Turkey sandwich? Itâ&#x20AC;&#x2122;s time to be a little more adventurous

Leftovers, with a twist UNSURE OF WHAT TO DO WITH THAT LEFTOVER CHRISTMAS TURKEY? MOLLY McGREEVY HAS SOME TOP TIPS FOR TASTY FESTIVE TREATS. hether your Christmas catering is for two or 20, by Boxing Day the fridge will still be bursting with festive cuisine, but there is more to Christmas leftovers than a bubble and squeak and turkey sandwiches. There are hundreds of uses for your Christmas dinner leftovers, and if done right you can use the same ingredients to transform Boxing Day into just as much of a culinary treat.

Turkey Dry, predictable turkey sandwiches are a thing of the past, instead, fight off the festive flab with a light, flavoursome turkey salad, which could make an impressive centre piece at the Boxing Day buffet. With salads, there are no limits, as well as veggies you can throw in leftover nuts and seeds, or dried fruit.

TURKEY AND WARM CLEMENTINE SALAD Ingredients

2 banana shallots Olive oil 2 clementines 2 tablespoons red wine vinegar Sea salt Freshly-ground black pepper 250g leftover free-range turkey 100g mixed nuts and seeds, such as hazelnuts, pistachios or pumpkin seeds 50g dried cranberries 1 teaspoon runny honey 2 red chicory 75g watercress 75g rocket 2 tablespoons low-fat natural yoghurt 1 pomegranate 10 Pulse | www.pulsemag.co.uk

Method

1. Peel and finely dice the shallots, then add to a small frying pan with a splash of olive oil and cook over a medium-low heat for around five minutes, or until golden and sticky. Finely grate in the zest from the clementines, then squeeze in the juice and cook for a further five minutes, or until reduced to a nice, syrupy consistency. Pour in the vinegar and four tablespoons of olive oil, season to taste, then reduce the heat to low and leave the to simmer until needed. 2. Heat a lug of olive oil in a large non-stick frying pan over a medium-high heat. Shred and add the turkey (I use both the brown and white meat) and fry for around five minutes, or until crispy. Roughly bash the nuts and seeds in a pestle and mortar, then add to the pan with the cranberries and honey. Season with salt and pepper and cook for a further couple of minutes, or until sticky and caramelised. 3. Meanwhile, trim the nice tops off the chicory, leaving them whole, then trim and finely slice the base. Place the chicory leaves onto a serving platter with the watercress and rocket. Drizzle over the warm clementine dressing, pile the sticky, caramelised turkey on top and spoon over the yoghurt. Halve a pomegranate, then hold one half cut-side down in your hand and bash the back with a spoon so the seeds fall over the salad. Serve and enjoy!

Method

1. To cook the pasta, bring a large pan of water to the boil, add a generous measure of salt and tip in the pasta. Stir once and return to the boil, then boil rapidly for 12 minutes. Preheat the oven to 190ºC/ /fan 170ºC/gas 5.

Cheeseboard By the time you reach the cheeseboard on Christmas Day, tummies are full and no one can eat another morsel, often leading to a sad selection left stood on the table. Making a pasta bake from your cheeseboard gives it a second life, and makes for a quick and easy meal amongst the stress of festivities.

3. Drain the pasta and tip it into the sauce. Taste and add extra seasoning if necessary. Stir in the ham and grate in any hard cheese, then tip into a shallow ovenproof dish. Dice any remaining cheeses and swirl into the pasta to make cheesy pockets. 4. Mix the nuts and parsley together, then scatter over the pasta. Bake in the oven for 30 minutes until the nuts are golden and crunchy and everything is piping hot.

PASTA BAKE Ingredients

500g packet rigatoni 850ml milk 50g butter 50g plain flour Half a nutmeg (or ¼ tsp ready ground) 250g cheese 200g cooked ham, chopped (optional) 85g mixed nut, such as cashews, blanched almonds, and hazelnuts, roughly chopped Handful of parsley, roughly chopped

Vegetables For many, Boxing Day bubble and squeak is as traditional as carols and a tree, but vegetables are incredibly versatile and can be used to create some fabulous meals to feed the whole family. For a bit of spice, vegetables can be transformed into a curry, which can be frozen to use in the future – it could even cater a New Year’s Eve party, if you really want your leftovers to go the distance. Curry is quick, easy and a crowd-pleaser, it also offers an alternative to the rich, stodgy food that is normally associated with Christmas.

