ASK CHRIS
What is Small Claims Court?
Q:
The plumber that we hired to remodel the bathroom in our Arcadia home did poor work. We refused to pay his final bill of $2,800. The plumber has now sued us for $2,800 in the Small Claims Court division of Arcadia Biltmore Justice Court. What is Small Claims Court? Justice Courts have jurisdiction of disputes up to $10,000. Small Claims Court divisions of the Justice Courts are limited to disputes of less than $3,500, and are similar to the “Judge Judy” TV show. In other words, there are no attorneys, no juries, and no appeals in Small Claims Court.
A:
Note: Scottsdale doesn’t have its own Justice Court. There are 26 Justice Courts in Maricopa County that serve the various areas of the County, including Scottsdale. A Scottsdale resident can call any Justice Court and, by furnishing their Scottsdale home address, get the correct Justice Court to file a lawsuit. For example, the Justice Court for Scottsdale residents with homes in the Scottsdale Fashion Square area is McDowell Mountain Justice Court.

Contents February is often referred to as “the month of love.” For those who aren’t aware, February 14 marks Valentine’s Day – what some call the most romantic day of the year, and what others denote as a “Hallmark holiday.” Whatever you regard it as, celebrating love can come in many forms. For some, this may mean going to their favorite sporting event, and showing “love” to their team. Hockey fans can certainly appreciate our cover this month highlighting Lawson Crouse (page 42). The Arizona Coyotes star, often known as his nickname “The Sheriff,” caught up with us on all things hockey, from hoping to one day be in the NHL as a young boy in Canada to now living out his dream with his wife and close teammates here in Arizona. And, if that’s not enough sports, turn to page 53 for the lowdown on the upcoming WM Open, aka the People’s Open. If looking for the more literal meaning of the heart-filled month, consider a romantic getaway to a tranquil desert hideaway (page 90), romantic spots to celebrate with that special someone (page 64), after-dinner drinks to sweeten the evening (page 96), long-lasting florals to show how much you care (page 87), and special scents to set the mood (page 72). And talk about a big commitment. Our feature this month showcases local married couples who own businesses together. They are talking their shared passion for their work – and each other on page 46. Those wanting to spend their time celebrating the love they share with friends can also join in on the celebrations on Galentine’s Day (Feb. 13) – or any other day this month for that matter as page 65 shares creative ways to get with the girls and have a little fun. Additional highlights include a look at the new, highly anticipated Uchi restaurant (page 114) and a preview of the upcoming Arizona Strong Beer Festival (page 67). Have fun celebrating the month of love – in whatever form you choose!

TAKE TWO
Former Hollywood costume designer Abigail Valentine launches local clothing consulting business Abigail Valentine is one of those rare people who was blessed with two successive dream careers. For 12 years, she was a Hollywood assistant designer, dressing actors for movie sets. Her expertise created a seamless segue for her latest Scottsdalebased venture, Joy and the Valentine (www.joyandthevalentine. com).
Through her new company, Valentine revitalizes closets by composing chic, stylish outfits for those desiring a more polished image reflective of their personality. Whether adding some razzle-dazzle to a wardrobe or curating vacation ensembles, Valentine consistently adheres to her motto, “You don’t have to be trendy to have a sense of style.” So Scottsdale! Pulse UP CLOSE Clients have the luxury of tailoring their wardrobe packages through Valentine’s a la carte pricing. Possibilities include styling tips and tricks, complete wardrobe creation, shopping expeditions, color analysis, wardrobe refreshing, and pairing old and new items. Depending on the client’s budget, Valentine procures clothes in stores ranging from TJ Maxx to Saks Fifth Avenue. “Some people are tempted to use stores’ in-house consultants,” she says. “However, you need to remember they work for the store first. I work for you.” Many of Valentine’s services are done virtually, saving valuable time for her clients. That versatility allows her to service clients all over the Valley and in cities like New York or Los Angeles.
Budding Passions It is no surprise that Valentine has had a lifelong fascination with clothing and style. “I’ve had a love affair with clothing ever since I can remember,” she says. “As a child, I adored putting outfits together and playing dress up. I also loved playing with my dolls, creating outfits, and even cutting their hair. I’d even cut and tape their clothes.” While in elementary and high school, Valentine enrolled in every art class possible, from ceramics to sculpture to drawing. She attributes her keen sense of aesthetics to her grandmothers, oil and mixed media artists, as well as her dad, a woodworker who makes custom furniture. “He is very creative and visual,” Valentine says of her father. “Every week, he created a new project in our home. My mother didn’t have an artistic career but was a small business owner and was the perfect balance of creativity and organization. My work life is a testament to both of my parents’ hard work.” While in Hollywood, Valentine created an impressive resume; she worked within the costume department of well-known shows such as American Horror Story, Bosch, Grey’s Anatomy, Get Shorty, How to Get Away With Murder, Station 19, Jane the Virgin, and many others. “It was a job I couldn’t get enough of,” says Valentine, noting her expertise extended to working on commercials and music videos as well. “I had to focus on the character, not the actor. When a character shows up on screen, you have to understand who they are through clothes, which are their form of expression. I dressed people of all ages and I couldn’t get enough of it.”
From Hollywood to Home Valentine’s work schedule was demanding: 60 to 80 hours a week, many of which were spent picking outfits from the Western Costume Company, one of the largest rental houses in Hollywood for costume rentals. With 7 miles of racks and floorto-ceiling ladders, this warehouse behemoth contained clothes for every period, culture and body type. “We would pull racks, shoot movies, and return the items,” says Valentine. “Every day was different, and that’s what I loved best about my job.” Her ascent to becoming an assistant costume designer began soon after completing her degree at Fashion Institute of

Design & Merchandising (FIDM), in Los Angeles. Driven by her passions for design, film and the entertainment industry, she enthusiastically embraced her calling. “I remember having an ‘aha moment’ when I realized I could do fashion for television,” she says. At FIDM, Valentine benefited from visual merchandising, color theory, textiles, drafting, graphic design, and event planning classes. Her major was visual communications, which included all aspects of fashion that aren’t about design. “Upon graduation, I had a choice to either be a celebrity stylist or pursue costume design, which provided the opportunity to dress a variety of characters,” she says. While Valentine’s life was a whirlwind of creative challenges, there was a point in 2021 when something tiny impacted her destiny: a pregnancy. “I was thrilled because I wanted to start a family,” she says. “I had a dream, worked hard and loved my job, but it felt like it ran its course. I wanted to be a mom and have a home.” Soon after her epiphany, she and her husband moved back to the Valley, where both have family. Valentine started her company to find balance in her life while still being present in her daughter’s life. Currently, she helps people build confidence through their wardrobe. “The only challenges I had were mastering IT, marketing and sales,” she says. “It took a lot of learning through trial and error.” While building a website, using word of mouth and social media to spread the word of her budding business, Valentine learned quickly how different clothes consulting would be from her Hollywood life. “Until now, I dressed people behind the camera,” she says. “Now I have to be in front of the camera and advocate for myself. My main goal right now is to help clients show up as the best version of themselves through the clothing they wear.”

