here can’t be a person in the Kingdom who doesn’t love December. The year’s final month is a favourite for men, women and children and offers people of all religions and nationalities a joyous reason to celebrate and unite. Of course there is Christmas, which brings with it Santa Claus, caroling, tree lighting and delicious (albeit slightly fattening) food. This is followed by New Year’s Eve — a huge celebratory night for people worldwide. Inspired by our new fashion and beauty editor, our 10 Tips article covers a Brazilian New Year tradition that suggests your fortune will be determined by the colour you wear on the last night of the year. Think of this issue as a Christmas cracke, fit to burst with inspiration for decorating your home, choosing appropriate attire and purchasing presents. We’ve gone all out in embracing the festive season and have included articles on how to dress for each event in Get the Look, eat well in our Five Fruits of Christmas article and even survive the winter chill in our Wellbeing piece — if you are venturing outside of Bahrain’s warm climate! There is no book on the absolute dos and don’ts of parenting; as any parent will know, it is basically a lot of guess work combined with trial and error! However, from time to time it is great to get advice from professionals in this field, who can help provide guidance when mothers and fathers most need it. And that’s where Woman This Month’s Dr Clare Beckett-McInroy comes in. Persistent, prying, panic or pandemonium — how are you overdoing your role as a parent? Every month, I make sure I W don’t miss out on her insight as she explores various parenting dilemmas. The most recent article “Are You Overparenting?” was fantastic. I realised that I do in fact mollycoddle my kids a fair amount and should work to give them more space to grow (whether I want them to or not!). We are here to only steer and support our offspring and at some point they need to fly the nest and build lives for themselves. hile culturally and ethically there is an underlying and unwritten consensus about appropriate and inappropriate parenting, many are confused about what is the right amount and type required to ensure their children become confident, socialised, talented and productive for their future life. With this in mind, is over-parenting really a fair term or concept? Parental involvement has been studied for many years. Optimal parenting, referred to as a

THE LOW-DOWN: Considered one of the holiest places on the sub-continent, Varanasi is where Hindu pilgrims come to wash a lifetime of sins in the Ganges, the river of salvation. It is named after the two rivers, Varuna and Asi, which meet here. Previously known as Benares and Kashi, this is the city of Lord Shiva, the most powerful god in Hinduism. Expiring here is thought to be the greatest blessing as it offers liberation from the cycle of birth and death. Believed to be the crossing ground between the physical and spiritual worlds, the city of light is home to intimate rituals conducted publicly on the ‘ghats’. Varanasi has an eerie yet bewitching aura which makes it an unforgettable experience because of the collective sense of rebirth and the sacred acts of cremation. X-FACTOR: Once you’re done taking in the magical side of this overwhelming city, walking along the intricate stairways and passages or taking a boat ride, you can take a trip back to the present day by visiting the markets. Varanasi is popular for its Banarasi saris made from silk, adorned with intricate designs and zari embellishments (threads of gold or silver). Shopaholics can find much more than brocaded fabrics here. Fetch the best of handmade brassware, jewellery, woodcraft, carpets, wall hangings, lampshades and masks of deities which make the perfect souvenirs. Foodies shouldn’t leave without trying out the langra mangoes and khoa, a dairy product. The daring epicurean can have a go at the Banarasi paan. BEST FOR: Culturologists will go crazy in the labyrinthine ‘Old City’. Varanasi boasts a unique culture of fine arts and literature. Watch an all-night open-air music concert and visit the various forts and museums within the area. So, what makes this balancing act so successful and what can we learn from it? It is clear that these parents work on cultivating motivation. The term “authoritative parenting”, seen by many as the optimum mentoring style, is referred to as democratic, involving a childcentric approach in which parents hold high expectations for their children.

