don’t know about you but I’m smiling from ear to ear with this weather we’re having. While we haven’t quite reached boots weather yet, our jumpers can definitely see the light of day again! And on that note of change, I’ve stepped into the editor’s heels (well, I’m a loafers girl really) at Woman This Month and am having a ball putting the pages together. Being the month of keeping up appearances, we’ve got you covered on the wardrobe front with a hot line-up of ideas on how to add a touch of Christmas to your look. As we cover all the festive essentials, we chat with fashion designer, Amal Al Mulla about her latest fall/winter collection and how she, a barely-out-of-university designer, has already got Paris at her fingertips. As the year comes to a close, everything seems to mount up – festive gatherings go well into the night, work swamps your desk and the pressure of gift-giving becomes more of a burden than a happy occasion. t was announced last month that Shaikha Tareef was appointed the new chief financial officer of Standard Chartered Bank in Bahrain. Not only is this a flagship role, it is the first time a Bahraini woman has filled it. What does it take for a woman to climb the career ladder in Bahrain?

The number of women in senior roles in the banking industry is on the rise. Bahrain’s home-grown talent is getting local and global recognition. How can women further push the boundaries? We speak to high-ranking women of Standard Chartered Bank — Bahrain.

THE ROLE OF EDUCATION One of the foundations to a successful career is a solid educational background. The notion of education has been disputed within a gender context in the past, but it seems women are at the forefront now. The country head of financial crime compliance at the bank, Alaa Al Hamad, says that her family insisted on education because she is a woman. “I was raised to believe that education is the pillar for a good future. We were focused on this; my father made sure that my sisters and I had the best education,” Alaa says. Similarly, Nouf Al Suwaidi, senior relationship manager of human resources, was brought up to value education. “I think it has to do with the way our parents were brought up. Back then, women weren’t given the same opportunities as men. Perhaps they felt that opportunities would be handed to my brothers, which is why they put me in a private school,” Nouf adds. Noora Al Nusuf, country head of corporate affairs, brand and marketing, says, “I think it’s all about how families view the role of women. There was a discussion in the past about

whether women are their own enemy. To a certain extent, we could be because it’s what we teach our kids. We can teach our sons to respect women and that the role of women is important. It all starts at home.” WEST VS MIDDLE EAST Having had experience in both the UK and Bahrain, Shaikha has never felt the effects of discrimination in either country. Gender equality has been on the agenda in the West for decades; the presence of female empowerment in Bahrain is catching up. “I have never been told that I can’t do something because I am a woman,” she says. “The government stresses on the empowerment of women. You’ll find seminars taking place to increase the participation of women in both public and private bodies.” Greek expatriate Zoe Karali, who is the country head of legal and compliance at Standard Chartered Bank, felt accepted immediately upon arrival eight years ago. “I had never lived in the Middle East, but I felt comfortable as soon as I got here. There are capable women in senior positions in local FASHION 10 tips and international banks in |Bahrain. Coming from Europe, this is something that needs to be promoted outside the region,” Zoe says. SUPPORT SYSTEM Throughout their journey to the top, Standard Chartered Bank has supported these women in accomplishing their goals.
“One of the main pillars is diversity and inclusion at the bank. Sometimes women can be complacent, but if you really push for what you want, you can get it. The reaction I get from people about me working in this position is one of amazement because I am a woman in an international bank,” says Nouf. “It’s all about how professional and engaging you are. I don’t think gender matters. Since I started working here and throughout my career, people really appreciate how the bank has promoted women. They value the way the bank runs its activities and strategies for women,” adds Dalal Abdulla, head of distribution — head of branches. PASSING ON THE TORCH This inclusion of women doesn’t just speak to the ethics of Standard Chartered Bank. Both local and international banks in Bahrain embrace women taking a pioneering leap to the top. How can women improve their confidence and ability to do so? Would a mentoring programme suffice? “Mentoring is one thing; it’s formal. Stories of successful women help inspire women. When my promotion was announced, women were saying that it is great news and that they know they can be in such a position too. It shows that if you work hard, you can get these strong roles,” says Shaika. “The government mentors women through the Supreme Council for Women. They host activities and the annual competition for the Shaikha Sabeeka Award. The nomination process is so rigorous. It is taken very seriously,” adds Alaa. “I was reading about organisations that have a high percentage of women in senior positions and how they have better shareholder returns as a result. I was proud to read that. When shareholder value has something to do with it, you know women are doing it right,” says Zoe. PIECES OF ADVICE In order to launch yourself into a fruitful career, the women of Standard Chartered Bank put success down to flexibility, goals and patience. Dalal: “Always look forward. Set a goal beyond the goal.” Zoe: “You need to be patient. It took me 10 years to be head of a department, but I needed those 10 years. You can have a lot of knowledge and qualifications, but experience is what makes you step back and have a good view of everything you have acquired. Don’t rush. Take it step by step — it’s a process.” Shaikha: “You need to be flexible. During life there are lots of hurdles; be adaptable and take on change.” g November 2014

