SCHOOLING ACROSS THE SEAS

Entrepreneurial students aged 16 to 19, have launched a new business that will use their computer skills to solve IT issues across the North East.

Pupils from West Park Academy have been learning about the life of destitute children on another continent.

The group, all studying Level 3 BTEC support and networking at Darlington College, have set up Vybrus Hosting to offer bespoke internet packages for individuals and startups. The company, which uses data centres in Coventry, Texas and LA, can provide web hosting services as well as web design and technical support.

The Year 5 students, who are currently researching living conditions in India, were visited by charity workers Kim Wakeham and Gary Broom who make regular trips to deliver clothing, toys and toiletries to young people in the country’s capital. The duo, who also work at Catterick Garrison’s Medical Centre, shared stories of the struggles faced by Mumbai’s street children who Kim says are desperate “to go to school and give themselves a chance of bettering their lives.”

UPPING ROOTS TO REDCAR One of Darlington’s most popular events is making a temporary exit from the town for 2016. For the first time in its history, the awardwinning Festival of Thrift is relocating to Redcar and will run in Kirkleatham on September 24 and 25. Organisers hope that the move will show how the event can inspire and support the economic future of communities throughout the Tees Valley but say they plan to return to Darlington in 2017.

A Darlington-based foodservice consumables company has landed a new contract with one of Middlesbrough’s most majestic venues.

A fledgling legal assistant is spreading his wings after finding a new way of upholding the law.

MAC International Food Service, based at Yarm Road Industrial Estate, has signed up to provide the 17th century Acklam Hall with new crockery, glassware and cutlery. FutureChef local finalist Lennon Thompson

COOKING UP A STORM A budding chef, too young to compete in a prestigious competition, has been awarded an early place in this year’s final.

The company, which works with independent hotels, restaurants and caterers throughout the North of England, will also be supplying foodservice consumables, disposables and hygiene cleaning systems for the Grade 1 listed building on a weekly basis.

Karl Wake, 22, once dreamed of being a policeman and initially studied uniformed public services at Darlington College. But, after being accepted to study law at Newcastle University, the young paralegal is now working at Darlingtonbased Iodem Health Limited, which handles high profile legal cases within the healthcare sector across the UK.

Eleven-year-old Haughton Academy student, Lennon Thompson, had his dreams dashed when he turned up to compete in the Darlington College round of the national FutureChef competition 2015 and found he had to be a year older to officially enter. Despite being unable to win, judges allowed Lennon to take part in the cook off as invaluable experience and were so impressed with his skills that they have now guaranteed him a spot for the 2016 competition. “I had been practising all week so was upset when they said I had to be 12,” said Lennon, “I can’t believe that I am in the next local final. I’m so pleased.”

AS PRECIOUS AS A PEARL One of Darlington’s most cherished charities is celebrating 30 years of helping families from across the town. We caught up with the staff and supporters of St Teresa’s Hospice to find out more about its past achievements and what the future holds in store… When St Teresa’s Hospice first opened its doors in 1986 it did so with one clear mission - to help anyone with a life-limiting illness that was no longer responding to curative treatment and to provide as much support as possible to them and their families. Thirty years on and the charity continues to uphold its original values, offering an extended array of services for free to those most in need across North Yorkshire and South Durham. This includes Hospice at Home respite services, day therapy and in-patient care for those with life-limiting conditions, as well as counselling, social work and bereavement services to give their carers and loved ones much needed support. “Before the hospice, people spent the last days of their lives in a side room of the hospital, while their relatives received very little in the way of support,” said hospice chairman and retired GP Harry Byrne. It was this bleak picture of end-of-life care that inspired North East woman Yvonne Rowe, whose friend was seriously ill at the time, to write an open letter calling for change.

