Ponzu Shoyu (soy) Sauce [ additional recipes can be found at www.qualifirst.com ]
Ponzu is a traditional condiment often used alongside sushi, tataki and shabu shabu. These Yakami Orchard pure juices are squeezed from the fruit without added sugar or water. :: Ingredients :: • 2/3 cup Yakami Orchards Yuzu lemon juice • 1/3 cup Yakami Orchards Sudachi lime juice • 1/4 cup rice vinegar • 1 cup good-quality soy sauce • 1/4 cup mirin (or 1/4 cup sake and 1 tablespoon sugar) • 1 3-inch piece kelp (konbu) • 1/2 cup (about 1/4 ounce) dried bonito flakes :: Method :: 1. In a pot combine all ingredients and bring to a slow boil. 2. remove from heat and Let sit for at least 2 hours or overnight. 3. Strain. 4. just before using, you might add another small amount of Yuzu or Sudachi juice to freshen and enhance the flavour. 4. Covered and refrigerated, ponzu will keep for at least several days.
