Legacies also help to fund up to £250,000 of research into the prevention and cure of childhood illnesses and disease every single year. One of these projects developed a pioneering screening programme which detects rare life-threatening diseases in babies. Thanks to a successful pilot study leg by Sheffield Children’s Hospital, all new-born babies in England will be screened for four additional rare but serious conditions. The early detection and treatment of these conditions helps to give children the best possible start in life. CHRIS MAPP The Tickled Trout I’ve worked at The Tickled Trout since we opened in August 2014. We serve comfort food executed well, but also some finer dining dishes on our specials menu. Working in this industry is a family thing. I grew up in a pub and we have been involved in hospitality for many years. Because of our name, the trout dish is what we call our signature, but we do have many others that we could also class as such. JAMES WESTWOOD Hotel Van Dyk I’ve worked at Hotel Van Dyk on and off for four years, starting as sous chef, and left to progress my career - returning as executive head chef over a year ago. We specialise in good, honest food, from simple family favourites made with fresh local ingredients, to our rosette award winning dishes, which are a little more modern and creative. I spent a lot of time cooking with my auntie from a young age - I was making curries and Bolognese from scratch at the age of seven - and my grandfather triggered my love for cooking by teaching me to make toffee and toffee apple - not something I recommend you teach children, by the way. As I progressed in the industry I loved it more and more - it doesn’t become a career, more a way of life. The thing I most enjoy about being a chef is pushing my team and myself to achieve our full potential, and always striving to achieve something better, or something new to give our customers. CHARLIE CURRAN Peppercorn I’ve been head chef and owner three and a half years. We serve modern British food. Before buying Peppercorn, myself and my partner, Kelly ran The Samuel Fox in Derbyshire. I don’t have a signature dish as such, but one of our main courses is flying out and people are loving it. It’s the tandoori cod fillet with a sweet potato and spinach curry. I enjoy the fact that no one day is the same. SHARON HILTON H&F Vintage Tearooms I was living and working at a restaurant in Mojacar, in the south of Spain for seven years before I came back to England and H&F Vintage Tearooms, where I have been working for the last two and a half years. Since leaving school I have worked in the food industry, from Gunstones Bakery in Dronfield, to chip shops and Marks and Spencer - it is a very rewarding career that can go as far as you want it to. My day starts around 8am, when I buy in fresh ingredients, before prepping ready for us to open. As a solo chef I have to make a lot of our products whilst also being in service, so it’s a bit of a juggling act sometimes, but it works. Our eggs benedict is very popular and I honey roast the ham each day, but I would say our best dish is my chocolate bar cheesecake – people phone up just to see if we have any in. Food makes people happy and good food makes people really happy there aren’t many other jobs where you get to make people happy every day. It’s good to see your regular customers come in and say hello to you, knowing they’ve come because they love the food that you cook. I am constantly striving to produce – and earning a reputation for – excellent food – I actually won a Junior Master Chef competition in my home town of Liverpool when I was 15. Sunny side up! BOTTLE & THYME BRINGS A TOUCH OF SUMMER TO A DARK NIGHT FOR PHOEBE SEYMOUR. t was a miserably dark and rainy weekday evening when I arrived in Chesterfield town centre; the perfect setting for the opening of a gothic novel (certainly not for a night out). But when my partner and I reached new bar and restaurant Bottle & Thyme, it was like a ray of sunshine. Vines and flowers hung above the bar, upbeat 60s soul music was playing and low hanging lightbulbs lit up the room. So what better way to enjoy the summer-like surroundings than with a round of cocktails? My partner ordered the passionfruit and cloudy apple mojito (£7.50) – a delightful combination of 12-year rum, fresh passionfruit, lime and sugar, topped with cloudy apple juice. And as I was driving, but didn’t want to miss out, I went for a strawberry and basil cooler mocktail (£3.50) – a mix of real strawberry puree, basil syrup, cranberry juice and fresh lime, topped with soda. Like their cocktails, everything on Bottle & Thyme’s rustic menu is created using fresh, seasonal and locally sourced ingredients. As I looked at the mouth-watering options, I couldn’t wait to get tucked in. To start, I had my eye on the blue cheese, spinach and garlic stuffed field mushroom

