Understanding Hair Extensions
Jo Paris Salon & Spa stylists have a creative flare and passion for helping clients achieve looks they never thought they could have. The best part of their job is when they do hair extensions on someone for the first time., Its very rewarding. Sometimes their clients cry tears of joy and amazement, it can be very emotional. Without hair extensions, they would never be able to achieve the look they’ve always dreamed about having. they love being able to help someone reflect their inner beauty. Are hair extensions high maintenance? Once hair extensions are applied, your only responsibility is to brush your hair daily. Home care requires nothing special; extensions can actually be more low maintenance than most people think. Use of your everyday products, blow-driers and irons are perfectly fine. Three to six months is the average amount of time to wear these extensions before reapplying them, due to hair growth. Do hair extensions break your hair? Hair extensions can be great for your hair. With proper application and removal, clients find that their hair is actually growing, rather than breaking. Breakage comes either from the type of bond used or the individual who is applying them. A stylist’s patience is paramount when applying and removing extensions. That’s the potential for most breakage. The bond must be 100 percent keratin, a natural protein from which human hair is made of. Very few companies actually use keratin; many use glue or tape, which suffocates and breaks the hair. Do hair extensions look fake? Many stylists use synthetic hair, bulky wefts or strips, which look overly shiny and stiff like a wig. We use only 100% human hair, the best quality and takes longer to get, but lasts up to four years. All strands are small, individual pieces so they move freely, like your own hair. With the application technique they use, the extensions are extremely discrete. Blending is critical and strand placement is an artistic process that requires special training. Jo Paris stylists have received additional training to develop the cutting and blending techniques needed to achieve this natural overall look. arch in Scottsdale will always hold a special place in my heart. It was this month three years ago in which I moved here from foggy San Francisco, and I couldn’t have been happier to trade those chillier days for quite-perfect sunny ones. With our March weather and no shortage of activities to do, I felt like I had moved to paradise. Fast-forward to today and I still feel this way. Starting now, we have about two months that feel downright blissful, which means it’s prime time to take advantage of the outdoors with festivals, food and fun of all kinds – and we’ve got you covered. up close “We had our first Fresh Start Gala 20 years ago, and it continues to be our main fundraiser,” says Pam Risoleo, one of chairs of this year’s event. “Here we are 20 years later, and it is very special to me and my husband as they asked us to chair the upcoming event together. We’ve seen it develop over the years and are really proud of what it has become.” Fresh Start was co-founded by Pat Petznick and Beverly Stewart more than 20 years ago, and the gala was created a

Pam adds, “We have some really great

The fundraiser has helped Fresh Start become much of what it is today. “In general, we are at a point where we can receive 3,500 new clients each year,” Pam says. “They can receive counseling, resume-building help, legal advice and basically it is a place where women can come and be empowered to transform their lives.” Additionally, there are about 100 seminars at the center every month, and 80 percent of every dollar
surprises in store for the gala’s entertainment this year. The gala itself is geared toward celebrating the past, present and future of Fresh Start and all those who have helped get us to this point.”
Getting Started With Fresh Start For Pam’s husband, Jim, becoming passionate about Fresh Start when he met Pam was easy. “From my perspective, there are few charities in my mind that do what Fresh Start does on behalf of women.” When Jim and Pam started dating, she introduced him to the center and Jim says he was instantly drawn to the work

that was being done there. “Whether it is helping someone who has lost a job, or someone who is a victim of domestic abuse, Fresh Start is there to help women get the help they need. It serves such a wonderful need in the community.” Jim says it isn’t just about what he saw on the surface; it is about everything going on behind the scenes. “There is a clothing section for women who are in need. There is business clothing for women who don’t have something to wear to interviews. There are classrooms where instruction and seminars take place. It isn’t hard to really become deeply moved by the work that they do when you hear about the center.” Jim notes that it isn’t only the gala that helps him feel a part of what is going on to help raise funds for these women. There is also an annual golf tournament put on by the men’s club that raises a significant amount of money each year. It’s an organization the duo is hopeful will be around for a long time to come. Pam began as a volunteer at the center and her work grew from that point. As a practicing commercial litigator for Greenberg Traurig, she finds volunteer work something that is needed in the world. “This is something I am very passionate about, and I very much enjoy my time with the organization.” Pam adds that while practicing law does take up much of her time, she is committed to finding the time to make room for Fresh Start and the lives she has seen changed as a result of what is happening at the organization. By day, Jim is a nonpracticing attorney, working full-time for Host Hotels & Resorts (parent company to The Phoenician, among others) and finds that being part of the volunteer organization also brings him great joy. “Seeing these women, many of whom have children, seeking self-sufficiency touches my heart and I am just so pleased to be a small part of it.” To learn more about how you can become involved in Fresh Start or get information about the upcoming gala, visit www.freshstartwomen.org.

