One of my favourite parts of this magazine is the shocking travel stories. Not to shock you, the reader but for us to learn from mistakes others made. Like waking up in a Zanzibar hotel room at 2am and noticing the window suddenly opening, closing and opening. By itself! Turns out it’s the most haunted hotel on the island, as it was the epicentre of a civil war years ago where hundreds of locals died.

Or booking a taxi – a friend of the hotel concierge in Malaysia. He was doing 160 kph and I politely asked him to drive more slowly. He refused. Minutes later, we went over a hill and almost smashed into a pile of cars. We made such a sharp turn, the car tilted and we drove on two wheels for a few seconds.

UNDER BOAT ARREST

A friend and I were on a cruising holiday, sitting in a restaurant in Turkey, when the maître d’ approached us and said, “Ladies, please come enjoy this welcoming experience to Turkey!” He called the waiter over, and we ordered some Turkish wine and then dolmades. He ordered beer. Later, we realised he was not the maître d’ as he had made us believe. He was a gigolo. He offered us happy memorymaking at his flat not too far away. Shocked, we quickly paid for everything and started running away. He popped up after every curve asking us to go with him. We finally reached the ship, laughing and crying at our stupidity.

On our way back to Greece, the police told us we did not have multiple entry visas. So, we were under “boat arrest”. When we returned to Athens, we had to stay on the ship, and were later escorted through customs and to our seats on the plane. We were deported.

BRIBERY IN A MEXICAN TOILET

I travelled to Mexico City and

asked a police officer at the airport for directions. I didn’t know Spanish and the officer didn’t know English. He asked for my passport and then called another officer.

They discussed something and then instructed me to follow them. They took me to a toilet. He then said, “OPEN”. I asked, “OPEN what?” At first, I thought he was asking me to open my pants, but then clarified he wanted me to open my bag. He started checking my bag and found $1 200 that my office had paid me for my official work. He started asking for money in Spanish. Though I understood it the first time, I still tried to remain ignorant. I asked how much. He said $100 for each officer. I started bargaining and acted like a hungry person. Finally, I brought him down to $20 each. I paid the extortion money and ran as fast as I could.

DAMAGED SUITCASE

I bought a R4 295 suitcase on Monday at 4.30pm. I flew to Cape Town the Tuesday morning. By 12.30pm on arrival, a local airline had destroyed my brand-new bag and the airline did not accept responsibility. It was the first case to come off the carousel, and it looked as if it had exploded. I had owned the bag for less than 24 hours! It was so badly damaged that it couldn’t be repaired. The person at the airport counter who handled the claim was shocked at the bag’s condition and remarked, “I have never

seen anything like this!”

On the same day, I got an email from the airline stating that it accepted no responsibility. I demanded the airline reconsider and bought another R4 000 suitcase to fly home. In the end, I was compensated R900. My advice: make sure you have baggage insurance.

LOST WALLET BEFORE TRAVEL

I lost my wallet just before boarding a flight for a speaking engagement in Doha, Qatar. At the gate, a dilemma: should I stay, or should I go?

I asked other travellers for cash, in return for payment when I returned. Everyone said no. Fortunately, I remembered my credit card number. Inside the plane, I paid for Wi-Fi using my credit card details. My hotel reservation was at risk, so I cancelled it after paying in advance for a discounted hotel near the event. However, no cash, local banking apps rendered futile, and solutions like SnapScan or ApplePay fell short. Resourcefully using my phone app, I navigated through the city with Uber, attended the conference, and sustained myself on complimentary conference meals and snacks, early in for breakfast, last out hovering for tea and cakes.

HE FOUGHT AND BEAT THE WORLD’S NUMBER 1 UFC CHAMPION (ULTIMATE FIGHTING CHAMPIONSHIPS) AND AS A RESULT, SUFFERED A SWOLLEN FACE, A SPRAINED FINGER, AND BLUE MARKS ALL OVER HIS BODY. BUT SOUTH AFRICA’S DRICUS DU PLESSIS AKA “STILLKNOCKS” IS FAR FROM BACKING DOWN.