Your ‘Women of Influence’ feature on the topranking women of Standard Chartered last month was very encouraging and uplifting. Sometimes I hold myself back because I feel I can’t achieve the things that I want to but after reading the interview feature it made me realise that a lot of hard work and determination, along with patience, makes it all worthwhile. And I love the fact that these are strong-minded women who have not let any gender barriers come in the way of their success. Thank you WTM for focusing on these types of women. Marie I loved everything about November’s Woman This Month issue! The cover was fabulous and the contents were even more so. I have always been confused on how to pull off denim without conforming to the easy and generic T-shirt and trainers look. Now I can feel more feminine and understand how to accessorise and feel more ladylike with brightly coloured stilettos and handbags. I am also a new mum, hence the lack of fashion intelligence at the moment, therefore the baby milestone article really calmed my nerves as I can relate to it. I’m always on the lookout for helpful hints and tips from parents on parenting; now I know what signs

When Amal Al Mulla graduated from the Royal University for Women with a degree in fashion, she came out with her brand’s first collection. Just two years later, she's known in Paris. Georgie Bradley has tea and talks with the pint-sized fashion mogul.
S
tepping into Amal Al Mulla’s four-monthold studio, you escape Riffa’s cacophonic grind and enter a sleek, uber-twee space with tactical translucent windows. “I want to be able to be in my own world here and don’t want the outside chaos to interfere with what I’m doing,” says a 23-year-old Amal. You forget the outside hive of activity until several cars grumble past all at once. Although I’m here to talk about her current fall/winter collection, her spring/summer

collection for next year is neatly filed across two clothes stands. You can tell Amal is into her botanical chic; not only do her clothes have flowers spreading from sleeve to sleeve; the studio’s sofa is a fabric of flowers. “I want my clothes to have an organic feel. I’m very much inspired by nature and want it featured in my brand.” Amal’s designs are largely made out of a textile fabric called piña - pineapple fibre to us lay creatures. “Piña is a luxurious fabric, traditionally worn by the
upper class at weddings in the Philippines. It comes in plain form, so I gave it a western twist with my embroidery for a contemporary feel. And I have dyed it too - piña comes in ecru (that colour between white and beige) but I wanted some black as well.” The studio is new and still evolving; besides the stands, Amal’s mood boards and mind maps are plastered on the walls. The concept of Amal’s brand is based on a trinity of thoughts: escapism, contrasts and nature. www.womanthismonth.com
“I make my collections based on how I feel in that particular moment; it’s kind of like a mindset. For the f/w collection it was about going to those very early days of winter, with a soft breeze and the last of the autumn blooms. The fabrics are very frosty. It’s got that raw and crispy feel you get at the start of winter. I keep thinking season to season where am I going to take my girl?” referring to the story behind the collection and the girl who gets to be dressed in the pieces. www.womanthismonth.com
There is a real narrative involved in her collection. As put in her promotional booklet: “She escapes within her senses, she escapes into the wild. Taken by a soft breeze, whispering, calling for a storm, hurrying to gather the last blooms, beauty she wants to keep.” There’s also a geometric dimension to Amal’s collections, one that highlights contrast and reminds me of my favourite Scandinavian high street brand, Cos. “My
brand is all about contrasts, mainly my colour palettes, light versus dark; you can see there are a lot of contrasts in the fluidity and structure in my clothes. It’s an aesthetic that I am carrying through my brand. There are a lot of ‘versus’ in my brand: structure versus fluidity, transparency versus texture and detail.” For a region identified as traditional, but upcoming in modern development no less, how has the Middle East responded to these December 2014

