Buildings on the site however, can be traced back to 1527, when it is believed that it had an ecclesiastical use. Details of the history can be found in the foyer at the back of The Forge, and it makes an interesting read. The displays are illustrated with pictures and sketches and show details of all the previous uses of the site and census information.

CUBANA’S CULINARY DREAM TEAM HAS A NEW HEAD CHEF AND A NEW MENU.

W

ith over a decade as second in charge – there was no-one better to take control of one of Sheffield’s flagship

kitchens. Erkland Xhaja is celebrating his move to head of the Cubana kitchen in Leopold Square with the unveiling of his first menu. He worked passionately under the command of former head chef Fabian Cruz for over 13 years – Fabian himself had been there since the day the celebrated venue first opened on Trippet Lane, many years before its move to bigger premises. Albanian born Erkland moved to Italy as a child before settling in Sheffield as a teenager. He originally started working at Nonnas on Ecclesall Road, joining Cubana in 2002 – Erkland now heads up a team of six that includes some of the most experienced and well-respected chefs in the city in the Cubana kitchen that caters for hundreds of covers every week and is now one of the city’s

busiest independent bar/restaurants. He is joined in Cubana’s culinary team by Nicolino Dente, former owner and head chef of Ecclesall Road’s Santinos, Stuart Berry, the original head chef at Nonnas and former owner of Chesterfield Road restaurants Kitos and Swanky Franks, and Ryan Christian, former owner and head chef of Sharrowvale Road’s The Pasta Bar. Erkland’s new menu sees 12 new dishes in a menu consisting of over 50 tapas dishes. It includes his own twist on the celebrated Brazilian stew made with diced pork shoulder, chorizo, smoked bacon, black beans, red peppers, tomato purée and smoked paprika. There’s also a big emphasis on fresh fish dishes including a seafood paella served in a traditional paella pan at your table and several tapas dishes with inspiration taken from trips to the Canary Islands – home of Erkland’s partner. Cubana co-owner Adrian Bagnoli said:

“There’s no-one better qualified than Erkland to develop the Cubana menu. The new dishes the team have come up with are some of the best we’ve served and fit in perfectly with the ever-present Cubana favourites for the perfectly balanced tapas menu. I’m looking forward to seeing how popular the new dishes will be and receiving feedback from our regular customers.” Adrian also ensured a dish he tried on a recent family holiday to Mallorca also made the new menu. He said: “We visited an excellent tapas bar in Alcudia and were blown away by their Tiras de Calamares y Chorizo which consists of fresh strips of squid served with small pieces of chorizo glazed in orange and honey– just delicious. Picture perfect PRETTY AS A POSTCARD, THE PEACOCK IS THE EPITOME OF RURAL CUISINE AT ITS BEST, WRITES RACHEL MARTIN. ocooned by the rolling green hills of Derbyshire, on a clear blue day, the Peacock Inn Cutthorpe is indubitably postcard-like. The last of the summer sunshine was flooding into a snug, packed on a busy Wednesday evening, and the bar area is full of tables occupied by local diners and drinkers, enjoying a good natter over one of the many ales and wines that are on offer. The traditional décor coupled with timehonoured coaching inn ambience, means that the mood manages to sit perfectly between casual and formal, and having finally diverted my eyes away from the stunning scenery, an ice cold glass of prosecco (£5.50) arrived, topped with a ripe red strawberry. The hearty à la carte menu is centred on fresh, seasonal ingredients and wherever possible, The Peacock uses the best local produce – not just in terms of quality but also variety. It strikes a happy medium between fine dining and rustic cuisine, and the accompanying wine list is extensive and has been carefully selected to complement your meal. As we watched the last of the sunshine set over the beer garden, with its pretty floral displays, our starters arrived. Opening with scorched mackerel fillet, green gage plums and sea purslane (£6.50), which was a simply

exquisite dish, and for my partner, a teeming bowl of delightfully light and creamy tomato soup, bread and butter (£5). After to-ing and fro-ing I opted for a generous main of potato risotto, cream cheese, chives, pickled onions, parmesan tuile and chive oil (£11). Each component was cooked to perfection and great attention to detail had been paid to presentation. Head chef Andy Clark and his team are certainly not shy of big flavours, and it was the fine balance of rich and rural that made this dish exceptional. Sticking to the tried and tested, my partner ordered the classic Peacock beef burger, fat chips and homemade coleslaw (£13) - the most popular main course coming out of the kitchen when we visited. Topped with pulled beef short rib and Monterey Jack cheese, the burger was lean and delicately seasoned, and the accompanying chilli mayo was remarkably subtle – that’s a good thing, given that sometimes piquant condiments can really overwhelm the additional flavours. Dessert did not disappoint either. My almond tart, cherry puree crème pat, cherry powder and ground almond tuile (£6) was dense but extremely moist and screaming with flavour, and my partners chocolate delice, praline crisp, salted caramel sauce and caramel ice cream (£6) was a genius combination of very distinct and assertive

