Cupcakes Ingredients      

100g softened butter or margarine 150g self raising flour 150g caster sugar 3 tablespoons of milk 2 eggs ½ teaspoon of vanilla extract

Preheat the oven to 180ºC/160ºC Fan/Gas Mark 4 Place the cake cases into a 12-hole cake/muffin tray Weigh out the ingredients for the cupcakes and dice the butter in preparation for the butter icing (leave the butter to one side) Beat the margarine or butter and sugar in a large bowl until it is pale and creamy Add the eggs and mix Add the vanilla extract Add the milk and mix Sieve and fold the flour into the mixture until smooth Spoon evenly into the paper cases, wipe any spilt mixture off the tray Bake in the preheated oven for 20-25 minutes until risen and golden brown Leave to cool completely on a wire cooling rack

Ingredients for the butter icing • 100g of diced softened butter • 225g icing sugar • ½ teaspoon vanilla extract

To make the butter icing 1. Using a clean bowl, weigh and sieve the icing sugar 2. Add the softened diced butter (the one you prepared earlier) and the vanilla extract and beat until thick and creamy (the vanilla extract can be added at any time) 3. If the mixture is to tough, gradually add teaspoons of milk until creamy

Adding the butter icing to the cupcakes • On the video, you will see different ways to decorate the cupcakes using the butter icing, you can add some jam or lemon curd if you like
