Sustainable & stylish Leeds showroom first to offer groundbreaking kitchen.

eeds kitchen showroom, Four Season Interiors, were recently announced as the first UK Retailer to offer a groundbreaking kitchen from Finland. The kitchen range, the Puustelli Miinus, differs from conventional kitchen ranges in that it was developed entirely on ecological grounds and incorporates an innovative biocomposite carcase frame made from polypropylene and wood pulp. Owner and Design Director Ian Sandford explains: “The resulting cabinets are lighter, stronger and their make-up almost halves the carbon footprint of conventional counterparts.” The Miinus kitchen is sure to appeal to the growing number of buyers who are now purchasing ethically, but that’s not the only reason Ian believes Miinus will prove to be a popular draw. “Miinus improves upon a number of specifications of existing ranges. The door finishes are not only innovative in their use of a honeycombed inner core that prevents stress on hinges, the styles and colours are extremely appealing, both to the eye and to the touch. The range also arrives with lengthy warranties and there’s no MDF or chipboard that are present in the majority of kitchens.” The range recently debuted at the

popular Ecobuild exhibition at London’s ExCeL and Ian, along with Four Seasons Interiors designer Liam Hannon, were present on the stand to discover, first-hand, an impressive reception from the professionals who attended. “It’s a great measure of how good a range is when a busy stand, full of architects, designers and specifiers, are left utterly smitten after witnessing a kitchen that ticks all the boxes.” Puustelli invested £1.5million in the development of Miinus and, including stores across Finland, the range already has an established and growing network of showrooms in Sweden and has recently been introduced into the United States. Every component in a Miinus cabinet is recyclable and all wood components within the range are sourced from highly sustainable forestry. The company have also been busy on social media so that Twitter and Facebook users can engage with them and follow their progress as they grow their network of reputable retailers across the UK. Ian adds: “Miinus kitchens are a breath of fresh air within the kitchen industry and we’re proud to be the first in the network of UK retailers. It’s great also for the people of Leeds

that our city, which figures high among sustainable cities in the UK, will be the first to offer a truly pioneering kitchen for our time.” To celebrate the launch there will be an open event, in association with AEG, at the Roundhay showroom on 7 May, running from 11am until 3pm. With live cookery demonstrations from food stylist Tom Guise and other entertainment planned for the day, it’s a great opportunity to see the pioneering range of Scandinavian furniture and learn all about the AEG appliances within it. fter six sell out UK tours, 300,000 tickets sold, countless television performances and numerous other accomplishments; Diversity have announced their seventh tour “Genesis” for April 2017. As part of this tour they will be returning to first direct arena, Leeds on the 15 April 2017. After wowing audiences in 2015 with their 31-date Up Close and Personal tour, Diversity will once again return to arenas across the UK. The new tour Genesis is the concluding part of their super hero fantasy epic and follows ‘Limitless: The Reboot’. Creator and choreographer Ashley Banjo said of the tour: “It is approaching seven years

since Diversity won Britain’s Got Talent in front of an audience of over 20 million and thanks to the support of the British public and our legion of fans we have gone from strength to strength.” Driven by their motto ‘Dream, Believe, Achieve’, Diversity continue to inspire all generations and are a remarkable example of what can be accomplished with dedication, belief and hard work. After finishing his fifth series as head judge on Sky 1’s Got to Dance, Ashley Banjo currently co-presents BBC One’s brand new entertainment programme, ‘Can’t Touch This’ and will also front a pioneering television programme for ITV tackling the sensitive issue of bullying.

Other Diversity members Jordan Banjo and Perri Kiely continue to work closely with Nickelodeon and have just returned from Los Angeles as UK presenters for the Kids Choice Awards for the third consecutive year. seven years ago. And it’s this background that has equipped him so well for the independent market. “My job was about listening to customers and finding out what they wanted to wear – and I’ve carried that through to Sudo Attire. The way I’ve set the business up now, we buy often so we’re always getting new stock delivered.” And this stock isn’t bought in bulk. “If you’ve spent £120 on a shirt, the last thing you’ll want is to walk into a bar and see four other people wearing the exact same thing. We only buy a handful of each item and never repeat our orders so you’ll always find something new and different.” The great news for those who work full time, or don’t have the chance to shop in usual opening hours, is the flexibility Mark is able to offer. Putting his customers first, he’ll happily open at 6am or stay late to accommodate his busy clientele. He even visits his most loyal customers’ workplaces

