n his 30 years in the hotel industry, Darrell Smith has dabbled in nearly every hospitality post in the business, working at properties from the West Coast to the East Coast, in Hawaii and even Mexico. At Hilton Sandestin Beach, Smith found his home. For 12 years, he has been the in-house concierge. With a knack for people and a love for land and sea, he masterfully creates custom vacation experiences for each family that seeks his suggestions. “More than anything, my job is about making memories,” Smith says. “A family walks in and it’s obvious that they’ve been travelling for hours, but they’re really happy about being here. One of the strongest components of my personality is my ability to identify with people. From there, I’m able to assess their needs. Seeing their excitement grow is what makes me happy.” Once Smith taps in on a family’s energy level, he takes a good look at each member. The age range of the children and the personalities of the parents play the main role in determining what recreations to recommend. No matter how your tribe varies, Smith knows that families choose to stay at the resort for its family-friendly amenities. Whether you’re a family of beachcombers or a pack of thrill-seekers, there’s a surplus of offerings to keep you and yours occupied. Obviously, the primary attraction of Hilton Sandestin Beach is its breathtakingly lovely Gulf beach. Some families choose to simply soak up the sun or splash in the waves, but for more active beachgoers, there are kayaks, paddleboards and a full-service marina at the ready. To enjoy the water without the sand, families may spend time at either of

For adventurous families who desire a unique way to experience the water, Smith is excited to share a brandnew activity in his repertoire. Three artificial reefs were recently constructed off the shores of South Walton, offering snorkelers the opportunity to observe an array of marine life in the wild. These structures, made of steel, limestone and concrete, serve as sanctuaries for fish, which thrive there, ensuring that swimmers have plenty to see and learn about. At Baytowne, children are able to go zip-lining, rock-climbing and run a ropes course.” Across the street, the Village of Baytowne Wharf offers the perfect scene for extravagant shopping excursions, including child-friendly entertainment. Smith notes that another shuttle runs to and from the Silver Sands Premium Outlets. Families can easily spend the whole day there, taking the kids to the massive Disney Store and snacking on sweets from the Rocky Mountain Chocolate Factory.

Don’t let the sweets spoil your appetite, though. “Where’s a good place to eat?” is one of Smith’s most frequently asked questions, and he’s prepared to satisfy each family’s taste. “I make them aware of our on-site restaurants that offer delicious cuisine like seafood, steak, sushi and outdoor dining” Smith notes. “Outside of that, guests want to know about quality local restaurants — mom-and-pop places that they can’t find anywhere else. I do have a list of my go-to restaurants that are vetted through the hotel, but it’s a matter of finding what suits them. How far are they willing to travel? What’s their budget, and what kind of atmosphere are they looking for? These are questions I ask myself before I point the way.” If Dad is looking to take Mom out for a special meal, Smith highly recommends children spend time with the Kids Krew, a seasonal day and nighttime program that provides engaging activities for children, such as themed parties, scavenger hunts and hands-on crafts. Parents can take it easy knowing their kids are being supervised by the compassionate staff, and it’s often the highlight of a child’s vacation. “Shaping remarkable experiences is what keeps families coming back,” says Smith. “Most recently, I recognized a family who has been staying with us for 12 years. I had the opportunity to help upgrade them to one of our phenomenal family suites, and they were blown away. Being able to reconnect with them and make them happy, and making any of our guests happy, is what I’m passionate about.”