very Euro-centric clothes? “I have clients from all over the Middle East which is great because I want everyone in the region to be able to wear my clothes. I would say my orders mostly come from Kuwait, Qatar and Dubai,” she says. “I had a very Western outlook growing up. My family really exposed me to the arts and they always appreciated it and it gave me that open-minded mentality.” Amal is of both Bahraini and Filipino origin and has

always been familiar with the ‘other side’ being the rest of the world. “As a family we have travelled a lot and it’s enhanced my experience as a designer.” The fact that her family cared for the arts made Amal want to pursue them in some form. “I fell for fashion during high school; I was obsessed with it and I knew what I wanted to do.” Having graduated from the Royal University for Women, where
she studied fashion, Amal came out armed with a collection which was admittedly experimental. “Season after season I still love to experiment with every new collection and take it further than the rest.” And then Paris knocked on Amal’s door. “I took my s/s collection to a trade show in Paris and it was received really well. It was my first experience there, so I was worried about how things would turn out. I participated in an event called Zip Zone. During Paris www.womanthismonth.com
Fashion Week, there are a lot of trade shows that go on and designers showcase their collections. It’s where buyers and the media come and check out new collections from up-and-coming designers. It was a really good experience.” Now Amal is working towards the f/w 2015 collection. “I’m grasping inspiration from every direction, all the while sketching and sourcing fabrics.” She’s already got Paris under her belt, which some would see as a www.womanthismonth.com
peak, but she assures me she’s just started out there. “To get further and make my brand worldwide it’s going to be through hard work.” But I think it’s already paid off.” Besides Spanish designer Joseph Delpozo being her firm inspiration, Project Runway is Amal’s go-to TV show for reality inspiration: “When I see how tough it gets in that world it makes me want to work even harder; it’s good for me to watch and learn from.” In a way, Amal is a one-woman band. She
is on her own. “I don’t have a mentor who monitors what I do or gives me direction - it’s all down to me. WAX WORKS After giving up her event planning business to spend more time with her children, Seema Haqiqi got creative. Georgie Bradley finds out how she went from scrapbooking to candle making for My Crafty Touch.
W
hile the rest of her family are tucked in bed, Seema Haqiqi will be in her kitchen melting wax and carving candles through the night. “The kitchen is off limits for my children when I make candles: that’s why I wait till they are asleep,” she says. For the sake of getting in more hours with her children, Seema put her dream business – an event planning company, to bed. “When my youngest started school, I then had a chance to go down a more artistic route which I believe was a gift from God for all the time I gave to my children.” Before candle making took over her kitchen counter, Seema began scrapbooking as a morning timefiller, calling it My Crafty Touch. “I took photographs and
put them on special background paper and decorated them with embellishments until I realised it was not challenging enough for me. Although the use of tools and techniques helped me use more sophisticated ones needed for candle making.” Seema learnt how to make candles with the help of DVD tutorials, YouTube and books with more books. “There is so much information on the different types of wax, moulds, wicks, dyes and fragrances, it was overwhelming, but my passion and enthusiasm helped.” The chemistry of candle making was something Seema didn’t readily take to at first but understood its requisite part of the process. “You have to know the properties of wax because there are hazards in this line of work.” The workspace – her kitchen countertop – is part technical, part therapeutic. The scientific tools: a blow torch, scales, knives for carving, a thermometer and mould spray are lined in order of use while the candles in working progress are tucked underneath tin
foil. But that doesn’t stop the wafting scents from zapping your nostrils. She uses various fragrances based on the design of the candle, like roses – a favourite among the locals – jasmine, pinewood, coffee and cinnamon. The only part her children play in the process is adding the finishing touches: “My youngest girl likes to help me with chunk candles by adding in chunks of coloured wax into the moulds that are wicked and ready. She says “Mummy, sell this candle last because I want it at home!” Creating a candle from conception to the finished product can take a few days with up to seven hours of non-stop work, which is not always appreciated. “It’s very hard to sell my candles for the right price because the fact that they are handcrafted is not always valued.” The average candle costs BD20-25 in an attempt to keep profit margins low. “I want to be able to market these candles as a work of art,” she says. My Crafty Touch has appeared in fairs and has a growing following of customers on Instagram who can soon expect a candle book from Seema. “I’m planning to write a candle-making book in Arabic because it’s difficult to find any. I have lots of customers on Instagram who ask me about the methods and techniques to make candles, so I will include all the basic things you need to know to start a candle-making hobby or business. I’m also planning to give training courses to those interested.” Ultimately for Seema, candle making creates positive energy, “I used to be a high-tempered person but since I became a candle artist I started cooling down. HORSE POWER Carmen Lauri could pretty much ride horses before she could properly walk. A true expat of the island, the Anglo-Swede talks to Georgie Bradley about life as a jockey at the Rashid Equestrian & Horse Racing Club and other unlikely pursuits.
W
ith a rude awakening at 3am, Carmen Lauri is up for the day. As she drives to the Rashid Equestrian & Horse Racing Club she undoubtedly shares the road with nighttime revellers who are ending their day – but she’s just beginning. Carmen, 20, was born and raised in Bahrain. She first started riding horses at the age of four and got round to competing at the age of 10. By the time she was 16, she became a dressage champion in Bahrain across many competitions in 2009 – “no one has been able to beat my points yet!” she confirms – giving rise to her racing career and her work at the club. Her love of horses is a family affair: “My mother was a rider. She was asked at 15 if she would be part of Sweden’s Olympic team. Even my brother is a show jumping champion in Bahrain.” After completing her education at the French School of Bahrain, Carmen went to a horse riding nirvana in Doncaster and did a 12-week course. “When I graduated the college placed me at Sir Mark Prescott’s Yard where I worked for a bit and then came back to Bahrain for the season. I also worked at David Simcock’s yard.” Carmen shares the same deep-rooted love for the island like most expats: “I always come back to Bahrain. Bahrain is home. I know I probably don’t have the same possibilities but I can’t get enough www.womanthismonth.com
of Bahrain. Bahrain is so homey: you settle easily.” You only have to know what time Carmen sets her alarm to know her commitment to being a jockey. “I’m on horseback by 4.15am. I take care of the horses (there are 600 horses at the club and Carmen is assigned to five) and make sure they’re all fed and happy.” By 9am Carmen’s work at the club is done. As she continues to takes me through her daily routine it’s clear she doesn’t like to sit still. “That’s a problem with a lot
of young people. They just want to lie around and watch TV all day but I hate doing nothing. I work at Bahrain Investors Center, an American company, from 10.30-5pm. I juggle all of this with a lot of patience.” But beyond the saddle, she’s got some unassuming passions and a possible Plan B. “In my spare time I sketch and draw” – which begs the question: Do you by any chance draw horses? “Yes I do! I mainly draw caricatures. I helped out at art galleries in Bahrain and when Pauline Estelle (a celebrated caricaturist from Poland) came to do a workshop I became friends with her and still keep in touch.” If that wasn’t a hidden enough hobby, Carmen is also quite the handyman. If you go to her house, chances are the table you prop your things on was made by her. “In the future I might consider becoming an interior designer. I have taken courses in England and always had an interest.” Somehow she finds the time to do all this. g