with fabric swatches (he already has their sizes) so they can update their wardrobe without leaving the office. “Nowadays people just don’t have time on their hands to shop,” says Mark. “If I can do something to help with this, I always will. If people are visiting from out of town, I’ll also drop their orders at the hotel so they needn’t be inconvenienced.” Corporate clients aren’t the only highprofile customers that Mark has established relationships with. As well as business, wedding and race wear, his made-to-measure suit service (from £299 to £600) has seen footballers and managers from Leeds United, Huddersfield Town and Preston North End sporting Sudo Attire’s high quality designs. Suits come in a variety of fits, so whether you prefer slim, regular or relaxed – and no matter what leg length – you’ll find something to match your requirements. Dr Lynne Rogerson (MD FRCOG), is a consultant gynaecologist at Spire Leeds Hospital and Leeds Teaching Hospitals Trust. Question: For the past six weeks I’ve been experiencing pain, usually a burning sensation, when I urinate and a couple of days ago I noticed a small amount of blood in my urine although there has not been any blood since then. What could be the cause of this and do I need to see my GP? I’m a 42-year-old female. Dr Rogerson replied: It is very important to see your GP. The most likely diagnosis is cystitis which means ‘inflammation of the bladder’ but is most commonly used to describe the symptoms of a bacterial infection of the urine, or Urinary Tract Infection (UTI). UTIs are very common and present with pain when passing urine (dysuria), passing small amounts of urine very frequently, and sometimes there may be blood present in the urine (haematuria). UTIs are usually treated with antibiotics but it is important to ensure a sample is sent to the laboratory to identify the bacteria and ensure the appropriate antibiotic has been prescribed. UTIs can be recurrent (more than three per year), and sometimes low dose preventative antibiotics are prescribed. If the urine sample does not confirm a UTI, your GP may send your sample for further analysis to check for more serious conditions such as bladder cancer. Bladder cancer is more common in men and in smokers but it may be prudent to carry out a cytology test to check for cancer cells shed into the urine. Other investigations may include an ultrasound of the kidneys and bladder along with a cystoscopy (camera into the bladder). This is a simple day case procedure and if there is any sign of a bladder tumour, your consultant may be able to remove it at the same time.

From Saturday 28 to Monday 30 May, The Great British Food Festival will once again be taking place in the gorgeous grounds of Harewood House. There will be a whole host of local and celebrity chefs doing cookery demos, over 50 producers and up to 25 bars and street food stalls to visit in the Taste Marquees, kid and adult cookery classes, Men Vs Food Challenges and more. New for 2016, ITV BBQ Champ Finalist Tony Smith will be doing regular BBQ demos at his Man Meat Fire stall throughout the day and after proving so popular last year, resident Camping Cookery expert Paula will be back to inspire us to do even more outdoor cooking this summer. Masterchef finalist Luke Owen, Great

British Bake Off 2014 contestant Luis Troyano and founder of Orchard Bakery Rob Didier will all be returning to the Chef Demo tent to offer advice and tips on creating your very own delicious dishes. Little did he know he would one day be cooking ambitious US-inspired dishes for Man Vs Food’s Adam Richman on ITV’s BBQ Champ. “Adam Richman was the reason I got into barbeque,” says Tony. “When my youngest was born, I was a stay at home dad so I watched a lot of telly. Man Vs Food was on and before he does the food challenge bit, he goes around some BBQ joints in America and I thought, ‘I reckon I could make that!’ ” However, Tony soon found that talking the talk was the easy part. “So I did it and it was the worst thing I’d ever eaten,” he admits “I can’t remember what possessed me to try again, but once I did, it was a bit better. Then the one after that was a bit better and it became a personal challenge to get something edible out of a barbeque. It is a lot harder than it looks. There’s a lot of science behind it!” Once Tony had mastered the art of outdoor cookery, there was no stopping him. After winning the Choice round at the British BBQ Society