flavours that worked harmoniously together. Much favoured by walkers, on account of its beautiful scenic views and access to Linacre reservoir, The Peacock Inn showcases the best of British hospitality - cleverly combining bucolic architecture with a warm ambience, friendly staff, and a menu that offers a number of contemporary touches you might not expect from such a rustic establishment. Bidders battle over a rare find any of us watch TV programmes such as Flog It and Bargain Hunt, hoping to spot what is fashionable and saleable. But while trends come and go, one thing that is continuously popular at auction - sometimes with a hefty price tag depending on its rarity - is war memorabilia. Hansons Auctioneers thrive on discovering the past though antiques and collectables, and over the years have housed a selection of militaria which often causes a stir in the saleroom. The Derbyshire auction house has recently made a tremendous sale, selling a badge of honour, made for a Battle of Waterloo hero for more than treble the original estimate. The bar brooch featuring medals awarded to a celebrate commander-in-chief of the British Army who fought under the Duke of Wellington in 1815 has sold for £7,800 at auction. The original estimate was £1,000 to £2,000 but the interest was so vast that five telephone lines at Hansons were booked by bidders keen to acquire the historical item. As well, a number of commissioned bids were placed in advance of the sale. The brooch was commissioned by Lieutenant General Rowland Hill, 1st Viscount Hill, a British Army officer who served in the Napoleonic Wars and a trusted commander under Wellington. “I am delighted to see this important historical piece honouring a Shropshire war hero and great leader sell for well above its estimate,” said Charles Hanson, owner of Hansons Auctioneers. “The team at Hansons are extremely proud

to handle the sale of a medals brooch honouring and recognising his many acts of bravery.” General Hill was awarded a clutch of medals - the Knight Grand Cross of the Order of Bath, the Knight Grand Cross of the Royal Guelphic Order, the Grand Cross of the Order of the Tower and the Sword and the Peninsular Cross – all of which feature on the bespoke badge of honour sold in Hansons Militaria sale.

The bar brooch, still in its original box, is one of the richest historical military finds Mr Hanson has ever come across. “This gold enamel badge would have been custom made for him. Small and elegant, it perhaps sums up the character of the man himself. He was exceptional on the battlefield and yet humble, a commander renowned for looking after his men.” “This badge deserved to sell for many thousands and is worthy of a military museums - it’s really an astonishing find,” he added. General Hill was born in 1772 in Shropshire and was educated at The King’s School in Chester. His rise through the army ranks was swift and in 1790 was commissioned into the 38th Foot. By 1793 he had been made a Captain and by 1800 a Colonel. He died at Hardwicke Grange at the age of 70. “In addition to his military career, he was also an MP for Shrewsbury. t’s the ultimate festival that for many of us, defines the beginning of summer’s slow surrender to autumn, and it promises to be another action-packed weekend at the annual Chatsworth Country Fair from 1 to 3 September. The iconic Second World War planes of the Royal Air Force Battle of Britain Memorial Flypast will return to the skies of Derbyshire while Jump4Heroes, the British Legion’s Extreme Human Flight Team, will be dropping into the arena trailing smoke and flying flags. Weather permitting, visitors will thrill to the majestic sight of one of the country’s largest hot air balloon lifts setting off each day in the early morning and at dusk across the river Derwent and the glorious adjoining parkland. In true celebration of the countryside, animals naturally take a starring role, whether it’s the adorable ponies taking part in the high-speed Mounted Games, the terrier race and hounds parade, or the Dog and Duck Show. Stuart Barnes’ passion for the canine species has enabled him to gain an incredible understanding of everything dog related. As part of the demonstration, Stuart and his teammate Jason Shorten use trained and untrained sheep dogs to herd ducks, amusing and educating the audience about common behavioural issues and resolutions for them. Stuart highlights how untrained and poorly behaved dogs still have a programmed natural instinct, thus providing the audience with a new understanding of ‘the way of the dog’. CJ’s Birds of Prey show is always popular with audiences. This is a unique father and daughter act led by Charlotte Hill, who has trained in the art of falconry in various countries across the world. The duo’s bubbling enthusiasm and skill has led to them becoming one of the most popular birds of prey display teams in the UK. There is plenty to keep children entertained too, whether it’s taking part in the family fun dog show Scrufts or getting active with everything from zorbing and climbing, to bouncing and balancing. Other fun-filled activities for the kids include Banana Brain Fun Shows, pony rides, a bouncy castle, a vintage fairground, Wow Water zorb balls, exotic animal encounters,

