Christmas unwrapped WITH A LITTLE HELP FROM DR PATRICK HARDING, CHRIS WILSON LOOKS INTO THE ORIGINS OF WELL-KNOWN FESTIVE CUSTOMS. hen you hang tinsel on a Christmas tree, pull a cracker or get merry at your office party, do you ever stop to think about why we celebrate Christmas in the way we do? The Nativity is a huge part of Christmas, but the festival has slowly morphed and changed, adapting to more recent traditions and customs to become the Christmas we know today. What about our other traditions such as Christmas trees in our homes, the idea that Christmases should be

white and the origins of Santa Claus? Where do all these customs come from? Former University of Sheffield lecturer and author of The Christmas Book, Dr Patrick Harding, has been demystifying our festive customs for the past 20 years. In his book, Patrick explains where all these customs come from, but before we get into all the weird and wonderful reasons why we celebrate Christmas in the way we do, letâ&#x20AC;&#x2122;s start with the birth of Jesus.

The Nativity “The accounts may have been slightly changed over 2,000 years, but what I like to do is see if there is any science to back the nativity story up,” says Patrick. It shouldn’t come as much of a shock that Jesus wasn’t born on 25 December, nor was he born on what we think to be the year 0AD. After much research, Patrick discovered that Jesus was actually born in September 7BC. For Patrick, the most important part of the nativity story is the star, which wasn’t actually a star at all. David Hughes, an astronomer from The University of Sheffield, introduced Patrick to the idea of triple conjunctions. These occur when Jupiter and Saturn align in the constellation of Pisces, creating a light that would have looked like a bright star. The magi (or wise men) who followed this ‘star’ may have even realised the significance of this rare event, as Jupiter represents the king of the gods, Saturn signifies the land of Palestine and Pisces is the sign of the zodiac which represents the Jews. Combine this with the fact that one of these triple conjunctions took place in 7BC and that scientists have worked out that Jesus was born between 8 and 6BC, and this fits Patrick’s theory. “Of course, it sounds silly to say Jesus was born in 7BC, but does it matter? I just look at 25 December as Jesus’ official birthday, a bit like the queen,” says Patrick.
Santa, drugs and St Nicholas gold
Christmas before Christianity So why do we celebrate Christmas on 25 December? Those who think our customs are all centred around Christianity may be surprised. “The 25th is the most important day for a competing religion called Mithraism,” says Patrick. “If you believe in the teachings of Mithras, your god is the sun and what I find interesting is that the 25th is just after the shortest day. “If you believe god is in the sun, you get a bit upset because your god isn’t getting out of bed very early but as soon as it starts rising again, it means god is still there. So followers of Mithras may very well have looked out the window and said ‘Our sun is risen!’” Roman Emperor Constantine
followed Mithraism before converting to Christianity, but the date and many other Christmas customs were carried over from other religious festivals. The Romans would celebrate the god Saturn with a festival called Saturnalia from 17 to 24 December, a time of overeating (saturnus means plenty) and general boisterousness as well as a time for visiting friends and exchanging presents. Patrick explains in his book: “It was also a time for greater sexual freedom, the latter no doubt stimulated by an excessive consumption of alcohol. The ‘goings on’ at Christmas parties in the 21st century pale by comparison.” Who’d have thought that even our Christmas party shenanigans are a long-standing festive tradition?
Over the years Santa Claus, Father Christmas and St Nicholas have all combined to create one big fat figure in a red and white suit who delivers presents to children. When the Dutch immigrants landed in New York (originally New Amsterdam) in the 17th century, they brought Sinter Claes (or Sinterklaas) with them. He was a legendary figure with characteristics similar to St Nicholas, whilst the idea of Father Christmas started in Germany with the Norse god Odin, who would ride an eight-legged horse through the sky and fill children’s boots with treats. And then there was 4th century figure, Saint Nicholas, who originated in Turkey. “There’s a story about a friend of St Nicholas who couldn’t afford his three daughters’ weddings,” explains Patrick. “So, St Nicholas throws a bag of gold through each daughter’s window. However, the youngest daughter has her wedding in the winter. She shuts her window, so he climbs up onto the roof and drops the final bag of gold down the chimney.” Lapland has also played a huge part. Tribes who made their living off reindeer in Northern Lapland would live in yurts with small openings to let in visitors and let out smoke. When people were ill, witch doctors would enter through these chimney-like entrances and deliver gifts of healing. Patrick also explains why our modern day Santa is represented as ‘merry’. “In Lapland you can’t easily make alcohol because of the low temperatures,” explains Patrick. “But they realised that the red and white mushroom is hallucinogenic and if you take it, you get the feeling that you are leaving your body and flying through the air – ho, ho, ho!” The red and white of the mushrooms may very well have triggered the colour scheme of today’s Santa suit, but it was also Tolkien who influenced this change when he posted Christmas letters to his children with illustrations of a red Father Christmas. Then in 1931, Coca-Cola cemented the idea, with a Santa wearing a red top and trousers with a white fur trim to match their logo, which has captured the public’s imagination ever since. > Continued on the next page www.sheffieldvibe.com 23

Wondering where our other traditions come from? Dr Patrick Harding reveals more about our Christmas customs…
Just like the ones I used to know... As we move away from the nativity story and the meaning of Christmas and its customs changes generation by generation, are we losing sight of what it’s all about? “I always say to people, Christmas never stays the same but I think that’s why it has been so successful,” says Patrick. “Even if we are not Christian we can celebrate it.” Patrick’s years of research has done nothing to take the magic out of his family’s Christmases. If anything, it has helped him not to take this often stressful time too seriously. “It should be a time when people relax and enjoy themselves, eat a bit too much, and drink a bit too much, so we try to be laid back about it.” So what is the true meaning of Christmas for Patrick? “Christmas is a time when the difference between the haves and the haves not is very obvious. I think it is a time when one should reflect on the number of people, especially up north, who are in need of food banks. 24 www.sheffieldvibe.com
“I’ve dedicated this book to my fatherin-law, Jack Binney, who was every bit as generous as Father Christmas, and there are a lot of other people who are generous and who give. The thing about St Nicholas is he gave without making a fuss about it. The daughters in the story didn’t know where the gold had come from.” So don’t be a humbug this Christmas. Whatever part or version of the Christmas story you choose to follow and however many years have gone by, the message remains the same; celebrate in style and give as much as you can to others. CHRISTMAS TREES Many German immigrants already put up Christmas trees in Britain and they were used by the royal family 50 years prior to Prince Albert bringing them over from Germany, but after a picture of Queen Victoria, Prince Albert and their children, stood in front of a Christmas tree was published in the Illustrated London News in 1848, the decoration soon became popular throughout British households. WHITE CHRISTMASES Writer Charles Dickens was born into something of a mini ice age in London and his Christmases were always snowy. A Christmas Carol was a huge part of a Victorian Christmas revival and many customs from this novel have survived today.

