A legendary lineage: the Pinders and Glintons By Mark Johnson When Gil Drake and A.J. McClane showed up on the beaches of Deep Water Cay in the mid-1950s, fly-fishing for bonefish was essentially an unknown art form. Bahamian fishermen used nets to harvest bonefish, and the idea of stalking and catching them one-by-one using a fly rod was inefficient at best and downright odd at worst.
Pinder saw opportunity. As he helped Gil and A.J. clear the thick mangrove waterways and forests of the overgrown cay, David took note as the anglers enticed their fellow sportsmen from the mainland with the promise of an unmatched fishing challenge — pursuing the powerful and wily bonefish with a bamboo fly rod.

“David was a smart guy and he quietly taught himself how to fly-fish,” says Dana Dribben, Deep Water
Cay Director of Sales. “Before long, he had made himself into an indispensible guide and a pioneer in the business.” By the late 1960s, David had helped put Deep Water Cay on the map as arguably the world’s most prolific bonefishing location. He had become synonymous with the sport and was requested by practically every angler who visited the cay. His sons — David Jr., William, and Joseph — quickly
adopted their father’s line of work and became renowned guides themselves. In the mid-1990s, the second generation of guiding Pinders branched into neighboring Bahamian islands to launch new bonefishing endeavors. But David Sr. remained at Deep Water Cay. And his new protégé was his own grandson, Okemo “Meko” Glinton. “I graduated high school in 1996, just about the time my uncles started their own businesses and left Deep Water Cay,” says Meko. “My father, Stanley, was also a very successful guide there for a number of years. The manager at the time needed a new guide and he was familiar with my background, so he invited me over.” Meko was placed with experienced guide Mervin Thomas for a four-day training session. “Over those four days, Mervin taught me quite a lot,” Meko recalls. “On the fifth morning, I went fishing with the manager and we caught four consecutive fish — boom, boom, boom, boom! He said, ‘Come to the office tomorrow and I’ll have your uniform ready.’ That’s how I started.” Under the tutelage of David Sr. and Mervin, Meko began building his own legacy as a guide, and has since become the most-requested of Deep Water Cay’s guiding corps. From legendary angler and TV personality Flip Pallot to Oscar Award-nominated actor Liam Neeson, Meko has
guided some of the most devoted and talented fishermen and women in the world, and helped them reel in the elusive bonefish.

“One of my favorite aspects of my job is the people I meet,” says Meko. “They are always so interesting, whether famous or not. Many have become lifelong friends.”
“The Pinders and the Glintons have always been and continue to be an integral part of Deep Water Cay,” says Dana. “From David Sr. to Ludell to Meko … I can’t imagine this place without those influences.”
Meko also points to the otherworldly beauty of his daily “commute” as another cherished perk of his guiding career. “Everyday when I go to my ‘office,’ I get to experience the beauty of nature,” he explains. “The color of the water and the sky is always amazing. Honestly, it never really seems like a job at all, and to be doing something that you really, wholeheartedly love to do is really a blessing.” Work and pleasure have blurred lines for the DWC guide, because he is reputed to be one of the area’s best bonefishermen himself, having been named the Bahamian champ since 2003. The iconic fly-fishing outfitter, Vermont-based Orvis, even began retailing one of Meko’s own flies — the “Meko Special” — in 2002 after the organization’s president, Perk Perkins, spent a wildly productive day in the flats with the young guide. The company has recently released its successor, the “M2.” But despite all of his many accolades, Meko says it’s the family nature of Deep Water Cay that means the most to him. His wife, Samantha, works as a
Meko adds that he’s never had another job, and he “wouldn’t have it any other way.” “It’s almost like the art of guiding in these waters is in my blood,” says Meko. “To do something that my father and uncles and grandfather did makes it very special to me. And now, I see that love growing in my 5-year-old son, Michael. He’s already passionate about fishing and has a real natural talent with a fly rod. I can see it in his eyes; the future is good and bright. And for these amazing gifts, we have my grandfather, David Sr., to thank. The Blue Hole & Infinity Pool With the completion of an exciting series of renovations, Deep Water Cay’s guest accommodations are now a perfect complement to its unmatched natural beauty, assuring a resounding “Wow!” from visitors both indoors and out. Early last year, Charleston-based interior designer Allison Elebash was tapped to coordinate the renovation of several of the resort’s existing structures, including its Lodge, the Drake and the Founders Houses, the Blue Hole Bar, and the seven original guest cottages. “All of these accommodations were chock full of history and charm; we just needed to give them a breath of fresh air,” says Allison, who also designed interiors at Christophe Harbor in St. Kitts in 2008. “I’m very pleased with the results.”
The Blue Hole Bar & Grill Allison says that the first order of business was to address the Lodge, the Drake House, and the Blue Hole Bar. Each was made over with a Caribbean flair, including new paint, décor, accessories, and porcelain tile flooring. Allison created a feeling of more space in the Lodge by replacing the existing doors with taller French doors and swapping the old windows with new, larger ones, as well as totally renovating the bathrooms. The Blue Hole Bar also received a new serving area and it features a custom-designed bar top. Allison’s refreshed treatment of the guest cottages was the final step in coordinating the overall design. “We didn’t change anything structurally in the West End Bedroom cottages,” she explains. “Instead, we
gave all the interiors a fresh coat of paint, installed new plantation shutters, and added sea-grass rugs, bathroom accessories, and new bedding and lighting throughout.” The designer says that by taking these relatively small steps, a “giant leap” was achieved in aesthetics. “It’s really amazing how new paint and updated furnishings can entirely change the look and feel of a place,” says Allison. “We retained that old-style cottage charm and heritage of Deep Water Cay, but also brought it into the 21st century. And that’s a good thing!”

