Students are making a song and dance of the latest developments at a Darlington school. The former sports hall at Darlington School of Mathematics and Science has been converted into a versatile dance and drama studio, ideal for those taking part in school productions or studying the creative arts - and teachers are already applauding the results. Drama teacher Kayleigh Adams said: “The students are now taking the subject even more seriously and it is incredible to see how their confidence has grown.”
STUDENT SCORES FA CUP PLACE Matty Lovegreen, who is currently working towards a BTEC Level 3 Extended Diploma in Sports at Darlington College, played in the second half of the FA Cup clash between Darlington Football Club and Blyth Spartans. The 17-year-old, who lives in Shildon, attributes this success to his studies and, in particular, the college’s links with the Martin Gray Football Academy. He said: “Thanks to the input of Martin and his team, the course at Darlington College offers young people some amazing opportunities.”
A LOT OF BOTTLE SEARCHING FOR BEASTS Eco visitors of all ages proved they had a lot of bottle by searching for mini beasts at a North East dairy.
BOOST IN STUDENTS AND STAFF Staff and student numbers have been boosted at a Darlington independent school, which is preparing to abolish fees for the first time. Polam Hall, which will become a free school from September 2015, has recruited 17 new staff members, including 12 teachers, and almost doubled its pupil numbers to more than 400. Among the new recruits is drama teacher Richard Brighton, a former professional fight director who has worked in film and theatre for several years. He said: “This is a fantastic moment in Polam Hall’s history, which I’m delighted to be a part of.”
Children, parents and customers were joined by the mayor and mayoress of Darlington, Gerald and Ruth Lee, to look for small wildlife in the grounds of Acorn Dairy at Archdeacon Newton. On the day, prizes were presented to Rosie Burgess, for her collection of frogs, and Bethany Lloyd who caught, what appeared to be, a large aggressive water beetle. Visitors were also given the chance to take a tour of the organic dairy’s milk parlour and natural feed and fertiliser stores, and enjoyed tractor rides to the 10 acre nature reserve, Boggle Hole. DENTAL DREAM BECOMES REALITY
A new radio frequency system, which includes an induction loop for hearing aids and headsets to enhance sound during audio described shows, has been installed at Darlington Civic Theatre.
Anitha Bangaru, who qualified as a dentist in her native India in 2001, has acquired the Springs Dental Practice at Yarm Road.
The new state-of-the-art system, funded through membership fees from the Friends of Darlington Civic Theatre scheme, will be available during the majority of the theatre’s week long productions. For more information call 01325 486555.

SCHOOL’S GOLD STANDARD Parents and staff have been recognised nationally for their efforts after working tirelessly together to improve standards at a Darlington school. Longfield School, at Longfield Road, has been awarded the coveted SSAT Parental Engagement gold standard for involving parents in their children’s education. This was achieved using methods such as parental forums and surveys, continued communication via telephone and post and a password protected internet portal for use by staff, students and parents.
An ambitious business woman has been able to turn her dental dreams into reality with a helping hand from Darlington Building Society.
This was made possible thanks to a Commercial Mortgage from Darlington Building Society, which works with owner occupied businesses and commercial investments across the North East, Cumbria and North Yorkshire. Phil Taylor, Commercial Manager at the Society, said: “It was a real pleasure to work with Anitha and help make her long-held ambition to own her own dental practice become a reality.”

HOLIDAY OF A LIFETIME FOR INJURED YOUNGSTER
THE ART OF WAR
A young girl, who recently learnt to walk again following a serious accident, has enjoyed a oncein-a-lifetime trip to Florida. Sharnice Watson, who was injured in a car accident in August 2013, was one of 192 children chosen for the sunshine state vacation, funded by British Airways’ Dreamflight charity. The Darlington youngster and her travelling companions were waved off from Heathrow Airport by TV stars Denise Van Outen and Charlie Dimmock, before enjoying 10 magical days incorporating visits to Disneyworld and Universal Studios.
A host of unusual activities, including aboriginal art, cosmetic production and war games, are being used to challenge students at a Darlington school. Every Wednesday, around 400 year seven, eight and nine pupils at Haughton Academy take part in an hour-long session designed to develop their skills beyond the curriculum. Other subjects tackled so far this academic year, include Spanish, working with the elderly and playing the ukulele.