KICKING UP A STORM There’s a Bend It Like Beckham scenario going on within Deena Rahman’s world. She tells Georgie Bradley about the lengths she’ll go to, to bring more women into football.
D
eena Rahman is changing the face of football in Bahrain. Having arrived in 2010 to a patchy presence of women’s football, she’s now the driving force behind the increasing participation across the island as a coach at Soccer City for the Arsenal Soccer School Bahrain. As well as setting up a ladies’ programme, Deena coaches across girls and boys of all age groups including eight girls who play for the national team (which Deena plays for too). However, her efforts were met with initial doubts over her competency as a coach. “I’ve had parents and children tell me that they weren’t sure about me coaching. But I thrive in that environment, and wanted to prove people wrong.” Deena’s backstory alone could easily silence a gender-centred argument over her football skills. The half-English, half-Egyptian coach and player grew up in England and played for England at youth level, and played professionally for Fulham ladies club while training to get her coaching badges as part of her contract. With a year-long stint in Egypt playing for the Wadi Degla Arsenal Soccer School and coaching the under 19s national team, Deena racked up the experience. When Arsenal Soccer School was set up in Bahrain, Deena had her work cut out for her. With a lack of female players, she got tournaments and session processes up and running, and was on her way. “My aim and passion is women’s and girls’ football. I encountered the same issues girls and women face in Bahrain when I first started. I went to Fulham as the only girl but luckily I wasn’t too bad and the boys respected that and it all went from there. Now women’s and girls’ football in the UK is huge; it’s everywhere and my goal is to create that in Bahrain too.”

