Sweet Potato and Macadamia Nut Salad Ingredients 400 g Sweet Potato peeled 15 ml Olive Oil 5 ml Robertsons Garlic Salt 150 g Lettuce Leaves mixed 50 g Baby Spinach ½ punnet Cherry Tomatoes 1 Cucumber thinly sliced 60 ml Macadamia Nuts chopped Dressing: 30 ml Olive Oil 15 ml Balsamic Vinegar 10 ml Robertsons Rosemary 5 ml Robertsons Garlic Flakes
Instructions 1. Cut sweet potato into slices, brush with oil and sprinkle with garlic salt. 2. Roast in a hot oven, 200 degrees Celsius, for 15 minutes or until tender and golden. 3. Place lettuce leaves, spinach leaves, tomatoes and cucumber in a serving bowl. 4. Combine dressing ingredients and drizzle over salad. Toss gently. 5. Top with roasted sweet potato and macadamia nuts. Serve immediately.
