The value of doing things properly Liam Brooke, solicitor in the Will Trust & Estate Disputes team at Irwin Mitchell, stresses the importance of getting your affairs in order as early as possible.
T
he importance of getting your affairs properly in order was highlighted once again this year in the Court of Appeal case of King v The Chiltern Dog Rescue and others [2015] EWCA Civ 581. This case involved the examination and narrowing of the little known doctrine of Donatio Mortis Causa, which translates roughly as “a gift made in anticipation of death”. What if you come towards the end of your life and realise that you have not left your estate to those you truly want to inherit? The problem in these situations is that to transfer property on death requires a valid will and that the transfer of land in your lifetime must always be carried out formally in writing and by executing a deed. That is why, in some circumstances, the court will invoke this somewhat strange rule that the normal formalities don’t apply because it was a gift made in anticipation of death. The Chiltern Dog rescue case concerned the gift of a house by an elderly lady, Mrs Fairbrother, to her nephew, Mr King. In March 1998, Mrs Fairbrother made a will, leaving some small gifts to friends and relatives and leaving the bulk of her estate to seven charities, including the Chiltern Dog Rescue. By 2007, Mrs Fairbrother was frail and elderly and Mr King went to live with her and to care for her. Around November 2010,
NS • page 12
she presented Mr King with the title deeds to her house and said: “This will be yours when I go”. Mr King claimed that his aunt’s choice of words and the way she looked at him made it clear that she knew her health was failing and that her death was approaching. He took the deeds from her and placed them in his wardrobe for safekeeping. Mrs Fairbrother died in April 2011. During the six months before her death, Mrs Fairbrother signed three separate documents, purporting to leave her property to Mr King but unfortunately none of these documents constituted a valid will. The will of 1998 therefore took effect, and Mr King was faced with the proposition of being forced to move out of the house. He had nowhere else to live. He argued successfully at court that the house had been gifted to him in anticipation of his aunt’s death. However, the charities appealed the case to the Court of Appeal and were successful in overturning the decision on the basis that the original judge had incorrectly applied the law. The decision to overturn the original judgment hinged on the fact that Mrs Fairbrother, although elderly and frail, did not have a reason to expect to die imminently such as having terminal cancer or a potentially mortal wound. Therefore the
house had not been gifted in anticipation of death. The lesson from this case is simple. Get your affairs in order as early as possible and do it properly through a solicitor. Had the documents Mrs Fairbrother signed been valid wills then this case would have never come about and Mr King would still be living in the house. Although Donatio Mortis Causa exists for exceptional circumstances, it is not the type of rule that I would recommend anyone to rely on. To stop situations like this from arising, I would recommend that a person reviews their will regularly; at least every five years and whenever there is any significant change in their life. This is the best way that you can ensure that the ones you love benefit from your estate after you die. If you would like more information or to discuss any of the topics raised please contact Liam Brooke 0113 220 6225 – solicitor in the Will Trust & Estate Disputes team at Irwin Mitchell. The unspolit clean lines of the Specialized Tarmac
The benefits of a winter bike
Disc brakes comes as standard on the Specialized Diverge
When the weather is cold, wet and windy, will it really make a big difference to your commute?
T
he weather took a turn for the worse recently, but whilst it’s still not too cold, it is wet, and the fallen leaves are creating a heinously slippery mulch as I write. We often hear the term “winter bike” bandied around, but what’s the point really? Is it just an excuse for an N+1 bike, or are there actual benefits? I’ll pick up on my first point to begin with, the rain and leaves have made it slippery. Straight away I’m thinking about fitting wider tyres. A carbon road race frame like a Specialized Tarmac won’t fit 32mm tyres in, it’s a highly engineered race bike, designed for maximum efficiency. So the first reason to have a winter bike is to fit wider tyres on. These will grip more in the wet, more on any partially mulched leaves and in any belowzero weather we encounter over the next five months or so. A Specialized Tarmac is a beautiful machine with clean lines and minimal detailing; in the winter rain however, we get sprayed with dirty water from the road. Affixing mudguards leaves the bike looking ugly, and is a crime against the design. There’s also the issue that there are limited mudguard options for race bikes. Choosing a bike for the winter months like the Specialized Diverge allows for easy fixing of mudguards via special brackets. On the wet winter roads often grit will
NS • page 14
get thrown up from the road onto your rims when you slow yourself or stop. The pads on rim brakes trap the grit and this can wear your wheel rims down. After a while, your rims will need replacing. On a bike like the Specialized Diverge, rim brakes are replaced with disc brakes as standard. The disc brakes also have the effect of improving reliability of braking meaning that when you need to grab a handful of brake, you’re not relying on a wet rim for friction, and you therefore come to a stop more safely. A bike like the Diverge will also include lower gearing and a slightly more upright riding position. Lower gears will mean that you’ve got more options on the days when the wind is blowing in your face and the hill has as much traction as the north face of K2. A more upright riding position will give you more control, moving the weight back away from the front wheel making the bike less skittish. I love my summer bike, and on dry days with above zero temperatures it does exactly what I need of it, and that’s to glide with minimum effort over hill and down dale. In the depths of winter on the commute however, I have to admit that wider tyres and disc brakes are safer and that my rims get worn out less. Exciting times ahead as boutique’s ‘ragdollies’ prepare to celebrate 40 years of success.
Ragdoll ready to celebrate
T
he saying goes that time flies when you’re having fun. And never has this been more apt than for Ragdoll of Pudsey, which next year celebrates a fantastic 40 years in business. This independent boutique was opened by Joyce Pratt in 1976 and has continued to evolve over the years, building a strong following of loyal customers. Running the shop alongside Joyce, who is now semi-retired, is daughter Maxine Thornton (who has worked at the shop since leaving school) and daughter-in-law Michelle Pratt (who has been full time for 18 years but involved for many more). Maxine and Michelle are now proud to have taken the reigns and continue to deliver the same high standards of