t’s no secret that children are the future. They’re our future leaders and future entrepreneurs, and this is something you don’t need to remind the founder of Scottsdale-based Herzberg Educational Services, Dana Herzberg. “I’ve been in education my entire career. It is my passion, and I believe it’s what I was put on this earth to do.” In 1999, Herzberg founded On-Track Tutoring with a mission to empower students of all abilities through one-on-one tutoring. It has since evolved into so much more. The Herzberg Educational Services umbrella now runs both On-Track Tutoring as well as The Jones-Gordon School, named for Herzberg’s educational heroes Dr. Clare B. Jones and Dr. Leonard Gordon. Currently, there are 97 students enrolled at the school, which meets the needs of diverse learners or those who thrive in smaller classrooms through a customized program. Ultimately, the school strives to foster social, emotional and academic growth by helping students hone their strengths and gifts. Herzberg says, “We focus on their strengths. If you weren’t in education, what do you think you would be doing? I would be going back to school myself, seeking a Ph.D. in psychology (who knows, I might do this concurrently!). What piece of advice would you give someone considering education as a profession? Being a great teacher is a gift, a calling, an art and a science. It is one of the most challenging yet rewarding careers on earth, requiring both steadfast commitment and willingness to grow and learn. Proceed with caution, enter with an open mind and heart, and be prepared to see challenges the way we hope our students will – as surmountable obstacles. If you could go back and do one thing over, what would that be? I wouldn’t change a thing. tylish and tailored describe the fashionable look one would see CEO and entrepreneur Moe Kittaneh sporting on any given day. “I prefer a more tailored, modern European look when it comes to professional clothing,” Kittaneh says. At the helm of two Scottsdale-based companies, as the CEO and founder of SVELTA Tan (www.sveltatan.com) and CFO and co-founder of Amerisleep (www.amerisleep.com), Kittaneh also says he stays at the forefront of patterns, colors and textures. While you’re not likely to find him dressed in a full suit at the office unless he has an important meeting, he’s always wearing nice dress pants and shirts from designers like Hugo Boss and Ben Sherman, high-quality shoes such as Chelsea boots, and accessories including stylish belts, rings and watches. Outside of the office, Kittaneh finds himself dressing a bit more adventurous. “I do more colors, flashier jewelry and mix designer pieces with metro-style looks.” The entrepreneur’s closet is also filled with a large cologne collection, as he finds himself constantly changing up his fragrance selection. “I am pretty selective about my signature scents. Having several options to choose from is a must to suit a particular mood or outfit.”
Who are some of your fashion inspirations? It changes quite a bit to be honest. The show “Suits” always has cutting-edge looks from top designers like Tom Ford, and I think people like David Beckham and Bradley Cooper have an interesting sense of style as well. Do you try to style yourself after any famous men? I draw inspiration from a lot of places and my own sense of style; I don’t necessarily have a particular style icon. Sometimes I’ll see interesting looks in men’s magazines, runways, social media or even on the street that inspire me to try something new. What advice would you give to young entrepreneurs? To always be passionate and excited about your work, or find a way to get excited about what you already do. It’s passion that will really motivate you to succeed and find your way.

