Welcome back! VISITORS ARE RETURNING TO FLAMINGO LAND RESORT YORKSHIRE – AND THERE’S MUCH MORE TO COME. ith white-knuckle thrills, rides for the whole family and one of the UK’s most visited zoos, Flamingo Land Resort Yorkshire is an ideal destination for a fun-packed trip. The theme park and resort, near Malton, has re-opened for the summer season – and there’s much more to come in the months ahead. 2020 has so far has been a rollercoaster of emotions (excuse the pun) for the team at Flamingo Land. After a record year in 2019, which saw them increase turnover to £32million, they invested in one of the biggest rollercoasters in the world and embarked on a new hotel project. But the best-laid plans were brought to halt when the global Covid19 pandemic took hold. Now, following the Government’s announcement that theme parks and holiday resorts could open from 4 July, Flamingo Land is open to visitors, although there are some limitations in place.

W

“It was our aim to open well, safely and not quickly,” said owner Gordon Gibb. “It is fair to say that we have achieved that. As numbers increase we will continue to

open up to full operation. “For the safety of our guests and team members we have completed thorough risk assessments for each area of our

business and have implemented safety measures accordingly around the resort. “To ensure guests are able to comply with social distancing advice we have introduced a limited capacity and require all guests to book their visit online in advance. During your visit we ask all guests to adhere to any advice or guidance that is given. We still have much to offer for a great Yorkshire day out or holiday.” If you are looking for white-knuckle thrills, there is a sensational collection of rides. These include rollercoaster Hero, which puts visitors in a superhero flying position before swooping them around a

track. In addition there is a great choice of junior and family rides. All the attractions in Dino-Stone Park have a dinosaur theme. Soar 45 metres into the air on the Pterodactyl swing, spin on the family coaster Twistosaurus and pedal on Cyclosaur. See animatronic dinosaurs, life-size dino skeletons and search for dinosaur bones in the Dino Dig sand. Younger guests will love meeting Peter Rabbit at Flamingo Land.Visit the Secret Tree House and hop along to Jeremy Fisher’s musical pond to explore giant instruments and learn about sounds from the giant lily pads. Fans of all ages will love exploring Lily Bobtail’s Nature Discovery where you can crawl through tunnels and find creepy crawly creatures. But visitors wil have to wait until 2021 to ride the new ‘coaster, which manufactured in Switzerland. It looks to be a monster. “The new ride is a Generation 2, teninversion coaster which should have been ready for mid to late-summer. It will blow you away. We haven’t revealed the name of it yet as we’re working on a joint venture with a well-known brand. All I can say is watch this space!” The hotel project has also been put on hold. Plans include high quality suites and rooms set amongst landscaped gardens with an outdoor heated swimming pool and hot tub. This is most

They ask for your cooperation and that you follow any Government safety advice at all times including: • Wash your hands often and avoid touching your face • Maintain distance from others • Avoid touching surfaces • If you’re sick, neither you nor members of your household should visit. likely to be ready for Easter 2021. In the meantime, the self-catering, camping and touring facilities at Flamingo Land have re-opened, meaning you can extend your visit from a day trip to a short break. Alongside the rides and attractions the zoo area of Flamingo Land has reopened, which includes a new rhino and cheetah exhibit – a first in the UK. The park’s red pandas have a newborn too whom you’ll be able to meet on the day of your visit. Many of the animal carers, and some key trades, were retained throughout the lockdown period to care for Flamingo Land’s animal collection, which includes 140 species of reptiles, mammals and birds. A variety of keeper talks and a sea lion and bird shows are included within your admission. Furthermore, the Jolly Sailor 2 Go and Muddy Duck Café (Costa) have also reopened but on a takeaway basis and any food or drink must be consumed outside. There’s plenty of seating throughout the park to sit and enjoy refreshments. “We have missed our guests and look forward to welcoming them back to the resort and helping us to keep developing and improving year after year,” concluded Gordon. R e d i s cov e r YO U R L e e d s One of the plus points of the situation we’re all in is that many people have enjoyed experiencing their own local area, discovering hidden gems and new favourites.

Millennium Square or Victoria Gardens.

So as restrictions start to ease, why not become a tourist in your own city? This is a time to enjoy what’s on your doorstep, rediscover Leeds and take a fresh look at what many people enjoy seeing on their first visit! Leeds has an amazing blend of old and new architectural styles. Did you know, our exquisite Victorian arcades rival those in Milan and Budapest? Each has a unique atmosphere and identity; from the magnificent Victoria Quarter with its ornate marble and mosaics, to the Grand Arcade, one of the oldest arcades in the city and featuring an amazing Potts Clock with Robin Hood and his merry men taking a bow every hour. How long is it since you’ve wandered into Leeds Kirkgate Market; one of the largest indoor markets in Europe? It’s a shoppers’ paradise – on your doorstep! Our market is full of history

and character, with everything from fresh food and flowers, to hardware and haberdashery. The Market Kitchen has a vibrant mix of street food and is the perfect place to pick up lunch or a tasty treat. But it’s the friendly faces of the traders and the vibrant atmosphere that make it one of a kind. You don’t have to venture far to immerse yourself in more of Leeds’ history; the Leeds Corn Exchange is Grade 1 listed and is one the finest in the city. Look out for the intricate detail and sheafs of corn set within the huge domed roof. It’s also home to a number of wonderful independents, and the perfect place to start exploring the shopping in Leeds. Whilst you’re taking in the architectural delights of your fantastic city there are further notable buildings you don’t want to miss, look out for Leeds Town Hall, Leeds Civic Hall, Leeds Cathedral and City Square – the list goes on! To complement the fascinating buildings, there are plenty of open spaces to relax or picnic in; enjoy greenery in Park Square, St John’s Gardens or Queens Square, watch the world go by on the waterfront, or take in the stunning surrounding buildings from the benches at