This prompted a public meeting, which ultimately led to the creation of St Teresa’s Hospice, for which Mrs Rowe is considered a founding member. “I still find it hard to believe the impact my letter had,” she said. “I thought we would have to fight for every penny and that I would not see it in my lifetime.” Contrary to Mrs Rowe’s expectations, St Teresa’s Hospice has flourished over the past three decades and provided a lifeline for thousands of people and their families – though keeping it going is an ongoing process. While some of the charity’s annual £2m running costs come from NHS aid, the majority has to be covered by fundraising events, charitable donations, legacies and corporate support, as well as money raised in the charity’s shops. Its success relies heavily on the dedication of more than 400 volunteers, including North East entrepreneur and current hospice president Alasdair MacConachie, who describes it as “the most fulfilling challenge of my life”.

It is this labour of love and enduring support from the local community that is helping St Teresa’s not only continue its work but to thrive and expand in what is otherwise a tough, economic climate. This year the charity plans to launch a new £1.2m inpatient unit, with 10 additional beds to ensure it can benefit even more people in the years to come. “The hospice is the embodiment of people helping other people” said Chief Executive Jane Bradshaw, “and we are going to need more help in the future, so that we can continue to help our patients.” More information about St Teresa’s Hospice and the opportunities available to offer support can be found by calling 01325 254321 or visiting www.darlingtonhospice.co.uk

PASSION FOR PASHA One of Strictly Come Dancing’s hottest stars is waltzing back into Darlington by popular demand. We sent a swooning Claire Buchan to find out more…

Since samba-ing onto our screens in 2011, Pasha Kovalev has become one of Strictly Come Dancing’s most popular professionals. Twice runner-up with partners Chelsea Healey and Kimberley Walsh, he competed with Countdown presenter and rumoured real life romance, Rachel Riley, in 2013, before finally landing the glitterball trophy with Caroline Flack the following year. “Strictly is such an amazing experience,” said Pasha. “Being able to dance every week and watch people improve, it’s a great process.” While Pasha’s performance in the most recent BBC series was unfortunately cut short when he and partner Carol Kirkwood were eliminated in week seven, fans will soon be satisfied in their demand for more.

This spring the Siberian star and his cast of experienced performers will be hitting the road for an extensive UK tour, which arrives in Darlington on April 4.

“Everyone is capable of dancing,” he said. “While some people pick it up quite easily, others will take a little longer to get to grips with the steps.

“It’s great to get out on the road and bring dancing to the people,” he said. “I love the Strictly experience but I grew up performing live in competitions and it’s just not the same dancing to cameras on TV.

“Many of the celebrities taking part in Strictly Come Dancing have no prior experience but you will see them slowly becoming dancers as the weeks progress.

“The audience in Darlington are always very welcoming and when people are open to the experience and you can see they are enjoying themselves, that’s really all I need.” Pasha’s new show, simply entitled It’s All About You, will build on the success of previous tours, with plenty on offer to please audience members of all ages. “Everything in All About You, from the costumes to the choreography, is completely new” said Pasha. “We’ll be performing a wide range of dances from Latin and Ballroom, with each carefully crafted to tell a story and reflect a rainbow of human emotion. “For the first time we’ll also have a singer performing alongside the dancers and there will be a mix of modern and classic songs that the audience members are sure to recognise. “It’s really been designed as a show for all the family, with plenty of lights and sparkles thrown in for fun.” Pasha, who has already appeared on Broadway and in London’s West End, hopes that his new, sequin-laced show will also inspire more people to don their dancing shoes.

Right at Easter

Mrs RIGHT managed Christmas without too much problem, maintaining her RIGHT weight even though she faced many challenges. She was determined not to spoil her hard work despite the fact that there was always something LEFT at home to tempt her. The two RIGHT children, tsy and n made it hard to avoid temptation. Still, she had LEFT her old self behind and was looking forward to coming the new, slimmer, RIGHT self! But now she had to face Easter! Everywhere she looked, LEFT, RIGHT behind her; there were chocolate eggs and more chocolate eggs. The temptation was coming RIGHT difficult! ‘RIGHT’, she said ‘I need a plan’! tsy RIGHT and n RIGHT still wanted chocolate eggs, but what Mrs RIGHT didn’t want was too many eggs LEFT over. This would be when Mrs RIGHT would cheat! ‘Firstly’ she said, ‘I need to careful how many eggs the RIGHT children are allowed’. This would help! ‘Secondly, I will eat healthily for 80% of the week, so when the family visit at the weekend, I will able to have some treats and enjoy the day with my 20% not so good eating’. Mrs Right decided to go shopping to attie’s. She dragged n RIGHT and tsy RIGHT along with her. As usual they moaned (as children do), Mrs RIGHT informed them that exercise was good for the heart. Still they moaned and wanted to LEFT in the car, but Mrs RIGHT insisted (they would thank her in the future) and if they didn’t come with her, there would no eggs. That did it! Mrs RIGHT studied hard to find the RIGHT Easter goodies enabling her to make home-made delicious food for the family to enjoy. The RIGHT children thought this was a waste of time, as all they wanted to eat was chocolate! Mrs RIGHT