WE’RE OFF TO SEE THE WIZARDS… What do you get if you cross a lion, a scarecrow and a tin man with two of the most popular stars of children’s TV? - One unforgettable, family show. This Christmas, dynamic duo, The Chuckle Brothers, return to Darlington Civic Theatre for a sensational, seasonal adaptation of The Wizard of Oz. The brothers, best known for their “to me, to you” catchphrase, are back by popular demand after appearing in Darlington in 2013 and will both star as wizards in the aptlyentitled Chuckles of Oz. The new panto, which features breathtaking 3D sequences, laugh out loud comedy and stunning special effects, will also mark the return of North East actress Beth Stobbart, who will be waving her magic wand in the role of Glinda the Good Witch. We took a stroll down the yellow brick road to meet more of this year’s cast and find out about their quest for heart, brains and courage… Danny Adams, who stars as Tin Man in this year’s production, made his stage debut at just six years old and spent many summers touring the length of Britain with his family’s successful comedy magic show, Circus Hilarious. When he wasn’t on the road the aspiring actor was raised primarily in Rotherham, where he says his panto co-stars, The Chuckle Brothers, were treated “like gods.”
“It’s absolutely amazing to be working with a duo who I grew up hearing so much about and, even more so, to be doing it in an adaptation of one of my favourite ever films, The Wizard of Oz,” he said. Unlike his shiny alter-ego, Danny isn’t lacking in heart and recently returned from a romantic trip to Las Vegas with his girlfriend of five years. “I’m a bit of a softy really,” he admitted. “I even cried at Masterchef once but I won’t be doing that on stage or all my silver make-up will all run off.” Another man who’s unlikely to be shedding any tears (off stage at least) is panto favourite, and self-confessed hardman, Phil Corbett. The North Shields native, who has amassed a host of TV and theatre credits, including Coronation Street, Shameless and The Royal, claims he “isn’t scared of anything,” and will need all his acting acumen to make a convincing cowardly lion. “It’s hard to be a six foot two scaredy cat,” he said. “I tend to take most things in my stride these days, unless of course you ask me to change my daughter’s nappy and that’s a different story.” Phil, who says he’ll be relying on Febreze to keep his furry costume fresh, had this
advice to anyone trying to be a little more courageous. “The secret to being brave is just about diving in and giving things a go. You don’t step slowly into the North Sea in winter,” he said, “you just jump in, get cold for a minute, and hope for the best.” Phil’s panto co-star, Adam Booth, may well have adopted that ‘suck it and see’ attitude when he chose to star as Gregory Lemon, Keith Lemon’s beleaguered brother, in the second series of ITV comedy Lemon La Vida Loca. Now, the star of stage and screen is returning to Darlington Civic Theatre for the first time in three years and is hoping his role as Dorothy’s straw-filled sidekick will help keep him fit. “Scarecrow is quite a physical role,” he said, “but hopefully that will mean I can enjoy a few more potatoes at Christmas. In the meantime, while the others are sweating in tin and fur, I’ll basically be jumping around the stage in a costume as comfortable as PJs, so I’ve no complaints.” While Adam, whose other TV credits, include Coronation Street and Where the Heart Is, has always hated maths, his ability to memorise long scripts suggests he isn’t entirely lacking in brains, unlike his character. So what would he ask the Wizard for? “If I had one wish it would be for Liverpool FC to win the league,” he said: “Although I don’t think even the Wizard of Oz could sort that.” The Chuckles of Oz will be at Darlington Civic Theatre from Saturday December 6 2014 to Sunday January 11 2015. Tickets, priced from £18 to £24.50, are available now by calling 01325 486555 or visiting www.darlingtoncivic.co.uk

CRAFTY CHRISTMAS From wreaths and garlands to tinsel and trees, there are thousands of ways to make your home sparkle this festive season - and we’ve got some top tips for creating even more. This year, we’re getting crafty for Christmas and creating some DIY decorations that will add a personal touch to any seasonal celebration. Here’s how you can do the same…
Crafty cards… With a few crafty tricks you can turn your Christmas cards into a festive wall display. Simply string beads, ribbon on tinsel into the shape of a tree using sticky tape or blue tack. Position a selection of the cards you’ve received from loved ones inside and finish with a decorative bow as shown. This is a great way of keeping your windowsills and mantle clutter free, as a well as displaying all of the pretty designs. Directions and image supplied by Tesco - products shown are Tesco Luxury Christmas Cards £4 for six, Gold Bead Chain £1 and Sequin Bow Decoration £1.50
Wondrous wreaths…
1
This beautiful wreath will serve as a perfect welcome for guests at your door and can be tailor made to fit with your Christmas colour scheme. What you will need: • 30cm polystyrene ring - available from most good craft stores
2
• 100m of Jute twine or natural hessian string - available from general retailers and DIY stores • 2 x coloured ribbon for decoration - available from most good retailers, including many major supermarkets • Scissors Step 1 Bind the twine tightly around the ring continuously until none of the white from the ring is visible. Once covered leave a little excess string at the top for hanging.