STORIED SCENTS
Father-and-son team, Paul and Tommy Hill, share their combined passion for storytelling through Hillside Candle BY ELIZABETH LIBERATORE / PHOTO BY CLAUDIA JOHNSTONE
Certain smells have the power to transport people, unlocking buried memories and bringing them back to specific moments when those memories were created. For Tommy Hill, much of his childhood was marked by the distinct scents that filled his house. “Candles are what made [my family],” Tommy says “Every home, every moment, every minute included some sort of scent.” When Tommy and his father, Paul, who had years of experience as the head of operations at Yankee Candle, decided to venture into business together, the choice of their enterprise was a no-brainer. In September 2023, the two launched Hillside Candle. “It’s important to us that we make a quality product that helps people enjoy their homes and hopefully make memories and stories,” Paul says. To create Hillside Candle products, the duo enlisted the expertise of a master candlemaker, a former Yankee Candle colleague of Paul’s, to pour small batches of their premium 80% soy wax blend, ensuring quality and consistency every time. “The fragrance is added at the last moment to produce the most consistency throughout the burn,” Paul says. Hillside Candle offers nine (and counting) scents. Tommy’s personal favorite among the current selection is Holiday Hearth. “That fragrance takes me back to the many joyful times I experienced during the holidays as a kid,” he says. In contrast, Paul leans toward the sweeter, citrus notes with their Apple Orchard variety as his favorite. The brand will release new scents later this year, and all varieties can be purchased on Amazon or on the Hillside Candle website (www.hillsidecandle.com). On the business side of things, both men juggle multiple roles. Tommy holds titles such as president, chief fragrance nose (a title given by Paul), and head of digital marketing and sales. Similarly, Paul takes charge as the head of production and administration. While navigating the challenges of working with family, Tommy and Paul both agree that the peaks make it all worthwhile. “I love being able to connect and spend more time with my dad,” Tommy says. “We engage in a lot of debate, give and take, but more importantly, we learn from each other and relish sharing our passion with others,” Paul adds.

CRUSHING IT
Brett Warner is helping to make Scottsdale the pickleball capital of the world
BY BECKY ANITOCO / PHOTO BY CLAUDIA JOHNSTONE
The proliferation of pickleball over the last few years has been nothing less than a phenomenon. Already a go-to hub for golf and MLB spring training, Scottsdale is quickly becoming the epicenter of the pickleball community. At the heart of the movement is Scottsdale resident Brett Warner, a five-time USA Pickleball national champion, who was ranked 45th in the world in 2022 and is the coach of the Scottsdale Scorchers in the professional Arizona Pickleball League. He is also the co-founder of Pure Pickleball (www.purepickleball. com), which will be the national training center and headquarters for USA Pickleball, the sport’s governing body. When it is completed near Talking Stick Resort and Casino in the fall of 2024, the 11-acre site will be the largest facility of its kind in Arizona and one of the largest in the world. Like most everyone who has been bitten by the pickleball bug, when Warner was introduced to the sport three years ago, he was hooked. “In the first year, I went from never picking up a paddle to winning indoor nationals at my skill and age-group level in singles and doubles and playing in my first pro tournament,” Warner says. “The learning curve to get to a level of competitiveness is hours and days, not months and years. You can learn the sport and play in games on your first day. What other sport can you have an 8-year-old and an 80-year-old on the same court, and it doesn’t matter if they’re playing against each other or on the same team?” While Warner has found tremendous success on the pickleball court as a player, his passion lies in helping build the community, bringing the sport to younger generations, and establishing pickleball as a feeder into other racquet sports. “I find entrepreneurs locally that have wild visions, and I try to help them achieve their goals. As a result, I’ve been given the opportunity to work with entrepreneurs who are starting some of the most exciting businesses in the entire sport,” he says. Partnering with Pete and Richelle Nassos on the Crush brand of paddles (www.crushpickleball.com) has been part of that immersion into the community and entrepreneurial side. Warner helps with paddle design, networking and strategy. The company creates professional-level paddles at an affordable price, while tapping into the community aspect of the sport.

A SLICE OF STYLE Michael Merendino’s recipe for business casual success
BY MANDY HOLMES / PHOTO BY BEVERLY SHUMWAY
Michael Merendino, founder of Crust Simply Italian, stands out not only as a successful entrepreneur but also as a family man with a flair for style. The busy father of three has a business casual style; a reflection of his dynamic lifestyle. Always on the go, he’s ready to step into any situation, whether it’s overseeing the operations of his numerous hospitality concepts or engaging with guests and staff. His signature look involves a combination of jeans and button-down shirts. “When I do wear a sports coat, I keep it simple with a T-shirt, sometimes I even rock a Metallica or Motley Crue tee,” he says. From the shiny shirts of his New York bar and club days to a more refined and tamed-down look, his wardrobe has matured. Merendino leans toward simplicity and his favorite color is blue in various forms, whether he’s putting on blue jeans and a T-shirt or a collared shirt. However, his most prized possession is a dark olive green leather jacket acquired during a trip to Italy, adding a touch of European elegance to his collection. Merendino’s outfits are not complete without his watches and shoes. “Although, my son has started tapping into these collections lately,” he says.
Who influences your style? My daughter Isabella. She is constantly picking out outfits for me and matching up my looks. “Dad, trust me” is what she says as she guides me along the way. What are your favorite brands? Lululemon changed the game for pants and shorts for me. For years I thought it was just the iconic logo on yoga pants – they are so comfortable and great. I also like Untuckit for button-downs. What is your must-have item when it comes to fashion? I need my sneakers/ shoes and just having a variety. They can dress you up or down no matter what you are wearing.

LIFE ON THE ICE Arizona Coyotes’ Lawson Crouse on confidence, comaraderie and living out his dreams
42 So Scottsdale! February ‘24
As a native of Mount Brydges, Ontario, Lawson Crouse’s life has revolved around hockey for as long as he can remember. “Growing up in a small town with just over 1,000 people, everyone knew everyone,” Crouse says. “On weekends, there’d be nonstop hockey practices going on at the community rink, and it was a good chance for the community to hang out and see everyone.” During his childhood, life in the Crouse household seemed to constantly revolve around sports. His two older sisters both played hockey, and Crouse himself also participated in golf, lacrosse and baseball, a varied background that helped him build a foundation of athleticism from a young age. And there was never a shortage of support from his parents, he says. “It was nonstop go-go-go,” he says. “My parents would come home from work – my mom is a principal at a private school and my dad works for Pepsi – and one of us kids would always have to go to the rink. They sacrificed a lot of time, a lot of effort, and a lot of money, and I’m very grateful for them. They’re a big reason for why I am where I am now.” And where he is now is the stuff of his childhood dreams – out of all the sports, Crouse always felt the most at home at the hockey rink, and for as long as he can remember, his ambition was to play in the NHL. When he was drafted to the Ontario Hockey League’s Kingston Frontenacs in 2013, he became one step closer to making that dream a reality. Crouse left home at age 16 with the knowledge that, with a whole lot of dedication, a career in professional sports was possible. After three seasons with the Frontenacs, he was drafted by the Florida Panthers, who assigned him to their American Hockey League affiliate, the Portland Pirates. Then in 2016, Crouse was traded to the Arizona Coyotes and finally made his NHL debut. So Scottsdale! February ‘24

