PULSECONTENTS

EDITOR’S MESSAGE: his month, we’re focusing on all-things family – from famous mums to family-friendly recipes. Someone who knows all too well the pressures of balancing a successful career with family life is Amy Garcia – the Look North anchor who has accompanied Harry Gration on the famous red sofa for the last 18 months. I spoke to the Yorkshire-born presenter about taking on the role, the joys of a young family and that tandem bike ride (page 22). If, like Amy, you have recently welcomed a new addition into your brood, our child-focused health and beauty feature on page 49 has a selection of products that will pamper your little one to perfection. From bubble baths to bottom balms, enjoy a little indulgence with these cute kiddie treats. Besides Christmas, one seasonal event sure to bring the whole clan together is Easter. The lure of simnel cake, Easter eggs and roast lamb is enough to gather everyone around the kitchen table. If you need some inspiration, we’ve rounded up our pick of this year’s best Easter egg offerings on page 34, and brought together some recipes that are sure to win over the kids during the school Easter holidays (page 44). If you have a story to share, are hosting an event that you’d like us to publicise or have photographs of a recent celebration or event, we’d love to hear from you. Email Stephanie.Burns@regionalmagazine.co.uk or call me on 0114 250 6300 (Monday to Thursday 9am-5.30pm and Friday 9am-4pm). If you have a business and would like to advertise in Pulse, please call Publishing Manager Helen Wragg on 0114 250 6300 or email pulse@regionalmagazine.co.uk. You can also follow us on Twitter (@PulseRMC) or read Pulse (and the rest of Regional Magazine Company’s titles) online at www.regionalmagazine.co.uk. See you again next month.

In the first of our series of education columns, Kip McGrath’s David Kaye explains what tutoring is all about.

BODYLICIOUS SESSION 13th April 5-7pm • £25.00 Learn how to make Body Butter, Body Scrub and Bath Salt. Includes all materials, cake and drinks.

upplementary education, better known to most of us as tutoring, has been around for years. Demand has increased to a point where tuition is no longer the preserve of a teacher supplementing an income – or pension – by doing some tuition on the side, coming round to a child’s home once a week. Tuition is now offered in specially fitted-out centres, supported by the latest in technology and aided by banks of tailor-made resources. It is run, in some cases, by highly qualified teachers who have spent many years honing their professional skills in classrooms. With a seemingly never-ending range of initiatives in schools, an increasingly tough inspection regime and exam statistics that have risen year-on-year until recently, why is it that tuition has taken such a hold? Anyone who has had children going through the system recently will have observed first-hand that entry requirements for university are much higher than they were 30 years ago and graduates are not finding graduate-level employment as easily. This has a knock-on effect, making the pickings for those without good qualifications harder to come by. This is not the only pressure. The expectations on schools have also risen relentlessly. They have met this challenge, yet Ofsted continues to raise the bar higher and higher. This pace of learning does not suit some children. Schools have demanding targets to meet and often go above and beyond to help their students. Some children need to go back to much earlier learning. Sometimes, this is to put a missing brick into the wall of understanding. In other cases, it is to ensure it is cemented in better so that more advanced learning is placed on better foundations. Many simply require their confidence building with a steadier pace, which reinforces their learning and enables them to prove to themselves that they can do it This is where tutoring comes in. It is not a replacement for the education schools provide. It is supplementary education and has been shown to have a valuable place at the table of learning.

PULSEINTERVIEW

IN THE HOT SEAT Amy Garcia speaks to Stephanie Burns about life on the Look North sofa – and how balancing a demanding television career with a young family is no easy task.