3
Step 2 Choose a coloured ribbon and wrap it all the way around the wreath leaving 30cm of loose ribbon at either end to allow you to tie a bow at the top or bottom. Step 3 Choose a different coloured ribbon and tie an additional bow over the top of the first one to create a fuller statement bow. Step 4 Hang your wreath using the excess twine and secure with a panel pin or double sided sticky pad. Directions and images supplied by EASiPanel
Baubles with bling… Baubles are essential to most households’ Christmas trees but, with a little creativity, they can become so much more. This year, why not try utilising your leftover baubles by stringing them together on coloured ribbon to be hung from doors or walls, or simply pour them into bowls to act as simple centrepieces? You can also add a festive feel to the family dining table by joining baubles of different sizes and textures together with ribbon or string and tying them as inexpensive but effective chair decorations. This particular example uses a selection of bows and jewels from Tesco, all centred on a giant gold bauble for dramatic effect. Directions and image supplied by Tesco - products shown are Tesco Giant Bauble, £5 for three, Bow

A NEW LEVEL OF LUXURY One of the North East’s top hotels is about to get even better, with £16m being invested in a new, luxury spa, championship golf course and more hotel rooms. To celebrate, we’ve teamed up with Ramside Hall Hotel and Golf Course to offer one lucky reader a relaxing break for two… Formerly the home of the Pemberton family, Ramside Hall, near Durham, was transformed into a luxury hotel in 1963. Since then it has played host to countless visitors from across the UK and further afield, catering for a vast array of events, leisure breaks and business trips. This stunning four star property, which lies just 30 minutes’ drive from Darlington via the A1, offers the perfect combination of value and service, with the highly trained staff ensuring every guest enjoys the same outstanding experience, however long their stay. For those visiting overnight it boasts 80 beautifully decorated bedrooms, including two Presidential Suites, traditional four poster rooms and deluxe doubles, all complete with luxury bathrooms, complimentary toiletries, bathrobes and access to 24 hour room service. Many of the bedrooms also offer breathtaking views across the adjoining Ramside Golf Club, home to two 18-hole championship golf courses, a golf academy and driving range. These facilities, created by the hotel’s owner Ramside Estates Ltd in partnership with British golf course designer Jonathan Gaunt, are open to golf groups and members, as well as those attending Ramside Hall Hotel and Golf Club on a golfing break.
When it comes to dining, this luxury resort leaves nothing to chance, with a mouthwatering array of options available morning, noon and night. The award-winning Rib Room Steakhouse and Grill, which was recently granted an AA Rosette, offers a French Brasserie-inspired menu, including a variety of locally-sourced meat and fish. As the name would suggest, this venue’s speciality is unquestionably steak, with cuts of fine Durham Beef, matured for between 28 and 32 days, all cooked to perfection in-line with each diner’s preferences. A more informal dining experience can be enjoyed in Ramside Hall Hotel’s Pemberton’s Carvery, which opens for breakfast, lunch and dinner, including a daily Sunday-style roast. Both the Rib Room and Carvery welcome hotel guests and outside visitors alike, with Afternoon Tea also being served Monday to Saturday in the hotel’s relaxing lounges and bar. From spring 2015, Ramside Hall Hotel will also house a state-of-the-art spa, as well as 47 additional deluxe bedrooms. The Spa at Ramside, which is being created as part of an £16m investment by Ramside Estates Ltd, will feature a range of exciting facilities including a 25m pool, saunas and a range of different steam rooms. The plans include four hydrotherapy pools, an outdoor balcony with an infinity pool spa, a Rasul mud chamber, as well as 12 therapy rooms, a gym, two relaxation rooms, six heat rooms, a 25m pool, a dance studio and hair salon.

