CORVALLIS - You can find whatever food you are hungry for in Corvallis. MEMORIES CAFÉ, 1017 Eastside Highway, is owned by Carla Reich. It is the ‘mom and pop’ restaurant where you can get food made the way you want it – the way you remember it. With a full menu, breakfast is served daily 7 a.m. to noon and lunch is served noon to 3 p.m. Memories Cafe is only open for dinner on Fridays. In addition to their full dinner menu (steaks, shrimp, burgers, sandwiches), the special is an all you can eat fish fry. Dinner begins at 5 p.m. and you’ll want to come early - it gets crowded. (406) 961-5533. PONY EXPRESS, corner of Second and Market is run by Stacy Coulter. It is a drive-through but you could sit at their one outdoor table with six chairs. Previously it was just a coffee shop, but Coulter has added food to the menu. Breakfast items include bagels and cream cheese, baconegg-cheese muffins and French toast sticks. Lunch items include hot dogs, tacos, nachos, personal pizzas, cookies, chips and soda. Pony Express’ newest fun item is soft-serve ice cream, which can come in traditional flavors (strawberry, blueberry, raspberry, chocolate and vanilla), but because it is a coffee shop milkshakes can be any flavor. For summer fun, try a caramel mocha milkshake or a hazelnut milkshake. “I’ve got my regular menu, but I can make anything you can think of,” said Coulter. “Any kind of coffee you can create can be a milkshake. I can put in espresso or Oreos. “I also have white coffee – ground coffee from unroasted coffee beans. It has a very nutty flavor and is higher in caffeine.” The Pony Express is fast. THE WILD MARE, 283 Second Street, is on the north side of the Pony Express – behind the post office. It is owned by Pam Kaye. Their motto is ‘Where friends gather’ and it is a delicious and relaxing place - the perfect finale to the end of the day. It offers elegant dining where you can keep your boots on. The menu has appetizers, salads, burgers, sandwiches, steaks, scallops, pastas, beverages, side dishes and special items for ‘lil buckaroos. They have homemade dressings and homemade desserts. From their spinach artichoke dip to their filet mignon every morsel is fresh, creative and worth savoring. They have live music, special events and concerts, wine and beer tastings, seating options include indoors, in the pub and outdoors on the patio which is gorgeous. Wine tasting is the first Wednesday of every month 6-8 p.m. “We usually have that money go to a non-profit, to local charities,” said Kaye. “We are giving back to the community.” They are adding to their menu: lamb and they’ve just added a big commercial grill on their patio so they are experimenting. “We are a little bit of Montana and a whole lot of Bitterroot,” said Kaye. “We have barn wood from local ranches and we serve local produce, local beef and wine from local wineries. We are established and have a great rapport with the community. THE MERC FRESH MARKET, Aptly named after the mercantile stores of old The Merc is where you can find everything. Fill your tank with gas and head on in for a surprising treat – an expanded menu. Owned by Jay Joyner, The Merc at 1000 Main Street has seating for 24 people at tables and the counter. “We put in a new grill so there are lots of exciting new foods,” said Joyner. The deli is open 6:30 a.m. to 7 p.m. The breakfast menu features sandwiches made on the grill, burritos, biscuits, a breakfast combo of eggs, hash
browns and sausage, omelets made to order or biscuits and gravy. Lunch includes burgers (fresh 100% fresh local ground beef) and a whole list of grilled sandwiches. There is a grab and go hot case with fresh chicken strips, jojos (potatoes), burritos and jalapeño poppers. There is a grab and go cold case with wraps, croissants, sandwiches and take and bake pizza fresh to go. There are even prepared meals to go: rigatoni (like lasagna) and meatloaf with mashed potatoes and corn. “Right now our signatures are the Albuquerque Turkey, the Giddy Up (roast beef with horseradish), Montana Mushroom (Ham with grilled mushrooms) and paninis,” said Joyner. “We’re still testing out our recipes and haven’t finalized the menu yet. We’ll have formal menus and we are trying to ramp it up for summer.” The Merc bakery is famous for their bar cookies. Coffee is available with a full espresso bar and there are soft-serve frozen yogurt parfaits, tapioca, puddings and ice-cream. Barnside Beanery, on Woodside Road across from The Merc and in the parking lot of the car wash, is a drive-up coffee stand featuring coffee (from Big Creek Coffee Roasters in Hamilton), teas, frappes and smoothies. The miniature red barn has two windows of service making for a quick stop. Owner Cindy Stefka, opened for business the first of the year and said their best seller is “anything white-chocolate flavored”. They have over 35 flavors available with many of those sugar free. Stefka prides her self on selling a cup “50 cents cheaper than any place in town”. She began her business at the Sapphire Event Center north of Corvallis, but the Corvallis carwash owner said ‘come be next to my car wash and I’ll pay for your electricity’. She accepted that great offer and moved. Stefka said most of Barnside Beanery’s customers are high school students and town kids and she hopes to see them all summer. Her location has helped her develop connections with community and she loves to help with donations - such as the gift card for the Corvallis High School graduation party. DARBY - As an executive chef, Michael Campbell has worked in million dollar restaurants in Salt Lake City where he created culinary delights for the Jazz, winter Olympians and other famous folk. Today, his