VELODROME LAUNCH CELEBRATES CYCLING IN MIDDLESBROUGH Young cycling stars took to the track for the official launch of Middlesbrough’s state-of-the-art Velodrome. The Olympic-sized 250m facility is one of the best of its kind in the country and has already proved a hit with club and amateur riders since its completion last autumn.

The £1.6 million Velodrome is one of the jewels in the crown of the new Middlesbrough Sports Village, and was made possible thanks to a partnership between Middlesbrough Council and British Cycling.

NO MORE BAKING FOR CHEF NATHAN On a Roll sandwich company has further strengthened its product innovation team with the introduction of New Product Development Chef Nathan Baker. The 29-year old, from Billingham, brings with him a wealth of experience and a whole host of new and tasty concoctions to the already inventive food-to-go manufacturer. Nathan has previously been involved in the setup of Chadwick and Co Coffee House and Kitchen at the recently opened Barker and Stonehouse Teesside Park Store. GRIEVING YOUNG MUM STUDENTS URGES MOTORISTS TO FLYING HIGH A former celebrity travel agent is ‘TAKE IT EASY’ Young mum Faye Keeler is facing parenthood alone after her partner Chris Earl was killed in a motorbike accident near their home. The grieving 25-year-old has backed a campaign by Road Safety GB North East, which aims to raise awareness of bike safety and reduce the number of motorcycle casualties across the North East. Her partner of ten years, Chris, died instantly less than a mile from their home in Liverton Mines, East Cleveland, after his bike hit an oncoming truck on a warm summer’s day last July. HIGH TECH FOR AGEING Ageing Better Middlesbrough is helping older people in the town get ‘tech savvy’. Loneliness and isolation are becoming a bigger health risk to our rapidly ageing population, with some research suggesting that it is just as harmful to our health as smoking 15 cigarettes a day. The Big Lottery Funded programme is working to reduce loneliness and social isolation for people over 50 in the town. Digital Inclusion Officer Martin Jameson has been out and about helping older people become more confident with technology. Janet, 91, and Ada, 80, from Middlesbrough, became friends whilst volunteering at the Salvation Army. Martin met with Janet and Ada and helped them with their iPads and smart phones. MIDDLESBROUGH PRIDE OF PLACE PROJECT: PHOTOGRAPHY COMPETITION The Caravan Gallery, in association with Middlesbrough Institute of Modern Art (mima), asks: What is it like to live in Middlesbrough? Have you seen a sign or shop display that made you smirk or a street scene that surprised or amused you? Would you like to draw attention to any unsung attractions - or unattractions that escape the notice of the average visitor, or resident, for that matter? What is typical of Middlesbrough? In articulation with their show, extra{ordinary}: Photographs of Britain by The Caravan Gallery at mima, The Caravan Gallery is setting up a month long Middlesbrough Pride of Place Project in a temporary venue so that people can share their thoughts about the town. Part exhibition and part reverse visitor information centre, where the visitors themselves provide the information, the Pride of Place Project asks the inhabitants of Middlesbrough to take a closer ‘warts and all’ look at their shared habitat and define what makes it unique. As part of this investigation The Caravan Gallery invites Middlesbrough residents (native and adoptive) to take part in an open submission photography competition. Their intention is to create a snapshot of the reality - and surreality - of everyday life in Middlesbrough.

Jan Williams of The Caravan Gallery said: “We want to encourage the people of Middlesbrough to view their town with fresh eyes, to astonish us with their observations from a local and personal perspective.” Chris Teasdale of The Caravan Gallery added: “Look beyond the obvious and show us what’s special, unusual or perhaps distinctive in this part of the world.” The most captivating and idiosyncratic images, selected by The Caravan Gallery, will be turned into prints and displayed in the Middlesbrough Pride of Place Project hub. Prizes include a signed copy of extra{ordinary}: Photographs of Britain by The Caravan Gallery, a new book published to complement the show, a Panasonic FZ330 camera worth £500 plus a range of others.

STEWART PARK HISTORIC BUILDINGS REVIVAL The commitment of Askham Bryan College to breathe new life into a former Victorian stable block and lodge at the heart of a historic Middlesbrough park has received a boost with confirmation that £3million has been awarded by the Heritage Lottery Fund (HLF). This will enable the transformation of buildings within Stewart Park into an agricultural and horticultural education facility. The Park is of international significance as it contains the site of Captain Cook’s birthplace. The Yorkshire-based college has run courses from Stewart Park for some years but the iconic buildings are in need of urgent repair. Two years ago Askham Bryan College pledged the restoration as part of a ten-year plan and to date, work totalling around £150,000 has been completed. The major restoration will see an exciting new phase of the College’s partnership with Middlesbrough Council which transferred over several buildings last year. The aim is to return the buildings to their former glory, encourage greater public access, and create an educational hub for the region’s young people. Repairs will include extensive work to the roof and the general fabric of the building, the creation of lecture rooms, a science lab, a learning resource centre, animal handling areas, workshops and a reception area. Heritage features such as the former butter churn dairy and Victorian laundry will be restored, and it is anticipated that the visitor information centre, café and courtyard will become vibrant public areas.