Mayhem In May competition in 2013 and coming third in BBQ Champ, Tony went on to found the hugely successful street food and catering company Man Meat Fire which specialises in US style low and slow smoked barbecue and Southern soul food. He and his team also run BBQ demos and master classes around the UK and will be inspiring foodies to be more adventurous this summer with appearances at all seven Great British Food Festival dates across the UK – including Harewood House later this month. Originally from Middlesborough but now living in Ripon with his wife and four children, Tony is proudly flying the culinary flag for the

north with plenty of restaurant residencies in Leeds (he recently finished one in The Kitchen at The Oracle) and proudly sources his meat from his local butcher. Tony’s culinary talent and down-to-earth attitude has won him many friends, including BBQ Champ celebrity judges Mark Blatchford and Adam Richman, and Que Fresco owner Paul Yates, who built Man Meat Fire’s oven Casey Jr – named after the train in the Disney film, Dumbo. “I’ve got a huge group of friends who I’ve met through barbeque. Lots of them, I’m very close to and I spend time with them, we see each others kids… Call it a BBQ family!” So what can we expect from the BBQ Demos at Harewood this year? “Just interacting with people and talking about barbeque - It’s the best bit! I get to talk about what I do, while I do it, to people who want to listen and talk about it. “The first festival we did was really free-flowing. Everyone was able to just come up, have a chat, have a look round the BBQ and it was very relaxed. “I might do that, then a bit more of a structured session where I say this is a beef rib, this is how you

cook it, and people see what it’s been cooked in, the timings, the techniques - not all of them, some are secret! But they can see it all happening there before they eat it. It creates a real buzz.” A classic burger makes a trusty go-to snack at any festival, but for those meatlovers wanting something a little more exciting, Tony’s signature BBQ beef short ribs are the way to go. “First of all, they get covered in my rub – a basic Dalmatian rub, which is basically salt and pepper, a bit of garlic powder and some other stuff. They get smoked on our huge pit, Casey Jr and then they get wrapped. “The whole cooking process takes about nine hours which is reasonably fast in BBQ terms.” Finally, we asked Tony the most difficult question a true foodie could possibly be asked: what would he choose as his last supper? “It would either be Alaskan snow crab’s legs or my wife’s roast dinner. She does the best Yorkshire puddings in the world - from scratch of course! Aunt Bessie’s is a swear word in our house,” he laughs. “Maybe I’d have the crab as a starter, then the roast for main. That’d be lovely! Then flourless chocolate cake for pudding – that’s her recipe for the cake as well. “Am I allowed a three course meal? I mean I’m on death row! With a glass of Malbec. If I’m going to go whole hog, I might as well!”

Tony Smith gives budding BBQ enthusiasts some tips on how to build the perfect BBQ. LET THERE BE LIGHT We don’t use any synthetic or petrolbased fire lighters. We use tortilla chips. If you light them, they stay hot for ages and start your charcoal up nice. NO SMOKE WITHOUT FIRE For something big like a brisket or pork shoulder, you can heat it with a lot of smoke because it will only penetrate so far down, but when you are working with something thinner like a steak, you don’t want it to go through because it will just end up tasting like an ashtray. Pro Q and Que Fresco smokers are good. INTO THE WOODS It’s all lump wood and restaurant grade charcoal that I use such as Big K. I don’t use any briquettes or anything manufactured. You can use fruit wood. Something like apple is light, then there’s cherry, oak, hickory, right up to mesquite. You only need a tiny bit of mesquite because it makes it very bitter.

Broadening horizons Leeds City College students were given a masterclass in southern Indian cooking at one of the city’s leading specialist restaurants.

ix students in pristine chef whites gathered round the hotplate, observing carefully as head chef Ajith Nair expertly prepared the kidilan kozhi starter. He scooped the dry-style curry onto a banana leaf and we each snaffled a forkful, savouring the impressive fusion of flavours. Top marks all round. In a rare opportunity for a peek behind the scenes of Michelin-recommended Tharavadu in Leeds, chefs Ajith Nair and Rajesh Nair – who were born and brought up in Kerala, South India and each boast over 25 years in the industry – had opened their kitchen up to Leeds City College students for a cookery morning of demonstrations, a chance learn about Kerala ingredients and cooking techniques.

Course leader Scott Masey had arranged the class with Tharavadu co-owner Siby Jose after dining at the restaurant. “I came to Tharavadu and was really impressed with the food. I spoke with Siby about working with our students and he said yes straight away. I always keep my eyes open for new opportunities,” he says. “It’s about trying to expose these guys to as much as possible and broadening their horizons.” “We love any opportunity to help people learn about and experience our cuisine,” Siby adds. “This isn’t something we have done before, but it’s great for our chefs to be able to share their knowledge with younger chefs.” The students, studying a VRQ (Vocationally Recognised Qualification) Level Two Diploma in professional cookery each

relished the chance to have a go at making a dosa (a large crepe made from rice batter and black lentils cooked on the hotplate), with impressive results. The final dish – and one of the most popular on the menu – meen koottan was a beautiful fusion of freshly ground spices, fish tamarind and chunks of delicious Tilapia, and was as readily received as the starter. As the cookery morning concluded, chefs Ajith and Rajesh began preparations for the busy lunch service, which many of the students stayed behind to enjoy. “We had a fantastic morning with Siby and the team,” one student commented. “It was great to be cooking authentic Kerala cuisine. We really enjoyed the experience and learned a lot. Many thanks to Siby for the opportunity.”