topped with bread crumbs (£5), but not being a blue cheese fan, our waitress kindly offered an alternative – a sharp and tangy Sussex Charmer mature cheese – a worthy substitute. My partner meanwhile, had the soup of the day (£4.50). Always a great indicator of a good chef, it did not disappoint. It was a rich, roasted tomato soup topped with croutons and accompanied by locally sourced artisan bread. For mains, I had the salmon, chorizo, tiger prawn, tomato and lemon dressing skewer (£11.50) with a side of sweet potato fries and my partner had the 8oz rib-eye steak (£18.50) served with chips, a field mushroom and spinach puree. Each morsel on my skewer was mouthwatering and grilled to perfection. The lemon dressing was thick and zesty and complemented the other flavours wonderfully. The sweet potato fries were chunky and served in rock salt – an irresistible combination. My partner’s steak was medium-cooked with a tender pink centre, beautifully balanced by the bitterness of the spinach puree and the juicy, sweeter flavour of the mushroom. There were some delicious looking cakes
on the counter, but I couldn’t resist ordering the salted caramel chocolate brownie (£5.50) for dessert, while my partner went for a British classic with a twist – the rum and vanilla sticky toffee pudding (£5.50). Like all good British desserts, his came with a thick vanilla custard (although you can opt for cream) and my gloriously crisp on the outside, warm and gooey on the inside brownie was served with a cool scoop of vanilla ice cream - both absolutely flawless. Back outside, we hardly noticed the miserable weather. We were still basking in the warm atmosphere and deliciously fresh food. Hidden gem A HOMELY ATMOSPHERE, RUSTIC FOOD FULL OF FLAVOUR – THE RED LION BAR AND BISTRO IS EVERYTHING A COUNTRY PUB SHOULD BE, SAYS RACHEL MARTIN.

link and you’ll miss it,” I was advised before we left west Sheffield for the Red Lion Bar and Bistro. That seemed hard to believe until I drove past it, technology once again coming to the rescue in the form of our trusty sat nav. In fairness though, it was quite easy to miss in the dark, tucked away off the beaten track. The term ‘traditional country pub’ is perhaps somewhat over-used when describing the vast number of venues that are hidden among the rolling hills of Derbyshire. However, the phrase has perhaps never been more fitting than when applied here. A winning blend of real ales and wines together with rustic, flavoursome food have helped the bar and bistro earn recognition from the Good Food Guide, the AA Hotel Guide and the Derbyshire Food and Drink guide. Coupled with plenty of homely touches, a roaring log fire, intimate corners and fantastic views, and with a menu written with a tangy lyricism that makes you salivate – red miso glazed mackerel, textures of cucumber, buttermilk, dill and caviar, anyone? – it’s little wonder it has swept the board at a number of awards ceremonies. Comfortably ensconced in the dining room, we were greeted by a basket of home-baked thyme focaccia and white bloomer, both perfectly crisp on the outside and soft and chewy on the inside. This was swiftly followed

