Back on the menu THE RETURN OF A WELL-LOVED FAVOURITE GIVES MOLLY McGREEVY MORE THAN ENOUGH REASON TO VISIT THE TICKLED TROUT. t’s not often that removing a pudding from the menu throws an entire village into uproar, but that’s exactly what happened when the Topsy Turvy Blueberry and Lavender Cheesecake disappeared from The Tickled Trout’s sweet offering. Fortunately, owner Chris Mapp listened to the masses and the cheesecake has made a triumphant return, taking its rightful place amongst a selection of Italian-inspired dishes, brought to life with fresh, local ingredients, but more about pudding later. On a chilly evening The Tickled Trout’s lounge is a comforting haven, all roaring open fires and cosy chairs. Despite its homely allure we opted to sit in the restaurant, which, with windows on all sides and a skylight, must become the favoured spot once the sun comes out. There was much deliberation over the specials menu before ordering, with both the duck breast (smoked and cured on site) and the pan-fried mullet (arrived fresh from Cornwall that morning) catching our eye. It was the Bacon and Egg (£7.50) that was eventually granted a place at the table, along with the Arancini at the Trout (£7.95). The 72-hour slow cooked ham simply fell apart whilst the quail’s egg was the perfect soft boil. In a nod to Chris’ huge attention to detail in

his dishes, a blob of homemade ketchup completed the plate. On my side of the table the creamy, cheesy arancini filling was encased in the crispest, lightest of batters. Tart in contrast, the truffle mayonnaise was simply delicious. Returning to the specials for our main course, my companion opted for the Roasted Monkfish and Beef Shin Cottage Pie (£18.50). Based on a classic flavour blend, this contemporary surf and turf is the perfect example of The Tickled Trout’s approach to food. Chris and his team take on every day dishes and sprinkle them with that something special to create divine flavours and textures, even the OMG Fries are given a touch of chopped black truffle. My Aubergine Bake and Pesto Bread (£11.95) was a sweet and substantial vegetarian option, the vegetables encased in layers of cheese and a rich tomato sauce, accompanied by swirls of pesto bread prepared that morning. For dessert, I simply had to choose the infamous Topsy Turvy Blueberry and Lavender Cheesecake (£6.50). Deconstructed and flipped on its head so the biscuit base can be replaced with roasted almonds for coeliac diners (Chris and his team are keen to be inclusive on their menu) the fruit layer was zesty, with subtle, aromatic hints of lavender. The Lemon Curd ice cream provided the
perfect tang against the sweetness of the berries. For my companion, the Dark Columbian Chocolate Torte with Chocolate and Nut Ice Cream and Kriek (£8.95), a Belgian cherry beer. The Kriek soon became the star of dessert – a Belgian classic, my companion deemed it closer to a sparkling wine than a pint – a flavour owed to the months the fruit is left to ferment, explained Chris. As an owner, Chris’s sheer passion for good, well done food can be seen in every dish that leaves the kitchen. Although the menu has roots in simple dishes, it’s the attention to detail: the presentation, the flavours and the textures that really make The Tickled Trout something special. But with warmer weather on the horizon, comes the realisation that we may have neglected our homes during the colder months and so the time has come to spring clean. Although no-one looks forward to the deep-clean, when you see the accumulation of dust in forgotten places you know it is time to drag your house out of the winter blues. With a little elbow grease and a lot of love, your house can have that fresh spring look again. Follow these ten simple steps for a happier, brighter home.

Tidy up the exterior Create a fantastic first impression at the impending garden parties by sprucing up the outside of your house. Give your front door a good clean and a lick of paint, change outdoor light bulbs, repaint wooden fences and add some plant pots, hanging baskets or a new welcome mat to the entrance of your new home. Rain and wind will have washed fallen leaves straight into the gutters. If clogged drainpipes and gutters are neglected, it can lead to flooding so make sure you give them a thorough clear-out when the dryer weather arrives.

‘Wear it red’ raises money for BHF Places for People Leisure Centres in Sheffield have announced that their partnership with the British Heart Foundation (BHF) has raised £5,074 towards the fight for every heartbeat. Around seven million people are currently living with cardiovascular disease in the UK and the funds raised will help support the BHF’s research into preventing and treating these devastating conditions. Staff and members at Graves Health and Sports Centre, Wisewood Sport Centre and Thorncliffe Health and Leisure Centre got involved by holding wear red events, raffles, and auctions, plus encouraged everyone to donate bags of stock to fill local BHF shops. Jo Strong, Cardiac Rehab Instructor also took on the Helsinki Marathon to raise funds. “We are so pleased to have raised so much money to support their vital work. I would like to take the opportunity to thank all of our employees, customers and suppliers in helping us make a real difference,” says Alex Greaves, contract manager.

