First Impressions, Its stylish, very easy to push even with one hand I’m totally in LOVE, its everything I wanted in a pram and more.

The Chassis comes already built so no need to be fixing wheels in place ect, all you have to do is put the carrycot on and attach the bags and away we go. The hood is easy to attach and simply clicks into place, the same with the bumper bar. The foot rest has a small lever at the bottom which Is used to help click the footrest into place. The seat can be parent facing or outward facing and the seat can fully recline, I didn’t figure this out until day two but it was so simple with the push of two grey buttons positioned underneath the seat. I absolutely loved the hood as it gives a beautiful shape and has a hidden sun shade that just pops out, the hood also has a zip at the back so you can peep in to see if they are still asleep or not and even pins back nicely attaching to a popper keeping everything tidy and stylish at all times. The seat height and handle are all adjustable at the push of a button so its easy to adjust the height and push the pram right up to the table in a restaurant so they don’t need to sit in a highchair full of stains from others eating their food. Win Win... The True Black comes with everything you need for you and your little bundle including a changing bag that neatly attaches to the chassis and the basket at the front with a full zip and a capacity of 5kg.

Rascals Verdict: There isn’t much I can fault on the True Black Xplory. It is stylish and contemporary with a real eye catching design. it really is Buggy Envy at its best. It’s really easy to steer with one hand and glides over the pavement with no worries. Nitpicking I would say that the changing bag hangs a little too low and when it’s a really wet day the bag will get splashed. The hood is a good size but I do like hoods that are a little bigger so I can cover the little one, (she utterly hates rain covers). Overall I wouldn’t be without this pram and I would recommend the Xplory to anyone looking to purchase a pram that is stylish and ticks all the boxes.

I once heard that young children are hardwired to dream about frightening, child-eating creatures. Apparently it’s an evolutionary advantage to have had a few practice runs before being chased by a real saber-tooth tiger. These nightmares affect 50% of children and occur most often in the 3-6 year age group. Children’s brains have adapted to modern times though so instead of saber-tooth tigers it is now monsters which haunt our young children at night since these are the threatening figures that our little ones are exposed to in books and television shows.

The ways in which your child might express their night-time fears will depend on how often they’re frightened and on their age and language skills. Perhaps your child has become an expert in delaying tactics as bedtime approaches. Or does your little one start to panic as you tuck them in under the covers? Maybe you have a regular night-time visitor clambering up into your bed? My oldest child who was aged two at the time would wake screaming in the middle of every night. It was only after many months of this that we realized that her fear of sleep was a result of the monsters who visited her in her dreams, threatening to devour her.