Did you know that Leeds has striking street art throughout the city? Be sure to take a look as you explore, or follow our street art trail and encounter all the distinctive designs. A walk along Leeds’ waterfront provides a glimpse into the city’s industrial past, as historic mills rub shoulders with modern structures like the Royal Armouries, with wildlife along the way. Keep your eyes open for the unique Leeds Owls, download the Leeds Owl Trail map and uncover the history of the city’s owls. After all this exploring you’ll be sure to have worked up an appetite. The food and drink scene in Leeds is some of the best in the country and many bars and restaurants are open once again to welcome you back. And one of the brilliant features of Leeds is that you can walk everywhere and it’s safe and friendly. We’re working hard to make sure our public spaces are safe and ready for you to visit. You’ll find hand sanitising stations in all major public areas and key information on social distancing. To help you plan your journey, our website provides up-to-date information about bus, rail and road links to Leeds, as well as details of the many car parks within the city centre. Check out our A-Z Guide of visiting Leeds as restrictions start to lift – so you know what to expect. Why not #RediscoverLeeds this summer; you’ll find a warm welcome waiting for you.

Yorkshire Coast The Yorkshire coastline encompasses some of the UK’s most rugged and charming countryside, from tiny fishing villages clinging to rocky cliffs to glorious stretches of white sand and family-friendly seaside resorts, with everything from windswept abbeys to the county’s best fish and chips. Nothing if not diverse, expect awesome beaches, chilly feet if you brave the sea and a chance to lose yourself in this naturally beautiful destination. ROBIN HOOD’S BAY Forget the deckchairs and dodgems; this is Yorkshire’s coastline at its most raw and elemental. Here, brooding cliffs tower over a huddle of red roofed former fishing cottages that spill right down to the edge of the sea, creating a ‘lost in time’ getaway for anyone who loves unusual architecture and breathtaking scenery. Why not join them for a bracing walk or a fireside drink in a cosy inn? WHITBY From the atmospheric Abbey towering over winding cobbled streets to the windswept beach and working harbour, Whitby is not your traditional coastal town. An Enjoy England award winner for Best Day Out, be sure to sample Yorkshire’s best fish and chips, discover ancient vampire legends and sit under the whale bone arch, watching the brightly coloured fishing vessels passing by.

RUNSWICK BAY With its sweeping, sheltered bay and charming red roofed cottages, Runswick Bay is one of the Yorkshire Coast’s prettiest destinations. The sandy beach, which once provided anchorage for brightly coloured fishing boats, is now a family favourite for rock pooling, fossil hunting and coastal walks, where you can admire the breathtaking sea views. BRIDLINGTON If you’re looking for a leisurely day out, how about visiting the elegant promenades of bright and breezy Bridlington? With its sandy beaches, award-winning promenades and historic harbour, this is a hidden seaside gem awash with kitsch traditional entertainment. Visit the funfair, amusements and donkey rides on the beach for a traditional British day out with seaside in spades. FILEY This traditional seaside resort, with its sandy beach, historic promenade, fantastic fish and chips and gentle pace of life, is the perfect place to visit for a relaxing and nostalgic day out. FLAMBOROUGH Marked by a stretch of rugged white cliffs surrounding a small village, Flamborough Head is an outdoor lover’s paradise. The

coastline is a great base for bird watching, hiking along windswept paths and sea canoeing around the bay - but only for the experienced outdoor pursuits enthusiast! With a scenic nature reserve and two ancient lighthouses nearby, this Special Area of Conservation is a haven for anyone looking to explore the Yorkshire Coast at its most wild and untamed. RAVENSCAR Across the bay from Robin Hood’s Bay the view is spectacular and on the southernmost headland is Ravenscar, once the vantage point used by the Romans as a signal station. OUT & ABOUT

Yorkshire Wildlife Park

WE SPEAK TO CHERYL WILLIAMS, CHIEF EXECUTIVE AT YORKSHIRE WILDLIFE PARK, ABOUT THE RE-OPENING OF THE POPULAR ATTRACTION . How have things gone since you reopened?

Everything has gone very well – we have been well supported and our visitors are very forgiving that everything isn’t quite the same due to the restrictions. Parts of the park have opened up gradually as other restrictions were lifted, for example we are just starting now to open up some of the cafes and play areas. Advance booking has been very helpful – with everyone having to book online and in advance, we know exactly how many people we are expecting every day! What changes have you had to make to the park?

We had to put in a lot of thought into how we would open the park. Social distancing was important so we had to calculate how many people we could allow in comfortably. We are lucky that we have a lot of wide pathways, so with lots of signage we were able to create a good visitor journey that didn’t spoil the experience too much, but there are a couple of one-way pathways now such as the Tiger Walkway. There are enhanced cleaning protocols everywhere, the toilets are carefully managed and to start with we only had a takeaway food offer, but we are just starting to open up some of the seated areas now and reopen the

Safari Café. It is quite staff intensive as we have to have people out at pinch points around the park to help people navigate their way safely. Do you anticipate further changes in coming weeks/months?

We are hoping to open up the play areas soon and also the animal walkthrough areas, which will also increase the space that people have. We can’t do ranger talks at the moment as it encourages people to group together so hopefully they will be able to make a comeback in some form soon. We are opening the park earlier (at 9am) to spread the visitors over the day and in August we will probably introduce opening into the evening as well. When do you think the park will be back to ‘normal’ (if that’s possible)?