was very pleased with herself and managed to get n RIGHT and everything she wanted. tsy RIGHT who were not interested in ‘good fat’, ‘seeds’, ‘fruit and vegetables’ were coming very worried that they would have to eat only carrot sticks! But they needn’t have worried as there were plenty of goodies for the whole RIGHT family to enjoy. Especially Mr RIGHT who had been trying to take a leaf out of Mrs RIGHT’s book and lose some weight. He was very pleased to find he could enjoy his favourite Cadburys cream egg, without damaging his diet. Easter Sunday arrived along with a houseful of people. Mostly other RIGHT family members but some close friends as well. Not to be LEFT out tsy RIGHT had invited two of her st friends, n RIGHT also invited a couple of his friends too. It had come quite a turnout! All the RIGHT family and their friends were impressed at the large spread of food on the table, everyone was told to help themselves. RIGHT in the centre of the table was the chocolate goodies. No-one could lieve their eyes; chocolate date cup cakes, chocolate mousse with strawberries and a large carrot cake with butter icing. All made by Mrs RIGHT using the recipes she was given from her Coach Dianne Darville. No-one knew that all the food on the table was healthy; Mrs RIGHT used extra virgin olive oil instead of butter in the cakes, 90% dark chocolate, dates, nuts, fresh and dried fruit, full fat fromage frais, organic free range eggs and spices. Coach Dianne explained that these were all necessary for

a healthy body. Even the hot cross buns, finger foods and Pizza slices were healthy. By the end of the day there was hardly anything LEFT on the table. Mrs RIGHT knew that the day had been a tter still, when Mrs RIGHT huge success, but returned to class the following week her diet would not have been ruined, the scales would kind to her. Everyone went home, full and happy but without knowing that they had had a very healthy day! You can entertain; get through all sorts of occasions without damaging your hard work. Beer Battered Fish with Minted Peas Created by TV chef Rachel Green on behalf of the Yes Peas! Campaign - serves 4 Ingredients For the fish: Vegetable oil 4 x 180g pieces skinless white fish 2 tsp baking powder 300g plain flour 400ml very chilled beer or ice cold sparkling water Freshly ground sea salt For the minted peas: 350g frozen peas 4 tbsp. double cream 30g butter 1 tbsp. fresh mint, chopped or 2/3 tsp mint concentrate Sea salt and black pepper

Method

Ingredients:

In a bowl, stir the baking powder into the flour and season with sea salt then quickly whisk in the cold beer or sparkling water until you have a thick paste. This needs to be done just before you cook the fish.

For the salad: 1 pack (approx. 125g) British asparagus tips 135g watercress and salad leaves 100g smoked salmon 2 cooked beetroot dipped in vinegar (not pickled), cut into eighths

Heat the oil in a large pan or deep fat fryer to approximately 185°. Dip the fish into the batter and carefully lower into the oil, making sure it doesn’t stick. Cook the fish, one or two pieces at a time, for 4-6 minutes each, until crisp and golden. Lift from the oil and drain on kitchen paper before repeating the process with the remaining pieces. To make the minted mushy peas; bring a pan of salted water to the boil and add the frozen peas, cook gently for 3 minutes or until tender. Drain the peas and transfer to a blender, add the cream, butter, mint and season with sea salt and black pepper. Blend the ingredients together until it has a thick texture with small pieces of peas still remaining, then place in a small saucepan and reheat. Serve the fish and minted peas with, chunky chips, lemon wedges, tartare sauce and vinegar.

