Holiday Braai Pizza 15 - 20 minutes

The Italians are known for their world-famous pizzas (and pizza ovens), but in this week’s Braai Masterclass we take this tasty treat outdoors to show you how to cook pizza straight on the braai grid (not a traditional braai recipe - we know!). It is all about working in phases. Start by cooking the dough over the coals. Then add your flavour base, and only once you’ve removed it from the heat do you add your toppings.

Ingredients 450g Cake Flour 1 Sachet Instant Dried Yeast 10ml Salt 30 ml Melted Margarine 320ml Lukewarm Water 60ml Olive Oil 5ml Robertsons Garlic & Herb 10ml Robertsons Paprika 250 ml Mozzarella Cheese sliced 1 Red Onion finely sliced 200 g Chopped Bacon 10 Peppadews chopped 50g Rocket Leaves washed and dried
Instructions 1.
Mix the flour, yeast, salt, margarine and water together until it forms a smooth dough. Place on a floured surface and knead for about 5 minutes until the dough is smooth and pliable.

Now place the dough into a greased packet (use a freezer or sandwich bag or similar) and allow to prove for about 15 minutes or until doubled in size. Sprinkle some flour on a clean working surface and tear off a fistsized piece of dough. Roll the dough out into a free shape – keeping in mind it can’t be bigger than your braai grid. Make two or 3 if necessary.

Combine oil, garlic flakes and paprika. Allow to infuse for a few minutes.

Take the pizza base and put it on a greased metal tray over moderate coals. Braai the base for a couple of minutes, or until the bottom is crispy and browned and the top starts bubbling. Turn the base over and brush the top with the garlic Paprika olive oil.

Spread the pizza with the oil. Top with onion, bacon, peppadews and lastly slices of mozzarella.

Reduce the heat of your coals slightly by scraping some to the side – the slow heat will give the mozzarella time to melt without burning the bottom of the pizza. Drizzle some more flavored olive oil onto the pizza, and then once the cheese has melted, remove the pizza from the heat.

Toss the rocket over the pizza before serving.