sk anyone who’s worked on the staff of the Hilton Sandestin Beach Golf Resort & Spa for a time, and they’ll invariably say their coworkers have become like family to them. For dozens of employees, though, there’s no “like” about it. They really are family. Throughout the resort, you’ll find husbands and wives, parents and children, sisters and brothers, and other extended family members working together in the front of the house and behind the scenes to provide guests with Hilton Sandestin Beach’s brand of friendly, yet always superior, service. Bartender Tish Drago at Barefoot’s Beachside Bar & Grill has worked in food and beverage at the resort for 29 years. She and her husband, Tony Drago, were already married and parents of a second-grader when they moved to the area from southeast Louisiana. While Tish came to Hilton Sandestin Beach and stayed, Tony has had other careers before coming aboard as a bellman in 2015. Although their positions put them within earshot of each other, there is limited “together” time for the Dragos when they’re at work. “Basically I’m working six days a week out at the restaurant, and he’s scheduled anywhere from 5 o’clock in the morning to 10 o’clock at night at the bell stand,” says Tish. “We very seldom see each other here,” says Tony, who sports a gray brush cut and has a penchant for saying “yes, ma’am.” “We might sit down and have a brief lunch, that’s about it.” During the busy summer season, between Memorial Day and Labor Day, there’s even less time to spend together, even at home, but when the rush subsides, the couple has time to enjoy the outdoors with their dogs. “We have three dogs, and we take them out on kayaks,” Tish says. “They love to swim.” Nicole and Aaron Harrison also are married and came to the resort as a couple after meeting in college in Miami. She had recently graduated and worked a summer job. “I loved it so much, I decided to stay,” says Nicole,

now the resort’s director of purchasing. Aaron came to the area after a moment of skepticism about whether a big city guy would enjoy the Southern charm of Northwest Florida. “I came out myself and I saw all the sand dunes, and I fell in love with the beauty of the area,” he says. As assistant director of Food & Beverage, Aaron wakes up before 3:30 a.m. to make the 45-mile commute from the couple’s home in Defuniak Springs. Like most of the family members who work together, the Harrisons’ work times don’t allow them to carpool together. For one thing, they take turns transporting their young son, Aidan. Nicole is usually the one to drop the 4-year-old off at a nearby school, and Aaron often picks him up. “At first, it was a little scary, but we learned to make it work out,” she said of mixing parenthood with two high-level positions at the resort. Their jobs are in different orbits, but both say working at the same place has given them insight into each other’s work. “I think it’s helped us learn to grow and respect other positions within the hospitality industry,” Aaron says. “What

she accomplishes on a daily basis and what I accomplish, we can share those stories and learn from them.” There’s no such thing as “that’s not my job” when someone’s in need of help at Hilton Sandestin Beach, and their worlds sometimes do collide. Aaron recalls a time when his team needed to change an entire ballroom from a ladies’ bingo event to a kids’ recreation area in an hour. “I just called Nicole and asked, ‘Will you help?’ and she sent the entire purchasing team. The client was blown away by how organized and fast it was completed,” he says. If you’ve ever enjoyed a meeting at the resort, chances are you’ve met supervisor Patricia Cordero, who’s been in charge of coffee breaks and continental breakfasts for 20 years. Over that time, all four of her daughters have worked at the resort, but currently her only child now on the staff with her is her youngest, Jonathan Graff.

Now a banquet beverage captain, Jon claims he practically grew up at Hilton Sandestin Beach. “I’ve been coming to this hotel since I was 3 years old,” says the 23-year-old. “I was polishing spoons before I was in school. It was nice to come here because, back in the day, they had an arcade, so I used to go down there and play all the time. “It’s good people, good money and I get to enjoy the view,” Jon says. “Sometimes when we have late functions, you’ll have the sun going down, it will be just at the edge of the water and it looks beautiful.” There is a bit of a downside, though. “Everybody knows her, knows she’s a good worker, a hard worker, and so I’ve got to do that, too,” he says. “I keep an eye on him. Make sure that he’s here and he’s on time,” admits Patricia. “You’re a mother; you always do that with the kids, no matter how old they are.” Adarius Knight knows the feeling. He started out bussing tables eight years ago, and the 24-year-old is now a server at Sandcastles Restaurant. His mother, Shirley Knight, also works in food service in in-room dining and, if there’s a challenge, “she’s the first person they run to. They don’t have to go to anybody else, they’ll just go to her.” The two do see each other in the kitchens, although Shirley has a set 6 a.m. to 3 p.m. schedule and Adarius likes to work doubles, often splitting his days with shifts from 7 a.m. to 24 HILTON SANDESTIN BEACH 2018