service first established almost four decades ago, along with two floors of beautiful clothing, footwear and accessories. The staff – or ‘ragdollies’ as they are affectionately known – are central to the shop’s success, as Maxine explains: “We couldn’t do what we do without our lovely staff; our manageress Lynn in particular is just adorable and everybody loves her. “We are regularly told that it’s our personalised customer service and warm, friendly atmosphere that makes people want to come back to us or recommend us to their friends. Our aim is to offer a pleasurable experience from the moment you walk through the door to the moment you walk away with your dream outfit.” And what a variety of outfits there is. Whether you’re searching for the perfect mother of the bride/groom ensemble, racewear, Top: Ragdoll cruisewear, or founder a showJoyce. stopping look Above: Michelle for any other and Maxine special occasion, you will find it here. Top designer brands such as Ian Stuart (a personal friend of the shop), Condici, John Charles, Ispirato,Veni Infantino and Irresistible line the rails. Many new customers are also
surprised to discover an extensive selection of daywear by the likes of Joseph Ribkoff, Frank Lyman, James Lakeland, Elisa Cavaletti, Faber, Leo Guy, Kapalua and Paola. The perfect fit is guaranteed thanks to their trusted, professional seamstresses. The choice doesn’t end there as the ragdollies can dress you from top to toe with a great collection of shoes, handbags and jewellery. With footwear to suit each season, cosy winter boots or delicate holiday sandals can also be snapped up. “We are proud to be a family business that has managed to survive two recessions and still maintain our level of service and quality,” says Michelle. “There are lots of exciting plans for our 40th anniversary next year and we can’t wait to celebrate with our customers. Announcements will be coming soon, so keep an eye out for all the details.” In the meantime, be sure to stock up on Christmas gifts for your stylish friends and family, or perhaps treat yourself to something new. And don’t forget to keep a look out for the fantastic winter sale, which starts in midDecember.

Unlock the secrets of good health Nicky Snazell’s new book contains the key to understanding the mind and how harnessing its power can help healing.
N
icky Snazell has dedicated her life to the understanding and treatment of pain and immobility. Earlier this year, she shared her extensive knowledge and experience in her first book, The 4 Keys to Health, which focused on mindset, nutrition and hydration, fitness, and lifestyle. Following its launch in January, Nicky was inundated with requests from people eager to learn more about each of the keys. She decided to write a follow up trilogy called The Human Garage, and now part one, entitled The Mind, has just been released and is available at any of Nicky’s clinics or on Amazon. The Mind focuses on the unconscious, what the mind is and how to drive it. Nicky says: “So many people don’t realise their health is determined by their thoughts, but tapping into the ability to heal yourself is so important. The brain organises healing and if we have a greater understanding of this, there will be a lot more people successfully overcoming pain.” The book also focuses on the link between pain and the mind, and how to take charge of your own destiny. “Suffering and
NS • page 42
pain are two different things,” Nicky says. “The book explains how you can avoid suffering and Nicky understand how the Snazell brain works. Readers can use it as a multidimensional book, whether they want to increase happiness or learn more about the science behind depression and sickness.” While part of Nicky’s work centres around improving health and discovering the latest technology to do so, she is even more passionate about preventative measures. “We need to spread the message on how to keep people healthy,” she says. “Making a greater investment in preventative health means there would be much less sickness in the world.” Making small changes in diet and exercise can have a huge benefit on health, but Nicky believes that managing and reducing stress is another main component. She says: “Stress is a huge thing and many of us don’t realise how it can affect our health. It’s important we learn these lessons as early as possible in life, so in the future I want to write books for schools, to help children grow up with a different outlook on life and stress.” For now though, Nicky is concentrating on part two of the trilogy, The Body, which will both focus on how to keep fit and look
after our bodies and introduce innovative preventative treatments such as MRT (Magnetic Resonance Treatment). To find out more about Nicky Snazell please visit www.thepainkiller.co.uk. To find out more about the MRT Centre, please visit www.mrtcentre.co.uk. To buy The Mind, priced £14.99, please email hello@mrtcentre.co.uk for a signed copy, or visit www.amazon.co.uk. As a special introductory offer both of Nicky’s books can purchased together through the clinics at £20 plus p&p and can be signed and delivered worldwide.

Nicky Snazell brings a new and unique combination of skills and technology to North Yorkshire icky’s drive to learn and discover better methods was ignited by her frustration, as a child, watching her mother suffer years of horrible back pain and despite seeing numerous professionals, was never really helped.
N
As a biologist early in her career, Nicky studied how cells functioned and how the mind affected this, which stimulated an interest in keeping healthy. She has since continued to explore and evaluate conventional and alternative treatments around the world, and has now developed her own unique mix to provide effective treatment for many conditions. Many patients come to see her initially as a consultant physiotherapist specialising in the treatment of chronic and severe pain and are able to benefit from the multi layered and complex blend of skills she has acquired over 30 years. Nicky is one of only a few in the world to have reached the highest level of qualification and the first practitioner in the world to be awarded a fellowship from the Institute for the Study and Treatment of Pain. In addition to teaching, she also presents internationally on pain and health with Californian Joseph McClendon, also known for presenting to millions with Tony Robbins. Her second book ‘The Mind’ was published in November and is the first of her trilogy on health.
Magnetic Resonance Treatment The first barrier for MRT is to make the general public aware that treatment for these types of problems actually exists and that you don’t have to put up with pain just because you are getting older MRT treats conditions such as • Osteoarthritis • Spinal discs bulges and micro tears • Osteoporosis and bone fractures • Injuries to tendons and ligaments • Preventative treatment for osteoarthritis and osteoporosis MRT, a development of MRI technology, is unique in the way it treats, which is to regrow the cells in your body. For example, the root cause of osteoarthritis is wear and tear in the joint cartilage. MRT stimulates the growth of new cartilage, thickening the cartilage layer and closing holes where the wear is significant. Non healing fractured bones have been resolved within days of treatment. In addition to our many patients, World Champion motorbike racers and international footballers have already benefited from this.
I am especially excited that this technology has the ability to help prevent both osteoarthritis and osteoporosis, each of which are responsible for the suffering of severe pain by millions in the UK alone. The younger generations are much more aware of the need for looking after their health and that prevention is a much better option than cure, so it’s important to communicate the significance of this technology.
If you would like to know more about MRT or to book a consultation please call 01423 297097 or email hello@mrtcentre.co.uk MRT Centre Harrogate, Spa Bottom Farm, Haggs Road. Follifoot. HG3 1EQ For more information visit www.mrtcentre.co.uk

