John Fairest Funeral Directors understand how difficult this time of year can be, which is why the funeral home on Abbey Lane, Woodseats hold an annual Christmas memorial service on the second Sunday of December. The service provides a time and place for reflection, as well as a supportive environment for families, and will include carol singing and the lighting of a candle in memory of loved ones. Refreshments are also served after the service. The funeral home welcomes all the families they have looked after over the past eight years, and this year the Christmas Memorial Service will take place on Sunday 11 December at Hutcliffe Wood Crematorium at 2pm. From Thursday 1 December, there will be a memorial Christmas tree in the reception area of the funeral home, where clients past and present can write messages of remembrance on stars and attach them to the tree. All messages from previous years have been wrapped up and put under the tree. Turkey sandwich? Itâ&#x20AC;&#x2122;s time to be a little more adventurous
Leftovers, with a twist UNSURE OF WHAT TO DO WITH THAT LEFTOVER CHRISTMAS TURKEY? MOLLY McGREEVY HAS SOME TOP TIPS FOR TASTY FESTIVE TREATS. hether your Christmas catering is for two or 20, by Boxing Day the fridge will still be bursting with festive cuisine, but there is more to Christmas leftovers than a bubble and squeak and turkey sandwiches. There are hundreds of uses for your Christmas dinner leftovers, and if done right you can use the same ingredients to transform Boxing Day into just as much of a culinary treat.

Turkey Dry, predictable turkey sandwiches are a thing of the past, instead, fight off the festive flab with a light, flavoursome turkey salad, which could make an impressive centre piece at the Boxing Day buffet. With salads, there are no limits, as well as veggies you can throw in leftover nuts and seeds, or dried fruit.
TURKEY AND WARM CLEMENTINE SALAD Ingredients
2 banana shallots Olive oil 2 clementines 2 tablespoons red wine vinegar Sea salt Freshly-ground black pepper 250g leftover free-range turkey 100g mixed nuts and seeds, such as hazelnuts, pistachios or pumpkin seeds 50g dried cranberries 1 teaspoon runny honey 2 red chicory 75g watercress 75g rocket 2 tablespoons low-fat natural yoghurt 1 pomegranate 30 Southside | www.southsidemagazine.co.uk
Method
1. Peel and finely dice the shallots, then add to a small frying pan with a splash of olive oil and cook over a medium-low heat for around five minutes, or until golden and sticky. Finely grate in the zest from the clementines, then squeeze in the juice and cook for a further five minutes, or until reduced to a nice, syrupy consistency. Pour in the vinegar and four tablespoons of olive oil, season to taste, then reduce the heat to low and leave the to simmer until needed. 2. Heat a lug of olive oil in a large non-stick frying pan over a medium-high heat. Shred and add the turkey (I use both the brown and white meat) and fry for around five minutes, or until crispy. Roughly bash the nuts and seeds in a pestle and mortar, then add to the pan with the cranberries and honey. Season with salt and pepper and cook for a further couple of minutes, or until sticky and caramelised. 3. Meanwhile, trim the nice tops off the chicory, leaving them whole, then trim and finely slice the base. Place the chicory leaves onto a serving platter with the watercress and rocket. Drizzle over the warm clementine dressing, pile the sticky, caramelised turkey on top and spoon over the yoghurt. Halve a pomegranate, then hold one half cut-side down in your hand and bash the back with a spoon so the seeds fall over the salad. Serve and enjoy!

1. To cook the pasta, bring a large pan of water to the boil, add a generous measure of salt and tip in the pasta. Stir once and return to the boil, then boil rapidly for 12 minutes. Preheat the oven to 190ºC/ /fan 170ºC/gas 5.
Cheeseboard By the time you reach the cheeseboard on Christmas Day, tummies are full and no one can eat another morsel, often leading to a sad selection left stood on the table. Making a pasta bake from your cheeseboard gives it a second life, and makes for a quick and easy meal amongst the stress of festivities.

3. Drain the pasta and tip it into the sauce. Taste and add extra seasoning if necessary. Stir in the ham and grate in any hard cheese, then tip into a shallow ovenproof dish. Dice any remaining cheeses and swirl into the pasta to make cheesy pockets. 4. Mix the nuts and parsley together, then scatter over the pasta. Bake in the oven for 30 minutes until the nuts are golden and crunchy and everything is piping hot.