This will be Paul’s second appearance at the event and he is looking forward to showing off his artisan baking skills. He is widely known for being a judge on the BAFTA award-winning The Great British Bake Off, alongside Mary Berry, who as a much-loved and familiar face returns to the country show for a fifth year. Demonstrations will take place in The Stoves Cookery Demonstration Theatre located in a dedicated marquee with TV screens, PA and seating at the heart of the Fine Food Village. With the hottest chefs from across the region packing out a full timetable each day, the Cookery Theatre is sure to be a highlight for visitors. For those who are inspired by the demonstrations at the Cookery Theatre, there’s an opportunity to sit down for afternoon tea or buy some delicious ingredients to take home and cook yourself. The Fine Food Village showcases more than 70 local and small artisan producers providing the chance to buy fresh seasonal food and gourmet delights. Around the showground, there are plenty more wonderful shopping opportunities, with some great boutique clothing stands, traders selling tools, pet supplies, shooting, hunting and fishing equipment, fine wines, arts and crafts, and gardening equipment. And if you are looking for something to really get your adrenaline pumping, the Cossack Warriors will be performing death-

defying stunts on horseback in the Grand Ring. Today, the equestrian art of dzhigitovka, which sees the rider leaping from his horse at full gallop or sliding under its belly, is practised as a sport by the distant descendants of the original Cossacks. For the first time in history, The Stampede Stunt Company in association with The International Equestrian Dzhigitovka Federation have brought together the Dzhigits of Russia, Poland and Britain to perform together in a one-off Chatsworth Spectacular. Meanwhile, The Royal Signals Motorcycle Display Team, better known as The White

Helmets, will be displaying a mixture of unique feats of balance, coordination and high impact high speed cross-over rides on Triumph Tiger TR7V 750cc machines. The display demonstrates the courage, skill, determination and versatility required by a soldier in the Royal Signals, whilst maintaining the traditions of the team origins as despatch riders. Now in their 90th and final year, Chatsworth is honoured to have The White Helmets performing their fire jumps, pyramids and high-speed leaps before being disbanded at the end of September. And what would such a grand event be without a royal soundtrack? The Band of The Royal Logistic Corps is one of the regular service bands of the British Army and is called upon to support many military units and civilian events. Over the past 18 months, the band has provided music for homecoming and freedom parades and dinner nights around the UK and overseas, as well as performing in concerts. The Band and Corps of Drums are looking forward to performing at this year’s Chatsworth Country Fair and welcome the Children of the Country Fair to join the Children’s March Past each afternoon. With many more activities and entertainment on offer ranging from vintage vehicle displays, to trade and craft stands, there is something for all the family to enjoy at this year’s show.

BRITAIN’S FAVOURITE BAKER IS BACK AT CHATSWORTH AND LOOKING FORWARD TO PASSING ON SOME OF HIS TOP TIPS. aul Hollywood is returning to the Chatsworth Country Fair on 1 September to share his baking tips and tricks through live demonstrations and will be inspiring guests to get creative in the kitchen. Best-known for the popular TV series Bake-Off, Paul has become a household name on the subject of bread, cakes and pastries. The son of a baker, Paul originally trained as a sculptor before his father persuaded him to join the family business. He then went on to become head baker at some of the most exclusive hotels, gaining a reputation as an innovator, and one of the country’s finest artisan bakers. He began his media career in 2002 where he co-hosted two TV series with James Martin, and has gone on to be a judge on The Great British Bake Off, Junior Bake Off, along with his own series Paul Hollywood’s Bread in 2013. This year, Paul will not only be releasing a new TV series called Baker’s Life but a book to accompany it. You’ll have chance to experience first-hand one of the nation’s favourite chefs at the fair this year, who’ll be cooking up a storm in The Stoves Cookery Demonstration Theatre. Here he talks about last year’s Chatsworth Country Fair, his baking inspirations and greatest baking tips.

Apart from the food tent, what would you say is a particular aspect of Chatsworth you enjoy?

It’s the diversity that got me, I didn’t realise how big the fair was. There are all sorts going on from the Grand Ring and fairground rides to a selection of retailers and artisan foods. After going last year, I said to myself that I must come back, and what was the icing on the cake was the parade ground and Red Arrows flying overhead. What was one of things you enjoyed in the baking tent last year?

For me, it was just being in contact with guests and answering all their questions about my recipes and usually Bake-Off. I am pretty open when I do my demonstrations and like to have questions all the way through. I really enjoy teaching and the demos are a great way to do this.

What will your demos on the Friday include?