The match was announced. It was American UFC champion Sean Strickland vs. EFC (Extreme Fighting Championships) South Africa’s Dricus du Plessis. Undefeated UFC middleweight champion Khamzat Chimaey predicted Sean to beat our Dricus at UFC 297 in Toronto, Canada in January 2024. Canadian rapper Drake bet about R13m on Sean to win the fight. Even Sean said in a pre-match interview “I am a million times better than him (Dricus)”.

It was a win no-one saw coming. Martial arts champion Dricus from Pretoria showed the world he can win. Sports commentators said Dricus “failed to replicate that explosive performance but did just enough to emerge victorious”. He also became the first South African to achieve this title.

After the match, Khamzat said Dricus did not deserve to win, and now he wants to fight Dricus. With multiple injuries, Dricus came home to a hero’s welcome as fans greeted him at the airport. But there was no government official in sight. Hardly surprising, as Dricus referred to the South African government in a post-match interview as “the worst government in the world”. We repeating the word government twice which is why.

As he sits down to an interview with InBound SA, Dricus clarifies his remarks. “Look, I spoke as a citizen of this country. South Africa is a wonderful country. This is my country. My people. The best place in the world. I travel across the world to many countries. But every time I touch down at the airport in South Africa, I still feel proudly South African.

“But we have to acknowledge that our government has some challenges. Constant

loadshedding and weeks-long water shortages. I still love South Africa. But we have to realise we have challenges,” he says.

Dricus was born in Welkom, Free State, where he lived with his parents and two older brothers. At the age of 5, he started practising martial arts, which is where his love for fighting was born. Growing up he says he was never an angry child. “Boys will always be boys. I was never a fighter at school or an aggressive person. But I knew how to defend myself,” he says laughing.

At the age of 10, the family moved to Hartbeespoortdam in the North West Province. At 17, he became South Africa’s first medallist at the WAKO World Championships by winning gold in kickboxing.

He continued his martial arts, and after matriculation he enrolled at The University of Pretoria where he studied Agricultural Economics. However, it turned out that farming was not his thing. He dropped out in his final year to pursue martial arts.

“I always wanted to fight. But if I had not become a fighter, I would have been a rugby player. I would have been good, not exceptional but good,” he says. He was 19 when his mom, Gerda managed to get the courage to watch her son fight in a match. Seeing her son being punched by an opponent was too much for her at first, but now she manages to attend his matches.

Dricus joined a martial arts club in Pretoria and set his sights on becoming a world champion. He even got into trouble when, before a match in the USA, he left the ring to go and shake the hand of former US President Donald Trump, who was sitting in the audience.

He prepared for months before his big match, and finally, a date was announced for him to take on the then current UFC champion Sean. He can’t remember much about that winning moment, but he remembers that “I just wanted to get to my hotel room and reflect on what had happened. I didn’t care about the injuries.”

“It is a huge honour for me to have beaten the world champ at that time. It has been my dream for 15 years. There are currently about 2 000 fighters registered at UFC. Of these, there are only 8 champions (of which he is now one) and that is a huge accomplishment for me.”

When reality kicked in, however, the injuries suffered during the match needed attention. “I am not a huge fan of tablets. Your body goes into shock. I was in pain. I even had a fever. I just wanted to get home. You work for months for a match and then it’s over. The whole process is overwhelming,” he says. He arrived home and immediately headed for the West Coast in the Western Cape to unwind.

UFC fighter Gregory Rodrigues has also added his voice to Khamzat’s, saying that Dricus is not the best fighter. Dricus blocks the noise, referring to Drake’s bet against him, and Khamzat’s subtle threats and saying he should not have won. “If I was such a loser, why is he (Khamzat) not wearing the belt? I fight whoever the fans want me to fight. It’s not about the martial artists. We are there to give the audience a show, tickets they paid for.

“I climb into the ring and do what I can do to the best of my ability. I am not doing it for my opponents. I am doing it for the UFC fans. And I did it for South Africa so that we can prove to the world that we can achieve anything,” he says. Dricus says he is more than ready for the next fight. “There are no confirmed dates yet. I don’t know who I am fighting next, but I am ready to give it my best.

