Salado: the Valdobbiadene salami reigns supreme on the table. It is prepared with choice pure fatless lean pork, ground with a medium plate and stuffed into natural intestine casings. It is available sweet, with salt and pepper, or flavored with fresh garlic, in 700-800 g pieces. (SADEST1) Soppressa con filetto with tenderloin is a top quality dressed pork product. It is prepared like the normal Soppressa except for the insertion of a whole pork tenderloin, which has been previously left in brine, aromatized with pepper, spices and infused in Prosecco di Cartizze wine. The product is available in packs from 1,8 to 2,4 kg. (SADEST2) Soppressa Valdobbiadene is made from selected shoulder, leg, belly and collar, mincing the meat with a medium plate. Seasoned with salt, pepper and Prosecco wine, the meat paste is stuffed into natural intestine casings and the resulting Soppressa is hand tied with string.
