It’s been great to see our beautiful region buzzing with tourists and locals alike, as the world has started to wake up again. And now, as we say goodbye to the warm, sunny days and look ahead to autumn, we’re delighted to bring you this issue of Luxe, filled with stories about the people and places that make the North East so fabulous. Make yourself a hot drink, or perhaps you’d prefer somthing a little stronger, curl up on your sofa and take some time out to find out about a glamorous sheep farmer, glorious gardens, inspirational homes, stunning spas and everything there is to look forward to as we move into another season. With the younger people in our lives set to head back to school, there’s also our Education Edit to keep you informed as the new term begins. Jenny Pearson Jenny Pearson is a Durham teacher with a creative flair when it comes to writing children’s books. Her most recent project, The Incredible Record Smashers, is the second in a heart-warming adventure series following a girl who tries to break a world record to help her mum find happiness. Her books have previously been awarded Waterstone’s Children’s Book of the Month and have been named a Read for Empathy title for 2021. We check in to get the lowdown and find out her luxe things in life…
GETTING TO KNOW YOU >> Name: Jenny Pearson Title: Teacher and children’s author Where is home? Durham Three reasons you love where you live? The friends I have made since I moved here, the fact that I live right in the city but within easy reach of the beautiful countryside, and the sky seems so much bigger in the North! THE DAY JOB >> What do you do for a living? I make money from children! I write books for them and teach them. A day in the life of you? It depends if it is a teaching day or a writing day. Both involve the usual family chaos of getting everybody washed, dressed, fed and where they need to be - fuelled by a lot of coffee! Then I’m either teaching my brilliant year 4 class at St Margaret’s School in Durham, or if I’m being an author, I’ll be found sitting at my laptop writing stories or visiting schools (virtually, at the moment) to talk about my

books. I’m very lucky - I love teaching and writing equally, but I’m acutely aware that I could not write books for children without having got to know so many incredible kids through teaching. Any upcoming or ongoing projects we should know about? My second book, The Incredible Record Smashers, which is published by Usborne - about a girl who tries to break a world record to help her mum find happiness has just come out. I’m editing my next book, Grandpa Frank’s Great Big Bucket, and working on a few other titles too. What does downtime mean to you? A lie-in and a cup of tea brought to me in bed. LESSONS IN LIFE >> What did you want to be when you were growing up? A farmer or an elite athlete. What is the most important lesson life has taught you? To have a go at things. I think the fear that
stops us from doing things is actually the fear of embarrassing ourselves if we fail. It is very freeing when you let go of that. Oh, and also to own up to mistakes. What is your greatest fear? Something happening to my children. Which living person do you most admire and why? My sister, for her ability to deal with all the challenges that life has thrown at her with such dignity - and for her sense of humour. LIVING LUXE >> What is top of your bucket list? A tour starting off in the UK and continuing around the rest of the world to visit all of my friends and family. What is your most treasured possession? I can’t think of a single material thing that I love that much to describe it as a treasured possession, so it most definitely has to be my health. What does the weekend mean to you? Family time. A memorable holiday? One of my best friends’ weddings in Portugal with all of my school friends and our families. It was the most
wonderfully special time. Best dress? Either gym kit or a full-length fancy-schmancy dress and heels. Who would be your top three dinner guests? I’d love to have my grandparents - Brenda and John and David and Iris - to dinner when they were young, maybe in their thirties, so I’m going to have to ask for four guests. I don’t mind being the waitress! The last place you ate? Home. It was a pizza my husband made and it was so horrifyingly spicy I suspect he was trying to kill me. I’m talking two million plus on the Scoville scale. The last book you read? The Explorer by Katherine Rundell - I read it to my year 4 class. The last thing you listened to? In the Reading Corner with Nikki Gamble. The last thing you watched? The Tina Turner documentary. Three luxe things in life? Nice hotels, good champagne and a roll-top bath. usborne.com

Heralding the return of theatre We’re spoilt for choice when it comes to fabulous theatres in the North East, which are looking forward to welcoming back full audiences this autumn. We’ve picked out a few of our favourite venues and asked them to highlight their must-see shows this season.

In July, we were deeply saddened to learn of the death of Professor Jane Turner OBE DL. Jane was Pro Vice-Chancellor of Teesside University and dedicated her career, and indeed her life, to improving the lives and fortunes of people across the North East, especially in challenging gender inequality and supporting young girls to reach their potential. Jane had a Doctorate in Business Leadership and was awarded an OBE in 2017 for services to business. She also received the Outstanding Contribution Award at the 2019 Tees Businesswomen Awards, featured in the Northern Power Women List and was identified as the Tees Business most inspiring female leader in 2020. Jane made a huge impact on so many people’s lives and most recently launched The Power of Women campaign to raise aspirations of girls across the Tees Valley and to empower them with the courage to be what they want to be. She leaves a lasting legacy and the University and Power of Women CiC board will continue to drive forward the work she initiated, in her memory. The board made this dedication following Jane’s death: The world – and particularly North East England – is a poorer place today without the remarkable Jane Turner. Jane was an inspiration, a powerhouse, a mould-breaker, a one-woman force for change but also someone with a special ability to bring people together from different backgrounds under one banner. That is what made her such an impactful change-driver in creating a unique and supportive network of businesswomen. The Power of Women was Jane’s inspiration and she was the driving force behind a campaign that we’re all so proud to be part of. We are all devastated to lose our leader at such an early stage in PoW’s development but it was Jane’s wish that we should deliver this crucial campaign in her name and as a core part of her legacy. We are united in our determination to do exactly that and call on everyone who knew and loved Jane to do all they can to help us create a Power of Women legacy that will not only live but inspire girls and young women for many years to come. GORGEOUS GARDENS
Gardening by design Lady Paula Darrington has always had creative flair and an eye for detail. She spent much of her working life designing bespoke gardens for private clients, and loves nothing more than perfecting her own garden in Northumberland. Claudia Robinson finds out how Paula’s garden grew from a disused paddock to a stunning horticultural masterpiece…

Paula and her husband, Sir Michael Darrington, former Chief Executive of Greggs, moved to their home near Hexham 28 years ago. Back then, the property had only a paddock. Unappealing to many but for Paula, a blank, half-acre canvas where she could create her perfect garden. When they arrived, all that was growing on the land was an apple tree and plenty of weeds. “We first set about planting hedges for shelter because we are right on top of a ridge, so the north easterly wind can come whistling across,” says Paula. “We also immediately dug out a ha-ha to prevent the view from the conservatory being spoiled. On a clear day you can see the Cheviot, with our horses grazing in between. “One of the other jobs we did early on was to dig a pond, because we wanted to encourage some wildlife, and with that we put in a curving belt of bamboos.” Paula reflects, “I don’t think we have any straight lines in the garden, apart from the boundaries. I find curves more pleasing to the eye.” When it came to digging up the paddock, they discovered all sorts of rubbish underneath, so they piled it up, paved over it, built a wall and put a bandstand on top. Paula says the garden grew very organically. “It evolved into something fairly substantial over the next five years. This really isn’t the
way you’re supposed to develop a garden and there are certainly things I would do differently now. It has changed enormously from when we first laid it out.” Gardening has always been a love of Paula’s. Creativity runs through her veins and before retraining as a garden designer she ran a successful business designing and making wedding dresses. “I love gardens, and making gardens, and I’ve had the privilege of designing some very special projects for private clients over the years,” says Paula. “Before I retired, it was certainly a case of cobbler’s children when it came to my garden! A lot of my time was taken up with work, and now, l still have plenty to distract me, including six grandchildren! But I have a very good gardener who helps me keep on top of things here and I spend as much of my free time as possible looking after it.” There are so many different areas to Paula’s garden, and indeed, such a wide variety of plants, shrubs and trees that she finds it difficult to choose a favourite part. “I think it depends on the season,” Paula says. “The garden is divided up into various areas so as one area blooms and looks its absolute best, you can always be sure there’s another area just about to step into the limelight. We have a lot of roses, lavender, agapanthus, peonies, alstroemeria, I love them all. “Earlier in the year, around May time, the pergola by the terrace, outside the

conservatory, is covered with white wisteria, which is breathtaking. The bandstand is planted round with Gertrude Jekyll roses and lavender, which during the summer months look absolutely glorious. About the same time of year, the terraces look fantastic, the cobbled area looks great with an abundance of primulas, and then the gravel garden comes into its own towards mid-summer.” Paula says one of the greatest things about gardens is that you’ll sometimes get some nice surprises, where plants seed themselves in pleasing combinations. “As we head into autumn we may get a second flush of roses, and the heleniums make an appearance. I also adore the grasses that we see this time of year. There are so many ornamental grasses from quite short ones to very tall ones. Some of the miscanthus are absolutely magnificent when they start to flower. The stipa gigantea is one of my favourites as well. “What’s so great about ornamental grasses is that there are so many to choose from. They mix so well with perennials and are often something people don’t consider. The way they move in the wind, which tends to pick up by this time of year, is stunning.” Garden jobs for autumn Paula says: “We have a wildflower area which is full of spring bulbs and once they’ve finished meadowsweet comes up, which is lovely. We leave this area to cut

down late, as there is yellow rattle in there which we encourage to seed to suppress the grasses. “We try not to cut back much apart from anything that’s finished flowering, just tidying up really, to keep as much colour going as we can. September is an ideal time for keeping an eye on things, making notes about what needs moving, adding or dividing and planning ahead. Then, as we head into October, that’s when you can start with all of these jobs.” In Paula’s words, there isn’t a lot about late autumn to love when it comes to how the garden looks, but it’s certainly the best time to get organised so that everything can look its absolute best come next spring and summer.

Farm frolics and fame
Amanda Owen found fame as the Yorkshire Shepherdess after we were invited to be flies on the wall, watching as she and her family went about life on the farm. Claudia Robinson finds out more about Amanda and her plans for a UK tour this autumn…

