comic book characters to compete in a special fun run in aid of St Teresa’s Hospice.

Within just an hour of opening for the very first time St T’s Interiors had already met its weekly fundraising target and extra vans had to be called in to restock. St Teresa’s Hospice shop staff, (L-R) Rosina Wills, Richard Cowan and Amy Glancey.

The aptly entitled Hospice Heroes event raised more than £1400, which will be used to help fund the charity’s services across Hurworth and beyond.

CARING FOR THE COMMUNITY Junior school students in Darlington are preparing to showcase their community spirit. Year 3 and 4 pupils at Heathfield Primary School are the first in the town to enrol as Junior Community Cadets.

SCORING WITH SPONSORS One sporting side is proving that you don’t always have to ‘try’ hard to secure sponsors. Darlington Mowden Rugby Park RFC, based at the Northern Echo Arena, has renewed its partnership deals with both PD Ports and M Media & Design Ltd (MM&D). Middlesbrough-based ports and logistics company PD Ports will sponsor Mowden’s first team over the next two seasons, while Hartlepool’s MM&D will continue to design the club’s marketing materials, literature and official match day programmes for at least another year.

MORE TO DO IN DARLINGTON The agency responsible for promoting business in Darlington town centre has announced a lineup of exciting events for 2016.

LEAVING THE COMPETITION GREEN WITH ENVY A Darlington-based community group has been bowled over by public support. North Park Bowls Club, whose playing green has fallen in to disrepair, was awarded a £500 grant from Skipton Building Society’s Grassroots Giving Scheme following a UK-wide vote to find the most worthy causes. The club was one of more than 1000 organisations competing for a share of the £82,000 overall pot and now hopes to repair some of its badly damaged wooden backboards.

HUNGRY FOR CHANGE Healthy choices will soon be on the menu as part of a special school meals initiative. Reid Street Academy is working with the council’s Healthy Darlington Team in an effort to become the first school in the town to receive the Government’s Food for Life bronze award. Pupils and parents are already planning improvements to school menus and the overall dining experience, via the academy’s ‘Pupil Voice’ nutrition action group, helping to boost school meal take-up and make good food an easy choice for everyone.

a Fresh Start

The ball may have dropped on 2016, but the Year of the Monkey has yet to begin. We caught up with celebrity chef, Ken Hom OBE, to talk travelling, cooking and the Chinese New Year… With echoes of Auld Lang Syne still ringing in our ears, the prospect of celebrating another New Year may seem like a long way off – but not for everyone. On February 8, millions of people around the world will be celebrating Chinese New Year and officially welcoming 2016 as the Year of the Monkey. TV personality Ken Hom – who was born in the Year of the Ox - is leading the charge here in the UK and hopes that more people will take to the kitchen and get involved. “Chinese New Year is like Christmas, Easter and New Year all rolled into one,” he said. “It’s a time for families and friends to gather together, host amazing banquets and herald the coming spring. “Food, of course, plays a huge part in this and we tend to serve dishes that are really symbolic such as fish for prosperity, chicken for fortune and noodles to symbolise long life.” Throughout his illustrious 40-year career Ken has lived and worked in countless countries and travelled the world picking up tips that he can share with his loyal and growing fan base. Now, despite being wellversed in cooking everything from Thai to Italian, Ken’s

roots in Chinese cuisine remain as strong as ever and his passion for food continues to grow. “I absolutely love what I do,” he said. “Every day I get to see new things and taste new flavours and I love nothing more than sharing those experiences with the people at home. “In many ways I consider myself a teacher and it’s great to be in a position where I can experiment with different ingredients and methods and share those ideas in a positive way.” Ken’s efforts to educate the masses, including countless cookery books, television shows and a range of chilled meals sold in Tesco, have made him a household name in the UK – with one in 10 families reported to own a Ken Hom Wok. “It’s fantastic to see so many families in the UK embracing Chinese cooking,” he said. “Many of the dishes are quick, healthy and easy to make, so they’re perfect for our busy, modern lifestyles. “I hope that people will take the opportunity to try it for themselves, not just for Chinese New Year but beyond. After all, eating well and being happy can only help to make the world a better place.”

Ken Hom’s Sichuan Prawns in Chilli Sauce Serves 4 Ingredients 450g (1lb) uncooked prawns 1½ tablespoons groundnut oil 2 teaspoons finely chopped fresh ginger 2 teaspoons finely chopped garlic 2 tablespoons finely chopped spring onions For The Sauce 1 tablespoon tomato purée 2 teaspoons chilli bean sauce 1 teaspoon Chinese black vinegar or cider vinegar 1 teaspoon sugar 2 teaspoons sesame oil salt and black pepper For the Garnish Spring onions, sliced lengthways Method If required, peel the prawns and, if you are using large uncooked ones, cut them down the back and remove the fine digestive cord. Wash them and pat them dry with kitchen paper. Heat a wok or a large frying-pan over a high heat until it is hot. Add the oil, and when it is very hot and slightly smoking, add the ginger, garlic and spring onions. Stir-fry for 20 seconds and then add the prawns. Stir-fry the prawns for about 1 minute. Add the sauce ingredients, season with ½ teaspoon each of salt and black pepper and continue to stir-fry for another 3–5 minutes over a high heat.