On February 16th, Deep Water Cay hosted a once-in-a-lifetime event at the Urban Angler fly-fishing shop in New York City, with Flip Pallot as the main attraction. Fly-fishing enthusiasts attended a very special evening with Flip and heard his incredible tales of bonefishing in the Bahamas. “It was a great mix of people,” says Dana Dribben, Deep Water Cay’s Director of Sales. “There were many folks who had been to Deep Water Cay before and a good bunch who were being introduced to our property for the first time,” he adds. Flip presented an engaging slideshow of his experiences at Deep Water Cay over the years and told many fascinating and humorous stories. He spoke of fishing at Deep Water Cay at a young age alongside David Pinder Sr., Deep Water’s first guide, and the thrill of learning from a master. He also described the intimate bond that often develops between an angler and a guide, sharing numerous anecdotes of his own guiding experiences. Jon Fisher, Urban Angler’s General Manager says, “To get a legend like Flip Pallot to come and speak at our store was just huge. We’re looking forward to many more nights like this in the future.”

Swim with Schools of Fish on Pristine Reefs
Also, Deep Water Cay’s events aren’t limited to just fishing. Recently, Scuba Nation, a syndicated Florida-based show as well as the nationally syndicated Scuba Radio, had an opportunity to spend three days at Deep Water Cay — mostly underwater. The crew explored Deep Water Cay’s reefs and blue holes and even helped to name a few new dive spots. “The diving is right up there with the best of the Caribbean,” said Greg Holt of Scuba Radio. “You can explore undiscovered reefs, swim with schools of fish, and enjoy some of the best diving amenities found anywhere,” added Billy Catoggio, founder Scuba Nation. All in all, it was a memorable few days of diving, filming, and more diving.

The Bonefish Bonnies Return to Deep Water Cay Location: Deep Water Cay Details: This May, Deep Water Cay will host a reunion with a unique group of women who call themselves the ‘Bonefish Bonnies.’ This all-female bonefishing group, based out of the Ocean Reef Country Club in Key Largo, FL, was a mainstay at Deep Water Cay for close to 25 years. Now, after being absent from Deep Water for the last few years, we are thrilled to welcome them back and look forward to showing them all that the new Deep Water Cay has to offer. Deep Water Cay Record Bonefish of the Season Jim Easterling holds a 14.6 pound bonefish caught at Deep Water Cay. Landed the last weekend of March, the bone was the largest that our long-tenured guide, Meko Glinton, has seen caught on a fly in his 18 years of guiding.

Over the following months please keep an eye out for some very significant news about new residential offerings and amenities at Deep Water Cay. Deep Water Cay is working with an incredible hospitality development and design team that includes acclaimed architect, Steve Mauzoun of Studio Sky and Douglas Welles of Welles Construction. Studio Sky’s architectural philosophies are very respectful of the nature of the surroundings. Mazoun said much of their work has been focused on the Caribbean, the Bahamas, and the US Gulf Coast, and in these regions, the climate, culture, and conditions are quite similar.
“The indigenous architecture that grew up in each of these places bears a striking resemblance to the other architecture of what we now call the “Caribbean Rim.” The US Gulf Coast, of course, does not border the Caribbean Sea, but the heat, humidity, and heritage that is a gumbo of French, Spanish, and English predecessors is quite similar… and so is the architecture,” said Mazoun. “We believe the lessons learned from respecting a regional context can be useful in other parts of the world as well. That, after all, should be what we export: not a style, but a respectful design methodology.”

Chocolate Velvet Pound Cake With Dark Chocolate Ganache For the Pound Cake:
• 1½ sticks (6 ounces) unsalted butter, softened (65° to 68° F) • 1¼ cups (10 ounces) sugar • 1 teaspoon water, at room temperature • 2 teaspoons instant espresso powder, such as Medaglia d’Oro • 3 large eggs, at room temperature • 1 cup unbleached all-purpose flour • ½ cup unsifted unsweetened Dutch-process cocoa powder • ¼ teaspoon baking powder • Pinch of salt • ½ cup (4 ounces) buttermilk, at room temperature
For the Ganache:
• 12 ounces semisweet or bittersweet chocolate (up to 60 percent cacao), finely chopped • 1½ cups (12 ounces) heavy whipping cream Makes enough for a 2-layer, 9-inch cake or 16 cupcakes
Directions: Preheat oven to 350 degrees. Position rack in lower third of the oven. On low speed with an electric mixer, mix the sugar, flour, cocoa, baking powder, and salt until thoroughly combined. Add the softened butter and. Set a timer for 2 minutes as you begin beating on medium speed. As soon as the dry ingredients are moistened, increase the speed to high and continue mixing until the 2 minutes are up. Stir the espresso powder into the mixture. Add the buttermilk and water to the batter. Beat at high speed for exactly 2 more minutes. Scrape the batter into the pan. Bake 30 to 35 minutes or just until a thin wooden skewer inserted in the center of the cake comes out clean. Do not over bake. Cool in the pan on a wire rack for ten minutes before unmolding on the rack to cool completely. Serve sprinkled with powdered sugar.
For the ganache: In a saucepan, combine the chopped cocoa with the heavy whipping cream. Use a wooden spoon to stir and form a smooth paste. over medium heat until mixture simmers, and finally begins to boil, stirring constantly and scraping the sides and bottom edges of the saucepan. Boil gently for 1½ minutes, stirring constantly. Cool to room temperature. Spoon glaze over cake, covering all sides.