Just like Alison said in her article on “Alternative Therapies”, acupuncture does seem a strange treatment to choose if you are after a dose of relaxation. But I do have many friends who regularly do this and so perhaps there is something in it after all. It seems to be much less invasive than I had thought and as an ancient form of medicine there must be some reason why it has been popular for hundreds of years. I think perhaps I will try it — I’ll let you know how I get on! Nadia, by email.
Let them grow up At a very practical level, this means that parents must not do things for children that they are capable or almost able of doing themselves. It should always be about the child’s needs. Some parents help their children or do tasks for them to satisfy their own needs, consciously or inadvertently. The main goal during ‘growing up’ is to develop a sense of self that is independent, confident and generally in accord with reality. If a baby is always carried even though it can actually walk, a carer diminishes their confidence and distorts reality. This is also the case when a child may, for example, be working on a creative project for their homework and a parent steps in to ‘help’ which involves re-writing or even re-designing the whole thing. Remember, it’s good to congratulate yourself when your child does something for themselves. You have done your job well. At times, the final result may not be quite what you wanted or expected. Yet, pointless intervention diminishes your child’s self-esteem and they can also feel angry at your prying. Finding the limit Isn’t it a parent’s job to help with those things that are just beyond your child’s reach? What defines over-parenting? In the early 1900s, following research and observation, Lev Vygotsky, an educational theorist, developed the concept of the zone of proximal development (ZPD) defined as the most www.womanthismonth.com
difficult task a child can do independently and the most difficult task the child can do with help. In short, interaction with a teacher, more able classmate, parent or helper can benefit a child on the edge of learning a new concept. They provide a standing ground in the same way that a scaffold enables a decorator to reach the highest parts of a room that would otherwise be out of reach. To help understand what a child needs help with, it’s important to observe them and to tap into how they are feeling. Are they confused, inquisitive or frustrated? Asking open-ended questions are useful here. The difficult part is
to know when you can step in with questions and ideas and when to leave your child to figure things out for themselves.

parent who is involved and responsive, who sets high expectations but respects their child’s autonomy, was a word used by Diana Baumrind, a clinical and developmental psychologist at the University of California in the ‘50s and ‘60s. What is important here is having boundaries while also listening to your child. As Madeline Levine, clinician, consultant and author asserted in the New York Times in August, such parents are seen to have a perfect balance of involvement and independence. Plus, they generally raise
Carol Dweck, a social and developmental psychologist at Stanford University, conducted a research that indicated that such parents raise more motivated, and in turn, more successful 40 | Novemb children. Her experiments involve, for example, er 2012 young children solving simple puzzles. Most did these tasks with little difficulty. The next part of the experiment involved Dr Dweck telling some of the children how clever, bright or capable they were. The result was that those children who were not told they’re smart were more motivated to tackle increasingly difficult puzzles. They also exhibited higher levels of confidence and showed greater overall progress in puzzle-solving. This may seem counterintuitive, but praising children’s talents and abilities seems to throw their confidence. Attempting more tricky puzzles carries the risk of losing their status as “amazing” and it deprives them from the thrill of choosing to work simply for its own sake, regardless of end result. The consequence is that reasonably supporting a child’s autonomy, and limiting interference, leads to better academic and emotional outcomes. In short, don’t over-praise.

I have never been someone who desires to go travelling (the idea of roughing it and carrying a huge rucksack doesn’t really do it for me!), but I have to admit that your travel articles are very alluring. orld AIDS Day is observed on December 1 every year and has become one of the most recognised international health days. It is dedicated to raising awareness of the AIDS pandemic caused by the spread of HIV infection. However, this recognition shouldn’t be refined to 24-hours, an aim that campaigns such as (RED) are trying to counteract. This initiative’s manifesto wants to deliver an AIDS free generation, an achievement that statistics show is possible. In 2010, 1,000 babies were born every day with HIV and by this year that number was reduced to 900. By 2015 this figure can be near zero if help is given to stop the transmission of the disease from mothers to their babies. The winter months come hand in hand with harsh winds and cold air that cause our bodies to react visibly. Most noticeably our hair and skin will protest, with frizz affecting the

