Three rosettes Goldsborough Hall has been judged as one of the best in the country after winning a top food award. o here we are amid lockdown the sequel, and whilst it’s not ideal with the festive season upon us, it certainly doesn’t feel quite as bad as last time… And I’ve got everything crossed for that vaccine! Many businesses have adapted to the change amazingly, and the creativity we’re seeing born out of this crisis is nothing short of remarkable. I was lucky enough to sneak in some cheeky lastminute restaurant trips a few weeks back and was blown away with the autumnal offering at Fourth Floor Brasserie at Harvey Nichols. An all-round hearty affair to suit the season, you don’t want to miss the Crispy Pork Belly Bites with apple teriyaki or the Mussels with nduja tomato sauce, chorizo, and French fries. Washed down with a Smoky Cointreau Margarita, everything was faultless. Across town, Lost & Found at the iconic former Leeds Club building have also outdone themselves this time around. Their Crispy Fried Halloumi with sweet chilli and tomato jam is pure dreamy goodness, whilst the Whole Monkfish Tail roasted on the bone is just divine with a glass of their South African Viognier. When it comes to festive menus, Chaophraya’s Christmas celebratory tasting menu is a sublime Asian feast you don’t want to miss (and not a turkey in sight). As you’d expect, we went all out with the Samakee (which means ‘togetherness’) option, which did not disappoint. Kicking off with the classic Chaophraya platter, which includes moreish Thai Chicken Tacos and Spicy

Of course, eating in is has been the new eating out of late, and I’d be lying if I said I hadn’t indulged myself in a takeout or ten. Rudy’s Bake at Home pizzas have been a pure godsend, making those endless Netflix nights in that little bit more special (especially if you drizzle a little truffle oil on the crusts). For something a little more intimate, Vice & Virtue can instantly dial up date night to the next level. They’ve been upping the ante with their fine dining at-

home menu, whipped up by head chef and man of the moment, Jono. Having just got through to the next round of MasterChef the Professionals, you’re guaranteed a culinary work of art. The Char Sui Pork is next level tasty. Closer to home, there’s not a week gone by when I haven’t dipped into House of Koko’s ever-changing menu of treats. I do love a good Reuben with pastrami, but it’s even better with a bit of Dutch gouda. Another place I may as well have on speed dial is Fior Alba, who serve up the most authentically delicious sushi platters outside of Japan. Needless to say, I’ve been out on my bike a lot recently, desperately trying to ride off all those calories. And, whilst I wouldn’t say I’m Ibiza pool party-ready just yet, I’ve managed to stay trim and avoid the dreaded lockdown belly I’ve seen a lot of this year (not mentioning

Christmas, typically a time filled with comfort and joy, will be a little different but that doesn’t mean we shouldn’t be getting into the festive mood. In fact, we should be embracing it even more. Far beyond resurrecting the same artificial ‘Nordic pine’ tree each year, Christmas decorations can extend to all rooms of the house and include lights, garlands, festive foliage and much more.You can dress doorways, stairways and driveways and even let your children style their own rooms. The possibilities are endless. In short, Christmas decorations are a good way to start the season and, done right, can set the mood for the

many weeks ahead. But where to start? Interior design specialists Ben Huckerby Design started dressing everything from homes to hotels years ago and more recently have been repeatedly approached to style them for the festive season. With their expert eye they can choose decorations that complement your home perfectly and add a touch of class to your Christmas. As you can imagine, Ben and his team are in full flow at the moment, dressing homes and properties up and down the country. “Our first trees are booked for install the second week in November and we are usually fully installed by the end of the first week of December,” said Ben. “Ordinarily, we supply the items and dress the areas, usually in one
day, however, we draw the line at taking them down, this is usually left to the clients, who can store them for the following year!” And Ben isn’t afraid to go the extra mile for his clients. “Last year, a client’s build team overran so late that I installed the decorations on Christmas Eve to ensure they had a beautiful Christmas Day. muted tones with subtle accents of colour and I like to mix textures in the form of artificial foliage and feathers,” he said. “I always lean towards a warm white bulb both inside and outside, as I really feel this gives a much softer light and I always use a combination of gold, silver and clear baubles as I feel this achieves the best effects.” Ben is expecting to see decorations appear in homes much sooner this year, because of the current situation, but may have to go against his own advice and put his own decorations on hold as he’s hoping to move house at the start of this month.

