Introduction: Welcome to our August in season Podcast here at RecipeThis.com. We always have a big batch of cherries at home for the kids to tuck into. Then we will go out for lunch and you can guarantee that the elderly Portuguese grandma of the family run business, will see our kids and bring them out some cherries. Then with figs our neighbour grows them in her garden and she will bring us a big batch of them in August and it feels like we never stop eating them. Also for us in August it is our eldest sons birthday. So happy birthday Kyle! And I am sure he wont mind mentioning that he turns 16 this month. Yes I am a mum to a 16 year old, and 2 under 3s. That is quite scary when I say it out loud on the Podcast. We love August because its when all the good summer festivals are on. The Portuguese certainly know how to have a party with lots of traditional food such as meat and bread and an endless supply of quality cheese. They also are fantastic for doing the fruit chocolate sticks which I ALWAYS binge on. On top of this we will nearly always have lots of beach days with the temperature going as high as 45 degrees in summer.

August Foods In Season I am sure what you really want to know is what the main foods in season are right now in August. Well August to us is mainly the cherries and the figs. Those are the 2 above all other in season foods that we always remember when it comes to August. Foods In Season #1 – Figs


I think of summer and all of a sudden I am in fig summer heaven. Figs taste just amazing and even though you can do all kinds of things with them, there is always the association with just eating them from the bag on the way home from the market. Fig Recipe Suggestions Starting off with this truly amazing roasted figs with goats cheese from Kalyns Kitchen. A great summer example of how we should be using up our figs. After this I would also suggest:

Bring back the bananas. Because they are back in season and its time to enjoy the worlds favourite yellow fruit again. I am a HUGE banana fan and love the energy they give me straight after exercise and could never imagine my fruit bowl without a bunch of bananas.


Banana Recipe Suggestions For a delicious banana based dessert in August my personal favourite is a chocolate, banana and avocado mousse.

The top in season fruit for July has to be the cherries. They are amazing in the summer and so full of flavour. Get excited about them and cook them whenever you can. Though avoid them with children in clean clothes as you will regret it. Cherry Recipe Suggestions I just look at these mini cherry cheesecakes and I want to eat them straight away. Never mind waiting for them to cool down, just feed me now please! If anyone asked me my favourite type of onions then I would be shouting at them SPRING ONION. They are just amazing and make meals taste so AMAZING. A stir fry just isn’t the same without


spring onions. The same can be said for Chinese food, summer salads and of course burgers. Spring Onion Recipe Suggestions Lets start with my favourite summer burrito bowls. They’re perfect for serving at your summer barbecue or if you just want something light yet filling.

I love broccoli and eat them all year around but never really associate them with summer. Its what I pour cheese sauce over at Christmas or what I have in a tray bake so it’s a struggle to think about them in summer. But they are still amazing for this time of the year too. Broccoli Recipe Suggestions I am starting my broccoli feast off with some broccoli and turkey pizza. You could at least say when you next tuck into a pizza that it has both turkey and veg in it! Yes garlic is back. After being featured in June we are back for some more garlic in our food this month. I live in Portugal where live revolves around the Mediterranean Diet. Every meal always starts with place garlic and olive oil in the pan – just because they are always so good together. Garlic Recipe Suggestions


For a good garlic summer experience it doesn’t get any better than these coconut king prawns. Flavoured with coconut, garlic and lime for the ultimate summer meal. After this I would also suggest:  Garlic King Prawn Zoodles  Chicken Pizza & Zoodles  Restaurant Style Garlic Potatoes 

Foods In Season #7 – Carrots

Yeah carrots are back and no wonder too. The orange cheap vegetable is perfect for families and in the summer they are really big and perfect for quick summer meals. We love to grate them


with a spiralizer and have them as an alternative to pasta when its too hot for casseroles. Carrot Recipe Suggestions If you love something simple with little washing up then give these shepherds pie minis a go. They are delicious and so easy to prepare and cook. We have more aubergines this month, or Eggplant if you are from the other side of the Atlantic. They are delicious and sliced up as an alternative to chips is truly delicious. We have even shared this version with you further down at the end of the Podcast as part of our featured recipe. Aubergine Recipe Suggestions We featured them last month as the featured aubergine recipe but this mousakka is just so good that we came back for another helping this month. More courgette please. That’s what I always say when we go shopping. They are so big at the moment and they are perfect for quick suppers. I love them in a vegan curry with chickpeas, carrot and garlic. Or alternatively as courgette fritters. Courgette Recipe Suggestions I make these breakfast muffins as often as I can and they are perfect with leftover courgettes. You can then use them to keep your muffins moist and pair


them up with some broccoli, carrots and butternut squash. After this I would also suggest:  Courgette Fritters  Big Fat Veggie Fritters  Grilled Courgette Pizza  Courgette Lasagne Foods In Season #10 – Beef

Lets finish our monthly in season foods for August with the trusted cow. I love beef and have loved it for a long, long time. I love Brazilian barbecues where they serve you an endless supply of garlicky beef to your plate. I also love beef wellington, a sirloin steak and of course a beef stew.


Beef Recipe Suggestions Lets start with a Moroccan Beef Tajine, mainly because they are what the food of our dreams are made of and we should all eat it. Once you have beef this way you wont ever look back. After this I would also suggest:  Turkish Beef Stew  Hungarian Beef Goulash  Beef Shin In The Instant Pot  Beef Stew Scraps & Dumplings

Slimming World Air Fried Aubergines Welcome to our Slimming World recipe for this months Podcast. Today we are air frying aubergine. Delicious thick slices of in season aubergine with a delicious crust air fried and so crispy you will forget that they are not chips.

Author: RecipeThis.com Serves: 4 Preparation time: 4 Minutes Cooking time: 13 Minutes

Ingredients:      

Airfryer 2 Large Aubergines 1Tbsp Olive Oil 2 Slices Wholemeal Bread (made into breadcrumbs) 1Tbsp Basil 1Tbsp Oregano


 Fresh Mint  Salt & Pepper

Method: 1. Thinly slice up the fresh mint. 2. Slice the aubergines into medium slices. Place them onto a clean work surface. From above sprinkle them on all sides with salt, pepper, fresh mint, basil and oregano. Place the olive oil into the palm of your hand and rub the aubergines into your hands so that each piece becomes sticky. 3. Then place them in the Airfryer and cook for 8 minutes at 180c/356f. 4. Give them a shake and sprinkle them in your breadcrumbs. Season with a little bit more salt and pepper and then cook for a further 4 minutes at 200c/392f. 5. Serve.

Notes: This is really good for Slimming World. It works out at 6 Syns for the olive oil and then a Healthy Extra B for the bread. When you are sharing this between 4 of you for a meal that is just ¼ HEB and 1.5 Syns each. You could also use gluten free oats, Weetabix or coconut flakes, wholemeal bread just works well with this dish. I also used a small handful of mint from a few stems from one of my mint plants.