Queue For the Top… he largest golf resort operator in United Kingdom, QHotels recently celebrated the first anniversary of its acquisition of six former De Vere hotels and De Vere luxury lodges. And a visit to one such property, Mottram Hall in Cheshire, illustrates just why the company is such a success. The hotel creates an imposing impression from the moment you arrive at the 18th Century Hall via a long, sweeping tree-clad drive through to its high quality bedrooms, fine restaurants, golf course and spa. The quality of the course is one example of the many benefits of a unique golf membership scheme operated by QHotels – the QFairway club. The initiative is entirely flexible with up to 50 rounds of golf for a cost of only £375 per annum, with access to 11 impressive resorts operated by QHotels. The points-based membership gives golfers all the benefits of a full club membership – including the facility to hold a handicap and playing rights for club competitions – while offering discounts on food and drink, shop purchases, tuition and hotel bed-and-breakfast rates. More than 1000 new members have already signed up to the scheme, launched earlier this year, including hundreds of juniors. Membership of the QFairway club is so popular because it provides access to some of Britain’s top courses including Forest Pines in Lincolnshire (a favourite among Yorkshire golfers), Slaley Hall in Northumberland and Oulton Hall, here on our doorstep in Leeds. Mottram Hall is one such top, championship standard course, having hosted the 2013
T
European Seniors PGA Championship. The front nine is relatively flat and meanders through lush meadows and parkland but golfers should not be fooled: the back nine is harder with some daunting drives and carries as fairways bisect the densely wooded rough. The Mottram Hall golfing experience has recently been enhanced by a spectacular £1.5million refurbishment programme. The result is a modern but classical new clubhouse, encompassing a fine bar area and restaurant both offering panoramic views of the course. The new Halfway House could be a clubhouse in itself with a fully stocked bar, seating area and the provision of hot and cold snacks. Playing at a QHotels venue is particularly attractive for groups or golf societies in 2016, with prices being held at 2015 rates provided the booking is for 12 or more and made before the end of November this year. Prices, for new bookings only, at any of the 11 courses start at £79 per person for one
night’s dinner, bed-and-breakfast plus two rounds of golf. Two-night, three-round packages including dinner, bed-and-breakfast can be booked from £165 per person while discounts of up to 20% are available on drinks or groups of any size. Mottram Hall has many attractions other than the fine golf: it’s home to Britain’s first Alfresco Thermospace Spa; it houses a superb health club with great leisure facilities, while it is also a glorious wedding venue and the perfect setting to host a conference or event. The rooms have been impressively upgraded and the Carrington Grill serves wonderful food using Cheshire ingredients from local suppliers. The hotel offers a number of special breaks including residential Christmas and New Year ones. Details of these and the range of golf packages can be found at www.qhotels.co.uk or by calling 0845 2411320.

NS Christmas
The real meaning of Christmas
Dr Patrick Harding
As we prepare to deck the halls with holly, Phoebe Seymour meets the man who knows exactly what makes it the season to be jolly…
W
hen you hang tinsel on a Christmas tree, pull a cracker or get merry at the office party, do you ever stop to think about why we celebrate Christmas in the way we do? The Nativity is a huge part of Christmas, but the festival has slowly changed, adapting
to more recent traditions and customs to become the Christmas we know today. And what about our other traditions such as Christmas trees in our homes, the idea that Christmases should be white and the origins of Santa Claus? Where do all these customs come from? Former lecturer and author of The
Christmas Book, Dr Patrick Harding has been demystifying our festive customs for the past 20 years. In his book, Patrick explains where all these customs come from, but before we get into all the weird and wonderful reasons why we celebrate Christmas in the way we do, let’s start with the birth of Jesus …
Words: Phoebe Seymour
The Nativity “The accounts may have been slightly changed over 2,000 years, but what I like to do is see if there is any science to back the nativity story up,” says Patrick. It shouldn’t come as much of a shock that Jesus wasn’t born on 25 December, nor was he born on what we think to be the year 0AD. After much research, Patrick discovered that Jesus was actually born in September 7BC. For Patrick, the most important part of the nativity story is the star, which wasn’t a star at all. David Hughes, an astronomer, introduced Patrick to the idea of triple conjunctions. These occur when Jupiter and Saturn align in the constellation of Pisces, creating a light that would have looked like a bright star. The magi (or wise men) who followed this ‘star’ may have even realised the significance of this rare event, as Jupiter represents the king of the gods, Saturn

signifies the land of Palestine and Pisces is the sign of the zodiac which represents the Jews. Combine this with the fact that one of these triple conjunctions took place in 7BC and that scientists have worked out that
Jesus was born between 8 and 6BC, and this fits Patrick’s theory. “Of course, it sounds silly to say Jesus was born in 7BC, but does it matter? I just look at 25 December as Jesus’s official birthday, a bit like the queen,” says Patrick.

Christmas before Christianity So why do we celebrate Christmas on 25 December? Those who think our customs are all centred around Christianity may be surprised. “The 25th is the most important day for a competing religion called Mithraism,” says Patrick. “If you believe in the teachings of Mithras, your god is the sun and what I find interesting is that the 25th is just after the shortest day. “If you believe god is in the sun, you get a bit upset because your god isn’t getting out of bed very early but as soon as it starts rising again, it means god is still there. So followers of Mithras may very well have looked out the window and said ‘Our sun is risen!’” Roman Emperor Constantine followed Mithraism before converting to Christianity, but the date and many other Christmas customs were carried over from other religious festivals. The Romans would celebrate the god Saturn with a festival called Saturnalia from 17 to 24 December, a time of overeating (saturnus means plenty) and general boisterousness as
well as a time for visiting friends and exchanging presents. Patrick explains in his book, “It was also a time for greater sexual freedom, the latter no doubt stimulated by an excessive consumption of alcohol. The ‘goings on’ at Christmas parties in the 21st century pale by comparison.” Who’d have thought that even our Christmas party shenanigans are a longstanding festive tradition?
Santa, drugs and St Nicholas’s gold Over the years Santa Claus, Father Christmas and St Nicholas have all combined to create one big fat figure in a red and white suit who delivers presents to children. When the Dutch immigrants landed in New York (originally New Amsterdam) in the 17th century, they brought Sinter Claes (or Sinterklaas) with them. He was a legendary figure with characteristics similar to St Nicholas, whilst the idea of Father Christmas started in Germany with the Norse god Odin, who would ride an eight-legged horse through the sky and fill children’s boots with treats. And then there was 4th century figure, Saint Nicholas, who originated in Turkey. “There’s a story about a friend of St Nicholas who couldn’t afford his three daughters’ Â