A Jewellery’s brilliant jeweller and gemmologist, Zoe Lewis, has once again come top of the class, scooping the Deeks Diamond Prize for the best theory exam paper in the prestigious Gem-A Diamond Diploma. If you think that you are suffering from déjà vu don’t worry, Zoe also won two awards last year when studying for the Gem-A Diploma in Gemmology. After also taking home the Anderson medal for the best results in the Gem-A Gemmology Foundation exam in 2017 Zoe is now one of Gem-A’s most highly awarded gemmologists. The award was presented in a ceremony at the Royal Institution by Antiques Roadshow expert Joanna Hardy. The Gem-A Diamond Diploma is the most respected qualification of its type in the world, and this year was sat by hundreds of students from across the globe. The course covers a wide range of topics concerning the formation, chemistry and properties of diamonds, the processes used to mine, cut and

polish them, and techniques to identify natural, synthetic, simulated and treated gems as well as grading the Colour, Clarity and Cut qualities. Rising to the challenge
GAY FLETCHER IS CLOSE TO FINISHING A YEAR OF FUNDRAISING TO RAISE MONEY FOR PROSTATE CANCER UK AFTER LOSING HER BROTHER TO THE DISEASE FIVE YEARS AGO. CHRIS WILSON SPOKE TO HER ABOUT THE CHALLENGES SHE FACED – AND OVERCAME. cott Vessey died of prostate cancer aged 50 in January 2014. But the memory of this loving Sheffield father of three is living on thanks to the charity fund-raising efforts of his sister Gay Fletcher and a determined band of family members and volunteers. Scott was a keen footballer who also gave a huge amount back to his local community with his Scott and Gay coaching and as children managing for Wisewood Juniors FC. A much-loved and larger than life character, Gay is determined that his memory should live on in a positive light. She says: “This year we have been without Scott in our lives for five years and I did not want to remember this milestone with sadness and regret, but with love, hope and memories in my heart, celebrating the wonderful time I had with him, remembering his humour, feisty personality and strength.” In celebration of Scott’s life Gay decided to embark on a series of physical feats, namely 56 half marathons and a separate monthly challenge. Sadly injuries put paid to her mega half marathon challenge but she refused to give up and, with a little help from her friends, has completed a series of monthly challenges. Fund-raising on behalf of Prostate Cancer UK and Marie Curie Cancer started when Scott was still alive when family and friends staged the Hull to Sheffield ‘Tour De Vessey’ (TDV) cycle ride in December 2013, which raised an impressive £12,000. Sadly Scott died the following month

and when one of Gay’s close friends lost her father to the same disease this only hardened her resolve to channel her grief into something positive. “It keeps the memory of Scott alive,” says Gay. “He had two young sons who are 25 and 21 now. My dad had to have his prostate out the year after Scott died Scott with his family
and he’s 77 now, and other males in the family had or have prostate cancer.” This year’s fund-raising efforts have raised a total of £10,644 so far with two more events to go to round up the year – a cycle ride from Glasgow to Edinburgh and back and a 12-hour spin bike ‘spinathon’. The centrepiece of this year’s fundraising challenge was a two-day 120-mile cycle ride from Southport to Sheffield which started on 31 August – which would have been Scott’s 56th birthday – and finished the following day in Sheffield at The Rivelin pub. Gay said: “The most challenging part was cycling with 14 blokes who aren’t great with directions. Then at one stage part of the route was blocked off due to a police incident and we had to find an alternative route. “But it was all part of the adventure and Scott would have laughed at the

thought of some of the group riding, as some had not been on a bike for years and probably won’t again after two days in the saddle. “It was a fantastic effort by all the volunteers and Simon, the landlord at The Rivelin, gave us a massive welcome at the end with food, raffles and an auction of sporting memorabilia.” Another memorable event in Gay’s year of sporting challenges was the Three Dams Challenge family fun day. Based at Bradfield cricket pavilion, those taking part had the option of walking, running or cycling around one, two or all three of the local dams – Agden, Dale Dyke and Dam Flask. It was a fabulous day which was started in style when John Hemmingham from the Sheffield Wednesday band came along and sounded his trumpet to herald the start of the event. With the year of fund-raising events coming to a close Gay, one of the founders of the Strideout Running Group, is planning to take a back seat on the fund-raising front in 2020, although there will be one more memorial event around 31 August to
tie in with Scott’s birthday. But she hopes that alongside the money raised for good causes this year in Scott’s memory, there has also been an increased awareness among men of the need to check themselves for early signs of prostate cancer. Finding the disease at an early stage offers the best hope for living cancerfree for a long time and early warning signs of prostate cancer include burning or pain during urination, loss of bladder control, difficulty urinating or trouble starting and stopping, more trips to the bathroom at night and blood in urine or semen. Gay says: “It’s about men being a little bit more like us women – we are not shy about speaking up and asking the doctor if we don’t feel everything is right. I understand the male thing about being noble and stoic and saying ‘we can cope, we are tough.’ “But sometimes that has a negative side too if you ignore the symptoms. The national Prostate Cancer UK fundraising campaign led by Jeff Stelling has done a lot not just to raise money but to raise awareness, and it’s really important.”

RICHARD ABBEY SPOKE TO LEADING LADY NATALIE CASEY TO FIND OUT MORE. trip to the theatre has become as much a part of the festive season as mulled wine, mince pies and Mariah Carey telling us what she wants for Christmas (it’s you, in case you didn’t’ already know). Sheffield’s theatres do it better than most. Skirting tradition, The Crucible has long tapped into the fun and frivolity of the season with well-loved musicals that leave you tapping your toes well into the night. This year it’s time to roll the dice and fall in love under the bright lights of New York City as Guys and Dolls comes to town. This original production, directed by Robert Hastie and based on the original music and lyrics by Frank Loesser, is a story of men, women, love and great music, all set to the backdrop of 1950s Broadway.