Due to covid restrictions at the time, her busy schedule, and the small matter of having nine children and a menagerie of animals to look after, I interviewed Amanda over the phone. As much as I would have loved the opportunity to visit Ravenseat Farm! This was certainly one of the more chaotic interviews I’ve done, but also one of the most enjoyable. When Amanda answered the phone, the family were in the middle of a wildlife crisis. One of the children had found a tiny owlet, which had fallen out of its nest, so Amanda was feeding it glucose and chicken at the beginning of our call. “This is a perfect example of what every day is like,” Amanda tells me. “The vet’s coming today, the children want to go swimming in the river, interviews and now a baby owl to look after!” She pauses for a moment, then shouts across to one of the children asking them to free a sheep that she’s noticed has its head stuck in a fence. “Let me go and find somewhere where there isn’t anyone else,” she says, telling me a few seconds later that she’s found a secluded bench to sit on, cup of tea in hand. “It’s definitely hectic, I have lots of tabs open in my head! This morning I needed to move the horses so I went out early, jumped on a horse with my skirt on and set off with just its head collar, riding up the road. I noticed some sheep in a meadow that shouldn’t have been there, so then had to go and find and fix the gap. Every pleasurable event ends up being another job, but I wouldn’t have it any other way.” After featuring in the ITV series, The Dales, Amanda began documenting the intriguing story of her farming life and has since published four books. She and her family are also the focus of the popular Channel 5 series, Our Yorkshire Farm, which is one of the station’s most popular shows with over three million people tuning in to watch every week. Amanda will shortly embark on a tour of the UK, to host a frank, funny and informative show where she’ll share heart-warming tales, honest anecdotes and funny stories from her farming and family life in North Yorkshire. The tour includes dates in Newcastle, Middlesbrough and Scarborough and Amanda says she’s excited to be heading back to the region: “I love the area, it’s always a lively night out. I’ve been to Durham and Middlesbrough before and it will be great to visit other parts of the region too. It’s certainly easier to strike up a conversation with the audience >>

when you feel at home. During her show Amanda will also reflect on how she got to where she is now, after being inspired by James Herriot’s books to leave her modelling life behind her. A part of her story that I was keen to find out more about. “My mother was a model, very tall, very slim and I was the same,” she tells me. “It was always a thing that I’d probably do the same. I remember the Huddersfield Examiner had a classified section and in there was a ‘models wanted’ ad where they offered to put your portfolio together. I had visions of one minute shooting in a lock-up on an industrial estate and the next being in Vogue or Cosmo, but of course it doesn’t work like that. It just wasn’t for me. “I loved All Creatures Great and Small. It was gentle, it was about characters, people and was set where I grew up. I also read a book at the time called Hill Shepherd by John and Eliza Forder and it inspired me. It opened my eyes to the fact that life like that still existed and I was excited that being a shepherd was even still a career option. I had to learn more. But it’s not like the majority of other careers where there are courses, apprenticeships or degrees. I had to find my own inroad. “I practically hoovered up as much knowledge as I could, reading and learning as much as I could. But I needed practical, hands-on experience. I have an innate ability to bluff and blag and managed to secure a job, milking cows and then drystone walling. It was a foothold.” It was shortly after this that Amanda first met her husband, Clive. Also a farmer, she knocked on his door one evening asking to borrow a tup (male sheep). Clive is quoted as saying “This six-foot something woman knocked on my door. I was very taken with her; you couldn’t not be.” The traditional image of a shepherdess is

a Bo Peep one with bonnet, dress, and crook. Amanda certainly ticks the ‘dress box’, as she’s known for her glamourous look, “it’s nice to wear nail varnish while I do the farming” she says. “And we should all be allowed to be ourselves and not fit in to a stereotype. It’s funny though because people still want me to dress the whole part, asking me if I could ‘bring my crook’ when I go to shoots!” “I’ve always encouraged my children to be themselves and I 100% live by that. There are nine of them, after all, with different characters, each one of them so unique. I tell them to do their own thing and try their best to get through life trying to appreciate the good stuff and what makes you.” Reflecting on where Amanda is now, she says she never imagined any of this would happen. “There’s a certain amount of getting on in life by being able to talk the talk and walk the walk. Communication is key. All that we’ve enjoyed at Ravenseat stems from an empire of making cups of tea and talking to people, asking questions. From that research came a book deal, then television. I feel guilty sometimes when people ask me how I managed to get what I have. I didn’t chase it, it came to me. Truth is stranger than fiction.” I wonder if Amanda has a theory about why so many people tune in to Our Yorkshire Farm. “There’s so much going on in the world at the moment, I think there’s been a genuine desire to go back to basics, to appreciate what’s on your doorstep. It appeals to so many people. We can communicate with people within seconds on the other side of the world, we can find out how to rehydrate a baby tawny owl. It’s there at our fingertips. That’s great, but also, after Covid and the 18 months we’ve all had, it’s awakened people’s life goals and maybe made them look closer to home. “We’ve got Zoom and technology fatigue.
I haven’t banished tech here, in fact there is nobody that has championed it more than me because we wouldn’t have been able to achieve all the things we have without it. But it isn’t the be all and end all. And during lockdown, education was important for my children, but they were able to learn so much from living where we do and I felt very lucky during that time that we live where we do and appreciated how hard it must have been living with three children in a city flat. As long as the kids have smiles on their faces I’m not bothered.” Having spent so much time at home, like everyone else, you’d understand if Amanda felt a little apprehensive about the prospect of going on a nationwide tour to talk to thousands of fans, but of course, she’s very much looking forward to it. “I enjoy having two different lives. Out here in a bubble on the farm and then heading off on a book tour wearing a pair of stilettos even though I’m six foot two! “I’ve been in front of audiences at literature festivals and once did a talk to 50 hill farmers from Skipton. This will of course be different but I’m looking forward to talking to people, and meeting people. Once my audience was an older generation with a sense of nostalgia but now it’s a younger audience, because not surprisingly there are lots of people out there who want to quit the rat race. These people are intrigued. Everyone thinks they know me, and I almost feel like I know them too. It still blows my mind that I’m in all those living rooms! “What I love most is that I can go from the arse end of a cow to showering, putting on something slinky, filming or doing a tour, and then going back to the farm again. Hopefully it makes people realise that we’re all pretty much in the same boat. Timeless tweed
Frimble is the Bedale-based fashion brand bringing gorgeous tweed jackets into our wardrobes. Nicole Wood checks in with Sophie Osborne, the creative brains behind this flourishing business… There’s something about the transition from summer to autumn. That ‘new school year’ feeling never seems to leave, even as we get older. But instead of bagging ourselves the coolest new pencil case and a trendy new pair of school shoes, we switch out our sandals for boots, update our beauty regime and ponder the dilemma of ‘it’s too warm for this coat, but too cold for this jacket’ and it appears I’m not the only one who encounters this predicament. When I stumbled upon Frimble online and made the connection between the Bedale-based business and stunning tweed jackets, I just had to find out more. As I start to chat with Sophie Osborne, owner and designer of the female fashion brand, we instantly fall into the conversation of the seasonal transition dilemma as we discuss Frimble’s Autumn/Winter collection on a sunny August morning. “Research is crucial in order for me to find the perfect fabrics. We work six months in advance, so it’s important that I get ahead of the game to make ladies have a comfortable wardrobe transition as the seasons change. “It’s quite strange when you’re picking out the winter tweeds when it’s June and the sun is shining outside. While we can follow fashion trends and get creative with designs, we can’t predict the weather so it’s so important that I select the fabrics carefully. “A big aspect for me is ensuring some of our tweeds are lightweight. Our Harper and Wentworth jackets are made from a lighter fabric and can be worn all year round. I think there’s a misconception that tweed and even jackets can only be worn when it’s freezing cold outside. So, we try to be versatile with our colours, style and fabrics. I source all of our fabrics from Scotland and Yorkshire, the British mills are so clever at what they do and there’s such a variety of what you can choose from,” says Sophie. After completing a business degree and having a passion for fashion (specifically tweed) Sophie jumped at the chance to buy the business in 2012 after seeing an advertisement in the Yorkshire Post. A slight rebrand and a modernised twist on tweed, combined with the traditional core values of the business, Frimble has been transformed into what it is today. But in order to get here, Sophie has had to wear many hats, one of them being the creative brains behind the gorgeous designs. “When it comes to design, I like to try and mix things up and create items that are a bit different. I love bold designs and bright colours and at the moment we currently have a bright orange and a mint jacket in and it’s a flash of colour that looks great

as a casual look with some jeans and a pair of trainers. “The main thing I want to get across from my collection is that tweed doesn’t have to be old fashioned, itchy or heavy, it can be worn by anyone of any age and it can be stylish. I don’t want to go too wacky with the designs and often keep quite traditional, for example our Yorkshire Harper jacket combines traditional check tweed with a modernised oversized look and that definitely appeals more to my younger audience,” explains Sophie. Traditional style with modernised twists is what Frimble is all about. The ability to complement anyone’s wardrobe at any time of the year. As we chat about how difficult it can be to keep the ideas flowing in a creative job each day, Sophie explains the process of her creations. “It’s difficult to stay motivated all of the time. You have to keep focused. Some days are better than others and sometimes it just clicks and I can be inspired by the colour of a flower and think I want that for a jacket. But for me, I don’t just sit down and design something, it comes in moments. Sometimes I think the best ideas come at night. “Another way I like to work is by browsing through the catalogues I have from all of the British mills and pick out fabrics that really catch my eye, not necessarily always what I like, but what I think others will like or what I think will make for a great design,” says Sophie. Attending shows, working in the Bedale store, getting crafty with designs and sourcing all of her fabrics from Scottish and Yorkshire mills, Sophie and her beloved business were booming, but then the world had other plans. After a terrifying few months during the first lockdown, like many other growing businesses in the height of the pandemic, Sophie used this time to grow Frimble online, using the ever-growing world of social media to get the word out. “The store being closed was terrifying. It really affected us at the beginning, especially because of our six-week rotation, we had no idea it was coming and we were sitting with all of our spring stock and no store to sell it in. So, we got online. At first, orders were flying out as people were adapting to the world of online shopping,” she explains. “But then we encountered our second problem. Obviously, as further restrictions were put into place and we were all of a sudden unable to socialise outside of our households, attend events or visit the pub with friends, there was a lack of interest when it came to clothes and occasion wear. People weren’t going to buy a tweed jacket to sit around their own home.
Sophie Osborne, owner and designer of North Yorkshire-based fashion brand, Frimble “We were treading water for a bit and even though we’re through the worst of it, it’s still not over, we’re still dealing with the aftermath of the pandemic. Yes, it’s great we’re open, but the after-effects are still with us. For us specifically, there was a tweed shortage that came from the first lockdown and while we’re just getting over that now, we’re now faced with the ping-demic and our small team not being able to work due to being pinged. But we’ve come this far and we can get through anything. It’s scary when it’s all out of your control - both in our personal lives and work. But you just have to keep going. Once you've got over one problem, then you can get over the next one - nothing is as bad as it has been and we just need to try and stay positive,” Sophie smiles. One thing I think the majority of us can agree on, is that the pandemic taught us a lot. For each of us, that lesson may be different. But it showed us what’s important in life, it taught us to make difficult decisions and it allowed us to hit a reset button and think about what we want and what we need. For Sophie, the pandemic life lesson, along with preparing to become a mum for the first time, allowed her to see a clear vision for her business. “This September, our Bedale store will be closing. It’s not because we have to, it’s because we want to. I’m guilty of being a bit of a workaholic and as we prepare for
our bundle of joy to arrive, we need to do what's best for us as a family and as a business. “The pandemic has taught us a new way to grow, our course has changed from what we had originally planned and that’s okay. Our business has blossomed online and as we grew, something had to give and for us, it was the shop. But it’s not a bad thing, it’s an exciting thing. Now, I’ll run the business from my office and will have a showroom in Howgrave for customers to make appointments and come to have a look around and try the clothes on,” explains Sophie. For Sophie, this autumn is all about spending time in the countryside with her husband and two sheep, going for pub lunches with her friends and cosying up on the sofa indulging in chocolate waiting for baby to arrive. Bliss. “We were all so obsessed with working before, I still am a little, but at the end of the day, we need a work-life balance and life isn’t all about work. Looking after ourselves is so important. I’m so grateful I get to do a job that I love, I thrive off of it and I’m so excited to see where this journey takes us next,” Sophie smiles. Making… Home-made toffee apples. The perfect autumnal treat to make with the kids and great fun too. Super-easy to make, simply melt a pack of dairy toffees on low heat with 4 tablespoons of water. Use lolly sticks, wooden skewers or even washed twigs and pierce the apples. Dip the apples into the melted toffee sauce and hold upside down for 30 seconds, until the apple is fully covered. Decorate with your favourite sprinkles and toppings for the ultimate treat. If you don’t like toffee, cover in melted chocolate instead. Enjoy!