1 p.m. and 5 to 9 p.m. And each has been known to help out the other — son helping mother gather trays from rooms, and mom pouring drinks for diners. Cora Shipman met her future husband two decades ago when she was a laundry attendant and he was a house man. “I looked at him and said, ‘When you want something you have to do something,’ right? So I introduced myself to him,” she says. Now disabled, Robert Shipman no longer works at the resort, but Cora still works with family. After working off and on during different times, her daughter, Charina Drab, has been employed in the laundry for the past year. Serving 22 years with the commercial-sized washers, dryers and irons, Cora has worked there longer than any of her coworkers. And she has long-term plans for her daughter Charina.

“I told her next year she can open her 401K because then, when you retire, you’ve got money,” Cora says, complimenting Hilton Sandestin Beach’s investment plan, health insurance and other benefits. “I told her, ‘When I retire, you can take over.’ She’s only 37, she’s got 30 more years to work.” While there is tremendous joy in working with her daughter, Cora also speaks warmly about her friends in the laundry, who ask after her husband, even though he hasn’t worked at Hilton Sandestin Beach in five years. “This is like my second home. I started in the laundry, and I’m going to finish in the laundry,” she declares. “I love to work with my team. If I don’t see a happy face, you try to give them a happy face. Everybody just working together is what I love about it.”

Kids Krew rolled out the red carpet and had the latest Disney princess, Moana, and Captain America there to take pictures with kids as they checked in. Cardboard limousines transported families to various activity stations that recreated iconic movie scenes, and everyone felt like a movie star! “The best feeling is when parents come to pick up their kids, and they beg for just five more minutes,” Bass laughs. “Knowing that they’re having so much fun and we’re creating these special memories is why I love my job so much.”

rom a dazzling array of choices at the breakfast buffet, pizza in the room at night — as well as a great selection of poolside lunches and treats in between — kid-pleasing food is always kept in mind at Hilton Sandestin Beach Golf Resort & Spa. While the fine dining at Seagar’s Prime Steaks & Seafood on the lower level is an experience best saved for grownups, “I think all of our menus on the main level are kid-friendly because that’s who we are,” says Angelina Covington, the resort’s director of operations. While Sandcastles restaurant in the hotel lobby is open for all three meals, it’s the daily breakfast buffet that starts the day off right for families — and children younger than 10 eat

Lunchtime is a kid’s paradise, with Picnix Poolside Market and Barefoot’s Beachside Grill offering meals that fill young tummies fast, to maximize pool and beach time. No need to shower and change. Barefoot’s is a come-asyou-are sort of place with a menu that features burgers, sandwiches and salads. Picnix is a perfect choice for the younger set, with an array of choices to satisfy kids, such as hot dogs (including a footlong corndog), chicken tenders, single-serve pizza and mac and cheese. Let them get as messy as they like with a scoop of Edy’s® ice cream or soft-serve yogurt. If kid favorites don’t appeal, Mom and Dad can always find a salad, sandwich or healthful smoothie at Picnix, or elevate that dog with gourmet versions such as Philly, Chicago and Buffalo, created by the resort’s executive chef, Dan Vargo. In Sandcastles Lounge, you’ll find Hadashi Sushi Bar as well as adult-style beverages. Or, take it really easy and order in-room dining. The menu has select options from the resort’s various restaurants, as well as pizza, a bona fide hit with the kids. “It’s the best pizza in town,” Covington declares.

While talented chefs from around the country vied for the position, in the onsite tasting, Graupner outshined them all. “During the interview process we sat at the pass so we could interact and talk,” Vargo explains. “You can always tell how people handle pressure when they’re cooking and doing an interview — trying to focus on the food, trying to focus on the answers.” “We knew right when she was finished, she was the one. She just outperformed all of them,” says Angelina Covington, the resort’s director of operations.