To settle a bet, high-roller Sky Masterson (played by Kadiff Kirwan) pursues straight-laced Sergeant Sarah Brown (Alex Young), only to fall head over heels for his unlikely love. This spectacular musical comedy is the perfect fit for the festive season and features alltime favourite songs Luck Be a Lady, Guys and Dolls and the irresistible Sit Down, You’re Rocking the Boat. Perhaps the most recognisable name appearing on the Crucible stage is Natalie Casey, who will be playing Miss Adelaide, a dancer at the Hot Box Club who has been engaged to lovable rapscallion Nathan Detroit (Martin Marquez) for 14 years. Oldham-born Natalie is largely known for her TV work in Hollyoaks and Two Pints of Lager and a Packet of Crisps but has forged a successful theatre career
over the last decade or so, though this is her first appearance at The Crucible. “My sister [actress Anna-Jane Casey] has, and I’ve been to see her here, but never performed here myself. I’ve done the Lyceum so I had to do The Crucible – I’m one of those people, if there’s two theatres in a city I have to do them both. I’m like Trivial Pursuit, I have to get the full set.” And her first impressions? “It’s been amazing so far. Everybody, from the cast to the cleaners to Rob [Hastie] and all the staff have just been amazing.” It’s high praise indeed from someone who has trod the boards in the likes of Fame at the Shaftesbury Theatre, Legally Blonde at the Savoy Theatre and Abigail’s Party at Menier Chocolate Factory. In fact, throughout our conversation,

Natalie couldn’t speak highly enough of the theatre. I found her engaging, enthusiastic and very down to earth; she clearly loves what she’s doing and is appreciative of having the opportunity to do it. “I still have to pinch myself sometimes,” she says and then, with tongue a little in check, she adds: “I still think I’m going to get found out at some point but I must be doing something right. This is such an amazing production and it’s great to be a part of it.” As one would expect from a musical, Guys and Dolls is an all-singing and all-dancing affair and when I speak to Natalie, rehearsals are in full flow. Matt Flint, who did the choreography for Kiss Me Kate at The Crucible last year, returns and is currently putting the cast through their paces – if last year’s routines are anything to go by, this is going to be another show-stopping affair, although it has not all been plain sailing so far. “Not only do we have to learn the routines,” laughs Natalie, “but there are revolving sections of the stage to contend with as well. I’m still trying to find my equilibrium!” Whilst London-based Natalie was effusive in her praise for The Crucible, she was equally complimentary about the city in general and has quickly made herself at home for what will be the next couple of months. She’ll be away from husband Paul, who also works in the theatre, and her dogs, so it’s important for her to feel comfortable in her new, albeit temporary, surroundings. “When I get back to my digs [that’s a northern saying if ever I heard one!], I make sure I’ve got some food, some scented candles, I can have a bath and relax. We’re lucky with this production as we get Mondays off so I can go home on a Sunday and don’t have to

be back until Tuesday night. We get Christmas off as well which is a bonus.” Looking ahead to the new year, after taking a holiday, Natalie plans to return to her voiceover work [Dinner Date anyone?] and is hopeful of even more theatre work, not that she’s one to plan – “I’ll go where anyone wants me!” she beams. And, of course, if that dream role comes up, she’ll be pushing her way to the front of the queue. “I’d love to do Seven Brides for Seven Brothers,” she concludes. “But it’d have to be the Howard Keel role. I was so in love with him when I was younger. Maybe we could do a new version and switch the roles.” With great songs, a great cast and what are sure to be show-stopping dance routines, it looks like The Crucible has got another hit on its hands. Height of sophistication A VISIT TO TO THE NEW LAURA ASHLEY TEA ROOM LINGERS LONG IN THE MEMORY, WRITES RICHARD ABBEY. f you’ve not yet been to the new Laura Ashley Tea Room at the Mercure Sheffield Kenwood Hall Hotel & Spa, it’s about time you did. The charming space, with stunning views over the gardens, is the height of sophistication. The high ceilings make full use of the stylish Laura Ashley décor which combines duck egg blue walls, teal and gold furnishings and, of course, those lovely crisp white tablecloths that you come to expect for such an occasion. Full height windows flood the space with light making it a delightful setting to partake in the quintessentially English tradition of afternoon tea. The tearoom is located at the far end of the sprawling hotel and has its own dedicated entrance. You can reach it through the main entrance of the hotel but if you’re arriving by car, take an immediate right after entering the Kenwood’s gates and follow the drive round, under the stone archway and you’re there. There’s ample parking at that end of the hotel too. The Laura Ashley Tea Room serves

brunch as well as traditional afternoon and cream teas. My wife and I were definitely in the mood for afternoon tea so, after taking our delightful window table, we settled on a traditional version (£20 per person) as well as a savoury one (£23.50 per person). You can have a glass of prosecco or champagne to supplement your afternoon tea at an extra cost but a selection of loose leaf teas and coffee is included. Both versions of our afternoon tea had a selection of finger sandwiches, on this occasion goats cheese and beetroot, honey roast ham and piccalilli, Scottish smoked salmon and cream cheese, and a Henderson’s rarebit. Moving up a tier, we both had plain and raisin buttermilk scones served with clotted cream and a choice of preserves – strawberry or blackcurrant jam, or lemon curd. Not being a big jam fan I opted for the lemon curd and was glad I did. I’d never thought about having such a combination but it totally worked; it was amazing. My wife is more of a traditionalist and was equally happy with her strawberry jam.
Whilst we’d enjoyed the same offerings so far, it was the top tiers of our afternoon teas that set them apart. My savoury version had a pork pie and Scotch egg (both served warm) as well as a slice of Wensleydale-topped fruit cake. The traditional tea had a tantalising selection of sweet treats, which included chocolate mousse, red velvet cake, strawberry and white chocolate delice and a raspberry macaroon. Very indulgent but very delicious. Washed down with Earl Grey (for me) and English Breakfast (for her) tea, it was a perfect afternoon in a perfect setting. Make your Christmas party about sharing CHRIS PARKER, HEAD CHEF AT WEST 10, TALKS TO US ABOUT PARTY PLANNING, CHRISTMAS COOKING AND THE SECRET TO A SUCCESSFUL EVENT. ow that it’s December, we can all feel a little less guilty about starting Christmas preparations; there’s a nip to the air and the Yuletide playlists don’t feel quite so out of place. But for those of us hosting this year, our minds are already starting to stray towards dinner preparations, and it can all be a little daunting. Many of us still like to keep it traditional with turkey and all the trimmings – but if you’re looking to mix things up a little this Christmas, we’ve asked Westside’s Young Chef of the Year and head chef at West 10, Chris Parker, to give us some advice on how to deal with the most anticipated season of the year.