W

atched by 2.5million people each week, BBC Look North is held dearly in the hearts of Yorkshire folk. So finding a new presenter to reignite the on-air chemistry that Harry Gration shared with his former sofa buddy, Christa Ackroyd, was undoubtedly a tall order. But 33-year-old Amy Garcia – who took up the role in November 2013 – has a winning combination of warmth and genuine charm that has been gladly welcomed each evening by the show’s loyal viewers. Having grown up in Wakefield and studied media and performing arts at the local college, Amy embarked on a sixmonth stint as a cruise ship singer before, at the age of 19, venturing into children’s television. Staying in the genre for three years, she worked for S Club TV, CBBC and the Disney Channel and then side-stepped into light entertainment shows on Sky. At 27, she decided to travel in a different direction and enrolled at Goldsmiths College in London for an MA in journalism – a qualification that opened up a new world of opportunity. Three years after making her first appearance on the Look North sofa – presenting different bulletins as well as working behind the scenes on production – she secured a presenter/reporter role on BBC South Today and presented BBC3’s 60 Seconds news bulletins. In early 2013, she left to take up maternity leave and it wasn’t until the call came from Look North that she was propelled back into the spotlight – and back up to her beloved home county. Amy met her husband Tim, a Yorkshire-born songwriter and producer, 12 years ago in Brown’s bar, Leeds. But it wasn’t until the following year, when they bumped into each other in a music studio in London, that they really hit it off. The rest, as they say, is history. Their 22-month-old daughter now kisses the screen when she sees her mum on television and even shouts out the names of Harry and weatherman Paul Hudson. So how does the glamorous presenter – who is fast becoming a Yorkshire sweetheart – juggle the pressure of such a demanding role with the reality of early motherhood? And just how did she survive the gruelling Tour de France Yorkshire Grand Depart route on the back of that tandem? I caught up with Amy during a late-evening shift to find out. You’ve been on the sofa for just over a year now, how are you finding it so far? I am absolutely loving it and feel like I’m in a bit of a rhythm now. The first six months were just terrifying and then I had the tandem bike ride thrown into the mix. But it’s a really lovely team and there is such a variation every day.

22 PULSE MAGAZINE

It is a really big role to take on, were you nervous? Yes, it was a huge pressure. There were big shoes to fill and Look North has a massive audience, but I tried to push that to the back of my mind otherwise I’d have been a nervous wreck every night. How are you balancing a career and motherhood? I’m always juggling lots of balls but I’m lucky that I have very supportive parents and in-laws. Without them, I don’t think I’d be able to do the job. I also have a very supportive husband and, between the three of them, they look after Mabel while I’m at work and they do a great job. Mabel had just turned eight months when I came back to work so I felt like it was a little bit early to be leaving her. It was a bit of a shock to the system as we had six weeks to find a house and get everything sorted. As any new mum will know, your mind just goes to mush when you have children – for at least the first year – so it was terrifying not just going back into work and easing myself into it gently like most do, but being on live TV four nights a week. Was there anything that surprised you about the job? There are lots of added extras. I get invited to open fairs and do talks at schools, which is really nice. Sometimes it’s really hard to say no to things so you find yourself running around ragged doing everything. But it’s really lovely to be part of the community and see what amazing work some people do. What is your favourite part of the job? Meeting different people is the best part and the variation is great as it’s just different all the time. Have there ever been any on-air disasters or blips that have got your heart pumping? Oh all the time – gosh there are so many mishaps that I probably couldn’t name them all but they play out on screen I think. You’ve got to be open and honest about it and I think the audience thanks you for that rather than trying to pretend nothing’s happened. Do you have any unfulfilled career ambitions? I’d quite like to travel a bit more with work. Harry went to Afghanistan recently and that was such an amazing trip; I was quite envious. Is there anyone who has particularly inspired you? Harry definitely has because he’s a bit of an institution. He’s got a real knack for doing both serious and soft news. I think Sophie

Amy and Harry Gration (right) took on the Tour de France tandem challenge for Sport Relief