His message to South Africans is clear. “We have been through such a lot as a country. We are still here. We still support Bafana Bafana and the Bokke. We continue to prove the world wrong, and we win. We are the most incredible nation on earth. We need to make the right choices as a nation and continue to be proud of our sport stars. Let’s never lose hope!”

MUSICAL THEATRE IN AID OF THE

Kolisi Foundation

“FINDING THE LIGHT” is a musical theatre event in aid of the Kolisi Foundation with London’s West End and South African musical theatre stars taking to the Artscape Opera House for two hours and hosted by comedian Marc Lottering.

The Kolisi Foundation was born from a conversation Springbok captain Siya Kolisi had with his wife, Rachel, sitting in a hotel hallway the night before the 2019 Rugby World Cup. The topic of discussion was the responsibility they felt towards helping every disadvantaged person growing up in poverty, as Siya did.

“We partner with organisations with a preexisting footprint in our focus areas believing that we are always stronger together,” said Rachel Kolisi in an interview with InBound SA.

She says that all their programmes focus on sport and education, addressing gender-based violence and contributing to food security,

primarily in communities around Gqeberha and Cape Town, and with plans for expansion to other areas. They are motivated by Siya’s personal experiences. “Every child should feel safe and cared for with access to food and education,” she says.

Rachel and Siya are now inviting all South Africans to get involved in the Kolisi Foundation, either through bidding for some fantastic prizes, or making a donation to the “Finding the Light” appeal which will launch on the 14th March 2024, culminating with the “Finding The Light” event.

“The campaign will launch with a gala dinner in London that will bring together philanthropists, artists, businesspeople, media, and sports personalities, and will be followed by a series of events including dinners, auctions, and screenings around the world.”

This musical extravaganza will run from 17 to 21 April 2024, with the Gala Night on Thursday 18th April 2024. Book at webtickets. IB

SHE LEFT EVERYTHING BEHIND. EVEN HER HUSBAND. PACKED HER BAGS AND WENT ON A SIX-MONTH EUROPEAN TOUR WHILE EARNING A SALARY. NOW, SINGER AND TV PRESENTER BIANCA LE GRANGE IS BACK IN SA. BUT NOT FOR LONG, SHE TELLS INBOUND SA EDITOR GAVIN PRINS.

Many Idols fans fell in love with Bianca Le Grange’s voice when she entered South Africa’s first Idols and reached the finals, where she got 4th place. But her musical career did not end there. She continued to sing and even hosted a few TV shows. After all, she comes from a musical family. Mom, Berenice, is a music teacher. Dad, Keith, played the saxophone, and her siblings also played other musical instruments.

Bianca, however, was destined for the limelight. Corporate performances and TV appearances followed, and she met and married her actor husband, David Johnson.

“I have been in the entertainment industry for 21 years. And when Covid struck, work in South Africa dried up,” she tells us. “No matter how many jobs I took, I was just not making ends meet. My expertise, knowledge and experience were not landing me the big jobs. Terms like BBBEE were thrown around too much and no matter what I do, I will never be white enough or black enough.”

Cruising, she says, was something she wanted to do in her 20s, but an agent denied her the job opportunity. Years later, and with a lot more confidence, she auditioned and got a YES from Silversea Cruises to sing on one of their ships.

After a big family goodbye, she set sail on the luxurious Silver Nova, a brand new 728-passenger ship carrying 556 crew members exclusively for the wealthy. “The ship is so beautiful, and the guest areas are fabulous with top-of-the-range décor screaming opulence. We worked hard. So many drills keep you on your toes in case of emergency. You work long hours 7 days a week,”

she says. And the best part? “You get paid in dollars, you travel and see the world.”

In September, a month after setting sail, the ship docked in Málaga, Spain (Painter Pablo Picasso’s birthplace), and it happened to be her birthday. “We spent a night in Málaga, so I decided to experience the nightlife.”

Shopping, she says, was inevitable. Her most expensive purchase was in the Italian town of Portofino. “I bought myself a sequinned dress for R15 000. “I had to look good on the ship. And it was my birthday gift to myself.”

And so, she discovered 35 countries in just six months. She does not have a favourite country. “I can’t choose to be honest. I love the Mediterranean around Italy, Spain, and France. It was incredible - from the landscape to the food, the fashion and shopping. The people there are different. It was particularly strange that people just don’t speak English.”

