Vegetable Laksa

Ingredients:

• 100g rice noodles (vermicelli)

• 500g Stir Fry Thai Style frozen vegetables, thawed

• 2 tbsp (56g) Laksa paste

• 400ml coconut milk

Soak the noodles for 2-3 minute in boiling water; drain.

Place the Laksa paste in a large non-stick pan, cook over medium heat for 1 minute.

Add vegetables and toss to coat in the paste.

Add coconut milk, then reduce heat and simmer for 20 minutes.

Add noodles just before serving.

Serving suggestion: Add additional chopped vegetables if you have them, shallots, red capsicum etc. Garnish with fresh coriander.