former and dryness evident on the latter. We have a tendency to react with what we consider to be instant solutions; no one wants to turn up at their office Christmas party with their foundation flaking and static hair. So, we slap on the moisturiser and conditioner and hope for the best!
However, as our experts have verified, this can worsen the condition of the hair and skin leaving both in worse shape than before. “All year round a conditioner should be used on the hair to replenish the moisture lost from everyday wear and tear,” says Trisha. “In a country like Bahrain, the temperature will drop during the winter months but the sun will continue to shine strongly. The key ingredient to look out for in any hair care products is SPF factors and UVA filters.”
Your skin
Our expert: Dr Bhartendu Mehta, dermatologist at American Mission Hospital. The skincare products you use in the winter should be different to your summer ones. You need to take the time to find products that suit your skin’s condition. In moments of dire depression, we have been known to purchase the most ludicrously priced products to save our skin, a move that Dr Bhartendu doesn’t recommend. “Expensive products are not necessarily better,” he says. “Most of the time, the extra cost is due to packaging and marketing. Instead you should consult your dermatologist for the best product for your own skin type.” Lips will also become dry and chapped in the cold so ensure you use a balm regularly throughout the day to soothe soreness.
The secret defender “Daily sun protection is crucial,” states the doctor. “It is not just for the summer as the sun in the winter is just as powerful.” A large amount of affordable daily moisturisers are formulated with an SPF factor. “You should select one that has a minimum SPF factor of 15 to shield your skin’s surface from the sun’s harmful rays,” he explains.

Saving damaged hair Make sure that you can identify when your hair is having a crisis and know how to help it. Particularly during this time of the year, hair can become uncontrollable, rough and break easily. “Help your hair by limiting your use of styling tongs and straighteners. Another good tip is to wash hair with sweet water. This saves it from becoming dehydrated from chemically cleaned water,” Trisha suggests. “Also, use cool water as a final rinse on the hair close to the cuticle and that you change the products you use every three months, as hair will become used to the products and they won’t work as well. For best results, find two or three products that you like and alternate.” The winter saviour If your hair is really feeling sorry for itself, invest in a concentrated product that will restore its health. “label.m’s Intensive Repair Mask is fantastic as it contains shea butter to smooth and hydrate,” adds the stylist. “Use it once a week after shampooing and apply directly to towel-dried hair for 15 minutes. It will heal the hair and lock in moisture, leaving your locks looking luscious and strong.”
Preventing dryness As expected, Dr Bhartendu immediately hailed moisturisers as the product we should all be using to protect from the cold climate. However, not just any moisturiser will do the trick. “You should try to use oil-based products which are much better than water-based ones,” the doctor recommends. “The oil forms a protective layer on the skin and retains water loss, thereby preventing dryness. Oils like avocado, primrose, mineral and almond oil are preferable as they are ‘non-clogging’ agents.” Dr Bhartendu suggests that we look for products containing alcohol and sorbitol. “These help prevent hydration loss as they attract moisture to the skin,” he adds. www.womanthismonth.com

Just as the products we use externally aid us, so does what we intake internally. “Your diet is key in determining the quality of your skin and hair,” Remy explains. “It has to be healthy, covering all nutrients that your body needs. A non-healthy diet causes deficiencies in vitamins and minerals that will harm the skin and hair, causing all varieties of problems.” Winter diet adjustments There is not one food that you can consume to improve your appearance. “Instead, you need to incorporate a complex of healthy food choices into your daily eating habits,” the dietician explains. Make sure to eat plenty of fish, raw nuts and seeds. “These are rich in Omega 3 and will help repair any damage to the skin,” Remy continues. “Egg, ginger and oats are rich in zinc — another component in maintaining healthy skin.” Other foods the dietician recommends include sweet potato, citrus fruits, berries, green leafy vegetables, garlic, onions and coloured vegetables. “The mentioned items contain antioxidants, vitamins (A, C and E) and minerals (zinc, silica and selenium) to maintain the vitality of your skin,” adds Remy. Constant hydration Water should be the most crucial element of your diet. “There are many underlying causes to dry skin, usually resulting in lack of water in your system. You must drink at least six to eight glasses of water a day to ensure that there is enough to hydrate your hair and skin,” she explains. “It remains the best beverage ever.”