I think we have been so far from normal that no one would dare to second guess at the moment. Especially with the fears of local lockdowns, we just have to accept every day as it comes. We really hope that by the autumn, the experience we can offer will be a lot closer to the YWP that everyone recognises, but we have already been able to open up a lot more of the park and its facilities that we thought we were going to be able to a few weeks ago.

How do you see things progressing for YWP?

The park has exciting plans for the future and we are continuing to work on the expansion site. We are grateful that our amazing animal rangers and some of the other staff have been able to work throughout the crisis looking after the animals and maintaining the park. We make an important contribution to the local economy and with the support of our visitors, we will continue to grow and provide important employment for local people. What’s the biggest challenge facing you?

The biggest challenge is probably trying to second guess the future, let’s hope for continuing improvement in the situation and that the economy recovers. The current restrictions on visitor numbers means that we won’t be able to make up the loss of income that we would have had from March to June so the rest of the year will certainly be challenging for us. The Will to beat cancer CANCER RESEARCH UK’S FREE WILL SERVICE CAN HELP YOU PLAN FOR THE FUTURE.

hese difficult times are causing a great deal of uncertainty, leaving many of us feeling like it’s more important than ever to plan for the future. According to recent Kings Court Trust research, carried out before the COVID19 outbreak, nearly half of all UK adults do not have a Will. Cancer Research UK, however, reports that in recent months there has been a huge increase in the use of its Free Will Service, with more people looking for help and guidance on how to make or update their Wills. It’s easy to put off writing a Will. Many people assume it’s difficult, timeconsuming and costly, but the task of making a simple Will can take as little as 15 minutes, and many charities like Cancer Research UK offer an easy-touse Free Will Service. This allows anyone over the age of 18 to write a simple Will free of charge, with the option to leave a gift to the charity if they so wish. Writing a Will can bring enormous peace of mind and comfort in knowing that your final wishes will be carried out and that family, friends and your chosen beneficiaries will be protected and provided for. Clare Moore, Director of Legacies at

“Anyone over the age of 18 can write a simple Will free of charge, with the option to leave a gift to the charity if they so wish.” Cancer Research UK, said: “It is such an unsettling time for us all. During the COVID-19 pandemic we have seen an increased level of interest in our Free Will Service so, in response, we want as many people as possible to know that they can come to us for advice and use the service should they decide to. “Our Free Will Service is provided without obligation, but many people do choose to leave a legacy gift to Cancer Research UK - and now, more than ever, we are extremely grateful for their support in helping us to continue our life-saving research.” For some people leaving a share of their estate – their money, property or possessions – to charity can be a positive way of creating a lasting legacy and helping to contribute to future progress. For example, over the last few years gifts in Wills have funded over a third of Cancer Research UK’s research. Clare Moore added: "The generosity of our supporters is helping to beat cancer for future generations. COVID-19

has slowed us down. But we will never stop. “One in two people will be diagnosed with cancer in their lifetime. That’s why we are absolutely determined to continue our life-saving research and are working hard to ensure that people affected by cancer get the support and information they need during the challenging months ahead. Together, we will beat cancer.” The Cancer Research UK Free Will Service allows people aged over 18 to make or update a simple Will at no cost over the phone, online or through one of the charity’s solicitor partners. Gateways launches sixth form scholarships

New principal The Board of Queen Ethelburga’s Collegiate are delighted to announce that Mr Jeff Smith will succeed Mr Steven Jandrell as Principal of the Collegiate, with effect from August 2020. Amy Martin, Chair of the Board, said of the appointment: “Throughout the recruitment process, it was incredibly important to us to ensure that the huge amount of experience, skills and knowledge we already have in our strategic team was complemented by any new appointment. I believe we have achieved this in appointing Jeff, to lead the team with vision and ambition, in creating the next exciting chapter of the QE story. “Jeff comes with an exceptional track record in successfully leading schools, improving and sustaining high performance. With a strong focus on teaching excellence, pastoral support and the continuing professional development of staff, we are confident that he will truly embody all our QE Community Values.” On his appointment, Jeff said: “It is a great honour to take over from Steven Jandrell who has led the Collegiate as a dedicated and visionary Principal for the past fourteen years, having spent 25 years of his teaching career at QE. “Starting the next academic year as the new Principal of QE will certainly be a very different experience to that which I had envisioned when I was first appointed. The challenges facing schools across the UK in preparing for a full reopening in September - as we’ve heard said many times already - are unprecedented. With key worker and Forces students staying on campus throughout lockdown, and a successful return of our Reception,Year 1 and Year 6 cohort in early June, we have used this experience to ensure we have adaptable plans in place for welcoming all our students back at the start of term. “Our priorities for the next year and beyond build on QE’s success story to date. We know that the key to academic excellence is the consistency in quality of teaching; therefore, this will always be the focus for the Collegiate. “Continuous improvement is also vital. We will be reflecting on everything we do and will always seek feedback from our students, parents and teachers so that we understand our community needs and find ways to meet them.We will find ways to broaden and improve the curriculum and enrichment opportunities we offer and take every opportunity to extend students learning beyond the restraints of the classroom. Through our academic, pastoral and enrichment programmes, we will support students in developing personal qualities such as leadership, resilience, critical thinking and responsibility. 28 Northside | www.northsidemagazine.co.uk

