recipe for about 144 dark slim rondine Façonnables®
Hazelnut base 280 g Kayambe® 45% milk couverture chocolate 70 g Cocoa butter 375 g Pure hazelnut paste 144 Dark slim rondine Façonnables® Melt the milk couverture chocolate and the cocoa butter at 30°C. Mix with the Pure hazelnut paste. Pour the mixture to 4 mm into the dark slim rondine Façonnables®. Salted butter caramel 120 g Sugar 400 g Cream 85 g Salted butter 120 g Glucose 150 g Sugar
Hazelnut whipped ganache 320 g Cream 120 g Glucose 140 g Cocoa butter 320 g Kayambe® 72% dark couverture chocolate 300 g Pure hazelnut praliné Heat the cream and glucose to 85°C. Pour over the chocolate and cocoa butter. Add the praliné and whisk together. Cool to 30°C and whisk using a flat beater. Pipe on top of the crumble. Decoration Dark couverture chocolate. Half a roasted hazelnut.
Boil the cream, the 120 g of sugar and the butter. Cook the glucose and the rest of the sugar (150 g) without any water to obtain a brownish caramel. Uncook by pouring in the boiling liquid. Cook to 105°C. Cool and pour over the hazelnut base.

Hazelnut crumble 100 g Brown sugar 100 g Butter 100 g Ground hazelnuts 100 g Flour 1 g Fleur de sel Combine all the ingredients to form a paste. Spread to a thickness of 3 mm and cut out 3.5 cm circles.Cook to 160°C. When cool, pour the crumble into the chocolate nozzle and place it on the caramel.
