Recent projects include Goxhill Barn, which you’ll find on the front cover of this copy of Westside. Flint Construction extended to the side of this property to create a huge living space complete with

a log burner, the focal point the client had specified. A vaulted ceiling with Velux windows and large floor-to-ceiling windows and French doors made it a very light and inviting space with views out onto the garden.

Closer to home, Flint Construction has undertaken extension and exterior work at a property on Crimicar Lane, which has proved to be a real labour of love for the owner.

With a brief to create a modern, open-plan living space, Flint Construction created a single-storey extension to the rear of the property with a living flat roof complemented by two large skylights. Large bi-fold doors allow the large garden space to flow into the home. Inside, the property was opened up by removing supporting walls and adding structural steel supports.

“The whole process was easy, from talking with them about ideas to the attention to detail in the finishing touches; there was good communication and the hitches and changes (which are inevitable in any building work) were all

sorted out quickly,” said the happy owner of the Crimicar Lane property.

“The work was done to a very high standard – each person in the team is obviously skilled but also very friendly, and we were impressed with their work rate, politeness and enthusiasm. It was actually pretty sad when they left as they felt like part of the family!

“There was a very good attention to the finish quality – and time was taken to achieve this. The team were tidy and respectful of our house too.

“We’ve renovated a house before – so have some experience of building companies. This was by far our best experience to date. We would recommend them without hesitation and will be using them for future projects on this house.”

Rare cognac up for sale A 152-year-old brandy, still in a good drinkable condition, is available from a Sheffield-based private seller.

Visitors to the BBC website may have read a recent story about a rare bottle of cognac – dating to 1762 – selling at auction for £118,000. The vintage Gautier bottle – one of only three left in the world – was purchased by a private collector in Asia.

Not quite of the same vintage but almost as historic is a bottle of 1868 Cordon Bleu cognac. Look carefully and you can see that the original label shows that is was sold by Hay & Son, wine merchants of Sheffield. It isn’t as old as the Gautier but it’s a fraction of the price.

Join Roundabout at the 2021 London Marathon Dust off those running shoes and get back in training as South Yorkshire youth homelessness charity Roundabout joins the start line for the 2021 Virgin Money London Marathon.

Roundabout has been awarded a coveted charity place in the world famous sporting event, which is scheduled to take place in the capital on Sunday 25 April. And runners are now being invited to put their names forward to be in with a chance of representing the charity on the big day.

Whenever you decide to take the plunge, you will want to get it right, and many first-time buyers are asking “Can I still go ahead during COVID-19 measures?” Well, the answer is yes!

Of course, certain issues may need more serious consideration, such as house prices – will they go up, will they go down? Even the experts don’t appear to be able to agree on this. Some are forecasting that house prices will fall significantly – such as The Centre for Economic and Business Research (CEBR), which is forecasting a fall of 8.7 per cent this year, whilst Rightmove has just released figures pointing to a 1.9 per cent increase in house prices since the market went into lockdown in March. The housing market is certainly on the move again, with plenty of people confident enough to put their property on the market, and housebuilders having restarted construction.

Caroline Murray, partner and head of Graysons’ property team says: “With interest rates so low at present, now could be an excellent time to get your feet on the property ladder – and mortgage payments can actually work out less than rent.You can also still use the assistance available from the government using the Help to Buy schemes.”

If you are buying a new build, as a first-time buyer you can use the Help to Buy Equity Loan Scheme until the end of March 2023 (the scheme finishes at the end of March 2021 for existing homeowners, although the government is in talks with The Home Builders Federation regarding extending the

scheme). This scheme will allow you to borrow 20 per cent of the cost of a new build home (40 per cent in London), as long as you have at least a five per cent deposit yourself, and then you can apply for a 75 per cent mortgage. At present, the cap on the value of the house you can buy using this scheme is £600,000, but from April 2021, regional caps will be imposed – and for Yorkshire and the Humber, that is currently set at £228,100.

You can still use your Help to Buy ISA. Although these have not been available to new savers since November 2019, if you are an existing saver, you can still claim your 25 per cent bonus on the purchase of your first home as long as it is by 1 December 2030. If you have a Lifetime ISA (LISA), which attracts a 25 per cent bonus each year on savings in that year of up to £4,000, you can use it, along with your partner’s LISA (they will need to be a first-time buyer too or will have to pay a 20 per cent withdrawal charge) to buy your first home up to the value of £450,000. You will need to use a conveyancer or a solicitor when using a LISA to buy your home.

The very sound of it spells out a certain style. Something to enjoy while watching the sun go down over the yachts in the bay en route to the casino at Monte Carlo, perhaps.

