RAPID REPONSE FOR CHARITY A lifeline service, designed to prevent unnecessary hospital admissions, is set to continue under the care of St Teresa’s Hospice. The Darlington Community Rapid Response Team, which first launched in 2011, provides palliative nursing care, discharge support and crisis management for patients with life-limiting conditions in a place of their choice. The pioneering service, which operates 24/7, 365 days a year, was originally run by St Teresa’s Hospice in partnership with Marie Curie Cancer Care but will now be provided solely by the hospice following consultations with the Darlington Clinical Commissioning Group. “Our main aim is to help people live as well and as long as they can in the place where they want to be,” said St Teresa’s Community Hospice team leader, Helen Wrigley. 4 | Darlington Today

A school, which was almost completely destroyed by fire, is marking its subsequent success with a special banner.

Two schoolgirls from Newton Aycliffe are appealing for help in making their dance dreams come true.

Staff, students and governors at St George’s C of E Academy have spent months embroidering 400 individual panels to create the dove of peace patchwork, designed by creative arts leader Claire Bentley. Its official unveiling marks 10 years since the site officially reopened following the blaze in 2003 and four years since it became an academy.

Charlotte Lough, 15, and Emily Halford, 14, have both been offered places on the Hollywood Summer Tour, a prestigious training scheme where they will be taught by professionals from Los Angeles and gain valuable experience of the industry as well as having the chance to be spotted by casting agents. A ‘SPACE-MAN’ CAME TIME FLIES ON TRAVELLING TOWER TOUR Students have been encouraged to reach for the stars by a man once detained at Area 51. The group, all studying geography at Darlington School of Mathematics and Science, were given the chance to work with Dr Alex Baker, director of Sent Into Space, who was held at gunpoint by US forces after accidentally sending a balloon into the area infamously associated with the exploration of extraterrestrial life. With his help the students were able to construct an insulated camera mount, complete with parachute, tracking device and GPS, which they hope will be sent into space to take unique images of the Earth from above.

Competition winners have been given the chance to take a sneak peek inside one of Darlington’s most iconic buildings. The group of around 40 people, many of whom have lived in the town all their lives, were taken on a tour of the historic Clock Tower to celebrate Love Your Local Market Day. More opportunities to climb the 152-year-old tower’s 100 steps will be offered at a similar event in August and on Heritage Open Days running throughout the year. SAY HELLO TO THE NEW HEADLAM HALL After months of renovation and refurbishment one of Teesdale’s oldest buildings has been beautifully reborn - join us as we take a look inside the new, Headlam Hall.

8 | Darlington Today

Once home to figures of significant regional importance, including the Brockett family and Lord and Lady Gainford, Headlam Hall was acquired by John and Ann Robinson in 1977.

Work here focussed on restoring the country house’s understated elegance and ensuring it could provide a show stopping setting for a wide range of private and corporate events.

Originally seen as an opportunity to expand their neighbouring farm, the couple and their family have since transformed the 17th century property near Gainford into one of the North East’s leading hotels - and still refuse to rest on their laurels.

“Headlam Hall already enjoys a strong reputation as a great place for special occasions such as weddings and dinner dances, as well as corporate events,” said Thomas “and we regularly host functions for up to 150 guests.

In late 2015 the Robinsons embarked on the largest restoration programme in Headlam Hall’s 400 year history, determined to boost its modern appeal, while still preserving its original Jacobean features. The project, which took around six months to complete, stretched to almost every room of the three storey building, with skilled tradesmen and local suppliers brought in to refurbish everything from the plumbing to the décor.

“The ballroom has always offered a stunning setting for these occasions so we concentrated on refreshing this room with a contemporary look, highlighting its fabulous features and designing the space so that it could be individualised for the customer.” The Coach House’s refurbishment was followed in January 2016 by a major restoration of the original manor house, now known as the Main Hall, which dates back to 1648.

“This was the largest single refurbishment ever undertaken in one hit,” said Thomas Robinson, Managing Director of Headlam Hall Hotel. “Thankfully the work was completed on schedule and I am confident it will help us to exceed our guests’ ever-increasing expectations across all areas.”

Key improvements here have included the creation of a new reception area and bespoke bar to boast the hotel’s dynamic hospitality offering, as well as the introduction of more soft furnishings and antique pieces to enhance the comfortable country living on offer in the drawing room, lounge and awardwinning restaurant.