Toddler Fears

If, as I was, you are battling your child’s bedtime fears, here are ten helpful tips that I have learnt from my dual roles as a Child Psychiatrist and as an experienced monster-battling mother: 1.  Be aware of what your toddler is exposed to. Children learn so much from   books and television yet don’t have the experience to know what is real and   what themes are fantasy. To make matters worse, children’s movies and   stories are often filled with monsters, child-eating wolves and murderous   (and horribly misrepresented) step-mothers. 2.  Don’t ever let anyone threaten your child with “the bogeyman” coming for   them. It’s false and just plain mean. 3.  Each bedtime engage your toddler in the same, predictable, wind-down   routine to help them manage any anticipatory anxiety they might have. 4.  If it helps them to feel braver, allow your child to have a dim night-light or   a torch in their bedroom. 5.  It’s important to acknowledge that even though monsters are not real, your   toddler’s fear is very real. And real fear needs to be met with real comfort,   even in the middle of the night. 6.  Some parents seem to have success with “magical monster repellent spray”   but this option never sat well with me. I preferred to be honest with my   daughter, reassuring her that monsters did not exist and that her bedroom   was a safe place. Similarly, repeated checking in her cupboards or under   her bed or putting signs up prohibiting monster visitors would simply have   confirmed for her that she was in real danger. 7.  Instead, teach your child about dreams by letting them know that dreams   are just our ideas while we’re asleep. Ideas cannot hurt us nor can they make   something magically happen. To prove this, try playing a game with your child   in which you both take turns thinking about something with your eyes closed,   then open your eyes to check whether just thinking about it made it real.   It can go like this: (You, with eyes closed) “An ice-cream”, (open your eyes),   “Shame – no ice-cream. Just thinking about it didn’t make it real.” After   you’ve taken turns with this, you can try some less fun ones such as   “Getting my finger caught in the door” or if your child doesn’t seem too   anxious, “A monster on the couch”. 8.  By day, storytelling is a wonderful therapeutic tool. For children who are   afraid of the dark or scared of monsters, the story should aim to shift the   child’s attitude towards the monsters or the darkness through some event   which isn’t compatible with fear. An example would be telling a story which   ends with your child making friends with the feared monster. 9.  Art is also an amazing communication tool and another great medium to help   children overcome strong feelings. Having your child draw their fears for you   (even if it looks like toddler-scribble) can be really helpful as you try to understand   what’s happening for them. Seeing the drawn version of their scary monster   with you, their big brave grown-up, by their side can also help children feel braver. 10.Lastly, see through the exhaustion for the opportunity this provides. If   dreams are meant to prepare your child if ever they should meet a real-life   ‘monster’, wouldn’t it be wonderful if one of the lessons they learnt is that   you’ll be there for them joining them in battle. The RECARO Easylife stroller RRP: £189.00 The RECARO Easylife is a stylish eight-wheel stroller with umpteen amount of bubbly personality, The hood is an ok size, it doesn’t pull over as much as id personally like but this is more a personal opinion than a criticism, the fabric is of a high quality. The seat is a nice size and the one handed fold is truly amazing and a real must have for myself. I often find myself holding baby and needing to fold the pram by myself, it folds compact, neat, and self-stands. What’s not to love.

All you need to do to get going is fit the two front wheels and learn how to place the break on and take it off, learn the art of attaching the rain cover and your ready to go. I was pleasantly surprised how light the Recaro easy life was I could easily lift the pram up with one hand with no trouble at all, this is massively important when using the underground and at Victoria there is no lift but umpteen amount of steps, you need to be able to hold baby and carry the pram, it even comes with a handy strap to help carrying that much easier. The smart black chassis matt gives it a very smart sporty look. I really felt the hood could have come further forward to give a little more coverage. The weather is so unpredictable in the UK and it would be nice to have the option to offer your child a little more coverage if it suddenly tips it down and you find yourself with no rain covers, or if your child is going through the stage of screaming the place down as soon as they set eyes on the rain cover. The pram comprises a 5 point harness which is lovely but it doesn't adjust in height which is a shame. The handle bar, doesn't have a height adjustment but it is at a nice height, I’m only 5ft and its comfortable enough for myself and is comfortable for my partner who is 5.9. The shopping bag can hold 5kg worth of shopping and is a great size for your shopping needs. This little pram is a breeze to push and glides across the pavement with no problem at all with its 8 wheels. A sturdy pram and there is no quibble here over the ease of pushing this pram. The pram has a lovely recline which is not totally flat but comfy and spacious, you can choose the position of the seat by adjusting the toggle at the back of the seat and pinching this and pulling the straps to the height you want.

Rascals Verdict: We absolutely love the EasyLife stroller. It stands upright in the hallway taking up hardly any room at all, It fold with one hand (massive brownie points) its stylish, easy to push and beautifully super light weight. There really is nothing that would stop me purchasing the EasyLife stroller for £189. My personal favourite colour is the Sunshine, its stunning for the summer. I really like the range of stunning vibrant colours making it a very stylish stroller. Be prepared to answer “where’s your pram from” Who makes your pram” two questions we have been asked time and time again. Pram Envy at its best.