FESTIVE FOOD & DRINK Christmas is a time to eat, drink and be merry. Here at Darlington Today we’ve embraced the seasonal spirit, sampling some of the finest products to bring you our mouth-watering guide to this year’s seasonal essential indulgences
BOTTOMS UP When it’s time for a toast there is so much to choose from and you don’t have to splash the cash to get a good glass of sparkle. Aldi’s multi award-winning Champagne Veuve Monsigny 1 is priced at just £11.99 and delivers on both taste and aroma. For a lower alcohol option, try the new 5.5% fruit flavoured wines from Blue Nun 2 . They come in standard or sparkling, white or rose with less than 50 calories per 100ml glass (from £3.99, Home Bargains). Our favourite was the Delicate Sparkling White, with a refreshing taste and fragrances of peach and mango. Or, if you’re tee-total this holiday season, try the Celebration White Bubbly or Pink Fizz from Schloer 3 (£2.99). It boasts the fullbodied flavour and bubbles of sparkling wine or champagne, minus the alcohol.

5
Those who can handle things a little stronger will find the aisles full of everything from spirits and liqueurs to ready-made cocktails. Our top seasonal suggestions include Cockburn’s Special Reserve Port 4 (£12, Tesco and Morrisons), ideal as an accompaniment to pudding or cheese and Drambuie Hot Apple Toddy 5 (£9.99), which serves as the perfect winter warmer.

SWEET AS CANDY
NUTS AND NIBBLES
Christmas is a chocoholics dream and this year there’s a wider selection than ever.
If you don’t have a sweet tooth, then stock your cupboards with savoury snacks such as Fairfields Farm Crisps’ new festive release, Turkey, Sage and Onion flavour 18 (delis and farmshops, RRP £1.29).
Among the most unusual new releases is Lindt’s Limited Edition Lindor Stracciatella Truffles 9 (£4.89). The brand’s amazing Christmas Party Mix 10 (£4.99) also proved a hit in the office, featuring mini chocolate bars each with a creamy filling.
Also handy to have in are the seasonal canapés range from cut-price supermarket, Aldi. We couldn’t resist the pleasantly spicy Red Thai and Green Thai Chicken Tartlets 19 (£2) or the Specially Selected Thai Steamed Buns 20 (£2.65), all of which can be cooked quickly from frozen for any unexpected arrivals.
Another sweet treat ideal for sharing is Elizabeth Shaw’s Dark Chocolate Gingerbread Crisp 11 (Sainsbury’s and Wilkinsons, RRP £4), a box of 28 individually wrapped dark chocolates, each with a subtly fiery, ginger kick.
27 2
If you are planning a party, then stock the buffet with delicious, and relatively healthy, gourmet flavoured nuts from Mr Filberts. There are five unique flavours on offer and we highly recommend the French Rosemary Almonds 21 (£2.89).
Festive favourites Terry’s Chocolate Orange and Toblerone have also received a minimakeover. We were left gobsmacked by the Exploding Popping Candy Minis 12 (£2.13) by Terry’s and, even more so, by the limited edition triangle bar from Toblerone 13 (£1.19).
You could also offer a Christmas-inspired cheese-platter, incorporating unique flavour combinations from the Wensleydale Creamy 22 . What could be more festive than a slice of Wensleydale and Cranberries (sold by weight in most major supermarkets), carefully positioned atop a Jules Destrooper Almond Thin 23 (Coop, Tesco and Waitrose, RRP £1.54) and dressed with a dollop of Branston’s Mediterranean Tomato or Caramelised Onion chutney 24 (£1.49).