Prestige award for Brocco on the Park Sheffield’s boutique hotel and neighbourhood kitchen Brocco on the Park has received a Silver award in the UK’s Free From Eating Out Awards, for its selection of vegetarian, gluten-free and other specialist dishes. BEST FOR ALLERGIES Booja Booja almond and sea salt caramel egg 138g, £17.95 We couldn’t decide what we were more impressed by; the gorgeously painted wooden egg-shaped container or the delightful truffles inside. In the end we went with the latter, as these truffles are dairy, soya and gluten free, and still manage to taste great.
BEST FOR GROWN UP KIDS Prestat London Gin truffles and lemon milk chocolate egg 170g, £17.50 This egg was certainly the cleverest of the bunch. The white chocolate exterior of the truffles contained popping candy and represented the fizzy tonic whilst the smooth milk chocolate centre had a strong and satisfying flavour. The lemon flavour in the chocolate egg was subtle, but delicious none-the-less.
BEST ORGANIC OPTION Montezuma’s organic milk chocolate button egg 250g, £9.99 Not only is this egg organic, it’s also gluten free. If you’ve experienced the usual grainy, no-thrills variety of gluten-free chocolate, you’ll be pleased to hear that this one has a smooth texture and a great flavour.
BEST FOR WHITE CHOCOLATE LOVERS Sainsbury’s Belgian white chocolate and pistachio egg 220g, £6 Great for those that like their chocolate with a twist, the crunchy pistachios proved a delicious contrast to the smooth texture of the egg. Room with a view... A suite at the Baglioni makes for a relaxing stay
t was all going so well… we were part of the tourist throng in central London on the last hot weekend of the year. After an early breakfast, Westminster Abbey and the National Portrait Gallery had been ticked off our ‘must visit’ list. The turning leaves told us autumn was on its way, but temperatures soared into the seventies and the dress code was short sleeves and sunscreen. The first sign of trouble was an innocuous little announcement of delays on some lines due to signal failures on the underground. Sod’s law dictated that every conceivable tube journey back to our hotel in Kensington and then on to St Pancras for our train home was suddenly running a drastically reduced service. Cue mild panic and instantly revised plans. Forget that last leisurely lunch; it was time to head back to the hotel, grab our bags and sweat it out one last time on the tube in the

hope we would not miss our connection. By the time we made it back to what had been the base for a fabulous city break, you could say we were hot and bothered, but a guardian angel was ready to come to our rescue. Enter the immaculately suited-and-booted Alessandro Convertino, manager of the Baglioni, a rather lovely Italian-owned-andstyled boutique hotel in a prime position opposite the entrance to Kensington Gardens. On hearing the reason for our rushed exit, Mr Convertino had a suggestion. The hotel had a snazzy Maserati car for the complimentary use of residents which had just left to drop a party off at Harrods but would be back in five minutes… would we like a lift to the train station? Well, there was only one answer. Panic over, calm was restored, and during our smooth journey across London in airconditioned luxury we could ponder at
leisure one simple fact… the Baglioni Hotel and all who work there are one class act. OK, so he only offered us a lift. Common courtesy, you might say. But this gesture of kindness was just typical of the attention to detail that made the base for our two-day stay a lot more than just a place to stash the bags and sleep. The Baglioni is all about understated luxury and overwhelming comfort. With dark wooden floors throughout and high ceilings there is a lovely sense of space at all times, and the chocolate and gold colour scheme gives the bar and lounge a delightfully relaxing feel. Service is friendly, understated but immaculate nonetheless. Our suite was the last word in modern comfort with a separate dressing room, a lounge with a sofa and chaise and writing desk, a bedroom with a king-sized bed and a spectacular bathroom of black mirrored granite. There was even a fancy Italian

cappuccino maker… I really should have learned how to use it. No matter, the coffee to accompany fresh-baked breakfast pastries was simply superb. Trust the Italians to appreciate the importance of a proper brew to kick-start the morning. Osteria 60 is the name given to the hotel’s chic, recently refurbished restaurant. It has won many plaudits in London as a stand-alone dining venue and the highlights from a menu inspired by traditional trattorias of the 1950s included ridiculously tender Wagyu beef, succulent lobster and the sharpest Amalfi lemon tart. Tempting though it was to linger in the hotel (and they have a gym and spa if you feel so inclined), we were in a prime spot for one of my favourite London pursuits… strolling. We enjoyed a blissful sunset walk in Kensington Gardens. Kensington Palace is just a few minutes away, and with the round pond, the Serpentine and Hyde Park’s stunning Italian gardens all close by, there is no better way to relax on a bright, sunny evening (even if the constant screech of the vivid green parakeets that have made these parks their home mean the atmosphere is never totally tranquil). Stepping out of the hotel there are also some fascinating sights to be found simple by walking in the connected suburbs of Kensington, Bayswater and Notting Hill. This is embassy territory, and tucked away along these picture perfect streets and crescents with their immaculate whitepainted houses we stumbled across the embassies of Ukraine, Moldova, Iraq, the Netherlands and Russia. Of course, even when you have based yourself in a hotel with a splendid restaurant, you still want to sample something of London’s restaurant scene. I’ve come a cropper over the years, mainly by breaking the golden rule of never eating in areas that are obviously attractive

