Commodore’s Message

The Bridge Commodore Denis Martinet

At the time of writing, China Coast Regatta has been delayed by a week thanks to Tropical Storm Lionrock followed closely by Tropical Cyclone Kompasu coming to town. It’s supposed to be a brief visit so sailors should be out on the water for the rescheduled days of 15 to 17 October. A full write-up will be in the next issue to report on what could turn out to be quite an epic race judging by the northeast monsoon forecasts! Hang on to your hats!

會長孟憲庭

November is the month where we’re busy running around; around the Island of Hong Kong that is! This iconic sailing race has been around (sic) since 1983 and sees more than 1,500 sailors in over 250 boats taking part in the 26-mile circumnavigation of our beautiful island to starboard, with the usual pitfalls of getting out of the harbour first and avoiding the hole that traditionally appears at Cyberport. This year’s Sun Hung Kai & Co Around the Island Race, scheduled on 14 November, is not to be missed. Unfortunately I will have to give it a miss, but for a very good reason. 14 November is also Remembrance Day and I will be representing the Club at the Cenotaph. It is an important celebration, one during which we remember the men and women who laid down their lives for their countries. This is why we choose to wear a red poppy during that month. As ever you can buy them at reception and wear them with pride. The story of why a poppy will be for another day! This November we shall see not just one around the island race, but a total of three! Indeed the outriggers and coastal rowing boats will each

undergo their respective merry go-round on 20 and 21 November, thanks to title sponsor Mercedes-Benz. Remember there are records galore to beat, not least the famous Cariad Trophy held by Nick Maloney on multihull Aberdeen Extreme 40 in just 2 hours 13 minutes and 11 seconds. Frank Pong and his legendary Jelik hold the monohull record at 2 hours 29 minutes and 29 seconds. What a treat it would be if one of these were to be bested this year! What a way to welcome and thank our new sponsors for their support of these spectacular events. And we’re still going round, but this time it is a circum-swimming we are talking about. The St. Joseph’s College Green & White Swimathon will take place on 13 November. RHKYC member Eugene Wong is one of the organisers and will follow Hong Kong Olympian Alex Fong Lik-sun who will lead fellow St Joseph’s College alumni in this 45-kilometre relay swim around Hong Kong Island. We are very supportive and grateful for this event as some of the funds raised will be donated to our very own RHKYC Charity Foundation. Speaking of our Charity Foundation, you will see that it has introduced a new mascot in the shape of a turtle. Made of recycled material and hiding a reusable bag under its shell, it can be picked up for a mere $98 in various places at the Club. The purpose, or purpoise could you say, is to generate funds for the numerous activities the charity supports. So pick up your purpoise! You know your money will be well utilised, as was evident last month with the Love21 initiative – again a great thank you to all involved, organisers and volunteers, parents and children! Finally, let us conclude with a worthy initiative from our Young Members Committee who put together the inaugural Alma Mater Race on 19 December and so far, we’ve got quite the entry list. 27 teams so far have registered to fight for the glory of their alma mater with classmates from school, college or university. Fantastic action in perspective and what fun! Possibly the making of a classic! After all that’s what counts – have fun and enjoy, together!

In October we tested the appetite to have our wine and Champagne dinners operate under Type D and I’m happy to say that members seized the opportunity to maximise the additional capacity. As a result, we have taken the decision that all wine and Champagne dinners hosted in the Compass Room going forward will similarly be held under Type D, that means a minimum of two thirds of people at one table must have had at least one dose of a vaccine, but in so doing it allows us to return to full capacity and maximise the number of members we are able to accommodate.