Not to be outdone, confectionary giant Thorntons has also introduced a selection of special seasonal products. Topping our wish list is the new Dreamy Winter Desserts selection 14 (£10), which serves in decadent puddings, such as Chocolate Fudge Cake, Tiramisu and Banoffee Pie, in bite size, chocolaty chunks. If chocolate isn’t your thing, then why not try the new Werther’s Original Golden Mix 15 (£5), featuring individually wrapped versions of the brand’s Original Butter Candies, Chocolate Eclairs, Caramel Fudge, Creamy Filling and Chewy Toffees.
Add a few chunky pieces of Dickinson & Morris’ Melton Mowbray Pork Pies 25 (from £1.39), made with 100 per cent British pork, and you’ve got a cracker of a spread.
You could also opt for a biscuit bundle, such as the Jules Destrooper Finest Selection Box 16 (Tesco, RRP £4.99), which includes flavours for every taste. And, if you’re trying not to over indulge, you can still satisfy your sweet tooth with an Organic Fruit and Nut Bar from Taste of Nature. There are nine flavours to choose from including Darlington Today’s top choice, the irresistibly named Persian Pomegranate Garden 17 (£1.39, health food stores).

COOKING UP CHRISTMAS WITH MARCO PIERRE WHITE Christmas dinner is arguably one of the most stressful meals of the year, so wouldn’t it be great to have an expert on hand to help you prepare. Well now you do! We caught up with celebrity chef Marco Pierre White and asked him to share his secrets for creating the perfect Christmas feast…
The shopping list Organisation is the key to a stress-free Christmas. If you want to enjoy a bird or a large joint, make sure you order it in advance; don’t, whatever you do, leave it until the last minute. Make a list of what you need to buy and be sure you get the shopping done in plenty of time. This is the time of year when supermarkets will run out of ingredients like Brussels sprouts, fresh cranberries, chestnuts and double cream, so thinking ahead will really pay off.
28 30 | Darlington DarlingtonToday Today
The kitchen kit Being organised also pays off when it comes to the kitchen. Check you have a roasting tin large enough for your turkey or goose; this is the same for serving dishes and the cheese board. And don’t forget to stock up with plenty of kitchen foil and cling film.
White wine and fizz Don’t forget to put your white wine and anything fizzy in the fridge a couple of days before, so it’s lovely and chilled by December 25th.
Christmas canapés Get the meal off to a great start by serving a glass of fizz with a pre-dinner nibble. A smoked salmon paté or Stilton paté is perfect this time of year and can
be made in advance. Serve them on crackers, mini oatcakes or home-made crostini.
The bird We all know people who boast “I’ve just ordered the turkey. It’s a 20 pounder”. They’re insane. The truth is they may as well buy a brick and cook it. If I’m cooking for a larger number, I’d prefer to cook two smaller turkeys than one massive bird.
Gravy You’re wasting your time cooking if you obliterate a plate of perfectly good flavours by drowning it in brown syrup. Don’t ruin your roast, read up on how to make a great gravy first.
Roasting potatoes
Chestnuts
Christmas pudding
The floury flesh of Desiree and King Edward potatoes makes them ideal for roasting. If you can find them, Rooster potatoes are a good option too. I use butter for great-tasting roasted potatoes but at Christmas time you can look out for jars of goose fat to make your spuds really special.
At this busy time of year, who has time to roast and peel chestnuts for stuffing or veg? Take my advice and get readypeeled, vacuum-packed chestnuts instead, they taste just as good and need no preparation whatsoever.
While it’s traditional to have a Christmas pudding, not everyone is a fan. Cater for non-pudding eaters with mince pies, a chocolate roulade or a tangy clementine jelly.
Brandy butter Christmas wouldn’t be the same without it. Make it a few days ahead, store it in the fridge and tick it off the ‘to do’ list.
:
Marco’s countdown for the day itself Cranberry sauce Make it early. Store it in the fridge where it will keep for up to a week and have one less thing to worry about on the day.
Bread sauce Home-made bread sauce really is the best. The trick to making bread sauce is the 3:1 ratio; three times the amount of milk to breadcrumbs. Simple to remember and you can make as much as you like.
Stuffing Don’t stuff the bird; it only slows down the cooking process leaving the outside of the turkey dry. Place the stuffing in an ovenproof dish and bake until cooked through.