weddings,” explains Patrick. “So, St Nicholas throws a bag of gold through each daughter’s window. However, the youngest daughter has her wedding in the winter. She shuts her window, so he climbs up onto the roof and drops the final bag of gold down the chimney.” Lapland has also played a huge part. Tribes who made their living off reindeer in Northern Lapland would live in yurts with small openings to let in visitors and let out smoke. When people were ill, witch doctors would enter through these chimney-like entrances and deliver gifts of healing. Patrick also explains why our modern day Santa is represented as ‘merry’. “In Lapland you can’t easily make alcohol because of the low temperatures,” explains Patrick. “But they realised that the red and white mushroom is hallucinogenic and if you take it, you get the feeling that you are leaving your body and flying through the air – ho, ho, ho!” The red and white of the mushrooms may very well have triggered the colour scheme of today’s Santa suit, but it was also Tolkien who influenced this change when he posted Christmas letters to his children with illustrations of a red Father Christmas. Then in 1931, Coca-Cola cemented the idea, with a Santa wearing a red top and trousers with a white fur trim to match their logo, which has captured the public’s imagination ever since.
Just like the ones I used to know As we move away from the nativity story and the meaning of Christmas and its customs changes generation by generation, are we losing sight of what it’s all about? “I always say to people, Christmas never stays the same but I think that’s why it has been so successful,” says Patrick. “Even if we are not Christian we can celebrate it.” Patrick’s years of research have done nothing to take the magic out of his family’s Christmases. If anything, it has helped him not
Wondering where our other traditions come from? Dr Patrick Harding reveals more about our Christmas customs… Holly, ivy and mistletoe – They’re all evergreen and signify the eternal nature of Jesus. The red berries on holly represent blood and the prickly leaves are Jesus’ crown of thorns. Christmas trees – Many German immigrants already put up Christmas trees in Britain and they were used by the royal family 50 years prior to Prince Albert bringing them over from Germany, but after a picture of Queen Victoria, Prince Albert and their children, stood in front of a Christmas tree was published in the Illustrated London News in 1848, the decoration soon became popular throughout British households. White Christmases – Writer Charles Dickens was born into something of a mini ice age in London and his Christmases were always snowy. A Christmas Carol was a huge part of a Victorian Christmas revival and many customs from this novel have survived today. Cranberries – In the 90s, the US had a glut of cranberries left over from Thanksgiving so decided to convince Britain to eat them with their turkeys too. Delia Smith’s popular Christmas cookery book came out soon after and was filled with recipes full of cranberries. Most supermarkets sold out and the fruit became a national hit.
to take this often stressful time too seriously. “My kids have left now. It is important to me and my wife as a family time, but if either of our children wants to go to their prospective boyfriend’s or girlfriend’s families for Christmas, it doesn’t bother us because one of the sad things I find about Christmas now is the arguments and the ill feeling that goes on. “It shouldn’t be like that, it should be a time when people relax and enjoy themselves, eat a bit too much, and drink a bit too much, so we try to be laid back about it.” So what is the true meaning of Christmas for Patrick? “Christmas is a time when the difference between the haves and the haves not is very obvious. I think it is a time when one should reflect on the number of people, especially up north, who are in need of food banks. “I’ve dedicated this book to my father-inlaw, Jack Binney, who was every bit as generous as Father Christmas, and there are a lot of other people who are generous and who give. The thing about St Nicholas is he gave without making a fuss about it. The daughters in the story didn’t know where the gold had come from.” So don’t be a humbug this Christmas. Bask in one of our many festive traditions and embrace your inner Father Christmas. Whatever part or version of the Christmas story you choose to follow and however many years have gone by, the message remains the same; celebrate in style and give as much as you can to others.

/BBC GOOD FOOD’S SALTED CARAMEL PARSNIPS/
Ingredients 500g brussel sprouts, outer leaves removed, halved through the root 125g smoked, streaky bacon, chopped Olive oil, for frying 100ml Marsala (if you can’t find Marsala, try Madeira, or a medium sherry instead) 50g flaked almonds 3 tbsp double cream Salt and pepper, to season
Prep time: 5 minutes Cook time: 40 minutes Serves: 6
Method 1. Fill a bowl with cold, iced water. Bring a pan of salted water to a boil and add the sprouts. Bring back to a boil and simmer for 2-3 minutes, drain, then plunge the sprouts directly into the cold water and leave for five minutes. 2. Fry the bacon in a non-stick frying pan with a little oil until crisp. Add the Marsala and reduce by half, then take off the heat and leave to cool. 3. In a dry pan, over a medium heat, toast the almonds for a minute or two, stirring regularly, until golden. Set aside in a bowl. 4. Put the pan with bacon in it over a medium heat. When it starts to sizzle, add the sprouts and the cream and bring back to a gentle boil. Season with salt and pepper and simmer for three minutes. 5. Scatter the toasted almonds over the sprouts and serve.

/BBC GOOD FOOD’S STICKY PIGS IN BLANKETS ROSEMARY SKEWERS/ Prep time: 20 mins Cook time: 30 min Makes: 12 skewers of three An old favourite, these little piggies are bound to make an impression. Ingredients Drizzle of sunflower oil 12 sturdy rosemary sprigs, each about 10cm long 6 rashers streaky bacon 36 cocktail sausages 2 tbsp maple syrup Method 1. Pre-heat oven to 180°C. 2. Grease a large baking tray with a little oil. 3. To prepare your skewers, remove most of the leaves from each rosemary sprig, keeping a few leaves at the end. Sharpen the other end to a point by cutting it at an angle. 4. Stretch the bacon on a chopping board and cut each piece in half across the middle. Thread three sausages onto each skewer, weaving a piece of bacon around them as you do. 5. Arrange the skewers on the baking tray and bake for 20 minutes. Turn them, brush with maple syrup and return to the oven for ten minutes more until really sticky.

