A modern day kitchen experience NATALIE FRY OF GRID THIRTEEN TALKS ABOUT THE SECRETS OF HER SUCCESS. aving spent more than 20 years working for some of the UK’s most prolific architects and interior innovators, Natalie Fry realised it was time to take the plunge, and setting up a business was a natural progression after running a design studio for many years. Such is Natalie’s reputation, she was awarded premium partner status with the world class brand SieMatic, and her work has featured in many national interior magazines. Here, she tells us all about the inspiration behind her designs, what drives her to succeed, and why she loves Leeds.

Why did you decide to set up Grid Thirteen?
The business was on my ‘to do’ list for ten years. The balance of a demanding role and having a young, busy family meant the timing had not been right before now. I thrive off my work, however in the run up to making the decision I had become stalled. Feeling stuck was a sign for me that it was time for change, it was time to take the plunge and setting up the business was a natural progression after running a design studio for many years. What is the inspiration behind your products/designs?
Understanding a client’s style and knowing precisely who they are and their way of life is key. A client’s home is the ultimate reflection of their individual personalities and tastes. I see inspiration everywhere, travelling, reading, clothes, shopping. When designing the showroom I studied how luxury brands displayed in stores – I should have been looking at the shoes and bags but was far more interested in the use of materials and styling of the space. Do you have any plans to expand further?
We are moving into phase two of the studio – displaying bespoke living/dining furniture, with a range of seating and accessories and also expanding the design and project coordination department. We have an amazing team and for me it is important to grow slow and steady – employing quality staff wins over having teams in different studios. What do you think has made Grid Thirteen a success?

and belief in yourself that you can do the very best by being 100 per cent committed to every project worked on. Over 70 per cent of our contracts are on a referral basis – the design process is a critical stage of the work we do, but the experience throughout is equally as important. Many clients have come back to us for a second, third or fourth kitchen and I believe this is as a result of what we offer as the full package. What has been the highlight of the Grid Thirteen journey so far?
I’m immensely proud to have been awarded premium partner status with the world class brand SieMatic, but ultimately it’s having the opportunity to demonstrate to my children what can be achieved through hard work and determination. Why Leeds?
I absolutely love all things about Leeds. We have worked on some amazing projects in Yorkshire and the clients are fantastic to deal with – they certainly have style. After working in Leeds for over 15 years there was no question of where to set the business up. What has the business taught you about yourself?

Then summer happens and it never seems to last long enough. Summer is without a doubt the best time to be out on a bike, especially as a road cyclist. But how can we make the most of it and ensure we have the best summer yet?

It’s rare that a cycling dilemma cannot be solved by getting a new bike – and trying to get the best out of your summer is not going to buck that trend. A new bike means a fresh lease of life, new enthusiasm and whole other frontiers to explore. Maybe you’re used to, even a little bit bored of road riding, so checking out the trails on one of our Stumpjumpers could be the answer. 1. WATCH A RACE
One of the most wonderful things about cycling is how accessible it is. In what other sport can you get free front row seats (as long as you bring your own actual seat) at the biggest events of the year? The Grand Tours are bucket list items for any keen cyclist, but you don’t have to get on a plane to see the pros in action. With a large portion of motivation and a healthy dollop of discipline you can upgrade your body by getting a handle on your nutrition and working on your fitness off the bike. There’s no better time to challenge yourself than in the summer when days are longer and warmer. This will mean something different to every cyclist. Perhaps you feel you’re ready to enter your first race to test yourself. It can be a great indication of form and fitness as well as unparalleled motivation to put in the training in the lead up to the event. 5. JOIN A CLUB
There are countless advantages of riding alone, not least the peace and space to think with nothing but the company of your own spinning feet. However, riding with a group brings a whole new dimension to the painful game we play, not least because the company helps to numb some of the aforementioned discomfort. The camaraderie makes the miles slide quicker beneath your wheels and you will become a faster, better and more aware rider with new friends! 6. GET AWAY
If you do a lot of riding on the same roads, the perfect remedy is to take your bike away. You could go as far as the Tour giants in the Alps or Pyrenees, the hallowed pro training grounds of Majorca, Tenerife or the Costa Blanca, or even the climbs of Yorkshire, visited by ‘le Grand Boucle’ in 2014. Cycling holidays create a special bond between your body and your bike, and you will get closer to your cycling mates as you gasp your way up mountains and later reminisce over a cold one. What’s more, you will return home inspired, fresh and – most importantly – fast. Honest food FARMER COPLEYS – AWARD-WINNING PRODUCE STRAIGHT FROM THE FARM.
he picturesque town of Pontefract may be rooted in historical prosperity and hard-fought battles, but it’s the family-run sanctuary of Robert Copley and his wife Heather that keeps visitors coming back again and again. Starting as a small stable conversion in 2003 – as a ploy to keep Heather busy whilst she raised the next generation of Copleys – Farmer Copley’s opened as a haven for those seeking a fresh farm shop experience. Little did they know that in just a few short years Farmer Copley’s would be growing at a rate of knots. Fast-forward 14 years and the 60-acre food destination – just west of the town best-known for its liquorice and coal mining – is known as one of the best farm shops in Britain. Having invested £1million in its development, Farmer Copley’s is brimming with all that a farm can possibly offer. The Moo Café is now in its fourth phase of construction, with the launch of the newbuild site due for September. The next phase of development will see the café convert into ‘Moo by Day and Beast by Night’; offering customers a wholly unique and transformative dining experience. The new summer menu has just gone live