Sprouts Buy them frozen. The point is that frozen vegetables are in the freezer within a few hours of being picked. Buy ‘fresh’ sprouts and you’ve actually got no idea when they were pulled out. I like my sprouts with chestnuts; a classic combination.
8.15am: An hour before you’re ready to roast it, take the turkey m out of the fridge to bring it to roo temperature. 8.45am: Preheat oven to 180°C, 4. 160–170°C, fan oven, Gas Mark n ove Place the roasting tin in the too so that it preheats. THE THREE R’s Escape your winter woes with a trip to one of the North East’s leading spas - our writer Claire Buchan did and can’t recommend it highly enough…
At school we’re taught the principles of the three R’s - reading, writing and arithmetic now, at the tender age of 30, I’ve discovered a new and far more satisfying definition for those three little letters - rest, relaxation and Rockliffe Hall. From the moment you enter this five star hotel, tantalisingly tucked away down a long driveway in the centre of Hurworth, you can almost feel the tensions of the day slipping away. Step into the Spa, which can be accessed via the hotel or through its own designated entrance, and it’s like arriving in a whole new world, where stress and worries simply fail to exist. My mum and I visited for the first time on a wintry Wednesday evening, dashing straight from work to enjoy one of Rockliffe Hall Spa’s Twilight packages, priced from an extremely reasonable £65. After being greeted by an extremely friendly receptionist and given a brief introduction to the running order of the evening, we were escorted up to the Brasserie for a mouthwatering pre-Spa meal. With views overlooking the hotel’s golf course and an outdoor terrace to be used when the weather allows, the Brasserie offers a relaxed and refined setting, perfect for dining day or night. Its menu, based on a tapas style selection of small and large plates, offers a wide choice of meat, fish and vegetarian options, as well as a selection of decadent desserts. As part of our pre-paid Spa package we were entitled to spend three points each, equivalent
to three small plates or one small plate and one large. With so much on offer my mum and I decided to pool our points and share four small savoury dishes, before enjoying our own individual dessert. After much deliberation we opted for the beef meatballs, pea and asparagus risotto, chargrilled chicken and a posh parmo - all of which were well presented and cooked to perfection. Despite being surprisingly full we both also managed to finish our desserts of a mini chocolate and espresso mousse and a mini hazelnut semifreddo, both of which came with complimentary tea or coffee. After that it was time to Spa and, if the food upstairs set the standard, then the thermal bathing experience on offer downstairs certainly didn’t disappoint. Following the guide provided with our robes and slippers on check in, we started our Spa journey in the Tepidarium, with warm bodyshaped beds, designed to relax both body and mind. From there we sunk into the hydro pool, complete with a choice of massaging stations that are automatically activated by a timer. My mum was particularly fond of the airbeds, which use tiny bubbles to massage your entire body. The poolside footspa, though slightly startling at first, was equally invigorating, with two foot baths per person allowing you to alternate between hot and cold massaging bubbles. Already feeling refreshed, we decided to heat things up a bit with a visit to the Spa’s Roman
Sauna. The de-toxifying heat was the perfect antidote to a busy day in the office, while the nearby Tropicarium, which uses moist heat to cleanse the skin, was equally satisfying. After venturing in to the Caladarium, which uses hot steam infused with aromatic oils to stimulate the senses and soften the skin, we decided to brave the Igloo. This carefully cooled room is designed to complement the hot therapies, helping to close the pores, reduce inflammation and improve circulation. We topped off our visit with a few lengths in the huge swimming pool and a replenishing drink from the juice bar, which we sipped while lazing on our loungers with a copy of Vogue magazine. Our Twilight Spa package included three hours use of the Spa at Rockliffe Hall in total but, as we stepped out into the wind and rain, we were already vowing to return, next time for even longer. For more details about the Spa packages available at Rockliffe Hall, including individual treatments and offers, visit www.rockliffehall.com/spa/ or call (01325) 729999. DarlingtonToday | 33
OUT WITH THE OLD As celebrations go, New Year’s Eve is probably one of the biggest - but that doesn’t mean it’s always marked in the same way. We’ve put together a brief guide to some of the most unusual customs and traditions from around the world on December 31 - and you may be happier to adopt some more than others…
Dress to Impress We all like to look our best on New Year’s Eve but in some South American countries, such as Brazil and Argentina, it’s your underwear that carries the most significance. According to tradition those seeking passion or love in 2015 should don red or pink undergarments on December 31, while yellow bras, knickers and boxers may help to boost your wealth. In many countries it is also believed that wearing black in any form will bring bad luck for the coming year, while those in the Philippines recommend polka dots for an all-round boost.