How has West 10’s food offering changed since you became head chef?
After taking the helm of the West 10 kitchen earlier this year, I have worked on creating a simple but perfect dining experience and have created a new menu concept using classical cooking

with modern techniques and the best possible ingredients. What’s your favourite aspect of Christmas (when it comes to cooking)?
I really enjoy the festive season and being swept up in the merry atmosphere. When it comes to cooking, I just love chipolatas; there are so many different and delicious flavours, and it is a musthave on the Christmas table. What advice would you give for catering at Christmas?
Make it about sharing. Christmas is all about creating magical moments and memories so bringing this into the celebration with the food you serve will make it less stressful for the host. What is the secret to hosting a successful Christmas party?
Planning is absolutely essential. Make sure you have a clear idea of what you would like to achieve from the menu in
advance. If everyone has the same vision from the beginning, it will be easier to achieve your goals – and the event is much more likely to be a resounding success. What’s the best food to serve at a Christmas party?
Putting on a good spread for Christmas can be difficult when catering for large numbers. As it is a celebration and brings people together, I would cook confit turkey croquettes and sage and cranberry sausage rolls because they’re a household favourite and something extra festive. *** Chris shared with us four of his failsafe festive recipes, and while that might seem like a lot to take on, these recipes are quick and easy to follow, and none of them call for long lists of hard to find ingredients. Everything you’ll need can be found at your local supermarket.

Confit turkey croquettes One of the best things about Christmas is leftovers. So, grab a dollop of mashed potatoes and some turkey and transform those leftovers into confit turkey croquettes. You can even use bits of stuffing in the mix if you want to continue with the festive flavours, and if you have leftover cranberry sauce, you can make a great accompanying dip. Make these turkey croquettes for a postChristmas snack or make smaller ones and serve as appetisers. Ingredients For the confit turkey legs: 2 turkey legs, skin on, or as many as you want to cook Olive oil, as needed or 1.5kg duck fat (save from a roast or buy from your local butchers) Salt, a few tbsp, as needed Sugar, a few tbsp, as needed Herbs, fresh, such as thyme and sage, as needed For the croquettes: Shredded turkey meat 1 cup mashed potatoes (seasoned) 1 tbsp parsley (finely chopped) 1/4 tsp black pepper For the coating: 1/2 cup all-purpose flour 2 large eggs 1 tbsp cold water 2 cups fresh breadcrumbs (finely ground) Method: 1. Lay the turkey legs on a thin layer of coarse salt and sugar in a deep non-
metallic, flame-proof dish. Sprinkle with the herbs and more salt to cover lightly. Leave for 1½ hours to draw out the moisture. Wipe off the salt with a cloth but don’t rinse. Discard the salt from the dish, then return the legs to it. 2. Preheat the oven to 110ºC, gas 1. Warm the oil/duck fat gently in a pan, then pour the melted oil/fat over the legs, making sure they’re completely immersed. Cover with baking paper so it touches the oil/fat. Put the dish over a low-medium heat and bring to a simmer, then cook in the oven for about two hours until tender. 3. Remove the dish from the oven and leave the turkey to rest for at least 30 minutes before shredding.
4. Combine the turkey, mashed potatoes, parsley and black pepper. 5. Put the 1/2 cup of flour on a plate. Beat eggs in a bowl with one tablespoon of water. Put the finely ground breadcrumbs in another bowl. 6. Shape croquette mixture into 1 1/2-inch balls (a little smaller if you’re making appetisers). 7. Roll gently in the flour to coat, then in the egg until coated. Coat with the breadcrumbs. 8. Heat oil to about 360ºF. Fry the croquettes in small batches for about 1.52 minutes, depending on size, or until golden brown. Drain on paper towels. 9. Serve with cranberry sauce.
Chorizo chipolatas If you’re on the hunt for alternative Christmas recipes, then these lovely [not so] little chorizo chipolatas are perfect; with their smoky, rich flavour and salty hit – you’ll never buy shop bought pigs in blankets again. If you decide to be generous and share with friends and family members, they’ll certainly be impressed that you’ve tried something a little different. You can make these ahead of when you need them, too. Simply wrap them up and pop them into your baking tray, cover and chill until you’re ready to serve. Aside from serving them up beside a traditional dinner, these chorizo
chipolatas also make fantastic nibbles for parties. Serve them up with a rich tomato dipping sauce or a pot of sweet chilli for guests to snack on – one thing’s for sure however, napkins will be a must. Ingredients 12 cooking chorizo chipolatas from your local butchers 12 slices unsmoked streaky bacon Method 1. Heat the oven to 160ºC, gas 3. 2. Wrap the bacon around the chorizo. 3. Place on a baking sheet and bake for 15/20 minutes or until golden brown.