After nearly a decade in the Valley, left wing Crouse, who has been dubbed “The Sheriff” for his tough style of play, is now an alternate captain, and plays against the teams he idolized as a kid, most notably the Toronto Maple Leafs. “When I first got here, I remember getting off the plane and just being in awe of the landscape, the mountains and the desert,” he says. “I’ve loved it ever since. After roughly eight years here, this feels like my home now.”
Life Lessons As he’s navigated a career in the world of pro sports, one of the most important goals for Crouse has been maintaining the values imbued in him since childhood. “My parents raised me to be a kind, caring son, and that’s something I’ve tried to live my life being. And in terms of hockey, confidence is one of the biggest things. My wife Claire has been a big part of helping me find that confidence.” The couple met in Canada while Crouse was visiting home at the end of his first year in Arizona. As Crouse puts it, “one thing led to another,” and last year, they tied the knot in an elegant ceremony. They’re more than happy to call Arizona their home, thanks in large part to the weather – Crouse says he’ll never take for granted the knowledge that he’s enjoying the crisp air and sunny days of winter in the Valley while the roads back in Ontario are covered in snow. The couple also enjoy the social scene in Scottsdale, and are often found at concerts in the summer months or dining at a local eatery, with Buck & Rider and EVO as two personal favorites. But when it comes to time off (though he’s always looking for a chance to squeeze in a game of golf) Crouse’s number one priority amidst his packed schedule of practices and games is some good, old-fashioned rest and relaxation. Recovery is essential in a sport as physically

demanding as hockey, where injuries can very easily put you on the sidelines. In addition to games and practices, his work schedule is typically composed of pre-practice workouts, video performance reviews, group lunches served up by the Coyotes’ all-star chef, and the ever-essential pre-game nap. Just as his wife has been a huge source of support over the years, the Coyotes themselves – under the leadership of head coach André Tourigny, a fellow Canadian who’s known for his communication skills and the genuine connections he’s forged with the team – are another reason for Crouse’s ever-growing confidence. “Throughout my career here in Arizona, we’ve always had a great locker
room full of guys who are unselfish and willing to do whatever it takes. You have to play with guys that are willing to sacrifice their own wellbeing for the team. Obviously you have to perform on the ice, but to be able to rely on each and every one of your teammates to have your back at any given moment is huge for internal success.”
Staying Grounded “Looking back now as I’m turning 27, it’s crazy the amount of places hockey has taken me,” Crouse says. “I’m so fortunate to have been all across the globe.” Crouse, who re-signed with the Coyotes to a five-year contract in 2022, is hitting his stride in the NHL, and while he looks toward the future, his most treasured memory remains his first game in the NHL. The Coyotes played against the Philadelphia Flyers – and yes, the Coyotes won. “I was able to do it all in front of friends and family. Having that feeling that I finally made my lifelong dream come true, and to do it with the people who helped me get there, was very special. That’s a moment at the top of my list – the excited nerves, the feeling of everything unfolding the way you dreamed of it unfolding.” From beginning this journey as a kid at the small-town community ice hockey rink to now regularly playing in front of thousands of fans, Crouse is reminded every time he steps onto the ice of the importance of believing in himself. “You go through parts of your life when you feel down on yourself, and during those times it’s easy to stay down and it’s hard to build yourself back up,” he says. “Things will always pop up that you never would’ve expected, and being able to handle those things is essential. One of the biggest things I’ve learned is to not sweat the small stuff – everything happens for a reason. You’re supposed to learn along the way, so control the things you can control and don’t worry about the rest.” So Scottsdale! February ‘24

ERIC AND MICHELLE JURISIN Owners, The Haunted Group
Working with one’s spouse can be scary for many, but not for The Haunted Group’s Eric and Michelle Jurisin, who together have launched a hospitality and culinary empire across the Verde Valley. Fittingly, their love first blossomed over food – or, more fittingly, the deli counter. “Rewind to 1987. I was renting a house in Paradise Valley and happened into AJ’s Fine Foods on Lincoln and Scottsdale roads, where Michelle was working,” Eric says. “The chance meeting over cold cuts changed the course of our lives, once I got her to agree to a date.” As love blossomed, so did a working relationship. By 1989, the couple founded a restaurant in Mesa with Michelle serving as the chef and Eric as head of operations. “After selling the business and trying our hand in the corporate world, as well as welcoming our daughter Nicole, we happened on Jerome while on a road trip,” Michelle says. “While having lunch, we saw an abandoned building that would make a sensational restaurant, and within months moved into its basement and began fixing it up.” That building – rumored to be haunted – opened as the Haunted Hamburger in 1994. “We had no plans to expand, but by 2000 we had our son, Eric Jr., and outgrew the basement so headed down the hill to Cottonwood,” Eric says. “We loved the community, but it had few dining options, so we built them ourselves.” Over the past 20-plus years since, the Jurisins have rebuilt Cottonwood from a former mining town into an up-and-coming tourism and culinary hotspot. Under their Haunted Group (www.thehauntedgroup.com) brand – named to honor The Haunted Hamburger, which still stands today – they are the minds behind Nic’s Italian Crab & Steakhouse, the Tavern Grill, Pizzeria Bocce, Strada at Bocce, and Crema Craft Kitchen, all located walking distance from each other on Cottonwood’s Main Street. The couple and their now-adult children also own The Tavern Hotel in Cottonwood and The Clinkscale Hotel and Restaurant in Jerome.

DAVID AND JENNIFER DILTZ Owner and chief financial officer, McDowell Mountain Builders David Diltz has always worked with his hands. “I started with birdhouses as a kid before moving on to cars, furniture, and finally homes,” says David, who met his wife Jennifer while the two were in college – he at Cal State Fullerton and she at University of Southern California – in the late 1980s. The two married in 1992 and moved to the Midwest soon after, spending the first several years of their marriage working for large corporations, where they found individual success thanks to their similarly strong personalities. “Back then, we made a deal that we would never muddy the waters by working together, which makes us laugh out loud today,” Jennifer says. The couple eventually started a family – with son Stephen in 1999 and daughter Haily in 2002 – which led Jennifer to take a step back from her full-time career. David, still tinkering as much as ever, took a leading national role with Behr Paint, which continued until the Great Recession. “By 2010, we needed a change, so we did what many Midwesterners do and moved to Scottsdale,” Jennifer says. Once settled, David made the proclamation that he was done working for someone else and launched a contracting company, directly connecting his passion for tinkering with his business mind. Eventually, his success led him to found McDowell Mountain Builders (www.mmbaz.com) in 2018 with an eye to develop both best-in-class, high-end custom homes from the ground up as well as to help individuals and families remodel their existing or investment homes into something special. “I joined David in operations in 2020,” Jennifer says. “Despite our prior proclamation never to mix business into our relationship, handling the business inside the office while David happily leads everything in the building space outside of the office has been a match made in heaven.” Today, the business is a family affair as their son Stephen recently joined the firm fulltime as a project manager.