Among the first aspect to benefit from the makeover was Headlam Hall’s Coach House building, which boasts the Main Ballroom, ideal for weddings, as well as the oak panelled Coach Bar, Stable Lounge, with a south facing terrace and nine guest bedrooms.

The Main Hall’s en-suite bedrooms were also extensively refurbished, with many being increased in size. While this has resulted in a decrease in the number of rooms available to let overall, those still standing are now able to house free standing baths and separate walk-

in showers, with the added benefit of the work exposing a number of period features that had previously been covered up. “The emphasis of the refurbishment programme was always to highlight Headlam Hall’s original features and create interiors that were authentic to its heritage and location,” said Thomas. “Not only have we been able to do that, but the re-design has also introduced a more contemporary feel to cater for even the most discerning modern-day guest.” Headlam Hall’s refurbishment, which comes just a few years after it was named North East Small Hotel of the Year, is the latest in a long line of improvements made by the Robinson family in the past decade. Others include the addition of a challenging nine-hole golf course and 10 bay covered driving range, four acres of walled gardens with elegant lawns, colourful herbaceous borders and flowing waters and the creation of a modern spa, complete with 15m swimming pool, outdoor hydrotherapy spa pool, exercise studio, tennis courts and a brasserie café. Together, these elements look set to enhance the property’s four-star rating and establish it not just as a leading hotel, but a luxurious destination for visitors from across the North East and further afield. “We are absolutely delighted with what we have been able to achieve at Headlam Hall so far,” said Thomas “and we can’t wait to see what the future holds.”

More information about Headlam Hall, including its availability for dining, leisure or corporate events, can be found by visiting www.headlamhall.co.uk calling (01325) 730238 or emailing reception@headlamhall.co.uk Darlington Today | 9

SPOTLIGHT ON SUNDERLAND AND A SINGING SUPERSTAR With the curtain temporarily closed at Darlington Civic Theatre, we thought now would be a good time to explore the other venues staging spectacular shows around the North East - starting with the Sunderland Empire. This autumn/winter the historic Sunderland Empire, just a short journey away by rail or by car, will be hosting a wide array of West End-worthy productions, as well as one off shows. Highlights include must see musicals Cats (September 19 - 24), Ghost (September 26 - October 1), Sunny Afternoon (October 4 - 8) and Footloose (October 11 - 15), as well as Sister Act, which begins the season with a weeklong run from Monday September 5. Claire Buchan called one of the production’s stars to find out more… Since winning the X Factor in 2008, Alexandra Burke’s career has gone from strength to strength. Not only is she one of the talent show’s most successful recording artists - selling more than four million records in the UK alone - but she is also now a bona fide leading lady. In 2014 Alexandra made her full West End debut playing Rachel Marron, a role originated on screen by Whitney Houston, in much acclaimed musical, The Bodyguard. Having recently completed a UK tour with the show, she is now stepping into the shoes of Whoopi Goldberg to play Deloris Van Cartier in a stage version of Sister Act. “It’s been an amazing 18 months playing Rachel,” said Alex. “I’ve made a lot of fantastic memories doing my first musical but it’s the right time for me to move on.” Based on the smash hit movie of the same name, Sister Act tells the story of lounge singer Deloris, who is placed in protective custody at a convent after witnessing a murder. Disguised as a nun and under the suspicious watch of Mother Superior, the disco diva helps her fellow sisters to find their voices and unexpectedly rediscovers her own. “I’m honoured to have been chosen for two such amazing roles,” said Alex. “Deloris is a very different character to Rachel though and I can’t wait to embrace being a nun.” This stunning new production of Sister

Act, which acts as a tribute to friendship, sisterhood and song, features original music by Oscar and Tony Award winner Alan Menken and is directed and choreographed by Craig Revel Horwood, best known as a judge on BBC show, Strictly Come Dancing.

Craig Revel Horwood & Alexandra Burke. Photo by Jay Brooks

“One of the main reasons I wanted to do Sister Act was the quality of the music,” said Alex. “While they are not the songs people have seen in the film, they are absolutely outstanding and really make the show. “I’m not exactly sure yet what Craig has in store in terms of dance routines but I am very excited to find out.” Sister Act is expected to run across the UK until summer 2017, with Alexandra fronting all but a few of the rigorous performances. After that the future looks bright for the Slim Fast ambassador, who has more than earned her spotlight as both an actress and singing superstar. “I never expected to end up here when I auditioned for The X Factor,” said Alex. “Moving into theatre has been a brilliant experience for me though and has really taught me a lot about how to respect my voice as a muscle. Hopefully I can take this, and my new found discipline, into my wider artistry.”