As a thank you to key workers, Gateways School are offering a limited number of Foundation Scholarships to children of key workers who will be starting sixth form in September 2020. The two-year means-tested scholarships are aimed at daughters of key workers (across all sectors) wanting to study A Levels from September 2020. Gateway’s sixth form is a single-sex girls only environment, known for its small class sizes and personalised education. With the average A-Level class sizes of around just four, every pupil receives individual attention throughout the duration of their course. The pupils also benefit from many leadership opportunities as the role models of the school and they have the opportunity to be involved in organising whole school events and taking part in many extracurricular activities. Headmistress Dr Tracy Johnson comments: “Throughout these very strange times, Gateways has remained open to our current pupils whose parents are key workers and we have therefore been particularly mindful of everything that this group of society has done for us all recently. “From our emergency services, food delivery personnel, supermarket front line staff, postal workers and through of course to everyone involved in any way with the NHS to name just a few, Gateways wants to say ‘thank you’. “By offering a world class sixth form education to the daughters of these special individuals we hope to give something back to this amazing group of people. To welcome their daughters into the sixth form at Gateways and to see them taking advantage of all that a Gateways education can do for them would be an enormous privilege for us all.” To register your interest, visit http://www.gatewaysschool.co.uk/news/sixth-formscholarship-offer or call Admissions on 0113 288 6345.

IN BRIEF

New look for Aldwark Manor

New secondary school set to open Having been identified as an area of need for additional secondary school places, East Leeds will see the opening of a brand new secondary school, Trinity Academy Leeds in 2021. Following a decision by Leeds City Council earlier this year, the school will be set up by and be part of the thriving Halifax-based Trinity Multi-Academy Trust, bringing a fresh approach to secondary education in the East Leeds area. With the 31 October deadline for parental decisions on secondary school places being not too far ahead, the trust wants to share its vision with the families of children starting Year 7 from September 2021. The school will have a strong focus on maths, literacy and the arts. It is hoped that roadshow style information events can be held in the local area to give parents and children transitioning from primary schools an insight into what they can expect from Trinity Academy Leeds, which will offer 240 student places for Year 7. Trinity Multi-Academy Trust has an excellent track record in transforming student outcomes and creating aspiration within its school communities. The lead trust school Trinity Academy Halifax is rated Ofsted outstanding, and Cathedral Academy in Wakefield was awarded TES Secondary School of the Year 2019. CEO Michael Gosling said of the development, “As a trust we are incredibly excited to be opening a new school in East Leeds. We’re committed to raising the bar for local education. Trinity Academy Leeds will be a school for all, delivering exceptional levels of progress and attainment for every student. “We are confident that Trinity Academy Leeds will be the school of choice for the growing local community, a school that parents are confident to send their children to, and a school that their children are proud to belong to.” Principal Designate for Trinity Academy Leeds, Kat Cafferky added, “Drawing on my experience from the outstanding provision and success of Cathedral Academy’s focus on the Arts, I know that this extra dimension combined with excellent education, pastoral care and our approach to the holistic development of each young person, will make a huge difference to student outcomes whatever their starting point.” A consultation process is ongoing where views are being sought from the local community. Have your say on the school website at https://barnsley.trinitymat.org.

Aldwark Manor Hotel near York is returning to you bigger and better than ever. The multimillion pound transformation taking place is breathtaking. Pandemic partnership Independent hospitals in Leeds have been taking some of the pressure off the NHS during the Covid-19 pandemic by providing additional capacity to treat patients. The Spire and Nuffield Health hospitals in Leeds have been supporting Leeds Teaching Hospitals NHS Trust by treating a range of patients in specialties such as stroke rehabilitation, neurosurgery, cardiology, vascular, ophthalmology and general surgery. The partnership between LTHT and the two hospitals was made possible under a national agreement, which the independent sector signed to make its staff, equipment and facilities available to the NHS to help alleviate the pressure caused by the pandemic. Initially the Spire and Nuffield Health hospitals were treating in the region of 200 in-patients and out-patients per week and the aim during June has also been to treat 200 surgical patients with that target likely to be exceeded. They have been taking medical patients from Leeds’s main hospitals, helping to free up beds for Covid-19 patients. The Trust is now sending surgical patients to the Nuffield Health and Spire hospitals to help increase capacity further and start to work on the backlog of patient cases built up during Covid-19. Helen Atkinson, Hospital Director at Spire Leeds, said: “The main focus in recent weeks has quite rightly been to tackle the pandemic, but it’s vital that we don’t forget about those patients in Leeds and West Yorkshire who need treatment for cancer and other urgent conditions. We’re really pleased to have been able to play our part and provide a safe environment for those patients to receive the care they need. “I am very proud to be supporting the NHS during this unprecedented global health emergency and pay tribute to the dedication of Spire and NHS colleagues who have come together to provide high quality care in such challenging circumstances.” Northside | www.northsidemagazine.co.uk 29