Those warming aromas take you right back to Christmases past. Christmas is all about tradition but during a year like no other there’s room to add a little twist to the old favourites. The School of Artisan Food, based in the heart of Nottinghamshire’s historic Welbeck estate, have provided a few pointers on how to add a decadent flavour to the festive table this year. The School of Artisan Food offers a unique environment for people of all skill levels to expand their knowledge through a wide range of

short courses from baking and patisserie, cheesemaking, butchery and charcuterie, ice cream and chocolate making, to preserves, piemaking and brewing. The courses cater for all levels, from complete beginner to professionals. As a charity, the School works with voluntary organisations, schools and colleges, and community groups to provide opportunities to inspire and teach artisan food production skills. The School has a range of courses planned for the festive season restrictions permitting - including a
practical master classes in Christmas baking with internationally renowned baker, Emmanuel Hadjiandreou. The hands-on classes take place on 6 December and again on 12 December. Mince pies with a contemporary twist For the puff pastry: 250g Strong white (bread) flour 4g Salt 125g Chilled water 10g Unsalted butter For laminating: 125g Unsalted butter (refrigerated)
For the mince pie filling: 30g Raisins 30g Currants 30g Sultanas 22g Soft brown sugar 18ml Brandy/ale 6g Sliced almonds 6g Orange peel 6g Lemon peel 6g Dried cherries 6g Apples 6g Butter 6g Caster sugar ¼ tsp Orange oil (optional) ¼ tsp Lemon oil (optional) Salt, pinch Nutmeg, pinch Ground ginger, pinch Mixed spice, pinch
Method: 1. Mix ingredients together in a mixing bowl and knead until pastry comes together and shows signs of development. 2. Form dough into a ball and cut a cross in the top, being careful not to cut more than half way through the dough. Pull the corners of the cuts out from the centre to form a square shape. Wrap in a plastic bag or sheet (not clingfilm as this will stick to surface of dough) and place in the refrigerator for 30 minutes. 3. Weigh out the 125g butter and shape with a rolling pin between sheets of silicone parchment into a flat square block until approx. 10cm square and 1.5cm thick and place in the refrigerator for at least 20 minutes to harden. 4. To assemble, remove the pastry and the butter from the refrigerator. Neaten the edges of the pastry square, if required. Roll out the pastry into a rectangular strip twice the length of the butter square. 5. Place the butter in the middle of the strip of dough, leaving equal amounts of dough, uncovered, top and bottom. 6. Fold the uncovered flaps of dough over the butter square until they meet in the middle and seal the joins by pressing with your rolling pin. 7. Give the pastry a one quarter turn, so that the two open ends with the butter showing are top and bottom. 8. Roll out the pastry into a long rectangle the length of your rolling pin. Give the pastry a double (book) turn, wrap in the plastic bag or sheet and return to the refrigerator for a further 30 minutes. 9. Repeat step 8 two further times allowing the pastry to rest for at least 30 minutes, or until the butter has hardened and the pastry relaxed sufficiently to pin easily, refrigerated, between each and the final turn making certain it is covered at all times. 10. To make the filling, peel, core and chop the apples. Melt butter in heavy saucepan and add chopped apples and caster sugar. Stir and cook until a puree consistency is achieved. 11. Once the purée is cool, add and mix all other ingredients. Store in an airtight container in refrigerator for up to six weeks. 12. To assemble, roll out the chilled pastry and cut out two discs for each mince pie using pastry cutters, one disc for the base and a slightly larger one for the lid. Brush the base disk lightly with either water or milk, place a generous teaspoon of mincemeat (approx. 6g) in the middle and place the lid on top. Pierce the top and place on a baking sheet covered in silicone parchment. 13. Bake in a preheated oven at 230°C for 15-16 minutes or until golden brown. 14. Dredge with vanilla sugar.

Stollen 60g Sultanas 15g Sliced almonds (toasted) 15g Mixed peel (orange and lemon) 1 Small orange (zest and juice) 1 Lemon (zest and juice) 15g Rum For the preferment/sponge: 2 x 20g Strong white flour 10g Fresh yeast (or 5g dried yeast) 20g Whole milk (warm) For the butter mixture: 50g Butter (unsalted) 20g Caster sugar ¼ tsp Salt ¼ tsp Cardamom ¼ tsp Vanilla extract ¼ tsp Egg (beaten) For the marzipan: 60g Ground almonds 30g Caster sugar 1 tbsp Rum For the stollen glaze: 30g Apricot Jam 45g Butter (unsalted) 30g Sugar 15ml Whole milk For finishing: 150g Butter (unsalted) Vanilla sugar (caster sugar and vanilla) Icing sugar for dusting