Don’t just save salted caramel for desserts, it makes for a delicious twist on crisp parsnips too.
Method 1. Pre-heat oven to 220°C. Halve the parsnips then cut the thicker end in two lengthways. Boil for five minutes, then drain well and leave to steam-dry for a few minutes. 2. Meanwhile, pour the oil into a shallow roasting tin or a lipped baking tray and heat in the oven for three minutes. 3. Remove the tin from the oven and carefully add the parsnips to the hot oil. Turn them to coat, and make sure they aren’t overcrowded (otherwise they won’t crisp up). Roast for 30-35 minutes or until golden and crisp, turning them halfway through the cooking time. 4. About 10 minutes before the parsnips are ready, tip the sugar and two tablespoons of water into a small frying pan. Heat very gently until the sugar has dissolved. Turn up the heat and bring the liquid to the boil. 5. Measure three-and-a-half tablespoons of cold water into a jug. Keep swirling the pan around until the sugar reaches a rich, dark-reddish caramel colour, then remove from the heat. Stand well back and add the water (be careful, it will splutter). 6. Return the pan to the heat, add the butter and the salt, and stir to remove any lumps. The caramel should be runny, so add a splash more water if needed. Pile the parsnips into a serving dish and drizzle over the salted caramel.

NS Eating Out
Carnivore heaven Chris Wilson enjoys a meat feast at Stockdales of Yorkshire.
A
s we all become more concerned about the quality of the meat we eat and the welfare of the animals that produce it, there seems to be a real buzz around Leeds for restaurants serving superior steaks. The recent launch of Stockdales of Yorkshire in a prime city centre location could not have been better timed then, and following a £1.2million makeover, the former Sam’s Chophouse is looking decidedly plush. With classy wood panelling and leather seating reminiscent of a rather smart members’ club, the feeling is cosy and intimate with a bar and dining room at pavement level and stairs leading down to an open kitchen, private dining room and more public tables. All the meat on a menu dominated by steaks, chops, burgers and bourguignon is sourced from local farms dedicated to rearing their livestock in the traditional way. And, while you don’t have to be a dedicated carnivore to dine here, the glass chiller cabinet displaying various cuts of meat as if they were works of art (local legend Damien Hirst would approve) makes it pretty plain where Stockdales’ strengths lie. With this in mind I selected a classy Argentinian Malbec from the impressive red wine selection and set about finding some suitable meaty treats to match. The selection process was soothed by a pre-starter treat of sourdough bread and taster dishes of potted Yorkshire Wagyu beef (more of which later) and dripping with meat juices. Both tasted incredible and you may be tempted to call for more bread to polish off the lot but be warned, this is just the start and portions are not skimpy.

For starters proper, I could not resist the grilled bone marrow which came bubbling and rich inside a couple of mighty meat bones stuffed with bacon jam, slow roasted onions and parsley crumbs. Full of the intense flavours that come from the bottom of the roasting pan, this was poshed-up comfort food with a touch of class. Meanwhile my companion’s moules marinière brought a generous bowl of plump and tender mussels in white wine, shallots, parsley and cream. On to the main event, and for me a Wagyu beef ribeye steak cooked under the

Josper grill, at 480c so the skin was seared super-fast and all the flavour and those precious meat juices were sealed within. That’s the science bit anyway, and while my flunked science O-levels mean I’m the last person to understand or explain, the proof was in the tasting. It was tender, succulent, flavoursome and just about as good as a steak can be. The accompanying dripping chips were pretty special too. Wagyu beef originated from selected herds in Japan where, legend has it, breeding techniques including massages and a diet enhanced by beer and sake created distinctive marbling and the tenderest meat known to mankind. Now bred in Britain and more widely available, it can still carry a luxury price tag, although Stockdales do a Wagyu burger for budget-friendly £14. Whether you travel economy or business class, it’s worth the journey. Across the table, more precision cooking was in evidence with a rack of lamb, served perfectly pink with creamed potato, tomato, and a green olive and white bean jus. Again tender, tasty meat and well-judged accompaniments provided a main course to remember. If you’ve gone the whole hog on Stockdales’ starters and main courses, dessert may be a step too far but we could not resist a very grown-up dark chocolate tart with malted milk ice cream and salted caramel and a lemon curd baked Alaska with macerated berries to bring our evening to the perfect conclusion.

NS Eating Out
Words: Phoebe Seymour
Try something new
It’s beginning to look a lot like Christmas at Filmore & Union who offer some tasty alternatives to traditional festive dishes.
O
ne of my favourite things about the festive season is the rich food that comes thick and fast at family gatherings and office parties. But while we’re forgetting about calorie counting and succumbing to temptation, it’s easy to forget that some of our fellow diners have dietary requirements which limit what they can enjoy. This is particularly true at this time of year when many restaurants scale down their regular menus to a few crowdpleasing favourites. I have a handful of friends who are lactose or gluten intolerant and my heart and stomach go out to them at social functions. I also have vegetarian friends who make some amazing meals at home, but who struggle to find anything appetising on menus when we go out. More and more restaurants are making a conscious effort to include alternatives on their menus, but all too often the only thing vegetarians can eat at Christmas is a dry nut cutlet. The great thing about Filmore & Union is that lactose-free, gluten-free, vegan and vegetarian alternatives don’t feel like alternatives at all. They are options so appealing, I would happily choose them over more traditional dishes time and time again. At the new Filmore & Union in Harrogate, it’s looking and tasting a lot like Christmas with contemporary living room décor, cosy lanterns and twinkling garlands and a delicious festive menu. On arrival, my partner and I had a couple of winter berrinis, filled with fresh blackberries and nutmeg for a festive twist on the familiar prosecco belini.
NS • page 62
For starters, I had the tahini satay turkey skewers (gluten and dairy free of course) with a subtly spicy lime and chilli slaw, which went gorgeously well with a bed of cool rocket salad covered in lime juice. My partner had the baked chorizo served with crisp bacon, refreshing cucumber and puréed avocado, which was juicy without being greasy. For mains, my partner had a traditional fillet steak, whilst I went for the vegan Christmas tagine from the specials board. The tagine changes regularly, and this evening’s was a sweet potato, cranberry and chestnut version served with wholegrain festive rice. With its sweet and warm flavour and delicious chestnuts, I didn’t look twice at my partner’s steak, proving that even a committed carnivore like myself doesn’t have to put meat at the centre of a satisfying meal – at Christmas or any other time of year. There were also no complaints from my partner who happily demolished his medium steak and chunky chips. Finally, I had an indulgent crumbly chocolate brownie and my partner tried the dairy free blueberry and cashew nut cheesecake. Whilst I have to admit you can tell the difference between this and a dairy cheesecake, it comes pretty close to achieving the creamy texture and flavour of the traditional dessert. Filmore & Union have a very impressive, health conscious Christmas menu to please every palate this season and a fabulous cocktail and mocktail menu to match. I’ve already told one of my lactose intolerant friends about the new restaurant and she is counting down the days until her next visit to Harrogate.