I recently had an overnight stay in Harrogate and loved exploring this beautiful town. There is an abundance of interior and lifestyle stores and I picked up a few unusual styling pieces for home along the way. Natural beauty Diane Bowe never set out to launch a beauty product range, but four years since Bowe Organics was born, the brand has already won four industry awards. She tells Claudia Robinson how creating a product for her own use led to something much bigger… Diane runs a hairdressing business from her home in Darlington, which also doubles up as a laboratory where she creates her Bowe Organics beauty products. Her love for all things natural came while working at an organic hair salon in London. “We’d have reps coming into the salon telling us all their products were organic, but they were owned by massive companies whose ethos wasn’t in line with ours at all,” says Diane. “They’d claim the products were all natural and for the consumer rather than the brand, but I remember one time looking at the ingredients and my manager pointing out three harsh preservatives that he knew there were alternatives for. This sparked an interest for me, so I went away to research it. “I wanted to get back to the source of what is actually good for my skin. At the time I had very dry skin so started analysing the products I was already using, and making

my own using alternative, natural ingredients. It was around the time argan oil was becoming increasingly popular. I discovered that you could use argan oil at 100% but a lot of brands only used 1-2%.” Diane started using her own home-made products on her hair and face and after a few weeks lots of her clients were noticing her eyelashes were longer. “People would also stop me in the supermarket to comment on them, most people thought they were false eyelashes as this was in 2016 when eyelash extensions were becoming a big trend. When I told them it was the eyelash oil I’d made for myself, they asked me to bottle it so they could buy it. “It was never like, okay, I’m going to sit down and launch a product company,” continues Diane. “It really did begin as something I wanted to create for myself. I had mild anxiety about what was in the products I was using, I wanted it as clean as possible, so I had to create my own.” Not one to do anything by halves, Diane
took an EU legislation course and a formulators course, researched her legal limits, how to get her products insured and registered her company with the Vegan Society. Two years later, she officially launched her Lash Oil and so began Bowe Organics. The same weekend Diane launched Bowe Organics, she found out she was pregnant. By then, Diane had started to work on her second product, a lip balm. Now that she knew there would soon be the pitter patter of tiny feet, she wanted to create products that she could use on her baby too. “I thought if I made a lip balm it could double up as a bum balm as the products are very similar. I perfected the product over the winter months, or so I thought! It was smooth and melted just enough when it was on my fingers. But it got to the summer and the warmer temperatures meant it went runny in the pot, so I had to work on it again. I then waited until the colder weather to make sure it wouldn’t be too hard.” If Diane had the luxury of a state-of-the-art laboratory, she could have perfected the product more quickly, but that’s the beauty of her cottage-industry business. So much thought, dedication and hard work goes into the creation of each of her products. When Diane’s little girl, Ivy, was born in 2018, Diane was diagnosed with epilepsy after suffering a series of seizures. “I was housebound for a long time and became

increasingly anxious, worrying about something happening to me or to Ivy. A friend of mine who studies reiki, who helped me so much during this time, suggested I looked into essential oils that would help ground me and relax me.” In true Diane-style, she embarked on lots of research and created her own special blend of essential oils to help her at this difficult time. “A mix of frankincense for grounding, camomile for calming and lavender for relaxing worked brilliantly for me. I mixed them in a jar with a carrier oil and whenever I felt overwhelmed, I’d rub a little of the mixture in my hands and inhale and exhale deeply, three times.” Diane thought this perfect concoction of essential oils would work well in a hair oil, as she wanted other people to enjoy the benefit. “I’m not saying it’s a cure for anxiety but breathing in this product can help bring you back to the present moment. And that’s what it’s about – making you feel better in that tiny moment. Doing that more regularly really can help.” The most recent product to join the Bowe Organics stable is the Get Glowing Face Mask, a gentle cleansing mask containing Siberian ginseng, chamomile flowers, kaolin clay and Moroccan lava clay along with a host of health-boosting minerals, all combined to get the skin glowing. The story behind bringing this product to market perfectly demonstrates Diane’s attention to detail and passion for sustainability. “It’s very important to me that no-one suffers for my profit,” says Diane. “The face mask kit comes with two muslin clothes which took a long time for me to source, because it had to be right. There are camps in China where women are forced to make muslin cotton, so it was crucial for me to

find somewhere that produced organic cotton, made ethically and with a fair trade behind it so the farmers weren’t being exploited. I found a company that ticked all the boxes, but I had to save up for a long time as their minimum order was 3000. I’ve
got box loads in the garage but it’s worth it to know that the products I’m selling are ethical. Some people say I go above and beyond, but to me that’s just natural. “I also try to have a short supply chain so most of my ingredients are sourced from a
company that works directly with farms. They don’t put pressure on the farms to force children to skip school to work, in fact they give them extra money to go to school.” The backstory to the face mask doesn’t end there. Diane wanted the kit to include a mixing bowl as the mask comes in powder form which needs to be activated with water. Initially Diane experimented with coconut shells, but they didn’t have the right look or feel for her luxury brand. She established contact with a lady who works with women in Turkey who make beautiful, brightly-coloured bowls by hand. Diane is safe in the knowledge there’s been no slave-labour involved in making these gorgeous little dishes and that the money goes directly to the women who make them. Also, Diane’s intention is that the jar the face mask arrives in is a jar for life. You can then buy a refill, which comes in a biodegradable sachet which has a label made out of seed paper so you can bury it in the garden and flowers will grow. The face mask is the only product in the Bowe Organics range that hasn’t yet won an award, but it has only just been launched. Most recently, Diane’s Lip Rescue Balm won Gold at the Free From Skincare Awards. Since Ivy was born, Diane has made all the products she uses on her daughter’s precious skin, including a chicken pox cream which apparently worked wonders to stop her itching. Diane’s next plan is to launch Baby Bowe, so it looks like what started out as one woman wanting to formulate natural products for herself and her family, is something we’ll all be able to benefit from for many years to come. boweorganics.com

Let go of who you think you’re supposed to be, have the courage to challenge your limiting beliefs and embrace who you really are with our Luxe life coach, Teresa Peters…
One of my greatest ‘peak moments in time’ is running through the Northumberland countryside, with my hubby and teenagers running or cycling by my side, as the leaves are turning from summer green to myriad shades of yellow, gold, orange, red and brown. If you were to ask me, ‘What’s important to you about this?’, I’d reply, my family, health, love, connection, positivity, freedom, adventure, and challenge. These are defined as my ‘move towards values’. If I was asked, 'What state/situation would you do almost anything to avoid it happening?’ I’d reply, being unwell, letting my family down, not being independent or financially free, making anyone unhappy and not being true to myself. These are defined as my ‘move away from values’. What are values? Your values represent your core beliefs. Your values are the things that you believe are important in the way you live and work. They determine your priorities and deep down they are probably the measures you use to tell yourself if your life is turning out the way you want it to. Of course, there are common values among everyone, however the first things to remember are: 1 Values are not what we like but what is important to us. 2 Every person has values.

3 Every individual’s set of values is different from another’s. 4 There are no right or wrong values. 5 Each value has a different meaning to each of us. Frequently, we'll set goals and make decisions based on everything but our values. We are surrounded by people who have expectations of us, and often we set goals in order to meet their expectations. The impact increased self-awareness has on you or your business can be ten-fold. Once you elicit your values and limiting beliefs, with a highly trained coach who explores with you on a deeper level, there’s no stopping you! I’m about to share something deeply personal because I’m a big believer in being authentic. I stopped drinking alcohol June 2020. What triggered me to feel motivated to do this was listing my values in order and how I lived by these each day. When I was honest with myself, I realised that I spent more time drinking wine than exercising or getting out with my family doing what I love most. I channelled my boundless energy into growing my coaching company, challenging myself, becoming financially free and being present with my family. A values elicitation exercise You know I love sharing tools so why not grab a pen and notebook to delve a little deeper as we work through the rest of this together. What’s important to me about… business,
My aim in life is to BE rather than DO or HAVE – to live every day with the feeling I have during that ‘peak moment in time’ health, relationships, career... Keep repeating the question until you exhaust your list. Another way to elicit values is to think back to a time when you were extremely angry, frustrated or upset – perhaps you felt trapped or bored. This could highlight that your opposite values are freedom or challenge. I invite you to write freely with thoughts about what you can’t live without. What are these values? This may include reading because you have a love of learning or kissing each of your family before they leave the house. What are beliefs? Essentially beliefs are rules that we live our lives by. Beliefs are stories we tell ourselves, in our mind’s eye. They are things that we perceive as facts even if they aren’t true, and they are things that will either empower
us, liberate us, or hold us back. If you have an empowering belief that's going to generate positive behaviours and if you have a belief that limits you, you're going to generate behaviours that also limit you. I explored my own personal beliefs with my coach (every accredited coach usually has a coach and supervision) and recognised that I could on occasion be a ‘people pleaser’. My need to please served me as a child growing up when I had to meet adversity head on, but it now no longer serves me as an adult. Reframing this belief has helped me to grow as a person, mother, wife, friend and as a business owner. Raising your self-awareness gives you more choices and that leads to changes in behaviour, changes in your decision making and enables you to achieve much greater things. As humans we are destined to perpetually develop and there is no end to human perfection. If we align our lives and work with our empowering beliefs and core values, we can find our purpose and feel truly fulfilled. What beliefs and values have you uncovered? We hope everyone has had a great summer. Although the sunshine was a bit ’stop and start’ it really was pretty gorgeous at times, which was much needed with overseas trips still not back to normal. Roll on 2022 when the world will open up once again! We’d like to say a massive thank you to all of our clients who have continued the wearing of face masks in our salons - it really has helped us in continuing to create a safe environment for both clients and our team. It won’t be forever, but until we feel it’s safe to do so, we will continue asking everyone to do their bit. The British sunshine has done a great job of adding some sun-kissed loveliness to everyone’s hair - but before you think about toning it down for autumn, consider adding a bit of blush to end the summer looking gorgeous.