For five years, Vargo was chef at the resort’s culinary crown jewel, Seagar’s. He is now focusing on expanding the quality, attention to detail and creative cuisine he lavished on the AAA Four-Diamond restaurant to include all the food outlets under Hilton Sandestin Beach’s roof. “With the Florida fish house-style feel and menu, I think we’ll have a larger, broader appeal, especially for families,” says Vargo. Also new to Sandcastles will be the Oyster Bar, which features raw and cooked oysters, raw and baked clams, “Peel n Eat” shrimp and a house-smoked Gulf Seafood Salad. Almost every option on the new bar will be gluten free. In addition to gluten-free options, the Sandcastle’s dinner menu now includes creative vegetarian choices. “If you’re vegetarian, your only option isn’t a salad or pasta with steamed vegetables,” Vargo says. “There are so many different ways to put dishes in front of people that everybody would love and … wow, you didn’t even realize you had a gluten-free meal.”

But this season, it is dinner that will reflect a big change. “In 2018, we’re going to take our restaurant and transform it into a fish house at night,” says Angelina Covington, the resort’s director of operations. “From the appetizers to the main courses, everything is going to be geared toward local and regional seafood. All the seafood we’ll be doing will primarily be from the Gulf or the Atlantic side of Florida,”

Pastry Chef Yascha Becker and his talented staff have spent the wee hours whipping up a variety of pastries sure to satisfy your sweet tooth. The delectable display includes plate-sized Danish pastries, croissants, cinnamon rolls and seasonal varieties of muffins. And don’t forget those fresh-baked cookies. It’ll be a tough choice between peanut butter, chocolate chip, sugar, oatmeal raisin and white chocolate macadamia varieties. Becker also has devised some new sweet temptations for 2018. “The almond bear claws are going to be pretty dangerous,” quips Dan Vargo, Hilton Sandestin Beach’s executive chef.

“Another is a chocolate-filled croissant.” There also are convenient graband-go items, including single-serving protein shakes, oatmeal, cereal, Greek yogurt, fruit, energy bars and a variety of bottled drinks. “For a quick breakfast, get some milk and cereal and take the kids outside to sit at a table and eat there, while the parents enjoy the view,” suggests Angelina Covington, the resort’s director of operations. In 2015, eco tourists and locals alike went crazy for the new artificial reef that debuted in Grayton Beach. This man-made structure was coined Turtle Reef, as it is shaped like a sea turtle when viewed from above. As of late last summer, three other reefs taking the forms of a dolphin, a sea horse and a cobia had made their homes in the waters off Scenic Highway 30A. Like natural reefs, these habitats attracted the attention of sundry marine creatures that now live and flourish in the newfound shelters. Families are invited to snorkel and observe a colorful array of fish, marine plants and sometimes rare sea turtles as they weave through the towers of the reef. BIOPHILIA CENTER

Though the emerald-green waters of our beaches may get the most attention, visitors should know that Walton County is a natural wonderland upland, too. Fascinate your family with a visit to the E.O. Wilson Biophilia Center, nestled in an enchanting longleaf pine forest in Freeport, just a short drive from the resort. The center, named for the world-renowned biologist, explores the region’s rich biodiversity by way of trails, expert staff, interactive exhibits and displays. The Biophilia Center hosts events for the benefit of conservation efforts that are open to the public upon registration. MORRISON SPRINGS

Morrison Springs Park in Ponce de Leon encompasses 161 acres of preserved woodland. Trekking along in the shade of cypress and oak trees, you wind up at one of the area’s most striking natural springs. Submerged in the crystal-blue waters of the spring, which is about 250 feet in diameter, are several underwater cave systems, cementing its status as one of Florida’s finest dive sites. If your family doesn’t want to take that deep plunge, shallower depths serve ideally for swimming and kayaking. Snorkelers have the opportunity to encounter various species of bass, sunfish and carp, as well as underwater flora that thrive in this hidden paradise. When you meander in Eden Gardens State Park, you travel back in time. The first thing you see is an alabaster mansion known as the Wesley House. Dating to 1897, the plantationstyle house is now inhabited by antiques and vintage furnishings that provide snapshots of a bygone age. Take a guided tour or feel free to roam the grounds. Weeping willows and oaks overhang impressive, green acreage ideal for picturesque picnics on the grounds or under the pavilions and for outdoor recreation. At one end of the property is Tucker Bayou, where anglers can spend the day casting from the docks. The gardens present a vibrant collection of flowers and shrubbery year-round. TOPSAIL HILL PRESERVE