2. To make the sauce, pour the milk into a pan and add the butter, flour and plenty of seasoning. Grate in the half nutmeg (or sprinkle in the ready ground). Bring to the boil over a medium heat, whisking all the time until it makes a smooth, creamy sauce.

VEGETABLE CURRY Ingredients

2 onions, sliced 1 tablespoon vegetable oil 4 tablespoons tikka masala paste 680-700g jar tomato passata 400g can coconut milk 100ml water Coriander sprigs, to serve Rice or naan bread, to serve Method

1. To make the sauce, fry the onions in the oil in a large pan until softened and golden – add a splash of water if they start to dry out. Stir in the curry paste, cook for three minutes, then add the passata, coconut milk and 100ml water. Simmer for a few minutes. 2. Tip the leftover vegetables into the sauce and simmer for 10-15 minutes until tender (reduce this time if vegetables are already cooked). Scatter with coriander and serve. @PulseRMC

If you’re feeling fancy, and have some Yorkshire puddings leftover, top them with a little beef or turkey and serve alongside gravy – these are great hot or cold for post-Christmas canapes. To help leftover Christmas pudding last longer, crumble it and mix it into vanilla ice cream – for the more experienced home chefs mixing it into your own homemade ice cream would also create a lovely Christmassy dessert for weeks to come. To give the dessert that extra luxurious twist, stir in some leftover amaretto or cream liqueur. Combine your favourite Christmas tipples to create cocktails – the perfect addition to any New Year’s Eve party. Amaretto, prosecco and orange juice can be mixed into a fizzy festive drink.

SHE’S BACK… OH, YES SHE IS! CORRIE STAR WENDI PETERS TALKS TO PHOEBE SEYMOUR ABOUT RETURNING TO HER ROOTS AT THE CRUCIBLE. chemes and scams were her bread and butter on Coronation Street. Now the actress who played Cilla BattersbyBrown is trading the cobbled streets of Weatherfield for the bright lights of the Sheffield stage. Wendi Peters will be joining a starstudded cast at the Lyceum for this year’s panto production of Snow White And The Seven Dwarfs as the Wicked Queen. The panto baddie is a character we all love to hate and Wendi says she cannot wait to take on the role. “Oh, there’s nothing like being a baddie,” says Wendi. “It’s absolutely brilliant. I love being booed and hissed, especially by the kids. That’s all part of the panto. “It’s a really important thing is panto. It’s the first time a lot of these kids have been in a live theatre. They’re our future theatre audiences, so if they come and have a wonderful time, they’ll keep coming back and move on to other things and become theatre buffs for the rest of their lives, which is just brilliant.” Though Wendi is best known for being on our screens as Cilla, she is no stranger to the stage and says performing in Sheffield will be something of a homecoming. “I loved being in Corrie, I adored the character and I loved everybody there and I had a brilliant time, but I’d already done 15 years in the theatre, so I feel like I’m just going back to doing what I do. I did lots of musicals, it’s where I come from, so I’m really lucky that I’ve managed to go back to do a lot of stuff like that. “My first ever job, when I left college in ’87, was here at The Crucible. I did panto here. I was one of the dancers in Cinderella, so I feel like 29 years later, I’m coming home, coming back to where I started.” Most families will be very familiar with the story of Snow White and the Wicked Queen, but what can we expect from her modern, panto incarnation? “Obviously, she’ll be as glamorous. I’d like to play her quite regal and quite posh, and she might just slip every now and then into something a bit northern. And of course we’ll have the old hag that tries to persuade Snow White with the apple, so we’ll have fun with that.”

The demand for pantomimes seems to get stronger and stronger every year (last year’s panto was seen by over 46,000 people), and Wendi believes they remain so popular because they are a deeply-loved tradition the whole family can get involved in. “It’s a good mixture of song and dance, comedy, audience participation and a bit of a spectacle as well – everybody loves to come and see lots of glitter,” she says. “Us Brits eccentric as we are - we’re known around the world for this silly thing. Joseph Ribkoff feel-good fashion show comes to Sandersons