On the ship, the food was spectacular. “The food was excellent, a selection of salads, proteins, and desserts. I was lucky enough to be invited to the guest’s restaurant, so I also got to taste the good stuff. Silversea offers top-notch cuisine.”

Whether top-notch or not, South Africans always miss something about home when they are abroad for long periods. “I missed biltong, I missed Woolies, I missed hearing birds and crickets. I really missed seeing trees and having 24-hour- internet. We only got 2 hours of internet a day.”

Bianca hopes to return to the ships, but this time with David. “I missed my husband. We plan to do this together.” IB

CASPER DE VRIES THAT MOMENT HE

FELL OFF THE STAGE

STANDUP COMEDIAN CASPER DE VRIES WAS BITTEN BY AN AFRICAN TICK AND RUSHED TO HOSPITAL. THIS PAINFUL ENCOUNTER MADE HIM WRITE A SHOW “SEMI-LEWENDIG” (BARELY ALIVE. HE SAT DOWN WITH GAVIN PRINS TO REFLECT ON THAT PAINFUL BITE BUT ALSO THE DAY HE FELL OFF THE STAGE DURING A SHOW.

What is the show about?

The show is about my encounter with a bush tick that bit me. It caused a lot of pain. I am on medication for the rest of my life because of this little thing. Oh, the wonders of nature! I am touring the country telling the people about bush tick fever.

Are any of your famous characters making an appearance?

Of course. Giselle Serfortein who talks about sex; Oom Kalamari who likes to talk about the past; Blertsie, who has one chromesome less than a camel; Geertjie Appelmoes who is based on my mother; Montelle Janse van Vuuren who used to work for South African Airways and who is now a country singer.

Any favourite character?

I think for sentimental reasons I would choose Greetje Appelmoes. She is typically Dutch with the cap and the long blonde braids. She is like my mother (Henriette). Whatever she says about the world it will make you laugh. After each sentence, she would say “Ja”. That is typical Dutch.

Have you ever had an embarrassing moment on stage?

Yes. At a festival gig, I was on stage performing with another actor and I couldn’t see where the stage ends because it was so dark. I turned

around to walk off, but I misjudged the distance and fell off the stage. The people laughed and thought it was very funny. At least it had an effect. Also just recently, I interviewed for the position of a tour manager. That day, I increased my medication for this insect bite. As I was speaking to her, I could feel a commotion going on in my stomach and hear a grumbling noise. I literally ran for the toilet.

You are well-travelled. What’s your favourite city?

Every city has its charm. Copenhagen, Stockholm, Oslo, all those Scandinavian cities are amazing, and so well run. But I have to say, despite the glitz, glamour and sparkling lights of Las Vegas, where I have seen some amazing shows, despite the warm, welcoming lights of Amsterdam where my mother came from, despite even the childish charm of Disneyworld, nothing can beat the pulse and rhythm of New York City. When you walk around in the city, you feel like you’ve just had a Vitamin B12 injection. There’s always something happening. You feel the pulsating creativity of the people and how they create these shows that run for years. Their brains are certainly wired the right way! I would really like to be part of it, but unfortunately I can’t. But that hasn’t stopped me from going there more times than anyone I know. IB

Congrats. How did you get the job at Prime Circle?

Thanks. I know the guys from the industry. One day, my phone rang, and it was Marco (Gomes, from Prime Circle) who said they wanted to hear me sing. They flew me up to Joburg, and I spent four days jamming with them. By the end of the four days, I was in!

Where were you born?

I was born in Durban, my dad was in the military, so we moved every four years. First Durban, then Potchefstroom, then Virginia in the USA, where I started school, then Tzaneen and Pretoria. It was so much fun for me as a child.

Where do you get your musical talent from? Mom or Dad?

My dad can’t sing a note, but he loves music. My mom sings beautifully. She kept instruments around the house, so we were always encouraged to play.

If you were not a singer, what would

you have become?

I wanted to go into the army and fly jets. But I have always known music and wanted to sing.

You lived in Ireland for a couple of years. What was the experience like?