First Anniversary for Birkdale Neuro Rehabilitation Centre-Clinic specializing in holistic long term neuro-physiotherapy for children and young adults goes from strength to strength. Last year, neuro-physiotherapist Farshideh Bondarenko opened the doors to the Birkdale Neuro Physio Centre to realise a long held dream. After decades of private practice, she created a custom-built neuro-physiotherapy space that children and young people can come to for treatment for neurological conditions.

She also can very quickly spot things that are wrong with me – things I don’t even know – and help put them right.” says 27 year old Katrine Saliba who has cerebal

Late Bloomers! When baby’s speech is slow going

As a parent it’s often difficult to know when a child’s development falls within the ‘normal’ range and when there is cause for concern. Just like learning to walk, children develop the ability to communicate at different speeds, and some will encounter difficulties along the way.

What is the difference between speech and language? Speech is how we produce or articulate the sounds that form words. Language refers to the way we receive, understand and express information through all forms of communication - verbal and non-verbal. Although speech problems and language problems are different, they often overlap. A child with a language problem for example, may be good at pronouncing words but be unable to join more than two words together. A child whose speech may be difficult to understand may still use words and phrases to express ideas. And another child may speak clearly but have difficulty understanding instructions.

Speech delay As a very rough guide, and remembering that each child is different, your toddler should have an expressive vocabulary of around 50 words by the time they are 2 years old, and you should be able to understand about half of what they say. If your little one only uses certain sounds or words repeatedly, and is unable to use spoken language to communicate more than their immediate needs by this age, he or she might have speech or language problems, or a combination of both.

Stammering and lisps Stammers and lisps are two common speech difficulties that we see here at Children’s Therapies. To help a child with a lisp, a therapist will demonstrate the correct production of the ‘s’ and ‘z’ sounds, highlighting to the child how the tongue is hiding behind the teeth. The child is given lots of opportunities to listen to the production of the correct sounds, and then helped to produce ‘s’ and ‘z’ correctly from a sound to use in conversation.

Development

For children who stammer, the therapist will try to establish any factors that may be contributing to the problem, and work with the parent on strategies to help the child to talk more easily, including overcoming fear and anxiety.

Early signs of social communication problems and autistic spectrum disorders We also meet many parents whose children are facing more serious difficulties. At as early as 12 months children can be observed for symptoms of autism or social communication problems. Possible signs can include (but this list is by no means exhaustive): •  A lack of early babbling •  Limited copying of speech sounds •  Limited copying of actions such as    clapping hands •  Not pointing to ask for things or to    get someone’s attention •  Lack of other gestures such as waving •  Repetitive actions or movements •  Rack of shared enjoyment and rarely    smiling or laughing when playing •  Poor eye contact •  Limited play with toys Some parents of young children with social communication issues initially wonder if their child is hearing properly as the child does not respond to their name being called. Children with delayed language should have a hearing test to rule out a hearing problem.

However children with an autistic spectrum disorder or social communication difficulties may have problems with paying attention and understanding language, so they do not respond when their name is called even though their hearing is fine.

There are many successful communication programmes which therapists can offer children with these type of difficulties, even before they have received a confirmed diagnosis. One we recommend is the Hanen ‘More than Words’ parent course. This was designed especially for parents of children aged 5 years and under and teaches parents how to help their child reach their full communication potential.

When to seek help Parents are correct in thinking that some children do naturally grow out of some of these speech or language difficulties, but unfortunately it is impossible to predict which ones. What we do know is that the earlier parents seek help, the more successful therapy is likely to be. We also know that children entering school with a speech or language delay are much more likely to have difficulties accessing the school curriculum. If you have any concerns about your child’s communication development, contact your GP, or a speech and language therapist directly. They will either be able to reassure you that everything is fine, or assess your child and work with you on strategies and techniques to help your child’s communication.

Children are not born knowing ‘right from wrong’ it is one of the many jobs of the parent to teach them. Disciplining your child is the hardest part of parenting. It involves clear boundaries and remaining consistent. I have worked for 20 years with families and I have a simple and straight forward process when working in a family home.