Raworth’s great too. She used to work for Look North and she’s someone that I saw as a bit of a role model. What do you like most about being back in Yorkshire after a ten-year spell down south? You know where you are with Yorkshire folk; they don’t dilly dally around the subject. What you see is what you get and I love that because that’s what I’m all about as well. You must be recognised fairly often. How are you greeted by the Yorkshire folk? Well to begin with it was ‘ooh didn’t you do well on that tandem’ or ‘I hope you’re looking after Harry’. When I’m out and about, I’m with my little girl so I look very different as I’m in my mum get-up. A few people have said ‘do you know you look just like Amy Garcia off Look North, has anyone ever told you that before?’ I’m like ‘erm a few people, yes!’ How did you prepare for the Tour de France challenge? We did about six weeks’ training together and on our own. But I don’t think anything can really train you for that amount of cycling so it was just a case of trying to get a few miles under our belts. How did you keep yourself going when it was really tough? The audience was just brilliant; so many people came out to cheer us on. We had moments when we wanted to get off the blummin’ bike but there were crowds of people who’d been waiting in the rain for an hour to see us so we just had to keep going. The fact that we were raising money for BBC Sport Relief as well gave us a great incentive. Was there a specific high and a specific low? Oh yeah. The low was probably Holme Moss – that was just a killer. Apart from the fantastic crowds, Buttertubbs was a high because that was the first big hill. It was on the second day and we were both really worried about it but we made it up there without too much of a problem. The tandem is a big achievement in your Look North career – what would you say is the biggest achievement in your life so far? My daughter, definitely. That sounds really soppy doesn’t it? To be honest, I feel like I’ve got everything – I’ve got a dream job, the most gorgeous, supportive husband and a healthy, beautiful baby girl. I feel like I’ve won the lottery. Look North Yorkshire is on BBC1 every week night at 6.30pm.

Elizabeth with her father, David, in the 1961 production of Rio Rita

CAST FROM THE PAST Elizabeth’s mementoes recall memorable shows…but can you match names to faces? Words: Stephanie Burns fter Elizabeth Brook (nee Ollerearnshaw) was shown a copy of our December issue by a friend, she got in touch regarding the picture of The Pajama Game by High Green Amateur Operatic Society. Elizabeth’s father, David Ollerearnshaw (pictured right), who sadly died in July 2000, is the tall man standing at the back of the picture, to the right of the piano. She kindly posted us the original programme from April 1960 (pictured above), which names all the people involved in the production. This includes: Norman Winterton, Charles Hague, David Ollerearnshaw, Albert Morton, Dennis Winterton, Glennis Marshall, Margaret Gleave, Harold Thompson, Constance Briscoe, Edith Jackman, Jackie Winterton, Olga Ellam, Henry Watkins and Stuart Gore. Albert Morton was the production director, Elaine Thompson was the accompanist and the musical director was Maurice Thompson. If you can help to match any of these names to the faces in the photograph, we’d love to hear from you. Please get in touch with editor Stephanie Burns on 0114 250 6300 or email Stephanie.Burns@regionalmagazine.co.uk and we will print your comments in the next issue. Elizabeth was also a member of the club and appeared in the 1961 production of Rio Rita at the age of 13. As well as the original

PROMOTIONHUNTERS

Putting the customer first in everything they do has sent customer satisfaction ratings soaring for fast-growing Chapeltown estate agent Hunters. hat matters most when choosing an estate agent? If a proven track record, an excellent recom-mendation rate and a personal, honest approach are top of your list, Hunters on Station Road in Chapeltown may be just what you’re looking for. Since transforming the wellestablished property lettings business Big Fish Lettings into Jo Upson Hunters – an all-encompassing sales and lettings agent – in December 2013, owner Jo Upson has seen her business rocket up in the ratings. “In 2014, we received a 100 per cent recommendation rate from all of our vendors and, in just over a year, we have found ourselves firmly placed within Rightmove and Zoopla’s top five estate agents.” When you consider the standard of service on offer at Hunters, it’s not hard to see why. Their motto of ‘what matters to you, matters to us’ is ingrained within every aspect of the business and most of their customers come from word of mouth recommendations. Unlike many high street estate agencies, each branch of Hunters is family owned and run. The customer is placed at the heart of everything they do and the ‘no sale, no fee’ policy guarantees that the team will work tirelessly to get you the sale with the least amount of stress. Realistic valuations mean there is rarely any need to reduce property prices. Instead, properties are priced realistically from the outset and, in the currently buoyant market, many are selling very quickly – and for over the asking price. Jo also keeps her stock levels low, with just 20 to 30 properties on the books at any one time. “This allows us to focus greater attention on each of our clients and offer a more personal service,” she explains. “We also help with