Pork, sage & cranberry sausage rolls You can’t beat a good homemade sausage roll at Christmas. These ones are full of flavour thanks to lots of fresh herbs and a touch of sweetness from a dollop of cranberry sauce. They can be prepared in advance and cooked off only when you need them. Ingredients: 400g sausage meat from your local butchers 2 tbsp cranberry sauce A few sage leaves, finely chopped Pack ready-rolled puff pastry Plain flour for dusting 1 egg, beaten
Harissa stuffed flat cap mushrooms With fragrant chive and masses of cheese, this easy and delicious harissa stuffed mushrooms recipe uses flat cap mushrooms (but you can use Portobello or chestnut mushrooms instead if you prefer) and makes the perfect starter. Add peppercorns to the filling and a harissa dressing to give an extra kick of flavour. This recipe serves four people and will take around 45 mins to prepare and cook, so it’s a quick little dish to whip up if you’re having company over. If you’re making these stuffed flat cap mushrooms for a party, we’d recommend doubling the recipe, so you have enough for everyone. These stuffed mushrooms are best made on the same day you plan on serving them as they’re best fresh. But as they’re so quick to rustle up, this shouldn’t be a problem. Ingredients: 4 large flat cap mushrooms Béchamel sauce: 40g plain flour 50g butter 600ml whole milk 60g parmesan 5 peppercorns Onion cloute (half an onion studded with cloves and a bay leaf) Harissa dressing: 1 tbsp honey 1 tbsp Dijon mustard 88 www.sheffieldvibe.com
1 tbsp white wine vinegar 100ml olive oil 1 tbsp harissa Method: 1. Gently bring 600ml whole milk to the boil in a small saucepan with a halved onion, studded with one bay leaf and two cloves. Turn off the heat and leave to infuse for five minutes. 2. Meanwhile, drizzle the mushrooms with olive oil and roast at 180ºC, gas 4 for about ten minutes, or until soft. 3. Melt 50g butter in another saucepan, then add 40g plain flour. Stir continuously until a paste forms – this is called a roux. Continue cooking for two minutes. 4. Remove the onion, bay and cloves from the milk and discard. Add the infused milk and parmesan to the roux gradually, stirring as you go, until you get a smooth sauce. Cook for 5-10 minutes, stirring continuously, until the sauce has thickened and season to taste. 5. Remove from the oven and generously fill each mushroom with the mix, dot with butter and finish cooking under the grill until golden and bubbling. 6. Mix the honey, mustard, vinegar and harissa, then slowly add the oil until emulsified. 7. Serve with a scatter of chopped chive, parmesan, a twist of black pepper and a drizzle of harissa dressing.
Method: 1. Preheat the oven to 200°C, gas mark 6. 2. In a bowl, combine the sausage meat, cranberries and sage leaves and set aside. 3. Flour your work surface and lay out the puff pastry sheet in front of you, portrait way up, and cut it in half top to bottom. 4. Halve the sausage mixture and form two long sausages down the middle of each piece of pastry. 5. Starting with the first half, roll the left-hand side of the pastry over the sausage meat to create a tube and repeat the process with the other half of pastry. 6. Place the rolls seam side down and using a very sharp knife, carefully cut each of the rolls into six pieces. Lightly score the top of each sausage roll, brush with the beaten egg, top with sesame seeds and transfer onto greaseproof paper on a baking tray. 7. Pop in the oven and bake for 20-25 minutes until golden brown.

Italian love affair
STRIPPED BACK ZIZZONA IS A SLICE OF PIZZA HEAVEN, WRITES RACHEL MARTIN. here is a love affair going on between pizza and myself – and Zizzona may just be the perfect venue to take this serious affection to the next level. Located on Chesterfield Road, from the outside, it would appear completely unsuspecting as a foodie destination, but inside, its stripped back interior design and huge custom-built pizza oven imported directly from Italy, sets the mood for an authentic lunch and dinner. Beautifully rich wood adorns the walls and is very warm (which is precisely the intention for the atmosphere), while low hanging chrome lighting and vintage-style mosaic tile add a touch of cool retro. The open space and young wait staff provide a relaxed vibe for good times, creating an instant hangout spot for groups of friends looking to grab a slice. Before taking the plunge and diving straight into the main event, there are some appetisers you’ll want to try first – think Italian cured meats, marinated olives and garlic and rosemary pizza bread. Going down the classic route, we selected the Caprese salad (£5.95), because sometimes the simple dishes are the best way to get the measure of an establishment. It passed the test with flying colours, resplendent in its presentation with chunky slices of tomato and beefy buffalo mozzarella from the province of

Salerno, bedecked with basil leaf and sat on a bed of flavour-packed mixed olives flecked with sticky extra virgin olive oil. With a mighty 16 pizzas to choose from, as well as plenty of calzones and other dishes (worthy of note are the calzone pollo and lemon and herb chicken wings), you may need a little longer than usual to choose your main course. Keen to try out one of the doughs, I picked the house-named Zizzona, featuring San Marzano tomato sauce, vegan cheese [substitute for mozzarella fior di latte], Italian fennel sausage, prosciutto cotto, pancetta, red onion and fresh garlic oil (£10.45). Presented on the wood-fired base, it benefited from this additional subtle, nutty flavour and produced a crisp crust that you could really slice in to; the salty, crispy prosciutto and pancetta complemented by the subtle tang of the vegan cheese. My partner was tempted by the pollo ruspante – San Marzano sauce, mozzarella fior di latte, smoked chicken, chorizo, roasted peppers and extra virgin olive oil – before eventually siding with the fresca, served with San Marzano tomato sauce, fresh buffalo mozzarella, Parma ham, cherry tomatoes and wild rocket (£10.45); the oily dressing a decent bedfellow for the parmesan shavings. This was all enjoyed alongside a crisp glass of Healy & Gray sauvignon blanc
(£4.70). The wine list isn’t extensive and only a few are available by the glass, but the selection is well matched with the variety of the menu (bottles start from £12). A dessert shared between two was just enough sweetness to round off the meal. The double-layered tiramisu (£4.45) was an indulgent treat; the mascarpone, marsala and cocoa dessert complemented by a thick layer of cream delivered a delicious coffee kick and was served with a pot of divine pistachio gelato (£3.45). It was too much for one sitting, though, so our waiter whisked the remainders away and insisted on boxing them up for us to take home. As we headed back out onto the street, pizza box in hand and a smile on our faces, it’s safe to say Zizzona definitely hit the spot. Long may the love affair continue. THERE’S SOMETHING WARM AND COMFORTING ABOUT A VISIT TO BROCCO ON THE PARK, WRITES RACHEL MARTIN. AND THAT’S BEFORE YOU GET TO THE FOOD... hat is it about the Scandinavians that allows them to create a warming cosiness out of a blank canvas? A comfortable conviviality that engenders a feeling of contentment and well-being. At Brocco on the Park, the Nordic inspired boutique hotel and Michelin Guide-listed neighbourhood kitchen that couldn’t keep itself out of the press since opening in 2014, a sense of familiarity and comfort hits you hard, until suddenly a rush of warmth fills your extremities. That warmth is what Danish call ‘hygge’ – when the world is reduced to a manageable dining room size. And if you’re going to forget the world for a dining room, you could do a lot worse than Brocco Kitchen, where fresh, seasonal ingredients and sharp Scandi flavours are found on almost every plate. The menu, created by head chef Leslie Buddington, offers “a contemporary take on authentic Nordic cuisine” putting the emphasis on sharing – sharing time, sharing stories, and sharing a collective ‘mmm’ as dishes are tried. The small (and not so small) plates reflect the season using local produce and employ a range of cooking techniques and flavours from owner Tiina Carr’s Finnish roots, and her passion and commitment to down-to-earth eating with flair.