to accompany the wonderful wines of the Rhone, Crozes-Hermitage, and Saint Joseph. On 18 November we bring you the Moët & Chandon Champagne Dinner. Moët et Chandon was established in 1743 and were the first winemaker in Champagne to exclusively produce sparkling wine. Following the introduction of the concept of a vintage champagne in 1840, Moët marketed its first vintage in 1842. Their best-selling brand, Brut Imperial, was introduced in the 1860s. This is always one of the most popular wine dinners of the year so please ensure to book early to avoid disappointment. For something different we have a Viking BBQ and Wine Dinner at Middle Island on 12 December. It should be a fun night for the carnivores amongst us with myriad unlimited meaty dishes and grills served family style, but don’t worry, there will be plenty of seafood and there’s free flow house wines and soft drinks too! Feel free to really enter into the spirit of the evening and dust off your Viking costume! Thanksgiving is on Thursday 25 November and we have you covered! From a set dinner in the Compass Room to a buffet dinner in the Bistro or set menus at Middle Island and Shelter Cove. Or if you want to celebrate at home, we can provide a roast turkey and all the traditional trimmings, that you just have to pick up and serve!

Early on this month we have the Delas Frères Wine Dinner on 4 November. Maison Delas Frères is situated in the Rhône Valley in Southern France and has a history dating back to 1835. 1996 saw new management take over with a programme to maximise the potential of this great region. Chef Paul and his team have devised a fantastic menu

As you will recall, the RHKYC Charity Foundation held a mascot design competition earlier in the year. We are very happy that these turtle plush toys with their own shopping bag are now available in the Ship Shop and other outlets at only $98 each, with 100% of the sales price going directly to the Foundation. With Christmas coming up these little cuddly turtles are the perfect stocking filler ever, whilst at the same time promoting the Club’s sustainability vision too!

Well, after a very busy summer, but a relatively quiet one weather wise, we had two Typhoon 8s in the space of seven days in the middle of October. Thankfully the Club’s facilities did not suffer any damage and we were able to reschedule the premier big boat regatta, the China Coast Regatta, to the following week. Here’s hoping that we will now finally move into the cooler, drier weather that makes this time of year such a great time to be enjoying the club’s many and varied outdoor venues.

With two typhoons lingering in the region, light winds had been predicted for the weekend of 11 and 12 September for the running of the Autumn Regatta Sponsored by HSBC Expat. Luckily for all, decent breeze held in and the curtain raiser event for the Club’s 2021-2022 sailing season successfully kicked off. 10

ith entry open to all of Hong Kong’s keelboats, the regatta attracted more than 600 sailors across seven one-design classes, Sportsboats and the Big Boats, with 109 boats gathering on a hot and hazy afternoon for the start of racing in an 8 to 10kts Westerly. Race Officer Barry Truhol opted for a start in Hung Hom, sending the fleet up Victoria Harbour before the yachts hoisted their kites, offering a spectacular view to those watching on from both Hong Kong Island and Kowloon. The biggest fleet on the start line, as usual, were the Etchells class with a turnout of 22 boats. NOVEMBER 2021 AHOY! |

Feature | Autumn Regatta Sponsored by HSBC Expat Barry Truhol admitted he was surprised by the wind conditions on the first day “in the last three days, Hong Kong has been sandwiched between two typhoons, we were expecting a nightmare for the wind, with the forecast for zero wind even this morning. But at 1000hrs, we had a 6 to 8kts westerly breeze which remained stable for the day allowing us to run westerly courses. The racing has been close with the fleets not spread out as much as the easterly courses, so it was a good day.” Hong Kong is one of the few places featuring four TP52s racing regularly in close confined waters. set, the beat up to the Wan Chai Convention Centre showcased ‘grand prix’ style close racing in impressive style, as the four TP52s sailed up through Victoria Harbour past the Kellett Island Clubhouse and on towards the newly-opened Wanchai Promenade, much to the delight of the gathering crowd of onlookers at both the Clubhouse and the foreshore alike. The first day of racing was also designated as the Bart’s Bash event – “the Largest Sailing Event in the World”. Bart’s Bash is a global charity fund-raising sailing race taking place at more than 1000 yacht clubs across 63 countries over the same weekend.