Ken Hom’s Sweet & Sour Chicken Serves 2 Ingredients 200g sliced chicken breast 2tbsp rapeseed oil 2 cloves of garlic, finely chopped 2 tsp finely chopped ginger 1 tsp grated orange zest 1 tsp grated lemon zest 100g diced onion or shallots ½ a red and ½ a green pepper diced 50g diced pineapple 1½ tbsp granulated sugar

1 tbsp tomato ketchup 1heaped tbsp plum sauce 1 tbsp oyster sauce ½ tsp chilli sauce or freshly chopped red chilli 2 tsp soy sauce 2 tsp rice wine vinegar 5g freshly squeezed lemon juice ½ chicken stock cube diluted in 125g hot water ½ tsp cornflour diluted with 1 tbsp of water

Method Heat wok until smoking. Add 1 tbsp of the oil and quickly fry the chicken breast until browned and cooked halfway through. Remove chicken from wok and set aside. Wipe wok and then add remaining tbsp of oil. Add garlic, ginger and fry on a medium heat until lightly brown. Add orange and lemon zest and lightly fry with the garlic and ginger for 30 seconds. Add chopped onions or shallots, green and red peppers and fry off in the wok until lightly browned, but still crunchy. Add diluted chicken stock, ketchup, sugar, plum sauce, oyster sauce, soy and chillies to the wok and bring to a simmer whilst stirring together. Add the sealed chicken breast and cook through until tender. Then add lemon juice and rice wine vinegar. Finally, add diluted cornflour to the sauce and simmer for one minute or until it thickens and is coating the chicken. Serve immediately and enjoy!

Garnish with the spring onions and serve at once.

Head Chef Steve Smith of Michelin Star Bohemia Restaurant has shared his Hedgerow Jam and delicious fruit scone recipe created for the hotel’s Bohemian Afternoon Tea Collection. Head Chef Steve Smith @ Bohemia has held a Michelin Star for over 10 years from the age of just 24. Steve has enjoyed a spectacular year being named Catey Chef of the Year 2014, retaining Bohemia’s Michelin Star, being awarded 4AA Rosettes, as well as being listed in The Sunday Times Top 100 Restaurants, with special praise being given to Bohemia’s desserts which were listed ‘6th Best in the UK’.

Steve Smith’s Hedgerow Jam Ingredients 2kg Wild Fruits (Sloes, Bilberries, Blackberries, Elderberries, Rosehips) 2 Cooking Apples Water Sugar Method Remove any stalks and dry leaves from the fruits. Cut the apples into quarters. Put the fruits into a stainless steel pan and cover with water. Simmer until soft for about 30 minutes. Unlike other jams and preserves this needs to be sieved to remove seeds and pips. Force through a sieve and weigh the pulp. Transfer to a clean saucepan and add an equal weight of sugar. Bring to a boil stirring to dissolve sugar and cook over a high heat until jam reaches setting point (105°c). Remove from the heat and leave to cool for 20 minutes. Then ladle into, warm sterilised jars to within ¼ of the rim. Wipe off any sticky drops with a hot damp cloth. Place a wax paper disc onto the jam surface to seal. Cover the mouth of the jar with cellophane, fastened with an elastic band.

Steve Smith @ Bohemia Michelin Star Fruit Scones Ingredients (to make 10 scones) 300g Plain Flour 32g Caster Sugar 18g Baking Powder 44g Unsalted Butter 250ml Milk 140g Sultanas 1 Egg Method Mix flour, sugar, baking powder & butter until the butter has crumbled. Add sultanas and milk. Roll out on a floured surface, cut to the desired shape and size, eggs wash (1 egg and a splash of milk) & leave to prove for 15 minutes. Bake @ 180°c for 10-12 minutes or until golden. Store and use as required.

find me on The Mayonnaise Jar and Two Cups of Coffee When things in your life seem almost too much to handle and 24 hours in a day are not enough, remember the mayonnaise jar and two cups of coffee… A professor stood before his philosophy class and had some items in front of him. When the class began, he wordlessly picked up a very large and empty mayonnaise jar and proceeded to fill it with golf balls. He then asked the students if the jar was full. They agreed that it was. The professor then picked up a box of pebbles and poured them into the jar. He shook the jar lightly. The pebbles rolled into the open areas between the golf balls. He then asked the students again if the jar was full. They agreed it was. The professor next picked up a box of sand and poured it into the jar. Of course, the sand filled up everything else. He asked once more if the jar was full. The students responded with a unanimous “yes.” The professor then produced two cups of coffee from under the table and poured the entire contents into the jar effectively filling the empty space between the sand. The students laughed. “Now,” said the professor “I want you to recognise that this jar represents your life. The golf balls are the important things - your family, your children, your health, your friends and your favourite passions - and if everything else was lost and only they remained, your life would still be full.