clients may not be quite so well-heeled, but taste buds are still in for a treat for anyone stopping by Michael and Monica Campbell’s Little Blue Joint Restaurant on Darby’s Main Street. For the past two years, the couple has been serving their famous homemade pizza, burritos and other tasty morsels from their restaurant that shares an interior door with the Sawmill Saloon. “We really like our new location,” Monica Campbell said. When the Campbells moved to the southern Bitterroot, Michael served as chef at the West Fork Lodge for a time. When the Darby restaurant he was working at after that first job closed, the couple decided they would go on their own. They lived up Nez Perce and drove by the Little Blue Joint Road to get to Darby each day. “We both thought that was the perfect name,” Monica said. “We had to come up with something fast and it stuck. We opened in the most minimalist of ways with a burrito bar. That business slowly grew.” When rent jumped to a point they could no longer afford, the couple opted to buy a food truck and Michael drove off to the oilfields of North Dakota. “He went there with two cooks,” Monica said. “It turned out be really, really hard. The money was really good, but the weather and living conditions were

terrible.” They sold the truck and moved into the building that once housed the Silver Spoon. “We’re slowly fixing things up,” she said. “It takes a lot of time to get everything just the way you want it, but our food has always been pretty amazing. That’s all Mike.” The restaurant has developed a good local customer base and people drive from as far away as Missoula to sample some of Campbell’s famous homemade pizza, delicious wings, chicken Caesar salads to die for and burgers made from beef ground daily. “We also have great fish and chips,” she said. “I’m from Seattle. I’ve been researching the secret to great fish and chips all my life. “Everything we do here is big. We put a plate in front of people and they say, ‘Oh, that’s a little too much food,’ ” Monica said. “And then they start eating and it just disappears.” The restaurant is a family operation, with two of the Campbell’s sons working there. “We also a have a great head waitress named Desi,” she said. “We love Montana and we the country around here. We lived in Alaska for five years. This is our second Alaska. “Our challenge is how can we do fine dining and do it in the country,” Monica said. “We’re slowly working our way up to that. italian restaurant finding success in florence, mt Perry Backus Ravalli Republic
When John and Patti Stevens moved back to their native Bitterroot Valley in 2004, they made the decision that Florence needed a new restaurant. “It was pretty evident back then that there were very few restaurants in the Florence area,” John Stevens said. “We decided to open a small business and after some research, we decided it would be a restaurant.” After all, John had already walked down that path. Back in the 1970s, John’s parents owned the Loose Caboose in Hamilton and his younger sister was still in the restaurant business when the couple returned to the valley. It just so happened that sister’s daughter, Savannah, had recently returned from Italy where she had become a certified Italian chef. Her excitement about the cuisine was infectious. Once the decision was made to create a brand new Italian restaurant in Florence, Patti used her skills as a professional interior designer to fashion the building in a Mediterranean style and Savannah put together the authentic menu. Savannah only stayed a few months, but the restaurant has prospered. The original plan had been to serve a light Europeanstyle breakfast and then lunch. As the building was going up, a good number of people stopped by and expressed their hope the restaurant would be open for dinner as well. The Stevenses have made – and continue to make – adjustments to accommodate their growing customer base. For instance, food at the restaurant was originally served only from the front counter. It didn’t take the couple more than six months to realize their patrons would be happier if Caffe Firenze was a full-service restaurant. “We tried to tailor our menu to our demographic, which is, to a large extent, retirees who have moved in the area and lots of ladies having lunch,” Stevens said. “We draw a lot of people out of Missoula, as well as a lot of tourists visiting the area.” Wine is one of Stevens’ passions that he loves to
share with people coming into the restaurant and to the surrounding community. Every month – generally on the second Monday – the restaurant offers a wine pairing that features a theme along with seven different varieties of wine paired with different dishes. The monthly event is limited to the first 60 with reservations. Stevens also manages a wine club that includes a monthly article to its 70 members. To keep up with the customers’ needs, the restaurant will soon be offering an early bird dinner starting at 4 p.m. There are also plans of creating a take-and-bake menu for people on the go who want to pick up some food and bake it when they get home. People interested in learning about some of the new offerings at the Florence business can sign up for the Stevens’ E-Club. “We have at least 2,000 people who have signed up to get emails from us on a variety of topics,” Stevens said. “People get a $10 gift certificate for signing up. It’s worked out really well.” There are cards at the restaurant or people can go to the website to sign up for the service. Caffe Firenze also stays busy with its catering business. “We do upwards of 200 events a year,” he said. “The wheels are always turning here.” The restaurant can be reached at 273-2923.