Sukhothai’s Ban Kaewkraikhot on why she loves bringing culinary joy to the people of Yorkshire.

B

an Kaewkraikhot, head chef and owner of Sukhothai, opened her first restaurant in Chapel Allerton in 2002 and has since added three more – in Leeds city centre, Headingley and Harrogate – to her portfolio. And it’s not just the hundreds of fivestar ratings on TripAdvisor that reflect the restaurants’ exceptional food, atmosphere and service – The Times has named it one of the top ten Thai restaurants in the UK and it has featured seven times in the Good Food Guide. Here, she tells Northside what everyday life is like in and out of the kitchen, what drives her to succeed, and why she loves Yorkshire.

What exactly does your job entail? My job is immensely varied. One minute I can be in a meeting with an interior designer about the décor in a restaurant, the next I will be in my chef’s whites and chopping carrots. I think of my team as my Sukhothai family and family is very important to me, so I’m always at one of the restaurants in some capacity or another. What is a typical working day like for you? Although I am the owner of the restaurants, I can’t help being a hands-on person and am happiest when doing what I love – working in the kitchen cooking authentic Thai food for my fabulous customers. What has been the highlight of your career so far? It’s hard to pick one highlight from the last 14 years as I am so lucky to have been blessed with so many. Opening my first restaurant has to be my proudest moment I think. But then there are our seven consecutive inclusions in the prestigious Good Food Guide, or maybe cooking for Masterchef’s Greg Wallace last year. www.regionalmagazine.co.uk

What do you enjoy most about your job? I love being in the kitchen; it’s where I belong and feel most comfortable. There’s nothing more satisfying, as a chef, to see the people you cook for enjoying the food you have made for them. It makes it all worthwhile. What is the toughest part of your job? There are many challenges running a group of restaurants but the main ones are keeping all my customers happy and keeping my Sukhothai family smiling. To me, any restaurant worth its salt should put its customers first and its team about half an inch behind that. If your team is happy then your product is at its

best and then, hopefully, your customers are happy and will keep coming back. If you’re having a tough day, what gets you through? The most relaxing thing I can do is cook. That might sound strange, given my job, but it really is where I am happiest. Whether I am cooking for customers, friends or family, I immerse myself in the process so much that I can switch off from all the stresses and strains of being the owner. What advice would you give to anyone thinking of a similar career? Never, ever give up on your dream – no matter what.Your dreams are what drive and inspire you and whatever obstacles present themselves, you can overcome them if you really believe in what you are doing. What do you enjoy doing outside of work? Being based in the beautiful county of Yorkshire is a definite advantage.You don’t have to venture too far out of its towns and cities to find the most splendid countryside and green space. Thailand is my home and it is a beautiful country, but I have to admit that Yorkshire is every bit as beautiful, even if the climate isn’t quite like Thailand! Where do you see yourself in ten years? Cooking for my customers and bringing them a true taste of Thailand. Maybe there’ll be more restaurants by then, maybe there won’t, but as long as we are bringing some culinary joy to the great people of Yorkshire (and maybe beyond) I will be very happy indeed.

Head chef Gavin Smith sets the menu each day, he says: “I love the satisfaction, hard work and enjoyment that goes into putting together dishes for them to be appreciated by others. My advice to aspiring chefs is: if you really love cooking, enjoy the hard work and the long hours and don’t be too proud to always keep learning. There is always lots to learn from the chefs (your family) around you.”

Brett’s was opened in 1919 and has done remarkably well throughout its years. “We took it over in 2014 and completed an extensive refurbishment and rebranded the venue as Charlie Bretts,” Wayne says. “We specialise in fish and seafood and I speak to our suppliers daily so I can order fish straight from the boat before it’s even been landed. “We also take care of our meat eaters by serving steaks, local game, different pies and more adventurous meats such as kangaroo and ostrich.”