We began with a beautifully and delicately presented selection of lightly spicy seeded crisp bread, hummus, roasted onion and marinated olives (£6). A welcome window into what was to come, we used it to mop up any sauce, jus or crumbs left behind on the other plates, and it proved itself to go with everything. Then we really got into our stride, as our sharing plates started arriving in a thoughtful stream. There was a patience to our meal, a perfect pace, that invited us to relax and slow our conversation from a frantic chatter to an easy flow. Stand out dishes were the beautifully presented monkfish scampi, crispy potatoes, tartae sauce and sherry vinegar (£12), a seemingly humble dish nurtured by Brocco into a quiet showstopper; creamy baked goat’s cheese, sweet potato roasted with thyme, candied walnuts and sweet potato crisps (£12), and beautifully blistered cod roasted with spinach, crispy prosciutto and almond crust (£12). The 3oz beef fillet and braised ox tail (£16) was soft and perfectly flavoured, while the wild mushrooms and crispy onion rings felt like a light accomplice on the side of the heartier red meats, each dish a talking point as we passed them back and forth between us. Dessert came in the form of a
decadent apple and blackberry hazelnut crumble (£8), which is exactly what it says on the tin, with a soft biscuit crumble and vanilla ice cream; a dessert lover’s dream, the varying textures on the plate ensuring that the intense flavour doesn’t become overwhelming. This indulgent dessert was complemented by a comforting cardamom rice pudding with roasted plums (£8). I normally stick to the chocolate option on a menu, but this was, hands down, one of the best desserts I have ever had. We lingered at the table long after our plates were cleared, as the waiters milled around us in no hurry to move us along. But when we did eventually head back into the October evening, we found that our meal at Brocco weaved its way into the conversation for the rest of the week. Air of familiarity A NEW TAKE ON AN OLD FAVOURITE IS PROVING TO BE A BIG HIT, WRITES RACHEL MARTIN – AND DESERVEDLY SO. t’s a risky business moving over two decades of culinary pedigree to a sports club and turning it into a relaxed fine-dining restaurant that opens only Tuesday, Wednesday, Thursday and Friday lunchtime, and offers a monthly ‘pop up’ bistro evening. Yet Omega at Abbeydale’s book is full weeks in advance and as the appetite for locally sourced, hearty cooking grows, one duo is tackling things a little differently. That duo is head chef, Stephen Roebuck and manager, Jamie Christian who established Omega at Abbeydale Park after the closure of Baldwins Omega back in 2017. Joined by head waitress, Angela Jackson, they have created an entirely new identity and with decades of experience between them, it’s no surprise that Omega at Abbeydale offers a dining experience that has quickly re-won the hearts of diners both old and new. The restaurant is intimately spaced and flooded with light, with floor-to-ceiling windows that look on to views of Beauchief Woods and the surrounding sports grounds. We made our way into the bar to a warm welcome from Jamie,

who showed us to a cosy seating area where we lingered with a pre-dinner drink; taking in more of that view before we dined and meandered onto the menu. The choice of dishes did not disappoint, with fresh, seasonal plates playing a large part of the offering and to tempt our tastebuds, we were greeted with warm, fresh baked bread, complemented by salty butter, which was a very positive sign of things to come. My starter of pan-fried mackerel (£8) made me pleased that my flirtation with vegetarianism lasted only one year. The incredibly delicately fish melted on the tongue, flaking with barely any effort and came with sweet roast beetroot and a tangy horseradish crème fraiche. My dining partner, meanwhile, was tempted by the celeriac and potato soup (£6.50); creamy with a deep, earthy flavour. Next, I opted for the stuffed breast of guinea fowl, leg casserole and herb dumpling (£16.50) and it was beyond gorgeous. I’m a big fan of guinea fowl and the leg casserole alongside the plump dumpling and bread sauce was a perfect pairing. I savoured every little bite, as my dining partner thoroughly
enjoyed the prime roast beef with Yorkshire pudding and beef gravy (£19.50); the rich flavours of the meat complimented by the sweet onion sauce. To finish, we shared a lovely plum and pistachio frangipane tart (£5) topped with double cream, and the citrus cheesecake with blueberry compote (£5) was pretty fine, too; light, buttery and disappeared in seconds. There’s a wealth of experience in the cooking – Stephen really knows what he’s doing, and the result is honest, unpretentious, flavoursome food that borders on rustic rather than fine dining. Everything from the bread to the ice cream is made from scratch and it shows. SUSAN BRIFFA ENJOYS A TRUE ITALIAN CULINARY EXPERIENCE AT ROSSI’S. know of no-one who doesn’t enjoy Italian food, and everyone has their favourite dish; be it pasta, pizza, meat or a particular dessert. Most of us can even rustle up a half decent Italian speciality in our own kitchens. But to enjoy the true Italian culinary experience it is a real treat to dine out at an authentic Italian restaurant. It was therefore with joyful anticipation that we spent an evening at Rossi’s. The building itself is a former bank, and the restaurant has added to the grandeur of the architectural design with magnificent baroque style frescoes that transport you to the Sistine Chapel in Rome. There’s even a life-sized replica of The David. Rossi’s is one of the oldest Italian restaurants in Sheffield and has been with the same family for over 15 years. However, in the past year a different branch of the family has taken up the Rossi reigns. Whilst safeguarding a traditional Italian menu, the delightful Petra Tanko and her chef husband, Daniele, bring with them some new flavours and ingredients from their home town of Puglia. A tempting cocktail menu awaits diners and the wine list has exclusively Italian wines. In Petra’s words, “why