It was cold and green but beautiful, with amazing people. But over time, I missed family, biltong, Milo, koeksisters and sitting outside. When I moved back, I was like, “That’s it! I am never leaving here again”.

How has X factor changed your life?

I wanted to do something that put me out of my comfort zone. Especially cameras and interviews, and the best way to get over that was to get onto the show. I ended 7th. I was shattered. I was depressed for about a year, to be honest. Then I entered The Voice, and that was mind-blowing.

Apart from Prime Circle, what is your favourite band?

Pearl Jam is just my big band. Matchbox Twenty, One Republic, Ed Sheeran and Nickelback. Locally, it’s Just Ginger, Springbok Nude Girls, The Sugar Clouds, Majozi and Francois van Coke. IB

What was the inspiration behind the artwork?

The work was inspired by the gap I saw between South African artists and world events. As an artist, I could feel how many of us have become distant from creating work because there are so many factors that limit our creativity, such as lack of funds and opportunities. The war itself reminded me of the artists that had a voice but are no more. On the news every day, we see people dying, young children dying! What was I doing as an artist? How can I use my skill to educate, to bring awareness? To heal, to make things better It is only through my voice as an

artist that I believe we can change the way we treat each other as brothers and sisters.

How is the war in Ukraine affecting us and you?

The war is a symbol of power, and as an activist for change, I use my art to reflect, educate and transform.

What would you like people to see in the art?

I would like my art to reflect where and who we are as a society, what changes we need to adopt and what internal conflicts need to be resolved for healing to occur.

Thank you. We have many plans to travel but the most important one is to archive our work so that it can be viewed 20 years from now, for example.

Any similar plans for 2024?

2024 and 2025 are big years of change for me. I used to believe in plans until I decided to just do it.

You also refer to loadshedding in your work. This obviously has an impact on your life too.

Yes, like all of us in SA, not having electricity in our lives affects businesses, and this causes unemployment. My work shows the pain and anguish of mental health. When our rights are taken away, we are left in a vulnerable state, and this is what I am hoping to transform through my work. IB

MEN SHOULD SUPPORT Abused Women AND GET INVOLVED

A WOMAN WALKED INTO OUR HOUSE ONE DAY WHEN I WAS SMALL. SHE HAD A BLACK EYE. SHE HAD OBVIOUSLY BEEN PHYSICALLY ASSAULTED, AND SHE WAS VISIBLY DISTRAUGHT. SHE AND MY MOM WERE TALKING SOFTLY. AT THAT TIME, MY MOTHER TOLD ME NOT TO TALK ABOUT IT, BUT IT BUGGED ME. I KNEW SOMETHING WAS WRONG.

On another occasion, we were shopping, and there was a woman in the shop with blue marks all over her body. That same distraught look again. My mom approached her and spoke softly about what had happened. I just stood there and watched them. These are the incidents that I was confronted with as a young boy. Whenever I started asking questions, I was told it was none of my business and that I should not get involved.

This was years ago, and sadly, nothing has changed. Gender-based violence, or GBV, has become a massive pandemic in South Africa. And it is because of this that I immediately said yes when asked to participate in an Afrikaans book project: Geweld Teen Vroue (Violence Against Women).

As men, who are the culprits most (though not all) of the time, we must take a stand. I want to encourage men to read the book and support women you suspect are being abused. Get involved.

This book project is near and dear to my heart as I grew up in a community where, from a young age, I learned that we don’t talk about gender-based violence. We don’t ask questions when we see an elderly woman in our community with a black eye or somebody with bruises on them.

That’s something I have adhered to since childhood, and until I was in my mid to late 20s, I never asked questions. Only then, once I started working as a journalist, did I become an activist for gender-based violence. I heard some horrific stories not only from friends but from strangers as well. People who talked to me about being in abusive relationships or women who were sexually assaulted by people close to them. At that point, I decided to use my media platforms and give a voice to this horrific pandemic.

Over the years, I have heard a great number of truly harrowing stories. Both perpetrators and spectators should be ashamed of themselves. South Africa is ranked among the top countries in the world for gender-based violence. We have achieved nothing in attempting to eradicate it; the situation is worsening. It’s time to take a stand. When Prof. Bernard Beukman and Prof. Chris Jones approached me to get involved, I did not even have to think twice.