I’m going back to basics this year. So I am doing a scone demonstration along with a no-knead bread, which is something I started doing a couple of years ago. When people master the bake, it will change their lives forever – it is so simple but creates the best bread I have ever had. Onto your career, what got you into baking?

Well my parents really. My mum was great at baking pastries, apple pies and biscuits, while my dad, who was a baker by trade, was brilliant at the savoury things like bread. I was constantly learning from them as a young boy and ended up joining the industry because of the enjoyment I got from baking. Who were your mentors when starting your career?

My parents. When I started there was nobody else doing what I did, so the people I picked up the skills from those who were closest to me. Was becoming a household name something you always intended? Paul Hollywood on stage doing what he does best

I am a baker by trade, everything else is just an accident. I will always scratch my head about the fact I am baking on TV, and I am very lucky as it is something I never intended. I set out to be a good baker, that’s all I wanted to do. What is one of your parent’s recipes that sticks with you?

My mum’s ginger biscuits, which are in the new book coming out, along with her apple pie. This is to die for and she uses a really nice pastry which is made with lard. I’ve started doing it this way – it works great. Tell me about your new book.

Well it’s called Baker’s Life and is basically my life in baking, and there is a series coming out with it as well. The book looks back to where I first started in the bakeries in Liverpool with a bit focusing on behind-the-scenes of Bake-Off too. It basically mirrors what I did and where I went through the years. What’s one of the recipes in the book people should try first?

I’d say make a scone as it is quick and simple but the results are unbelievable and you’ll be known as one of the best scone makers in the country. It’s great as you get a quick fix mix with a scone – you mix it, bake and you have the finished product within an hour. So, get going on scones and then progress onto cakes and bread. Why do you think baking is becoming more popular year on year, especially in the younger generation?

I think people have always been into baking, but some just haven’t had the chance to pursue it. However this generation of kids and young adults seem to love baking and Bake-Off has certainly been part of that. To be honest though, I think baking has always been big in this country and some of the British bakes are incredible. What would be your greatest baking tip?

Follow your recipe carefully and make sure you have a clean oven. Most people clean the glass but not the inside and that’s really important. Another great investment would be an oven thermometer, so you can check your oven is achieving the level you’re expecting.

Chesterfield foster carers needed A career in foster care can be extremely rewarding, as well as offering a competitive salary, generous holiday allowance, health cover, a contributory pension scheme, and vouchers for childcare. People from all walks of life can become foster carers as long as they are over 21 years of age, including single people, co-habiting couples, same sex couples and people living in rented accommodation. The only requirement is a spare room for each foster child. Colette Abbiss, fostering service manager at Five Rivers Child Care for the Midlands and North, said there were a number of career options available to aspiring foster carers in Chesterfield. In short break (respite) care, you take foster children on short term placements. There is also parent and child assessment in which parents, or soon-to-be parents, can sometimes be referred to foster care in a bid to develop their ability to look after their child. There are also long term foster placements or specialist fostering, which is for people with previous experience of working with children who have specific care requirements. Naturally, in Chesterfield, it’s all stations go. With the new term starting, I think it is important to congratulate everybody making the step between secondary and further education. Chesterfield College, the St Helena University of Derby campus, and NLT Training services are all located in the town centre, creating an abundance of opportunities for young people in the area. Chesterfield has recently become the nation’s first Apprentice town, so now is a great opportunity to showcase exactly what apprenticeships can bring to the area. Young adults choosing to move into apprenticeships create a ready, skilled workforce. This pool of local talent will be ideal for later investors, advertising Chesterfield not only as a place of massive opportunity in terms of investment but in terms of employment prospects too.

Keeping workforces local is key in the long term success of local developments, and Chesterfield as a whole therein. A whole array of developments in Chesterfield are continuously drawing new residents and visitors to the town, and rightly so. Chesterfield Waterside, Northern Gateway and Peak Resort are all now past the planning stage of development, and it is wonderful to see these projects coming to fruition. In a recent online survey regarding Chesterfield, 63 per cent of those asked said that they were most looking forward to Chesterfield Waterside as a local development. There’s nothing more exciting than seeing residents really getting behind a local project. With these new developments come new investors. The upcoming HS2 link will promote Chesterfield to an entirely different league of investor, and is already proving to do so. This is nothing but good news. Inward investment (including commercial developers and house-builders) reinforces Chesterfield’s status on a national level, and yields a bright future, full of new jobs, for the town and its people. I believe that apprenticeships are laying the foundation for the workforce of the future, and with Chesterfield Waterside, Northern Gateway and Peak Resort coming to fruition, Chesterfield is sending a powerful message to investors. Chesterfield is a town of opportunity.
