Resourceful and resilient During Lockdown 2.0 many businesses have had to adapt their retail methods to encompass online, postal and click and collect services, including Bawtry’s fashion boutiques Bawtry Shoe Company, Incognito, Revolver Menswear, Robinsons & Yasmine of Bawtry. Please check out their social media pages for up to date information and virtual tours of their current stock and offers. We are keeping everything crossed that they will be allowed to open their doors once again this Christmas. Our independent retailers have some amazing gifts, perfect for family and friends, ranging from designer clothing to diamond jewellery and home accessories to artwork. Many of them, including our quality bars and restaurants, are offering gift vouchers too so that shopping, dining or overnight stays can be enjoyed in the new year. 4 Eastside | www.eastsidemag.co.uk
Our array of individual bars and restaurants will be so pleased to be able to welcome you back over the festive period. Ziniz Restaurant and Wine Bar will be open every day, expect Christmas Day and New Year’s Day, and will be asking for a £10 deposit per person upon booking. All adding up! Congratulations go to Daniel Edwards and Katherine Rowell of D&K Accounting based in Saddlers House, Bawtry who have scooped the SME Accountant of the Year award for Yorkshire in the SME News Awards along with being asked to be Ambassadors for the Start Up Loans company. Great to see another Bawtry business winning awards and prospering!
It’s ten years since current Womacks of Bawtry owner, David Womack, took the then owner Annette Womack, no relation, out to lunch and ten hours later had bought the business! David had always aspired to owning the shop that bore his name and ten years on, not only does it prove that dreams do come true it also proves that things happen for a reason! Now, displaying the most amazing shop front on the high street it is a constant source of wonderment at all times of the year, but never more so than at Christmas.

eason’s greetings and welcome to the December issue of Eastside. Have you got your tree up yet? When it comes to decorations it’s easy to go over the top. To keep things on the right side of stylish, we spoke to interior designer Ben Huckerby who has dressed homes and businesses up and down the country including a very swanky London hotel. Food plays a huge part in any festive celebration. With that in mind we spoke to The School of Artisan Food who supplied some suitably festive recipes. Keeping things Christmas, we look at Santa’s list - and get his recommendations for songs, films, food and this year’s must-have toys. There’s a huge quiz too should you be stuck for things to do over the festive period. Elsewhere we have your usual mix of home and garden, fashion and beauty and will be back in the new year with our bumper Northern Lifestyle edition.

Raising aspirations QUEEN ETHELBURGA’S COLLEGIATE INTRODUCES US TO THEIR QE FUTURES PROGRAMME, A WHOLE SCHOOL APPROACH TO CAREERS GUIDANCE AIMED AT SUPPORTING THEIR STUDENTS TO MAKE INFORMED DECISIONS ABOUT THEIR FUTURE. he Collegiate’s dedicated careers department is testament to the importance it places on effective careers education, advice and guidance for its young people. Principal Jeff Smith explains: “Within the careers education curriculum at QE we work on raising aspirations and encouraging our students to consider a broad and ambitious range of careers, whilst empowering them to plan and manage their own futures. We set high expectations so that every student is stretched and acquires the attributes that employer’s value. This helps students to realise their potential. “The careers team work closely with a number of higher education institutions, apprenticeship providers, employers and with the armed forces to ensure that students have the most up-to-date information and knowledge of career opportunities. “Lessons are delivered at an ageappropriate level to ensure our students understanding and growth of knowledge as they progress through their career journey. We encourage students to be aspirational in their goals and provide the help and guidance they need to give them the best chance of success. “During Key Stage 2, we introduce students to different career possibilities and begin to explore with them what it means to have a career. “At Key Stage 3 we inspire students to take their first steps towards their future

career planning. The focus moves from understanding their own skills, qualities and values, to linking these with GCSE decisions and possible careers. “In Years 10 and 11, the QE Futures programme is aimed at reinforcing students’ previous learning and building on their experiences to help them move forward with their career planning. In addition, all students are offered one-toone careers interviews to personalise
their experience and help develop individual action plans. “In Years 12 and 13, as students begin their final years in general education, we offer support to prepare them for their Post-18 decision making. Whether students are looking to apply to their chosen university, or looking at alternative routes into employment, one to one guidance is tailored to their individual needs.” To find out more about QE’s approach to education as we support our students to achieve their aspirations; through the quality of teaching delivered, extensive extra-curricular opportunities offered, and strong pastoral care provided, visit: www.qe.org.