’m not your typical girl who likes to wear dresses all the time.” This is the sentiment one would get from local lifestyle and fashion blogger Laci Langston, whose blog showcases her favorite fashions and products, with words of wisdom thrown in as well. The fashionista says she’s often too particular with dresses and would rather rock a nice pair of pants, or a skirt-andblazer combo. “I honestly prefer pants with prints and maybe a nice blouse, blazer or vest.” Throw in a chunky necklace and funky accessories and Langston is ready to take on her day or night. Whether she is at home or out on the town, Langston says she is dressed to impress. “You never know who you’ll run into so I make sure that I am dressed and ready to go, no matter where I am.” On the weekends, you’ll find Langston matching something like a pair of faux leather pants, a cream-colored top and a black leather jacket. What color trends do you think are most popular this year? Right now, I am loving and living in iced coffee, lilac gray, winter gray, rose quartz and camel. As for jewelry, I’m all about mixed metals and still really love rose gold. What past fashion trends would you like to see make a comeback? For the most part, I’m pretty set on keeping past trends in the past. I’m more inclined to make my own trends, and if they happen to fall in line with current trends then that’s even better. When it comes to work attire, though, I do love the 1960s, like “Mad Men.” Who are some of your favorite Hollywood style icons? In the past, I look at Grace Kelly and Audrey Hepburn for their classic simplicity and timeless style. Taking a look at today, I really enjoy Lily Collins, Sienna Miller and Emma Watson. They all have their own sense of style and always own the red carpet.

He was certainly an inspiration, and I knew while watching him that I would love to play golf myself.” Even with her familial relation to Tiger, Woods notes that she is her own player and her own person. She works very hard to play out of the shadows of Tiger, taking her own stand on the greens, playing to her strengths and improving her game along the way. While Woods has always been a shining star on the golf course, it isn’t the only sport the 25-year-old has spent time playing. “I played a lot of sports growing up. My parents wanted me to be wellrounded, and I got to decide what I liked best and what worked best for me and my skills,” she says. In addition to golf, Woods ran track for a long time, danced competitively and played volleyball. “I love being around sports,” Woods says. “My family was always doing some sort of sports activity, so it was just kind of natural for me to play and be active.” Woods says even to this day, when she comes back to Scottsdale (where she currently resides) after traveling and gets some down time, hiking the mountains and trails around North Scottsdale and Phoenix is one of her favorite things to do. After all the sporting activities as a youth, it came time for Woods to set her focus on one sport and she quickly realized that her love for golf and her talent for the sport was strong. As a teen, she stopped playing volleyball since it was during the same season as golf. She then did the same with track and other sports because, as her dedication to golf grew, Woods needed to streamline her focus.

For Woods, her decision to stick with golf and play on the greens wasn’t just about her famous uncle; she wanted to pave her own way and prove herself on the
course. She played for the Xavier College Preparatory golf team and won back-toback Arizona 5A state championships in 2006 and 2007. After high school, Woods went on to play golf at Wake Forest University in Winston-Salem, North Carolina, where she played and won more than 30 amateur tournaments, all before joining the LPGA tournament. Woods qualified for the 2012 U.S. Women’s Open by finishing as a co-medalist at her qualifier, and she made her professional debut at the 2012 LPGA Championship. It wasn’t until 2014 that Woods finished 11th in the LPGA Final Qualifying Tournament, earning a Category 12 membership, which entitles her to entry in most full-field events. This year’s Phoenix stop on the LPGA Tour, the JTBC Founders Cup, takes place March 17-20 at Wildfire Golf Club at the JW Marriott Phoenix Desert Ridge Resort & Spa with a $1.5 million purse. Woods says being part of the LPGA tournament has felt like a dream come true. “It’s my second year out and I’ve really enjoyed it. I’ve learned a lot, and I’ve enjoyed traveling and playing the great events that LPGA hosts. Truly, I just love playing golf, so it really couldn’t be any better.” Self-motivated and goal-oriented, Woods is always working to set her sights on the future. While she says she knows where she has come from, it is about moving forward and working to become the best golfer she can be – today and in the days ahead. “My goal is definitely to improve from last year. I’ve been looking at my putting stats and my scoring average, and I certainly want to improve on those.” Like any pro athlete, Woods notes that she wants to be a solid player all around. Growing up in the Valley, Woods says she sometimes feels she has a little bit of an advantage when the tour hits some of the warmer climate locales. “I always say that growing up in Phoenix made me immune to heat, so whenever we have hot tournaments it doesn’t affect me. I’m so used to the heat and playing