and the daily specials have already gone down a treat, with Heather’s ‘Little Farmers Menu’ proving particularly popular with the younger clientele. “We like to catch our future clients as young as possible and created the Little Farmers Menu to cater for their every need – offering home and locally-sourced fresh food with full traceability,” Heather says. The Copleys believe wholeheartedly in their ‘honest food’ ethos, with popular homemade lines including liquorice pork pies – grown on the onsite liquorice garth (the first and only UK public harvest) – fresh baked bread, home cured bacon and fresh fruit and veg – all locally-sourced to cut down on food miles. “Good quality food should be available to everybody. We take pride in championing the best of British agriculture, providing customers with the best quality local produce,” says Robert. While the café and farm shop are a major highlight, it is a uniquely-shaped pumpkin called Spookley that probably best establishes the farm as a family destination. The square pumpkin is one of the bestknown anti-bullying mascots in the US and Heather hopes her patch of perpendicular
pumpkins will help promote the campaign. “Having been picked on for being different Spookley becomes a hero. The moral being one day we all will discover, you can’t judge a book, or a pumpkin, by its cover.” With this year’s 11,000 strong Pumpkin Festival still to come, pick your own strawberries season in full swing and the Maize Maze attracting over 40,000 visitors a year, Farmer Copley’s is quite possibly Yorkshire’s busiest farm. “We focus on taking the experience out on the farm – including education about agriculture and growing food. Our farm is an all year round food destination to be enjoyed by the whole family – there’s nothing quite like it.” But Robert and Heather are not sitting back, plans are afoot for a homemade Jam Kitchen, due to open in autumn 2016, and a truly theatrical food experience in the shape of an exclusive glass beehive and honey shop. Ragdoll of Pudsey is celebrating an impressive 40 years in business with a fabulous week of fashion, fizz and fun. Running the shop alongside Joyce, who is now semi-retired, was daughter Maxine Thornton (who has worked at the shop since leaving school) and daughter-in-law Michelle Pratt (who has been full time for 18 years but involved for many more). Maxine and Michelle are now proud to have taken the reigns and continue to
deliver the same high standards of service first established almost four decades ago, along with two floors of beautiful clothing, footwear and accessories. The staff – or ‘ragdollies’ as they are affectionately known – are central to the shop’s success, as Maxine explains: “We couldn’t do what we do without our lovely staff; our manageress Lynn in particular is just adorable and everybody loves her. “We are regularly told that it’s our personalised customer service and warm, friendly atmosphere that makes people want to come back to us or recommend us to their friends. Eleven-year-old George Taylor has attended The Froebelian School in Horsforth since the age of three and has not missed a single day of school in that time. Harrogate ladies colour run Pupils at Harrogate Ladies’ College have raised more than £700 for charity by holding a colour run on school grounds. The event was organised by year 11 pupils from the school with proceeds from the event being donated to Behind Closed Doors, a Leeds based charity who work with those affected by domestic abuse and violence. Lucy Mulligan, a year 11 pupil, said: “Domestic violence isn’t really spoken about and so we wanted to do something to change that. South Yorkshire woman takes on her “biggest fitness challenge” to fund heart research A young Barnsley woman is taking on the world’s biggest half marathon to raise funds for, Heart Research UK, after the sudden death of her 15-year-old cousin. Sheldon Ridley, 22, will be running the 21K long Great North Run on Sunday 11 September to help raise awareness and to fund the charity’s pioneering research into the prevention, treatment and cure of heart disease after she witnessed its devastating impact first hand. Sheldon’s cousin, Benjamin Holmes, died in 2008 from suspected Sudden Arrhythmic Death Syndrome (SADS), which causes unexpected and sudden death. SADS is diagnosed where no definite cause of death can be found, and it is usually caused by an underlying heart condition. Sheldon has chosen to support Heart Research UK so that she can raise funds to help others who suffer from heart disease – and others can do the same. A hidden gem SPICY SOUTH INDIAN CUISINE MAKES A TRIP OFF THE BEATEN TRACK AN UNEXPECTED DELIGHT FOR CHRIS WILSON. ometimes you have to go off the beaten track to find something different and, despite being in the heart of Leeds, Kerala is one of those ‘blink and you miss it’ locations. While all around the latest major shopping and car park projects keep the builders busy and re-invent the city centre, Kerala is on one of those increasingly rare stretches of prime real estate untouched so far by the rush of progress, and is found by a modest illuminated sign above an open doorway, leading up a flight of stairs. Not too brash then, but it became clear from the rising hubbub of human voices as we approached the landing that we weren’t alone in seeking out this unassuming eatery. So what is the attraction? For me it was the prospect of reacquainting myself with what Kerala proudly calls authentic South Indian cuisine. This means a preponderance of black pepper, cardamom, chillies, cloves, coriander, ginger, tamarind and turmeric and a cuisine where the clean, sharp taste of the spices is very much to the fore, with no thick gloopy sauces or heavy starchy breads to slow proceedings down. If you haven’t tried this kind of food before, call it Indian with a twist. One of the specialities is the dosa – a South Indian crepe