Welcoming the news, Liz Philip, Executive Principal of Askham Bryan College said: “Stewart Park and Central Lodge are hugely important to the Teesside community, and we envisage that this will have a major positive economic and educational impact on Middlesbrough, the Tees Valley and beyond. The restoration of Central Lodge means it will become a vibrant centre helping to increase future employment and life opportunities for the region’s young people. “A key part of our plans is to make the building more available to the public, opening it to local groups, thus returning it to the heart of the local community. The

grant from the Heritage Lottery Fund will accelerate our progress.” She added: “We have worked closely with the local community groups and the Friends of Stewart Park who have been very supportive and we anticipate that our existing courses in animal management, horticulture and agriculture will be extended and new courses in forestry and arboriculture added. This is a hugely exciting chapter in the history of this historic park and Central Lodge in particular.” The funding has been awarded through HLF’s Heritage Enterprise programme, which is designed to help when the cost of repairing a historic building is so high that restoration is not commercially viable. Grants of £100,000 to £5 million bridge the financial gap, funding the vital repairs and conservation work needed to convert buildings like those at Stewart Park into new, usable commercial spaces that can have a positive impact on local economies. Councillor Tom Mawston, Chairman of the Friends of Stewart Park, said: “Stewart Park is an iconic part of Middlesbrough’s heritage, and the transformation brought about by the previous BIG and Heritage lottery funded restoration project is already helping to attract more than a million visitors a year. This latest funding award is great news, not just for the Park but for the town as a whole. “It will enable the partnership with Askham Bryan to move on to the next level, and ensure these important historic buildings can be enjoyed for generations to come.”

SIZZLING SUMMER RECIPES

PRAWN AND CHORIZO SKEWERS

Make more of your barbecue and cook up a storm with these creative alternatives to traditional bangers and burgers…

Method: Soak 12 bamboo skewers in cold water for 30 minutes or use metal skewers. Combine the olive oil, lime juice and zest, garlic, and dried chilli flakes in a bowl. Add the prawns, toss to coat, cover and marinate in the fridge for about 30 minutes. Squirt the maple syrup into a shallow bowl, add the chorizo and toss to coat. Thread the prawns and chorizo on to the skewers, allowing three prawns, two chunks of chorizo and a lime wedge for each. When the barbecue has reached medium heat grill the skewers for 3 minutes on each side until the prawns are pink and the chorizo is sizzling. Remove from the barbecue, drizzle with maple syrup and serve with a sweet chilli dip if desired. Recipe courtesy of Clarks Maple Syrup.

Makes 12 • Preparation time: 10 minutes (approx.) plus 30 minutes marinating Cooking time: 6 minutes (approx.) Ingredients: • 24 large, raw, shell on prawns • 4 tablespoons olive oil • Juice and zest of 1/2 lime • 1 clove garlic, crushed • 1 teaspoon dried chilli flakes

• 4 chorizo sausages or black pudding cut into thick slices • Clarks maple syrup • At least 1 lime cut into wedges, with 12 wedges in total • Sweet chilli dip to serve (optional)

CHIPOTLE PORK BURGERS WITH PINEAPPLE SALSA Makes 4 • Preparation time: 20 minutes • Cooking time: 12 minutes (approx.)

Prawn and chorizo skewers

Ingredients For the burgers: • 500g lean pork mince • 6 spring onions, very finely chopped • 2 tablespoons chipotle paste • Finely grated zest of 1 lime and juice ½ lime • 4 tablespoons freshly chopped coriander • Salt and freshly ground black pepper • A little oil for brushing • 4 slices cheese

Pineapple salsa: • 175 g fresh pineapple rings, cut into 1cm cubes • ½ small red onion, very finely chopped • Grated zest and juice of 1 lime • 1 small red chilli, de-seeded and finely chopped (optional) • 2 tablespoons freshly chopped mint • 2 tablespoons freshly chopped coriander

Plus: Shredded crispy lettuce and 4 Super Soft Original Mission Deli Wraps to serve Method: Place the mince in a large bowl with the spring onion, chipotle paste, lime zest and juice and coriander. Season well and using your hands squash the mixture together until all the ingredients are combined. Divide the mixture into four, even sized balls, then flatten to make four burgers. Chill for 15 minutes. Meanwhile make the salsa by placing all the ingredients in a bowl and mixing together. Chill until ready to use. Brush the burgers with a little oil, then cook on the barbecue for 4-5 minutes each side, until thoroughly cooked through. Place a slice of cheese on top of each burger and allow to melt slightly. Griddle the tortillas for 20 seconds on each side, then fold into triangles to make a pocket. Fill with lettuce then top with a burger and the pineapple salsa. Serve immediately. AFTERNOON TEA, ANYONE? Head Chef Steve Smith of Michelin Star Bohemia Restaurant has shared his Hedgerow Jam and delicious fruit scone recipe created for the hotel’s Bohemian Afternoon Tea Collection. Head Chef Steve Smith @ Bohemia has held a Michelin Star for over 10 years from the age of just 24. Steve has enjoyed a spectacular year being named Catey Chef of the Year 2014, retaining Bohemia’s Michelin Star, being awarded 4AA Rosettes, as well as being listed in The Sunday Times Top 100 Restaurants, with special praise being given to Bohemia’s desserts which were listed ‘6th Best in the UK’.