All the greater surprise then, to learn that this icon of sophistication owes its existence to altogether more humble origins. At one time, drinking a cocktail could mean having the collar on that exquisite dinner jacket felt by the law.

Welcome to the murky underworld of prohibition.

If you think the lockdown was pretty tough, then imagine it lasting for 13 years. In 1920, the sale or transportation of all alcoholic drinks became illegal in the USA. This merely had the effect of driving the trade underground. Jazz age venues became louche speakeasies, crime (especially bootlegging) rose, and the ban apparently caused tens of thousands

of Americans to fall ill – there was an exemption for those who required alcohol for medical reasons. The sale of patent medicines also went through the roof.

Moreover, the era also gave rise to the ‘mixed drink’. Fruit juices, sodas, and other mixers were added to cocktails to cover the taste of wood alcohol and bathtub gin conjured up on home stills.

It was often, quite literally, lethal stuff.

Sweet cocktails were easier to drink quickly, which was an important consideration when the establishment might be raided by the Feds at any moment. With wine and beer less readily available, liquor-based cocktails were here to stay.

The golden age of cocktails began in the 1980s with vodka often substituting the original gin in drinks such as the martini. Traditional cocktails began to make a comeback in the 2000s and by the mid-2000s there were bars opening in all major cities, staffed by so-called mixologists.

ast forward to Yorkshire 2020 and we’re in search of the north’s finest exponents of

the art.

Firstly to Sheffield, and to the luxurious and hugely popular Kettle Black on Ecclesall Road, the city’s most vibrant thoroughfare.

Here, general manager Jack Hartley presides over a list of 75 different cocktails. If you’re not sure which you want to try, there is even a taste guide on the list which steers you towards those which you are more likely to prefer.

Jack displays his mastery of the mix by creating a special cocktail just for us.

“I was aiming for a cocktail that was relevant to the times we live in, and also the season. So this one is bursting with refreshing summer fruit flavours”, he says.

With a wry reference to this year’s government-imposed restrictions, this is a drink to signal that the good times are back. Introducing the Lockdown Lady (see recipe opposite).

In the interests of journalistic credibility, your reporter was obliged to taste the resulting mix and pronounced it “a drink I can see everyone liking, A great blast of alcohol and fruit. An iron fist in a velvet glove”. *** ext stop Leeds and a firm favourite among devotees of cocktail chic, in the shape of Hedonist on Briggate. It’s here that one of the founding trio of friends, Dan Crowther, saw a silver lining in the Coronavirus cloud.

Under the new name Hedonist@home, they can supply a range of drinks specifically designed to recreate the taste of the cocktail bar at home.

Dan sees this as a trend that is set to stay.

“The whole ‘celebrity chef ’ and popular food programs such as Great British Bake Off and Masterchef have led to a realisation within the general public that the dishes they get at restaurants and that they see on social media are attainable.

“This has led to an increase in home cooking and the skill of the home chef increasing as the dinner party is quickly becoming a new norm once again, rather than going out.

Lockdown Lady Whitley Neill raspberry gin St Germain elderflower liqueur (note; this drink packs a mean punch. If your prefer it lower in alcohol, substitute elderflower cordial instead) Diet lemonade Fresh raspberries Juice of half a lemon Method: Take a pint glass (this will be your mixing glass) and pour in 35ml of the raspberry gin. Add the raspberries and break them up a little with a longhandled spoon (this is apparently called muddling up in the trade).

Fill the glass nearly to the brim with ice. Add the lemon juice and stir well (if you don’t happen to have a cocktail shaker). Pour into a large wine glass and top up with lemonade to taste.

Watermelon cordial 50ml Aperol 50ml Watermelon cordial (you can use Robinsons Watermelon & Strawberry cordial) 125ml Prosecco Method: Pour all ingredients over cubed ice in a wine glass. Give it a quick stir and then garnish with orange zest. Simple.

“This elevation in home cooking is soon to come to home drinking, with people becoming more educated on what it is to make good quality drinks and learning the tricks of the trade thanks to shows like Sunday Brunch,” he said.

Dan’s choice of cocktail reflects this thinking as it’s simple to make and tastes great.

Dan also provides us with a crash course in cocktail technique.

“To make good drinks at home is really easy to achieve but first you will need to understand one thing, MEASURE YOUR INGREDIENTS, just as when you make a great food dishes you will follow a recipe with grams, millilitres and pounds.

“This is exactly the thinking you need to follow when making drinks rather than just filling the glass. So the first thing I would do is get a measuring device that measures in increments of 5ml up to 50/100ml. A cocktail jigger can be easily bought online.