ften referred to as the “sneak thief of sight”, glaucoma is a disorder that arises due to high pressure in the eye. The disease has no symptoms and causes the eye’s fluid pressure to rise. If left untreated, vision can be permanently lost. “Up to 40 per cent of a person’s vision can be lost without their knowing. It is the second most common reason for blindness and is the major cause of irreversible visual loss,” says Dr Ali Anwar Abro, ophthalmologist at Bahrain Specialist Hospital (BSH). More than 67 million people in the world are affected and by the year 2020 it is estimated that there will be almost 80 million people with either open-angle or angle-closure glaucoma. While both forms can take a long period of time to develop, closed angle can occur suddenly and without warning. The disorder typically affects

both eyes, but it can progress rapidly in one eye more than the other depending on the circumstance. Studies in the United States show as many as half of the individuals who suffer from the condition are unaware of it. According to the Glaucoma Research Foundation (GRF), the condition can develop in anyone but certain groups are at a higher risk than others. For instance, a person is six times more likely to get affected if they are over 60 years old. Other associated factors are hypertension, diabetes, cigarette smoking and excessive alcohol intake. “Most types of glaucoma normally develop gradually, with no real symptoms to warn of their presence, a first noticeable sign of optic nerve damage is usually the loss of side (peripheral) vision,” says Dr Ali. There are two other major signs that can
alert an eye doctor that a patient needs further assessment: elevated intraocular pressure and visual field loss. “Eyes should be tested regularly; every one to two years especially if a family member suffers from the same ailment, if you are of African heritage and you have had an eye injury in the past,” continues the doctor. Far sighted individuals are also advised to get regular screenings. The top of the line treatments offered at BSH range from medication, laser and surgery. Although nerve damage and visual loss from the disease cannot usually be reversed, it can generally be controlled. f there was one area that parent after parent feels they could do better at, if coaches were limited to advising just one thing about their services, just one area that clients can work at and to improve, it would be listening. Becoming a better listener can also make you a better parent. It’s not that, as a parent, you don’t listen. Of course you do. One of the problems is that children want you to listen straight away when it counts, when it’s relevant. This is ideal of course and if you don’t, the moment can pass. The problem is that you have phone calls to make, shopping to do, meetings to attend, and children’s activities and play dates to organise! And so there are times that you don’t listen well. You are human and not alone. What this means is that you don’t listen in a way that will improve your relationships, results, family life, effectiveness and yourself. Quite often you may listen to get by in survival mode. It’s no surprise as you are bombarded by constant sounds, needs and interruptions all day, every day. The main thing to remember is that you don’t need to beat yourself up about it. Read on, to pick up some tips about becoming a better listener for your children, as well as gaining a deeper understanding of listening as well. So, you are bombarded with sounds constantly. Many of these sounds are selfinflicted. You may sleep with your phone next to your bed (many people do), awaken to a clock radio, have TVs on as background noise, air-conditioning and the noise of the fish tank. You listen to the news as you drive, and set your phones to notify you whenever someone sends you a message. On the other side, with so many teenagers and children even younger having their own mobile phones and other devices, messages are constantly beeping for them as well. Receiving a message every 30 seconds throughout the day is not an exaggeration. People expect instant answers, too! Ever felt compelled to reply to messages that are not important or urgent instead of listening to your child? Amidst all this disharmony, you have developed coping strategies, skills as well as some survival methods such as selective listening. However, the problems arise if you fail to ‘turn off’ selective listening when it really matters to your child. You have a choice in how deeply you listen. Below is a very useful and straightforward overview of one model that explains the different levels of listening. It is inspired by the authors of Co-Active Coaching. www.womanthismonth.com
Surface listening Recall a time spent inside an airport terminal, waiting for a train or in a long supermarket queue. How do you listen to the repeated message on the speaker system that tells you that baggage left unattended will be confiscated and cars left unattended will be towed away? Most likely, you barely even hear it. You may have zoned out because you are waiting to find out which gate or platform you need to move towards or you may be searching for a toilet or a snack counter. This type of listening is about you. You may be multi-tasking, sending messages or reading at the same time. You hear the message on the loudspeaker but it doesn’t gain much of your attention. Nor should it! You have many other things that require a deeper focus. It’s the same in a meeting when someone is talking for too long. Surface listening is about you,your needs and your thoughts. You may run into trouble when you listen to your children in this manner. You hear but you don’t grasp the full meaning. Nuance is lost. And what is it like to be on the receiving end of this? How do you feel when someone listens to you at this level? Unfortunately, the people closest to you are likely to encounter you in this level at some stage of the day.
Spiked attention listening Think about that same loudspeaker in the airport. What if you hear your name called or you hear your flight has a gate change? We listen at a surface level until something provokes our interest. When listening to your children at this level, you hear things from their perspective; it’s more about them than you. We hear more than we do at level one, but we still don’t grasp all meaning.