made with rice and lentils. It’s huge but light, slightly crispy and doesn’t fill you up. One of our starters was the topi dosa (£4.99), a cone-shaped pancake served with spicy sauce and coconut chutney. We shared this and something called chicken 65 (£5.99), chicken breast pieces marinated in spices and fried. This was so tender and delicious I was reluctant to share; in fact a double portion as a main course would suit just fine. When it comes to drinks there’s a reasonable wine list and the usual crowdpleasing chilled beers, but don’t miss out on the refreshing yoghurt-based beverages that also play a key part in this cuisine. I tried something new with a glass of sambharam (£2.79), a very unusual mix of yoghurt, curry leaf, onion and chilli. Every single ingredient listed was very much present in each mouthful so think of that before you order; I found it a refreshing way to start the meal before switching to Indian lager, while my companion would not even contemplate a sip. Luckily we found common ground with our shared main courses. Nadan chemeen curry (£9.79) was for me the star dish of the night, a prawn curry where roasted coconut is used to take the edge off a serious chilli kick that would otherwise have been over–powering. You get a generous portion of
large, juicy prawns, too. Kerala lamb (£7.49) was milder, quite rich but again full of the flavours of fresh herbs and spices and not too heavy. To mop up those delicious sauces, we shared pilau rice (£2.99) and kerala parotta (£2.99), a flatbread that is a cross between a naan and a chapatti. Service is swift and very friendly. If you need help negotiating the menu, the staff are eager to offer help and suggestions. It would be easy to walk straight past Kerala without a second glance, but don’t miss out. A night to remember SAN CARLO FLYING PIZZA MAKES ADAM KAY SIT UP AND TAKE NOTICE. ’ll level with you: when you’ve been reviewing restaurants for the best part of four years, as I have, sometimes you get a little bit… indifferent to it all. Don’t get me wrong, you never forget how fortunate you are to get paid to eat food for a living. You’re always aware that most people would scoop out their own eyeballs to have your job for just a day. But even in the finest restaurants, you tend to find yourself dismissing everything with a shrug, and a sigh, and a “So what?” So when you go somewhere that really does make you sit up and take notice, you know it’s a good ‘un. When you spend the evening marvelling at the balletic service, drooling like one of Pavlov’s dogs at the plates of food before you, you know you’re in a restaurant that’s truly special. You see where I’m going with this, don’t you? Yep: Flying Pizza is such a place. Lord almighty, if only all restaurants were like this. Every surface, every wine glass, every piece of cutlery is polished to perfection; the air is abuzz with conversation; the staff make each one of their guests feel like a royal. I’d say it runs like clockwork, but I don’t think I’ve ever seen a clock that ticks this smoothly. On my visit, on a sun-kissed Friday night, I

