Salado: the Valdobbiadene salami reigns supreme on the table. It is prepared with choice pure fatless lean pork, ground with a medium plate and stuffed into natural intestine casings. It is available sweet, with salt and pepper, or flavored with fresh garlic, in 700-800 g pieces. (SADEST1) Soppressa con filetto with tenderloin is a top quality dressed pork product. It is prepared like the normal Soppressa except for the insertion of a whole pork tenderloin, which has been previously left in brine, aromatized with pepper, spices and infused in Prosecco di Cartizze wine.