Tickets for Sister Act at the Sunderland Empire, priced from £16.50, are available from the Box Office at High Street West, Sunderland via the ticket centre on www.ATGtickets.com/Sunderland or 0844 871 3022. Calls cost 7p per minute, plus standard network charges. Booking and transaction fees may apply to telephone and online bookings. WHOLE SHREDDED GRESSINGHAM DUCK SALAD WITH FRESH PLUMS, RED CURRANT JELLY AND HERB NEW POTATOES

This flavoursome whole shredded Gressingham duck salad is a great dish to enjoy in the summer with family and friends. Serves 4 20 minutes preparation 2 hours and 30 minutes cooking Ingredients 1 whole Gressingham duck 250g mixed leaves 3 large plums, pitted and cut into quarters 1 small jar redcurrant jelly 1 bulb garlic cut in half 1 small bunch of thyme Few sprigs of parsley finely chopped 175ml red wine 175ml water 500g new potatoes 50g butter 1 tablespoon olive oil 1 lemon cut in half Salt and pepper

Method Pre heat oven to 200°C, fan 180°C, gas mark 6 Take the whole duck and remove any giblets. Pat the skin dry with absorbent paper and prick the skin with a cocktail stick in and around the area between the leg and breast. Now season the skin generously with salt and also in the cavity. Place into a deep roasting tray and add water, wine, thyme and garlic around the duck. Squeeze the lemons and add half of the juice and the husks to the tray. Set the remaining lemon juice aside. Place the roasting tray into the pre heated oven. After half an hour, reduce the temperature to 150°C and cook for a further 2 hours. When ready, remove from the oven and place the plums around the duck. Cover loosely with foil and rest in a warm place for half an hour.

Meanwhile, gently warm the redcurrant jelly in a small pan on a low heat for 2-3 minutes and set aside in a warm place. Boil the potatoes in slightly salted water for 15 minutes and then drain them. Return the potatoes to the pan and add the butter and herbs. Mix together and put into a serving bowl. Wash and drain the salad leaves and place in a bowl, using the remaining lemon juice as a dressing. Add olive oil and a pinch of salt and pepper and place onto a large serving platter or plate. Take the duck and carefully place it onto a chopping board. Put the plums on top of the salad leaves and either carve or shred the duck meat away from the bone, placing it onto the salad leaves. Serve with the potatoes, the redcurrant jelly, and perhaps some bread.

PACK UP YOUR TASTEBUDS Add a fruity splash to your next picnic with these refreshing recipes from Rocks Drinks…

Rocks Meringue Kisses Serves: Makes 40 • Preparation time: 30 minutes Cooking time: 2 hrs plus cooling

What You Need 5 large egg whites • 280g caster sugar 4 disposable piping bags 2 tsp Rocks Blueberry Squash • Blue food colouring paste 2 tsp Rocks Orange Squash • Orange food colouring paste 2 tsp Rocks Lemon Squash • Yellow food colouring paste 2 tsp Rocks Blackcurrant Squash • Purple food colouring paste

What You Do Heat the oven to 220C/200C fan. Set four disposable piping bags inside four tall glasses, with the open ends upwards and gaping ready to be filled. Generously paint stripes of the food colouring inside each bag with a small paintbrush and set aside. Spread the sugar over an oven tray lined with baking parchment and cook until it has just begun to melt at the edges, but not caramelised. It takes around 4 mins, but keep a very close eye on it. Meanwhile, whisk the egg whites on a high speed to stiff peaks. Carefully take the sugar out of the oven and add little by little to the whites, whisking until the mixture is cold, big and glossy and holds its shape. Take great care not to burn yourself with the hot sugar. Turn the oven down to 80C/60C fan. Divide the meringue between four smaller bowls and fold one flavour of squash into each. Spoon each meringue into the corresponding piping bag, twist the open end of the bag and snip off the other end to create an opening approximately 2cms wide. Pipe smooth circular meringues, approximately 6cm wide, with a peak on top, onto baking sheets covered with parchment. Make sure they’re spaced well as they will grow when they cook. Once all the meringues are piped bake for two hours until they’re crisp on the outside and sound hollow on the inside. Switch off the oven and leave until cold. Use immediately or keep in an airtight tin.