With the subsiding air of the super typhoon, extremely hot and hazy weather persisted into the second day of the Autumn Regatta Sponsored by HSBC Expat. The westerly breeze dropped down to 6 to 8 kts and all classes took part in two races with the start positioned off Kowloon Bay. The courses covered the Victoria Harbour area mostly between North Point and Kowloon Bay. Although the wind weakened to 4kts near Kowloon Bay at noon, the breeze held in at western part of the course, enabling all fleets to complete their full course.

After three races, the Big Boat Division 1 saw Marcel/ Liedts’ Ker 46 Zannekin tied with Shawn Kang’s TP 52 Alpha+ on 5 points with Zannekin taking the regatta overall on count back. In Division 2, James Verner’s Nightshift took the win with one bullet in Race 2 and in Division 3, it was Dean Chisholm’s Hanse 40 Darling taking the overall win. In the biggest fleet, Etchells, Jamie Boag’s Noddy took two bullets out of three races, anointing them as overall winner in their class. J/80 Footloose, Dragon Zephyr, Pandora Solstice, Ruffian Helios and Flying Fifteen Niffty all held on to their first day leads and took 1st place in their respective classes. All in all, it was a wonderful start to the 2021-2022 season with over 100 boats participating. We must extend our greatest thanks to our sponsors for their continued support, as it is with their support that we continue to grow and have such incredible events. fter waiting for more than a year since my first selection to represent Hong Kong at the World Championships in 2020 (which unfortunately had to be cancelled due to COVID-19), we were so fortunate to finally compete in 2021. The event took place at Lake Garda, Italy from 30 June to 10 July.

helped us prepare for the event through taking part in 2 Pre-worlds regatta’s and arranged daily training clinic’s with other countries and some amazing sailors and coaches such as Marco Gradoni (3x world Optimist Champion), Sven Stadel and Mauro Berteotti to compliment his own coaching skills.

Despite the pandemic, quarantine and the obstacles around international travel, five sailors qualified to represent Hong Kong at the 2021 Optimist world Championships at Fraglia Vela Riva in Riva del Garda at the northern end of the amazing Lake Garda, Trentino, Italy. I was the only sailor from Royal Hong Kong Yacht Club and the only female sailor on the team. The other sailors were Peter Jessop and Seb Van Ommeren from the Hebe Haven Yacht Club, Ethan Kong and Vernon Ha from the Aberdeen Boat Club, we were able to get vaccinated and travel to Italy in order to represent Hong Kong as the 2021 Optimist Sailing Team.

The first 3 days of the Championships was the some of the most emotional and competitive sailing I have ever done, with the 255 boats being broken into 4 flights, I quickly learnt that what I would usually call a keeper being a top 20 result was not going to be enough to make Gold Fleet which was my goal, after day 1 with a 19 and a 27th I found myself in 104th, with some strong races over the next two days I was still in contention for Gold Fleet but on the last race of day 3 most of the Hong Team had really bad starts and in turn we all had another bad results and with only 1 drop available it meant we had to carry a bad race and we all missed Gold Fleet.

We were very lucky to be coached by Bird Bhanubandh (“Bird”) from Thailand who had been at Lake Garda for a few months already with some of the Thai sailors and already knew the conditions well and

Team Racing took place on Day Four and Day Five of the Optimist World Championships, however we did not make it through to the second day