for so many years in the hot summers.” After being on the road, the golfing ace adds that she still loves to come home to Scottsdale whenever she does get a chance, enjoying the moments she gets to spend in the Valley with family and friends. And any trip back home does include visits with her considerate friends and family. “They are all very supportive of what I have done, and it has been great to keep in touch with them when I am on the road and know that they are back home watching and rooting me on.” Woods also has an extra-special family member at her side assisting her with tour accomodations. Her mom, who has been helping Woods navigate her way through the world along the tour, has almost become like her personal travel agent. “She is always trying to find cheap flights or switch my travel arrangements if I need to. She is always by my side if I need her, and I’m really grateful for that.” As for the future, Woods knows that her heart belongs on the golf course. However, if she were to one day be unable to continue playing and were to walk away from the greens, she says sports would never be far from her mind. “If I weren’t playing golf, I would still do something sports-oriented, maybe broadcast journalism or perhaps, since I love kids as well, maybe some sort of coach.” For now, Woods is continuing to focus on her love for the golf game and her future on the course. “My hope for the future would be to continue to play at this level for as long as I can and to have a successful career and hopefully be a multiple tournament winner.” She also maintains high hopes for the LPGA Tournament itself, noting that this journey has been an amazing one so far, and she’s looking forward to seeing how the tournament grows in the years ahead. “The LPGA is on a great path. There are new events every year, and the tour has received a lot of TV time which has been great, so I think you are seeing a lot more exposure for the events and the girls out here. I think it’s on a great path, and I’m excited to see it continue.”

Pitchers and catchers reported a couple of weeks ago, the full squads for the teams a few days ago and, of course, most eyes in the area are focused on the Arizona Diamondbacks, including young All-Star, right-handed pitcher, Shelby Miller. This past December, it was announced that the Atlanta Braves traded Miller and Gabe Speier to the Diamondbacks for Ender Inciarte, Aaron Blair, and 2015 number one Major League Draft pick Dansby Swanson.

Baseball has always been a part of Miller’s life – even from a young age it has been a focal point for him and, especially, something that has brought his family together. “I played since I was a little kid, I honestly played most of my whole life,” he explains. In fact, when Miller played Little League as a child, his father was his coach from T-Ball all the way up until his high school years. Even in his Little League years, Miller’s team stood out among the ranks, winning two state championships and Miller, himself, was a shining star with a talent that certainly did not go unnoticed. While playing at Brownwood High School, he was honored with a scholarship and committed to play at Texas A&M in 2008 but, as life often does, things quickly took some twists and turns, and, as they say, the rest is history. “I ended going into my senior year not really knowing what to expect and then I was selected my first round draft pick out of high school and the year just began to fly by and it really changed from that point on,” Miller says. “I was blessed with a better situation and I was just excited to see where it all went from that point on.” He started his career straight out of high school when the St. Louis Cardinals drafted him out in the first round of the 2009 MLB Draft. For the young player, the entire process has been a whirlwind of activity ever since he graduated. “I went straight from high school to Iowa and I’d never really left Texas,” he says. “I packed my bags and moved out of state and was living on my own for the first time, in a new place for the first time and I didn’t really know what to expect.” Miller ended up playing three years in the minor leagues with the Cardinals, a learning experience he says he will never forget. It was those formidable years, he says, that lead him to where he is today. “The minor leagues are kind of rough, but at the same time I felt very lucky,” he says. “I knew I had to grow up pretty quickly and learn things fast. I adapted pretty well and had fun doing it.” Following the minors, Miller made his major league debut in 2012 with the St. Louis Cardinals, and then played for
the Atlanta Braves before heading out to Phoenix for his next venture. But, after all the years he has spent playing baseball, Miller adds that it isn’t just his time on the field that keeps his focus and energy moving forward these days. On November 16th, 2013, Miller married his wife Amy, who he says has always been 100 percent fully supportive of his career, through both the easier times, when they were close to home, and the more difficult times when he was traded to other teams that we’re located a bit farther away. “She is so humbled and excited for all of these experiences,” he explains. “She is just as excited about baseball as I am, she understands what it all means and couldn’t be more proud of what I am accomplishing on the field.” Miller says the change, while it might take some adjusting, has been exciting for him and his wife, who are both excited to build a future in Arizona. “We are getting settled in step by step. to stay for long periods of time,” Miller says. “My wife and I are just looking forward to getting settled with our two dogs, a Maltese poodle and an English bulldog and starting our new life here in the Valley.” As Miller sets his sights on Arizona and back on the field, he is preparing for a new season, a new team and a whole new set of goals. “My personal goals are first and foremost to stay healthy because you can’t go out and complete if you aren’t healthy,” he explains. Miller says he hopes to go out on the field and to perform his best, with his eyes set on being named an All-Star this season. However, the team player’s main goal is simply to see the team win. “I hate losing and when you are on a losing team in general, it isn’t fun to play,” he says. Miller says he would love to see the Diamondbacks have a successful, winning season, move onto win the pennant and eventually the World Series. “I think we have the team to do it this year,” he says. “I believe we have the guys on the field to make it happen and now it is about going out there and putting it together and see it through until the end.” Miller is just one of the younger teammates this year with hunger in his heart and mind. For him, he sees that it is just a matter of using the tools the team already has in hand and showing up each and every day, using that heart and hunger in the right manner and there will be no stopping them. Although he will have a family within his teammates, Miller is also also excited that Arizona will be a great location for his parents to travel and see his games. “My parents love baseball as much as I do and they watch as many of my games as they can, they are excited as well to see this season progress. I am hopeful my dad will be coming out to Arizona a lot this year to see me play,” he says. Miller says parents fully support his career, no matter where he is living or what team he is playing for. So it looks like the Arizona Diamondbacks have not only gained a brand new player in the off season, but also a few new fans as well.

