ANGEL WINGS ŽAGARĖLIAI For 25 angel wings: 50 g butter • 300 g flour • 3 egg yolks • 100 g sour cream • 1 grated lemon zest • 2 tablespoons lemon juice • 2 tablespoons vodka • a pinch of salt • 500 ml oil for deep-frying • powdered sugar for decoration Whisk the soft butter together with the egg yolks, sour cream, several tablespoons of vodka and lemon juice. Finely grate the zest of one lemon into the mixture. Mix flour and salt into your mixture and knead into a firm dough. While kneading, pull the dough apart with your hands to make it more elastic. When done, cover the dough with plastic wrap. Cut the dough into several pieces and roll them until they are about 2-3 mm thick. To make flower-shaped angel wings, pick two round shapes of different sizes. You could

use two different-sized round glasses for this step. Cut equal amounts of smaller and larger circles from the dough. Make 5-6 shallow cuts towards the center of each circle. Rub the centers of the larger circles with egg white and press the smaller circles on top of them. Heat the oil up to 170-190 °C or up to a temperature at which a few drops of water would evaporate when dropped into it. In correctly heated oil, the angel wings should fry at the bottom of the pot. When done cooking, they will rise from the bottom. Once one side is cooked, turn them over. Place the finished angel wings on a paper towel. Once the angel wings cool off, sprinkle them with powdered sugar.

CURD DONUTS For 30 small curd donuts: 400 g curd • 200 g flour • 50 g sugar • 1 teaspoon baking powder • 2 eggs • 1 teaspoon vanilla sugar • 30 fresh cranberries • 500 ml oil for deep-frying • powdered sugar for decoration Strain the curd through a sieve, add eggs, pour in both the regular and vanilla sugars, and mix well. Pour fl our into the curd mass and knead into a stiff dough. From this dough, you should be able to make 30-35 small donuts. When making donuts, moisten your hands with water, press one big or a few smaller cranberries into each donut, and roll them into small balls between your hands. Heat the oil up to 180 °C. Depending on the size of the pot, deep-fry 4-6 donuts at a time so that they can fry

freely without touching each other. It takes about 5 minutes on average for small donuts to fry completely on both sides. Leave the fried donuts to cool on a paper towel so that it can absorb the excess oil. Once the donuts are cool, sprinkle them with powdered sugar.
