elcome to the FOURTH EDITION of Where You’d Rather Be magazine. We are passionate about the Destin and South Walton community as well as the people who live within and visit our beautiful beaches and the coastal towns of Northwest Florida. This year, our theme is “disconnect to reconnect.” We’ve been to countless presentations this year that showcase how quickly our world is changing thanks to technology. However, in the midst of all the innovations, we believe what families really want (need) is time together. Do you remember the last time you joined your parents, grandparents, sisters or brothers on the beach to watch the sunset and toast that magical moment when the sun dips below the horizon and the sky is ablaze with vibrant colors? This moment is such a great reminder to put down your electronic devices and reconnect with what is most important — friends and loved ones. At Newman-Dailey, we want families to have those special moments and bring back the traditional family vacation. A vacation where you disconnect from work, the demands of life and electronics, and reconnect with family and friends. A vacation where you play board games and stay up late laughing and telling stories. It is in these moments that traditions are created and memories are made that last a lifetime. CATCHING UP WITH COVER ARTIST

his year’s cover artist is local artist Justin Gaffrey. He was honored as South Walton Artist of the Year, in 2005 and now more than a decade later, he has a growing base of collectors and fans both locally and around the globe. We enjoyed catching up with Justin and hearing more about his background, his art and his passion for helping others.

How did you discover your love of creating art? I have always used my hands to create, construct and explore in work and play. I found my passion in the culinary arts working as a cook early in life. I started out building and painting furniture along with contracting and constructing on my own home. All of these experiences brought me into the art world, where I found my creativity and saw myself in a different light.
How do you describe your art? (style, media used, etc.) My style of art has changed a lot over the years and tends to evolve continuously. The beginning days of my art started in a Folklore genre that told stories about life with Southern coastal roots. I traveled to Europe and visited museums that displayed Van Gogh where his work captivated my next evolution of Sunflowers and Poppies. These paintings were the launch of my art career.

Since then, I have emerged my style on a continuous basis by sculpting with heavybodied acrylic paint and using palette knives, spatulas and other culinary tools. New forms have developed because of this exploration, including organic nests, wildlife, seascapes and lakescapes along with other coastal scenery depictions. In 2013, I expanded my art by including contemporary sculptures and mixed media designs. My contemporary works reflect the way I view the human condition and our behaviors. These pieces are very dear to me, because they come from my inner self and are not so aesthetically focused. In 2017, I started collecting objects I found around my house and at outdoor markets to create assemblage art. I would take these objects and arrange them in hundreds of ways and take photos of them until I had a look I wanted that told the story I wanted to express. Then I painted many of these scenes and made contemporary sculptures out of the found objects. My latest body of work is called “Absurd Form.” With these pieces, I have painted wildlife forms to tell the stories of provoking thoughts that are lurking inside. All of these works are on display through the beginning of 2018 at the Justin Gaffrey Gallery, located in Blue Mountain Beach along Scenic Highway 30A. Where do you find your inspiration/ subjects? I find inspiration all around me. I love nature and wildlife, including the local scenery and coastal shorelines. I also travel extensively, and I take exploratory hikes all around the world. When I get back from my adventures, I usually paint the scenery from the explored area. I think my favorite source of inspiration is us, human. The human condition intrigues me to always ask more questions about our behaviors and what motivates us to act the way we do.
We see that you are constantly involved with philanthropic causes. Tell us a little about your recent giving and what inspires you. With the very active 2017 hurricane season, it was placed on my heart to collect donations and deliver them to Hurricane Harvey victims. The week Hurricane Harvey flooded Texas and Louisiana, the Justin Gaffrey Gallery coordinated community efforts to obtain one van, three trucks and four trailers full of donations that were being accepted by the Cajun Navy. We connected and then escorted with a fleet of volunteers from the Cajun Navy in Baton Rouge. Then we dropped off supplies and donations where we reloaded all of our transportation and brought more to the shelters. An organization that is very near and dear to my heart is the Food For Thought Organization. They are a 501c(3) not-for-profit organization based in Santa Rosa Beach, Florida that provides backpacks filled with healthy, easy to prepare food for students who are dependent on free or reduced school meals. They support a child’s development and educational experience by bridging the gap between school meals during weekends and holiday breaks. I have been volunteering and donating for five years with Food For Thought holding their first Annual Art of Giving. At this inaugural benefit, the Justin Gaffrey Gallery raised over $100,000. Since then, it brings me delight to be a part of the new Full Circle Kitchen, where I get the honor to teach teenagers how to cook and prepare dinners while Food For Thought supplies them all the ingredients to do so at their homes. The new Full Circle Kitchen also gives Food For Thought opportunities in which I have participated as guest chef for dinners purchased by incredibly generous donors. We love that you are constantly evolving. What can we look forward to in the coming year? I am looking forward to