The principles of preparing for a whole school reopening THE NEW PRINCIPAL OF QUEEN ETHELBURGA’S TALKS ABOUT PLANNING FOR A SEPTEMBER REOPENING, FOR ALL AGE GROUPS, AND HIS VISION FOR THE COLLEGIATE. tarting the next academic year as the new Principal of Queen Ethelburga’s Collegiate will be a very different experience to that which I had envisioned when I was first appointed. Having been in education over 30 years, 17 of these as the head of large UK and international independent schools, I’ve seen some change in practice. The challenges facing schools across the UK in preparing for full reopening in September – as we’ve heard said many times already –are unprecedented. With key worker and Forces boarding students staying on campus throughout lockdown, and a successful welcoming of our Reception,Year 1 and Year 6 cohort in early June, we now have plenty of experience of operating in a controlled lockdown. QE has complied with, and gone beyond, the measures required by government and we have committed ourselves to the BSA School Safe Charter. We are using this experience to ensure we have adaptable plans in place, as we welcome students back at the start of term. We have issued guidance to our students and parents on the measures we are taking to keep the campus as safe as possible, whilst maintaining the welcoming and happy atmosphere that they know and love. Our location is ideal. Queen Ethelburga’s benefits from a highly secure, rural campus, set in the stunning North Yorkshire countryside. It is looking increasingly likely that

school will be reopening in September without the social distance restrictions we have now, however, we are still planning to bring our boarders back two weeks earlier in August, so that we can offer quarantine if necessary, but also to offer a curriculum preparation programme for the year ahead. Our priorities for the next year build on QE’s success story to date. We know

Collegiate Principal Jeff Smith

that the key to academic excellence is the consistency in quality of teaching, therefore this will always be the focus for the Collegiate. Continuous improvement is also key. We will be reflecting on everything we do and will always seek feedback from our students, parents and teachers so that we understand our community needs and find ways to meet them. We will continue to find ways to broaden and improve the curriculum and enrichment opportunities we offer, and extend students learning beyond the restraints of the classroom. We will use our recent online teaching and learning experience to develop our IT strategy, taking the opportunity to develop elearning in an impactful way. Through our academic, pastoral and enrichment programmes, we will continue to develop the personal qualities of our students, such as leadership, resilience, critical thinking and responsibility. As always, we will prioritise the safeguarding, health and wellbeing of all our students and staff. To find out more about QE, visit www.qe.org.

CREATE YOUR OWN CONCOCTIONS AT HOME WITH EASE THANKS TO EXPERT ADVICE FROM SOME OF THE REGION’S FINEST MIXOLOGISTS. BY MARTIN EDWARDS. ocktails. Say no more. The very sound of it spells out a certain style. Something to enjoy while watching the sun go down over the yachts in the bay en route to the casino at Monte Carlo, perhaps. The name’s Bond. Cocktail parties. Cocktail dress. All the greater surprise then, to learn that this icon of sophistication owes its existence to altogether more humble origins. At one time, drinking a cocktail could mean having the collar on that exquisite dinner jacket felt by the law. Welcome to the murky underworld of prohibition. If you think the lockdown was pretty tough, then imagine it lasting for 13 years. In 1920, the sale or transportation of all alcoholic drinks became illegal in the USA. This merely had the effect of driving the trade underground. Jazz age venues became louche speakeasies, crime (especially bootlegging) rose, and the ban apparently caused tens of thousands

C

of Americans to fall ill – there was an exemption for those who required alcohol for medical reasons. The sale of patent medicines also went through the roof. Moreover, the era also gave rise to the ‘mixed drink’. Fruit juices, sodas, and other mixers were added to cocktails to cover the taste of wood alcohol and bathtub gin conjured up on home stills. It was often, quite literally, lethal stuff. Sweet cocktails were easier to drink quickly, which was an important consideration when the establishment might be raided by the Feds at any moment. With wine and beer less readily available, liquor-based cocktails were here to stay. The golden age of cocktails began in the 1980s with vodka often substituting the original gin in drinks such as the martini. Traditional cocktails began to make a comeback in the 2000s and by the mid-2000s there were bars opening in all major cities, staffed by so-called mixologists.

ast forward to Yorkshire 2020 and we’re in search of the north’s finest exponents of

the art. Firstly to Sheffield, and to the luxurious and hugely popular Kettle Black on Ecclesall Road, the city’s most vibrant thoroughfare. Here, general manager Jack Hartley presides over a list of 75 different cocktails. If you’re not sure which you want to try, there is even a taste guide on the list which steers you towards those which you are more likely to prefer. Jack displays his mastery of the mix by creating a special cocktail just for us. “I was aiming for a cocktail that was relevant to the times we live in, and also the season. So this one is bursting with refreshing summer fruit flavours”, he says. With a wry reference to this year’s government-imposed restrictions, this is a drink to signal that the good times are back. Introducing the Lockdown Lady (see recipe opposite). In the interests of journalistic credibility, your reporter was obliged to taste the resulting mix and pronounced it “a drink I can see everyone liking, A great blast of alcohol and fruit. An iron fist in a velvet glove”. *** ext stop Leeds and a firm favourite among devotees of cocktail chic, in the shape of Hedonist on Briggate. It’s here that one of the founding trio of friends, Dan Crowther, saw a silver lining in the Coronavirus cloud. Under the new name Hedonist@home, they can supply a range of drinks specifically designed to recreate the taste of the cocktail bar at home. Dan sees this as a trend that is set to stay. “The whole ‘celebrity chef ’ and popular food programs such as Great British Bake Off and Masterchef have led to a realisation within the general public that the dishes they get at restaurants and that they see on social media are attainable. “This has led to an increase in home cooking and the skill of the home chef increasing as the dinner party is quickly becoming a new norm once again, rather than going out.

Lockdown Lady Whitley Neill raspberry gin St Germain elderflower liqueur (note; this drink packs a mean punch. If your prefer it lower in alcohol, substitute elderflower cordial instead) Diet lemonade Fresh raspberries Juice of half a lemon Method: Take a pint glass (this will be your mixing glass) and pour in 35ml of the raspberry gin. Add the raspberries and break them up a little with a longhandled spoon (this is apparently called muddling up in the trade). Fill the glass nearly to the brim with ice. Add the lemon juice and stir well (if you don’t happen to have a cocktail shaker). Pour into a large wine glass and top up with lemonade to taste.