Whether it’s a soft pink or a peachy blush, you can add a delicate tone to most blondes, which will transform your look completely. It doesn’t have to be a permanent thing and can be as subtle as you wish. Temporary sprays can give you the look for a night out or a weekend away, or a slightly more permanent version can last up to a few weeks depending on how often you shampoo your hair. These days people generally seem much more adventurous with their colour, and why not? It’s fun to change things up from time to time and without any long term commitments why wouldn’t you give it a go? This layered bob has been dried with texture and pinned up at the front to create a cool ‘mullet’ look which is bang on trend this season, and we love it! Michael x

ON THE HOOF with Deborah Smith This summer has been a time for trying new things. Endurance riding through the breathtaking scenery of Northumberland being one of the highlights
Endurance riding >> I’d always thought endurance riding was for Arab horses and covering distances between 50 to 150km. There are some of those, but the pleasure rides are shorter (15-30km) and open to anyone with a sense of adventure and a fit horse. This summer I decided to give it a go and took part in some of Endurance GB’s rides, organised by the Northumberland and Tyneside local group. Strider is still in light work after his ligament surgery, so it was over to Oli as we saddled up for some spectacular rides over some wild and rugged countryside, including miles of usually closed tracks. The whole event environment is so welcoming and the organisers are simply brilliant. Clear maps and routes, everything signposted and gates marshalled. I highly recommend that you give it a go. Another first I’ve tried is Franklin balls. I regularly travel to College Farm for dressage training with Vikki Hayton and I’ve just been taking Oli for the last couple of months, but, Strider is such a party animal and he loves a trip away so he joined us on our most recent trip down to West Markham. As Strider is limited to walking for now and as he is so sensible and calm, he is the ideal horse to try the Franklin Method with. Franklin balls are water or air filled balls and they can be used in mounted or unmounted training sessions to help improve seat and body awareness. You can sit on them or tuck them in under your arms or legs - there are many ways to use them! For riders they can help muscles lengthen and relax and they help you better understand how your body moves and how you can organise yourself more effectively. Like much to do with biomechanics, subtle changes in what you do and how you ride and sit can really influence your horse’s way of going and improve your balance and connection. Well, we had great fun and I found it incredibly effective - we will definitely try this again. franklinmethodequestrian.com

Apart from Franklin balls, training camp at Vikki’s provides plenty of time to focus on some longer term goals and I’ve been using my 1-1 sessions to help Oli and I aim for 2022, including riding some British Dressage senior rider league tests. And with the Team GB’s equestrian team doing so brilliantly at Tokyo, there’s been plenty of inspiration over the summer from watching our Olympic riders and the incredible partnership they have with their horses, and to borrow an old Danish proverb: Care, and not fine stables, makes a good horse. It was also lovely to see Carl Hester’s medal winning horse, En Vogue, out grazing with his paddock friend the moment he got back from Tokyo. 2021 is finally coming good!

With September comes a new routine. For some that means a new school year, a busy work schedule and a lot of time out of the house. For us dog owners, this September is a little different. In the past our pooches have been used to these seasonal changes, but the pandemic left us spending the majority of our time at home with them. Now, our canine companions may feel confused and concerned when leaving them alone. Here are five top tips to help calm, reassure and occupy your dog...
Hide, Seek, Surprise Before you leave the house, hide some of your pooches' favourite treats in dog-friendly places around the house. Lead them on the hunt before setting off and leave them to have fun searching for their food, it will tire them out and sniffing helps dogs to relax too. Win, win.
Structure is Key Dogs love routine, so make a plan and try to stick to it. Take your dog for a walk before you are due to go out so that they have the opportunity to go to the toilet and exercise. Return half an hour before you plan to leave and feed them a small meal - your dog will be much more inclined to relax.

Keep Them Entertained Our furry friends love toys, but keeping that one ‘special’ toy for when you’re not around is super important. This toy will become special to them and will be used as their companion when you aren’t around. Try using mentally stimulating toys such as a stuffed Kong toy, a treat ball or a meat flavoured chew. Remember to put away this toy when you return.

Minimise Disturbances People passing by, deliveries and outside noises are all triggers for dogs suffering from separation anxiety. Try keeping the curtains closed and leaving on the radio or TV to minimise what your dog can see outside and to muffle any noises they aren’t used to. This can help to keep your dog calm and relaxed.
Hire a professional If leaving your dog alone for long periods of time is something that both you and your pooch are struggling with, then considering hiring a professional is a great idea. Using a dog sitter or doggy day care service means that someone can keep your dog company and take them for a walk while you're out so that they are not left alone for too long. This is a great way of easing the stress that they and you may feel when you're not there.

Delectable dining in Durham The Curious Mr Fox opened on The Riverwalk in Durham over the summer and has fast become one of the city’s mustvisit venues, offering a variety of dining experiences. Claudia Robinson finds out more about this exciting new restaurant and its head chef, Paul O’Hara A major coup for the owners of The Curious Mr Fox was to entice seasoned North East chef, Paul O’Hara, to head up the kitchen. Originally from Ferryhill, Paul has worked all over the country, including at The Selfridge on London’s Oxford Street and Redworth Hall Hotel. But it was when he began working at Terry Laybourne’s Bistro 21 in Durham that he really landed on his feet. “Terry was running the kitchen at Bistro 21 so it was him

that interviewed me for that job,” Paul reminisces. That was the start of working alongside him and that’s when I really learnt how to cook. It was like starting again. The technique, the execution. I felt I was out of my depth at one point with the amount of covers we were doing and every dish having to be so perfect and finessed, every time. Paul then went to work at Café 21 on The Quayside before becoming head chef at Bistro 21, at the tender age of 23. “That was quite overwhelming,” says Paul. “When you’re working for Terry, it’s about the guest and serving good,

quality food, simply, so there’s nowhere to hide. He just said to me one weekend, ‘you’re head chef on Monday’, as he walked out the door. I was dumbfounded!” After that, and with the help of Terry, Paul opened his own pub and restaurant, The Bridge at Whorlton, near Barnard Castle, and enjoyed huge success. His restaurant was twice on the cover of the AA Good Pub Guide and was named the Michelin Inspectors’ Favourite Pub. In 2011 Paul decided to take a step back and went to be breakfast chef at the then newly launched Rockliffe Hall. His plans for a quiet life were short-lived and he quickly became kitchen manager and then Executive Chef, so didn’t get the chance to take a back seat at all. Nine years later, when he left Rockliffe Hall, Paul’s plan was to retire. “My partner was having none of that! After a year off, the opportunity came up to become head chef of The Curious Mr Fox, so I took it. I have free reign of the menu, which suppliers we use and remember now why I prefer working in a restaurant rather than a hotel, where you have to go through ten people to get an answer.” The Curious Mr Fox opened in June 2021. Set over three floors, the venue is divided into different areas offering different experiences. Two restaurants - the Ivy Room with its airy feel and the more ornate Oyster Room, plus Fox’s Club, a trendy cocktail bar which has its own food menu too. So, plenty to choose from. Paul describes the venue as opulent, trendy, classy and chic. All adjectives we love at Luxe! He says: “Daytime dishes include brunch, pasta, eggs benedict and toasties. While the dinner menu is more formal – steak burgers, crisp confit of duck, slow cooked shoulder of lamb, mussels… Fine dining but without the fuss, and for people that enjoy a really good treat with no pomp and ceremony.” There’s even an homage to Paul’s mentor with ‘Terry Laybourne’s Cheddar Cheese and Spinach Souffle’ already a firm favourite on the menu. “I love that I have the freedom to put what I like on the menu. This is going back to dishes that I love cooking. Classic, French-style food with a modern twist, just like what I used to cook with Terry. I also like to be led by the weather and the seasons. So now the menu includes hand-dived scallops, celeriac remoulade, gooseberries, everything that’s coming into season.” Paul is passionate about developing the next generation of chefs, just like Terry Laybourne did with him, and continues to do. “I’m looking forward to the game season starting,” says Paul. “If the butcher has some pheasant or venison available that will go on our specials board and it’s

something new for my team to cook. I love to train and inspire young chefs. One of them told me they’d learnt more in three weeks than they learnt in two years at the restaurant they’d worked before. They get the opportunity to work in all areas of the kitchen here, learning new skills and building their repertoire.” The Curious Mr Fox opened at a time when many people
were desperate to get out socialising again, so unsurprisingly, it was busy from day one. But that hasn’t subsided, if anything, the venue is getting busier by the day as word gets out about its fabulous food and great atmosphere. thecuriousmrfox.co.uk

Savouring the seasons WITH KAREN PHILLIPS
Autumn brings a chance to breathe again in the veg plot. Gone are the rushed days of spring, playing catch-up with the weeds vying for attention amongst those small vegetable plants. Now is the time to enjoy the fading evening light whilst harvesting small pleasures: bowls full of juicy raspberry jewels, the sweetest peas perfect for risottos and a harvest of tatties that will take you through to spring Grow your own raspberries Raspberries are one of the simplest and most rewarding crops to grow in the veg plot, or you can even cram five canes into a large 35 litre pot and have them on a balcony or in a sunny yard. There are numerous varieties for harvesting throughout the summer but the easiest one to grow is ‘Autumn Bliss’. The clue is in the name. Harvested in Autumn, these are ideal as there’s no tying the canes onto a permanent framework. Simply chop all the old growth to a few inches above ground level in late winter and then patiently await your new crop from September onwards. By this time of year Raspberry Beetle has also packed her bags and departed so less tunnelling appears in the fruits and there’ll be no uninvited guests in the bowl! The only other problem they can experience is chlorosis, where the vein of the leaves stand out clearly on pale yellow/green leaves. This is usually only a problem on alkaline soils and can be remedied by feeding with sequestrene of iron in spring or by mulching with organic matter in late winter to reduce the pH of the soil and make it more acidic. Where to buy from Always buy raspberry canes from a reputable nursery online in autumn when they are bare-rooted and very cheap. They
will arrive through the post ready to be planted in soil for a crop next year. Don’t be tempted by friends who offer you spare canes of theirs from the allotment since they are likely to be virused and will produce poorer, smaller fruit. Raspberry will crop well for up to 15 years when good stock is initially planted.
These can be made in a large loaf tin but they look fabulous made in individual Bundt tins. The secret to these is to buy the right heavy-duty tins (when we find them, we have them for sale) and then to place the tins in the fridge for 10 minutes whilst you melt some butter. Brush the cold tins well with melted butter and replace back in the fridge whilst you mix your cake.
Harvesting and storage Raspberries are unbelievably adaptable – pop into a glass of prosecco with some raspberry liqueur for a cheeky cocktail; make a fabulous raspberry tart; freeze the berries initially in a single layer and then pour the frozen jewels into a larger freezer container for use throughout the winter on yogurt and granola when you need an instant pick me up, or best of all make these Peach Melba cakes which are ‘summer in a slice’.

Peach Melba Cakes
Ingredients Preheat oven 170°C; makes 8 small Bundt cakes or 1kg loaf tin 180g unsalted butter, softened (plus a little extra for greasing the tins) 260g self-raising flour Pinch of salt 160g caster sugar 2 large eggs 1 tsp vanilla essence 170g crème fraiche 1 peach/nectarine stoned and cut into small cubes 18 raspberries (fresh or frozen is fine) Topping 200g raspberries 150g raspberry or apricot jam 100 ml water 20 fresh raspberries for topping Icing sugar to dust with Method Using a food mixer, cream the butter, pinch of salt and sugar together until light and fluffy, add the eggs in 1 at a time and mix well until fully incorporated. Add the vanilla essence in with the last egg. Fold in the flour and the crème fraiche in 3 batches (you get a much lighter cake this way). Once the flour is all incorporated gently fold in the diced peach. Remove your chilled and greased tins from the fridge and spoon the mix equally between the 8 tins – then push 3 raspberries per tin into the top of the cake mix. Make sure the cakes are level and bake for 25 minutes then test with a skewer – if it comes out cleanly take the cakes out of the oven. If there is cake mix on the skewer then bake for a further 5 minutes, or until the skewer can be removed cleanly. If you are making 1kg tin then bake for 30-40 minutes, testing as above. Leave the cakes to cool for 10 minutes in the Bundt tins (or until cool in the 1 kg tin) then slide a knife gently around the top edge of the Bundt tin and turn out swiftly onto a cooling rack. The more confident you are, the easier these cakes are to come out perfectly but don’t worry if any bits remain in the tin. Simply put them on the top because the topping will cover any accidents. Leave the cakes to cool completely whilst you make the topping. Put all the topping ingredients in a small saucepan and bring to the boil, simmer for about 8 minutes, stirring occasionally, or until you can see the clear bottom of the pan when you drag a spatula through the liquid – you want this to set on the cakes rather than run straight down the sides. Push the hot sauce through a sieve to remove the raspberry pips, leaving you with a smooth glaze. Pour into a small jug and just before you serve the cakes, pour the topping over the cakes and top with a few more fresh raspberries. Dust with icing sugar and serve.