I hope men will take a stand and that women will also speak up. Institutions like the police, the medical services, churches and schools must do more to educate not only men but also women about gender-based violence. IB

Encouraging a culture of reporting empowers individuals to speak up and helps identify workplace bullies who may have slipped under the radar. Implement education and training programmes to increase awareness about workplace bullying and its harmful impact on victims. If this type of intervention is unsuccessful, involve higher authorities such as management or the human resources department.

Present a clear and comprehensive account of each incident, including any evidence or documentation. Develop a plan to address the issue effectively.

Provide a safe space where feelings and concerns can be expressed without fear.

After intervening in a workplace bullying situation, it is important to follow up and monitor events to ensure that the bullying has stopped. Check in with the victim and provide ongoing support. I relocated to Geneva, Switzerland, last year. I have lived here for just over half a year.

Why

did you move here?

My organisation is headquartered in Geneva, renowned as an international hub for finance and diplomacy. This places me at the heart of pivotal development finance decisions because of the city’s density of development banks, UN agencies, and international NGOs. When I came across an opportunity to immerse myself in the global context, I seized it eagerly. It allowed me to diversify the application of my expertise to areas such as using digital technologies to advance infrastructure pipeline development and mobilising private sector investment.

What do you love about this city?

Geneva is situated on the banks of Lake Geneva at the foot of the Alps; the city’s picturesque setting is absolutely stunning. As a host to various international organisations, the

opportunity to connect with people around the world adds a global character to the city. The efficiency and sophistication of the public transport network is very convenient for moving quickly between the city and surrounding areas.

What do you find challenging about this city?

Adapting to French as the primary language of communication has been an interesting experience. Getting lost in translation can be frustrating sometimes. I wish I could learn the language faster through osmosis. The Swiss can be perceived as reserved, so establishing a social life and building meaningful relationships outside professional networks can be tough and may take some time. Geneva is one of the most expensive cities in the world. The cost of living is significantly higher, including everyday expenses such as food and housing. There is a high demand for housing, and the market is extremely competitive, which makes finding reasonable accommodation particularly challenging.

Tell us a bit about the culture?

Old Town Geneva, locally referred to as Vieille Ville, has preserved the city’s historical heart with its narrow cobblestone streets and various architectural styles from the medieval, Renaissance, and later periods. When exploring the city, you will come across art galleries, museums, music, or local traditional festivals that echo the city’s cultural vibrancy. The Swiss take pride in their traditional crafts, such as chocolate and cheese production, and their watchmaking legacy is unmatched.

Like much of Switzerland, sustainability and environmental protection are engrained in Geneva’s societal values. Given the level of cleanliness, you can even enjoy hobbies such as fishing and swimming in the Rhône River which runs through the city.

What do you miss about home?

I often miss my fellow South Africans’ warmth, hospitality and distinctive sense of humour. I sometimes long for the physical proximity of my loved ones and the familiarity of home. Needless to say, missing life milestones of family and friends can be challenging at times. Foodwise,

some dishes are difficult to replicate abroadsometimes, I crave the distinct spicy flavours of a Durban Vegetable Curry and Chakalaka. And I can’t find rooibos tea anywhere! Lastly, I miss the ease of access to hair products and hair salons for Afro / African hair – I really underestimated how scarce this is.

What do you do when you miss home?

When I’m on the tram or the bus, I listen to South African talk radio; it helps me keep up with current affairs and feel connected to home.

Advice to someone wanting to emigrate to this city?

If you are moving in pursuit of a career opportunity, I suggest that you take particular note of the organisation’s policies on relocation support with an emphasis on the accommodation aspect. More broadly, investigate the impact of the move on your purchasing power relative to quality of life. I watched many videos online on the experiences of other expats. Have an open mind to engaging with online support groups, especially when navigating relocation with a family.

Joining clubs to stay active, such as Pilates, CrossFit or hiking groups, helps with socialising. Remember to be patient with the process and to remain kind to yourself as you adjust to a new environment. IB

needed to meet a potential client who lives in Kent, so instead of driving for two hours, having a one-hour meeting and then returning immediately, I asked him what places of interest were near his home. It turned out he lives in Leeds village, just outside the castle. As I’m fascinated by history, I did a quick Google search and discovered that the overnight rate for a B&B room would allow me and my husband two days to explore the castle and its vast estate. Bargain!