Inevitably, the cultural implications throw a spanner in the works with some players having to go about their passion in secret. “We’ve got a girl who secretly joined us but we didn’t realise until she didn’t get into group photos. It turned out she had been
playing in secret. I would hope that when she told her family one day, they’d support her.” In an attempt to shift the attitude towards football, Deena has paid visits to parents to educate them. “We’ve had a lot of girls come along and then disappear. We’ve got a girl who is quite young and doing really well but she hasn’t signed up for this term because her parents are saying she’s becoming a teenager and has to stop playing. It’s a shame. Sport is brilliant for health. A lot of parents say: ‘Studies come first, studies come first’ for boys and girls. I say that an hour and a half a week of football is going to help them.” You only have to see Saudi Arabia’s Eastern Flames and Bahrain’s Joga TFA women’s teams, who participate in the ladies’ league, to understand the evolving progression of women and football. Now in their 10th season, the ladies’ programme is going from strength to strength. “We started off with four women in the ladies’ programme and now we’ve got 80 – I want to keep that going.” g

TRIMMING DOWN The issue of obesity is ever on the rise. Royal Bahrain Hospital’s consultant general surgeon, Dr Stephen Angamuthu talks about the advantages of weight-loss surgery. “A chronic health problem on the rise is obesity, which is a result from an excess of fat exceeding the body’s physical needs,” according to Dr Stephen Angamuthu. “Obesity almost always leads to a number of other chronic health conditions, which we call co-morbidities. A Throaty Problem If there was one recurring ailment that plagued your childhood, tonsillitis would probably be it. Dr Jinan Harith Darwish goes to the core of the problematic illness.
T
onsils are like hotel porters. They alert the body to ‘what's coming in’. They say: “Please take a seat over there” to the bacteria and virus, while they contact the body’s police squad. The tonsils form lymphocytes, which are white blood cells that produce antibodies to combat harmful organisms trapped in the mucous membrane lining the throat. Sometimes, however, the ‘porter’ becomes lazy, plump and criminal – at which point they get the sack! Tonsillitis refers to the inflammation of the pharyngeal tonsils – those glands at the back of your throat. The inflammation may involve other regions in the back of the throat, including the adenoids and the lingual tonsils (the tonsil tissue at the back of the tongue). There are numerous variations of tonsillitis: acute, recurrent, and chronic tonsillitis, and a quinsy. Viral or bacterial infections and immunologic factors lead to tonsillitis and its complications. Virtually all children in Bahrain have experienced at least one episode of tonsillitis. Due to advances in medical and surgical treatments, complications associated with tonsillitis, including mortality, are exceptional. Tonsillitis mostly occurs in children, but rarely in those younger than two years old. Tonsillitis caused by the streptococcus bacteria classically occurs in children aged five to 15 years, while viral tonsillitis is more common in younger children. A peritonsillar abscess is usually found in young adults but can occur occasionally in children. The patient's history often helps identify the type of tonsillitis present (i.e., acute, recurrent, chronic). Here are the symptoms for the different branches of tonsillitis: Acute tonsillitis: Your child will have a fever, sore throat, foul breath, difficulty swallowing, painful swallowing, and tender cervical lymph nodes. Airway obstruction due to swollen tonsils may cause mouth breathing, snoring, night-time breathing pauses, or sleep apnea. Fatigue and malaise are common. These symptoms usually resolve in three to

four days, but may last up to two weeks despite therapy. Recurrent tonsillitis: This diagnosis is made when an individual has multiple episodes of acute tonsillitis in a year. Chronic tonsillitis: Individuals often have chronic sore throat, bad breath, tonsillitis, and persistently tender cervical nodes. Quinsy: Individuals often have severe throat pain, fever, drooling, foul breath, difficulty opening the mouth, and muffled voice quality, as if talking with hot potatoes in their mouth. Tonsillitis is customarily treated with a regime of antibiotics. Viral tonsillitis is not treated with antibiotic medications because antibiotics are ineffective at conquering viral infections. Fluid replacement and pain control are essential. Hospitalisation may be mandatory in severe cases, particularly when there is airway obstruction. When the ailment is chronic or recurrent (more than five to seven times during a 12-month period), a