THE RUNWAY REIMAGINED Scottsdale Fashion Week returns with a new look
F
rom March 3 to 5, Arizona’s premier fashion celebration, Scottsdale Fashion Week, returns to the Valley for the first time since 2011 and will be hosted at various locations in the heart of Scottsdale’s entertainment district. The three-day runway event will boast luxury fashion shows featuring the latest looks from national designers and high-end brands. This year’s event will kick off Thursday, March 3 in the showroom of Mercedes-Benz of Scottsdale with looks provided by celebrity couture designer Michael Costello. The fashion shows will continue on the W Scottsdale WET Deck Friday night with athletic apparel and swimwear looks including Athleta, Monica Hansen Beachwear and Dillard’s swim featuring Trina Turk, Michael Kors and Jessica Simpson. Scottsdale Fashion Week will conclude March 5 at Livewire with designer and couture fashion by Suitsupply, Fashion by Robert Black, Shahida Parides and MNM Couture. The fashion shows will feature FORD/ Robert Black Agency models, among them being Guess and Marciano model Rachel Mortenson, who will walk in the Michael Costello show alongside other high-profile models. The reimagined layout of Scottsdale Fashion Week offers more than just typical runway presentations. A new live entertainment component will bring local and national artists and DJs to the forefront of the event. ocated in a shaded, lush courtyard in the Scottsdale Design District, you’ll find Tabarka Studio, which specializes in creating custom terracotta tiles. Named after a city in the North African country of Tunisia – a colorful and historic mosaic of ancient civilizations – Tabarka’s aesthetic is drawn from history and far-off locales, providing distinct designs with a worldwide influence.
The visionary behind Tabarka Studio and its products is Meir Zenati, creative director of the studio. At the heart of Tabarka’s portfolio are handcrafted terracotta tiles for homes in the Valley as well as all over the world, with close to 300 dealers. Each custom tile is a labor of love; tiles are hand-sorted, hand-glazed and hand-packed by the Tabarka Studio team. And after years of specializing in