After losing both races on Day 4, it meant Day 5 was our only rest day. We were supposed to go out on the water and watch the other team’s race, however the race officials would not allow us to do that, even if we took a private RIB, due to Covid restrictions. As an alternative, we took the RIB out and went to this amazing waterfall, where all the Glacier water would go into the lake, making the water very cold. We also went exploring and did a lot of swimming. It was a great day and by the next day we were ready to win whatever fleet we made. During the last few days, it all came down to final fleet racing. It was our last chance to get a better result. After the qualifying races, Peter

qualified for the silver fleet, Seb, Ethan, and I qualified for the bronze fleet, and Vernon qualified for the emerald fleet. On the first day of the finals, it was typical Garda weather, with the Ora wind coming through by noon, choppy waves, and strong wind. By this stage, we were familiar with these conditions and our races were satisfactory. We had an idea of where we were in the fleet and hoped to improve our results. However, on the second day, huge dark clouds were forming when we got to the club, scattered around the whole lake from North to South. A massive storm was forecasted to arrive at 5 pm, which limited the races we could do due to safety protocols. The race committee was planning for three races to cover up for the previous day’s minimal races. However, the huge storm from the last day caused the Ora wind to be blocked once again, making the wind die down. After some long hours of waiting, the wind finally picked up, and we were able to get one more race in; however, due to the restriction of time and “smart” decisions by the race committee, we did not do the three races planned. Our results on the Final day were above average, and I managed to win the last race of the event in bronze fleet finishing the regatta on a high note.

and our races were very close to our opponents. The first race we went against Argentina. We almost beat them but due to a couple penalties on the last upwind we did not get the win. The loss motivated us to do better and make sure that we got less penalties while still getting penalties on the other teams. Due to the fact we lost against Argentina we were going to face Bermuda. Off the start we got a couple of good penalties, but the second upwind Bermuda managed to give us a few more penalties, which led to another loss, but we were still happy because we gave it our best shot.

At the closing ceremony we were able to trade our team kits and socialize with other teams from different countries. It was a great way to end the event, but eventually, good times had to come to an end, and we had to return to Hong Kong for 14 days quarantine.

Sailing

In Summary the conditions were very challenging in Lake Garda. It took a lot of getting used to because in Hong Kong we do not get such strong winds so often. The level of the competition was brutal, and the start was really challenging everybody would barge into you, shouting and screaming at you and trying to intimidate and scare you. Lake Garda is famous for the Ora and Peler wind, which is our favourite wind, it blows from the north, starts at around six in the morning every day, and can blow anywhere from 6 to 25 knots with shifty conditions. The waves are big for a lake. We competed aggressively on the water but, once ashore but once ashore we were best mates with our teammates and other competitors, and we socialized with people and friends from all over the world. Our favourite part was visiting the waterfall which was beautiful, and the water was very refreshing. We rented bikes, which gave us some freedom to explore, and we cycled to dinner most nights. It was rewarding to learn and work together to become a united team.

I look back on the disappointing races as learning opportunities, and the spectacular races with pride. In the end, I did not manage to achieve my main goal, but I have learnt a lot and want to come back stronger next time. We had an amazing closing ceremony, sadly I had to say bye to all of my new friends. Looking back at the event I wish I was more physically fit and had of been able to come earlier to get used to the strong conditions and train more with other sailors and coaches from the other Countries. I am so thankful that I was able to go to Lake Garda. On behalf of the whole team, I want to say a big thanks to our coach Bird who coached and guided us through tough times and for all the high moments. He always gave us top tips and he was always very calm and chilled if we had a bad race. Thanks, James for being a great team leader, and thanks for supporting and helping us. Thank you, parents, for bringing us and supporting us. Big thanks J sail for all of your support over the past year and at the event this year, to Hong Kong Sailing Federation and Hong Kong Optimist Dinghy Association. The World Championship was an incredible experience and one I will never forget.

