were original ly used; we’ve since moved on to glass and silicone). Gua sha is a treatment that uses a flat stone in an almost scraping motion during the massage (this sounds worse than it is; it’s actually very gentle) to stim ulate blood flow, which promotes healing and loosens fascia. For the uninitiated, fascia is the connec tive tissue that holds muscles (as well as organs, blood vessels, bones, and nerves) in place. Made up of collagen, healthy fascia is malleable; it bends and stretches. However, since fascia also has nerve end ings, it can tighten up for a host of reasons, including muscle overuse, a sedentary life style, and stress. Tight fascia – not the mus cle under it – is often the reason for our aches and pains. So adding cupping to the massage not only also continues to work the fascia but also stimulates lymphatic flow – exactly what my overworked and overwhelmed body needed. I was all in. We talk for a bit about my past experience with massage (always painful, hence minimal) and why I’m opting for this particular treatment. While I’d get more relaxation with deeper massages like Swedish, DeGuzman felt the cupping was better suited to address my concerns “because you’re actually working the muscles, increasing blood flow.” He explains that the cupping combined with the gua sha is a good choice for some one who is active. “We’re talking about ath letes, bodybuilders because their muscles are so taut. For lymphatic drainage, it’s ideal. I don’t use the cups as deep, not for the first time, but you will feel the benefits of it.” Because he planned to go lighter, he explains, it won’t leave unsightly marks on my skin (shout-out to US swimmer Michael Phelps in the 2016 Olympics).

DeGuzman exits and leaves me to disrobe and I slide into the comfy massage bed and force the day’s tasks out of my brain, focus ing on the meditative music playing in the background. He returns with an assortment of different sized silicone cups that “look like the tops of Yankee Candles.”

It was time to move onto the bigger and more problematic areas of my body. DeGuzman used the friction of the gua sha stone to warm up my mus cles before applying the cups, which he left in place only for about 30 seconds each, moving them along my muscles, finding the tight spots and applying the suction to release tension. De pending on what he felt, he’d cup the same spot repeatedly, add more gua sha friction, or manipulate the mus cle with his hands. Each decision was made based on how my body reacted, making it a truly bespoke service.

Surprisingly, none of this hurt. I don’t get massages often because I find them exceedingly painful. Un der DeGuzman’s expert hands, dis comfort was minimal, allowing me to actually decompress.

Shells are a recent focus for Jedrey. At first, her work hewed more traditional, doing portraits and then landscapes inspired by her Flexing Her Mussels

Beauty grows out of adversity, and that’s ex actly what happened with Wickford-based oil painter Alexandra Jedrey. The pandemic proved a turning point for her art career. Faced with time to fill because of the shut downs, she decided to stir up some prover bial lemonade and offer her paintings for sale for the first time. “It came from a com pletely horrible time, but something really great grew from it,” says Jedrey.

The first year, she launched her website and focused on online sales. For her sec ond, she applied to be part of the Wick ford Art Festival. When they accepted her, it was the realization of a childhood dream.

Jedrey arrived at the University of New Hampshire an undeclared major, but when she took her first art class there, “I thought, yup, this is where I’m supposed to be.” She went on to get her master’s in education, becoming an art teacher when she returned to Rhode Island, but left her teaching ca reer in 2021 to focus on her art full time.

Jedrey’s beautiful oil paintings of shells local to the shores of Rhode Island – filled with an ocean of seaworthy colors and textures, since her tool of choice is a pal let knife – dazzled art buyers at last year’s Wickford Art Festival. “I didn’t quite re alize how high stakes it was,” she says of the festival’s impact on her art career. Her appearance led to booking more summer art festivals, as well as ongoing sales and direct commissions for long after, enough that she was able to quit her day job.

“I grew up in the area. I’ve been going ev ery year since I was little and it was always this far-fetched, glamorous thing. It’s kind of surreal to be participating in it now.”

The shells also are a boon on the fes tival circuit. “I personally love painting them,” she says, but notes that the small er size of her canvases gives the art a more accessible price point, especially to first-time“There’sbuyers.aculture of collecting art that’s very highbrow and elite, and it doesn’t have to be,” she says. “If you like some thing, if you think it would look good in your home, if you enjoy looking at it, if you like the colors, if it makes you happy, just go for it. But when she returned to Rhode Island and had to fill a wall above her bed, she decided to do it with a trip tych of mussels. “I love the versatility and the colors,” she explains. Her mom loved it, too, and requested a painting, which led to friends, then friends of friends, asking for their own shell-inspired works.