W

conveyancing and will chase solicitors on behalf of our vendors so they’re not left waiting for information.” To ensure your home is viewed by as many prospective purchasers as possible – and, in turn, receives the highest number of offers – a host of beautiful photographs accompany each listing. They know that presentation is incredibly important when selling a home and they do everything they can to further enhance your property’s appeal. As affiliated members of The Property Ombudsman, Safe Agent, the National Approved Letting Scheme (NALS) and the National Landlords Association (UKALA), Jo and her team offer extra security to vendors, buyers, landlords and tenants. The excellent portfolio of rental properties is matched by a number of rent guarantee products that take the risk out of letting and free legal cover is offered as standard for all new landlords – unique selling points of which Jo is very proud. Jo’s property expertise was recognised nationally when she was chosen by BBC’s Wanted Down Under series to conduct a valuation in North Sheffield. The episode will be shown within the next year. Hunters has also recently launched a television advertising campaign – look out for it during the property shows on Channel 4. Best for… dark chocolate decadence Heston from Waitrose golden egg, £20 for 270g OUR WINNER

A classy black box with a simple inscription sent us wild with anticipation before we broke into the most mysterious egg of our selection. And, once inside, we were even more impressed. A shiny golden egg concealed the most tantalising white chocolate eggs – each imbued with a zingy milk chocolate and mandarin ganache – all nestled on a bed of edible (sugar paper) straw. It was oh-so Heston and we loved every bit of it.

Words: Stephanie Burns

EGG-STRA SPECIAL

So much chocolate, so little time. From dark decadence to tasty fun for the kids, our panel tests the best Easter eggs on the market. reme Eggs have been unseasonably gracing the supermarket shelves since early January – and don’t get us started on the controversial Cadbury’s shake-up. But don’t let that mild annoyance distract you from the joyful fact that Easter is finally now upon us. And that means it’s time to start checking out which eggs will make the grade this year. Fortunately, you don’t have to buy and

C

sample every chocolate treat available as our panel has done the hard work for you. Whether you’re buying for the kids, for your other half or just as a well-deserved treat for yourself, there’s something to suit the occasion. Read on to find out which egg took the top spot and which fell short of the mark.

Best for… white chocolate lovers

Best for… fun Nestle Smarties egg hunt, £3 for 140g

Hotel Chocolat white chocolate scrambled egg, £15 for 150g This thick, creamy white chocolate egg was an instant hit with the panel, and the intricate decoration was a beautiful bonus. Add in velvety-smooth praline housed in thick white chocolate shells for the accompanying chocolates and we were in heaven. A very close second.

34 PULSE MAGAZINE

@PulseRMC

While the quality of the chocolate won’t blow you away, the kids will relish the opportunity to hunt around the garden for these eight brightly wrapped eggs. And when they do track them down, a gentle shake will reveal not only a chocolate egg but also a smattering of mini Smarties to reward their efforts.

Best for… a super sweet tooth

Best for… variety

Thorntons caramel cheesecake egg, £15 for 448g Not for the faint hearted, this indulgent egg takes inspiration from a classic dessert. The caramel cheesecake reveals itself not just in the explosion on the front of the egg, but throughout the shell with flecks of crunchy biscuit and caramel delighting at every bite.

Marks & Spencer chocolate egg selection, £10 for 195g If you’re buying for someone who enjoys a variety of flavours, M&S has the answer. Milk chocolate with popcorn and popping candy, white chocolate and raspberry pavlova, and milk chocolate butter crunch make up this tasty trio.