by the arrival of our starters, wood pigeon (£8) and a bowl of leek and potato soup (£5) for my partner, which came topped with chive crème fraiche. The pigeon breast was glazed to an unctuous, gleaming finish and the accompanying artichoke risotto was filling without being heavy. Topped with a very British assemblage of baked vegetable crisps and roast chestnuts, just-charred into smokiness, it was winter on a plate. For mains, I opted for the local venison haunch steak, scorched white cabbage, roast baby parsnips and haggis bonbon (£17.95). The pink venison was flavoursome without being rich – the outside caramelised and crispy, the inside moist and tender. And the roasted baby parsnips were bronzed so that their natural oils brought their full flavour to the fore. My partner’s Derbyshire slow braised lamb shoulder shepherd’s pie (£14) was, in his words: 'almost better than ma’s homemade”. It was so good that I wasn’t even offered a morsel (note to self: from now on bring a more generous critic to dinner). The standard fluffy potato topping was replaced by a more virtuous Applewood cheddar mash and there were generous lumps of braised lamb shoulder, lots of winter veg and a spectacular, and very welcome explosion, of red cabbage. The vinegar in the latter mingled with the
gravy was excellent, so I was told. We ended with a straightforwardly good rhubarb and custard cremeux (£6), dusted with textures of forced rhubarb and bitter honeycomb, and a hot chocolate fondant (£6), which cleverly combined meltingmiddle indulgence with the snap of a burnt chocolate base. The Red Lion Bar and Bistro has won more pub-bistro awards than you can shake a stick at and is the epitome of, you guessed it, a great country pub. We’re sure that next time we won’t get lost. Abi joined Westbourne from neighbouring Ashdell in 2012 following her sister Jess, who joined in 2010. Both girls have enjoyed success both academically and theatrically. Girls seem to thrive particularly well at Westbourne. Another former Head Girl, Lizzie Peck, is now studying at Oxford after spending 12 years at Westbourne. So, when it came to creating a new film promoting the school, it was decided to tell the story of just one girl’s progress. Restoration gives a new lease of life to a historic Cromford pub Bring together Arkwright history, the Peak district, an award winning chef and the restoration of a 300-year-old Grade I listed coaching house and there can’t be a pub lover or historian in the land who isn’t excited. That’s exactly what new landlord Paul Waddingham and wife Tina have achieved at the Greyhound Hotel, Cromford, and, after four months of restoration, they are ready to show off the premium offer. LEIGH HEADS FOR LONDON TO COMPETE FOR FUTURE CHEF OF THE YEAR TITLE A pupil from Dronfield Henry Fanshawe School will take part in the Springboard Future Chef of the Year 2017 competition in London after being mentored by Chris Mapp, owner of The Tickled Trout at Barlow. Leigh Speight (13) won the regional heat of the competition with a meal of consisting of poached and roasted lemon and herb chicken with sweet potato puree, gnocchi, orange-glazed carrots, French beans and a light chicken jus, followed by lemon posset with piped meringue. She was mentored by Chris for a few weeks in the run up to the competition and impressed the judges not only with her final dish but with her methods of cooking. Chris said: “Leigh is only 13 but she has a clear natural talent and such an amazing ability to stay calm under pressure. “Everyone at the Tickled Trout is very proud and we wish Leigh all the very best of luck.” The Springboard charity supports people into employment in the hospitality, leisure and tourism industry. Leigh and Chris are currently working on dishes for the final, which will take place in London.

arch is the month for celebration in Chesterfield. It’s our opportunity to look back on what we have achieved and look forward to the future. The annual Celebrate Chesterfield event is the perfect vehicle for this, and it has become an important and popular date for the town’s business community. Once a year, over 250 members of the business community come together at the Winding Wheel and take time to learn about, and appreciate, all the business and regeneration activity that is happening in the town. All too often when we have our heads down getting on with dayto-day business, it’s easy to overlook what we have achieved – especially when we, as a town, have achieved so much. By way of example, there are thousands of jobs in the pipeline thanks to key developments like Peak Resort, Chesterfield Waterside, Markham Vale and Northern Gateway. These developments can however only

thrive if the town has a ready and skilled workforce, which brings me onto a second celebration – National Apprenticeship Week (6 – 10 March). This is designed to celebrate the positive impact apprenticeships and traineeships have on individuals, businesses and the economy. Chesterfield provides a great example in this respect. Apprenticeships are thriving in the borough. Many of the town’s businesses offer apprenticeship opportunities, so it is important we encourage our young people to consider this route when at school. The government recognises just how important apprenticeships are to our economy, which is why it has committed to three million apprentice starts by 2020. It is also reforming apprenticeships, putting business needs at their core to ensure young people complete their apprenticeships with the skills and experience required for a long and rewarding career in their chosen industry. Apprenticeships are changing. If you’re a parent, grandparent, aunt, uncle or teacher, I urge you to take a look at apprenticeships and see the opportunities they can offer young people today, and for the future. Apprenticeships are key to us attracting new investors to the town and making current developments, and indeed future ones, a success. Let’s keep the momentum of National Apprenticeship Week going well beyond 10 March.