would you eat Italian and drink Spanish?”. She’s absolutely right. Even the beers are authentic Italian brews. To start I had Calamari Fritti with home made tartare sauce (£7.95). Calamari has a tendency to go rubbery if overcooked, but this was perfectly tender and was complemented by the picante sauce. My husband opted for Fritelle di Pesce Orientale (£9.95). These homemade fishcakes were incredibly tasty and accompanied by a delicious sweet chilli sauce. It’s always difficult to choose a main course in an Italian restaurant; please tell me I am not alone on this one! Do I go pasta, risotto, pizza, and of the course the Specials looked so good. The table next to us had Calzone (£13.95), and I have to say it looked divine. Other dishes were flying out and I knew I would have been happy with any one of them. I eventually plumped for my favourite Italian dish; Lasagne (£11.95). It didn’t disappoint. The knife sliced through the pasta and meat layers, causing the tomato and béchamel sauces to pour forth. Although a sizeable portion, I ate every morsel in record time. I then moved on to my husband’s main, much to his annoyance. He had chosen Vitello Verde (£18.90) from the Specials menu. The veal was beautifully tender and was
cooked in a cream and wine sauce, topped with cheese and spinach. Truly delicious. The sides included roast potatoes, cauliflower cheese and yummy carrots cooked using a secret family recipe. I had no room for dessert, really I didn’t. Okay then, we’ll share one. We had the Nocciolino (£5.50); hazelnut ice cream with a shot of espresso and whole hazelnuts. Sharing a dessert with my husband usually results in a fierce spoon duel. However, due to both the portion size and the utter deliciousness of the flavours, we were both blissfully sated. We saw couples in love, a group of work colleagues, families and a party celebrating a birthday. If you enjoy authentic Italian cuisine, Rossi’s is the place for you. Eager to please
WITH FLAVOURSOME FOOD AND A FRIENDLY, FAMILY ATMOSPHERE, CROSSPOOL’S LATEST ADDITION HAS MADE A PROMISING START, WRITES RICHARD ABBEY. aranasi Inn might be the new kid on the block – it opened in Crosspool a few months ago – but it’s backed by decades of experience. Proprietors Nilendu and Anna Das have been in the business for ten years while Nilendu’s father, who had the muchloved Ambar on Ecclesall Road, has over 30 years behind him. It’s still very much a family business and the warm family welcome puts you at ease as soon as you walk through the door. Nilendu and his staff are friendly, knowledgeable and eager to please. The restaurant, for those with a long enough memory, occupies the old Thyme building. It’s a decent-sized space that has been divided into three with a bar/waiting area and two dining rooms. The décor is traditional and comfortable – think statues of Ganesh and paintings of dreamy Indian landscapes – and it works. We felt right at home. A couple of poppadoms (80p each) and an excellent pickle tray (£3.50) gave us food for thought but with a large menu drawing inspiration from the 22

regions of India, we were grateful for some guidance from manager Ansar. He asked us what we would normally choose and then suggested some alternative dishes for us to try. To start, a mixed kebab (£5.80) – chicken tikka, onion bhaji and sheek kebab – was familiar and tasty but we particularly enjoyed the Varanasi aloo chaat (£4). This combination of spiced potatoes, light fried onions and yoghurt sauce, served in a puffed puri pastry, was just delicious. To follow, we shared a lamb rezela (£10.50), chicken balti baruchi (£9.75) and Ansar also brought us a side of saag chana aloo (£5.50) to try. A pilau rice (£3) and garlic naan bread (£3.60) completed the picture. Where to start? Well, the sauce, in particular, served with the medium-hot lamb rezela, made up of keema, green pepper and tomato, ticked all the boxes for flavour; the meat was deliciously tender too. The potatoes, onions, tomatoes and peppers that comprised the balti baruchi
were plentiful while the topping of fried onions added extra zing. We really enjoyed the side of potatoes, spinach and chickpeas too and the naan was excellent, not too doughy and packed with garlicky flavour. Portion sizes definitely leaned towards the larger side and unfortunately we couldn’t finish everything. The good thing was, Ansar had our leftovers packaged up and we gratefully finished it off the day after – it tasted just as good. heffield specialist engineering group SCX has lifted its most prestigious prize in its 47-year
history. It picked up a Lloyds Bank National Business Award for Innovation at a glittering ceremony in London. SCX specialises in lifting solutions and large moving structures, and the honour follows pioneering work on the world’s first dividing retractable football pitch at Tottenham Hotspur’s new stadium and two retractable roofs for the All England Lawn Tennis Club at Wimbledon. The company, based in Wincobank, Sheffield, is also renowned for its bespoke mechanical handling solutions and electrical control systems in safetycritical sectors such as nuclear, defence and aerospace. Nine hundred delegates from some of the country’s most successful businesses, public sector bodies, charities and educational establishments attended the Lloyds Bank National Business Awards ceremony. We are looking to expand our work both in the UK and in new overseas markets, and already have numerous projects in the pipeline. “Winning this award underlines that we’re more than ready to take that step.” The prize was handed to SCX by BBC News presenter Simon McCoy, accompanied by King’s College director Julie Devonshire OBE, at the Grosvenor House Hotel on Park Lane. The company’s bespoke engineering arm, SCX Special Projects, delivered two international-standard contracts this year. Earlier in 2019 it revealed the world’s first dividing retractable grass pitch for Tottenham Hotspur, which sits on rails above an artificial surface for NFL
American football and other events. It also designed, engineered and installed a retractable roof for Wimbledon No.1 Court – ten years after its similar roof for Centre Court – to guarantee play whatever the weather. Meanwhile, in other sectors, the company has fitted cranes to the Royal Navy’s latest aircraft carriers, designed decommissioning cranes for the Dounreay nuclear power plant and developed robotic lifting platforms for London’s Crossrail project. The SCX group continues to grow its international reputation, especially through its SCX Special Projects division, which is seeing growing overseas demand for its ground-breaking techniques. The group has over 160 employees across three divisions – SCX Special Projects, crane servicing and repair firm Street CraneXpress and Burnand XH, which specialises in electronic, electrical, electromechanical and pneumatic control components.