The Edge restaurant was founded in 1997 by the Fair family. “My wife and I started it,” said owner Tom Fair. “When we saw this land by the river, we designed and built the building and created outdoor dining by the pond. We designed the menu from food we enjoyed eating and thought others would enjoy also.” When they first began the restaurant, Fair had no experience with food preparation. “I couldn’t fry an egg – now I’m a good cook,” he said. “My son was a cordon bleu chef who worked here eight to nine years. Our daughter and younger son worked at the restaurant as bussers and dishwashers. Now it is just my wife and I and paid staff.” And The Edge is family friendly, they cater to kids -
the outdoors is always popular as a place for them to run around. “Kids pick The Edge,” said Fair. “The TVs, the colors, most of our staff are parents, and the geese are here now which kids always enjoy.” The Edge serves alcoholic beverages - in the restaurant and in their sports bar which has five largescreen television sets. “I always enjoy going to a place with more to do - it engages everyone around you and gives a nice atmosphere. Usually, we listen to the sporting event that whoever comes in first requests,” Fair said. Longtime patrons of The Edge will have noticed that the restaurant is smaller with half their space a liquor store. “We split a big area. We added seating in the bar and cut seats in the restaurant, but we have higher

restaurant sales now, plus we’ve gained the liquor store sales. It is great for us, great for the public,” he said. Fair says they keep their full menu consistent. “We try to do the same thing all the time,” he said. “Summer is busy so we go with the flow and crank it out quickly - no surprises no major changes.” The Edge’s specialties are tuna and buffalo. “Our seared Ahi tuna is a big hit - you can even order it blackened. Our buffalo rib eye is very popular with men and women - it is over a pound.” Before he came to Montana 30 years ago, Fair was from the South. His favorite day is Mardi Gras. “I spend three to four days prior slicing, dicing and chopping. It is our busiest day,” he said. “I do red beans and rice, chicken and sausage jambalaya and seafood gumbo. We also do turtle soup - not with turtle. We use veal. It is a mock soup. We have fresh crawfish flown in and do crawfish etouffee. We have had fried alligator. It was a wonderful, big hit, but with the Discovery Channel show ‘Swamp Things’ the price has quadrupled.” “I love the Edge, I love the customers. That’s my favorite part - going out and visiting with customers friendly faces and new faces to boot.” The Edge, 140 Bitterroot Plaza Drive, is open every day. STEVENSVILLE - Viva Oaxaca (pronounced wa-hahkah and named after the capital of Mexico) is a family owned restaurant offering authentic Mexican cuisine at 201 Main St., Stevensville. Their food is exceptional. “We have the best food in the valley,” said general manager Luis Martinez. “Everything is from scratch. We don’t buy anything from the store. Chips and salsa are homemade. Everything.” They have 63 numbered entrees, appetizers, quesadillas, soup, salads, steaks, seafood, chicken and Oaxaca favorites. View their full menu on Facebook. Martinez said a customer favorite is item No. 24: “Camarones Borracho, prawns and mushrooms with a cream wine sauce.” They make many No. 44s for First Fridays. The menu describes the dish as: “A Mexican classic! Sautéed mushrooms, Jack and Cheddar cheese, and your choice of steak or chicken in a special sauce.” Martinez said entrée No. 29 is more popular: “Camarones apretalados, prawns wrapped in bacon, sautéed in garlic butter sauce and spices, and topped with melted cheese.” “It’s really good. We have it for a Friday special - it is the busiest day.”
Viva Oaxaca opened in Stevensville nearly two months ago. The owner is the cook – he’s been cooking for three years. “The chef is David Martinez,” said Martinez. “He has the best hands for preparing foods.” They have great tamales. “We only have tamales that are shred - spicy but not really hot, great chile rellenos with rice and beans.” Walls are painted with a Mexican theme, piñatas and sombreros. It is a casual atmosphere of family friendly fun. “We have really clean tables, two waitress, three workers in the kitchen, four up front and great bartenders. We play really good music that people like - mariachi and ranchero songs by request. There is a nice sign out front - it is a beautiful place. It’s really good.” Viva Oaxaca is open every day 11 a.m. to 9 p.m.; their specialties are lunch dinner and drinks. They take reservations and make take out. With indoor and outdoor seating and fun waiters they are good for groups and kids.