MY WORLD >> I’ve been very fortunate to travel round a lot of the UK over the last few months, filming for M&S. I couldn’t be more grateful to see so many places in the country that I probably would never otherwise have visited. I was blown away by the scenery in Scotland and met some fantastic people everywhere I’ve been. The more I speak to food producers, be they sheep farmers, vegetable growers, cheesemakers or fishermen, the more I’m inspired by their passion to produce great ingredients. One of my most memorable days was spent with Tam, a trout fisherman on Loch Earn, in Perthshire. I cooked some freshly-caught trout by the side of the loch on a beautiful day, which we then took back out into the loch to eat on the boat. He is the most incredible, interesting man who loves his job. He told me he has to pinch himself that he does what he does for a living. He and I are both passionate about #ShoutOutForBritishTrout, a campaign to encourage us to eat trout rather than salmon. It’s a delicious fish, slightly sweeter in flavour but similar in texture. It’s one of the reasons we went up there to talk about the wonderful produce that’s on our doorstep, but that we often don’t think to eat. MY FOOD DIARY >> I promised myself I’d take a break during the summer and managed to get back to my home in Hexham to see my mum and dad for a few days. It was great. It was the first time I’d seen them this year, and the longest time I’ve ever been away from home, so it was lovely to catch up with them, and my friends. I had another chance to see everybody when they came to visit me when I headed

back to the North East in early August for Seaham Food Festival. It was the first festival I’ve done in person for a couple of years and was great fun. I particularly love events like this that are back in the region, and I’m always blown away by the support I get locally. The weather was so on and off - hot sunshine one minute, sleet and hail the next but it didn’t dampen spirits. INSPIRED BY THE SEASONS >> As we head towards autumn, lots of firm favourites are coming into season including apples, pears, and wholesome treats like cauliflower, mushrooms and cabbage. As the nights begin to draw in, it’s time to indulge in comfort foods like cauliflower cheese, or a tasty fruit crumble. FOODIE HAPPENINGS >> I’m looking forward to taking part, remotely, in the Singapore Food Festival in early September. I’ve been lucky enough to visit this amazing city before and am hoping to head back there again when restrictions allow, but I’m delighted to be able to get involved in some way with this year’s event. Offering a unique amalgamation of Malaysian, Chinese and Indian cuisines, it’s definitely a country to visit if you’re a big foodie. I’m also heading out to Northern Ireland towards the end of September to cook at the Balmoral Show. It’s great that these country shows are starting to take place again after such a long break. Hopefully you’ve had the chance to visit one during the Summer months. Something else I’m really looking forward to over the coming months is getting back out there and trying new restaurants, whilst also visiting my favourites. Interestingly, many of my friends with young children have said they can’t wait to introduce their offspring to eating out because it’s
something they’ve never done due to lockdown – trying new food, dining socially, table manners, and everything that goes with enjoying a great meal out with family and friends.

Following the series of lockdowns and having spent so much more time at home, I feel like I’m stuck in a menu-idea rut when it comes to cooking for the family. Churning out the same meals over and over again. Have you any tips for how to find new, crowd-pleasing dishes? A. We’ve all got a collection of cookbooks that have been sitting on the shelf for many years. Get them down one Sunday and have a flick through. You will no doubt find some great inspiration. Alternatively, research what’s in season and start including those ingredients. So rather than searching on the internet for mid-week recipes, search for recipes featuring your chosen seasonal ingredient. For example, in September, try aubergine recipes. Do that every month and you’ll be discovering new dishes all the time.
Coriander crusted trout with Chimichurri sauce Serves 2 A simple dish that’s not only delicious but supports the #ShoutOutForBritishTrout campaign Ingredients 2 trout fillets 2 tbsp coriander seeds Juice 1/2 lemon Tenderstem Broccoli, to serve For the chimichurri sauce 1 small bunch coriander finely chopped 1 small bunch parsley finely chopped 1 clove garlic grated 5 tbsp extra virgin olive oil Juice 1/2 lemon Salt and pepper 1 red chilli finely chopped 1 tsp oregano Method Toast the coriander seeds in a dry frying pan for 1 minute until they begin to give off an aroma. Place in a pestle and mortar and crush to a rough powder. Coat the trout in the coriander seeds with a pinch of salt and pepper. For the chimichurri: Mix all ingredients together, adjust seasoning to taste. To cook the trout: Heat a non-stick frying pan over a medium heat, fry the trout skin side down for 2- 3 minutes or until the skin is crispy. Flip and cook for another 2 minutes until a crust forms. Squeeze in some lemon juice, then turn off the heat. Serve with broccoli and then drizzle over the sauce.

Fresh, Foraged, Fermented
Braised Short Rib, Fermented Sweetcorn & Lettuce
Celebrate the cosy autumn evenings with this heartwarmingly delicious braised short rib recipe by Shaun Rankin, Grantley Hall...
Start by brining the short rib. Place the salt in a pan with 2l water and bring to the boil. Once the salt has dissolved, take off the heat and allow to cool. Place the ribs in a container and pour the brine over. Cover and place in the fridge for an hour. Remove the short rib from the brine and rinse under cold water before patting dry with kitchen roll. Sear the beef in a hot pan until it’s coloured on all sides, then set aside. Sweat the carrot and onions down, before adding the sugar and soy sauce. Add the chicken stock and bring to the boil. Put the beef into a casserole dish and add the stock, cover and braise in a pre-heated oven at 150°C for 5 hours. Remove the beef and set aside until serving.
There’s nothing quite like coming in on a cold, dark autumn evening to the comforting warmth of your home and the smell of a hearty meal being cooked up in the kitchen. With this cosy season comes an abundance of foraged foods and pungent flavours to work with. Think wild mushrooms and fresh thyme as well as crunchy shallots and punchy garlic - all of which are packed into this tasty recipe by Grantley Hall’s Shaun Rankin.
For the Beef 2kg beef short rib 250g salt 2300 ml chicken stock 90g sugar 300ml soy sauce 2 whole onions, finely diced 1 carrot, finely diced
For the Red Wine Sauce 1 shallot 4 garlic cloves 1 bay leaves 70g button mushrooms 0.5 tsp fresh thyme 1.5 tsp coriander seeds 0.5g white peppercorns 1 bottle red wine 1l reduced chicken stock Sweat shallots, garlic, thyme, bay leaf and peppercorns together and turn down to a medium heat. Add the red wine and button mushrooms, before reducing right down until the wine becomes jammy. Add the chicken stock and bring back up to a simmer for a about an hour. Skim the sauce before passing it through a muslin cloth. Set aside until serving.

For the Fermented Sweetcorn Puree 1 can tinned sweetcorn 2 tbsp salt Place the salt in a pan with 1l water and bring to the boil. Once the salt has dissolved, take off heat and allow to cool. Add the sweetcorn to the water and transfer to an airlock container. Leave to ferment for around 5 days. On the day of service, drain the sweetcorn reserving some of the liquid. Blitz the sweetcorn in a food processor and add the liquid as required for a puree consistency. For the Fermented Baby Gem 4 baby gem lettuces 2 tbsp salt 1g coriander seeds 0.5g white peppercorns Place the salt in a pan with 1l water and bring to the boil. Once the salt has dissolved, take off the heat and allow to cool. Add the baby gem to the water with the coriander seeds and peppercorns before transferring to an airlock container. Leave to ferment for around 5 days. On the day of service, drain the baby gem ready for grilling or BBQ’ing. For the Coleslaw 30g cabbage 20g carrot 5g shallot The coleslaw will be the garnish for your dish. Finely slice the ingredients and toss together ready for serving. To Serve Heat the sweetcorn puree and red wine sauce, separately, on a low heat. Portion the short rib into 4, brush with oil and either place under the grill or BBQ to add some colour. The baby gem lettuce should also be grilled or BBQ’d. Spread the sweetcorn puree on the plate before adding the beef and baby gem. Spoon on the red wine sauce and dress with the coleslaw.

DINE OUT >> After a busy day exploring the city, The Whippet Inn is up next on our agenda. We’re seated at a cosy corner table and greeted with a smile and exceptional service. We browse through the menu under candlelight and the welcoming ambience, as our waiter brings water for the table and pours a bottle of Inzolia Le Rovole (£20) into our wine glasses. For starters, we both tuck into the Shell baked Queen Scallops with chorizo, caramelised cauliflower purée, topped with mature cheddar cheese and Japanese breadcrumbs (£11.50). Packed with flavour and cooked to perfection, we both smile at our choice of starter. It’s the 9oz Ribeye (£25) for the main event served medium-rare. For my dinner date, it’s the 21oz Himalayan Pink Salt Aged T-Bone steak (£30) served medium-rare. Both steaks are served with deliciously crunchy, yet fluffy hand-cut chips and our selection of butter and sauces including chimichurri sauce, smoked garlic butter and truffle butter (all £2.50 each). Mouth-wateringly juicy and perfectly tender, it’s a match made in steak heaven. We sweeten the deal with classic sticky toffee pudding with molasses toffee sauce served with vanilla ice cream and the rose panna cotta with caramelised white chocolate, pistachios and freeze-dried raspberries (£6.50 each). Where do I begin with sunny Seaham? It’s a small, quirky corner of the world that has had an immeasurable impact on my 24 years on this weird and wonderful planet. Like most at that age, growing up in Seaham as a teenager meant that I was desperate to leave SR7, enticed by the big lights of the city and needed to head off in search for more. Little did I know, everything I’ve ever held dearly has been right here, under my nose. Seaham is a small harbour town that unashamedly wears its heart on its sleeve, makes no apologies for the place it is and goes on to capture the hearts of all who pass through here. It’s a place packed with industrial heritage,
stunning coastal vistas and now, inspiring independent businesses who, like me, are returning to the place where it all started. In recent years, there’s been a subtle shift away from the ‘traditional’. Opinions are changing, opportunities are there to be taken and local business is beginning to blossom. This 19th century coastal community has had many setbacks down the line, it’s endured incredibly difficult periods but stood the test of time, lived to the tale and now, its perseverance is being rewarded. I was with one of my vendors at the staging and photography appointment prior to bringing their beautiful home to market. Our interior designer Gill had been involved from the early stages and had given some great advice on how to maximise the value. There has been a lot of activity in the housing market of late, but many people have been hesitant about bringing their houses to the market. So, for the benefit of those about to take the plunge, I thought I’d share some of the more unusual insights that Gill gave our seller. Upgrades you can make in the living room Did you know that replacing your radiators can add up to £10,000 to the value of your property? A stylish radiator can make a room look better, and a more efficient radiator improves the energy rating of the home. For around £600, free-standing, aluminium radiators are perfect for a stylish, modern upgrade to your heating system. Black or charcoal-coloured radiators add a classic and chic element to your living room and are also the advised option as they emit the most heat. It is believed that improving internal doors can add up to £7,500 to the value of your home. HOT PROPERTY Studio Dean have given a Jesmond home a bit of creative TLC, creating a calm and happy place with splashes of colour and eclectic art as a nod to the client’s vibrant personality
THE LOWDOWN >> Situated in Jesmond, Newcastle, this three-story home was brought to interior design company, Studio Dean, in need of an uplift. Having owned the property for five years and given renovating herself a go, the client was seeking professional help to get the perfect finish. When buying things for her home online, she found that they didn't give her the same ‘wow’ feeling as the images she used as inspiration. Although her style was eclectic and mid-century modern, her home was coming across as a bit of a mismatch and too much on the shabby chic side. When further investigating the client's