These are designed specifically for your family and focus on what your boundaries are. Below is an example.

We do not shout at one another.

The most precious present you can give your child is… …your time! Take them to the zoo, or to the newsagents to buy a magazine and then go and read it together in a coffee shop. Go for a bike ride together or have a picnic under the kitchen table!

We do not throw things at people or hurt them.

Your quality time is all your child wants..

We do not bite people.

Thirdly – The Consequence System. The Shout Spot or Thinking Spot.

We listen and do as Mummy and Daddy ask. We sit at the meal table without toys. We feed ourselves nicely. We go to bed nicely after story time. We play together and share our toys. We talk in our ‘big boy voice’. No whining.

Now comes the challenge. What to do when your child refuses to listen, is being unruly and you are starting to feel ‘out of control’. •  Take a deep breath and roll your shoulders. •  Don’t react immediately. Aim to stay calm    and in control. •  Address your other children to ensure they    are all happy and entertained and then let    them know that you are dealing with their    brother / sister and will be straight back.

Secondly – Devise a ‘Praise and Reward’ System

•  Approach your child. Bend down, make eye    contact and hold them by the top of the arms.

This is as much for the parents as it is the children. Every time you notice your child being well behaved you praise them. “Johnny you are playing so nicely there and letting Mummy make the dinner. Thank you.” Every time you praise you have a reward system to illustrate the good behaviour.

Ideas for Reward Systems

Pop a marble into a jar and when it is full (30 marbles) your child wins a prize! Tie a ribbon around a tree in the garden. 30 ribbons and then a prize! Fill a jar gradually with rice and once it is full – a prize! Add carriages to a train and with 30 carriages – a prize! Build a tower and once you have 30 bricks – a prize! Once 30 marbles. Bricks etc have been achieved a prize is given to your child. It usually takes up to 5 days to win a prize. 3 prizes down the line and good behaviour becomes natural and no longer requires a reward system.

Turn your child around and walk them to a space in your house that is boring and out of sight. The front door mat is the simple place. Ensure the door is locked. Sit them down and simply say “Stay there until I am ready and I will come and get you.” Confidently walk away.

This is not an exercise that you time. Your child will take as long as they need. YES they will keep leaving the mat and you need to return them silently and when they are sitting say “I will come and get you when all the shouting stops.” I call the consequence system either the ‘Shout spot’ or the ‘Thinking spot’ depending on the type of child!

Always walk them back to the mat, don’t carry them. This can become a game. Walk slowly behind them with your arms under their armpits. Continue returning them. They will get cross and this is what you want to happen. Now you know that they are feeling the consequence. They do not like this system in the same way that you did not like the bad behaviour.

Your child needs to get cross and then calm down before the ‘consequence system’ is all finished. They climb the emotional mountain and come down the other side.

What do I do if they just won’t stay on the mat? Keep returning them and ensure you remove yourself from where they are in the hallway. You need to be at the ready and return them before they get too far into the kitchen etc. Remain calm and relaxed. Don’t stress. They do get the message in their own time. It might take many return visits but it DOES work. My record is 52 times with a 3 year old!

The slow walk back – not the fun carry is very important. DON’T talk to them! Think of yourself as a ‘Rag Doll’. You are not being Mummy at this stage. My child happily sits on the mat and then shouts ‘Sorry’. He comes off the mat and repeats the behaviour. What do I do? Just because he says ‘Sorry’ does not mean he can come off of the mat. He is to remain there until you hear he is not happy with the consequence. Only after shouting and then calming down can he come off of the mat.

Some children use the word ‘Sorry’ like a ‘Get out of jail free card’! My child takes himself to the mat with his toys and would sit there for hours. It isn’t working. Eventually they will want to move from the mat. That is when you remind them of why they are there and say “I will come and get you when I am ready.” As you confidently walk away you are likely to hear them shout. This is when they start to feel the consequence. This is when you know it is working!