the new additions of prints to my painting collection. I have been asked for many years to have a printed edition of my work and have said that my paintings are incredibly thick with paint that I am afraid they will lose their essence. But with the latest works, I made them more about the subject and less about the painted texture which translates better into prints. Saving Sea Turtles One Nest at a Time D
id you know that the beaches of Northwest Florida are a nesting place for endangered sea turtles each year? Last year, the beaches of South Walton experienced a record setting turtle nesting season, recording 127 nests. This success is due in part to the work of South Walton Turtle Watch and the many volunteers who walk the beach regularly to identify, mark and monitor sea turtle nests along the area’s pristine beaches. The purpose of South Walton Turtle Watch (SWTW ) is to locate endangered and threatened sea turtle nests and to protect them during the crucial nesting and hatching season (May 1–October 31). By law, only certified members are allowed to interact with endangered sea turtles and SWTW partners with state officials to 16

offer training courses annually to educate turtle walkers and certify area coordinators. “As sea turtle volunteers, we go through many hours of training so that we may help these wonderful sea turtles,” said Sharon Maxwell, lead volunteer with SWTW. “We are learning more each year. That is why we can get a sea turtle permit, which allows us to help endangered and threatened animals.” Northwest Florida beaches attract several endangered and threatened species of sea turtles, including Green, Loggerhead, Leatherback and Kemp's Ridley. A female sea turtle returns to the beach where she was born to lay her eggs, which can be more than 100 eggs per nest. Approximately 40-60 days later, the tiny hatchlings emerge from the nest and head

for the Gulf of Mexico to begin their life at sea. Female Loggerheads, which are the most common species in Northwest Florida, return to their nesting beach every two or more years and lay approximately four to seven nests in a season. Debbie Taylor is one of the 96 volunteers with South Walton Turtle Watch. She walks a designated stretch of beach during nesting season once a week or more looking for turtle tracks and signs that a female may have come ashore and laid a nest. When a nest is found, it is marked and monitored. Approximately 50 days later, SWTW volunteers start monitoring the beach for hatchling tracks as well as baby sea turtles that may have not made it safely to the water. “I had the rare privilege of rescuing one little, two-inch hatchling just as the sun

was coming up,” said Taylor. “I found an ‘unmarked’ nest with a hatchling struggling to get untangled from sea grass that had grown over the nest. With assistance from my area coordinator, we were able to tear the grass away from around her carapace, but once free, she was limping. There were strands of grass wrapped tightly around her right flipper. After gently unraveling it, she was able to use her flipper and we watched her walk down the beach and enter the Gulf. I was overwhelmed with emotion, knowing I had played a role in saving this one little sea turtle that may someday return to lay her nest on our beach.” Sea turtles can live to be over 100 years old, but unfortunately the survival rates are low. In fact, only one hatchling in a thousand makes it to adulthood (15-25 years). First, the egg must survive. Protecting the nest from foot traffic is a good first step, but the nest is still at risk of predation by animals as well as of high tides during storms, which can wash out and drown nests. Once hatched, hatchlings must make it to the water without becoming disoriented by artificial light or killed by predators. Finally they arrive to their home in the Gulf where they are at risk of sharks, fish, fishing lines, ingesting
debris and trash, boats and pollution. For the females who survive and return to shore to nest, it is a great victory. Through the help of South Walton Turtle Watch, its small army of volunteers and beachgoers, eggs laid along South Walton beaches have an increased chance for survival. EMERALD COAST TURTLE WATCH Along Destin and Okaloosa Island’s beaches, George Gray, who has served as Okaloosa County’s Sea Turtle Coordinator for almost 20 years, leads similar efforts to monitor and protect sea turtle nests and educate the public. “Public education is vital to keeping nesting turtles protected on our shores,” said Gray. “That’s why I lead educational talks and educational walks during nesting season.” From May through October, Gray and his family ride the beach every morning looking for turtle tracks and marking nests. Last season, they marked 18 nests and monitored them from inception to hatching. HOW YOU CAN HELP There are many ways that beachgoers can support the local volunteer efforts to ensure sea turtle nests are protected and hatchlings make it safely to the Gulf of Mexico. Here are some ways you can help when you’re at the beach:

veryone loves a great legend, and with its location near the highly coveted and hard-to-find fishing spot known as “shunk gulley” reef in the Gulf of Mexico, a newly opened restaurant along scenic Highway 30A could hardly have been graced with a more intriguing name. As local lore has it, the reef ’s exact coordinates were a closely guarded secret among the luckiest of fishermen, holding a reputation for being one of the area’s top fishing spots. And with a menu boasting the use of some of the finest fish and seafood available, Shunk Gulley Oyster Bar is well on its way to following in the lead of its namesake to become the stuff of local legends. Building on a vision of creating a restaurant that would ultimately showcase coastal flavors in all their downhome glory at a location that was unique in its beauty, local builder Thomas Gallion partnered with Perdido Key restaurateurs John McInnis and Cameron Price to open the restaurant in late November 2017. Knowing they wanted to trust their new venture to skilled hands, they brought on Cuvee Kitchen + Bar’s former chef to take the helm and develop a menu that combined familiar classics with a few creative new spins on local favorites. “Our goal was to offer dishes that would entice our guests to come back any day of