How It Started When I was first connected to the Love 21 Foundation in late June this year, I had assumed we would be planning a half-day out on the water for Love 21, a charity dedicated to empowering the Down syndrome (DS) and autistic community in Hong Kong. Since the RHKYC Charity Foundation works with local charities to provide on-water activities for those less fortunate than ourselves (amongst other initiatives undertaken by the Foundation), I thought it would be a good challenge to see if the Club and the Charity Foundation might be able to recruit enough volunteers to organize one dragon boat session for interested Love 21 members. It turned out that Love 21 Foundation’s Founder and CEO Jeff Rotmeyer’s plan was slightly more ambitious – he was looking for a way to put together a dragon boat team that

comprised of Love 21 members that could compete in a local race. I had my doubts – in past years it has taken two or three planning sessions and quite a few volunteers and club staff to organize a paddling and sailing day out at Middle Island for youth from underprivileged school districts – would we have the resources necessary to build a dragon boat programme for DS and autistic youth, especially out at Middle Island, where depending on the tide it can be extremely tricky to get on and off the sampan, and where balance in a dragon boat is extremely important if we want to avoid capsizing? How many volunteers would we need, and how many of us would have experience working with DS and autistic individuals? I told Jeff I would need to have a think about it and suggested doing a trial session out of Middle Island sometime in August with a potential to build a programme next year if the trial went well.

How It Went As usual, I was unnecessarily worried. Within a matter of weeks, due to the full support of Nick Crabb and Gianni Aprea, we had a training programme and schedule, coaching, a 26 September local race, as well as all safety elements, sorted. As a result of the generosity of the Charity Foundation, costs for the Love 21 team’s race jerseys, coaching costs, and a “graduation lunch,” were covered. Thanks to the marine department of the Club and our coxswains, as well as our friends across Deep Water Bay at Victoria Recreation Club (VRC), safe access to Middle Island via the VRC pontoon and the larger sampan was granted. Most importantly, because of the love and willingness of the Royal X team to share their

Building an Inclusive Paddle Community: RHKYC Charity Foundation x Love 21 Dragon Boat Training Programme

Rowing free time with the larger community, we had approximately thirty volunteers show up every Sunday morning, rain or shine, to “buddy” up alongside a Love 21 member to paddle or provide on- and off-water logistical support. The Club’s Royal X dragon boat coaches, steers and paddlers showed extraordinary patience in working with their buddies on boat balance, paddle technique and just generally how to have a fun time on the water. Even after the 26 September local race was cancelled, the Royal X rallied to organize an internal scrimmage for Love 21 and our juniors’ teams, so that they could get a sense of what a race could feel like. It has been nothing short of amazing to see the progress of the last seven weeks – we have

witnessed Love 21 paddlers who went from being too overwhelmed to paddle and needing to be hugged by their buddies the entire session, to smiling and getting so competitive on the water they refused to stop paddling unless their team was winning (and therefore would not want practice to end unless their team was winning!). Judged by the highfives and hugs exchanged by the Love 21 paddlers and their buddies by the time of the scrimmage, and the pride and smiles on their faces when they received the medals from their coach and the completion certificates from the Commodore, this trial run to build an inclusive dragon boat team has been an astounding success. In fact, the feedback from the families have been outstanding as well – they are already asking when the next

programme will be held and whether they can begin enrolling now! This initiative has had an immense impact on all of us who volunteered – we’ve all learned a tremendous amount and had a really fun time, and we look forward to hopefully being able to organize more inclusive on-water training programmes for the larger Hong Kong community with the support of more Club members! The Royal X / Love 21 Crew W O RD S: RYA N F UN G

what was supposed to be an upcoming race at Lamma on 26 September, which turned into a scrimmage at Middle Island once the Lamma 500 races were cancelled. During each training session, Royal X volunteers would help to get the boat ready with all the necessary equipment needed for the training ahead of time, to ensure all youth participants from Love 21 have a great training experience. When working with Love 21 participants, the Royal X team exercised extra care by repeating the Coaches’ verbal instructions, supplemented with gestures and demonstrations to facilitate the trainings. One-on-one encouragements and friendliness were often displayed by the volunteers in between sets of exercises,

making the participants feel welcomed under the new surroundings and people. Despite the heat, heavy wind, and rain during some of the training sessions, the new paddlers persevered through adversity to make the most out of each training session and improved on their paddling techniques. In the final weeks’ training, the coaches focused on doing a few scrimmages against one another to get a sense of the actual race. Under the guidance and support given, the participants were able to follow the instructions from their respective coaches without getting distracted by other boats. On the day of the race at Middle Island, the Love 21 paddlers and the Royal X team