•  Once the noise has quietened you approach    your child and simply say “That’s it, all    finished. No more shouting. Let’s go and play.” •  Guide them to an activity and start to play   with them. •  After a couple of minutes make eye contact    with your child. •  “Remember, when you hurt somebody,    straight to the mat.” •  You simply remind them of why they were    at the mat in this simple statement and then    you continue playing silently. •  Your child will be absorbing the system you    have just used and will now understand the    consequence of his actions and think more    carefully next time. The beauty of this method is that after 3 consecutive days of implementing rules, rewards and carrying out the consequence process your child learns his boundaries and starts to make the right choices rather than the wrong ones.

The sooner you teach your child their boundaries the easier and happier family life becomes.

Eddie Catz - Wimbledon Most kids seem to love soft play centres, and mine are no exception. With a free Sunday afternoon and two energetic little ones I asked if they’d like to go to Eddie Catz Wimbledon and have a play.

So off we went. Eddie Catz is opposite Merton Abbey Mills and the Sainsbury’s Sava centre. They have a small 20 space car park which fills very quickly. There is also up to 3 hours free parking at the Sainsbury’s across the road. South Wimbledon is your closest Tube line and there is a good bus service close by. Being a weekend the centre was pretty busy but not over crowded . The price isn't too steep either at £7.50 for children over the height of 90cm or £4.25 under 90cm, Babies are £2.00 under the age of 1 and adults £1.00 There is a main play frame which is huge and has a suggested age range of 3-12 years, as well as a smaller toddler area Under 3's. The equipment was in lovely clean condition and has obviously been well looked after – there were staff milling around keeping on top of cleaning and tidying the whole time we were there. Plenty of tables and chairs surround the play areas, and we were able to sit down and let the kids run off and enjoy themselves without worrying they might escape or get lost – the play frame is big but not TOO big. Even better, it’s fairly accessible for adults too with nice high netted ceilings. Good news for the Other Half as Polly-Ann wanted him to accompany her for the first couple of times she went exploring. For the older children their are Fun

video games and air hockey, disco room, sports arena and a lovely reading zone. The centre has a café, which serves a variety of food including the usual chips and nuggets type fare, as well as some healthier options such as baguettes, toasters and jacket potatoes – kids meals are about £3.50 and adults can pay anything between £2.50 and £5 for something to eat. Plus there is coffee and cake available too! What's not to Love.

All in all, the kids had a really great afternoon, and it wasn’t too bad for the adults either (the cacophony of noise is something to be suffered at every soft play, but at least you could sit comfortably while your ears were assaulted!).

The little lady is already asking when we can go back again – so I’ve a feeling that we’ll be heading off to Eddie Catz again very soon. 3. Vitamin D

If you have small children who attend daycare, and particularly if you have more than one, you might be bracing yourself for a long hard winter. Last year our household was hit hard, with months of green noses and many days spent at home with sick kids. I honestly couldn’t keep track of where one cold ended and another began; my two children seemed to share the love very easily (fortunately not with us!) We have asthma in our household too, so we have an extra reason to be anxious.

Something we’re all lower in over winter, and which may partly account for the increased susceptibility to colds. Vitamin D has been shown to reduce the risk of getting the flu in school children. Vitamin D is best given with dinner; don’t forget to chuck the kids outside whenever there is a sunny day too. Oh, and a trip to Bali or somewhere similar is a GREAT way to get those levels up! Doctor’s orders, ha ha! 4. Dose up on Garlic The evidence isn’t very strong, but garlic is safe when eaten as a food (at high doses it can cause thinning of the blood and bleeding problems). Sneak some garlic into your kids’ dinner (e.g. home made garlic bread or garlicky soup) and you might reduce the risk of them getting a cold.