For the dressing: 3 tbsp. horseradish cream 2 tbsp. Rachel’s Organic Natural Yogurt 1 tsp white wine vinegar Black pepper to season 1 lemon, juiced What to do: Place the British asparagus tips into a pan of boiling water and cook for 3-4 minutes. Assemble the salad leaves and watercress onto two small plates and lay on the smoked salmon. Add the beetroot to the salad, then drain the British asparagus tips and lay on top. Finally mix the dressing ingredients together and drizzle over the salad with lots of black pepper to season. Finish with the lemon juice. Darlington Today | 21

PUPPY LOVE A homeless puppy has found a new lease of life as a Pets As Therapy dog. Lewis, now aged seven, was born at Dogs Trust Darlington shortly after his mum was abandoned by her former owner. While the Lurcher’s nine brothers and sisters were soon adopted, Lewis took a little longer to catch the eye of his ‘forever family.’

GOOD GROOMING A Darlington couple are proving that success can be more than just skin deep after launching their own male grooming brand. Husband and wife team, Thom and Laura Langlands, spotted a gap in the market for homemade, luxury beard care products and Heavy Metal Gentleman (HMG) was born. “Thom is an avid beardsman and, with my understanding of hair and skin care, creating products quickly became a passion of ours.” said Laura. The dynamic duo, who based the brand name on a shared love of skin care and heavy metal, began working from their home to develop a range of natural, handmade oils and balms.

“But Lewis’ gentle, calm approach to life means he’s a wonderful PAT dog and he now laps up the attention.” Pets As Therapy is a national charity, which was founded in 1983 to facilitate visits by volunteers and their pets to hospitals, hospices, care homes, special needs schools and other similar organisations. As a member Lewis makes regular visits to North Park Care Home and Riverside View Care Home, as well as the Alzheimer’s Society “D-caf” Dementia Café, which his owner John Dodworth attends. Dementia Support Worker, Jenny Leeming, who helps organise the “D-caf” said: ‘If people have had pets at home throughout their lives it can be a great sadness not to have contact with a furry friend. “A visit from Lewis brings back very happy memories and it’s so lovely to see people’s faces light up when he comes over to them.”

“By brewing the oils and creating the balms ourselves in our kitchen we are able to pay a great amount of care and attention to what we produce and go on to sell, ” said Laura. “There’s no doubt a lot of blood, sweat and tears goes into everything we make but at least we know it’s 100% homemade.” With 20 years of experience in retail and sales between them, Thom, age 30, and Laura, aged 25, are continually developing new ideas and recently signed deals to have their products stocked by Darlington retailers Maison Royale and Mr. Hutton's barbers and bar. “It is a very exciting time for us because Lewis visits the Alzheimer’s Society “D-caf” Dementia Café.

Now a Grade 1 listed building, Thornton Hall at Staindrop Road, was built by Ralph Tailbois around 1550. Originally there were three distinct walled gardens, with Elizabethan raised borders and an avenue of lime trees marking the entrance.

There has been a house on this site since the 1600s and, while the privately-owned property itself is not open to the public, its 16th century gardens are a popular Teesdale tourist attraction. The four acre Walled Gardens, which open seven days a week all year round, boast a variety of rare and unusual species with an emphasis on hardy, herbaceous stock that can thrive in the climate of the northern dales. Many of its features date back to Victorian times, with a guided garden walk also offering access to the original village church and church yard nearby. When it’s time to take a break, the adjoining Coach House Tea Room offers an array of light meals and snacks, while the plant nursery and shop gives visitors the chance to take a little piece of the garden home.