followed their assigned line-ups and competed against each other. Everyone was concentrated and in-sync, applying all the techniques they have learned from start to finish. At the end of the race, the team felt accomplished and excited to share the moment with their partners via photos and high-fives. This has been a great experience for the Royal X team to partner with Love 21 to bring a group of Down syndrome and autistic paddlers onto a dragon boat race. Throughout the trainings, the group developed strong bonds amongst each other, where trust, joy, laughter, and team spirit were displayed across all practices. This is more than just a race, but a way for the Royal X team to connect and give back to the Hong Kong community. NOVEMBER 2021 AHOY! |

ncouraging youth to paddle has always been a strong directive and passion of mine. Thankfully the club, along with a few dedicated members, share the same commitment towards encouraging a younger generation to get out on the water. Since August, 18 dedicated young paddlers (aged 12 to 17) have been training every Saturday to learn the sport of dragon boat towards competing in a local race scheduled for September. Sadly, this race did not go ahead. Despite the unfortunate news I was able to coordinate an invitational training session with the U18 Lamma Dragons on Middle Island. Our friends from Lamma were just as keen to come out and enjoy some fierce time on the water against the Royal X Juniors.

The two teams battled it out over 3 races (350 m distance) that again confirmed the Lamma Island community’s overall depth and strength in youth paddling winning all three races. Then, to symbolise the fun and encouraging spirit of the day both teams enjoyed a tug-of-war by the beach with mixed teams. The morning generated so much laughter and competitiveness; a love of being on the water and paddling, many new friendships, and hopefully the continued growth of youth in all paddle sports.

VRC Race Series: THINK Kamanu ‘Pray for Surf’ Downwind Race 3 W O RD S: TO M A RMIST E A D

O

n Friday the 1 October, the Victoria Recreation Club (VRC) held its monthly race series of which I participated. This is a regular series in which paddlers from across Hong Kong compete and by the end of the year are ranked overall based on placements from each race in the series. On Friday 1 October was the third installment of the THINK Kamanu ‘Pray for Surf Downwind Race’ which is typically a downwind race usually starting in Shek O and finishing at the VRC. Unfortunately, our prayers were not answered as there was no wind, let alone any surf. Now usually in this situation the race would be postponed to a later date however with The Bays 2021 taking place the following Sunday, the race was kept on schedule with a different course, VRC to Hobie Cat Beach. This allowed paddlers to move their boats in preparation for The Bays that would start from Stanley Main Beach a couple of days later. On the day of the ‘downwind race’ race, it was a hot, smokey day and the air pollution was really bad. I personally found this really challenging as the conditions meant that we were all at imminent risk of having heatstroke. The pollution also made it hard to see the headlands between each straight which made the race feel like it went on forever. I was really happy to have finished though as it was definitely one of the more challenging races, I’ve competed in.

Fire on Board

PART 3

Marine We have mentioned in previous articles how fires can start and how rapidly fibreglass burns. If members are unfortunate enough to have a fire on board their boat what can they do? Fibreglass fires spread very rapidly and give off toxic smoke. This does not leave much time to fight a fire or to escape from a cabin if the fire has already taken hold. Obviously if the fire is small then it can be tackled with the boats own fire fighting equipment. A fire blanket should be used for fires on the galley stove. A fire extinguisher for other fires. And in desperation a bucket, or many, with sea water. Which leads to the questions?

ow easy is it to get to your extinguisher? Or is it in the bottom of a locker? The location of a fire extinguisher can have a big impact on the outcome of a boat fire. Has it been tested yearly? Do you know how to use it? Are your crew and guests aware of where the fire fighting equipment is kept? Do you think that the extinguisher you have is suitable in size? Just because the Marine Department say that you should have two 2.5 kg dry powder extinguishers on board, will that be enough? A small extinguisher will only operate for 10 to 20 seconds! You are supposed to have a fire bucket on board. Does it have a lanyard that will allow it to reach the sea? Is it easy to get to?