A local favorite destination, Topsail Hill Preserve State Park has it all. Its 3.2 miles of beach, tall sand dunes and rare coastal dune lakes furnish endless activities to suit your family’s taste. Take a guided hike or navigate yourself through beachside byways, wetlands and pine forests that are optimal for spotting birds wading and on the wing. Select trails are sites for caches if you’re a family of Geocachers, so come prepared for an exhilarating treasure hunt. If walking’s not your style, bike along paved paths to Campbell Lake or catch a ride on the tram to the beach. There, you can sunbathe, search for shells, swim or rent kayaks to paddle for the day. While you’re free to cast your line there, three coastal dune lakes are supreme spots for freshwater fishing. Resort Is a Go-To Meeting Place

I

t’s Russell Davis’ job to plan a reunion, of sorts, every summer for a “family” of 650 or more people. As the executive vice president of the Home Builders Association of Alabama, he’s responsible for planning the group’s annual meeting in July. And for more than 30 years, he’s chosen Hilton Sandestin Beach Golf Resort & Spa to host the gathering. “The facilities match up really well with the needs of our people and the members I work for,” he says. “We’re very much a familyfriendly event with lots of kids. In the old days, the bunk beds were a wonderful way for folks to bring family and the kids to bring more kids. With the addition of the Spa Tower, it just made it the perfect venue for us, and we’ve really enjoyed it for a long, long time.” Several groups have made the resort their meeting headquarters for decades, and Directer of Events Jon Lovett swears it’s the “two B’s” — bunk beds and the beach — that initially lure them to Hilton Sandestin Beach and keep them coming back year after year.

The resort’s 15-floor Emerald Tower has 400 spacious rooms that include a bunk bed sleeping area (with its own media center!) which is in the room but far enough away to give everybody a bit of privacy. “The beach, of course, is the biggest seller of them all,” Lovett says. “And it’s right outside your balcony.” Taking those few steps to the emerald water and sugar-sand beaches is a treat, but the three pools, abundant food outlets and banquet choices, plus Kids Krew and other children’s activities make the resort a great place to stay again … and again. “Everything they need is right here. Whether it’s the restaurants or the rooms, the shuttle to The Village of Baytowne Wharf and all the other hotel amenities, there really is no reason to leave once they get here,” Lovett says. “So many times, people say ‘renting this car is the biggest waste of money because we’ve never had to leave here in the last four or five days.’” Event planners say the camaraderie of a meeting or convention is improved with the rooms, meeting space and activities consolidated in one place, says Regional Sales Manager Joann Hargrove.

“When they leave their meeting or event, they’re not dispersing in all different directions,” she explains. “They’re still under this one roof and they’re still out by the pool, they’re still hanging out at the beach or in the lounge area — so they gain that extra bit of networking you don’t find at some of the other destination resorts.” Hilton Sandestin Beach’s staff works hard to make sure that, even though a group may return year after year, their gathering’s experience is always changing for the better. That could mean the ownership’s investment into expansion and upgrades to the property itself, as well as creative approaches to activities and amenities. “We’ve had bonfires, fireworks, sandcastle-building contests, carnivals, tattoos, face painting, hair extenders — basically anything we can come up with, we’ll try it,” says the Home Builders’ Davis. “We don’t want it the same every year. We’re not going to let it get stale, and the staff helps us make sure that doesn’t happen.” While the focus is often on fun activities for children, Hargrove knows Serenity by the sea Spa is sure to delight the moms. “As they say,

A GUEST’S REFLECTIONS

A guest reflects on her many stays at Hilton Sandestin Beach. She has never had a complaint about her room and rarely leaves the property once she arrives.