tiles, the studio expanded its repertoire to include rare stones, gold and silver leaf, metals and reclaimed woods for a unique parquet collection. No matter the material, every piece adds a feeling of history, art and luxury to a home. I stopped by to sit down with Zenati and talk about his past, his art and the future in his showroom. Born in Israel to Moroccan parents, it is easy to see his childhood in a country with so much history reflected in his collections, with names like: A Piori, Maghreb, Paris Metro, Nord and Toureg. Each is designed to speak of the Old World’s nostalgia with relevance in contemporary settings. Zenati got his start by creating tables. He states that he has always felt a connection to wood and is drawn to the organic, natural warmth of it. “It’s always alive; wood always moves,” he says, running his fingers across the grain of the gorgeous oak table where we are seated. So, how did this love for creating with wood become the design of tiles? Smiling, he tells me that it all started during a trip to Istanbul. There, they serve tea on small tile-topped tables, and so Zenati was inspired to create similar tile-topped coffee tables. Upon returning home, he was unable to find a tile design he liked. And so like all great creations, it started from a desire for something more. Now, Zenati has created more than 200 designs, each of which can be customized by color, size and shape. He finds influence and inspiration in all things when he travels, with a vision to give people a sense of luxury and transport them to a time between ancient history and tomorrow. When asked if he had a favorite pattern out of all of his designs, Zenati responds with a laugh. “No. Well, they are all my favorite at one point.” Surrounded by gorgeous, subtle design suggestions and samples at Tabarka Studio, it’s easy to see that Zenati follows his passion for celebrating different cultures and finds inspiration in far corners of the world, as well as right here in his own backyard. wo restaurants inspired by south-of-theborder flavors, La Hacienda and Toro Latin Restaurant & Rum Bar, are a delicious part of the Fairmont Scottsdale Princess’ awardwinning culinary program, and we got to know the mastermind behind them both. How did you get your start as a chef? I initially went to school for psychology and then nursing. It wasn’t until I worked at an oyster bar in San Diego that I found my calling, though you would never guess it from week one. On one of my first days, which happened to be the same week as my wedding, I was eager to show I could shuck an oyster with the best of them. I ran the knife all the way up that oyster but didn’t stop once I hit my fingers. Two days later, with stitches and my hand wrapped up, I walked down the aisle to marry the love of my life. It has all been uphill from there, in more ways than one.

Tell us about your journey to the Fairmont Scottsdale Princess. After a few years shucking oysters – which I did master, by the way – I moved to Arizona to enroll in culinary school. I got lucky and secured an externship at Lon’s at the Hermosa Inn, where I met my first real mentor in Chef Patrick Poblete. I stayed with Lon’s well after graduation, eventually becoming their sous chef. From there, I helped open a few spots in Scottsdale before joining the Princess team in 2003. All these years later, I am still here. I love what the Princess has become, and I look forward to what we will offer in the future. Please share a few stories from your time at the Princess. I’ve had the pleasure of working with master chef, restaurateur and TV personality Richard Sandoval for many years at both La Hacienda and Toro, so the stories abound. A few years ago, I traveled with him to the James Beard House in New York to cook a Mexicaninspired dinner for some of the biggest and brightest culinary thought leaders across the globe. Perhaps the only thing that topped that was traveling to Mexico to prepare a feast for the Governor of Puebla, who was hosting 300 world leaders in his city. What are a few stand-out items on your current menus? At La Hacienda, people go nuts for our lobster tacos. And at Toro, try the El Papi, which is an Argentinian sausage wrapped in bacon with homemade Peruvian red chile salsa and chipotle mayonnaise. What’s a fun fact not everyone knows? I love Mexican culture. I’ve been visiting Mexico for 40-plus years and have spoken and written the language my entire life. ucked into the Four Seasons Resort Scottsdale at Troon North, the Onyx Bar & Lounge is nestled between the lobby and the award-winning Talavera Restaurant. Named in honor of the striking ambercolored onyx framing the bar, Onyx showcases a menu of shareable plates and unique entrees, which complement the extensive selection of wines by the glass as well as tempting cocktail combinations. Onyx’s expansive patio is framed by glass, offering unobstructed views of the surrounding Valley and desert, which are especially stunning at sunset with a cocktail in hand. A regular challenge given to the culinary team at the resort is to develop menu items and creative cocktails as stunning as this space and its views. “We’re more than up for this challenge. In fact, we love it,” says Onyx Assistant Manager Nick Padua, whose most recent cocktail specialty, Two Birds One Stone, was inspired by his view of the Sonoran Desert right from the bar. “For the flavor profile, we wanted to balance the earthiness of Dewar’s Scotch and the floral aspects of the chamomile tea with something that speaks to our local market, so we sweetened the drink with local honey, housemade orange marmalade and locally grown Meyer lemons.” Slightly bitter and slightly sweet – with an intense earthy flavor and notes of lemon – the Two Birds with One Stone ($16) name alludes to the drink’s versatility to be served on ice to revive and replenish after 18 holes of golf or served hot while watching the sunset over Pinnacle Peak. For a more challenging climb in the preserve, try Tom’s Thumb Trail, which climbs more than 1,300 feet through impressive boulders.