Often there is not much that can be done due to the smoke except get off the boat. Are the lifejackets and grab bag easy to get to? If the fire has taken hold and you are inside with the fire between you and the hatch or companionway what can you do? Its easier said than done but you should try and get a wet cloth to place around your head and over your mouth and nose. Might not sound hygienic but you can always get water from the head if the water system if off. Get your head and body right down on the cabin sole, as the smoke will not be quite so bad there and there will be more oxygen, and get out as quick as you can. Again easier said than done but it may help to save your life. What happens next is wholly dependant on where the boat is. Unless you are out at sea the first thing to do it to raise the alarm by calling 999. If in a marina then set off the fire alarm as well, rouse anyone on neighbouring boats and alert the marina staff or guard if possible. Disconnect the shore power if it is plugged in. Move boats that are berthed alongside the boat on fire as the fire will spread rapidly and get out of control. If there is firefighting equipment on the dock you could try to fight the fire but this is really better to be left to the Fire Services. Cooking gas cylinders and petrol on board, whether in a can or inside an outboard engine, are a particular danger on a burning boat. If the fire has taken control then you should clear the area in case these explode. There are so many scenarios that it is not possible to go into each one. If at anchor or at sea then you must be prepared to abandon ship. This is something that everyone should have planed for and so we will not go into further details. There are a few other precautions that can be taken on board. Fit a smoke detector so that you can sleep easy when at anchor and no one is on watch. Install a remote shut off for the cooking gas and have a gas and CO2 detector on board. This will detect leaking cooking gas in the bilge, where it will gather, and CO2 from a leaking exhaust system. Members may also wish to check their Insurance Policy to understand what is and what is not covered in the event of a fire. Happy Boating.

Since 1996, the venerable Maison Delas Frères, whose roots go back to 1835, has regained the soul and sparkle that have contributed to its fame. Under the impetus of the new management, numerous investments were made at the Saint-Jean-de-Muzols production site, near Tournon-sur-Rhône. A motivated team proudly participates in the qualitative renewal of this Grande Maison in the Rhône Valley: a vat room specially designed for the vinification of red wines, the complete restructuring of the aging cellar are among the key elements of the House's quality approach. Delas, summed up in one sentence: to perpetuate and sublimate the expression of the Terroir.

Moët & Chandon Champagne Dinner Compass Room | Thursday 18 November The legendary Moët & Chandon is celebrating nearly 280 years as the world’s most loved Champagne. For over a quarter of a millennium, the renowned French winemaker has been sharing the magic of Champagne across the globe. Every glass overflows with the House’s hallmark values of history, generosity, savoir-faire, success, boldness and elegance – values still at the heart of its global appeal. Toward the end of the 18th century, Jean-Remy Moët, grandson of founder Claude Moët, became famous as the man who introduced Champagne to the world. The important figures of the era, from the Marquise de Pompadour to Talleyrand to Napoleon quickly fell in love with the House’s effervescent wine. Moët & Chandon was soon the icon of success and elegance that it remains to this day. Dim Sum Anyone? Kids Only

When traders were travelling along the Silk Road, they needed places to rest and relax during their long journeys. They stopped off at tea houses, for small-portion meals with tea called “yum cha” or “drink tea” meals. The tea is very important, just as important as the food! Dim Sum dumplings are usually made from rice flour and are filled with more delicious fillings than you could possibly imagine. There are more than a thousand different kinds of Dim Sum, from buns filled with BBQ pork to the sweet egg sauce buns which erupts, as soon as you bite them. Do you want to learn how to make your own Dim Sum? Why don’t you come and learn at our workshop on 14 November!