500g packet rigatoni 850ml milk 50g butter 50g plain flour Half a nutmeg (or ¼ tsp ready ground) 250g cheese 200g cooked ham, chopped (optional) 85g mixed nut, such as cashews, blanched almonds, and hazelnuts, roughly chopped Handful of parsley, roughly chopped

Vegetables For many, Boxing Day bubble and squeak is as traditional as carols and a tree, but vegetables are incredibly versatile and can be used to create some fabulous meals to feed the whole family. For a bit of spice, vegetables can be transformed into a curry, which can be frozen to use in the future – it could even cater a New Year’s Eve party, if you really want your leftovers to go the distance. Curry is quick, easy and a crowd-pleaser, it also offers an alternative to the rich, stodgy food that is normally associated with Christmas.
2. To make the sauce, pour the milk into a pan and add the butter, flour and plenty of seasoning. Grate in the half nutmeg (or sprinkle in the ready ground). Bring to the boil over a medium heat, whisking all the time until it makes a smooth, creamy sauce.
VEGETABLE CURRY Ingredients
2 onions, sliced 1 tablespoon vegetable oil 4 tablespoons tikka masala paste 680-700g jar tomato passata 400g can coconut milk 100ml water Coriander sprigs, to serve Rice or naan bread, to serve Method
1. To make the sauce, fry the onions in the oil in a large pan until softened and golden – add a splash of water if they start to dry out. Stir in the curry paste, cook for three minutes, then add the passata, coconut milk and 100ml water. Simmer for a few minutes. 2. Tip the leftover vegetables into the sauce and simmer for 10-15 minutes until tender (reduce this time if vegetables are already cooked). Scatter with coriander and serve.
If you’re feeling fancy, and have some Yorkshire puddings leftover, top them with a little beef or turkey and serve alongside gravy – these are great hot or cold for post-Christmas canapes. To help leftover Christmas pudding last longer, crumble it and mix it into vanilla ice cream – for the more experienced home chefs mixing it into your own homemade ice cream would also create a lovely Christmassy dessert for weeks to come. To give the dessert that extra luxurious twist, stir in some leftover amaretto or cream liqueur. Combine your favourite Christmas tipples to create cocktails – the perfect addition to any New Year’s Eve party. Amaretto, prosecco and orange juice can be mixed into a fizzy festive drink.

She then added her own twist to almost 50 classic recipes, all of which are lavishly illustrated in the 224-page book. And the seven grandmothers she found through her network didn’t stop there. As well as being consulted on the finer points of Indian cooking, each of them added a little spice in the form of some pearls of wisdom to pass on to the younger generation. “Older people have so much to offer, not only in the secrets of the kitchen learned over many decades, but in life experience,” says

Anneeka. “Of course it’s the food that really does the talking in the book – heeding the life advice is optional!” The research for her book took her all over the country to seek out grandmothers she knew of, renowned for their excellent cooking. “We carefully prepared every recipe from scratch with the aim of showing people how to make truly authentic dishes at home. The result is a far cry from what you might find in most Indian restaurants. Their menus feature cuisine which has, not surprisingly, been adapted to the English palate. But in the case of the grandmothers, there was more of a connection with India, and the knowledge they brought over here with them has been passed down across the centuries.” The recipes chosen for the book are written in an informal style, with plenty of pointers for the amateur cook. Among them are old-school favourites like aloo paratha (stuffed potato flatbread), aloo gobi, mah di daal, cholay and pea and potato samosas, together with dishes for those with a sweeter tooth, such as mango kulfi and barfi. Subtle changes There will be an all-new Seat Leon released in February 2017. The previous Leon was a winner largely due to its distinct, classy look and the new model has followed with this philosophy. It’s not an ‘all-new’ Leon, but an update to the previous model. There are subtle styling changes to the exterior which include redesigned bumpers to make the car look bigger and there’s an injection of brand new and updated technologically as showcased in the Ateca SUV. This includes the likes of traffic jam assist and pedestrian protection assist. It also comes with a new trim level named XCELLENCE which is supposed to give a distinct upmarket feel and there’re a host of new Euro 6 compliant engines available to choose from.