almost exclusively to tourists. You’re only passing through; you might not even tip so why should they bother. Know the feeling? I guess you’ve also succumbed to the fatal hypnotic effect of Chinatown. But I love Chinese food and really wanted to sample the real thing, as eaten by Londoners. I found it on the opposite side of Kensington Gardens at the Royal China on Queensway in Bayswater. Dim sum has been popular here for decades and the queues start at breakfast time on Sundays. An unassuming entry off a busy shopping street gives way to the substantial Oriental dining room with gold-leaf ceiling, which was buzzing with a lively atmosphere. Here we dined handsomely on steamed dumplings of crab and spinach and prawn and coriander, spare ribs in black bean sauce, sesame prawn rolls, crispy fried squid balls and authentically wobbly cheung fun with peanut sauce. London pubs are pretty special too and again, if you just veer slightly off the tourist trail you will be rewarded with proper, unspoiled watering holes. To name just a few, the Goat on Kensington High Street is one of London’s oldest and is rarely quiet, while The Elgin in Notting Hill is slightly bohemian in feel. Then it’s back to the Baglioni for a nightcap, sweet dreams and another taste of luxury, Italian-style. Southside | www.southsidemagazine.co.uk 53

Pocket rocket The Audi RS3 is one of the most powerful hot hatchbacks in the world. With 362hp produced from its 2.5-litre five cylinder engine, coupled with four-wheel drive and a quick shifting DSG gearbox, it can sprint from rest to 62mph in just 4.3 seconds. Not exactly slow. Now though, Audi has upped the power stacks even higher – power for the Audi RS3 now weights in at 395hp, making it the most powerful hot hatchback on the planet. 0-62mph is reduced to 4.1 seconds and the top speed is limited to 155mph. Derestricted, it can hit 174mph. The interior has been changed slightly with the introduction of the Audi virtual cockpit display. Pricing yet to be confirmed. Available to order in the summer.

Racing pedigree With the imminent arrival of this year’s F1 campaign, Aston Martin has unveiled its latest additions to the Vantage range; the V8 and V12 Vantage S Red Bull Racing Editions. Taking inspiration from Red Bull Racing’s distinctive livery, owners will be treated to a deep Mariana Blue paint finish as standard with red infills on the carbon fibre grille and yellow brake callipers. PATIENCE IS KEY TO DELIVERING SUCCESS, SAYS PETER SWALLOW, CHAIR OF DESTINATION CHESTERFIELD.
n commercial property circles it seems that the planning and design stages of a major project can take forever, to the point where people must wonder whether significant developments will actually ever be delivered. Thatâ&#x20AC;&#x2122;s certainly been the case for key schemes like Chesterfield Waterside, Peak Resort, Northern Gateway and Walton Works. Itâ&#x20AC;&#x2122;s not unusual for large scale developments to take years to actually get off the ground. The planning stage as a result of Government Policy is lengthy, expensive and very detailed, involving specialist consultants from many disciplines for a start. By way of example, around 120 applications for precommencement planning requirements have been submitted for the Peak Resort development alone, costing approximately ÂŁ1million, and thatâ&#x20AC;&#x2122;s even before a spade has been put in the ground. Chesterfield Waterside is no different in this respect, the masterplanning for this important new area of the town started in 2006! Unfortunately, it is difficult to move forward with formalising the funding of any form of development before there is some form of planning consent in place due to the cost and risks involved in the planning process.

However, recently we have seen very real progress with Peak Resort, Chesterfield Waterside and Walton Works; all three of them moving into significant phases in their delivery. Much of this progress is due in no small part to the support of Chesterfield Borough Council. A development like Peak Resort or Chesterfield Waterside cannot be built in isolation. It is important there are the roads and buses to give easy public access, sufficient people who are work ready or coming through the local education system, enough homes for people to live in, parking, etc, the list goes on; these elements cannot be put in place overnight, they require lots of forward planning but, most importantly, funding. Chesterfield Borough Council has been instrumental in securing Sheffield City Region (SCR) funding for Peak Resort and Chesterfield Waterside, enabling these schemes to get moving. Thanks to SCR funding both schemes are underway, making Chesterfield home to one of the largest regeneration projects and the largest leisure development in the UK. And so my message to you all this month is, be patient. Significant things are happening, albeit behind the scenes, however weâ&#x20AC;&#x2122;re all in it for the long haul not a short term fix. Your patience will be rewarded with jobs, housing, investment and visitors to the town. As the old saying goes, â&#x20AC;&#x2DC;great things come to those who waitâ&#x20AC;&#x2122; and thatâ&#x20AC;&#x2122;s certainly whatâ&#x20AC;&#x2122;s happening right now in Chesterfield.