Curious listening Back to the airport loudspeaker; how do you listen to announcements about your flight when you are late and the voice has a strong accent or the noise is fuzzy? You anticipate, focus and listen hard. You clear your mind of distracting thoughts, almost like waking up a little, and you listen attentively. When you listen in this way to others, you strive to understand and get what you need. You may also pay attention to subtle cues. While this is a deep listening, it’s often still selffocused. We listen for what it means to us. “How does what you’re saying reflect on me?” “How does it impact me?” “How does it prove what I already believe to be true?” You may drift into the different stages of listening so just be aware of how you are listening and the impact it has on your child. Intuitive listening At this level, we employ senses beyond auditory. You listen for nuance, for meaning, for discovery. You have no agenda, nothing to prove. You are open to learning and understanding. You notice what’s not said. You detect emotion. At this level, you call on your intuition and take cues from non-verbal sounds and movement.
For example, you sense the energy in the room, the emotions the other person is feeling and how important the issue is to your child. You are aware of what is going on around you, the way a noise can change the mood or the way an interruption can change the mood to laughter, annoyance or even upset. Most of us are not practiced at this type of listening. At best, we operate at this level a few times a day. In some cultures this is more natural than others. As you know, messages are not just given verbally; body language plays a great part in the giving and receiving of a message. So, become attuned to unspoken messages. Listening more deeply like this does take more energy if you are not used to doing; but then it becomes more natural, internalised. You don’t have to listen deeply all the time of course; in fact, you can’t! The idea is to listen deeply when in conversation with others who would benefit from your focused attention — with your colleagues, friends, partner and, of course, your child. If you want to understand others more fully, then try to practise deeper listening. With the holiday season approaching and more time with your children, it will be well worth the effort.

Dealing with Trauma
Children are exceedingly resilient, even though they may have been profoundly affected by trauma or loss of a loved one.
A
s we deal with our own reactions and sorrow, we must remember that children are particularly at risk to experiencing trepidation and apprehension as reactions to these events. For a child, following a disaster such as war on the news for example, their outlook of the world as a harmless and predictable place is provisionally lost. In retort to dreadful events, children sometimes conclude, “The world is a scary place” or “People are evil and can’t be trusted.” These thoughts are classic, and the majority of children resolve them over time. However, parents can do much to ensure that the corrosive effects of personal tragedy don’t linger. Teaching children how to lean on their faith to deal with personal tragedies often raises questions about their own existence. What happens to us after we die? Why do bad things happen to good people? Why are we here? Gifted children, given their cognitive maturity, sensitivity, and heightened awareness of spiritual or moral issues, may verbalise these questions at younger ages than other children. Parents don’t have to pretend to have all the answers, but they should validate their children’s inquisitiveness and admit that these are important questions to ask. Making the most of social support networks, such as friendships and families, are extremely important at these times. Do what you can to
strengthen your child’s relationships with others. They should spend more time, not less, with their support network during the months following a personal tragedy. Don’t share your most intense misery, fury, or apprehensive reactions with your children. Limiting their exposure to your intense emotional reactions is beneficial. Trying to return to daily routines as swiftly as possible also helps to reinstate a sense of security and trust. Moreover, don’t let thorny conditions become an excuse for ignoring bedtime and meal routines or for neglecting rules about behaviour. Get professional help for children who persist in believing that the world is dangerous and that people can’t be trusted. In these cases it may require more than just assurance from family and friends. Parents with children that have ongoing difficulties with relationships and with moving out into the world, or continue to be withdrawn, agitated, or aggressive long after tragic events, should seek professional counselling. Personal tragedy does not necessarily do everlasting damage to children. On the contrary, mastery of taxing situations can serve as a sort of inoculation against ordeal. The experience of surviving what once seemed excruciating can grant a safeguard of confidence and selfesteem that protects against stressors in life, building a child’s buoyancy about the future.
Warning Signs If the following changes continue for longer than three months following the trauma, it is time to seek professional help: • Behaviour or academic problems at school • Angry outbursts • Withdrawal from usual social activities or play with other children • Frequent nightmares or other sleep disturbances • Physical problems such as nausea, headaches, weight gain or loss • Intense anxiety or avoidance behaviour that is triggered by reminders of the event • Depression or a sense of hopelessness about life or the future • Dangerous risk taking behaviour • Continually worrying about the event as a primary focus in life Parents who are concerned about their children should ask their paediatrician or family physician to refer them to a counsellor or mental health professional that can help.