Watermelon cordial 50ml Aperol 50ml Watermelon cordial (you can use Robinsons Watermelon & Strawberry cordial) 125ml Prosecco Method: Pour all ingredients over cubed ice in a wine glass. Give it a quick stir and then garnish with orange zest. Simple.

“This elevation in home cooking is soon to come to home drinking, with people becoming more educated on what it is to make good quality drinks and learning the tricks of the trade thanks to shows like Sunday Brunch,” he said. Dan’s choice of cocktail reflects this thinking as it’s simple to make and tastes great. Dan also provides us with a crash course in cocktail technique. “To make good drinks at home is really easy to achieve but first you will need to understand one thing, MEASURE YOUR INGREDIENTS, just as when you make a great food dishes you will follow a recipe with grams, millilitres and pounds. “This is exactly the thinking you need to follow when making drinks rather than just filling the glass. So the first thing I would do is get a measuring device that measures in increments of 5ml up to 50/100ml. A cocktail jigger can be easily bought online. “The next bit of advice would be to always use fresh citrus, don’t buy premade, get some lemons or limes and get juicing. This will instantly create bettertasting drinks. Finally follow recipes, there are a plethora of recipes online on various websites you can reference such as Diffords Guide, but also a large amount of drinks books available as well at various stores.” *** ack Clark of the Chophaus at Roundhay Park, Leeds, is the thinking man’s mixologist. To hear him wax lyrical about his art, you could well believe he was talking about a rediscovered Leonardo. He has built up

J

something of a reputation at the popular steakhouse and cocktail bar in smart suburbia. We started by asking him what inspired him to create this cocktail. “I did a lot of sitting around in lockdown reminiscing about childhood summer holidays. So I decided the healthy lifestyle was for me. That meant going out to get exercise. There’s nothing like cycling down the canal on summer days. On the first day of British summer sunshine, I cycled along the canal to Woodlesford lock, where I saw a classic ice cream van and decided to indulge my long past penchant for getting a double 99 with everything on, the whole works. So that’s what inspired me to create this drink, flashback to a summer day with no problems in your childhood. Second question; What makes a good cocktail? “Five things: Presentation, flavour, aroma, balance and ‘The Story’,” came the immediate reply. Care to elaborate? He did. “Let’s take presentation. The glassware is often overlooked.Take it from a binary perspective. Self-titled glassware such as the martini or the old fashioned, specifically for that one designed classic. I see it as how you would dress yourself. The elegance of a cocktail starts with what you present it in. Closely follows is colour, showing moody emotions in a viscous oak-aged tint, or a fun bluelayered drink that takes you back to Ibiza. “Then there’s aroma.Where does it take you? A plethora of memories. Not only does it oxidise your palate to unlock the life of a thousand tastebuds, it can take you somewhere. Flavour is a journey, starting with the aroma. The cooling temperature as it first meets lips, followed by the texture as it coats your mouth.

Starting off with the light tones of delicacy, as it makes its way to the finish and it channels through the bolder flavours. It can quench your thirst or leave you in need of another swill to satisfy. “Balance next.Without balance the world would be on fire.We can’t go crazy throwing our favourite elements together without having a clash. Likewise, with cocktails it’s about finding the harmonies within the ingredients you combine to complement the palate. With that it could be literally just a matter of being tweaked by the smallest of measurements to bring peace to the final product. “The Story? The final picture, as you could say the imagery that I could paint in your head that brings a cocktail full circle. Without a story to follow, a drink doesn’t have substance, or at least struggles. It’s almost like getting to know a person you’ve never met, stepping into the shoes of the creator or relating to it in your own way.” Thanks Jack. Maybe I’ll just drink the cocktail.

Summertime Chimes 40ml mango-infused grey goose 20ml Lime juice 15ml Raspberry purée 10ml ATXA mango vermouth 30ml Pineapple juice Method: Add all ingredients to a shaker with cubed ice. Shake and strain into a Martini glass. Garnish with a dehydrated lime wheel.

Room with a view THE DINING ROOM AT LOSEHILL HOUSE HOTEL IS SOMETHING SPECIAL, WRITES CHRIS WILSON. BUT HOW DOES THE FOOD COMPARE? ining rooms with a view are pretty thin on the ground in these parts but the splendid setting of the Grafen Restaurant at Losehill House Hotel is a joy to behold. Even before you’ve sampled the first forkful, come on a sunny day and it’s hard not to be completely won over by the impressive landscape. The hill in the distance is Win Hill, which features in some of my favourite Derbyshire walks. Losehill House offered a new perspective and, on a day when the sunshine was accompanied by wild winds and occasional downpours, a very comforting one. The landscape was definitely best appreciated from the inside looking out. Sunday lunch was a relaxed affair and the restaurant’s colour scheme, with crisp white tablecloths and spring daffodils, perfectly matched the mood. Delicious, fresh-baked bread is normally a reliable indicator of good things to come, and two varieties, black treacle and plain white, were outstandingly good with chewy crusts, and light springy dough.