Before dishing artisanal pies, Fritz cut his teeth working at high-volume pizza restaurants. Now, he and an equally passionate sta let customers choose from a wide variety of toppings – from bu alo sauce or balsamic glaze to fresh mozzarella, prosciutto, jalapeños, and more – and they cook up each custom creation on the spot. One of my favorite things about living in Rhode Island is the ability to feel like you’re away on vacation even for a single meal. When I was recently invited to enjoy lunch at Ocean House’s latest dining concept Da lia, there was no hesitation. I’ve been smit ten with the butter-yellow grand Victorian hotel sitting high on a bluff since first sight, and the eatery being named after the na tional flower of Mexico, an extraordinary bloom, made the prospect even dreamier. As the full name implies, Dalia by Dan tón Valle boasts a menu of contemporary Mexican dishes and drinks curated by Val le, Ocean House Chef de Cuisine, Seasonal Restaurants. Originally from Mexico City, Valle has made a career of specializing in culinary operations at high-end destina tions. But don’t let all of this luxe talk in timidate you because Dalia is an affordable place to have a delicious meal with price less views of the seaside – and of course, Taylor Swift’s RI HQ. For the uninitiated, pull into Ocean House’s circular driveway and be prepared to be greeted by a valet (for non-hotel guests, there is a valet parking fee of $5 for the first two hours). From there, the restau rant is downstairs and you will be seated outdoors on the Seaside Terrace. Dress is resort casual, shoes and shirts, and you might want to bring a light jacket or sweat er for any cool breezes. The day that my guest and I visited Da lia was one of those cloudy summer after noons – perfect for dining al fresco. The hostess was affable as was each attentive server. Our culinary adventure began sim ply with cups of coffee, and we appreciat ed that it was local brand Dave’s, served piping hot. Noticing we might be chilly, our main server wheeled a heater our way and offered us blankets. She inquired about any

With a bit of caffeine in our systems, it was time to take a break from gazing at our surroundings – both the hotel exterior, blue and white awnings, and of course, the beach – and focus on the menu. Starting with aperitivos, we ordered a sampling which included guacamole topped with roasted pineapple and pump kin seeds, an unexpected but very nice ad dition that added sweetness and texture without detracting from the classic dip. Along with a woven basket of crispy tor tilla chips came a wooden tray holding six ramekins making up what can best be de scribed as a salsa flight. We were informed that each contained combos of fresh ingre dients ranging from spinach and tomatoes to chipotle, habanero, peppers, salt, and sesame seeds. Our server suggested we try them all – a tasty tour. Additionally, I or dered Croquetas de Atún, balls of creamy tuna each housed in a crispy shell, present ed playfully over wide circles of chipotle aioli on a turquoise ceramic platter. “I cook everything at about 55º Celsius, so it’s hot, but it’s not burning out any of the booze,” he says. “The process takes as much flavor as possible out of the ingredi ents, so the essence of the fruit or the herb will be present in the cocktail without add ing sugar. It also gives us the opportunity to control balance because I don’t think any drink should be too sweet.”

Draine is currently working on creating a ready-to-drink canned version of the Day Drinker and is also developing bar menus for other Dig In projects slated to open later this year, including a bar in Provi dence called Novella. He has been with the restaurant group, which also operates Thirsty Beaver and several other projects, for about 11 years.

Draine got his start in the beverage in dustry 14 years ago as a busser in Provi dence. There he became interested in craft cocktails and saw a connection between bartending and cooking, which he has loved since he was a kid.

Many of the dishes at Huck’s have a South ern-inspired twist, so it’s no surprise that Draine’s Johnny Carson drink, with housemade grilled peach bourbon and ginger sweet tea, is a big seller. Also on the menu this season is Day Drinker, which Draine first created for now-closed Providence restaurant Milk Money, which was a part of Dig In Dining and Enter tainment – the restaurant group that includes Huck’s. The refreshing wine cocktail includes Sauvignon Blanc, cucumber vodka, and cara melized pineapple, among other ingredients.

“A traditional old-fashioned clambake process begins early in the day when we send our crews out to pick fresh rockweed, a dark green seaweed that contains bub bles filled with saltwater,” says event and o ce manager Melissa McGrath of McGrath Clambakes & Catering. She describes the care that goes into building the bonfire with alternating layers of wood and rock, tend ing the fire to achieve a bed of very hot coals and rocks, and covering the base with mounds of rockweed – all unfolding at your venue while festivities take place.

“The bubbles in the rockweed burst when heated, emitting seawater that steams and seasons the food,” McGrath continues.

The whole process is part of a New En gland tradition dating back centuries. “A hot rock clambake is a unique experience,” says Lin Patty, event coordinator of Yawgoo Bakes and Barbecues. “Many cultures have some kind of specialized cooking process involving hot rocks. The New England ver sion comes from Native American tribes as far back as 2,000 years.”

“At this point, the bakemaster works very quickly to capture as much heat as possible under the canvas.” Racks of food – artfully layered to ensure ideal cooking times and balanced flavoring – are expertly nestled inside and covered with layers of canvas.

The slow cooking process is similar to slow cooking a pot roast where the meat falls apart and is very tender and has a bit of a smoky flavor.”

He explains that during the height of COVID, the chamber limited the num ber of tickets sold. However, it turned out that both the vendors and the attendees preferred the more intimate atmosphere. “They had more time to interact and talk to each other,” Viele says.

When LineSider Brewing’s Mac & Cheese Festival launched last December, it had only 125 tickets available and sold out with in 20 minutes. With lessons learned, assis tant brewer and event organizer Kyle Toste, along with the brewery owners Dan Kop pen and Jeremy Ru , decided to hold the 2022 event in September and outdoors to accommodate more people. Even with the more spacious digs, the fest sold out its 800 tickets in under two hours, making it the hottest ticket in the state. The fes tival invites East Greenwich restaurants to give their creative spin on the namesake dish, andat tendees vote for their fave. Last year’s honors went to Union & Main for their mac and cheese dusted with crushed Cheetos; The Trap’s short rib mac and cheese was a close second. Pro-tip for those hoping to snag a spot next year: tick ets go on sale on Mac & Cheese Day (July 14).