Since Michelin-recommended Tharavadu opened its doors two years ago, head chef Ajith Nair has served up delicious authentic Kerala cuisine. Each day is busy with preparation, cooking, cleaning and documentation, but Ajith says working hard is all worth it for satisfied customers. “I love seeing smiles on customers’ faces while eating and that sound after the first bite… mmmm.” His signature dish – and one of Tharavadu’s most popular – is meen koottan, a very authentic flavour-packed Kerala fish curry. Peter Washburn has worked at the Granary Restaurant for eight years. He started out as a volunteer and worked his way up to head chef. “It’s important to work hard and learn as much as possible,” he says. “When given opportunities to advance and learn, always take them.” Serving up traditional English dishes with plenty of fresh salads – using their own produce when available – Peter loves nothing more than trying out new flavour combinations. “The feeling of giving people good and tasty food and the happiness they receive from it, is always great,” Peter says. “Always aspire for the best, but remember how important your attitude and relationships in the kitchen are.”

Creating the right balance full soft, sweet, rich, delicate and ripe tones all in one dish is no easy feat, but something that chef Amnuai Tawaitan believes is essential to be a successful Thai chef. With so many delicious options to choose from he can’t name a signature dish but says: “Our Massaman lamb is so tender and delightful. The curry is stewed for hours in strong Thai herbs and cumin spices to create a beautiful aroma, and the meat melts in your mouth within the first few bites.” He continues: “I like knowing all diners are satisfied and are happy to return and spread the word about our little restaurant. Happy customers equal a happy kitchen. Another highlight of working here is the people; some of us have been working together since the very beginning. It’s like having another family.”

Reflecting the back-street wine bars of Venice that serve snacks (cicchetti), small plates of seafood, meat dishes, pizzette and desserts of tiramisu and flourless pistachio and almond cake, Polpo is a haven of simple Venetian food. Chef Oswaldo Colon has worked with the company since 2012 and says he has grown enormously during this time. “Most of my creations are very closely related to Venetian food. My favourite dishes are prawns alla busara and artichoke risotto. “I love the satisfaction of delivering a great meal to my customers, the chance to teach the people around me and to see them develop and become passionate about flavours, colours, textures and aromas and finally, to love the simple fact of cooking as way of living.” To any aspiring chefs Oswaldo says: “Work hard, be honest and always be humble and try to learn all that you can from the people around you.”

Since Amici restaurant opened its doors in October 2013, Antonio Stincheddu has been creating fresh, high-quality Italian food. His favourite element of working as a chef is the freedom to be creative. “When it comes to cooking there are only a few set rules, after that, it is all about trying something new. Working alongside a great team makes work seem like play too,” he says. Each day he comes up with new dishes to add to the daily specials menu and he specialises in anything from his region in Sardinia.The mixed fish dish at Amici is a must. For any aspiring chef Antonio advises: “Have passion and commitment for what you do.The job means long, long hours, but once you have developed a diverse set of skills, the world is your oyster, you can then decide in which area of catering you want to pursue.”

The Anchor is well known for its traditional home-cooked English food and roast meats, including their locally-sourced, excellent quality beef and pork. Firm customer favourites include the Anchor steak and ale pie and their slow-braised lamb shoulder with rosemary and redcurrant. Nyk Snook says: “My day usually involves planning and preparing the day’s menu to include seasonal items; checking availability and forecasting the week’s business, and meeting and serving our customers. “Young chefs should attend catering college to learn the basics of cookery and underpin this with planned experience in a variety of good establishments to gain a full understanding of the catering industry.”

Chef Proprietor Orhan Girgin opened the doors to Lavanta last October, which offers delicious Mediterranean and European cuisine with daily changing chef specials. His signature dish for spring is a pan-roasted salmon fillet served with Israeli cous cous, chargrilled purple sprouting broccoli, and spicy yoghurt relish. “I am responsible for running the restaurant top to bottom, so my days start early and finish late,” he says. “The thing I enjoy most is making my customers satisfied; it is the whole purpose of being a chef. My advice to succeed in this industry is to work hard and learn.You may not become the wealthiest person, but if you truly love your art you will always be rich in your heart.”

BBC Children in Need is inviting funseekers to take part in Gung-Ho! – a 5K giant inflatable obstacle course coming to Temple Newsam on Saturday 14 May as part of a UK tour. New flights from Leeds Bradford From 28 October, Flybe will provide a year-round service between Leeds Bradford and Newquay airports that will operate three times a week.