The latest addition to the Harrogate dining scene is proving to be a big hit with diners looking for healthy options.
Filmore & Union in demand
F
ilmore and Union have recently opened up their brand new Harrogate restaurant, situated in the picturesque spa town at 71 Station Parade. Filmore took the decision to move after outgrowing their previous premises, due to high customer demand, which just keeps on growing. Their new restaurant is the largest one in the company, and can seat up to 120 people over two floors, with two stylish outside dining areas, a delicatessen and a contemporary cocktail bar. It seems the Harrogate Filmore is the new place to be with customers already saying ‘new Gucci premises, same gorgeous food and service’ and ‘everything about this place is exquisite’ we can only see Filmore and Union’s new restaurant going from strength to strength. The restaurant is open all day throughout the week, serving energising breakfasts where you can read the morning papers with a fresh organic coffee. Later on, how about cocktails after shopping with the girls for lunch, or enjoy a leisurely dinner seven nights a week with friends and family where you will be surrounded by candles, throws and fresh herb plants that go along perfectly with the warm lighting and their very own playlist ranging from Jack Johnson to

Buddha Bar. If you can’t stay and eat, then you can take something to go from their deli counter located on the ground floor, with everything from fresh salads and seasonal filo tarts to sweet potato lentil cakes and protein power balls – not forgetting their gorgeous array of gluten-free cakes and refreshing juices and smoothies. If you’re catering for an event or party this season, take a look at their preorder and collect menu online, or take a copy from your nearest store, where they will cook everything to order and you can simply go in and collect – has hosting ever been easier? Filmore and Union pride themselves on providing a wide range of gluten-free and dairyfree options whilst catering for many dietary and allergen requirements, even recommending dishes for those living a paleo lifestyle. With the festive season upon us, Filmore and Union have released their Christmas menu which has been highly anticipated by loyal and new customers. They certainly haven’t disappointed with 100 per cent gluten-free dishes such as roast Yorkshire venison fillet, baked sweet potato and pumpkin fries and their very own Filmore Christmas pudding, served with vanilla and agave yoghurt. Whether you’re organising an elegant cocktail and canapé reception, a family gathering, a simple buffet or private dining (only at their Wetherby and Skipton restaurant) for a work Christmas party, Filmore and Union can cater for your every need. And with their restaurants getting busy, it’s definitely worth booking in advance to avoid any disappointment! Christmas cuisine – continental style
C
reate some great memories this Christmas at San Carlo in Leeds: family, fun and delicious food. Let us serve you a luxurious menu in sophisticated surroundings – setting the scene for precious time spent with loved ones. Our fondest times are often forged when gathered around a table where life and food are shared, and we want to help you indulge in the experience. After all Christmas only comes round once a year. Enter our authentic Italian world. Christmas Day with us will be celebrated with a five-course meal. Look forward to
manzo pepato (steak cooked to perfection topped with parmesan), suprema di pollo principessa (chicken breast in parma ham) with a beautiful honey, lime and pine nut sauce. If your festivities wouldn’t be complete without a British tradition – then try our turkey escalope with chestnut stuffing wrapped in pancetta. Factor in the champagne sorbet, and we’ll be making sure you have a reason to be jolly! Both our San Carlo Leeds restaurant in the city centre and Flying Pizza in Roundhay will be offering a special Christmas Day lunch, but if you want a flavour-packed meal in the run up to the 25th – choose our Christmas Fayre lunch or dinner. We’re proud to be offering a selection of plates from around our beautiful country, showcasing everything from the delights of Venetian pasta, to Sicilian classic melanzane parmigiana to wholesome homemade recipes such as hearty beans and vegetable soup served with Tuscan croutons. Round it off with Christmas pudding or Tiramasu, or pile up the profiteroles and share them out with your friends.
Looking beyond to New Year, join us to see in 2016 with a spectacular food selection from a full a la carte, contemporary menu. We’ve been facilitating guests’ special celebrations for over 23 years now; so however large your party, we know how to help you have a good time! Something that has landed us a place in The Sunday Times’ list of the UK’s 100 stand-out companies.

The spirit of Cuba
After blazing a Latin trail in the early noughties, Cubana are now firmly established as one of the top party venues in the city.
I
t was 15 years ago that Cubana burst onto the Sheffield nightlife scene, offering a burst of joyous Havana sunshine on a sleepy back street a short shimmy away from the city centre. Looking at all the multicultural restaurants, bars and music venues in the city, it is easy to take the wide variety of food, drink and sounds from around the world for granted. But it hasn’t always been such a hotbed of diversity, and Cubana was one of the trailblazers that helped breathe new life into Sheffield. Now the salsa venue is celebrating a landmark anniversary… and it is as fresh and vibrant as ever. First unleashed on an unsuspecting public in November 2000, Latin music, salsa dancing, mouth-watering tapas food and colourful cocktails all blended, bringing people together in a fun and friendly setting. Now based in Leopold Square, the Latin beat pulses stronger than ever.
First Steps Co-owner Adrian Bagnoli first got into Latin music whilst visiting a popular Brazilian nightclub called the Maracanã in Florence, Italy. Adrian was amazed by the lively atmosphere and was convinced that this was exactly the kind of night out Sheffield needed. “Back then, the only Latin music people knew was The Gipsy Kings and La Bamba,” explains Adrian. “We decided the time was ripe to introduce a bit more culture to Sheffield.” Adrian and friends Toni Dente and Gian Bohan started by launching a Viva Salsa night at local nightclub Club Uropa (formerly Isabellas), booking Brazilian DJ Marcus Vinicius and a live Brazilian band called Viramundo for the opening night. An astounding 700 people attended the first event in June 1996, making Sheffield’s first salsa club night an undeniable success. “This really paved the way for us,” says Adrian. “Calendar News came to cover it and the atmosphere was incredible. It gave us lots of confidence and we started booking touring bands from Cuba and Latin-American bands based in London and Manchester.” The final Viva Salsa took place in May 2000 and it was then that Adrian joined forces with Brad Charlesworth and Kito Morales to open Cubana on Trippet Lane.
NS • page 66
Cubana Mk. I – Trippet Lane Getting the look of the venue right was just as important as creating the authentic tapas dishes and cocktails, so Adrian employed talented architect and close friend Paul Brady, to capture a true Latin vibe. “We offered something different – people felt like they’d discovered something great tucked away on this backstreet in the city centre,” says Adrian. “There wasn’t another tapas bar in Sheffield at the time. “We’d already built up contacts with the Latino community from the Viva Salsa night, so they were on board as soon as they discovered we’d be offering live music.”
Cubana Live One of Cubana’s proudest moments was hosting a night at Music In The Gardens Festival 2010 in the Botanical Gardens. Cubana Live attracted a sell-out crowd of over 3,500 people and helped raise thousands of pounds for local charities. The extravaganza offered some of the most popular Latin artists, including Omar Puente and his band. The group arrived in chauffeur-driven 1957 Chevrolet convertibles and pulled up in front of the stage, before delivering an amazing performance. Omar Puente and his band