Best for… milk chocolate lovers

Best for… something different

Green & Blacks tasting collection egg, £17.99 for 525g

Sainsbury’s Taste the Difference Belgian white chocolate Easter egg with pistachios, £6 for 220g

Known for its high quality chocolate (37 per cent cocoa solids, no less) and intense flavours, Green & Blacks have a loyal following. This collection shows why. Two full-sized bars of chocolate – one sea salt, one butterscotch, both divine and packed with flavour – accompany a truly delicious milk chocolate egg. A little on the expensive side, but worth every penny.

At first glance, the panel was hugely impressed with this beautiful egg. The gentle green hue, the nutty flecks present throughout the shell and the promise of a good pistachio hit got our mouths watering. But, upon tasting, we were sadly disappointed with the toosubtle pistachio flavour. A nice white chocolate egg but it won’t satisfy serious nut lovers.

Best for… the kids

Best for… the eco-conscious

Tesco Doug the dinosaur, £4 for 200g There are few more exciting prospects than animal-shaped chocolate when you’re a youngster – and Doug the Dinosaur certainly ticks that novelty box. But while the super-thick chocolate makes for an indulgent treat, kids will need a strong adult to help break Doug’s incredibly tough shell.

www.regionalmagazine.co.uk

@PulseRMC

Montezuma organic milk chocolate eco egg with butterscotch, £7.99 for 150g Though the lure of butterscotch got our tastebuds tingling, we were let down by the very subtle flavour. That said, the chocolate was creamy, it wasn’t too sweet and the flecks of butterscotch offered a welcome crunch. We were also impressed by the environmentally friendly, biodegradable sleeve.

PULSEIN BRIEF

Fitness Garage 2015 challenges For 2015, Fitness Garage in Ecclesfield is challenging its staff and members to train hard and raise money for charity while having fun and achieving success. On Sunday 12 April, they will take part in the Yorkshire Half Marathon in Sheffield, a 13-mile course that will take runners on a new route through the city. The Fitness Garage team are preparing for the challenge by taking part in the gym’s Ignition class on Saturdays at 9am. Next up is the Rat Race Dirty Weekend on 9 May, a 20-mile obstacle run with 200 obstacles spread out in one of the world’s biggest mud runs. The gym’s new obstacle class, Test Track, on Fridays at 5.30pm, is helping them train. The third challenge is the Greno Chase on 24 July, which last year saw Fitness Garage claim the men’s first and third places with Connor Hancock and Jake Cook. Gemma Woodhead took the women’s first place. This year, they are looking for more people to represent Fitness Garage and do even better than last year. Body mechanic Jake Cook, co-owner Darren Woodhead and member Nick Pratt have also entered the Bolton Ironman Triathlon, which comprises a 2.4-mile lake swim, a 112-mile cycle and a

marathon of 26.2 miles. Jake and Darren are raising money for Scope Disability and Macmillan Cancer Support, respectively. You can sponsor them by visiting www.justgiving.com/Ironjake and www.justgiving.com/DarrenWoodhead. Another member, Sandra Nundy, is cycling 244 miles from Leeds to Paris to raise money for Cavendish Cancer Care. You can sponsor her at www.justgiving.com/Sandra-Nundy. If you are looking to challenge yourself, there is still time to enter one of these events or take part in any other challenge. One thing’s for sure, Fitness Garage will help you get there. Visit www.fitnessgarage.co.uk.

Thousands of South Yorkshire scouts pledge money to children’s hospital

Soccer camps This Easter, why not treat your footie-mad youngster to a one or two-week soccer camp at the Sheffield Wednesday Hillsborough ground? Aimed at children of all abilities between the ages of five and 14, they offer professional coaching with the chance to win prizes, the opportunity to progress to the Development Centre and an appearance by the Owls mascot. The camp costs £40 for one week or £70 for two and takes place 9am-4pm from Monday 30 March to Thursday 2 April and Tuesday 7 April to Friday 10 April. During the second week, the kids will be visited by the first team squad. For more information, call 0114 324 0523, email community@swfc.co.uk or visit www.swfc.co.uk.