D

Owners Paul and Kathryn Roden pride themselves on sourcing the finest local suppliers and the Sunday lunch menu is packed with wide-ranging alternatives. For starters crispy lamb belly was a crunchy, meaty savoury treat with a tangy pistachio pesto and sharp pickled turnips to cut through the richness of the meat. Goat’s cheese Millie-feuille with candied walnuts and onion marmalade was a sharp, sweet delight with the buttery savoury biscuits crumbling to the touch. All the meat is free range and two traditional Sunday lunches ticked all the boxes. Roast topside of beef was served thickly sliced and pink with every tender morsel worth savouring. Roast breast of free range chicken, served on the bone with perfect crispy skin, was just as impressive. Both plates came to the table piled high with crunchy roast potatoes, rich gravy and a huge, light-as-air Yorkshire pudding. With a dish of seasonal vegetables to share this was very much a classic Sunday lunch. If the main course was classic comfort

food at its very best, desserts were a sophisticated affair that really brought our meal to a close in some style. Lemon tart was wonderfully sharp with a light, crisp pastry base. The accompanying lemon curd ice-cream was delightfully tart while raspberry meringue brought just the right amount of contrasting sweetness to the plate. Our second dessert, dark chocolate delice with hazelnut crumb and Baileys ice-cream, was another perfect combination of tastes and textures, a real treat. There’s plenty of choice on the wine list including one of the best selections ‘by the glass’ that I’ve seen. Small glasses of Kilibinbin Chardonnay (£5.75) and Sixteen Ridges Pinot Noir (£6.25), a vegan wine from Herefordshire, went down a treat. Sunday lunch at Losehill House Hotel is £28.50 for three courses, outstanding value for food of this quality served in such a lovely setting. There’s also a spa on site, so don’t be surprised to stumble across the fluffy robe and flip-flops brigade in reception. If you’re staying for a couple of days the spa will come into its own, and with so much superb scenery on the doorstep it’s a logical base for walkers and cyclists too. But as a stand-alone restaurant within easy reach of Sheffield, Losehill House Hotel should not be overlooked... especially when the sun is shining. WHAT’S GOING ON LEEDS? A SUMMER OF INDULGENCE IS THE CURE FOR 2020, SAYS JORDAN ODU. e’re only a few weeks into summer and I have to say I’m loving it already. I’ve had my first proper haircut in what feels like forever (big thanks to Sara from XS Hair for taming my unruly locks), dined in some of my favourite restaurants, basked in sunny beer gardens and caught up with old friends. It feels so good to be free. Having been virtually housebound for months (with the exception of my daily walks and socially distanced catch-ups), I’ve never been so eager to get back into central Leeds. I can only liken it to being 12 years old again and being allowed to go into town for the first time without my parents! Sure, it was somewhat surreal to have to queue to get into my favourite shops and see masks and sanitiser everywhere, but it felt very safe – unlike my card, which took a hammering in the shops. Of course, no shopping trip is complete without a late lunch and a cocktail or three, so I made my way up to Harvey Nichols Fourth Floor Brasserie and Bar to see what’s new. Turns out their latest menu is a real head-turner. I went with the spicy Curried Sea Trout for starters, followed by the fragrant Thai Beef Salad with lime dressing, washed down with the refreshing Raspberry Champagne Mojito. why this is one of the city’s best lunch hotspots. In a bid to keep quarantine belly at bay, I’ve denied myself too much comfort food recently, but news that Yard and Coop were bringing back my ultimate fried chicken treats was music to my ears. If you’ve not yet tried it, I can’t recommend their Dr Pepper BBQ Buttermilk Chicken highly enough. It’s worth every single calorie. Another thing I’ve really been pining for during lockdown is group activities with friends and so the news that Roxy Leisure are opening all four Leeds venues on 1 August left me on a high. I’ve already assembled my team, booked a table and am counting down

the days until we can enjoy pool, pints and crazy golf. If you’re looking to flex your creativity and want a group night out with a difference, you really must check out Hotham’s Leeds Gin School. Sitting pretty just opposite Victoria Gate Casino in the former Cat’s Pyjamas venue, Hotham’s combines a bar, Hotham’s Leeds distillery and gin school to Gin School perfection. They’ve just launched their very first Leeds Gin, as well as a gin subscription service and you’ll struggle to find a better version of the popular tipple. The venue itself is fantastic and they’ve won so many awards for their gin, they’ll need new shelfing very soon. I was also lucky enough to try out the new menu at The Beehive in Thorner, which is by far one of the best village pubs you’ll find in the north. Now under new management, the owners have really put in the hours to create a unique ambience and a gastronomic experience that’s refined without being too fancy or pretentious. I went with the divine Fillet Beef Carpaccio with Crème Fraiche, peach

and rocket, followed by the Monkfish with Pancetta and they absolutely nailed every aspect of each dish. Definitely a place that commands repeat visits. And, whilst 2020 scuppered my Ibiza plans (along with just about everything else I had in the diary), I had to make do with the next best thing – a day trip to Whitby. Not quite the same, I get it, but the salty sea air and laidback vibe was surprisingly refreshing. Also, I can’t remember having fish and chips as good as the one’s from Hadley’s. Amazing. I never thought I’d say it, but I’ve really embraced the staycation culture that’s been popularised of late and am counting down the days to a few trips closer to home. First up, I’m heading to The Grand in York for a mid-week stay, closely followed by more luxury at Tottergill Farm in Cumbria. I’ve only heard good things about the latter and who doesn’t love a trip to the countryside and a private hot tub? After an undeniably shaky start to the new decade, I think everyone is entitled to a blissful summer of indulgence. Who’s with me?