ALL-NEW A5 Welcome everybody to the all-new Audi A5, a car which took the market by storm with its initial release by in 2007. Available in Coupe and five-door Sportback body styles, the A5 is built on an all-new platform and comes with all the latest technological gadgets you can think of. The Coupe will be available with three diesels and two petrol engines whilst the Sportback will only be available with one petrol and two diesels. Engine ranges from a 187hp 2.0-litre TDI and TFSI to a 249hp 2.0-litre TFSI with all-wheel drive Quattro. There’s also a 3.0-litre TDI with 215hp available too. Alongside the A5 is also the S5 variant. Available in both body designs it’ll come with a 349hp 3.0-litre turbocharged V6.
Championship edition To celebrate the championship win of Marco Wittmann in the DTM Championship, BMW has given their cherished M4 another special edition. Called the DTM Championship Edition, it’ll have top-class motor racing technology for drive and suspension as well as a specific design that mimics the DTM racing cars built by BMW Motorsport. This includes body stripes, a huge boot spoiler and aggressive body styling. Based on the M4 GTS, it gets a 3.0-litre turbocharged watercooled straight-six petrol engine producing 593hp, which is good for a 0-62mph time of 3.8 seconds and a 190mph top speed. Inside, it’s a strict two-seater carbon bucket job with a roll cage to replaces the rear seats. Luxuries include Sat-Nav, air-con, adaptive lights and parking sensors.
Stand-out crowd-pleaser After the release of the newly updated GTR earlier this year, Nissan has revealed the Nismo edition – the flagship in the GTR range. Costing from £149,995, the Nismo will be powered by a more powerful version of the 3.8litre twin-turbo V6 found in regular GTR models, 592hp to be precise. This can be due to the fact that this Nismo engine features technology from the GTR GT3 car. As with all GTR’s, power is sent to all four wheels via a six-speed double-clutch gearbox. With the improved aerodynamic capabilities of this Nismo edition, it produces more downforce than any other Nissan production car to date. Brian Eldridge, 69, marched at the Cenotaph in London with more than 100 other blind veterans supported by Blind Veterans UK, the national charity for vision-impaired exservicemen and women. Blind Veterans UK provides vital practical and emotional support to help veterans discover life beyond sight loss. The charity estimates that there are currently 59,000 blind veterans that would be eligible to access its specialist support, most of whom are not currently aware of it. Cocina at Casa Hotel has taken the top title in the Chesterfield Food and Drink Awards for the second year running. The 2 Rosette, four-star restaurant was one of 13 winners announced at the town’s fourth annual Food and Drink Awards. In total 14 food and drink establishments, producers and individuals were named as Chesterfield’s finest at the sell-out awards ceremony hosted by celebrity chef and couture cake maker to royalty and the stars, Mich Turner. The Callywhite celebrates its first birthday The Callywhite Care Home, celebrated being open for a year with a tea dance; a swinging celebration for residents, relatives and members of the local community. Everyone dressed up in their glad rags and enjoyed an afternoon of dancing and fun, with entertainment provided by Tanya Adele who performed all the oldies from the forties to the sixties and got everyone up singing and dancing. Julie Garnett, deputy manager at The Callywhite, said: “It’s been such a lovely event. The residents have had a wonderful time. I’ve never seen them dance so much. Even some of the gentlemen were on the dancefloor!”
Dunston Road Scoops Second Landfill Grant Chesterfield Panthers RUFC has received nearly £18,000 towards the development of community areas to the west end of the new clubhouse. The money has come from Viridor Credits Environmental Company via the Landfill Communities Fund and will pay for the installation of land drainage, paving and cultivation to create better access and surfaces suitable for sporting and community use. The multi-use paved area will have access to the clubroom and could accommodate a large marquee, extending the capacity of the clubroom to allow larger social functions as well as a temporary covered area for the administration of sporting festivals. The work is being carried out by local contractors Pro-Build (Clowne Landscaping) Limited and Peter Bowden Sports Ground Maintenance Limited and due for completion by early November 2016.

CHESTERFIELD IS SET FOR ANOTHER YEAR OF GROWTH, BELIEVES PETER SWALLOW, CHAIR OF DESTINATION CHESTERFIELD.
W
hat a year 2016 has been. Recent world and national events aside, Chesterfieldâ&#x20AC;&#x2122;s year has been hugely
positive. It was the first year, since records began, that unemployment in the town fell below the national average. It was also the year that Chesterfield became a university town when the University of Derby opened a campus at St Helenaâ&#x20AC;&#x2122;s. The town also made headway with ÂŁ1bn worth of developments in the borough. Site preparation began at Basin Square at Chesterfield Waterside, surveying work began on the Elder Way project, new buildings were completed at Markham Vale and Peak Resort also moved forward. I for one am very optimistic about 2017. Having seen, during the Made in Chesterfield festival, the rich vein of manufacturing companies that operate here already, I believe there are substantial opportunities for the townâ&#x20AC;&#x2122;s manufacturing sector when Brexit becomes a reality. In the meantime, the low exchange rates which have resulted
from the Brexit vote have provided a welcome boost to export opportunities for this sector. Rather than have a wait and see approach to world and national events however, Chesterfield needs to do now what it did during the recession â&#x20AC;&#x201C; start laying the foundations for growth now so that we are ready to hit the ground running when Brexit negotiations are complete. This approach created the Destination Chesterfield campaign and enabled us to attract the investment we now see taking place in the borough. We have the foundations in place for a strong future. We have the developments, employers and now, thanks to the University of Derby, we will have a hugely skilled workforce. Nowhere was the young talent in this town more obvious than at the Food and Drink Awards where 100 Chesterfield College students can be credited with making the night so special; and those young people represented just a fraction of the students and apprentices who live, work and train here. Not only are we a university town, Chesterfield can be proud to call itself an apprentice town too. 2016 has been another year of opportunity for the town and there is so much more to come in 2017 and beyond. The weather may be getting colder, but Chesterfieldâ&#x20AC;&#x2122;s prospects have never looked hotter. Hereâ&#x20AC;&#x2122;s to a very happy Christmas and a prosperous New Year.