If you put the sand into the jar first,” he continued, “there is no room for the pebbles or the golf balls. The same goes for life. If you spend all your time and energy on the insignificant things or small stuff, you will never have room for the things that are important to you. It is important that you pay attention to the things that are critical to your happiness. Play with your children. Make time to get medical check-ups. Take your partner out to dinner. Attend your Glow classes. There will always be time to clean the house and empty the bin. Take care of the golf balls first-the things that really matter. Set your priorities. The rest is just sand.” One of the students raised her hand and inquired what the coffee represented. The professor smiled. “I’m glad you asked. It just goes to show you that no matter how full your life may seem, there’s always room for a couple of cups of coffee with a friend.”

TAKE TO THE SKIES FROM DURHAM TEES VALLEY Your guide to holiday hotspots for the half term and beyond It may not seem long since they went back to school but February does welcome the first of this year’s academic breaks - sorry parents!

Venture outside the urban sprawl and you will find more to explore, including the wonderful walks along the coast, as well as countless castles and dozens of distilleries.

If you’re already panicking about how to keep your youngsters entertained during this half term week - and the many holidays yet to follow - then a family getaway could be just what you need.

If you fancy something a little more remote, then Eastern Airways also offers visitors easy access to a number of other, arguably quieter Scottish destinations.

Start your journey at Durham Tees Valley Airport, located just six miles from Darlington on the A67, and in no time at all you could be seeing the sights in Sydney or swimming in a Scottish Loch. Hop on board one of KLM’s three daily flights from Durham Tees Valley to Amsterdam and within 80 relaxing minutes you’ll be at the gateway to the rest of the globe. From there you can continue your journey to more than 200 wonderful, worldwide destinations, including Sydney, Cape Town, Bangkok and Cairo. Why not live it up in the Big Apple for a week and explore landmarks such as the Empire State Building, Brooklyn Bridge or the Statute of Liberty? Or spend the school holidays discovering the ancient temples and trendy shopping districts of Tokyo, Japan? MAC AGAIN The ultimate tribute to one of rock and roll’s most remarkable groups is back by popular demand. Rumours of Fleetwood Mac have already performed to more than a million fans over the past 10 years and are returning for a UK tour in early 2016. SNUG AS A BUG Fashionable fixes for keeping your child warm this winter They tear them, stain them and spill all manner of food on them – in fact you name it, kids will ruin their clothes just by being kids. When it comes to replacing their worn out wear it’s all about finding something that they love, but also ticks all your practicality boxes too. Here are our top tips to help youngsters stay snug and stylish all season long. Love those layers: With the British weather as changeable as ever, layers will ensure your child is appropriately dressed no matter how many seasons each day holds. Try pairing long sleeved t-shirts with jumpers, cardigans or even a gilet so they have the option to remove one layer if the temperature climbs or they venture indoors. Get your coat, you’ve played: It’s not always easy to get your child to cover up but, with so many amazing coats on the market, chances are they will find

one they love. From waterproofs with detachable hoods to fancy fur covered creations there’s a whole range of affordable options on offer – we’ll just keep our fingers crossed that you don’t have to chase them around to get them on. Don’t forget the fun: Winter clothing needs to be practical but there’s no reason it can’t be fun, too. Try to find items featuring their favourite characters or opt for bright colours which are more likely to stay on and less likely to get lost at the back of the cupboard. Start with the shoes: Strong footwear is the foundation to any great outfit and, when it comes to kids, we know it needs to be comfortable, and practical, too. This time of year its worthwhile investing in a good pair of snow boots or even wellies, just remember to check they have a good, strong sole and thick tread in case Jack Frost comes nipping at their toes.

Always accessorise: Scarves, hats and gloves are a must at this time of year. Many stores are now selling matching sets which enhance the look and keep costs down but, if you’d prefer, go for a mix and match or maybe even knit one of your own. It’s all in the jeans: Dark denim is a wardrobe staple for young people this winter. It’s durable, doesn’t show stains and does offer some protection against the elements –just be aware that if it gets extremely wet it can start to rub and will take a long time to dry, so best pack a change of clothes just in case. As an alternative try cords, cargo pants, leggings or extra thick tights.

ROBERT MAPPLETHORPE: THE MAGIC IN THE MUSE UNTIL 24 APRIL 2016 The photographer Robert Mapplethorpe found inspiration from a wide range of sources: musicians, artists, the famous and the unknown - each were treated with both reverence and playfulness in his search for ‘the one with the magic’. The Bowes Museum focuses on three key themes to explore this idea: ‘movement’, ‘celebrity’ and ‘musicians’. The exhibition forms part of ARTIST ROOMS - a diverse collection of works held by the Tate and National Galleries Scotland – which is shown at The Bowes Museum for the very first time.