lifestyle and how she used the house everyday, the team found she was unhappy with her bedroom, her storage and finding the balance between home and workspace. THE TRANSFORMATION >> This home project was not about finding ‘new’ everything, but rather mixing old with new and keeping lots of the client’s original pieces. Four rooms were chosen as the main focus: the living room, dining room, bedroom and spare bedroom. Downstairs was about reworking the layout to make the most of the space, by doing little things such as changing the position of furniture and creating a feeling of cohesion between the two spaces. Upstairs, the master bedroom was knocked through to the spare bedroom to create a
master suite with a beautiful dressing room. This was to create ample storage for the homeowner and a feeling of luxury to her everyday life. During style meetings, the client picked out art, calming natural colours and lots of mid-century, modern pieces. THE RESULT >> The property now has a new lease of life. It reflects the homeowner’s personality and style whilst being a calm and happy place for her to live and work. Mid-century modern is the driving force when it comes to design, whilst mixing in some eclectic pieces and plenty of the client’s beautiful art collection for that personalised touch. The layout is now more functional for
everyday use, with increased usable storage which makes the home experience work. Prior to the work, the client had to fight past her bike daily in the corridor, but now even that has a dedicated space. By pushing her dining table into the wall and creating a bespoke joinery bench, she now has the space to attach her bike to the wall so it is completely out of the way, but also acts as a design feature. Form and function are perfectly aligned. Benjamin Moore paint has been used throughout, with a beige neutral running through all rooms to give the space continuity. The living room now boasts a stunning patterned wallpaper from Iona Crawford to make a bespoke feature wall behind the sofa. The existing shelves have been painted dark to give the space a more impactful feel and, of course, to disguise the TV (a Studio Dean essential). The space has been furnished with a mixture of different textures and tones to add depth, with fun, eclectic pieces added in to show the owner's personality. The dining room continues on from this space, complete with deep green bench seating and a beautiful Tom Raffield skipper pendant. The hanging plants in the

corner bring a touch of nature into the space. Upstairs has a slightly lighter feel to it, mixed with a deep red (Raphael, Benjamin Moore) to add a real sense of cosiness. The homeowner needed a space she could quickly relax into and the new bedroom and dressing room has achieved just that. The fresh, linen bedding adds a touch of luxury and newness to the space whilst incorporating many of the homeowner’s original pieces in both upstairs rooms, including side tables, chairs and artwork. My Space We’ve bought a house! After renting for the past 10 years we’ve finally bought a house and couldn’t be happier to start puting our own stamp on it. It’s a Victorian terraced house with some fabulous original features. It’s a huge project as it was previously occupied by an elderly couple and we’ve already made a start on removing the wallpaper and stripping hundreds of years of paint from the beautiful paneling around the bay window. Question time Q: Do you think a runner on the stairs is practical? Is it easy to clean or do I carpet the whole staircase instead? A: It’s a personal choice really. I do think it’s practical, I just vacuum the runner and the wood at the same time. A runner is a great compromise if you don’t want full carpet but want to reduce the noise. Changing rooms Christine Hayes, director of interior design company, The Blueberry Home, enjoys encouraging her clients to go outside their comfort zone when redesigning a room or house, whilst ensuring the beautiful living spaces she creates will stand the test of time
Christine thrives on designing bespoke interiors that are both stylish and practical. She loves small jobs, such as a simple window treatment, just as much as a full house renovation. Her recent work ranges from a country cottage in the Yorkshire Dales to an apartment in Saltburn, and she’s currently working on a property in Great Ayton. But she also has clients all over the UK and abroad, one of her favourite jobs, unsurprisingly, being a villa in the South of France. Christine studied architecture at university but soon discovered that she had a greater passion for the interiors and soft furnishing of a property, as opposed to the bricks and mortar. Her architectural training, however, has proved a great tool to have when she’s planning and drawing her designs for clients. Christine worked for several high end interior design companies over a number of years but when a friend approached her suggesting they set up The Blueberry Home together, she jumped at the chance.

“I love nothing more than being out on the road, visiting my clients, brimming with ideas,” says Christine. “Today I’ve got bags of samples, books and paints loaded in the car, so that I can show my clients as much choice as possible, and to give them the best idea of what we’re trying to achieve.
Rather than creating mood boards, I prefer to present several design schemes to them, so I can judge how the colour and texture is distributed within the room before making our final choices. Site visits are always varied at different times throughout the day, as the natural and artificial light plays a big
part in the overall feel. Detail is absolutely key! It can be difficult as a lot of people can’t envisage how the room will look, or how a particular colour will be distributed. So that’s all about trust really. “People know what they like, they take inspiration from magazines, but when it comes to actually pulling together a look for a room, or an entire house, that’s a different thing. So that’s where I come in. I enjoy encouraging my clients to step out of their comfort zone if they can. I’ll always give them the ‘safe’ option too but will also show them something out of the box and we usually end up somewhere in the middle. It’s nice for them to have an end result that they wouldn’t have thought about or achieved without my input. “I always tell them, ‘If this was my home, this is what I would have’, sometimes they go with it and sometimes they don’t, but my main aim is to achieve the best overall result for the client.

Browsing through photos of the projects Christine has worked on, it’s clear that she has a keen eye for design and can turn her hand to creating a contemporary, fuss-free feel just as easily as she can produce an elegant, period look. “I’d describe my style as modern classic, timeless and luxurious. Of course it depends on what the client likes but my main challenge is to deliver something that will stand the test of time as people are spending lots of money. The design fee element is such a small percentage of the overall budget and my clients find it invaluable to have someone to guide them through the process, which in turn saves them from making silly mistakes which can cost

them more money in the long run. Christine, who now runs The Blueberry Home as a one-woman show, says her inspiration comes from anywhere and everywhere: “I get a lot of inspiration from fabric houses and suppliers as they’re always sending me lots of lovely samples. I also love poring over magazines, not just design and interior ones but I love fashion magazines too. And Instagram is great. Sometimes inspiration can come from a bar, restaurant or shop I’ve visited, or even a chair. It can happen at any time.” While Christine relishes every job she takes on, she loves getting her teeth into a full house renovation. “It’s really enjoyable helping a client with an entire property
because you get the flow throughout the project. It’s like doing multiple projects but you’re only dealing with one client, which certainly has its benefits. With multiple rooms you build the relationship with the client, understand them and often they give me free reign to do what I like. That’s definitely my favourite type of client, to have carte blanche, but at the end of the day they have to be comfortable with the finished result and I always ensure that’s the case. It’s very rewarding.” Most of the work Christine does is on residential properties although she occasionally tackles a café or bespoke office renovation to mix things up a little. Christine finds herself juggling multiple projects, most
of the time, with all her briefs coming through recommendations and repeat business. She says: “I have a small team of suppliers and tradespeople that I’ve worked with for many years. We recommend each other for new work too so our clients benefit from the seamless working relationship that we all have.” Christine is hoping to buy a new property in York soon and is looking forward to making her mark and creating a beautiful home, if she has the time! A big hello from me and mine. Since introducing our Mama column in the previous edition, I’ve spent much of my time doting on our new little Luxe star, George. It’s true what they say, there’s nothing quite like motherhood. And although we’re only one month into this incredible journey, there have been so many lessons, milestones and precious moments. Perspective is a wonderful thing, and now he’s here, all of those tips, tales and tribulations people have shared along the way, make so much sense. So with that in mind, I want this space to be a place to share stories, round up some of the best

Little moments
After the long summer break, returning to school can bring new challenges… If you are a parent, you should just about be back in the swing of things when it comes to the school-run, packed lunches, ironing uniforms etc. but now the children are settling back into their routines, other issues can rear their ugly heads. One challenge for many parents is how to deal with their children’s friendship issues. It could be that your child hasn’t made any friends in their new school yet, or a tight friendship group has disintegrated over the summer break or your child is feeling excluded or is even excluding others. The question is, should you jump in and rescue your child or should you step back and let them handle it on their own? It’s a delicate tightrope to walk but it usually depends upon the age of your child. The younger the child, the more they will rely on you to advocate on their behalf. The older the child, the more you can support them to navigate the world around them independently, including messy friendship problems. Let’s start with toddlers and pre-schoolers. Children of this age are just learning how to be social; everything is so new to them and the dynamics of friendships are confusing and complicated. They still believe that the world revolves around them and they are naturally egocentric. It’s not a bad thing; they just view the world entirely from their own perspective. Sometimes, when our child hits another friend on a play-date or snatches, it can be excruciatingly embarrassing. But it’s normal. I’m a firm believer in parents modelling rather than demanding. So rather than forcing a child to say sorry to a friend they have hurt, I would model how to communicate their wants and needs without reacting physically. As adults,

we often feel judged by other parents if we don’t go through the ritual of making our child apologise, but really, will an insincere and meaningless apology make anyone feel better? Young children will go through the motions of saying “I’m sorry” but it doesn’t teach them about acceptable behaviour. It’s better to focus on teaching the skills of respect, kindness, generosity etc. rather than putting all of your attention on coercing your child into apologising. Now let’s focus on older children who may be having difficulty at school because they don’t seem to have any close friends. This can be a real worry for parents because no-one wants to imagine their child wandering around the yard at break-time feeling lonely. If this is the case, speak to your child. They may be hesitant to talk to you about this as it is a sensitive subject but you can gently enquire about the situation by asking “Who was kind to you today at school?” or “Who did you sit next to at lunchtime? What did you chat about?” You will get a sense of your child’s school-life from these subtle questions. If it is the case that your child is lacking companionship then try to ascertain why that could be. Are they introverted and withdrawn around people or are they quite bombastic and argumentative and struggle to get along with others? When you get to the root of the problem, you can then support your child with their social and emotional intelligence skills. What do they need a little help with? Empathy? Confidence? Teamwork? When you know your child’s lagging skills, you can then help them, through the use of stories and movies to demonstrate these values, or possibly joining new groups like the Scouts or volunteering. If in doubt, speak to your child’s teacher because they could give
you an insight into what happens in the classroom and at breaktime. This information can be invaluable when trying to support your child through their friendship difficulties. Finally, let’s dive into the messy world of tween and teen peer relationships. This is when we really have to bite our tongues and resort to being a sounding-board. Most of the time, when our children are struggling with friends at this age, they just want to vent. They want to let off steam, complain and moan. They probably don’t want us to intervene or give them advice about what it was like when we had a huge argument with Olivia Hamilton in 1989 about the bestlooking member of Bros. To be blunt, they don’t care or at least they don’t care in this moment. The adolescent brain goes through huge changes, beginning around the age of 12 and ending at 24 and one of these changes actually facilitates the move away from the family nest and the move towards independence. With this comes a huge need to connect to their peers. Friends, during this time, become as important if not more important, than siblings and parents. Friends are their everything, which means that when there are arguments and disagreements, they feel like their world is falling apart. Your teen isn’t being dramatic; their brain is literally telling them that they have been rejected by their tribe. In the primitive part of their brain, which hasn’t evolved much since we were cave-dwellers, this rejection equates to isolation and when we were isolated from our tribe, we died. So when we tell our teen that their huge row with their best friend isn’t a ‘life or death’ situation, they will quite rightly tell you that “You don’t understand.” When our older children struggle with friends, it is our job to hold space for them; to be a safe container for all of their powerful emotions. We need to listen, empathise and show compassion. When the situation is a little calmer, you can
then ask if they need any help with the situation or if you are feeling particularly brave, you can offer some words of wisdom; just be prepared for a potential eye-roll and a glazed-over expression! In all honesty, the best thing we can do to support our child in this area is to help them develop their self-esteem and sense of self-worth, as the relationship we have with ourselves dictates the relationships we have with others. When our children are content with who they are and happy in their own skin, they will be able to handle whatever friendship issues are thrown at them.