I have had the pleasure of being acquainted with Hilton Sandestin Beach Golf Resort & Spa since 1994. My job entails much travel and attending or organizing health care conferences in the Panhandle of Florida — most of which are held at Hilton Sandestin Beach. My stays at this particular Hilton are too numerous to count. Most summers I have between five to seven visits — some to include 13 consecutive days in a row. I cannot say enough about Hilton Sandestin Beach. I always have a personal greeting when I enter the property off of Highway 98. Even though I know my stay is work related, it is as if I have entered another world — my stress level drops immediately. Beginning with Valet Service, Bell Service and front desk check in I am treated like a member of the Hilton Sandestin Beach Family. It is never surprising to get a hug from my favorite guy at the concierge desk or a personal greeting from the general manager, Gary Brielmeyer, or the managers on duty. They are never too busy to stop and chat, give me a very warm welcome and always ask if I needed anything. This part is just the beginning. There have been visits that I have actually had Valet park my car and not seen it again until I departed. There is no need to leave this property. The on-site restaurants are awesome — Sandcastles, the lounge menu, my personal favorite Barefoot’s, The Coffee Shop with awesome pastries and Picnix with pizza and ice cream as well as in-room dining. Seagar’s Prime Steaks & Seafood located in the lower lobby is a wonderful four diamond restaurant for entertaining clients and closing contracts. Oh and did I mention the breakfast buffet — absolutely amazing!! I always reserve one of the poolside cabanas for entertaining clients during downtime from the conferences. It’s my way of keeping my clients close to me and enjoying a great poolside lunch or beverage. Tiffany and Nena are most accommodating along with the team on beachside making sure your beach chair rentals are perfect. Back to my room, I have to say I have never in all these years had any complaints with my room. The housekeeping staff is always close by in case you need anything extra. When attending conferences, Adam is most accommodating to the organizations hosting the conference. The event planners are wonderful and never disappointing. Even the ladies in the gift shop are always so friendly and helpful. If they do not have what you need, they will find it. A great way to really relax during your stay is a visit to Serenity by the sea spa — this is an amazing spa experience. I feel like I could go on forever about Hilton Sandestin Beach! It is five star, no doubt about it!

Those are the memories that last a lifetime, and this is the place where families create lasting memories.

Guests make family memories whether they venture to Hilton Sandestin Beach for a traditional leisure vacation or something else entirely. We host many conferences and events throughout the year and it’s common for meeting planners and attendees to bring their family with them to enjoy the resort while the conference is in session. Work and play are natural allies on our property — with everything in one place, meeting attendees can feel

confident their family is safe, and very entertained, throughout the day. It’s not a coincidence. The family experience is engrained in our culture from the top down. In fact, ownership of Hilton Sandestin Beach has been passed from our original owners down to their own children. Beyond that, our staff is a family of its own. We want this place to be just as special to you and yours as it has always been to us. Many of our valued employees have been with us for more than 20 years — some since the day we opened. We spend holidays together, we laugh and cry together — we even watched a total solar eclipse on our pool deck together last year!

Like any family, ours has grown over the years.

Families who return to our resort time and time again have become an extension of our own. Like the Peugeot family, who has been visiting Hilton Sandestin Beach since the mid-90s for family vacations and weekend getaways. They’ve become close friends with our staff, and beloved members of our Hilton Sandestin Beach family. And there are more like them — our staff has seen many children grow up through the years, returning to the resort each year a few inches taller and ready to explore another part of the property.

We’re also honored to be part of the biggest moments in many families lives. We’ve seen brides and grooms who came here as children return to the resort for their own wedding. We have the privilege of being part of these special moments in the lives of our extended family — we are truly honored and we thank you for that.