TREVOR AND AMY JOHNSTON Owners, Wine Girl
What do Mark Cuban and a Napa cabernet have in common? Trevor Johnston. Growing up in the San Francisco Bay Area, Trevor spent much of his young adulthood enjoying wine in nearby Napa and developing business ideas, one of which landed him on Shark Tank in 2017. “I created a retail product called Wallet Buckle in 2015, and while Mark and the other sharks did not invest, the exposure took our business to a whole new level,” Trevor says. Amy Johnston – known as Amy Mason at the time – worked with Trevor at Wallet Buckle and was integral to its success. “I fell for many things about Trevor, but chief among them were his entrepreneurial spirit and love of wine, much like me,” says Amy, noting the couple moved to Scottsdale in 2017 after traveling to the area for several years prior while marketing the business. Once they planted roots here, the couple turned their sights to building something new. “In 2019, we came across a space in Old Town on Scottsdale Road and were inspired to create a wine bar accessible to everyone, breaking the sometimes-stuffy stigma of wine tasting,” Amy says. The couple poured their savings into the vision, naming the brand Wine Girl, with construction moving along in early 2020 until the pandemic hit. “I distinctly remember laying tile in March 2020 when a sea of San Francisco Giants fans poured out of Scottsdale Stadium. That was the day Major League Baseball shut down,” Trevor says. Despite the resulting challenges, Wine Girl Scottsdale (www.winegirl.com) opened in May 2020. In the three-plus years since opening, Trevor and Amy tied the knot, and the business found legions of fans. So much so that the couple opened a Napa location and created a unique private kegging deal with ONEHOPE Wine in 2023. “We are building on this momentum, with plans to open a third West Coast location in 2024,” Amy says.

LES AND DIANE CORIERI Owners, Evening Entertainment Group While studying graphic design and business at Iowa State University in the early 1980s, Diane Corieri took a job at a nearby college bar. “Les, who owned the bar, and I hit it off as friends and before long, I was running one of his other venues in Des Moines,” says Diane, who would relocate to Arizona in 1985 to escape the cold. Once she moved to Scottsdale, Diane planned to get into another line of work, but when Les – who also relocated here – needed a trusted leader to run a new local hospitality enterprise, Diane proved to be the perfect choice. She also proved to be the perfect woman for him as the two fell in love and got married in 1989. By 1992, the couple founded Evening Entertainment Group, a hospitality and events company. Their first venue, the iconic Jetz and Stixx, was one of the original nightclubs to light up Old Town Scottsdale. “While all of our concepts are like our children, we both still look so fondly on Jetz, in part because it was our first but also because we were young and starting out, able to run it all night and still get up the morning to take care of the business side,” Les says. Jetz may have been the couple’s first joint project, but it was far from their last. Over the past 30-plus years, Evening Entertainment Group (www.eveningentertainmentgroup.com) brought Axis Radius, The Mint, Honor Amongst Thieves, Pretty Please Lounge, and more to the Valley entertainment scene. “Today, we have bustling concepts Valleywide in Bottled Blonde, Casa Amigos, Chauncy Social, Hi-Fi Kitchen + Cocktails, RnR Gastro Pub, Sandbar Mexican Grill, and The Bevvy,” Diane says. “This spring, we will also open the doors to Backyard in Desert Ridge, a dog-friendly, casual sports bar and restaurant with ample yard games.” Beyond all of this, in recent years the couple scaled the brand, opening sister concepts across Florida, Texas and Tennessee.

SAM AND LEAH KATZ Owners, Nite Out Entertainment
While Sam and Leah Katz knew each other socially for years, it was not until a chance dinner in 2003 that the two became friends. “I was working in event production in my native Winnipeg, and among my projects was an opening that featured a visiting chef from San Francisco,” Leah says. “Sam just happened to sit next to me at one of the dinner events, which gave us the chance to talk in more than just passing.” Leah adored Sam’s infectious personality, and friendship blossomed. “It was not until years later that our friendship grew into dating, but she really made me earn it, going so far as to move to California to work with an international production company, an opportunity of a lifetime,” says Sam, busy himself as the Winnipeg Mayor from 2004 to 2014 as well as with a slew of businesses including in concert and Broadway production and in baseball ownership with the Winnipeg Goldeyes and later the Ottawa Titans. According to Sam, if the two could make it work living in two countries, then they could make it through anything. “We loved traveling to the Valley for years, so much so that we got married at the Arizona Biltmore Resort in 2011 and chose Scottsdale as our homebase to start our family,” Leah says. The couple welcomed three children in the next several years and added a fourth child of sorts in 2021 with the launch of their newest “baby,” Nite Out Entertainment. “Through Nite Out, we are able to bring acclaimed productions to the Valley, but in a way that also benefits local nonprofits, which, outside of our kids, brings a bigger smile to Leah’s face than anything else,” Sam says. In March, Nite Out (www.niteoutent.com) will present the national Broadway tour of Shrek the Musical at Arizona Financial Theatre, which will in part benefit Amanda Hope Rainbow Angels and the Armer Foundation for Kids.

IN VINO VERITAS
The Mick Brasserie hosts blind wine competition for the ages with Somm Brawl
Let’s get ready to rumble! This winter, The Mick Brasserie is hosting its third annual Somm Brawl, which brings together Arizona’s leading wine experts in a series of friendly foodie competitions to crown the 48th state’s ultimate victor of vino. “We dreamt up this series of multicourse wine pairing dinners to showcase the depth and breadth of talent within Arizona’s sommelier community as well as a means to showcase the diversity of wines both from across the country and world,” says Jeff Menzer, wine director of The Mick. During each event, chef Brent Menke will present a series of imaginative seasonal courses for guests, each paired with two glasses of wine. “The wines will be poured side by side, but their labels will be completely hidden from our guests, allowing diners to blind taste each wine with the food and then vote on their favorites with no knowledge which of our two week’s competitors that they are favoring,” Menzer says. The blind pairings will be repeated all night long until all courses are served. At the close of the evening, Menzer will tally up the votes for each course, sharing which of the two evening’s competitors came out victorious by popular vote. Throughout the interactive dinner, Menzer and special guests – including representatives from vineyards and fellow industry veterans – will share fun facts about each of the competitors as well as the wines when they are revealed. Menke, of course, will present the stories behind each of his globally inspired dishes as well. “We have eight total sommeliers competing. Think of the competition like one might think of March Madness, where each person is in a bracket, and winners move on to our version of the Final Four and Championship Game,” Menzer says. “Each event will begin at 6 p.m. sharp and end roughly at 8:30 p.m.”