Veterans wanted The search is on for five British Armed Forces veterans from Sheffield who would enjoy a Christmas meal with good companions at the Old Horns Inn in High Bradfield. Paul and Susan Powers, the owners of Powers Martial Arts/Personal Trainers Inc., want the veterans to join them at their staff Christmas meal on Sunday 1 December. Paul says: “My father was in the Green Howards (also known as the Yorkshire Regiment). Unfortunately many do not realise the implications when it comes to their property, children and inheritance. Cohabiting couples do not have the same rights as married couples. What a partner would receive in the event of your death depends upon how you own your assets. Sometimes how an asset is legally owned can affect how it passes on in the event of your death, For example, your house, if it is owned as joint tenants, it will pass automatically to the surviving owner. If you have children, you may wish to make sure that they inherit from your estate. But you have to balance out their interests along with those of your partner. If you died without a Will, the law does not recognise co-habiting partners and your partner would not have an automatic right to inherit from your estate. If you die, your partner may be able to make a claim against your estate and if you have not made sufficient provision for them, they may be able to show that they were financially dependent upon you. For example, if you are both living in your property. You may need to consider inheritance tax because unlike married couples, co-habiting partners do not enjoy the same tax exemptions which can mean a 40 per cent tax bill. There is no legal duty between co-habiting couples to support each other, but there are circumstances in which you can protect your position and that of your partner and children. You should always get advice from a specialist solicitor to explore the options and consider how you own your assets and make your Will.

The end of 2019 is nearly here and what a year it has been. Whether you’re looking to set up a pension, save money on annual management charges or to reduce fees on expensive pension plans, review your current pension arrangements to see if they’re likely to help you achieve your retirement goals. 3. When was the last time you reviewed your investments? Markets have been volatile over the last 12 months. With fast changing political events affecting markets, it‘s imperative that your portfolio and pensions are strategically invested to profit from uncertainty and protect yourself from market shocks. 4. Are you prepared for the future? Safeguard against unexpected future events

Have you got a will that properly deals with your business assets and will ensure that your business will survive when you die? With over 400,000 SMEs in Yorkshire and Derbyshire, and around two-thirds of UK adults with no will, a lot of business owners are leaving their fellow business partners and family vulnerable and are risking loss of business continuity. Even if you have already made a will, are you sure it covers arrangements for your business and its assets? Have you planned what will happen to your business assets/shares? Who will they pass to? Do any of your other business agreements conflict with your will? Will inheritance tax be payable on your business assets? You can only have one valid will, but, if you own a business, making sure it is a business will that covers these issues is vital. You can leave shares or business interests and assets to whomever you wish, but you need to take care that the proposed beneficiary of those business assets would actually want them, know what to do with them and how to do it. You may not wish to leave such assets to your family if they don’t want to, or can’t continue to, run and manage your

business. If you want your company to continue after your death, you need to ensure that it is left in the hands of someone who can maintain control. You need to ensure that any bequests in your will don’t conflict with the provisions made in other business agreements, such as shareholder agreements, partnership agreements or articles of association. Such agreements might limit how your business can be managed after your death, and how your business interests can be inherited, so you need to take expert legal advice to avoid disagreements after your death. Inheritance tax is an issue that concerns many business owners, but there are ways of ensuring that it is minimised. Some business assets are subject to an IHT relief, such as business property relief (BPR), which could mean that they do not attract IHT, no matter who they are passed on to as long as they remain business assets. You can also gift business assets that attract BPR to anyone during your lifetime without them being subject to IHT. Issues relating to what happens to business assets that are sold after they have been inherited are complex and can lead to subsequent beneficiaries of an estate having to pay substantial amounts of IHT, so proper legal advice is vital. You can leave your business assets in a
trust if you want the people to whom they are left, such as family members, to maintain an interest in the business, and its value, but not to have to deal with the everyday running of it. A trust can also relieve any issues where there might be conflict between a person’s will and other business agreements. Using business trusts can also eliminate liability for IHT, as long as they are drafted properly so again, you should take advice from a solicitor who is experienced in this field. On 10 October the teams celebrated a double triumph after beating some tough competition at the Yorkshire Legal Awards to win Family Team of the Year and being ranked in Chambers and Partners – all on the same day. The Yorkshire Legal Awards was attended by Zoe Round, Maisie Huynh and Roopen Kalirai who were delighted to accept the award for Family Law Team of the year. The team was recognised as “being highly acclaimed by their clients both for their breadth of legal knowledge but also for showing a caring attitude”. At the ceremony Zoe Round described the win as phenomenal and praised the team for their contribution to the win; the award was dedicated to the leadership of Martin Loxley who had successfully led the team for a number of years. Irwin Mitchell was also shortlisted in six other categories including residential property, employment and private client. The much awaited Chambers and Partners 2020 publication ranked the Sheffield family law team as the only family law team in Band 1 for Family Law in Sheffield and the surrounding area and the Leeds team in Band 2. The Chambers and Partners entry noted that the team is “highly respected for the breadth of its expertise and its handling of high-value and complex matters”. The team was highly praised for its client care with one interviewee commenting that the team “consistently endeavour to

Associate Solicitor Maisie Huynh, who is based in Sheffield but also works in Leeds, was highlighted as one of the Associates to Watch with sources saying “She often deals with more complex issues and has a strong understanding of the financial implications of a situation”. The team had the most number of notable practitioners recommended in the directory; with Maisie Huynh being the only Associate to Watch for family law in Sheffield. Zoe Round is keen to highlight that the successes of the Legal 500 and Chambers and Partners rankings were based on the successes of the team as a whole: “we have a one team mentality and our breadth of expertise
means that we are able to offer the best service to all clients at every level”. Behind the scenes the teams have gone from strength to strength. Scott Halliday was promoted to Associate in October 2019. In August trainee solicitor Edward Allan completed his training contract with the firm and has been retained as part of the Sheffield family law team. Olivia Green and Ellie Fairhurst joined the teams in Leeds and Sheffield as part of the firm’s Apprentice Paralegal programme; and in October, Clodie Allott, a paralegal in Sheffield, was offered a training contract with the firm.