Salmon and Herby Couscous with Orange dressing Serves: 4 • Preparation time: 20 minutes Cooking time: 15 minutes

What You Need 4 tbsp Rocks Orange Squash • 2 tbsp olive oil 4 salmon fillets • 200g couscous 300ml hot vegetable stock Large handful soft herbs, chopped e.g. coriander, parsley, dill 4 spring onions • Zest of an orange • 2 tbsp pine nuts

What You Do Put the salmon in a large bowl; pour over the oil and squash and season. Toss together to coat the salmon then set aside to marinate. In a separate bowl pour the hot stock over the couscous, stir once, cover and leave to absorb. Heat the oven to 200C/ 180C Fan. Chop the herbs and finely slice the spring onions. Cut four large sheets of foil. Once the couscous is done (about 10 mins), fork gently to separate the grains then mix in the herbs (keep a little to serve) and spring onions. Pile ¼ of the couscous in the centre of each sheet of foil, lay a piece of salmon on top, add a grating of zest and spoon any remaining marinade over. Carefully seal the foil parcels and lay them on a baking tray. Bake in the oven for 15 mins until the salmon is cooked. While the salmon is cooking toast the pine nuts gently in a dry frying pan until golden. Slide the contents of each parcel into a plastic container, flaking the salmon if preferred and scatter over the reserved herbs and pine nuts.

A CELEBRATORY STAY FIT FOR ROYALTY

From a right royal birthday to an anniversary celebration, one North East venue caters for them all. We sent Claire Buchan to find out more… While the country was gripped by the Queen’s birthday fever, I had my own reason to celebrate – two happy years with the man I love. Where better to mark both joyous occasions than the beautiful Crathorne Hall? The former stately home, once frequented by her Majesty, The Queen Mother, was originally built for the Dugdale family in 1905 and now operates as a leading hotel and function venue under the Handpicked Hotels brand. Though conveniently located just 30 minutes’ drive from Darlington city centre, the sprawling estate feels a million miles away from the hustle and bustle, with a bygone sense of calm and tranquillity taking over as soon as you turn onto the sweeping driveway. This grand approach, which winds through green fields and woodlands, offers an early glimpse of the treasures that await you in Crathorne Hall’s 15 acres of private grounds, while the historic hall itself shows no signs of the fire that devastated it back in 2014 Once inside, you will discover that the charm and character of this unique hotel – which relaunched with a £5m refurbishment in 2015 – lies not just in the feature-laden building but in the care and attention of its hardworking staff. From the moment we arrived everyone we met greeted us with the utmost warmth and cheer, almost as though we were returning relatives of the Dugdale family itself. After checking in we were quickly directed to our spacious bedroom – one of 37 currently available – and were so overawed

by its sumptuous style and generous proportions that we seriously debated moving in. Thankfully we were able to drag ourselves away long enough for dinner, which was served in the grand setting of the Leven Restaurant overlooking Crathorne Hall’s manicured lawn. Though apparently fully booked for the evening – thanks to both overnight and non-resident guests - the restaurant never felt busy, loud or overbearing and it was pleasing to see that the hotel has managed to maintain its luxurious and refined appeal, even in the face of growing popularity.

decadent meal. Breakfast the following day was equally indulgent, with a full continental breakfast, as well as your choice of hot food, ranging from the smoked kippers and eggs Benedict to homemade waffles or a full English. There was even a ‘free from’ section, catering specifically for those with allergies or dietary needs.

Every course of our delightful meal was cooked to perfection and fantastically presented, with an amuse-bouche, complimentary canapés and a selection of freshly made breads ensuring our tastebuds were tantalised right from the start.

Had we been staying at Crathorne Hall for longer, we would most certainly have made use of the hotel’s additional features, such as the ability to borrow DVDs and games from reception or get an in-room workout with the intriguingly-named, Gym In A Bag.

My partner’s pea soup starter, which was memorably poured at the table, was packed with flavour, while my tomato and onion tart boasted perfect, crispy pastry and a great balance of fresh ingredients.

As it was we settled for a walk around the grounds and a sneak peek inside the beautiful function rooms, which are proving unsurprisingly popular for weddings, baby showers and all manner of corporate events.

For me, this was followed by a melt-in-themouth duck breast, complete with crispy skin and vegetables, while Jamie enjoyed a stunning sea bream, served with what he called “some of the best potatoes I’ve ever eaten.”