IF YOU GO… What: Arizona Strong Beer Festival When: Feb. 16-17, times vary Where: Salt River Fields at Talking Stick, 7555 N. Pima Road, Scottsdale Price: General admission, $70; VIP, $90. Information: www. chooseazbrews.com.
What started as a small festival with just 10 Arizona breweries has become the largest single-day meeting of craft beer fans and breweries in the Southwest. On Feb. 16 and 17, more than 125 breweries will pour over 500 different beers at the now-crown jewel of beer festivals, Arizona Strong Beer Festival. The event supports the Arizona Craft Brewers Guild, an organization that ensures breweries are protected from entities that would try to make beer more difficult to make, distribute or sell. “Arizona Strong started out as a small event, essentially a reason for all the breweries to get together and talk about the future of the industry while sharing some of their rare beers with some beer fans. All the beers were over 8% alcohol,” says Andrew Bauman, deputy director of the Arizona
Craft Brewers Guild. “As the event grew and the craft beer community grew, the festival became far more about the strength of the community, strong traditions, and strong flavors, rather than about having high-ABV beers.” In 2001, the first Strong Beer Festival featured all eight of Arizona’s breweries and had about 100 attendees. This year, more than 60 Arizona breweries – and counting – will bring their favorite beers to share. There will also be several new nonalcoholic options, as well as wine, mead, cider, seltzer, and local spirits. “Much of the fun in Arizona Strong is when you discover something new or taste a beer style you didn’t know existed,” Bauman says. “There are a lot of things to do other than ‘just’ drink beer. PHX Beer Co. has brought amateur wrestling in a
full-sized ring for the past two years. There are lawn games, amazing food trucks, music, and, overall, a very celebratory atmosphere.” Bauman describes the event as “having a great time with 8,000 of your best friends.” Breweries go all out, creating fun engagements with craft beer fans. Attendees can meet brewers and brewery owners and discover new favorites. The Arizona Strong Beer Festival is a 21-and-over event. General admission includes festival entry at 1 p.m., 24 3-ounce samples, and a sample cup. VIP Craft Enthusiast tickets add early entry on Saturday (11:30 a.m.), plus access to the pre-event party on Friday from 5 to 7 p.m. VIPS can pick up their festival wristbands on Friday, and skip the lines when the festival opens Saturday. ARTIST OF THE WORLD Laura Thurbon showcases her work through teaching, murals and wearable art
BY MELISSA HIRSCHL
68 So Scottsdale! February ‘24
Inspired 24/7, Laura Thurbon is always in search of a portal for her self-expression. A mural, fine artist and faux finish professional, Thurbon teaches art and Spanish at Great Hearts Cicero Academy in Scottsdale. Her elementary students benefit significantly from having an unofficial “artist in residence.” Thurbon’s sense of artistry is so diverse and sophisticated, it transcends the classroom walls, and inspires students and faculty. Her large, dramatic murals depicting Greek and Roman themes and famous paintings grace the school’s corridors, enhancing the environment. An internationally known mural artist from Lima, Peru, Thurbon came to the U.S. 24 years ago after eight years at the National Fine Arts School of Lima, where she received painting and drawing degrees. Since then, she has received many awards in the U.S., Israel, Europe, and India. The artist, who loved painting murals in Peru, decided to start a business in America dedicated to her passion. As word spread, the Thurbon’s career began to catapult. Last year, the Super Bowl committee honored her by requesting she paint three murals at Arrowhead Mall, Westgate and City Hall to promote the upcoming mega game. In addition, the Scottsdale Rotary Club asked her to participate in the Arabian Horse Show Stallion Stampede in Old Town Scottsdale last winter. This interactive fundraiser displays life-sized, hand-painted fiberglass horses painted by local artists. Thurbon debuted two vibrantly pained horses: Arizona Beauty at the Kiva Craft Center and Lexie’s Dream at Scottsdale Fashion Square. One of Thurbon’s most inventive projects is creating handpainted artful dresses. Wielding fabric and spray paint, the artist creates bedazzling abstract and classical wearable art. Some of her color-drenched images include art by Michaelanelo, and images of Mother Theresa, Freida Kahlo, succulents, and even graffiti. Last year, Thurbon participated in New York City’s iconic Fashion Week, one of the four major fashion weeks globally followed by Milan, London and Paris, where she showcased her glamourous and imaginative creations in two fashion shows at The New Yorker Hotel by Wyndham. When not painting murals for homes, businesses or charity events, Thurbon is always looking for new avenues of artistic creativity. “I paint lanscapes and animals, and I’ve even won an award for painting a large electrical box in Fountain Hills,” she says. “In addition to murals, I work in mixed media and watercolors. Just give me something to create, and I come up with an idea.” Learn more at www.laurathurbon.com.

What are ‘forever chemicals’ and how can you avoid them?
R
evolutionary synthetic chemical compounds first developed in the 1930s ushered in decades of new products geared toward making life better—or at least more convenient—for consumers: from nonstick frying pans to stain-resistant carpeting, from air fresheners to soft contact lenses. Many of these compounds are now being replaced because of their toxic nature and the health concerns they raise, including their potential for causing cancer. Often called “forever chemicals,” these substances may be absorbed by the body—or in nature—and are more likely to accumulate than go away, as they break down very slowly. While the use of some forever chemicals has been significantly curtailed in recent decades, new versions with unknown health effects continue to be manufactured— with nearly 15,000 different synthetic compounds created to date. The substances may be found virtually everywhere and in virtually everything, including most drinking water supplies and more than 600 species of wildlife. Forever chemicals have been linked to impaired fertility, cases of high blood pressure, interference with hormones, liver damage, thyroid disease, obesity, high cholesterol levels, weakened immune systems and developmental defects in children. More recently, studies have connected them to cases of testicular cancer, ovarian cancer, kidney cancer and breast cancer. Scientists still have much to learn about PFAS and how they may relate to cancer. Some research has indicated a link between some PFAS and some forms of cancer, but the results have not been conclusive. The International Agency for Research on Cancer, part of the World Health Organization, has classified PFOA as “possibly carcinogenic to humans,” based on limited evidence. Here’s what’s known about the connection between some PFAS and some forms of cancer, according to the National Cancer Institute: Kidney cancer. Greater incidences of kidney cancer have been observed among workers
in plants producing PFAS or individuals living near such plants, but studies are still needed to explore kidney cancer’s relationship to PFOA levels seen in the general population. Some 2023 research suggested an increased risk of renal cell carcinoma (RCC) among individuals with another widely seen PFAS, PFNA, with the risk strongest among African-American participants. Testicular cancer. A study of PFAS blood levels among active-duty Air Force service members, who may have been exposed to firefighting foams used at airports and military installations, found that elevated levels of PFOS were associated with a higher risk of developing testicular cancer in highly exposed populations. Breast cancer. National Institute of Health (NIH) investigators using blood serum information from a study of postmenopausal breast cancer women found a positive association between concentrated PFOS blood levels and hormone receptor-positive tumors, and between concentrated PFOA levels and hormone receptor-negative tumors. Prostate cancer. An NIH investigation studying PFAS concentrations in blood and a connection to aggressive prostate cancer found no association between increased PFAS levels and cancer risk in the study population, but it didn’t rule out an association with lower PFAS levels and non-aggressive forms of the cancer. The NIH also identified studies being developed to look at possible PFAS associations with ovarian and endometrial cancer, non-Hodgkin lymphoma, thyroid cancer and childhood leukemia. “Many scientific articles have been published about PFAS exposure and health effects,” a report by the Agency for Toxic Substances and Disease Registry said. “While it is difficult to show that substances directly cause health conditions in humans, scientific studies have shown that exposure to some PFAS in the environment may be linked to harmful health effects in humans and animals. More research is needed to better understand the health effects of PFAS exposure.”
HOW TO AVOID FOREVER CHEMICALS While harm from PFAS has not been shown conclusively, some individuals may want to do what they can to avoid the chemicals. Here are some ways to do that: • Don’t use pans with nonstick coatings for cooking. Choose ceramic, glass, stainlesssteel or cast-iron instead. If you’re using a nonstick pan, cook at lower temperatures and don’t preheat the pan; don’t use metal utensils when cooking or abrasive steel-wool when cleaning nonstick pans, because they scrape the coating and may release PFAS. (Some cookware may have PFOA-free labels, but still have a different PFAS coating on them.) • Use a reverse-osmosis filter to reduce PFAS levels in tap water. • Don’t reheat foods that are wrapped in grease-resistant packaging. Transfer packaged foods into glass or metal containers first. Look for packaging that’s BPI (Biodegradable Products Institute) certified to not contain PFAS. • Make popcorn the old-fashioned way, on a stovetop, rather than using the popcorn in PFAS-treated microwaveable bags. • Don’t use PFAS-coated dental floss or cosmetics or shampoos containing PFAS. Check online to see which brands to buy. • Avoid buying furniture, rugs and bedding labeled water- or stain-repellant, since most of these treatments may contain PFAS. Check manufacturers’ information to see whether a product is PFAS-free, as some manufacturers have eliminated these chemicals from their items. • Check labels to make sure the products you’re buying, such as cosmetics or household items, don’t have PTFE or “fluoro” as an ingredient. • Look for non-PFAS clothing. • Dust with a wet cloth to avoid spreading dust that may contain PFAS, and use a pleated, mechanical (HEPA) air filter while vacuuming. For more information visit cancercenter.com. Call 602.883.1463 today to schedule a screening.