With the exception of Thanksgiving and Easter, there are few celebrations in the yearly calendar that are so well defined by the food served around them. Christmas, though, is the most glamorous from a dining perspective.
T
here are few occasions in life that are filled with as many memories, expressions of hope and love, and great food as the festive season. In addition to a roast turkey, it is perhaps better known for the sweet delicacies which come from around the world for this season of joy. As a chef I adore seeking out new ideas and seeing what other people, in lands far removed from mine, are preparing around a singular event. Christmas for me has always been a delicious event, and much more than an occasion for gift-giving. My first trip abroad in the late 1980s took me to

Switzerland; at Christmas I literally bathed in a world of sweet delicacies I had never known. From that time, I have always been intrigued by how others celebrate the festive season from a culinary perspective. This month I have included recipes for panettone and panforte di Siena, both delicious gifts as well as edible treats with Italian heritage. Lebkuchen cookies are from Germany and my ‘White’ Christmas is more of an antipodean treat. All are great snacks to have around when the morning gift-opening and celebrations become an extended exercise.
Preheat the oven to 160 degrees Celsius. Lightly grease and line a 20cm cake ring with baking parchment. l Place the honey, golden syrup and brown sugar into a saucepan and bring slowly to the boil, stirring to avoid the sugar catching on the base. l When it boils, reduce heat and allow it to simmer for three minutes. l In a separate mixing bowl, sift together the flour and the cocoa powder with the cinnamon and garam masala. l Add the dried apricots, candied orange zest, candied pineapple, hazelnuts, almonds, macadamia nuts, lemon and orange zests and marmalade. l Pour the boiled sugar mixture over all the ingredients and stir all to combine. l Spread the mixture into the base of the lined baking tray and press flat, using the back of the mixing spoon. l Bake in the preheated oven for 25 minutes. l Remove and dust heavily with icing sugar. Allow to cool and then dust again with icing sugar before cutting small thin slices to enjoy with coffee or as a snack. l l

Into the bowl of an electric mixer fitted with a paddle attachment, place the sifted flour, cinnamon, ginger and bicarbonate soda. Add the caster sugar. l Chop room-temperature butter into small pieces and add to the dry ingredients, and mix until the butter has been worked into the dry ingredients completely. l When the mix resembles fine breadcrumbs, add the egg, cream and golden syrup and mould the mixture into dough. Ensure the dough is completely worked and there are no dry ingredients remaining at the base. l Remove the dough and rest overnight, covered in plastic and place in the refrigerator. l Heat the oven to 175 degrees Celsius. Roll the chilled dough onto a floured bench surface to approximately 1cm in thickness. Use a 6cm diameter round cutter to cut out the cookie dough and place them onto a parchment lined tray. l Allow space for expansion upon baking. l Bake the cookies for 14 minutes. l Remove when baked and allow them to cool on the tray. When cool, spread the bases with the melted chocolate and set back on the parchment paper to set. l Serve when the chocolate has hardened. l