#YouCanAdopt
It’s National Adoption Week from 18 – 23 October and with almost 3000 children in the UK looking for their forever home, a new recruitment campaign has been launched
There are many misconceptions about adoption so busting those myths is the aim of this year’s campaign, #YouCanAdopt. Luxe sat down for a chat with Paula Gibbons, Head of Service for Adopt Coast to Coast, one of the Regional Adoption Agencies taking part in the campaign, to find out more… Why are there more children now than ever, needing a forever home, and yet fewer people coming forward to adopt? It’s been an unprecedented year or so with the challenges of Covid which has no doubt created massive hurdles for us to leap over, but leap we have. Each of our three spokes at Adopt Coast to Coast, in Sunderland, Durham and Cumbria, have continued to train, assess, match and support prospective adopters, no matter what stage they were at when we went into lockdown. We’ve actually seen an increase in enquiries more recently too, but we still need more! I think, nationally, there’s been a decline in people coming forward to adopt due to common misconceptions about who can adopt. So perhaps people aren’t even making an enquiry because they don’t think they’re suitable. What are the main myths you’re trying to bust when it comes to adoption? People’s perception of adoption is skewed on a number of levels. For a start, there’s an assumption that it can take years to go through the adoption process but generally these days it takes between 6 and 12 months. In recent years the government has introduced a clear, two stage process, with statutory timeframes to speed things up, and it works. Stage One involves checks, a health assessment, references and preparation training, which normally takes two months. Stage Two, which usually takes four months, involves more intensive

assessments and preparation, as well as additional training so that you’re ready to be recommended for approval to adopt a child. Another big misconception is that you must be a certain type of person to adopt. I worry that people rule themselves out too quickly. Long ago, you had to be married and have savings before you could adopt, but times have changed! We aren’t looking for a particular type of person, couple or family. You can be single, on benefits or part of the LGBTQ+ community. There really are very few limitations – you must be over 21 and have lived in the UK for a year. There are also some criminal convictions, such as offences against children and adults, which will mean you can’t adopt. That’s pretty much it! It’s all about the individual applicant and matching them to a child, or children, who they are the best fit for. You don’t have to be perfect to adopt, and let’s face it, none of us are. The key attributes for adopting a child are providing a loving, safe and stable home. Your occupation, salary, size of your house or age are not important. Often people think they’re too old. That simply isn’t the case.
What would you tell someone who has even the slightest notion that they might want to adopt? Don’t wait another second. What happens once you’ve been approved to adopt? When you’ve completed Stages One and Two and are approved as suitable to adopt, your specially dedicated social worker will work with you to identify children whose needs you would meet. We have specialist social workers who work with adopters, their social workers and the social workers of children to identify and match families and children. Once a match has been made, you’ll spend time getting to know the child with your social worker there to support you every step of the way. There’ll be a series of visits and short stays leading up to the child moving in with you. After a child or children have been living with you for 10 weeks, you’ll be able to apply to the court to become their legal parent.

After what can only be described as the year and half from the worst nightmare ever, I’m so pleased to be back test driving cars again - a brilliant sign of some normality hopefully creeping in again In the electric car world, Tesla previously had very little competition, but most manufacturers now have some presence with either Hybrid or full electric technology. When Ferrari and Lamborghini are starting to use electric motors and batteries, you know electric power is going to slowly start becoming the norm for us all. With the government wanting to ban the sale of petrol and diesel cars in 2030 we really need to have the infrastructure in place. Charging points need to be much more accessible for drivers and the other concern is, do we have the electricity to charge all of the cars without putting a strain on the national grid? Who knows? Car manufacturers are desperate to get on the electric bandwagon, BMW already have quite a funky little electric car with the i3 and the very sporty car in the i8. These quirky looking cars made the Nissan Leaf look very staid and boring. Instead of going down the route of a brand new chassis, BMW have used the ones from the X3. They’ve taken the engine and gearbox out of the original car and added some electric motors along with the all-important batteries. These are under the floor and thanks to careful placement, the car has a perfect centre of gravity, and it feels like a real driver’s vehicle, which you’d expect from a BMW. The electric car is nearly half a tonne heavier than the

petrol and diesel engine X3. This car has some stiff competition with the Mercedes EDC, Audi Etron and the Jaguar iPace. One main difference to its competitors is its rear wheel drive and not 4-wheel drive, and therefore it’s a real driver’s car. There are only two spec choices available at the moment, the Premium Edition, which costs just under £59,000 - you do, however, get a decent amount of standard specification for your money. 20 inch alloys, auto tailgate, adaptive suspension, wireless phone charging, heated seats, leather upholstery and a panoramic sunroof are all as standard. The Premier Edition Pro Spec adds Harmon Kardon speakers, gesture control for the infotainment system and automatic high beam headlights for an extra £3k. Both models have Apple Car Auto Play and Android Auto as standard. According to BMW’s figures, the car is supposed to have a range of 279 miles - I personally think the real world mileage will be more like 200 miles. If you use a 150KW supercharger the car can be charged up to 80% in just 34 minutes, but using a home 7KW charger will take 12 hours to fully charge the car. When you operate an electric car you totally change the way you drive, from turning off the air con which actually impacts on the car’s range, to using the car’s regenerative braking, which helps recharge the batteries. In the summer months, an electric car’s
range tends to be much better, as you don’t necessarily need to use the heating and wipers etc. When it’s generally warmer the batteries have a much better range. During winter months, most electric cars struggle, as energy zapping equipment has to be used and this has a massive drain on the car batteries. I especially like the dials on the dash, the rev counter actually shows you what percentage of power you’re using rather than the revs per minute.
range. The iX3 gets to 62mph in 6.8 seconds, which isn’t bad for such a high and heavy car. Its top speed is 112mph, which isn’t blistering, but considering it’s powered by batteries, it’s much quicker than a milk float. When you start the car up, it makes some very Sci-Fi style noises - don’t quote me, but I think the guy who wrote the Beverly Hills Cop theme song also had his hand in the start-up music on this car. After spending a few days in this car, I really
Electric cars all have amazing performance away from traffic lights, most of them have better performance than Magnum PI’s Ferrari, which was a super car back in the day. The vast majority of company car drivers will feel the difference in the benefit-in-kind savings over traditional petrol and diesel cars, another benefit is the zero road tax. Eagle-eyed readers will notice the splashes of blue all over the car, from the sealed kidney grills, to the aerodynamic alloy wheels. Everything is designed to improve drag efficiency and to increase the cars
liked driving it. If you’re looking to save a shed load of tax, especially if you’re a company car driver, this is definitely the car for you. Anyone looking to join the electric revolution really can’t go wrong with this bit of German engineering. It’s still a BMW to drive, despite the added weight - the engineers have really excelled themselves. CAN YOU TELL US A LITTLE BIT ABOUT YOURSELF AND YOUR ROUTE TO BARNARD CASTLE GOLF CLUB? I would describe myself as slow to get it when it comes to the playing side of golf. I didn’t start playing golf until I was 12 as football was my first love. I turned professional barely off a two handicap on my 18th birthday, purely to work in the business side of the game. But I have always loved playing, and I’m quite the opposite of the norm that professionals tend to say they get worse as they get older. I became the Head Golf Professional at Dinsdale Spa Golf Club in 2003, aged 21. Being the club professional at the club I grew up playing at was an honour, especially being so young. In 2011, I moved to Rockliffe Hall, the then new golf, hotel and spa development just outside Darlington. A completely different experience from the ‘village’ golf course I left with 250 staff, 450 acres and big expectations, learning the ropes in the corporate resort world. Life skills are transferrable, and before long I felt comfortable in a corporate environment. With a small membership our aim was to build this and create a healthy mix of members and visitors to the property. I’m proud of my career progression so far and feel very lucky I’ve had the chance to work at three fantastic places. HOW DOES IT FEEL TO HAVE JOINED THE TEAM? I joined Barnard Castle as their Golf Professional in September 2020. What a beautiful part of the world it is, and it’s attraction as a golf course is undeniable. The last 18 months have proved strange times for us all, but one success story is how many new/ returning golfers have come to the sport. I read a report that 2.1m more players have been recorded to have joined golf clubs and driving ranges since we emerged from the first lockdown. Barnard Castle has seen over 150 new members, and with this increased membership comes opportunities for the golf club to improve, and to complete a jobs’ list that would have been severely underfinanced during the last few years. Golfers in general are just happy to have the opportunity to be out playing, and sport is certainly one of the things we all used to take for granted.
ANY UPCOMING EVENTS FOR THE DIARY? We are well into the golfing season, which has been extremely busy at the club, so not a whole lot of time for me to play (let alone practice!). I was fortunate to qualify for the final of the TGI Partnership trophy, a PGA Professional event where we have a home nations match, England and Wales vs Scotland vs Ireland. This is held at the magnificent K Club in Ireland, in September, which will be a treat and one for the diary. I think a big part of our job as professionals is getting out and playing with the members, conducting yourself professionally and involving yourself within the club. Members want to see their club professional play, even if they’re not Tiger Woods, giving the odd tip here and there. We have our very own Pro-Am here at Barnard Castle on Saturday 4 September, the oldest of its kind in the region. An annual event which is always well supported. HOW IS THE COURSE LOOKING AS WE HEAD TOWARDS AUTUMN? The golf course is in fantastic condition, and all credit must go to our very small team of green staff that quite frankly work miracles to get it to the condition it is. Visitors from far and wide come to enjoy it, and Mr Cummings did not do us any harm in creating exposure for the town which has only helped its reach, especially to the south. Being close to the A66 is huge, with the passing traffic from east to west, but also for people as a midway between Scotland and the South. WHAT’S NEXT FOR YOUR CLUB? The golf club is always trying to entice new guests, whilst looking after its members. The social side of our lives have taken a hit with social distancing and other measures in place, so the clubhouse and its staff have suffered. There are not many places in the town with free parking, fabulous coffee, delicious food and a view like ours! We want to be known for being a friendly venue for non-golfers as a bar/restaurant, as well as our dog walking friends and ramblers. We look at the club as being an extension of the town’s attractions and love to see new faces, as well as the familiar ones.