counted three restaurant managers (suited and booted), five waiters (waistcoats), and two more staff manning the bar. This didn’t feel like overkill; we were never crowded or pestered, just looked after like old friends. Indeed, many of our fellow diners were regulars: when the lady at the next table overindulged on the vino, the waiter gave me a ‘seen-it-all-before’ wink and steered her between tables with the grace of an Italian shepherd. Let’s be clear: this isn’t the type of place you come for a casual slice of pizza (although the pizza, which I regrettably didn’t try, does look amazing). No – as the Porsches parked out front should indicate, this is a special occasion eatery. Gladrags are recommended. The food is similarly special – and indeed Special, with a daily changing menu in addition to the selection of dishes from the San Carlo group’s kitchens. The focus is on seafood, and by gum do they do it right. My monkfish (£19.95) was meaty yet tender, with a huge hit of savoury flavour from its accompanying marinara sauce. My partner’s mussels (£7.90) were irresistibly sweet, while her spaghettini gamberoni piccanti (£15.95) was the evening’s highlight – the prawns fried to a light golden crisp, the
pasta toothsome and moreish. I also had pitch-perfect arancini (£6.95), and a delicious mille-foglie dessert (£5.60) which I couldn’t finish, proving conclusively that my eyes really are bigger than my belly. But when the food is as stupendously good as this, you can’t blame a guy for ordering too much of it. You should go to San Carlo Flying Pizza. You’ll eat well, drink well, be looked after by a restaurant team at the very top of its game, and have one of the best nights of your life. Even if you’re a spoiled, ungrateful journalist. ALDO ZILLI’S YORKSHIRE-INSPIRED SUMMER FEAST AT FLYING PIZZA. iners at Roundhay’s iconic Italian restaurant, San Carlo’s Flying Pizza on Street Lane, were treated to a spectacular summer feast when their celebrity chef Aldo Zilli hosted the kitchen for the weekend. The flamboyant chef and author, well known for his passion for and love of regional Italian food, spent two days cooking up a summer feast, combining the best of Yorkshire and Italian summer seasonal produce for diners and a host of regional press and food writers. Aldo also shared his tips with diners on home cooking and making the best of seasonal ingredients. The seasonal summer feast included a fabulous, rich and earthy beetroot risotto with gorgonzola, with freshly harvested beetroot from Yorkshire, and a rack of Yorkshire lamb with rosemary, served with a mint jus and county reared beef fillet wrapped in parma ham with a truffle cream sauce and fresh truffle shavings. Picture perfect IT’S DEFINITELY GOT THE LOOKS BUT HOW DOES THE FOOD MEASURE UP AT THIS NORTH YORKSHIRE COUNTRY INN? RACHEL MARTIN REPORTS. amed after the boar which would have killed Edward III in 1357, The Boars Head stands at the heart of the charming heritage village of Ripley – an area of outstanding natural beauty. Built in mellow Yorkshire stone and perched on the edge of the Yorkshire Dales, the old coaching inn sits adjacent to the Ripley Castle Estate – home to the Ingilby family for over 700 years. As we approached the cobbled market square, passing an abundance of daisy-strewn lawns and low stone cottages, it felt a little bit like we had left the 21st century behind and settled in feudal England. The setting may sound formal but don’t let that deter you if you’re looking for a more contemporary and relaxed atmosphere. The inn has been designed to be comfortable and welcoming and it is easy to see why there are so many regulars. We opted for seating with a view overlooking the adjacent church gardens. The tables were set very simply and we were promptly presented with a seasonally themed à la carte menu brimming with local produce and accompanied by a comprehensive wine list. Guided by food and beverage manager Cecil, we ordered our starters, accompanied by a generous glass of Rioja (£5.50) and Pinot Noir (£7.50).

Hot from the kitchen came a teeming bowl of red pepper and courgette soup for my partner (£5) and for me, chicken liver parfait (£7). The parfait was delightfully light and creamy, providing a fantastic contrast to the earthy taste and texture of the toasted brioche. Neither were too much or too sparse – a perfectly light starter to get the mouthwatering. After to-ing and fro-ing I settled on a main course from the monthly market menu – a generous portion of delicately pan fried venison, anna potato, squash purée, wild mushroom and red wine jus (£18). Each component was cooked to perfection and it was the balance of rural flavours that made this dish exceptional. Sticking to the tried and tested my partner ordered the 8oz rib-eye steak (£18.50), which was faultlessly cooked to medium rare. The meat was lean and delicately seasoned, so succulent it almost melted in your mouth. We were contemplating on whether to share a dessert but Cecil insisted we try the white chocolate and baileys cheesecake (£6) and the sticky toffee pudding (£6). “They are to-die-for” he vowed and they did not disappoint. The pudding was dense but extremely moist and screaming with flavour, and the cheesecake was a genius combination of four very distinct and assertive flavours that worked harmoniously together.
The brasserie skilfully balances the best of British hospitality, cleverly combining striking architecture with a warm ambience, friendly staff and a menu that offers touches you might not expect in a far more contemporary establishment. The portion sizes were perfect – generous without making you feel greedy – and the quality and presentation of every dish was exquisite. The Boars Head showcases countryside dining at its best. Not only is it a proper country inn, situated in an idyllic location, but it is also the place to go to experience exceptional fine dining, created with locallysourced ingredients.