A Tonsillectomy removes only the palatine tonsils and sometimes adenoids. Lingual tonsils are anatomically big and remain intact over a lifetime. The Big Issue If the figures on your scale are having a frenzy this season, it’s time to take charge of your health. Behnaz Sanjana talks to the experts on how to safely shed that unwanted baggage and prevent from tipping the scales towards obesity.
A
t some point in time we’ve all been at war with our scales – only to retaliate with harmful dieting and then eating everything in sight. What has transpired over the years to cause this?
THE FACTS
Your ideal weight range depends on height, age and gender. A 20 per cent excess over this range is considered ‘overweight’. When this overweight status is exceeded by another 20 per cent, you’ve joined the ever-growing obesity club. Obesity is measured using yardsticks like Body Mass Index (BMI), waist-hip ratio, waist circumference and the body fat percentage.

“Being overweight is a result of energy imbalance over a period of time. An energy imbalance arises when the number of calories consumed is greater than the number of calories used by the body,” says Dr Archana Ainapure, a nutritionist at VLCC Bahrain. Conditions like Hypothyroidism, where the thyroid gland does not make enough thyroid hormone, and Hyperinsulinemia, where there are excess levels of insulin circulating in the blood than expected relative to the level of glucose, cause excessive weight gain and could be hereditary. But families also share lifestyle habits that may contribute to obesity. “Separating these from genetic factors is often difficult,” adds Dr Archana.
What has changed between the 1990s and now? The villain that is junk food peaked and found its way into our gut. “Fast foods are calorie dense and available in large portions at low prices. This automatically leads to overeating,” says Dr Archana. Take a sedentary lifestyle devoid of any exercise, for example, and add stress and sleep disturbances. This lethal combination saps energy and increases sluggishness and weight gain. However, some lucky ones can eat a walrus and still be a size 12. It all boils down to one’s Basal Metabolic Rate (BMR). BMR is the energy expended by the body for basic functions – the beating of the heart, blood circulation and www.womanthismonth.com

A low BMR spends less calories on bodily functions, making the person lethargic and averse to physical activity. Naturally, the calories consumed will be more than can be burned – and then you’re shopping in the plus size section. Increasing BMR by skipping fatty food, exercising more and correcting hormonal disorders will curb obesity to a great extent. But faddy diets with their fancy names are all the rage, unfortunately. Dr Archana warns, “These diets are deficient in nutrients and fibre. They give quick results, but are not sustainable. Only muscle mass and water from the body is lost, not fat. Extreme diets and weight loss pills could cause fatigue, nausea, heart disease and stress your liver and kidneys.” Extreme dieting can bring back the weight faster than it took to lose it. This yo-yoing effect brings the body to a plateau with those inches refusing to budge further. A good balance of food with healthy portions of proteins, carbohydrates, fat, fibre and water will help take that weight off and keep it off. Weight loss must be a slow and steady process to be sustainable. “One should match the calorie intake with the BMR to gain long-term results. Staying hungry is not the remedy,” our expert says. A perfect diet plan with an exercise regime suited to your needs and body type and a generous dose of dedication to live a long, wholesome life will help you jump on the healthy bandwagon.
OBESITY AND THE PSYCHE
The health consequences of obesity are well known, but the psychological effects are often sidelined. “Obesity carries a stigma that leads www.womanthismonth.com
to low self-esteem and a lack of confidence in social situations,” says Huma Vachha, a clinical psychologist. Society primarily puts slimmer people on a pedestal. Severely overweight people are likely to feel alienated in society, and thus be less concerned about their physical appearance. “Research has shown that obesity is frequently accompanied by depression and the two can trigger each other. Women are more likely to be affected by the obesity-depression cycle than men. It can lead to binge eating which is a symptom of depression,” says Huma. She also notes that those on the heavier side of the scale often face discrimination in the workplace due to being perceived as having less potential for success and possessing fewer leadership qualities. It can go as far as salary discrimination where an average-sized person will be paid more. Obesity can also result in low self-confidence in the bedroom. Obese women may see their bodies in an undesirable light, affecting their intimacy with their partners.
THE NEW TREND
Bariatric surgery has recently gained popularity as a way to get back in shape. Contrary to common perception, it is not a cosmetic procedure but a necessary one for the super obese (with a BMI over 50) to get
back to living a normal life. “Obesity is the root cause of all disease. Obese patients have a number of serious emotional and physical issues at relatively young ages,” says Dr Stephen Angamuthu of the Royal Bahrain Hospital. Those with a BMI of 35 along with abnormalities like diabetes, or simply a BMI over 40, qualify for bariatric surgery as per internationally accepted guidelines. “We do not encourage people to go for these procedures unless they have failed to lose weight even after a healthy diet and exercise plan. Patients are assessed to ensure that obesity is not due to behavioural or hormonal problems, in which case the underlying cause must be corrected,” says Dr Stephen. Bariatric surgery is done in different ways, which vary in complexity, depending on the requirements and goals of the patient. Surgery must be the last resort to combat obesity and must be followed up with healthy eating and exercise habits to lead a normal, fulfilling life. This is important to maintain the ideal body weight and retain the required muscle mass. Dr Stephen cited a case where a patient who weighed 140 kilograms decided to go the uphill ‘healthy lifestyle’ route and managed to bring his weight down to 80 kilograms. “If there is the will to be healthy, it can be done with nutritious diet and exercise alone,” he says. g December 2014