What is Medisculpt therapy? G&M HEALTHCARE’S DR GRACE HULA EXPLAINS THE BENEFITS TO THEIR WEIGHT LOSS PROGRAMME. ediSculpt Therapy is a nonsurgical weight loss program used to improve weight loss, obesity and some chronic medical conditions like type 2 diabetes mellitus, high cholesterol, hypertension and sleep apnoea. Medisculpt Therapy comprises of three main components; the diet, which is based on high protein foods with low carbohydrate and low fat contents and two body contouring treatments, LPG Endermologie and Vanquish Me or Exilis Elite machines. The body contouring treatment LPG Endermologie is used for skin tightening in order to prevent the development of loose and sagging skin during and after the rapid weight loss. The second body contouring machine is a radio frequency machine for body fat reduction. G&M Healthcare has two machines – either the Exilis Elite or the Vanquish Machine – and the choice of which machine to use depends on the treatment package and area of the body requiring treatment. The radio frequency machines result in a significant fat reduction in targeted areas like the tummy, thighs or arms. These treatments are carried out weekly by fully trained therapists and last about 30-40 minutes each. In total you need about 75-90 minutes per week for your treatments. Weight loss with MediSculpt Therapy is safe, efficient and rapid. The weight loss progress is constantly monitored by a qualified GP and fully trained therapists who check weight loss progress, blood pressure, body fat content, metabolic rates and do blood tests on a regular basis. With regard to the results, G&M know from experience that a female patient will typically lose one stone a month and a male patient will typically lose one to one and a half stones.

M

Anne Kay lost over 4-and-ahalf stones after following the Medisculpt Therapy programme

MediSculpt Therapy consists of six phases, which deliver amazing, safe, efficient and sustainable weight loss. During phase one of MediSculpt Therapy the diet comprises of five meals and one snack a day. Protein foods are filling, hence patients don’t feel hungry. To supplement the diet some fruit and vegetables are also allowed on the diet. The vegetables can be boiled, steamed, roasted, grilled or stir-fried. Herbs and spices can be added to increase flavour. G&M Healthcare do metabolic tests to check your rates and also provide supplements to ensure you don’t lack in essential minerals like magnesium, potassium, sodium chloride, calcium and trace minerals. You need to fast for at least four hours before your metabolic test or initial blood test. Once the phase one target is achieved after losing about 70 per cent of your target weight, patients move onto phase two of the diet where normal foods, like weighed amounts of chicken, meat, fish and dairy like eggs, are introduced. Once 90 per cent of your target weight loss is achieved, patients are weaned to measured amounts of normal eating on phase three. Thereafter phases four to six are stabilisation phases to ensure that optimum weaning off from the diet is achieved without putting on back the weight you have lost on.

Once you have achieved your stabilisation, G&M Healthcare has a lifelong maintenance programme where they offer six weekly follow-ups for review by a therapist who measures your weight and body fat composition. Follow up is then three to six-monthly for one year or as required thereafter. Cost of the program depends on the package you choose. There are three price packages – basic, standard and deluxe. All packages consist of your consultation fee (£100) and blood test fee (£100) followed by the package fees. Supplement prices are £50/month but vary depending on the package you choose. The basic package is £125/week for only food. The standard package is £250/week for food and body contouring treatments with LPG Endermologie and Vanquish or Exilis Elite. The deluxe package is £300/week and includes food, body contouring treatments, supplements, four weekly reviews and blood tests. The new CUPRA Ateca comes with a suite of standard equipment including Alcantara Sport Seats, 19’-inch CUPRA alloy wheels, Adaptive Chassis Control (DCC) suspension and an enhanced steering system to improve feel. The beating heart is a 2.0-litre TSI 300PS petrol engine linked to the quickshifting seven-speed DSG dual-clutch transmission which, aided by the fourwheel drive ‘4Drive’ system, propels CUPRA Ateca from standstill to 62mph in 4.9 seconds and on to a top speed of 153mph.

Saloon and Touring models will have a 48V starter-generator that will be rolled out to all models with a four or sixcylinder engine, except PHEV and M550i xDrive models. Inside, new interior features include a larger 12.3” Central Information Display powered by the latest Operating Systm 7.0, including BMW’s Intelligent Personal Assistant and Smartphone Integration. Value and choice

The Four factor MINI’s family-friendly Countryman has been updated for 2020 with the stand-out model being the Plug-In Hybrid ALL4. Two petrol and one diesel engine will complete the range. The Plug-In Hybrid ALL4 combines efficiency and hybrid-specific allwheel-drive with the option of pure electric driving. The system manages a precisely controlled interaction between the 3-cylinder petrol engine transmitting its power to the front wheels with an electric synchronous motor that acts on the rear wheels. Together, the two units produce a system output of 162 kW/220hp. Other highlights of the new model include a newly designed radiator grille, LED headlamps and foglamps as standard, LED rear lights in a new design, new body finishes, new light alloy wheels, new digital dash display and 5-inch colour screen as standard and a new range of leather trims and interior surfaces. Cooper and Cooper S variants will be both available with prices starting from £23,500.

With three trim levels and five engine choices, buyers of the new SEAT Leon are offered plenty of choice – and value for money. This fourth generation model, on sale now from £19,855, takes a huge step forward in both quality and technology with efficient and electrified engines, new standards of connectivity and greater emphasis on design. Customers purchasing a Leon will also benefit from low insurance group ratings and outstanding residual values. Customers can choose from three distinct trims (SE, SE Dynamic and FR) and five power outputs (115PS 1.0 3-cylinder TSI manual; 130PS and 150PS 1.5 TSI manual; 150PS 1.5 eTSI MHEV DSG; and 115PS 2.0 TDI manual) available to order from today. The new SEAT Leon eTSI, featuring mild hybrid technology, mates 48-volt mild-hybrid technology to the combustion engine allowing engine-shut off coasting as well as transient torque assistance.