Steve Smith’s Hedgerow Jam Ingredients 2kg Wild Fruits (Sloes, Bilberries, Blackberries, Elderberries, Rosehips) 2 Cooking Apples Water Sugar Method Remove any stalks and dry leaves from the fruits. Cut the apples into quarters. Put the fruits into a stainless steel pan and cover with water. Simmer until soft for about 30 minutes. Unlike other jams and preserves this needs to be sieved to remove seeds and pips. Force through a sieve and weigh the pulp. Transfer to a clean saucepan and add an equal weight of sugar. Bring to a boil stirring to dissolve sugar and cook over a high heat until jam reaches setting point (105°c). Remove from the heat and leave to cool for 20 minutes. Then ladle into, warm sterilised jars to within ¼ of the rim. Wipe off any sticky drops with a hot damp cloth. Place a wax paper disc onto the jam surface to seal. Cover the mouth of the jar with cellophane, fastened with an elastic band.

Steve Smith @ Bohemia Michelin Star Fruit Scones Ingredients (to make 10 scones) 300g Plain Flour 32g Caster Sugar 18g Baking Powder 44g Unsalted Butter 250ml Milk 140g Sultanas 1 Egg Method Mix flour, sugar, baking powder & butter until the butter has crumbled. Add sultanas and milk. Roll out on a floured surface, cut to the desired shape and size, eggs wash (1 egg and a splash of milk) & leave to prove for 15 minutes. Bake @ 180°c for 10-12 minutes or until golden. Store and use as required.

We sent Sue Riney-Smith to find her inner peace at Darlington’s very own, Rockliffe Hall… From the moment you enter the award-winning spa at Rockliffe Hall you can feel your worries just melting away. While conveniently located in the heart of Hurworth, this stunning sanctuary feels a million miles away from anything I’ve ever experienced and it’s no surprise that it has recently been awarded top level, 5 Bubble Luxury Spa status by the Good Spa Guide. As one of the largest spas in the UK, the venue has plenty of ways to keep you restfully occupied, whether it’s for an hour, an afternoon or even a full day. Its facilities, including an outdoor hot tub, hydro pool, igloo and sound wave therapy room, have all been designed to help enhance circulation, boost the immune system and leave visitors feeling healthier and revitalised. And if, like me, you’re in need of even more TLC, then the extensive range of holistic spa rituals and results-driven spa treatments on offer are ideal.

I opted for a Neom Organics treatment, combining shiatsu and Thai massage, which is designed to destress and aid relaxation. It is one of four new treatments introduced to mark the launch of Rockliffe Hall’s stylish spa garden, which boasts two hot pools, including an infinity edge experience pool with massage features, a warm Jacuzzi and landscaped areas with views across the grounds. While I didn’t have time explore the garden itself during my visit I did thoroughly enjoy my 60 minute session and the calm setting of the room, which was beautifully decorated and delicately fragranced, left me feeling like I was floating away on a cloud of pure joy. After being so beautifully relaxed by my attentive therapist it seemed a shame to spoil it all by hitting the gym, so I ashamedly bypassed the spa’s state-of-the-art fitness suite and its wide range of wellness classes - though I do hope to make use of these services as a future spa member - and instead went straight to sample the hotel’s culinary delights. Set in the 18th century Old Hall, Rockliffe’s flagship

restaurant, The Orangery, is undoubtedly one of the jewels in its glittering crown. Under the watchful eye of executive chef Richard Allen, the eatery uses premium ingredients that not only look not only look good but taste good too. With such variety on offer we chose to enjoy as much as possible and opted for the five course tasting menu starting with a delicate amuse bouche. This was followed for me by a stunning sea trout starter, which deliciously combined smoked fillet, parfait and tartar, while my husband tucked in to scallops with a gorgeous crab mayonnaise, kaffir lime, bisque and sea beans. Our intermediate dish of liver parfait rolled in chocolate and mackerel paved the way for a memorable main course, which included turbot with chicken oyster, leeks and celeriac for my husband and crispy pork belly with parched langoustine, squash and sea needles for me.

under the guidance of Alex the Sommelier. He, like all of the staff at Rockliffe Hall, was extremely friendly, courteous and obviously highly experienced in his specific field. Despite being perfectly full, we made enough room to share a cheeseboard before retiring to the beautiful oak-panelled bar for a nightcap. They only way to end such an amazing day, was to retire to one of the elegant ensuite bedrooms, that recently helped Rockliffe Hall earn the title of VisitEngland’s Large Hotel of the Year. Our suite, a New Hall Superior Twin, featured two amazing queen sized beds, a seating and dressing area and magnificent views over the gardens and golf course, as well as a luxury bathroom with a TV that can be enjoyed while soaking in the tub. Everything about our stay was sublime and I drifted off dreaming of the day that I could return.