Best bar none WANT TO ACHIEVE THE GOLD STANDARD WITH YOUR CHRISTMAS DECORATIONS? ASK THE EXPERTS. et’s be honest, it’s been a pretty terrible year so wouldn’t it be great if we could lift spirits and finish 2020 on a high? Christmas, typically a time filled with comfort and joy, will be a little different but that doesn’t mean we shouldn’t be getting into the festive mood. In fact, we should be embracing it even more. Far beyond resurrecting the same artificial ‘Nordic pine’ tree each year, Christmas decorations can extend to all rooms of the house and include lights, garlands, festive foliage and much more. You can dress doorways, stairways and driveways and even let your children style their own rooms. The possibilities are endless. In short, Christmas decorations are a good way to start the season and, done right, can set the mood for the

many weeks ahead. But where to start? Interior design specialists Ben Huckerby Design started dressing everything from homes to hotels years ago and more recently have been repeatedly approached to style them for the festive season. With their expert eye they can choose decorations that complement your home perfectly and add a touch of class to your Christmas. As you can imagine, Ben and his team are in full flow at the moment, dressing homes and properties up and down the country. “Our first trees are booked for install the second week in November and we are usually fully installed by the end of the first week of December,” said Ben. “Ordinarily, we supply the items and dress the areas, usually in one
day, however, we draw the line at taking them down, this is usually left to the clients, who can store them for the following year!” And Ben isn’t afraid to go the extra mile for his clients. “Last year, a client’s build team overran so late that I installed the decorations on Christmas Eve to ensure they had a beautiful Christmas Day. With that in mind, my tree at home has to be one of the first to go up, as once I’ve done four or five installations, the motivation to do my own would be weak.” Pictured here is a project Ben Huckerby Design undertook at The Lanesborough Hotel on London’s Hyde Park Corner last year and showcased some of Ben’s favourite design elements. “I feel the most elegant trees and

decorations are always the very muted tones with subtle accents of colour and I like to mix textures in the form of artificial foliage and feathers,” he said. “I always lean towards a warm white bulb both inside and outside, as I really feel this gives a much softer light and I always use a combination of gold, silver and clear baubles as I feel this achieves the best effects.” Ben is expecting to see decorations appear in homes much sooner this year, because of the current situation, but may have to go against his own advice and put his own decorations on hold as he’s hoping to move house at the start of this month. CHRISTMAS LIST
Food No Christmas is complete without food - and the more of it the better. 1 Turkey The much-maligned bird is the cornerstone of Christmas dinner. Give the goose a miss and go with tradition. 2 Mince pies Shop-bought or homemade, the humble mince captures the essence of Christmas in a few tasty mouthfuls. 3 Christmas pudding It may not be for everyone but with lashings of brandy sauce, it’s the perfect way to finish your Christmas meal. 4 Pigs in blankets When did these become such an integral part of Christmas dinner. Sausages wrapped in bacon are 5 the perfect partner to turkey.
Drinks Chances are your alcohol intake will increase over the festive period - here are some beverages for all occasions. 1 Mulled wine Served warm, this spiced wine is the perfect winter warmer and just screams Christmas. 2 Eggnog Usually considered an American tradition, eggnog actually originated in this country. Made with eggs, milk, cream and sugar, it’s a sweet treat. 3 Champagne Wake up to a glass of fizz on 25 December. Is there a better way to celebrate?
Brussel sprouts No dinner is complete without them. Instead of 6 boiling, try frying them with chestnuts and bacon.
4 Snowball They usually only surface at Christmastime and are something of an acquired taste.
Parnsips Roast them with a few carrots and a splash of honey to add a touch of sweetness to your dinner.
5 Port The perfect partner to your festive cheeseboard.
Cheese One to enjoy over the days following Christmas, usually with some good chutney and a glass of port. 7
Gingerbread The tradition of making gingerbread houses started in Germany but the spice-laden biscuits are the perfect accompaniment to any festive feast. 8
9 Chocolate Roses/Quality Street/Miniature Heroes/Terry’s Chocolate Orange… delete as applicable. Anything will do. 10 Yorkshire pudding Perhaps the most controversial addition to any Christmas dinner. Does it belong? It comes down to personal preference.
32 Eastside | www.eastsidemag.co.uk
6 Bailey’s What is it about creamy drinks that seem so appropriate at Christmas? 7 Whisky Great straight up (or on the rocks) but even better in a hot toddy after a bracing winter walk. 8 Sherry The sweetness of the many different sherries is a good match for rich festive food. 9
Hot chocolate The whole family can wrap their hands around a steaming mug, preferably with marshmallows and whipped cream. 10 Martini Raise a glass to the recently departed Sean Connery. Make sure it’s shaken, not stirred of course.