Treating cold and flu symptoms Okay, so the dreaded has happened and they’ve caught the cold/ flu. Here are some remedies that can help treat the symptons. •  Vitamin C may reduce the duration of colds, as might zinc   lozenges.

But fear not – I have done my research on how to maximise the healthy, snot-free days, and keep those viruses away. I hope it will help your household too.

•  Echinacea is controversial – it may only reduce cold symptoms by   a small degree if taken immediately at the onset, and it can cause   allergic reactions so beware (and it’s not suitable for children under 2 years).

1. Handwashing. All T he T ime

•  Honey (half-2 teaspoons) has been shown to decrease night time   cough when given at bedtime.

I’ve said it before and I won’t stop saying it – handwashing is the best defence against those germies. Contrary to popular belief, it’s not coughing into someone’s face that is the most infectious – it’s touching doorknobs, computer keyboards, phones etc that have been contaminated with nice festering viruses. Become an even stricter hand-washing dictator, and carry alcohol sanitiser for when you can’t get to a tap, and disinfect surfaces and toys frequently. It can be hard to police in children, especially when they’re all sharing the petri dish called daycare, but anything you can do is a step in the right direction – including keeping yourself germ-free so you can look after them. 2. F ight the Germ Wars with Nice Bacteria That’s probiotics to you – Lactobacillus rhamnosus, acidophilus and GG, and Bifidobacterium animalis to be exact. These lovely friendly bacteria been shown to reduce the risk of getting coughs and colds, shorten the duration of colds, and reduce the number of sick days in preschoolers attending daycare. He-llooo!!! Drown them in it! (Well, no, don’t do that, but do give them a teaspoon of Inner Health plus or similar once a day). I’ve started my kidlets on it and it’s cleared up my little man’s constant boogers. Happy mummy. Winning.

•  Garlic may also help reduce duration of colds – someone once   told me to rub garlic over my baby’s feet and cover with warm socks! •  English ivy extract has been shown to improve chronic bronchitis   in children due to its mucolytic effect. •  And mummy and daddy’s tender loving care go a long way as well. Festive favourites Method: Preheat the oven to 180C / Fan 160C / Gas 4. Line a deep muffin tin with 12 paper cases. Measure the eggs. Caster sugar, butter, flour, baking powder, milk and zest into a mixing bowl. Beat together using an electric hand whisk. Stir in the cranberries and spoon into the cases. Bake for 18 to 20 minutes until well risen and lightly golden. Leave to cool on a wire rack. To make the icing, sieve the icing sugar into the soft butter, beat together until smooth. Add the cocoa powder and mix until smooth. Chill in the fridge for 20 minutes to firm up a little. Pipe or spread the icing over the cold cupcakes. Slice each Curly Wurly into three widthways, then in half lengthways to make 6 antlers. Repeat with the remaining bars. Push the antlers into the cupcakes. Place a cherry on each cake to make a nose. Put 2 sultanas on each cake to make the eyes. Chill until firm.

1 tbsp milk. 2 eggs. 150g butter at room temperature. 150g caster sugar. 150g self raising flour. Half tsp baking powder. Zest of half a small orange. 45g dried cranberries, chopped.

Icing 100g softened butter. 150g icing sugar. 2 tbsp cocoa powder.

Decoration 4 x Curly Wurly Chocolate Bars. 12 glace cherries Sultanas.

Put the butter and chocolate in a large heatproof bowl and melt together over a saucepan of warm water (make sure the bottom of the bowl doesn’t touch the water), stirring occasionally. You can also melt the chocolate in a microwave using 15 second bursts and stirring between each burst (it will probably take 3-4 bursts). Set aside to cool slightly.

Christmas Pudding Truffles Truffles always make a nice present and these ones can be dressed up to look like mini Christmas Puddings. If you don’t have time to decorate them then just dust the truffles with cocoa. Put each truffle in a mini muffin case and sit in a small box, tied with a ribbon.