hy change things that work so well? Why corrupt food that tastes divine? And why create something new out of something so perfect in its pure state? This year my household has grown by one and it’s time to start teaching the traditions that make a perfect Christmas. While turkey is traditional, so too are chicken terrine, gingerbread men and Tunis cake. Different countries, cultures and ways of celebrating
the festive season have created traditions from all corners of the globe. People like us celebrate the season in the heat, while others celebrate in the depths of a winter chill. However and wherever you celebrate this ebbing phase of the year, enjoy, eat well and develop your own traditions and create treasured memories for yourself and those near and dear.
TUNIS CAKE
250g unsalted butter 2 lemons, finely grated zest only 250g sugar 250g plain (all-purpose) flour 2 tspns baking powder 80g almond powder 4 eggs For the topping 300ml cream 400g dark chocolate, broken into small pieces • Preheat the oven to 180˚ Celsius. • Grease and line the loaf tin with baking parchment.

• In an electric mixer bowl, cream together the butter, lemon zest and sugar until light and fluffy. Add the eggs slowly followed by the flour and almond powder. Spoon the batter into the prepared cake tin. • Bake for 45 minutes, then cover with foil to prevent the top from browning and cook for a further 15 minutes, or until a skewer inserted into the centre comes out clean. Leave to cool in the tin on a wire rack. • For the topping, pour the cream into a small pan and bring almost to the boil.
Remove from the heat, add the chocolate and stir until melted. • Refrigerate and cool until the mixture begins to thicken but not too hard. Pour the chocolate mixture in an even coat over the cooled cake (still in the tin) and put aside to set. • To serve, remove the cake from the tin and carefully peel off the parchment paper so that you get a clean line between the cake and the chocolate layer. salted butter, melted cognac eggs, beaten egg yolks pistachio nuts, shelled dried cranberries turkey bacon
• Heat the oven to 160˚ Celsius. • Put the chicken breasts and turkey bacon in a shallow dish, then place in the hot oven for 25 minutes. • Roughly chop the cooked chicken meat. • In a food processor, blend the chicken and turkey bacon in batches to a coarse texture, then tip into a large bowl. • Tear up the bread and soak in the milk for 5 minutes. • Squeeze out the bread and put it in the food processor with the shallots, garlic and chicken livers. Process to a coarse texture, then add to the bowl, mixing it well. • Grind the peppercorns, coriander seeds and cloves to a coarse powder using a pestle and mortar. Stir in the cinnamon. • Add the spices to the chicken along with melted butter, the cognac, eggs, egg yolks and salt. Mix together thoroughly. • Press half the mixture into a 1.5-litre baking dish or similar. Scatter over the pistachios and cranberries, then cover with the remaining meat mixture. • Arrange the reserved bacon rashers over the top, tucking in the ends. Cover the dish tightly with foil, then put it in a roasting tin. • Pour boiling water into the tin to come halfway up the sides of the dish. • Bake for 2 hours, remove foil, then bake for 15 minutes more to brown the top. Cool completely, then wrap in fresh foil and chill. For the best flavor, let the terrine chill and mature for at least 2 days before eating. Serve slices of the terrine with salad leaves.