“The next bit of advice would be to always use fresh citrus, don’t buy premade, get some lemons or limes and get juicing. This will instantly create bettertasting drinks. Finally follow recipes, there are a plethora of recipes online on various websites you can reference such as Diffords Guide, but also a large amount of drinks books available as well at various stores.” *** ack Clark of the Chophaus at Roundhay Park, Leeds, is the thinking man’s mixologist. To hear him wax lyrical about his art, you could well believe he was talking about a rediscovered Leonardo. He has built up

something of a reputation at the popular steakhouse and cocktail bar in smart suburbia. We started by asking him what inspired him to create this cocktail.

“I did a lot of sitting around in lockdown reminiscing about childhood summer holidays. So I decided the healthy lifestyle was for me. That meant going out to get exercise. There’s nothing like cycling down the canal on summer days. On the first day of British summer sunshine, I cycled along the canal to Woodlesford lock, where I saw a classic ice cream van and decided to indulge my long past penchant for getting a double 99 with everything on, the whole works.

So that’s what inspired me to create this drink, flashback to a summer day with no problems in your childhood.

Second question; What makes a good cocktail?

“Five things: Presentation, flavour, aroma, balance and ‘The Story’,” came the immediate reply.

Care to elaborate? He did.

“Let’s take presentation.The glassware is often overlooked.Take it from a binary perspective. Self-titled glassware such as the martini or the old fashioned, specifically for that one designed classic. I see it as how you would dress yourself.

The elegance of a cocktail starts with what you present it in. Closely follows is colour, showing moody emotions in a viscous oak-aged tint, or a fun bluelayered drink that takes you back to Ibiza.

“Then there’s aroma.Where does it take you? A plethora of memories. Not only does it oxidise your palate to unlock the life of a thousand tastebuds, it can take you somewhere. Flavour is a journey, starting with the aroma.The cooling temperature as it first meets lips, followed by the texture as it coats your mouth.

Starting off with the light tones of delicacy, as it makes its way to the finish and it channels through the bolder flavours. It can quench your thirst or leave you in need of another swill to satisfy.

“Balance next.Without balance the world would be on fire.We can’t go crazy throwing our favourite elements together without having a clash. Likewise, with cocktails it’s about finding the harmonies within the ingredients you combine to complement the palate.With that it could be literally just a matter of being tweaked by the smallest of measurements to bring peace to the final product.

“The Story? The final picture, as you could say the imagery that I could paint in your head that brings a cocktail full circle. Without a story to follow, a drink doesn’t have substance, or at least struggles. It’s almost like getting to know a person you’ve never met, stepping into the shoes of the creator or relating to it in your own way.”

Thanks Jack. Maybe I’ll just drink the cocktail.

If you’ve found more time to cook at home over the last few months and have expanded your repertoire, you might like to give this summer recipe a try which ticks all the boxes for taste and colour.

Brocco on the Park’s head chef, Leslie Buddington, is no stranger to marrying flavours together and this dish is no exception – and stunningly seasonal.

Fresh sea bream, fennel and earthy Jersey royal potatoes make for a delicious combination. Baby leeks introduce a touch of smokiness whilst the tempura courgette adds a bit of crunch.

Pan fried seabream with confit fennel and Jersey royals, BBQ baby leeks and tomatoes with tempura courgette and Thai basil Ingredients: 2 fillets of seabream 300g Jersey royals 1 bulb of fennel 4 baby leeks 10 cherry tomatoes 1 courgette Cornflour Plain flour Sparkling water Vegetable oil Garlic Thyme Extra virgin olive oil For the tempura batter: 50g plain flour 25g cornflour 100g sparkling water ½ teaspoon of salt

Method: 1. First start with the Jersey royals and confit fennel. Slice the jersey royals into 1.5cm slices and the same with the fennel. Cover these in vegetable oil. Add a clove of garlic and a few sprigs of thyme and put it on a low heat, DO NOT bring to the boil. Leave to cook gently for about 20 minutes, until cooked through.

2. Bring a pan of salted water to the boil and add the baby leeks. Cook for about 3-4 minutes, until tender, then take out of the boiling water and plunge into cold ice water to prevent the cooking process.

3. Next bring another pan of salted water to the boil and add the cherry tomatoes.

Cook for 1-2 minutes until the skin starts to blister. Remove from the boiling water and then plunge into the cold ice water. Once cold, remove the skins from the tomatoes.