Special Guests Over the years, Cubana have been honoured to welcome many memorable guests. A visit from legendary Cuban band the Buena Vista Social Club in 2007 was certainly a highlight and Adrian was overwhelmed when the band returned after their second Sheffield City Hall gig in 2008. Brad and Adrian with Not least, because the highlight of their second visit Roberto Duran (centre) was when Buena Vista’s pianist Rolando Luna took up the offer of playing the classic Latin favourite ‘Guantamanera’ alongside the house band on Dr Aleida Guevara (centre) a piano specially hired in for the occasion. “It was just incredible, the place erupted and the atmosphere was electric – it was a very special night,” confirms Adrian. Once at their new premises at Leopold Square, Cubana was given the ultimate seal of approval when Dr Aleida Guevara, daughter of famous Latin American revolutionary Che Guevara, visited for dinner and posed for a picture underneath the portrait of her father. Other notable guests include Panamanian boxer Roberto Duran, once considered to be the best pound-for-pound fighter of all time, who visited in 2003 and the cast of Lady Salsa following a performance at the Lyceum Theatre.
Cubana Mk. II – Leopold Square After 14 years building up a reputation as the most vibrant independent Cuban bar in Sheffield, it was time to say goodbye to Trippet Lane. Adrian discovered the two-level venue, formerly Platillos in Leopold Square, had become available. After a discussion with business partner Brad, they decided the time was right to move. Adrian and his team enlisted the help of local artist Paul Staveley and Paul Brady once again to recreate Cubana’s trademark style. Just four days after closing the Trippet Lane venue, the new Cubana was opened. “The final Saturday night at the old Cubana felt like a New Year’s Eve party; people were looking forward to a potentially exciting future,” Adrian recalls. “We opened with a big party on Thursday 24 July. Over 400 people turned up and it was an incredible atmosphere. We knew right then, from everyone’s reaction that it was going to work.” Now offering two floors for two different nights out, diners can enjoy the cosy upstairs area or party downstairs. Cubana turn over around 300 diners on a Saturday night, many of which stay all night. “You could walk in at 7pm and end up staying until we close at 2am,” says Adrian. “There’s great flavoursome food, courtesy of Chilean head chef Fabrian Cruz who has been in charge of kitchen affairs since day one, exotic cocktails, friendly customer service, chilled-out live music and vibrant music to dance to – all under one roof.” Cubana’s Salsa In The Square has also been a huge success. Since Cubana has taken over hosting the Bank Holiday Sunday extravaganza, attendance numbers have doubled and Adrian looks forward to offering a live Cuban salsa band, salsa lessons, dance demos and more in May 2016. So, after 14 years brightening up Trippet Lane and a successful first year adding a vibrant mix of Cuban flavour to Leopold Square, how will Adrian and his team be celebrating their success? “Of course, there will be a big party, but Brad and I are going over to Cuba in January too,” says Adrian. “It’s such a great place and we’ll get loads of inspiration. We’ll be treating that as our 15th birthday present.” If you’re looking for a lively venue with the full package, Cubana can provide the delicious food, the colourful cocktails and the live entertainment to start your festive season. NS Male Essentials Photography: Aston Martin/Rouge Events
For your eyes only Adam Kay unleashes his inner James Bond by jumping behind the wheel of the latest Aston Martin to mark the release of SPECTRE.
I
am in an Aston Martin DB9 GT at top speed, burning rubber, pedal to the metal. Beneath my three-piece suit, my heart is pounding. An evil henchman sits beside me, gun trained at my temple. In hot pursuit, a fleet of hired goons, tyres screeching as they race to close me down. I glance at the hidden button that triggers the rear machine guns; one touch would blow the enemy to dust. I hover my finger over it, waiting for the right moment, hovering, hovering… Alright, alright. No I don’t. No I’m not. I am in an Aston Martin DB9 GT; that much is true. But not in a heart-stopping, nerve-shredding, high-speed chase. Actually, I am somewhere off the A6110 just outside Leeds – and I am stuck behind a tractor. I am wearing my best three-piece suit, yes – but it’s high street, not Savile Row. The evil henchman at my side is in fact a very nice