CHRISTMAS FOOD
Mince pies with a contemporary twist For the puff pastry: 250g Strong white (bread) flour 4g Salt 125g Chilled water 10g Unsalted butter For laminating: 125g Unsalted butter (refrigerated)
For the mince pie filling: 30g Raisins 30g Currants 30g Sultanas 22g Soft brown sugar 18ml Brandy/ale 6g Sliced almonds 6g Orange peel 6g Lemon peel 6g Dried cherries 6g Apples 6g Butter 6g Caster sugar ¼ tsp Orange oil (optional) ¼ tsp Lemon oil (optional) Salt, pinch Nutmeg, pinch Ground ginger, pinch Mixed spice, pinch
Method: 1. Mix ingredients together in a mixing bowl and knead until pastry comes together and shows signs of development. 2. Form dough into a ball and cut a cross in the top, being careful not to cut more than half way through the dough. Pull the corners of the cuts out from the centre to form a square shape. Wrap in a plastic bag or sheet (not clingfilm as this will stick to surface of dough) and place in the refrigerator for 30 minutes. 3. Weigh out the 125g butter and shape with a rolling pin between sheets of silicone parchment into a flat square block until approx. 10cm square and 1.5cm thick and place in the refrigerator for at least 20 minutes to harden. 4. To assemble, remove the pastry and the butter from the refrigerator. Neaten the edges of the pastry square, if required. Roll out the pastry into a rectangular strip twice the length of the butter square. 5. Place the butter in the middle of the strip of dough, leaving equal amounts of dough, uncovered, top and bottom. 6. Fold the uncovered flaps of dough over the butter square until they meet in the middle and seal the joins by pressing with your rolling pin. 7. Give the pastry a one quarter turn, so that the two open ends with the butter showing are top and bottom. 8. Roll out the pastry into a long rectangle the length of your rolling pin. Give the pastry a double (book) turn, wrap in the plastic bag or sheet and return to the refrigerator for a further 30 minutes. 9. Repeat step 8 two further times allowing the pastry to rest for at least 30 minutes, or until the butter has hardened and the pastry relaxed sufficiently to pin easily, refrigerated, between each and the final turn making certain it is covered at all times. 10. To make the filling, peel, core and chop the apples. Melt butter in heavy saucepan and add chopped apples and caster sugar. Stir and cook until a puree consistency is achieved. 11. Once the purée is cool, add and mix all other ingredients. Store in an airtight container in refrigerator for up to six weeks. 12. To assemble, roll out the chilled pastry and cut out two discs for each mince pie using pastry cutters, one disc for the base and a slightly larger one for the lid. Brush the base disk lightly with either water or milk, place a generous teaspoon of mincemeat (approx. 6g) in the middle and place the lid on top. Pierce the top and place on a baking sheet covered in silicone parchment. 13. Bake in a preheated oven at 230°C for 15-16 minutes or until golden brown. 14. Dredge with vanilla sugar.