olkswagen’s most iconic vehicle, the Beetle, has been nothing short of spectacular in releasing special edition trim levels over the years, and the all-new Beetle Dune is the latest. The Dune is actually a throwback to VW’s Baja 1000 off-roading days. As one of the world’s most grueling races, drivers trek across 1,300 miles of unforgiving roads up and down the Baja peninsula in VW Beetles. But before you get fired up, there are a few things you need to know about the new Dune. First and foremost, it is not an off-road vehicle. It isn’t all-wheel drive, and it’s only about 10 mm taller and 14 mm wider than a standard Beetle. Dune is MARCH 2016 |

basically an appearance package that gives the Beetle a more rugged, sporty look. However, there is a lot you do get with the Dune. While it forgoes the Baja Bug running boards, there is nice black plastic cladding along the lower body and wheel openings, a “Dune” striped graphic, silver-painted mirrors, great looking 18-inch wheels, a rear spoiler, and a more aggressive treatment to the front and rear fascias. The Dune is available in three colors: white, black and the vibrant Sandstorm Yellow (tested here). The color of the exterior is carried through to the inside of the car across the doors, instrument panel and even the gauge clusters. Two-tone seats are standard with a combination of leatherette and cloth nicely trimmed with color-matched stitching and piping on the seats. And, it has one of the best looking steering wheels I’ve seen in any vehicle. Overall, the Dune looks terrific. The interior is surprisingly roomy as is the rear cargo area, which has a big hatch in the back. Rear seats fold down so there is plenty of room for your luggage and gear. Available trim levels include either a coupe or convertible, powered by a 1.8liter, 170-horsepower four-cylinder engine mated to a six-speed automatic transmission. I love the way the car drove. It had great handling; a solid, confident feel; and adequate power with an overall experience that puts a smile on your face. While the Dune is mostly an appearance package, it does have a unique look that sets it apart from other Beetles. And best of all, it offers you more than you would expect for your money. First there are options to ask the judge to amend the ruling or award a new trial, but the request has to be filed within 15 days of the final ruling. A notice of appeal must be filed within 30 days of the final ruling if the court has misapplied the evidence or misapplied the law. A panel of three appellate judges will review the appeal and determine if the ruling will be upheld, reversed, or sent back to the judge for another trial or further findings.

That being said, what goes hand in hand with baseball more than a tried-and-true American hot dog? While your regular run-of-the-mill hot dog may be suitable for an afternoon on the lawn during the game, we found the most stellar “haute” dog options available at local restaurants.

They have seven unique sausage plates as well as a build your own option with unexpected accoutrements to try. What to order: The Umami Sausage Plate The Umami begins with a ginger pork and chicken sausage. These unique flavors are then intensified with the addition of ramen noodles prepared in a pork stock with miso, fish and soy sauces. On top of that, you’ll find a miso slaw along with housemade kimchi, scallions and a smattering of eel sauce. While no bun, regardless of how substantial, could ever hold up to the ingredients, you’ll find a delicious Noble Bread bun under there somewhere.

What to order: Tokyo Madness You’ll start with your choice of frank, either beef or vegetarian, and then the magic begins. Perched on top of your link is a combination of teriyaki-style onions, wasabi mayo and toasted sushi nori (seaweed). You may think that the addition of the wasabi mayo would create a clearyour-nose spice level, but it’s mild and not the least bit overpowering. The wasabi, in combination with the sweetness of the onions and the saltiness of the nori, creates an unforgettable taste that may leave you scratching your head, or perhaps ordering another to try to place it.