man from Aston Martin called Richard. (And he’s unarmed. Well, as far as I know.) And the cars behind me are not driven by hired goons; more likely they’re retirees on their way back home from Lidl. I am here, behind the wheel of this great machine, as part of an event celebrating the latest James Bond film, SPECTRE. But as you’ve probably gathered, I’m making the most of the opportunity by indulging in a little wish-fulfilment. As a kid, 007 was my hero. While peers chased footballs round a field and idolised Ronaldo (the one with the teeth, not the one with the abs), I was dreaming of being Bond. Sean Connery’s effortless sophistication, Timothy Dalton’s anguish and grit, Roger Moore’s eyebrow acrobatics – I loved ‘em all. I think my favourite ever Christmas present was the waistcoat and bow tie set which became my unofficial spy uniform. All of which explains why now, sat in the driver’s seat of an Aston Martin – AN ASTON MARTIN! JAMES BOND’S CAR! – I am having a bit of a moment. Later this evening, at Aston Martin Leeds, is the main event. The car dealership is filled with Aston Martins identical to those seen in Bond films through the years. Oh! There’s a DBS like Bond’s wedding car in On Her Majesty’s Secret Service! Ah! That’s a V12 Vanquish, like the ‘invisible’ car from Die Another Day! Nfgh! That’s a silver DB5, the Goldfinger car! Over here, the pièce de résistance: an Aston Martin DB10. In celebration of the manufacturer’s long association with the Bond franchise, this new model was created especially for SPECTRE; only ten will ever be made, eight of these used as stunt cars in the movie itself. And unlike the other replica vehicles on display tonight, this one is the real deal – one of those eight seen onscreen. After attendees have mingled and been suitably refreshed (yes, the bar is serving vodka martinis; yes, I do partake; I must report they are stirred, not shaken), the evening’s guest speaker takes to the stage: rally champion and stunt driver Mark Higgins. Mark is arguably more Bond than Daniel Craig. That car chase through Rome in SPECTRE? That’s Mark with his foot to the floor, not Daniel. Any driver’s dream job – but, says Mark, not without its challenges. “We spent one month in Rome, the whole of March, shooting a sequence that ended up making about two minutes of screen time in the final film,” Mark says, “And there are 350 film crew, 16 security people, 150 extras on location – about 1,000 people there in total, all for this two-car chase. So the pressure to get it right is pretty immense.” A professional driver from the age of 17, Isle of Man native Mark has won the British Rally Championship three times. His

appearances on camera are another arrow in his quiver; his stunt CV includes work on Top Gear with Ben Collins, aka The Stig. He began his association with Bond on the second Daniel Craig film, Quantum of Solace, and together with his team won an award for stunt work on its follow-up, Skyfall. But as well as being Bond, Mark’s work on the films throws up some other surreal moments as well… “I spent most of Skyfall dressed up as the actress who plays Moneypenny, Naomie Harris – hair, make-up, everything,” Mark laughs. “Once she came in to the dressing room as I was being put into costume – that was a weird day!” Whatever the outfit – dinner jacket or drag – it’s fair to say Mark’s position as 007 stunt driver is safe. Cut back to me in the Aston Martin DB9 GT, tootling along behind the tractor. Despite my love of Bond, I do not share my fictional idol’s skill with or knowledge of cars. For the petrolheads, here are the vital statistics about the one I’m currently driving. 6.0-litre V12 petrol engine. Touchtronic II sixspeed transmission with electronic shift-bywire control system. Zero to 62 mph in 4.5 seconds. No? Me neither. All I know is it goes fast, and looks gorgeous while it’s doing it. This particular model of Aston Martin is the latest version of the DB9 – the one
before the SPECTRE car – and will set you back some £140,000. But that weighty price tag gets you a vehicle truly worthy of a secret agent. Little wonder that Bond has such a strong and lengthy connection with Aston Martin: both are quintessentially British and the very definition of style. The DB9 GT even has a gadget or two. Before we set off, Richard, the nice man from Aston Martin who is contractually obligated to ride along with me to make sure I don’t die (or worse, put a dent in the Aston), shows me the controls. He touches a button – and on either side of the dashboard, up pop two Bang & Olufsen stereo speakers. Not quite hidden machine guns, but still pretty cool. Later, as we pull onto the motorway to head back to the garage, Richard presses another button that switches the DB9 into ‘Sport’ mode. The exhaust lets out a leonine roar and our heads hit the seats as the car thrusts forward, all speed and fury. And though I know I have to hand the keys back soon and that my nostalgic trip is almost over, in that moment I am Bond again. I look in the rear view mirror at the hired goons giving chase. My finger pauses over the trigger, hovering, hovering… JCT 600 Aston Martin Leeds Ring Road, Lower Wortley, LS12 6AA Tel: 0844 844 3108 www.jct600.co.uk

They believe in using whole foods that are packed with nutritional value, as opposed to sugar-laden ‘low fat’ products and processed refined sugars or fats. “You certainly won’t find a microwave or deep fat fryer in any of our kitchens. Not frying is our golden rule,” says Will. “We select the highest quality and healthiest ingredients from our local suppliers to create meals that contain all the nutrients our bodies need to glow from the inside out.” Will is also head chef and divides his time between running the production kitchen at headquarters, developing new dishes and training the chefs in all eight sites. Alan is director of a clinic which uses state of the art technology to treat osteoarthritis, spinal discs, osteoporosis, bone fractures and sports injuries. The technology can also be used as a preventative, anti-ageing treatment to offset the ravages of time. Alan’s wife, Nicky Snazell, is joint director, and has world specialist skills in helping people with severe and chronic back pain. The couple also have two wellestablished clinics in Staffordshire. “I’ve come from an international career in running aerospace companies and I my aim is to create a national brand and to assist Nicky in growing her career,” says Alan. Alan constantly seeks out new ideas through reading and attending seminars. Find a good mentor who has walked the talk.”
Dave is the managing director of the cycling store, which not only sells top-end bikes for all levels, but encourages individuals to get more involved in cycling through trails, clubs and town centre initiatives. “Going forward, it’s a long term game, as many in this business are cyclists themselves,” says Dave. “My role is to ensure the customer has the best retail experience possible by having the best team within the business providing quality products, whilst providing value for money.” Dave says the E-commence side of retail is very strong, but nothing beats hands-on service. He is most inspired by Richard Hemington, MD of Specialized UK, who helped open the first Specialized Concept Store in Europe and provided the template for the other 12 UK locations. “There are lots of challenges in business today so make a plan,” says Dave. “As the saying goes, ‘Fail to plan – plan to fail’.”

Director of music for Richmond House Victoria Lloyd said: “We are delighted that we were able to ensure that this concert went ahead, despite the tragic circumstances surrounding Natalia’s death. It was a pleasure to see how much Leo has progressed and I was delighted that so many of our own young musicians attended the concert to be inspired by such a talent as Leo."