Method: For this recipe you require three large bowls and two small bowls. The small bowls will fit on the large ones upside down to act as lids. 1. First, soak the fruit. In a large mixing bowl mix the fruit, juice, zest, toasted almonds and rum together and cover. Allow to stand in a cool place covered; until most of the liquid is absorbed into the fruit. This is best done a week in advance and kept in the fridge. 2. To make the dough (preferment/sponge), put the flour in a small mixing bowl and set aside. In the large mixing bowl dissolve the yeast in the warm milk. Add the first flour and mix into a paste, cover with the bowl that had the flour in it, leave to prove double in volume for 30 minutes. 3. In the other small mixing bowl put the last flour and set aside. 4. To make the marzipan, mix the almonds and sugar together. Add the rum and mix into a stiff paste. Refrigerate. 5. In another large mixing bowl beat the butter, sugar, salt and the spices until soft. Add the egg into the butter mixture that has been lightly beaten little bits at a time. Once all the egg is incorporated into the butter mixture stop beating. Tip: If the mixture curdles or separates add a teaspoon of flour that has been set aside earlier, to bind the mixture. 6. Mix about a tablespoon of the flour into the fruit mixture so that it absorbs the moisture in the fruit and set aside. 7. Returning to the dough, mix the yeast mixture into the butter mixture and add the rest of the flour. Mix until it all comes together and cover with the bowl that covered the yeast mixture. Leave to stand for 10 minutes. 8. Knead the dough for 10 seconds in the bowl, or until the dough resists. Leave to stand for 10 minutes. Repeat this last step three times, covering the bowl between kneading. 9. Now add the fruit and mix until all the fruit is mixed into the dough, making sure all the fruit is incorporated and taking care not to crush the fruit. 10. Place the dough in a bowl and allow to prove, this should take around an hour. Once the dough has proved about double in volume knock back. 11. Shape into a ball and allow to rest until workable using a little flour so the dough does not stick. 12. Shape into a stollen shape with the marzipan in the centre. Place on a baking tray that has been covered with silicon paper. Allow to prove, covered in a warm place just under double in volume, approx. 30 minutes. 13. To make the glaze, boil all the ingredients together in a saucepan and set aside until ready to use or place in the refrigerator. 14. After 20 minutes, or when the loaf is half way risen, place the Stollen in a pre-heated oven at 200°C (400°F) Gas 6, add a cup of water on the hot tray to form steam, lower to 180°C (350°F) Gas 4. Bake for approx. 20 minutes until golden brown. You will know when it is baked by tapping on the bottom and hearing a hollow sound and it will be golden in colour. Place on a wire rack to cool. 15. To finish, remove most of the dark sultanas that caught while baking with a sharp knife, taking care not to damage the stollen. Paint with hot melted butter three times allowing the butter to absorb. 16. Once completely cool, finally seal with boiling hot stollen glaze top and bottom. Once the glaze has set, roll in vanilla sugar, dust with icing sugar and serve.

Christmas pudding 250g mixed dried fruit 50g prunes, chopped 50g dates, chopped 125g butter 125g dark muscovado sugar 3 tbsp treacle 1 tsp mixed spice 2 medium free range eggs 125g self-raising flour For added flavour, you can also add 125ml brandy
Method: 1. Place dried fruits, prunes and dates into a bowl and pour over the brandy. Soak the fruit overnight. 2. Grease a 1.5-litre pudding basin well with butter. Then place a disc of baking parchment in the bottom. Lay a sheet of tin foil just bigger than the basin on a work surface, then lay a sheet of baking parchment the same size over the top. 3. Beat the butter and sugar together in a large mixing bowl. Beat for around 3 minutes, or until light and fluffy. 4. Add the treacle and mixed spice, then beat in the eggs one at a time. 5. Add the fruit to the bowl and stir until totally mixed in. Fold in the flour, and spoon the mixture into the pudding basin. 6. Place the parchment and tin foil layer over the top, and secure with string. Put the pudding into a large, deep pan with an upturned plate in the bottom, and pour boiling water into the pan until it reaches halfway up the side of the basin. Cover with a lid, bring to the boil, then reduce the heat to a gentle simmer. 7. Add more boiling water as necessary, so the pan doesn’t boil dry as you’ll need to steam for between 3-3½ hours (or until the sponge is firm and a skewer inserted comes out clean). 8. Take the bowl out of the water, and leave to sit for 20 minutes before you turn it out.