What to order: The AZ Dog The AZ Dog is Casablanca’s take on the ever-popular Sonoran dog. You’ll find a Tender Belly pork hot dog skillfully wrapped in bacon and topped with relish, heirloom tomatoes, whole grain mustard and Cholula mayo, all on a brioche bun. With a subtle saltiness, the double whammy of pork is cut slightly by the acid in the relish and tomatoes, and the spicy creaminess of the mayo tones down the bite of the mustard, but only a little. You might think that you’d miss the traditional toppings (like refried beans and cotija cheese) found on the original Sonoran dog, but the tweaks made here give this offering a personality all its own.

Newlyweds uncork urban winery concept in Scottsdale BY ALISON BAILIN BATZ

ewlyweds Bill and Debra McDermott are celebrating their first anniversary in a unique way – by opening a business together. “People always warn against working with the one you love, but we wouldn’t want it any other way,” Bill McDermott says. “After working together for years in the IT industry, we decided to take the plunge into the wine business together here in Scottsdale, opening Decantur, the Winery at DC Ranch.” The vision for the winery actually began three years ago, when the McDermotts moved to the area from Southern California. “Back in California, we were members of this great neighborhood urban winery,” Debra says, explaining that although the winery didn’t have a physical vineyard, it did make its wine on-site as well as offer custom blending, theme nights and tasting opportunities. “We just really missed having ‘our little place’ for wine, so eventually we decided to build our own from the ground up.” Like the concept in Southern California, Decantur does not have its own vineyard. Instead, the McDermotts source grape must, which is freshly pressed grape juices that contain the skins, seeds and stems of the fruit, from across the globe to then ferment and eventually bottle on-site. “We know we are not viticulturists, those scientific geniuses who grow and crush the grapes,” Debra says. “We are viniculturists, focused on the final processes of making the wine itself. It gives us the opportunity to bring grapes from California to Spain in-house for our members and guests – we have the best of both worlds.” Decantur itself comprises a 2,400-square-foot space, and utilizes
reclaimed barn wood throughout as decor. The winery has 24 50-gallon tanks as well as four 600-liter stainless steel tanks for winemaking. Thanks to the clever use of garage door walls, guests can actually see the tank room from the expansive tasting bar. For the past year, the McDermotts made good use of the tanks even while constructing the wine bar, crafting and bottling 35 varietals and 50 unique types of wine in advance of the grand opening that took place last month. They also partnered with veteran winemaker Collin Mitzenmacher, who most recently lead Rancho Capistrano Winery in California. He assisted in the development of the varietals and now formally serves as Decantur’s cellar master.
The Wines According to the team, two early standouts are Three Sisters and Daddy Long Legs. “Three Sisters is our most popular white so far, given its perfect marriage of oak, butter and cream flavors,” Bill says. “The origin of the name is actually pretty funny – I am one of the few men I know who prefer white wines to red. When asked why, I usually just joke it is because

I have three sisters. Daddy Long Legs, on the other hand, is among our signature reds, and is a blend of cabernet, zinfandel and syrah. Its long legs on the glass made naming the wine pretty easy.” Decantur will also offer guests the opportunity to blend and bottle wines. “For anyone who wants to order their own batch – approximately three cases of wine – we offer them the chance to come and peel off some of the wine and help with the sprinkling of the yeast, then another chance to have a hand in the winemaking by bottling it with us,” Debra says, also noting they are offering highdefinition custom wine label options, too. In addition to daily tastings, retail sales and bottling options, Decantur features a chef-inspired menu of small bites ranging from charcuterie boards and seasonal bruschetta to flatbread pizzas and paninis. Decantur also kept in mind that not all couples or guests are strictly wine lovers, adding several craft beers to the menu as well. But for those who are, in fact, wine lovers, Bill says they also have several levels of wine club membership, ranging from basic monthly tastings and events to custom bottles and members-only activities.