The castle got its name because the area was home to a Saxon chief called Led or Ledian. It was rebuilt in stone over the centuries from a wooden fortress on two islands in the River Len.

The first English queen to live there was Eleanor of Castile, the beloved wife of Edward I. She had significant alterations made, including the gloriette, a tower partly influenced by her Spanish roots.

She died in 1290, and ten years later, Edward married Margaret, sister of Phillip IV of France, who was given Leeds Castle as part of her dower. (The bride’s relatives provide her dowry; her husband’s gifts to her are her dower). Edward II broke the tradition, and instead of giving the castle to his wife, Queen Isabella, he tried to balance power at his court and gave it to Bartholomew de Badlesmere. But when the queen was refused entry, it led to a siege. Badlesmere was later hanged, and Queen Isabella controlled the castle until her death in 1358.

The castle’s imposing stone structure and wide moat make it look impregnable, but we only got to see that once we had checked into our accommodation. After driving through imposing big metal gates, we stopped at a modern boom next to a wooden hut. No one was around, but when I pressed the buzzer, a cheerful voice confirmed we were expected.

We stayed in one of the Stable Courtyard rooms, Queensbury, named for Lady Baillie’s father’s title. Olive, Lady Baillie’s title came from her third husband, and she was the last person to own the castle. An Anglo-British heiress, she spent vast sums restoring the castle to the condition in which visitors can see it today.

We strolled through the grounds on the first evening before an excellent à la carte meal at the Castle View restaurant. After the breakfast buffet, we headed down to the castle. The front door was being repaired, which meant that visitors had to go through the wine cellar, but that involved many stairs, and my husband uses a walker. Three guides, Sue, Chris, and Tanya were so thoughtful. We were taken through staff corridors, so we didn’t need to go up a single step.

Our love of history led us to Queens with Means, an immersive video explaining who lived in the castle. That’s where we learnt that Edward III and Philippa of Hainault made many improvements. Their son, Richard II, gave it to his queen, Anne of Bohemia. After her death in 1395, the castle was in private ownership until Henry IV granted it to his queen, Joan of Navarre, in 1403.

Queen Joan’s stepson, Henry V, treated her well until he believed she was plotting his death by witchcraft, so the castle became her prison. Before he died, Henry had a change of heart and Queen Joan regained her freedom. Henry left Leeds Castle to his wife, Catherine de Valois. Queen Catherine’s grandson, by her second marriage, became Henry VII, founder of the Tudor dynasty.

When his son, Henry VIII, married Catherine of Aragon in 1509, he was madly in love. There are carvings of their entwined initials in the castle. Although she had six children, only her daughter Mary reached adulthood, so after 20 years, Henry wanted to remarry. Catherine and her ladies were banished to Leeds Castle.

LEEDS CASTLE WOULD APPEAL TO A COUPLE LOOKING FOR A ROMANTIC BREAK

After 300 years of royal ownership, Leeds Castle was returned to private hands. Several families owned it, but maintaining the buildings, plus the vast estate, was expensive, so it fell into disrepair.

The gardens weren’t yet in full bloom. As we had so enjoyed our visit, we decided to return when the weather was warmer instead of trying to cram everything into one trip. Other attractions on the estate include golf, falconry, glamping, the extensive gardens and themed events. I believe the fireworks are well worth seeing. Leeds Castle would appeal to a couple looking for a romantic break, families with young children, and anyone interested in history. If you have friends or family in the area who would provide free accommodation, the day pass entitles visitors to a year’s entry, so you are not limited to one day. IB

PICKLED FISH

Prep time: 30 minutes

Cooking time: 10 minutes

Pickling time: 1-3 days, optional

Works well with: Carpenter, Yellowtail, any seasonally available Fish With A Story