A slice of heaven A TRIP TO A BRAZILIAN RESTAURANT MEANS ONLY ONE THING – MEAT, AND LOTS OF IT. (BUT THERE’S A HUGE SALAD BAR TOO), WRITES RICHARD ABBEY. ne of the great things about dining out in our region is the sheer choice available. Wherever you are in Yorkshire there is somewhere to suit every type of craving. Think of the spa town of Harrogate and you probably think of afternoon tea but there is much more to discover, from fine independent dining to destination chain restaurants. Estabulo Rodizio Bar and Grill sits somewhere in the middle. The Brazilian restaurant chain – if you can call it that – has eight restaurants across the north including a very charming space on Albert Street. If you’ve eaten at one of these South American restaurants before, you’ll know what to expect, but if you

haven’t, you’re in for a treat. Rodizio restaurants of this ilk honour the Brazilian gauchos traditional method of cooking, which involves taking the most delicious and flavoursome cuts of meat and cooking them slowly on skewers over open flames. Harrogate’s Estabulo has two menus, lunch and dinner, as well as vegetarian and fish options. Everything works in a buffet style, you pay a set price and then can eat as much or as little as you like. Lunch has a choice of eight 40 Northside | www.northsidemagazine.co.uk
different cuts of meat (£18.95 per person) while dinner has seven additional choices (£28.95). Complementing both menus is a huge salad bar with 40 cold options, five hot ones and six different sauces. I arrived midweek for a late lunch and was greeted warmly by manager Franco before being shown to my booth table. The restaurant is contemporary in design, all dark wood, gold and glass, which creates a stylish yet warm atmosphere.
After ordering a drink – Estabulo merlot (£7, 250ml) – Franco explained the menu to me, although it’s pretty self-explanatory. Each cut of meat has a little description (in English and Portuguese) including a picture of where it comes from on the animal. At lunchtime you’ll fine three cuts of beef – picanha, alcatra and maminha; three cuts of pork – barriga de porco, linguiça and presunto; and one each of chicken (sobrecoxa de frango) and lamb (carneiro). Extras include abacaxi (pineapple) and pão de alho (garlic bread). The process is simple.You have a card on your table, red on one side, green on the other. As the servers walk around the restaurant with the different cuts of meat, turn your card to green if you would like some, or red if you’ve had enough.

But first the salad bar. Because of Covid restrictions, things work a little bit differently; instead of heading up to the bar yourself, you are given a checklist to make your choices and then a plate is brought to your table. Selections are limited to eight initially but you can make multiple ‘trips’ if you so wish. I started with a selection of asparagus, green beans, mild roquito chilli peppers,
cheese stuffed peppers, tomato and mozzarella salad, Brazilian potato salad, roast potatoes and black bean and pork stew. The meat then comes at regular intervals and is sliced from the skewer which you then retrieve with a little pair of tongs. It was hard to pick a favourite, such was the quality of the cuts served. I particularly enjoyed the picanha (cap of rump) and alcatra (rump) cuts of beef
but the chicken thigh (sobrecoxa de frango), pork belly (barriga de porco) and mint lamb (carneiro) were also excellent. The hard part was knowing when to stop - you can eat until the cows come home - but stop I did and had managed to leave enough room to sample one of Estabulo’s desserts, of which there were ten to choose from. Cheesecake seemed like a good choice and out of the three on offer, the Ferrero Rocher version (£6.29), was a good choice. Rich, creamy and indulgent, just as it should be. A double espresso (£3.30) completed proceedings – and was needed to ensure I didn’t fall asleep on the way home! If you’re in the mood for Brazilian, you now know where to go. QUESTION: I have been told I need to have a prostate biopsy to check my prostate. I have heard about a new biopsy technique called “TP” biopsy procedure, what does this involve?
ANSWER: Prostate cancer is now the commonest cancer to be diagnosed in the UK. Most men will have an MRI scan of their prostate if they have been tested and found to have a raised PSA test from their GP or urologist or have concerns about prostate cancer. An MRI scan can highlight areas within the prostate gland which may need to be tested using a biopsy procedure to find out if there is any prostate cancer present. Traditionally, a prostate biopsy, called a TRUS biopsy, was undertaken which involved inserting a needle through the wall of the rectum in order to get a tissue sample of the prostate which could then be analysed. This type of biopsy was safe for most men but carried with it a risk of infection in up to five per cent of patients and this could lead to sepsis, a very serious infection. A new biopsy technique has now been introduced in Leeds called Transperineal or TP biopsy. The procedure can be undertaken by a consultant interventional radiologist or a consultant urologist. During this procedure, the needle is inserted through the skin overlying the prostate rather than through the rectum. By taking this approach, the risk of infection is significantly reduced. In addition, a TP biopsy allows the doctors to target areas of the prostate which can be difficult to reach using the TRUS technique. TP biopsy procedures can also be performed under local anaesthetic in an outpatient department which means the patient can come into hospital and go home after a short period.