Put the Madeira cake in a food processor and whiz to crumbs. Add the cherries, raisins and pecans and pulse 5-6 times until roughly chopped (if you like larger pieces then chop the fruit and nuts by hand). Tip the crumb mixture into the bowl of chocolate and add the vanilla and icing sugar. Stir until thoroughly combined. Put the truffle mixture into the fridge for around 1 hour, to firm up. Line a baking sheet with baking parchment or Clingfilm. Take tablespoonful’s of the truffle mixture and roll them into balls, using the palms of your hands. Sit the rolled truffles on the prepared baking sheet. When you have finished rolling the truffles put the baking sheet in the fridge for another hour, or overnight, to allow the mixture to firm up again. To decorate the truffles first make the “holly”. Colour 1/4 of the fondant icing red and then roll out 36 small balls. Colour the remaining fondant green and roll out thinly (you can do this between two pieces of Clingfilm if it gets too sticky. Cut out 36 holly leaves. Sit the decorations on a plate lined with Clingfilm. Put the icing sugar in a bowl (and stir in the egg white powder, if using). Add half of the water and stir in, then add extra water, a couple of drops at a time, to make a stiff icing. Drop 1/2 teaspoon icing on the top of a truffle and use a cocktail stick or the tip of a knife to spread the icing out a little. Allow to dry slightly, then sit two holly berries and leaves on the top of the truffle. Repeat with remaining truffles then return the truffles to the fridge and leave for 3-4 hours, or overnight, to allow the icing to set. If any of the decorations drop off then they can be fixed back with a little extra icing.

Ingredients Truffles 75g (2 1/2 oz) unsalted butter. 125g (4 1/2 oz) dark chocolate. 200g (7oz) Madeira cake (or loaf cake). 50g (2oz) glace cherries, halved. 50g (2oz) raisins. 25g (1oz) pecans. 1/2 tsp vanilla extract. 2 tbsp icing sugar

Decoration Red and green food colour. 50g (2oz) ready to use fondant icing. 110g (4oz) icing sugar or Tate & Lyle. Royal icing sugar. 1/2 tsp meringue powder or dried.

Tree’s Method: Sift the flour, salt, ginger and baking powder into a large bowl. Put the butter, sugar and syrup into a pan and heat gently, stirring occasionally until the butter has melted. Remove from the heat and leave to cool slightly. Beat the egg and milk together and stir in the cooled butter and sugar, then pour the contents of the pan into the dry ingredients and stir to form a soft dough. Transfer onto a piece of clingfilm and wrap tightly, then refrigerate for 30 minutes to 1 hour or until firm. Preheat the oven to 180c / 350f / gas 4. Roll out the dough on a lightly floured surface to around 3 mm thick. Cut out 4 cookies with the largest cutter, then 4 with the next largest and so on. Transfer the cookies to baking sheets, spacing them about 2 ½ cm apart and grouping the larger cookies and smaller cookies together on separate sheets. Re-roll the trimmings and cut more cookies as needed.

Ingredients 225g plain flour plus extra for dusting Quarter tsp salt 2 tsp ground ginger Half tsp baking powder 50g butter 100g soft dark brown sugar 100g golden syrup 1 egg yolk 1 tbsp milk Approx 170g royal icing

Chill the cookies for 10 minutes in the freezer, then bake for 8 to 10 minutes for the small cookies and 11 to 12 minutes for the larger ones, until turning darker around the edges. Cool on the baking sheets for 10 minutes, then transfer to wire racks. To assemble the trees make up the royal icing according to the packet instructions. Take 2 of the largest cookies and sandwich them together with a little of the icing, making sure the tips of the stars are slightly askew. Carefully stack the remaining cookies, in descending size, on top of the base, securing in place with icing. Do the same for the second tree. Reserve the smallest stars for the tops of the trees, but leave to dry for one hour before adding the top stars. Stick them together with more icing and drizzle over any remaining icing as decoration. Leave to dry for 5 to 6 hours before serving.