You Are What You Eat Food plays a significant role in many New Year’s Eve celebrations around the world, not least in Estonia, where residents eat a minimum of seven, nine or even 12 meals. In Chile families often eat a spoonful of lentils in the hope that it will bring them financial success, while those in Greece tuck into a traditional Vasilopita cake, with a small gift or coin hidden inside for one lucky diner. Across various Spanish-speaking countries, including Costa Rica, Cuba and Spain itself, residents eat 12 grapes, one with each chime of midnight, to represent the months that have passed and encourage good fortune in the ones that follow.

Put Your Best Foot Forward
Feel the Heat
According to many customs, the first steps you take on January 1 could have an impact on the weeks and months that follow, with Argentinians in particular being careful to literally start the year off on the right foot.
Fire plays a significant role in many New Year’s Eve celebrations, most notably in countries such as Panama and Ecuador, where residents burn effigies of key figures, including politicians, in the hope of warding off evil spirits.
In several countries, including Mexico, it is recommended that you spend a few minutes after midnight walking around your house or neighbourhood carrying an empty suitcase to ensure you will have the opportunity to travel in the year ahead. And in Denmark, revellers young and old literally jump into the New Year by leaping from their chairs together at midnight. Here in the UK, the well-known first-foot tradition is still revered in many parts, with householders ensuring that whoever is first to step through their door was not inside when the clock struck 12. In many areas it is also expected that the first footer should bring gifts, such as a silver coin, coal or whisky, to bring prosperity, warmth and good cheer.
Make Some Noise New Year’s Eve is never a particularly quiet time of year and, in many cases, this can be attributed to ancient beliefs that noise can scare away evil spirits - but how you choose to achieve this is entirely up to you. While some cultures, such as those in New Zealand, choose to bang pots and pans together, others, such as China, rely on fireworks that echo as they light up the sky. Singing also plays a huge part in many celebrations, with Auld Lang Syne proving a particularly popular choice in its native Scotland and even as far afield as Puerto Rico.
Clean House Many cultures believe that it’s important to begin the New Year with a clean house - but some take it more seriously than others. In China, it is believed that the entire house should be cleaned before New Year’s Day but not on the day itself, because any housework done on the first of the year could sweep away good fortune. The South African practice of throwing old furniture out of the window has been stopped in most parts because of the dangers posed to passers-by, although residents in some countries, such as Cuba, still throw a bucket of water out of a door or window to symbolically clean the old year out.
It also features heavily in the traditional Scottish celebration of Hogmanay, with parade participants twirling balls of flame to symbolise the sun and purify the coming year - but we don’t recommend trying this at home.
Celebrate with Someone Special In Chile, families often spend New Year’s Eve at the cemetery, ensuring that even deceased loved ones can be part of the festivities. For something a little livelier, Danish revellers stockpile old plates and dishes to throw on their friends doorsteps on December 31. It is believed that the more broken china you find outside your door the following day the bigger pile of friends you have - and hopefully they’ll be there to help with the clean-up.
Wishful Thinking Many people start the New Year with a head full of dreams and wishes for the future - but what can you do to help them come true? In Brazil it’s customary to jump seven waves on New Year’s Eve, making a separate wish with each leap to symbolise the days of the week. In Russia, just before the stroke of midnight, people write their wish for the coming year on a small piece of paper, burn it with a candle and then pop the remains into a glass of bubbly, which must be consumed before 12.01am. Those unable to wait patiently for their wishes to be granted, may want to adopt the Finnish custom of casting molten tin into water and interpreting the shape it makes once cooled. A ring or a heart shape could suggest a wedding in the New Year, while a ship is said to predict travel and a pig or animal shape to represent an abundance of food. A similar trick can be tried in Belarus, where unmarried women use corn in an attempt to predict who will wed in the year ahead. Whoever’s pile of corn a hungry rooster eats first, will be the one to say I Do.