• Place the sifted flour, cinnamon, ginger, bicarbonate soda into an electric mixer bowl with a paddle attachment. • Add the caster sugar. • Chop room temperature butter into small pieces and add to the dry ingredients, and mix until the butter has been worked into the dry ingredients completely. • When the mix resembles fine breadcrumbs, add the egg, cream and golden syrup and mould the mixture into dough. Ensure the dough is completely worked and there are no dry ingredients remaining at the base. • Remove the dough, cover it in plastic and let it rest overnight in www.womanthismonth.com
the refrigerator. • Heat the oven to 175˚ Celsius. • Roll the chilled dough onto a floured bench surface to 3-4mm in thickness. Use gingerbread men cutters to cut out the dough and place them onto a parchment lined tray. Allow space for expansion upon baking. • Bake the cookies for 12-14 minutes. Remove when baked and allow them to cool on the tray. Decorate the baked cookies or leave them plain; they taste wonderful either way. December 2014

Rockefeller Center Plaza By now we’ve seen enough movies, travel shows and Sex and the City episodes to know about New York’s must-dos and visits: Katz’s Deli, Central Park, retail therapy havens and museums. Seven Days While everyone may not celebrate Christmas, James Claire believes we are all missing a greater opportunity if we dismiss this time of year.

e often sing and talk about the 12 days of Christmas, but who knew that December 25th is actually the start of the 12 days of Christmas and not the end of them. When the song says “my true love gave to me, nine ladies dancing and ten lords a leaping” it was in fact referring to the 2nd and 3rd of January. Another amazing thing to learn late in life. In any case, I believe we have been singing the wrong song. Whether Christmas is celebrated for religious reasons, family get-togethers or gift-giving purposes, it doesn’t much matter in my mind. In my youth I enjoyed that very day, but 30 years of hospitality industry behind me, the date is just another workday for me now. A very busy workday. I do however enjoy the free turkey and pudding afterwards. What we should be celebrating and singing about more, are the days from December 25th to December 31st; exactly 7 days before the end of the year. We have seven days in which to change, forgive, move on and get over the errors, successes, pains and passions of the past 358 days and venture forth unto a newer year with purity of heart and soul, into a new world of issues and commitments. Imagine starting a whole new 365 days with no burden of regret, resentment or debt. A whole new year and a whole new you.

fter a rough night with an ill toddler, my soul ached for toast and honey. I wasn’t even hungry. I was fatigued, spaced-out, zombie-like. The very thought of crispy, warm bread covered with a salty layer of butter and a golden dribble of honey gave me hope for the day ahead. It made the prospect of monitoring temperatures and forcing medication down a cranky, unwell child seem a trifle easier. OK, it was brown bread and raw, organic honey. But I cannot and will not compromise on my butter. Are you listening, Dr. Oz? No wonder they call it ‘comfort food’. Flavoursome chicken soup for the sneezing soul; freshly baked mac- and-cheese to warm the freezing soul; chocolate-coated strawberries with cream - summer on a plate! There are many times in life when one just wants to curl up with a good read (or in front of the box) with a meal that tastes familiar and soothing. It always takes precedence over a five star restaurant’s signature dish whose name is too perplexing to pronounce. Besides, you can’t be scraping your plate and licking your spoon clean when a Michelin star menu is involved, can you? In my household, the ultimate heart warmer is yellow lentils and rice, in all its glorious versions and variations. It’s the ultimate go-to dish for sick children, auspicious occasions and when the ‘Home Minister’ is stretched too thin. There isn’t another dish in the food dictionary that makes my young ones smile so wide. “And please don’t forget the butter on top,” they remind me. Ah, just plain sinful! Browsing through my favourite recipe book, I realised it isn’t just the taste of a particular food that makes one feel all warm and fuzzy inside: it’s the smells, sounds and sights we associate

with that food, bringing that comforting rush of memories and solace to fill our spirits. That jolly banter at the dining table, that playful teasing between friends or cousins and the aroma of a mother’s love wafting through the kitchen - bliss. My love affair with the aforementioned toast and honey dates back to more carefree days. It was that quick mid-morning break with colleagues at the makeshift office pantry where I first bit into that sweet crunch. What kicked