2024 GENESIS ELECTRIFIED G80 Remarkably luxurious, exceptionally serene BY JIM PRUETER
VITAL STATS: 2024 Genesis Electrified G80
Genesis, Hyundai’s luxury arm, has added the brand’s first fully electric version of its midsize G80, the Electrified G80, to its portfolio. What makes the Electrified G80 unique from most new electric vehicles is that it shares the same exterior sheet metal and gorgeous interior as the gasoline version of the G80. Genesis engineers simply swapped the existing engine, transmission, fuel system and all major features from the fossil-fueled G80, replacing it with a pair of electric drive motors – one on each axle – adding a liquid-cooled 87.2 kWh lithium-ion polymer propulsion battery pack, and related battery-electric control hardware good for 282 miles on a single battery charge. It comes standard with a rear-wheel steering system. According to Genesis, when the car is connected with a Level 3, 350-kWh DC fast-charger at an Electrify America location, it can be charged from 10% to 80% in about 22 minutes. Plugged into a conventional home Level 2 outlet, the recharging time extends to seven

hours. Owners get three years of complementary, 30-minute charging sessions at Electrify America. The Electrified G80 is offered in two trim levels: Advanced ($75,570) and the fully loaded Prestige ($80,320), which adds numerous luxury features like a microfiber headliner, a power rear sunshade, remote parking capability, and more driver-assist features like a blind-spot camera system and rear automated emergency braking. Consistent with the nonelectrified G80, it’s worth mentioning this luxury sedan is gorgeous inside and out, espousing the time-honored luxury sedan values of a smooth, quiet, cosseting comfort with exquisite ride and handling character. Acceleration performance is instantaneous, reaching zero to 60 mph in just 4 seconds with confidence and delight. Overall, it is an exceptional vehicle with supreme comfort, state-of-the-art connectivity and driver-assist technology, a respectable all-electric driving range, whisper-quiet acceleration, and runway good looks.

This sprawling Scottsdale estate boasts a comfortable 6,261 square feet. Located on a corner lot in the sought-after Cactus Corridor neighborhood, it features six bedrooms, 7 1/2 bathrooms, a detached 1,200-square-foot guest house, an oversized RV garage, and a five-car garage that fits 13 cars (plus an additional 20 with lifts). Talk about a car enthusiast’s paradise! The foyer unveils the home’s spacious formal living and dining rooms, where automated wall-to-ceiling glass doors frame a picturesque view of the resort-like backyard. Cozy up in front of the masonry fireplace in the living room – one of many within this home – or indulge in a glass of vino from the nearby 960-bottle wine cellar. Bel Aire Development kept the interior and exterior designs simple, clean, and modern, using black and white accents. The all-white kitchen against black wood flooring is especially striking. Here resides two large quartzite islands, top-notch appliances and a large walk-in pantry. The kitchen extends into a family room and breakfast nook. Each spacious bedroom is outfitted with sliding doors that offer access to the covered patio. The primary suite is fit for royalty, featuring a floor-to-ceiling marble wall with a built-in fireplace, vaulted ceilings, a custom closet, and an incredible en suite. Another highlight is the RV garage that doubles as a man cave complete with a full kitchen, a full bathroom, and a media area boasting a 165-inch projector screen. The seamless transition to the home’s vast backyard unequivocally distinguishes this estate from others. More than 60 years later, the former mining town and resort are still finding new ways to take the winter outdoor enthusiast’s experience to a whole new level. The main town of Breckenridge– often called Breck to those in the know – is nestled at the base of the Rocky Mountains at 9,600 feet above sea level, and the elevation at the resort’s highest peak reaches nearly 13,000 feet, accessible by the Imperial SuperChair, which is the highest chairlift in North America. Given its prime location and elevation, Breckenridge boasts one of the longest-running ski and snowboard seasons of any major resort in the country, with operations that regularly run into May.
Snow Much Fun In total, the resort spans five peaks – all a part of Colorado’s historic Tenmile Range – providing access to 2,908 skiable acres with 35 total lifts across 187 trails, including some of the best liftaccessed high alpine terrain in the country. Running north to south, Breckenridge’s five peaks include Peak 6, Peak 7, Peak 8, Peak 9 and Peak 10 of the Tenmile range and offer a variety of terrain for all skill levels, from first timers just learning to ski or snowboard to experts looking for steep bowls. Peak 6 is the gateway to the high alpine at Breckenridge, offering intermediate athletes their first taste of above treeline skiing and riding. It also offers exceptionally steep terrain and rocky chutes best left to expert skiers and snowboarders. Similarly, Peak 10 is the southernmost area of the resort and a black diamond rider’s paradise with steep groomers, moguls, glades, and rugged natural terrain. Peak 7, however, is wide and open, with long groomed runs making it ideal for the intermediate crowd, while Peak 9 has ample space for beginners to get their footing and great intermediate terrain for progressing skills. And then there is Peak 8. Widely referred to as “the heart of Breck,” Peak 8 is the resort’s flagship base area featuring an expansive lift system that provides access to learning and beginner terrain at the base as well as signature high alpine terrain via the T-Bar and the Imperial SuperChair. All that to say, Breckenridge is big. If visiting for the first time, check out the Breckenridge Ski & Snowboard school for instructors who can help with new skills and navigation of the mountain paradise. If looking for a bit less alpine adrenaline and a bit more comfort off the slopes, be sure to visit the Breckenridge Nordic Center, which offers cross-country skiing and snowshoeing as well as snowcat tours. These 90-minute guided tours inside a state-of-the-art Prinoth Snowcat boast an all-glass, heated, comfortable cabin, making it one of the coziest ways to explore the forest, trails, and Cucumber Gulch