4. Cut the courgette into thick batons. Now cook the batons in the same boiling salt water for about 4-5 minutes until cooked through. Once cooked through, plunge into the cold ice water.

5. Rub the baby leeks and tomatoes with olive oil and place on the BBQ until nicely charred. If you do not have a BBQ, you can use a griddle pan.

6. Now, make the tempura batter. Add all the ingredients and mix well, the batter should be nice and thin.

7. Once all components are made, place on a tray to keep warm in the oven.

8. Score the flesh of the seabream. Now place three tablespoons of oil onto a frying pan and place on a medium heat. Heat until hot and then place the bream in the pan, skin face down. Shake the pan to ensure the bream has not stuck. Cook for 3-4 minutes, skin side down for 90 per cent of the cooking process. Turn the fish, and remove the pan from the heat. The residual heat in the pan will continue to cook the fish.

9. Heat vegetable oil in the pan or a fryer to 180˚C. Add the courgettes to the batter and fry for 3-4 minutes until the batter is crispy.

10. Once all components are heated, assemble on the plate and garnish with Thai basil.

From cosy cafes to greasy spoons and fancy bistros, there are loads of options, each with their unique menu of morning-making dishes.

Whether you want a full English or traditional offerings like granola or toasted egg muffins, Hudson’s Kitchen is exactly where you should go. Nestled in the heart of Crosspool, this cosy little café owned by husband and wife Chris and Rosanna Taylor feels a million miles from the bustling city centre and is a master at breakfast, brunch and baked classics, but they do theirs with a clever Yorkshire twist.

“Where possible, all our food is made using delicious local produce,” says Chris.

“Demand has never been higher and we try to meet that popularity head on by working with neighbouring suppliers as much as possible, so our menu is local at heart. Loaded stacks of American pancakes come topped with seasonal local berry compote, artisan brews come courtesy of Birdhouse Tea Company and even the beloved eggs Benedict is made using irresistibly creamy Our Cow Molly butter.”

As us northern folk like a hefty meal at a fair price, that’s exactly what you’ll get at Hudson’s. There’s no scrimping, with plates piled high – if you go for the traditional breakfast, you’ll be treated to eggs, sausages, beans and bacon, with tomatoes, mushrooms and hash browns on the side and two slices of toast to mop it all up. Oh, and you can be sure of a darn fine sarnie (made with freshly baked sourdough bread) and while you’re there, try out their stonkingly good fruit smoothies and homemade iced tea.

If you just want a slice of cake for breakfast, they have plenty of those, too.

With vegan and gluten-free options to suit every diet. But if you’ve got a bit more time on your hands, why not sit in and enjoy the laid back atmosphere?

We grabbed a seat at one of the lovely little wooden tables and quickly took to admiring the décor – the stylish space is beautifully furnished, with eye-catching artwork adorning the walls and a quirky, industrial-chic feel to the interior. We were just as taken with the menu, which featured a tempting array of sweet and savoury dishes, with a homegrown flavour running through the plates on offer.

For the main attraction, we plumped for the crisp, sweet and lightly toasted goats cheese and onion chutney bagel (£5.95) and eggs royale (£7.50) – a hearty start to the day, combining runny eggs with beautiful bright yolks and a perfect Hollandaise. Elsewhere, golden scrambled eggs and crisp bacon – for a salty balance – balanced on light and airy pancakes came topped with lashings of maple syrup (£6.45).

Housed in the former hardware unit on Sandygate Road, this not-so-hidden gem is hoping to help put S10 on the map and will soon be offering a new spring-summer menu, which is set to include a smorgasbord of breakfast and brunch classics – with a Hudson’s twist.

Sunday shouting IT’S ALL CHANGE AT THE MAYNARD, WRITES RICHARD ABBEY. AND SOMETHING HAS ALREADY BECOME A FIRM FAVOURITE. he Maynard at Grindleford had only reopened a few weeks before lockdown but word had seemingly travelled fast; The newlyrefurbished restaurant was packed.

The imposing stone building, which has wonderful views over the valley, has been taken over by seasoned hotelier Rob Hattersley who initiated a £70,000 revamp which has seen other areas of the hotel, namely the bar, ballroom and garden, also given a significant upgrade.

The restaurant is a particularly impressive space, enhanced beautifully by those full-length windows which look out on to the garden and Hope Valley beyond. A teal colour palette adds a touch of class which is accentuated by velvety banquette seating, dark wood, glass balustrades and industrial-style lighting.

The Maynard still makes for a stunning wedding venue and has 11 bedrooms should you wish to stay over.