Following his father’s sudden death, Simon Whitaker embraced the pain of a life-changing event and harnessed it into a source of creativity to follow his dad’s inherent passion for fashion and business In a little over five years, Master Debonair has raked in two highly-prestigious Drapers Awards, rocketed to the forefront of independent menswear and is now on the brink of opening a fourth UK store in Sunderland. Matthew Thomas checks in with the Master Debonair himself, Simon Whitaker, to find out more about his brand new store, improving men's mental health through fashion and helping to shape the future of Sunderland… When did the enthusiasm for fashion begin? Where do I start? I’m 48 years old, Sunderland born and I have worked many jobs, in many industries for 15 years. I worked my way up to a very senior sales role before I set up Master Debonair. I’m so passionate about the product, retail sector, store and online experience. Where did the inspiration come from for Master Debonair? I get asked this a lot and it’s not Peaky Blinders! I lost my Dad suddenly in November 2016 and it made me realise

that I needed to take it easy after working flat out on my career for way too long and to stop neglecting myself and family. When I was getting my outfit ready for dad’s funeral, I wanted a different tie clip, lapel pin and pocket square, but couldn’t find anything special. My dad was such a great dresser and loved his clothes. I think that’s where my passion for clothes came from. I came away from his funeral and wondered if I could set up a menswear company selling the things I couldn’t find anywhere. Just small accessories. It began to snowball as I bought accessories from the Far East, set up a Facebook page and then found a few suit suppliers, shoes and shirts. From there, I built our first website from scratch, showcased style icons we liked on Facebook and it went nuts! We officially launched online in late February 2016 and managed to build a great following on Facebook very quickly. How is Master Debonair different from other menswear brands? I’d say we are more focused on the experience instore and online first. The product is a given as I have an expectation that I should always buy well for the store.
We put so much effort into making our shops a relaxed environment for visitors and I feel this translates on to our social channels. I much prefer the ‘less-polished’ approach and what you see is what you get with us. We don’t take ourselves too seriously and want to have fun with Master Debonair - both instore and online. How do you source new styles and ranges? I’m currently trying to buy new styles following the pandemic. I look at refreshing our collections every three months but
ensure we have a core collection throughout the year. Launching the casualwear aspect of Master Debonair in 2019 gave us the twist to Master Debonair that we were searching for, rather than just out and out formalwear. I love the smart-casual look of a shirt, waistcoat, blazer, jeans and brogues it’s timeless. When I buy new products I tend to buy looks, rather than individual products. When I see products for new seasons I can pull them out and then create looks

EFFORTLESS STYLE from the pieces I like - I find it easier to shop that way myself, and our customers like that about us. It seems that more and more gentlemen are taking pride in their clothing and appearance now. Do you feel that the perception of menswear and self-care has changed over the years? Yes massively! The fact that skin products and men’s makeup is a huge market tells you that. What I love about our offering is that customers walk into the store feeling not-so-confident and walk out feeling incredible in their new outfits. Our customers vary massively and each individual may have a slightly different way of wearing our products or styling them, but they all want to feel great in what they wear. Men seem more at ease talking about clothes and their personal appearance now, and I love that. The brand is founded on a concept of ‘effortlessly stylish’ clothing – talk a bit about what that means to you? It’s a funny one. I always say I get dressed in the dark, but what I mean by that is I can pull an outfit together in minutes. It’s effortless and based around a lot of customer feedback. I feel sometimes that if you put loads of thought into an outfit, you can look too polished. That’s ok for some but I love the crossover of casual and formal wear, tearing up the rule book and going with whatever it is you're feeling. I want to make it easy for the men and women who shop with us to look and most importantly, feel, great. Master Debonair has won a raft of awards since its inception, is there a particular achievement that stands out or means more than others? This is a tough question. The two, highly-coveted Drapers Awards were huge, milestone achievements for us. To be recognised in your own industry is a big one for us - to win best new independent within the first year and then to win best retailer in 2019 was totally unexpected. I get goosebumps just talking about it! It’s not the fact that we got a shiny award, it’s a panel of judges who are experts in the retail sector that made this decision. A day in the life… My world is a whirlwind journey at the minute. I wake up most mornings no later than 6am and I go to personal training two mornings a week. I also enjoy going for a bike ride on Sundays. I’ve learnt ‘me’ time is very important and I treasure it.
I start my working week on a Sunday at 5pm once our shops close, preparing for a Monday. I don’t get Monday blues! My role is product selection, weekly purchasing, social media content creation, wandering round the city looking at new ideas, drinking at least 10 double espressos a day and overseeing my management team. It’s a lot but I love every part of it. PR is a big thing for me so I like to meet other businesses, speak to our customers on social media (I reply to most things eventually!) and try new places for coffee and cheesecake. Let’s talk about your new store in Sunderland. What was it that made Mackie’s Corner such an attractive location to open a new store? I looked at Mackie’s Corner over two years ago. There were hardly any other businesses in the building and it was incredibly derelict. Despite this, my gut feeling as soon as I walked through the door was good. However, with a new store in Chesterfield on the horizon and the reopening of our shop in London, these two particular projects became the focal point of Master Debonair for a period of time. In December last year, I decided to walk over and have another look and I just knew Master Debonair had to be in Mackie’s Corner. Plus, with being Sunderland born and bred, I knew this was an opportunity

I see local coffee shops in Sunderland promoting other coffee shops - I’ve travelled all over and never seen this before. Did you discover any hidden gems in the building during the renovation? We’ve unearthed so many incredible things during the renovation. Uncovering the original steel staircase is the biggest find which is being carefully restored to its former glory. We’ve come across all kinds of old receipts, newspapers from the 60s, a tin of peas, cigarette boxes and so on. We’re going to frame and display them all around the shop. There’s even an old stove in the basement which is going to be part of our new photography studio.

What can people expect when walking through the doors at Master Debonair? A warm welcome, glass of water, hot brew or beer. Plus a very, very relaxed environment. There’ll be chairs where you can hang out and no pushy sales. We are here to help. Our shops were designed to give a feel of a hotel lounge or bar, and we want visitors to stay as long as they like. We don’t expect people to walk out after making a purchase. What does the rest of 2021 hold for Master Debonair? We are finalising the new Sunderland shop so that’s pretty much the main priority. We’re moving our Head Office here too so it’s a big job, but incredibly exciting. We chat to the owner of Headlam Hall to get the lowdown on running a luxury hotel and find out his luxe things in life... GETTING TO KNOW YOU >> Name: Thomas Robinson Job title? I’m the owner/director of Headlam Hall Country Hotel, Spa & Golf and the Rose & Crown at Romaldkirk Where is home? Headlam, Co Durham Three reasons you love where you live? The open countryside, the peacefulness and being close to my family and friends THE DAY JOB >> What do you do for a living? I oversee the running and up-keep of both Headlam Hall and the Rose & Crown. A day in the life of you? I rise at about 7am and make the 200m commute across the village green to Headlam Hall for a quick walk around, a nice coffee from the spa brasserie and into my office to check emails and happenings for the day. I have certain routine administrative jobs to do but also a lot of variation with regular meetings, be it with members of our own management team or for marketing or maintenance matters. With the Hall being a 350 year old property in fairly extensive grounds, there is more often than not something to repair or replace and keeping it up to scratch is a top priority. It is a pretty, 15 mile drive up Teesdale to Romaldkirk where we have the Rose & Crown and I probably visit two or three times a week. It is very capably run by my wife Cheryl and a great team of staff, so generally I just sort the marketing and
maintenance. In the evening I normally go for a run around the country lanes or if the weather is bad I head into the gym at our spa. Any upcoming or on-going projects we should know about? I think there is a risk in a business like ours to assume that once you have a successful formula then it will continue to work forever. Things change and never more so than in the last 18 months. I had already started to reconsider the direction of Headlam Hall before the pandemic turned everything on its head. The forced closures gave me a lot of time to think about the business and what we want to do in the future. I think Headlam Hall is a perfect country retreat; a building full of character and charm, tranquil gardens and just a very relaxed atmosphere so I would like to focus on that, more than the larger events. I would like to expand our spa offering with additional outdoor elements so have plans brewing for that. The other area that I am keen to extend is our kitchen garden. As a farming family this has always been a part of what we do but I think that this can be a more significant factor in our food offering, which is very much about locality and provenance. What does downtime mean to you? Both Cheryl and I enjoy the great outdoors and walking with our two dogs, so living in the Durham dales is ideal. Holidays abroad normally follow this theme and we love the Alps for skiing in winter and equally for hiking in the summer. I also have a big passion for cars and motorbikes and am lucky to own a handful of classics ranging in age from 1951 to 1976. As you can imagine, there is always a job to do in the garage. LESSONS IN LIFE >> What did you want to be when you were growing up? My childhood dream when I was young was to be a racing driver. Growing up on a farm meant that there were plenty of things to drive and by the age of eight I was

fortunate to have an old Mini to race around the fields. In the real world farming was an option but my elder brother, Simon, had already taken this route. My parents had bought Headlam Hall for the surrounding farmland but had started to develop it into a popular country hotel with the help of my elder sister, Clare. I took a gap year working at a farm in Texas and travelling the USA before returning to do a degree in Economics, but still had not set my mind on a career. I back-packed around the world with friends and on my return the hotel business was really taking off so I joined the team, initially looking after maintenance as I was never a natural front house person. What is the most important lesson life has taught you? If you are undecided about something, be that in business or your personal life, go with your instinct and err on the side of adventure. Although it can be easier and safer to pass on an opportunity, you may have missed something great. Granted, you may also have avoided a complete disaster but at least you had a go! What is your greatest fear? Mankind destroying the natural world. Which living person do you most admire most and why? The Queen because she is just so steadfast in her role and has been a constant in an ever changing world. LIVING LUXE >> What is top of your bucket list? A great adventure on another continent. What is your most treasured possession? As a car enthusiast my 1976 Porsche 911 Carrera 3.0. I have had it for ten years now and used it for both hill climbs and European road trips. What does the weekend mean to you? Getting outdoors to pursue hobbies, meeting friends and a couple of beers or glasses of wine in the evening.
A memorable holiday? About a year before we got married Cheryl and I had a fantastic driving holiday in Europe. We left from Newcastle on the overnight ferry to Amsterdam and from there drove down to the attractive old city of Strasbourg for the night. We then headed down into the Austrian Alps for a night at Lech where we had stayed previously for a skiing holiday. It is great to see the green Alpine meadows in contrast to the snow covered winter season. From there we drove into Switzerland with a lunch stop at St Moritz (the lunch was not as fancy as it sounds) and then onto Lake Como in Italy. We stayed a few nights in a picture perfect little town on the shore and hired a little boat to explore the lake. After that we drove across southern France and the Massif Central with overnight stops before reaching the Dordogne where we stayed at a fabulous Chateau hotel and golf course that was a regular haunt of my parents. From there we went to meet friends at their holiday home nearby for a couple of days before driving back up to the UK. Who would be your top three dinner guests? I am going to assume that I can transcend time so I will say James Hunt, Billy Connelly and the Queen. What could possibly go wrong? The last place you ate? In the Library Bar at Headlam Hall for a relaxed meal. The last book you read? Stephen King’s 11.22.63 The last album you listened to? My favourite artist is Chris Cornell so I listen to his music most days. The last TV series you watched? We watched the Nashville series through lockdown which was great as I have always liked country music. Three luxe things in life? My wife, dogs and an old car on an open road.