Wildlife Preserve, which has a deep history and unique ecology. Bonus: The tours feature hot cocoa and schnapps, and additional beverages are available for an enhanced fee.
Tour the Town Speaking of tours, there is no shortage of them in the area. Of note are the Ghostly Tales Tour, which delves into the spooky side of the snow-covered town and includes ghost hunting equipment; the Strange But True Tour, a 90-minute walking tour detailing disappearances, suspected kidnappings and other oddities of the area; the Victorian Tour & Tea, an exploration of a classic Victorian home followed by formal tea service; the Historic Walking Tour of Breckenridge, a perfect overview of the area’s historic district, log cabins, massive residences, and gold mining past; and Hike Home with a Miner, a guided hike through a true mine site, complete with exploration of a restored miner’s boarding house. The town itself is a vibrantly colored mix of Victorian-age buildings and 200-plus bustling shops and restaurants. It is easy to get around by foot, or there are free shuttles on the Breckenridge Free Ride. After a day on the slopes, visitors can even take a “ski back” trail all the way to town or ride the free BreckConnect gondola. Post-slopes, the apres ski scene is incredible, especially Robbie’s Tavern, a locally owned bistro housed within the luxurious Grand Colorado on Peak 8 with a sneaky good wine list in addition to ample Colorado beers. There’s also Peak 9-located The Coppertop Bar & Café, which is known as a live music mecca with buzzy vibe, and T-Bar, which is in the heart of the Peak 8 base area and features the largest slopeside selection of microbrews in the area. Throughout Breckenridge, the culinary scene is laid-back but impressive. Of note are Legends Steaks & Seafood, a nostalgic steakhouse with Prohibition-era cocktails; Hearthstone Restaurant, serving naturally raised game and sustainably caught seafood in a refurbished Victorian home; and Rootstalk, a new American restaurant in a reclaimed Victorian building, serving chef Matt Vawter’s take on elevated dining in his first restaurant in his hometown. There is even a floating restaurant and bar in Ollie’s Pub & Grub, a beer-focused sports bar with excellent burgers set on an authentic dredge boat. Also at the center of town: accommodations aplenty. In 2023, The Carlin opened its doors on Main Street, melding a handful of luxury suites on property with high-end dining options including an 80-seat open kitchen restaurant with a Pacific Northwest-inspired menu on the ground floor and a 45-seat subterranean space at the Tavern Underground cocktail bar. Breckenridge Boutique Hotel is another option. Cozy and quaint, it offers 10 lodge-style hotel suites and two new Jacuzzi hot tubs, just steps away from downtown. For a room with a view, the secluded Lodge at Breckenridge is a short distance from downtown and recently completed upgrades, adding additional guest rooms, renovating the restaurant and creating an additional guest lounge. And finally, anyone seeking extra adventure, socialization, and elevated amenities will love Gravity Haus Breckenridge, a high-tech boutique hotel with a sports recovery center and slopeside Japanese-inspired onsen. It should come as no surprise that local restaurant Pescada – the term for “fish” across the Mediterranean – features sensational seafood. Among the most striking offerings at the fine dining destination is the Scallops & Dungeness Crab Cappelletti ($42). The dish starts with squid ink-infused, ring-shaped, stark black cappelletti pasta. The dough is stuffed with Dungeness crab, creamy mascarpone cheese, corn, and roasted red peppers. The pasta is plated atop a vibrant orange-yellow sauce made with cooked down corn. It is paired with three pan-roasted scallops; bite-sized morsels of crispy pancetta; and seasonal microgreens, including popcorn shoots. The butter and briny notes of the scallops are heightened by the salty pancetta and balanced beautifully by the slightly sweet pasta and bright sauce. Pescada, 20707 N. SHINE BRIGHT
Jin Jia’s Star in the Sky is a dazzling, dreamy fusion of tropical Asian flavors
Jin Jia seeks to transport its guests to the bold, bright Chinese Lantern Festival – the festive holiday that marks the first full moon of the Lunar New Year – without ever leaving the Valley. Visually, upon entering the eatery, guests are welcomed by dozens of hanging silk lanterns, a striking red lacquer wall and a jumbo gold fortune cookie sculpture. “Then both the food and drink menus continue the theme, offering a rich tapestry of elevated takes on Korean and Chinese recipes,” says Luis Grasso, general manager of Jin Jia. Star in the Sky ($18) is a standout on the current cocktail menu. “As the sun is about to set, there is a momentary greenish-blue flash that appears,” Grasso says. “Once it appears, the sun sets and the first star of the night is visible, welcoming the evening ahead.” According to Grasso, just as this flash welcomes the night, so does the greenish-blue cocktail, preparing the tastebuds for a memorable epicurean adventure through Asia. The cocktail starts with homemade pineapple syrup, the result of soaking pineapple with sugar for several weeks. The syrup is combined with Bacardi Silver Rum, Malibu Coconut Rum, lime juice, and Blue Curacao in a shaker with ice. “Before we shake, we add rich coconut milk – a staple in Asian cuisine – as well as Fee Foam, which is an elixir that can froth up a cocktail without the use of egg whites,” Grasso says. “Once shaken until frothy, we strain the creamy creation into a coupe glass.” Garnished with a single star anise to represent that first star in the sky, the vibrantly colored cocktail is silky smooth, and is perfectly balanced between sweet and tart. CHEF CONVERSATIONS In the kitchen with Sam Demarco of Andaz Scottsdale Resort & Bungalows
BY ALISON BAILIN BATZ / PHOTO BY DEBBY WOLVOS
Chef “Sammy D” Demarco is the executive chef of Andaz Scottsdale Resort & Bungalows, overseeing its signature restaurant, Weft & Warp Art Bar + Kitchen, as well as in-room service, pool dining and banquet services.
What inspired you to cook? I grew up in a big Italian family in Brooklyn with three great-grandparents under the same roof, a true gift. We lived upstairs, and anytime we were downstairs, we were cooking! In high school, I cooked to get girls, taking home economics to hone my talents. I have been in the kitchen ever since. What are some highlights of your storied career? I opened First in New York in 1994, during which time I was nicknamed the “King of Comfort Food” and New York’s “Chef to the Chefs.” Steve Wynn would eventually hire me to open Sam’s American in the Bellagio in Las Vegas, and I was recruited by Kimpton in 2016 to open an American concept in their first European property. Above all that, however, my dearest memories are still working on the line with my culinary comrades at New York’s River Café under the iconic chef David Burke. What brought you to Arizona? After Vegas and Europe, I found myself back in the states just in time for the pandemic. During that time, I found myself wanting to plant down roots with my kids. Arizona offered those roots, and Andaz offered the opportunity of a lifetime. We relocated here in late 2023 and are happily making it our home. Tell us about your vision for Weft & Warp? I want people to come together here for a delicious culinary experience while enjoying the distinctive beauty our property has to offer. I also want to make a name for myself in the Valley. As someone constantly reinventing myself and adapting to different culinary landscapes, I am hopeful that here at Andaz, I am ready to push some boundaries with Mediterranean cuisine. What would readers be surprised to know about you? I decompress by swimming, which offers a meditative sense of freedom and tranquility. Andaz Scottsdale Resort & Bungalows, 6114 N. BUEN PROVECHO Elevated dishes inspired by all things marvelous from Mexico BY ALISON BAILIN BATZ
Sonoran Molcajete
The Mexicano Served in a piping hot lava stone bowl, which is traditionally used in Mexico for grinding spices and preparing salsas and guacamole, this molcajete is heated to 500 degrees and filled with three proteins: simmered shrimp, carne asada and chicken. The proteins cook over the sides of the bowl, along with onions, roasted cactus, mafioso salsa, panela cheese, lime, and a type of Spanish sausage called longaniza. Once all ingredients are cooked, the molcajete is brought sizzling to the table with a side Mexican rice, refried pinto beans and warm tortillas. $42. www.themexicano.com.
Grilled Street Corn
Diego Pops This Mexican street corn dish incorporates a sprinkle of an American snack favorite, taking the entire flavor profile to a whole new level. First, chefs begin by grilling one husk of corn, rotating occasionally until cooked through and charred to perfection. Once to temperature, the corn is then slathered in a housemade aioli. The husk is then sprinkled generously with cotija cheese and then topped with the American-loved spicy cheese snack, Flamin’ Hot Cheeto dust. It is finished with cilantro and lime juice. $7. www.diegopops.com.
Roasted Corn Gordita
The Mission The word “gordita” means “little fat one” in Spanish. A traditional Mexican gordita is made with masa pastry and then stuffed with cheese, meat, veggies and/or another filling. The Mission honors the recipe, using masa as the base and stuffing it with roasted corn, squash, zucchini, and mushrooms. The dish also features huitlacoche crema, which is a woody, savory delicacy in Mexico and often nicknamed Mexican truffles. $12.50. www.themissionaz.com.
Wood-Fired Cauliflower Taco
Pita Jungle This vegan taco is a beautiful fusion of the flavors from both the Middle East and Mexico. To make, cauliflower is roasted in a wood-fired oven until tender. Then, tahini, an earthy condiment made from sesame seeds, is added. The cauliflower is placed in a corn tortilla and then topped with a generous portion of caramelized onions, spicy Pita Jungle Sriracha, toasted pine nuts, and parsley. $3. www.pitajungle.com.
Baja Shrimp Ceviche Given Arizona’s close proximity to Mexico and shared Sonoran Desert ingredients, the Valley offers locals and visitors alike nearly endless options when it comes to authentic Mexican cuisine. Here are some of the most impressive, elevated takes on dishes inspired by recipes and bold flavor profiles from south of the border.
Buck & Rider Developed during a trip to Todos Santos, a magical town along the Pacific coast of Mexico’s Baja California Peninsula, this ceviche recipe captures the essence of its vibrant origins. The shrimp are sourced wild from the Sea of Cortez and flown in fresh, where they are combined with cucumber, cilantro, tomato, avocado, and zesty lime juice. Crispy corn tostadas are provided on the side. $19 www.buckandrider.com.