More than 8,000 beavers, cubs, scouts and explorers in South Yorkshire have been tasked with raising £15 each for The Children’s Hospital Charity – a charity partnership that is the first of its kind. Boys and girls aged six to 25 from Sheffield, Rotherham, Barnsley and Doncaster will raise money to fund a private bedroom in the new hospital wing as part of the charity’s Make it Better appeal. If each scout manages to raise their target, the region would reach an astounding £100,000, which will be split 25 per cent to the organisation of scout groups and 75 per cent to the charity. “It’s the first partnership like this and it won’t be the last,” said deputy county commissioner and leader of the Penistone scouts, Bruce Meek. “It’s exciting for us and it’s been quite a buzz to hear lots of people say that The Children’s Hospital has helped them when they were children. It’s impacting our community and is something that is a real benefit to the scouts. It lets them organise activities, think of the wider community and about what life is like for people less fortunate than themselves.” Every scout group in South Yorkshire will be provided with specially-designed fundraising packs, complete with information about the charity, resources for scout leaders and fundraising ideas. As a reward for their hard work, every scout member who raises £15 will receive a special plaster badge for their uniform in support of The Children’s Hospital Charity.

Ruddigore Grenoside and Birley Carr Players present Gilbert and Sullivan’s Ruddigore at Grenoside Community Centre, Main Street from 24 to 28 March at 7.30pm. Tickets £8/£7/£5. Tel: 01226 754462.

College students jet off to the Big Apple Over 50 Barnsley College students and staff recently visited New York City as part of their creative studies. The trip is organised every year for Art and Design and Music, Media and Performance students to raise their aspirations and allow them to experience a different culture. The students visited cultural sites including the Museum of Natural History, the Guggenheim Museum and the Museum of Modern Art to gather information relating to their course for future projects. They also saw iconic landmarks such as Grand Central Station, the Statue of Liberty, the Empire State Building, the Rockefeller Center and Central Park. Paul Harris, course leader and trip organiser, said: “The trip is a great way for students to experience a variety of other cultures. Being able to visit and photograph iconic buildings and recognise scenes from films is a real inspiration and drives the students forward with their work.” For more information on Art and Design or Music, Media and Performance courses at Barnsley College contact the Information Unit on 01226 216123.

GRUB’S UP! Meal times needn’t be a chore with these family-friendly recipes, writes Stephanie Burns. Easy peasy pizza from bakingmad.com

The best place to come for a sweet treat or a baked beauty, bakingmad.com is a beautifully presented baking bible. If you’re after a cake recipe to complement these wonderfully cute pizzas, look no further.

Ingredients

Method

For the dough

1. To make the tomato sauce, empty the tomatoes into a saucepan and add the rest of the ingredients. Bring to the boil, then turn down the heat so that the mixture simmers for about 30 minutes. You can store in the fridge until you are ready to use the sauce then spread over the pizza base.

450g very strong white bread flour sifted 1½ tsp easy bake yeast 1½ tsp unrefined golden granulated sugar 1½ tsp salt 260ml warm water 60ml olive oil For the tomato sauce 400g chopped tomatoes 1 garlic clove crushed 1 tsp basil (dried) 1 tsp oregano (dried) 1 tbsp tomato purée

44 PULSE MAGAZINE

2. Preheat the oven to 200°C/180°C fan/gas 6. Grease one or two baking sheets. 3. Put the flour, yeast, sugar and salt into a bowl. Mix gently and make a well in the middle. Add the water and oil and mix into a soft dough that comes away from the edge of the bowl. 4. Turn the dough out onto a floured surface and knead for about 10 minutes. 5. Shape into two smaller pizzas or one large circle. Place on the greased baking sheets and spread with the tomato sauce. 6. Top with a generous sprinkling of the cheese and topping of your choice and bake for 15-25 minutes or until the crust is golden brown. 7. If you would like a thicker crust to your pizza, leave your dough to rise for 20 minutes before you add the sauce and topping.