Aside from its staff, versatility and spectacular setting, what made Crathorne Hall really stand out during our visit, were the finishing touches I simply hadn’t experienced anywhere else.

The highlight of the evening though was undoubtedly the desserts, which came as a masterclass in crème brûlée and sticky toffee pudding. Both dishes were the best of their type we had ever tasted and proved a satisfying, and surprisingly light end, to our

While little things like the provision of a well-stocked coffee machine in the bedrooms or a bathmat wrapped in ribbon, might not seem like much, they all added up to make us feel extra special and we can not wait to return for our third anniversary in 2017 – if we can wait that long. HOME IS WHERE THE HOUND IS Do you have a little extra room in your home and your heart? How about fostering a four-legged friend? Every year leading animal welfare charity, Dogs Trust, cares for almost 17,000 stray and abandoned dogs across the UK. While waiting for their new, forever homes, these precious pooches are often looked after in one of the charity’s 21 rehoming centres, including Hill House Farm, Sadberge. Since opening in 1994 the site has rescued, rehabilitated and rehomed more than 18,000 dogs – but only has space for 120 animals at any one time. This year, to help cope with demand, the Dogs Trust is appealing for dog lovers in and around Darlington who can open up their homes and their hearts to foster a four-legged friend. In particular need are those who would be willing to provide temporary accommodation for an older animal who, through no fault of their own, are suddenly homeless and in need of some TLC. “We love dogs who are a little older to be fostered so they can continue to enjoy the comfort of a home environment,” said Lorin Shepherdson, Foster Care Coordinator at Dogs Trust Darlington.

WIN A LIMITED EDITION DOG BOWL If you’re feeling inspired by the work of the Dogs Trust, why not pamper your own pooch with a new food bowl? To celebrate the Queen’s 90th birthday gourmet dog food company, Cuffleberry & Co, has commissioned pottery designers Repeat Repeat to create a limited edition porcelain bowl featuring the distinctive silhouette of the royal corgi. Only 90 of the bowls are being produced, with all proceeds being donated to London-based dog rescue and rehoming charity, All Dogs Matter. For your chance to win one for your own four-legged friend simply answer the following question: The Queen is famed for having which breed of dog? A: Chihuahua B: Corgis

Send your answer, along with your name and contact information to Darlington Today Magazine competition, 45 Atkinson Gardens, Aycliffe Village, Co. Durham, DL5 6LH, making sure it is clearly marked Dog Bowl. The first correct answer drawn after the closing date, 31 August 2016 will win. For more information or to buy a Cuffleberry & Co limited edition bowl priced at £48, visit www.alldogsmatter.co.uk

in a home environment until they find their forever families. “If there’s anyone out there that can’t have a dog permanently but would still like a dog in their lives, and would love to make an elderly dog’s dream come true, please get in touch.” Anyone interested in fostering Foster, Ella or another homeless hound is being asked to call Dogs Trust Darlington on 0300 303 0292 or e-mail Lorin on lorin.shepherdson@dogstrust. org.uk. Families who can provide a more permanent home can also contact the centre on 01325 333 114, arrange a tour or visit https://www.dogstrust.org.uk/ our-centres/darlington/ to find out more. One person who has already done just that is Susan Thomas, who adopted a dog five years ago and recently created two knitted figures inspired by the Dogs Trust’s Special Someone advertising campaign, which aired earlier this year.

“Our foster carers offer a lifeline for older dogs, as well as those that don’t enjoy kennel life or just need a little extra care.

Susan says: “I adopted my beautiful English Springer Spaniel, Snoopy, from Dogs Trust Darlington in 2011 and the dog that appears at the end of the advert who is still waiting for his forever home, looks really similar to him. I couldn’t believe it; it really made me cry!

“And, by providing a loving, happy space our dogs can continue to enjoy family life in a familiar environment and be really well prepared for finding their forever homes when the time comes.”

“The staff do such an incredible job, I just wanted to do something to make them smile and to highlight how wonderful rescue dogs are. Snoopy is a big softie and a great example of how amazing they are.”

Among those seeking a foster home for 2016 are a shy Lurcher, called Foster and German Shepherd, Ella, both aged 10.

Those who are unable to take care of a dog, can still show Dogs Trust their support by volunteering, fundraising or even sponsoring an individual dog. For more information visit www.dogstrust.org.uk/ get-involved/

“Foster is really friendly, enjoys a fuss and loves to play with his toys,” said Lorin. “He and Ella, like so many of our older dogs, would really benefit from being