years after being used in Mexican moonshine for centuries, it is safe to say that everything on this restaurant’s menu is made as a love letter to the Sonoran Desert. This particular dish is interesting in that a caramelo refers to two flour tortillas layered with meat. However, this dish is far more substantial and finessed than a simple quesadilla. Expect more of a tostada in texture, layered with carne asada beef; cilantro; red salsa; queso cheese; white onions; and chile toreado, which are chili peppers that are blistered and fried. $14. www.bacanoraphx.com.
Cristina’s Tamale Cakes
Hash Kitchen A south of the border version of eggs Benedict, Cristina’s Tamale Cakes start with panque de elote, which are dense Mexican sweet corn cakes. The cakes are nestled in dried corn husks and then topped with green chili pork and spicy green chili-infused hollandaise sauce. The breakfast dish is finished with two poached eggs and paired with crispy potatoes. $15. www.hashkitchen.com.
Al Pastor Tacos
are cooked with onions, garlic, aromatics, chicken stock, fresh herbs, jalapeno, and dry chilies. The mixture is pureed and poured onto a plate. Layers alternate between crispy tortilla, black beans, tortilla, Schreiner’s chorizo, tortilla, more black beans, and lime crema. It is topped with two fried eggs, avocado salsa, cotija cheese, scallions, and a housemade green salsa. $21. www.hotelvalleyho.com.
Pasilla Crusted Salmon
Barrio Queen Tacos al pastor – also called shepard’s style tacos – originated in the Mexican city of Puebla in the 1930s when Lebanese immigrants introduced them to Mexican locals. In the nearly 100 years since, the pork tacos, marinated with chiles, garlic, vinegar, and aromatics, have become the signature dish of Mexico City, widely available at taquerias in every corner of the region (and beyond). Here, the pork is tucked into a hand-pressed corn tortilla and topped with pineapple, red onions, cilantro, and sauce made from the pastor base. One, $5.50; three, $15. www.barrioqueen.com.
Chiantico Pasilla are chiles that are the dried form of chilaca peppers, also called chile negro, Mexican negro. They are beloved for their mild heat and complex layer of flavors, used brilliantly here to crust a freshly sourced salmon. Balancing the gluten-free dish’s burst of spice are roasted plantains, a starchy fruit used in Mexican cuisine for centuries, as well as creamy coconut rice, cabbage, and a green chili pepper-infused beurre blanc sauce. $35. www.chanticophx.com.
Mushroom Menudo
Tia Carmen In Mexican cuisine, menudo is a traditional Mexican soup that is made using cow’s stomach in broth with a red chili pepper base. Here, the stomach is substituted with meaty cordyceps (mushrooms) and cauliflower mushrooms. They are paired with corn; Chimayo chiles; and epazote, which is a classic Central American herb with a pungent taste and notes of oregano, anise, citrus, and mint. Chile de arbol – a small and potent Mexican chili pepper – finishes the dish. $32. www.tiacarmendesertridge.com.

James Beard Award-winning chef brings his lauded Uchi to Scottsdale
BY ALISON BAILIN BATZ / PHOTOS COURTESY OF WHITE LILY FILMS
In 2003, after apprenticing under iconic Japanese chef Takehiko Fuse in Texas and spending time in Japan to hone his craft, chef Tyson Cole opened his first Uchi location in Austin. Japanese for “home” and named for the little red house where Cole developed what would become his signature nontraditional menu of Japanese specialties with Pacific Rim influences and ingredients from across the globe, Uchi has since grown exponentially. Over the next 20 years, Cole – under the Hai Hospitality brand – has opened additional Uchi restaurants as well as similarly successful concepts in Uchiko, Uchiba, Oheya, and LORO Asian Smokehouse & Bar across Austin, Houston, Dallas, Denver, Miami, Los Angeles, and this month, Scottsdale. “We were attracted to Scottsdale as an expansion for Uchi as it boasts a growing and dynamic community of both locals and tourists, contributing to a lively atmosphere enriched with art, architecture, and a vibrant restaurant scene,” says Cole, today both a James Beard Award winner and American sushi master. The 5,646-square-foot space, which

includes a buzzy sushi bar, was designed by Hai Design Studio and documented by Phoenix-based AV3 Design Studio and Tucson-based design architect Hazelbaker Rush. The interiors explore the intersection of Arizona and Japanese design sensibilities to create a multidining experience in a striking, modern sanctuary. The menu, overseen locally by Hai Hospitality veteran and chef de cuisine Blake Luecke, features a variety of hot and cool dishes including sushi; nigiri; sashimi; tempura; seaweed-wrapped makimono; and yakimono, which are dishes cooked under direct heat such as pan-fried gyoza. The most popular offering is Uchi’s ever-changing Omakase. Loosely translated as “to entrust the chef,” there are six- and 10-course tasting menus available nightly. “For those familiar with the brand, my Hama Chili, which is the dish that started it all and features yellowtail, ponzu sauce, Thai chili, and orange slices, is of course on the menu as well,” Cole says. “We also have crowd favorites in our Masu Crudo, which is made with ocean trout, Japanese sweet potato, and makrut lime leaf, as well as the Lamb Sirloin made with roast kabocha puree, cranberry ginger relish, and spicy pickled kabocha.” Uchi’s beverage menu includes impressive sake-based cocktails. Of note are the Kara Kyuri, boasting yuzu, cucumber, Thai chili, and sake; as well as the Umegave, a combination of hibiscus, sake, makrut lime, and ume boshi, which are Japanese preserved plums. There is also a full menu of sake, wine, spirits, imported and domestic beers, and both traditional and zero-proof cocktails. Uchi is open Sunday to Thursday from 4 to 10 p.m. and Friday and Saturday from 4 to 11 p.m. Happy hour is offered daily from 4 to 6 p.m. Uchi Scottsdale, 3821 N.