Line a baking tray with parchment paper. Place all the ingredients except the Copha or coconut oil into a mixing bowl and combine together. Place the Copha or coconut oil into a saucepan and warm until melted and clear. l Pour the Copha or coconut oil over the ingredients in the mixing bowl and use a spoon to combine all the ingredients well. l Press the finished mixture onto the baking sheet allowing it to be 3cm in thickness. Press it into shape and flatten the top surface. l Cool in the refrigerator for two hours. l Remove and cut into thin slices and serve as a snack or with coffee. l l
Panettone
180mls milk 1 1/2 tbs dried yeast 200g caster sugar 240g unsalted butter 1 tspn salt 3 whole eggs 4 egg yolks 1 lemon finely zested 1 orange juiced and finely zested 1 tbs vanilla 600g plain (all purpose) flour 30g kismis (white) raisins 30g currants 30g candied orange peel 30g sliced almonds toasted Icing sugar for dusting Preheat the oven to 350 degrees Celsius. Heat the milk in the microwave so that it is warm but not hot. Stir in yeast and a pinch of the sugar. Stir well and set aside, covered, for 15-20 minutes in a warm area. l In a food processor add together the sugar, salt, eggs, egg yolks, vanilla, lemon zest, orange zest, orange juice and butter. Add the yeast mix to the food processor and pulse again briefly. Add the flour little by little until a dough starts to form. l Pour the wet sticky dough onto a well floured board and sprinkle the raisins, currants, candied orange peel and nuts over it. Use a scraper to fold and knead the dough, adding a little extra flour to bring the dough together. l Shape the dough by hand into a ball and place it inside of a well greased 20cm diameter panettone mould or the deepest sided container that you have. l Place in a warm area to rise for three hours or until the dough has doubled in size. l Bake the panettone in the preheated oven on the lowest shelf of the oven with all other shelves removed. Bake for approximately 40-50 minutes. l Remove and allow it to cool for five minutes before removing from its container, and allow it to cool on a cooling wire. l Dust with icing sugar and serve slices when cool. l l

They say you’re only as old as you feel, and writing to Santa every December I feel somewhere in my teens — that’s got to be good!! Hey big guy,

have done well this year don’t you think? I’ve written about the trials and tribulations of being an Alpha Female and assisted my sisters to better paths. I’ve spoken of chivalry and love and informed a few guys how better they can treat us, their princesses! Surely that puts me on top of the ‘nice’ list?

FYI, I found a website that allows you to download ‘naughty or nice certificates’. I printed off a few for all my BFFs; I hope you don’t mind, but we are all goddesses, and you know that! There are times I may not have been as good as you wanted; but, seriously, it could have been worse, right! I know you are a man, and I forgive you for that, so you should forgive me a few little girlie shortcomings, too! I mean, we aren’t supposed to lie are we Santa? But it’s the new millennium and you still want us to believe in toy tinkering elves, flying reindeer and all the Hallmark kitsch that surrounds your name. Who’s lying to who big guy? As for what you should give me this year. I’m all yours big fella - surprise me! But make it designer or haute couture and, if not, make it diamonds. I am a realist; what can I say, the resale value on those little babies is better than anything else you could afford. I live in an amazing apartment so you’ll either have to be buzzed up with intercom or sneak in through the window. I don’t recommend the window though; there are still a lot of guards downstairs who may think you’re being a little suspicious. As for flying those reindeer in, I’m sorry you’ll still need to leave your CPR with the checkpoint up the road. No one is above suspicion in my neighbourhood! I know that there are many women who deserve your attention more than I, but come on Santa, I’m in my late thirties, single and I still believe that’s worth a special merit. I don’t even mind if I’m the last on your list; I’ll stay up till dawn and if you have to drop the gifts and run so be it. Otherwise we can have a cookie together and a few shots of what ever is in the cupboard! I’ve met a lot of men who are fakes in my life, faker than you even! Don’t take that negatively though, please. At least through my lifetime you have stayed true to the cause. You maybe a little ‘nuts’ dressing the way you do; but, most men don’t even attempt to co-ordinate their outfit, so well done there! You don’t wear a baseball cap backwards or your pants almost to your knees showing your boxers or tennis shoes with a sports jacket. Your outfit is the same now as it was when I was young and for that I give you a fashion credit. Size doesn’t matter Santa, either; to me it’s the size of your heart that counts. I’ve met guys who have fabulous bodies but small brains; you seem well-rounded if you get my drift. Size, though, does matter in the gift department. So, don’t go letting me down like last year! Many people have come and gone in my lifetime but every December you’re always there for me. And I’m always here waiting for that special something. We both respect each other’s boundaries and we don’t need to make promises we can’t keep. Actually, if you’d stop wearing red, I think I’d ask you on a date. So, just so that you’re clear — I’m waiting! Make it big! Make it sparkle and make me happy! And we will continue this little relationship for years to come.