It is open for breakfast, lunch and dinner, and the Sunday lunches already look like a firm favourite judging by the amount of people tucking into a traditional roast. The set menu offers one course for £17.95, two for £22.95 and three for £26.95 with a choice of five starters, six mains (including three roasts) and four desserts.

Children’s portions are available at half-price but there is a separate kids menu too with options including beef burger, chicken, schnitzel and the hake fish sticks for £7.95. I’d brought my two along and despite their love of a roast dinner, they both opted for a beef burger and chips and, judging by the quickly cleared plates, definitely made the right choice.

My wife and I decided to go the whole hog; I started with a deliciouslylight twice-baked cheddar cheese soufflé, served with Hartington stilton sauce, while across the table she enjoyed into Asian-style fried halibut sticks and king prawns which came with root vegetable crisps and a particularly piquant homemade chilli sauce. A good start.

I’d won the argument over who would have the roast so my wife tucked into an excellent slow-braised lamb shank, served with horseradish mashed potatoes, bourguignon sauce, silverskin onions and crispy bacon lardons.

If I was disappointed that I didn’t get to try it I needn’t have been as my roast beef sirloin was top drawer.

Accompanied by braised red cabbage, maple-glazed root vegetables, duck fat herb-roasted potatoes, cauliflower cheese (which came in a separate hot pan), Yorkshire pudding and proper gravy it

was a sight to behold – and tasted every bit as good. A glass of Ancora montepulciano (£18.95 bottle) was the perfect accompaniment.

Now, my daughter is a huge cauliflower cheese fan and couldn’t resist helping herself which ended in her scraping the bowl furiously. Spotting this, Rob kindly brought a portion of her own – small touch but something that was really appreciated. In fact, service throughout was superb.

We finished with a heavenly plum and almond crumble and coconut ice cream (for me) and indulgent banana and date sticky toffee pudding (for my wife), whilst the children dove into ice cream sundaes (£1.95) with gusto. An Americano (£2.30) each finished things nicely.

Tastes of the sea THERE’S MORE TO SEVEN SEAS THAN FISH ‘N’ CHIPS, WRITES CHARLES BRADSHAW. or over 90 years, a chip shop has occupied the same spot on Bawtry Road in Wickersley. Just nine miles from Sheffield and three miles from Rotherham, Seven Seas is one of the oldest chip shops in England, cooking an extensive range of seafood six days a week. Today, the original shop is modernised and includes an enclosed outdoor seating area, a restaurant on the first floor and a dedicated car park.

Ascending the stairs to the restaurant, historical pictures of the shop and local area decorate the stairwell walls. A nautical theme runs throughout the venue with model ships on display in the window bays and porthole-style mirrors on the walls in the restrooms. We were promptly escorted to a corner table when we arrived. Seating consists of upholstered long benches, coupled with comfortable wooden chairs.

As we browsed the menu, I had a glass of lemonade and my dining companion had a diet Coke (£1.70 each). In addition to the seafood fayre, the menu features a varied selection of alternative options to fish dishes including burgers, salads and locally sourced gourmet pies.

For starters, I chose Black Tiger King Prawn (£8.95). The large grilled shrimp was presented on a bed of green leaf salad. The meaty chunks were rich and subtly infused with chilli and garlic.

Several lemon wedges and a light fruit sauce accompanied the dish. My companion’s Salt and Pepper Squid (£4.75) looked equally appetising. Light and crispy batter enclosed succulent squid pieces which were served with salad garnish and a pot of garlic mayonnaise.

On the drive over, I’d already decided to sample Traditional Cod and Chips (£9.45) for my main course, along with a portion of mushy peas (£1.30). Freshly prepared, and piping hot, my flaky cod portion was coated in a satisfyingly crunchy batter. The chunky chips were perfectly fried, encapsulating a fluffy potato interior.

Flame Grilled Plaice (£13.95) was ordered by my companion which arrived bearing chargrilled markings, a portion of chips and a side-salad drizzled in balsamic vinegar. The fish was mouthwatering with a sweet, mild and slightly smoky flavour. Lemon wedges and tartare

source also helped enhance the taste.

For dessert, I opted for the Mini Cheesecake Selection (£5.25) with vanilla ice cream. Consisting of three different flavoured cheesecakes: Lemon, Chocolate and Strawberry, each sweet was accompanied with a complementary sauce. My companion’s choice was Lemon Sorbet (£4.95), a large, zesty portion contained within a lemon shell to round off the meal.

Seven Seas is enthusiastically operated, helping to keep this British traditional food alive. Modern twists and a delightful location certainly make this no ordinary fish and chip restaurant, but definitely worthy of a visit.