Over the years these gardens were repurposed and, at the time current owners Mike and Sue Manners moved in, were being used as paddocks for grazing cattle and sheep. In a labour of love, Sue has gradually transformed one of the gardens to its former glory and now opens it to the public on selected dates throughout the year. Richmond Castle, Richmond www.english-heritage.org.uk/visit/places/ richmond-castle/ Originally built to subdue the unruly north of England, Richmond Castle is one of the best examples of a Norman fortress still standing in Britain today. All but one of the hilltop buildings date back to medieval times and all cluster around a large central grassed area with magnificent views over the river a hundred feet below. The site’s main garden, which sits outside the castle walls, was added in 2000 and now boasts a mix of wild and cultivated flowers, trees, benches and grassy picnic areas spanning just over an acre. Richmond Castle will be hosting an Easter Adventure Quest from Friday March 25 to Monday March 28, with more exciting events already planned for June and July.

This includes the Secret Walled Garden, Shakespeare Garden and Cathedral Garden, as well as a moat pool and maze. While some elements of the garden have stood for centuries, others are relatively new additions and all offer hours of fun for the whole family. Key events planned at the attraction in the coming months include fun with the Easter Bunny on March 27 and 28 and Fairy Tale Week from May 29.

Kiplin Hall, near Scorton, North Yorkshire www.kiplinhall.co.uk This intriguing property, built as a hunting lodge by Secretary of State, George Calvert in the early 1620s, is currently furnished as a comfortable, Victorian home, with 17 rooms open to public viewing. Interior highlights include an eclectic mix of furniture and personal items from the four families who previously occupied the hall, as well as numerous paintings from the 16th, 17th, 18th and 19th centuries. Kiplin Hall’s Gardens, which are currently undergoing a major restoration, include an 18th century walled garden, mile-long riverside walk and peninsula wood, as well as family areas with wooden games such as croquet.

Activities will be running throughout the Easter weekend (March 25 to 28), with further events also planned for families, art lovers and history buffs.

The Botanic Garden, Durham City www.dur.ac.uk/botanic.garden/ The 10 hectare Botanic Garden is set amongst beautiful mature woodlands on the southern outskirts of Durham city centre. As well as providing an academic resource to Durham University, the garden is also open to the general public and welcomes visitors of all ages throughout the year. Why not take wander through the alpine garden, glance around the bamboo grove or stop for a moment in the wildflower meadow? Alternatively you can try your hand at traditional crafts (March 25 and 26), woodwork (April 24) and a variety of other skills in activities running throughout the year.

Thorp Perrow Arboretum, Bedale www.thorpperrow.com/gardens.html Situated in the Yorkshire Dales, Thorp Perrow Arboretum is one of the finest private collections of trees and shrubs in the UK. Unique to Britain, if not Europe, this 100 acre site was created by Colonel Sir Leonard Ropner (1895 – 1977) and is now open to the public all year round. In the spring, visitors can enjoy one of the most extensive plantings of daffodils in the north of England, with carpets of bluebells and bold drifts of wild flowers following in early summer.

Other highlights for 2016 include an Easter Trail (March 18 to April 11), themed activity days (April 1 to 3) and a Spring Tour (April 13).

Bolton Castle, Near Leyburn, North Yorkshire www.boltoncastle.co.uk Originally built as one of England’s most luxurious homes, Bolton Castle bears the scars of more than 600 years of fascinating history but is still remarkably well preserved. Currently owned by Lord Bolton, a direct descendant of its original owner Sir Richard le Scrope, the castle is now popular for family days out, educational trips and historic tours, with opportunities to find out more about medieval and Tudor life in events running throughout the year.

Wynyard Hall, Wynyard www.wynyardhall.co.uk Following its initial lease by King Edward I to Sir Hugh de Chapell in 1230, several prominent families owned the Wynyard Estate before it was sold to Sir John Hall in 1987. Sir John, who also once owned Newcastle Football Club, spent more than £12m restoring the hall to its former glory and transforming it into the four-star country house hotel that operates today. Further extensive investment in 2015 included the creation of a Walled Garden, boasting more than 3000 roses, as well as a Visitor Centre with a café and farm shop. Both the Hall and Gardens now play host to regular events, including cooking classes, walks and afternoon teas.

Midsummer brings evening theatre performances to the arboretum, with a children’s trail on offer during August and grass paths to be explored as the plants and trees change their colours in autumn. Darlington Today | 29