INGREDIENTS

• whole Carpenter (Silvers) or any Fish With A Story

• 2 tablespoons turmeric

• 1 tablespoon pickled fish spice

• 1 bay leaf, crushed

• 4 tablespoons medium curry powder

• 200ml brown vinegar

• 2 cups sugar

• 6 medium onions, sliced

• oil for frying

METHOD

1. Sauté onions in oil at low heat. Add water occasionally so the onions don’t stick.

2. Salt the fish, dust in flour and shallow fry in oil.

3. Mix the spices into the sugar. Add vinegar. Add to the onions.

4. Cook for around 10 minutes to release the flavours.

5. In a large non-metal dish, layer the sauce and fried fish.

6. Pickled fish can be enjoyed hot immediately after preparation, or cover and refrigerate.

7. The flavour intensifies after a couple days of pickling in the fridge. The fish will keep for 2-6 months in the fridge.

SEAFOOD PAELLA

Serves 6

Cooking time: 1hr 30 mins

INGREDIENTS

• 500g prawns, peeled and deveined

• 250g half-shell mussels, cleaned and debearded

• 1 onion, finely chopped

• 1 teaspoon garlic

• 400g chopped tomato

• salt and pepper for taste

• 1 teaspoon smoked paprika

• 1 teaspoon turmeric

• handful peas

• 1 cup vegetable stock

• 2 cups rice

METHOD

1. Peel and devein the prawns and clean and debeard the mussels.

2. Use a large, deep pan. Drizzle the prawns with olive oil and season with salt, then sear in the pan until a little colour develops on the prawns but isn’t fully cooked yet.

3. In a medium sized pan, add the chicken broth. Bring to a simmer, add mussels and cover with a lid. Cook for 5 minutes.

4. Remove prawns from the pan and set aside

5. In the same pan, add olive oil and cook the onion, paprika, turmeric and garlic until translucent and fragrant.

6. Add tomatoes and cook for few minutes until most of the liquid has evaporated.

7. Pour in the rice and stir to combine. Season with salt and pepper.

8. Pour in the stock and reduce the heat. Cover and allow to simmer for 10-15 minutes or until most of the liquid has been absorbed and the rice is almost cooked.

9. Add the seafood and peas. Cover again and cook for 7-10 minutes until seafood and rice are fully cooked.

10. Serve with lemon wedges and chopped parsley.

TOP TIP:

To mix a large batch, fill pitcher one-third of the way with ice cubes or cold water. Add cooled tea, orange syrup, orange slices and lots of mint leaves.

ORANGE ICED

TEA

Makes 4-6 cups

Time: 30-60 minutes

INGREDIENTS

• 8 cups water, divided

• 4 tea bags, Sanibonani tea or any black tea

• 2 cups orange juice, freshly squeezed

• ½ cup sugar

• ice cubes, to serve

• orange slices, to serve

• mint leaves, to garnish

METHOD

1. In a large saucepan, bring 4 cups of water to a boil. Add the tea, stir and remove from the heat. Cover and steep for 5 minutes.

2. Remove the teabags, cool the tea to room temperature. Combine with 4 more cups of water in a large beverage bottle and store in the refrigerator to chill.

3. In a saucepan, bring the orange juice and sugar to a gentle boil.

4. Continue boiling for 5 minutes until the sugar dissolves and the syrup thickens slightly. Remove from the heat, strain the syrup (if your oranges were pulpy) and bring to room temperature. If not using immediately, store the orange syrup in a tightly closed glass jar in the refrigerator until needed.

5. To make a serving of iced tea, add ice cubes to a large glass and fill it ¾ of the way with the cold tea. Fill the remainder of the glass with the chilled orange syrup.

6. Add a couple of slices of orange and fresh mint leaves. Stir and enjoy!

BLACKBERRY GIN & TONIC

Makes 2 drinks

Time: 2-5 minutes

INGREDIENTS

• 2 shots Gin

• 12 fresh blackberries, more for garnish

• 2 cans tonic water

• 1 fresh lime, juiced

• crushed ice

• fresh mint, for garnish

METHOD

1. Muddle 6 blackberries in the bottom of a bar glass.

2. Top with crushed ice.

3. Add gin, lime juice, add tonic to fill the glass, but not all the way to the top, and stir.

4. Top with more crushed ice and blackberries.

5. Add fresh mint to garnish.

6. Serve with a straw if desired and enjoy.