South Yorkshire charity celebrates 30th anniversary South Yorkshire’s Community Foundation recently celebrated 30 years supporting local people, with a huge evening reception, hosted by the High Sheriff of South Yorkshire. Taking place at the Vulcan Hangar at Doncaster Sheffield Airport, the community foundation gave 150 guests an exclusive look at some of the incredible initiatives working for community benefit across the region. Nine community groups showcased their work on the night including Doncaster charity, Artistic Spectrum, and Barnsley community organisation TADS, who treated guests to the complimentary therapies they use to support people with mental health issues and their carers. South Yorkshire’s Community Foundation is a local grant-making charity, founded in 1986. Its aim is to raise money to distribute to small community groups and charities working at a local level. Sandersons Boutique Store teamed up with ladies clothing brand Joseph Ribkoff to host an in-store fashion show in the ladieswear department. The event showcased the Canadian fashion brand’s autumn/winter collection just in time for the party season. The range included items from the Sandersons collection of Ribkoff, as well as exclusive items which were available in-store for one day only. The Sandersons team added accessories, handbags and shoes from other departments such as Moda in Pelle and Ted Baker to show how the different ranges work together to create stunning looks to spice up the winter wardrobe. The Joseph Ribkoff team brought along a Ribkoff model to showcase the looks and combinations created by the customers. The photo was taken in the unseasonably cold March of 1979. Just when locals thought winter was well and truly over, heavy snowfall hit the area hard. Though the whole village looked gorgeous, motorists had a terrible time trying to navigate the thin and winding roads, especially the awkward corner from St Maryâ&#x20AC;&#x2122;s Lane to Church Street. Colliery near Chapeltown. We had already identified the man standing on the left as George Greensmith (born 1905, died 1967), but asked readers to get in touch if they could identify anyone else or what the occasion was. Glen Thorpe got in touch to tell us that he recognised the man second from the left as his uncle, David Thorpe (born 1925, died 2005), who lived in Thorpe Hesley, before moving to Chapeltown and retiring in Burncross. David eventually traded mining for pulling pints and went on to run a pub in Thorpe Hesley and The Commercial in Chapeltown.

Based on the M4 GTS, it gets a 3.0-litre turbocharged watercooled straight-six petrol engine producing 593hp, which is good for a 0-62mph time of 3.8 seconds and a 190mph top speed. Inside, it’s a strict two-seater carbon bucket job with a roll cage to replaces the rear seats. Luxuries include Sat-Nav, air-con, adaptive lights and parking sensors.

Stand-out crowd-pleaser After the release of the newly updated GTR earlier this year, Nissan has revealed the Nismo edition – the flagship in the GTR range. Costing from £149,995, the Nismo will be powered by a more powerful version of the 3.8litre twin-turbo V6 found in regular GTR models, 592hp to be precise. This can be due to the fact that this Nismo engine features technology from the GTR GT3 car. As with all GTR’s, power is sent to all four wheels via a six-speed double-clutch gearbox. With the improved aerodynamic capabilities of this Nismo edition, it produces more downforce than any other Nissan production car to date. Dream drive PHOEBE SEYMOUR TAKES THE MG3 STYLE FOR A SPIN. he MG3 Style has just arrived at Eric Stead – the MG car specialist on The Common in Ecclesfield – and the dealership are so proud of it, they invited me to take a test drive. Having been established in 1962, Eric Stead is one of the longest-running motor dealerships in the area, meaning their staff have tonnes of knowledge and years of experience with various MG models to boot. Sales adviser, Dennis Berry, met me at their showroom with the key and explained why the MG3 Style is such a dream to drive. “The Style is one of the best in the range,” said Dennis. “There’s only one other above this one and that’s the Style Lux. It’s a small car ideal for city driving, but it’s still got lots of room inside. It’s brilliant value for money, with a three year guarantee, and there isn’t much else that can beat it.” I was then taken to the forecourt where I was introduced to my car for the day. As soon as I was behind the wheel, I could see what Dennis meant. There was plenty of space and even with my seat right back, there was enough leg room for someone to sit in the back. The boot was also surprisingly roomy and tall enough to stand a hand luggage-sized suitcase in. Once I was on the road, I was pleasantly surprised by how light and smooth it was to handle. The engine hummed quietly and every gear change was effortless. First, I drove up to Wentworth to see how the MG handled the narrow country roads. It passed with flying colours, even when faced with road works and temporary traffic lights

in the village. Then it was time to get on the motorway and pick up some speed. Again, the transition up the gears was easy and I thoroughly enjoyed every moment. Boasted as being perfect for city driving, I thought it only right to take in Sheffield city centre. After navigating the narrow roads of Wentworth village, the city streets were a breeze to zip through. Finally, I found a car park to practice some manoeuvres in. Although, reversing into spaces was fairly simple, it was reassuring to hear the bleep of the sensor alarm when I was getting close to a car behind me. As I returned to my own car, I realised why I was so reluctant to give the MG3 Style back – it actually makes driving fun. Navigating city streets and country roads is