36 Eastside | www.eastsidemag.co.uk
Method: For this recipe you require three large bowls and two small bowls. The small bowls will fit on the large ones upside down to act as lids. 1. First, soak the fruit. In a large mixing bowl mix the fruit, juice, zest, toasted almonds and rum together and cover. Allow to stand in a cool place covered; until most of the liquid is absorbed into the fruit. This is best done a week in advance and kept in the fridge. 2. To make the dough (preferment/sponge), put the flour in a small mixing bowl and set aside. In the large mixing bowl dissolve the yeast in the warm milk. Add the first flour and mix into a paste, cover with the bowl that had the flour in it, leave to prove double in volume for 30 minutes. 3. In the other small mixing bowl put the last flour and set aside. 4. To make the marzipan, mix the almonds and sugar together. Add the rum and mix into a stiff paste. Refrigerate. 5. In another large mixing bowl beat the butter, sugar, salt and the spices until soft. Add the egg into the butter mixture that has been lightly beaten little bits at a time. Once all the egg is incorporated into the butter mixture stop beating. Tip: If the mixture curdles or separates add a teaspoon of flour that has been set aside earlier, to bind the mixture. 6. Mix about a tablespoon of the flour into the fruit mixture so that it absorbs the moisture in the fruit and set aside. 7. Returning to the dough, mix the yeast mixture into the butter mixture and add the rest of the flour. Mix until it all comes together and cover with the bowl that covered the yeast mixture. Leave to stand for 10 minutes. 8. Knead the dough for 10 seconds in the bowl, or until the dough resists. Leave to stand for 10 minutes. Repeat this last step three times, covering the bowl between kneading. 9. Now add the fruit and mix until all the fruit is mixed into the dough, making sure all the fruit is incorporated and taking care not to crush the fruit. 10. Place the dough in a bowl and allow to prove, this should take around an hour. Once the dough has proved about double in volume knock back. 11. Shape into a ball and allow to rest until workable using a little flour so the dough does not stick. 12. Shape into a stollen shape with the marzipan in the centre. Place on a baking tray that has been covered with silicon paper. Allow to prove, covered in a warm place just under double in volume, approx. 30 minutes. 13. To make the glaze, boil all the ingredients together in a saucepan and set aside until ready to use or place in the refrigerator. 14. After 20 minutes, or when the loaf is half way risen, place the Stollen in a pre-heated oven at 200°C (400°F) Gas 6, add a cup of water on the hot tray to form steam, lower to 180°C (350°F) Gas 4. Bake for approx. 20 minutes until golden brown. You will know when it is baked by tapping on the bottom and hearing a hollow sound and it will be golden in colour. Place on a wire rack to cool. 15. To finish, remove most of the dark sultanas that caught while baking with a sharp knife, taking care not to damage the stollen. Paint with hot melted butter three times allowing the butter to absorb. 16. Once completely cool, finally seal with boiling hot stollen glaze top and bottom. Once the glaze has set, roll in vanilla sugar, dust with icing sugar and serve.

CHRISTMAS FOOD
Christmas pudding 250g mixed dried fruit 50g prunes, chopped 50g dates, chopped 125g butter 125g dark muscovado sugar 3 tbsp treacle 1 tsp mixed spice 2 medium free range eggs 125g self-raising flour For added flavour, you can also add 125ml brandy
Method: 1. Place dried fruits, prunes and dates into a bowl and pour over the brandy. Soak the fruit overnight. 2. Grease a 1.5-litre pudding basin well with butter. Then place a disc of baking parchment in the bottom. Lay a sheet of tin foil just bigger than the basin on a work surface, then lay a sheet of baking parchment the same size over the top. 3. Beat the butter and sugar together in a large mixing bowl. Beat for around 3 minutes, or until light and fluffy. 4. Add the treacle and mixed spice, then beat in the eggs one at a time. 5. Add the fruit to the bowl and stir until totally mixed in. Fold in the flour, and spoon the mixture into the pudding basin. 6. Place the parchment and tin foil layer over the top, and secure with string. Put the pudding into a large, deep pan with an upturned plate in the bottom, and pour boiling water into the pan until it reaches halfway up the side of the basin. Cover with a lid, bring to the boil, then reduce the heat to a gentle simmer. 7. Add more boiling water as necessary, so the pan doesn’t boil dry as you’ll need to steam for between 3-3½ hours (or until the sponge is firm and a skewer inserted comes out clean). 8. Take the bowl out of the water, and leave to sit for 20 minutes before you turn it out.