Ingredients 2 tbsp light olive oil 1 garlic clove, crushed 1 medium onion, peeled and finely chopped 100g carrots, peeled and grated 50g courgette, grated 50g button mushrooms, sliced

1 tsp balsamic vinegar 400g passata 1 tsp soft brown sugar 1 vegetable stock cube dissolved in 400ml boiling water A handful of fresh basil leaves, torn Salt and freshly ground black pepper

Chunky monkey pancakes from allrecipes.co.uk The Allrecipes website brings together reader recipes into one handy place, so you can try out dishes already thoroughly tried, tested and recommended by real families. If you have a homemade recipe you love, you can post it too!

Jamie Oliver’s Greek vegetable kebabs Not just the king of school dinners, Jamie Oliver also has a host of tasty treats available at jamieoliver.com/recipes.

Ingredients 120g halloumi cheese 1 yellow pepper 1 courgette 140g cherry tomatoes

Method 1. Heat the oil in a pan, add the crushed garlic and sauté for a few seconds, then add the onion and sauté for a further two minutes. 2. Add the carrots, courgette and mushrooms and sauté for four minutes, stirring occasionally. 3. Add the balsamic vinegar and cook for one minute. Stir in the passata and sugar, cover and simmer for eight minutes. 4. Add the vegetable stock and cook for two minutes, stirring continuously. 5. Add the basil and season to taste. 6. Transfer to a blender and blitz until smooth.

Ingredients

Method

125g plain flour 2 tsp baking powder 1 tsp bicarbonate of soda ¼ tsp salt 180ml skimmed milk 3 tbsp butter, melted 2 eggs 1 tbsp caster sugar 1 tsp vanilla extract 1 large banana, diced 80g chocolate chips 4 tbsp chopped pecans Oil

1. Combine flour, baking powder, bicarb and salt in a large bowl. Set aside. In a separate bowl, whisk together the skimmed milk, melted butter, eggs, sugar and vanilla. Make a well in the centre of the dry ingredients and stir in the wet ingredients, being careful not to over-mix the batter. Gently fold in the banana, chocolate chips and nuts. 2. Heat a large frying pan over medium heat, and lightly coat with oil. Pour four tablespoons (60ml) worth of batter onto the pan, and cook until bubbles appear on the surface. Flip with a spatula, and cook until browned on the other side. Repeat with remaining batter.

Delicious and nutritious dishes, such as these kebabs, will provide the perfect half term meal. For ultimate convenience, there is even the facility to buy the recipe ingredients online then and there.

½ a bunch of fresh mint ½ a fresh red chilli 1 lemon Olive oil Freshly ground black pepper

Method 1. Put six wooden skewers into a tray of cold water to soak – this will stop them from burning. 2. On a chopping board, cut the halloumi into 2cm cubes, then add to a large mixing bowl. 3. Carefully cut the pepper in half from top to bottom, then trim away the stalk, seeds and any white pith (you can use a teaspoon to do this), then slice into 2cm pieces and add to the bowl. 4. Cut the courgette in half lengthways, then cut into half-moon slices, roughly half a centimetre thick, then add to the bowl along www.regionalmagazine.co.uk

with the tomatoes. 5. Pick the mint leaves onto a board and finely chop them, discarding the stalks. 6. Carefully deseed and finely chop the chilli, if using. 7. Use a microplane to finely grate the lemon zest onto a board, then add to the bowl along with the mint leaves, chilli (if using), and two tablespoons of olive oil. 8. Season with a pinch of pepper, then mix well to coat. 9. Preheat the grill to high. 10. Lightly grease a baking tray with oil, then put aside. 11. Thread and divide the halloumi cubes, cherry tomatoes, pepper and courgette pieces between the skewers. 12. Place onto the greased tray and cook under the grill for 10 to 12 minutes, or until the cheese is golden and the veg are soft, turning halfway through. 13. Serve with a fresh green salad and some flatbreads or pittas. 45 PULSE MAGAZINE