the week, and sourcing the best ingredients is key to accomplishing that,” says Chef McMahan. “This region has a plethora of the freshest, highest quality product to use, and we have the perfect opportunity to explore everything available and really make it shine.” Furthering their vision of showcasing the area’s multitude of fresh resources, Shunk Gulley is also highly focused on conservation efforts. They talk the talk and walk the walk, going so far as to team up with South Walton Artificial Reef Association (SWARA) to restore fisheries in the Gulf and assist in building a more diverse ecosystem. It’s a proud legacy for the restaurant and its owners to leave, a way to truly feed back into the natural resources that, in turn, feed the community. New reef structures bearing the Shunk Gulley name have been deployed in the Gulf as part of an ongoing partnership with SWARA, and plans are in place for additional deployments in the near future. A bastion of beautiful fish and various other marine life, the Gulf is indeed something worthy of protecting. So, too, are its offerings worthy of their high regard within the culinary world. And with its close proximity to the beach, Shunk Gulley does its fair share in celebrating the seafood caught mere hours before they are
brought to the kitchens to be used in its dishes. But Shunk Gulley’s vision is not to be over the top in its presentation or overly fussy. Instead, it is establishing itself a local hangout — and certainly one where fishermen would feel right at home. Offering a variety of both “naked” and chargrilled oysters crowned with toppings such as sharp cheddar, jalapeno and bacon, Shunk Gulley certainly brings flavor out of its shell. And if you’re craving meat, the Shunk Burger is a signature dish worth sinking your teeth into, topping a the juicy beef with melted slices of Vermont sharp cheddar cheese, crisp Applewood smoked bacon, sweet caramelized honey onions, fresh romaine lettuce and house-made pickles on a toasted challah bun slathered with tomato jam. While entrees like Fried Sweet Tea Chicken could easily have you on the hook, it’s the seafood that truly takes center stage. It is, after all, the restaurant’s pride and joy, prepared simply in a way that easily displays its quality and ability to offer comfort to the soul.

In that respect, the food perfectly embodies the atmosphere that Gallion, Price and McInnis hoped to create — a simple place that feels welcoming and unassuming. “We wanted to bring back an old-school 30A feel with great food, live music and an unreal view of the Gulf,” says Gallion. “Really, one of our greatest goals was to partner with the community and make ever yone feel completely welcome here.” “Whether they’re stepping off the beach, stopping by after work, or just driving by on vacation, everyone can find something to love at Shunk Gulley,” adds General Manager Kirk Williams. Fresh, local and quality are all buzz words at Shunk Gulley. And that is clearly represented on the menu along with the principals of sustainability, respect for the environment and customer service. C
hef Christopher Levi Holbrook will tell you his culinary curiosity was stirred at the tender age of 5 by his grandmother’s chicken and dumplings. “I always loved food growing up; all the fuss was simply about eating, cooking and watching the vegetables grow in the garden,” he says. Holbrook has been working in a kitchen since the age of 14. After graduating from Johnson & Wales University in Rhode Island, he gained experience in the banquet kitchens of various resorts and learned still more under local Chef Tim Creehan. Holbrook worked in several hot spots in Atlanta before becoming a sought-after private chef to various high-profile socialites and celebrities, including New Orleans mogul Al Copeland Sr. In 2008, he returned to the I love to Emerald Coast and launched Signature Catering of paddleboard. 30A, which easily personifies his personal sense of style — coastal, casual and cool. “I’m really kind of a laid-back yet very passionate person,” the 41-year-old says slowly, choosing his words so as to get the most from each one. “You could say I have an old soul and a vintage vest about me, but I’m really comfortable in my own skin.” Holbrook was raised “in the coastal lifestyle,” and he likes to joke that “one side of my family is proper Southern and the other is redneck.” Yet he is also “fed” by traveling for several weeks at a time a few times a year and soaking up different faces, places and … food. “I really feel food is the way I’ve been blessed to absorb different cultures,” he says. “I always try to seek out new information — I’m a sponge.” A last supper for this gourmand would include “a load of foie gras, black truffles and a magnum of vintage Krug,” but if he were a dish himself, without hesitation he says he’d likely be a bowl of gumbo. “It’s versatile; it takes time and effort and energy. It’s spicy, sultry and sexy. It may not be the prettiest thing to look at, but once you have it, it’s full of flavor and life,” he says with a smile.

More than just a name, Prudence Farrow Bruns was the inspiration for a timeless song by the iconic Beatles.

I
t was 1968. The Vietnam War was raging. Martin Luther King was silenced by a bullet. Apollo 7 was the first aircraft to launch human life into space. Women’s Liberation groups began to target the Miss America beauty contest. And The Beatles four-member boy-band phenomenon was at its pinnacle, trying to make sense of the world through song. The band harmonized a lot about women — which is, perhaps, one reason why they had such a strong following of female fans. In 1968 they released “Hey Jude,” “Sexy Sadie,” “Julia,” “Heather” and dozens of other songs. But it was “Dear Prudence,” written by John Lennon and recorded in London over three sultry summer days in August of 1968, that seemed to instantly intrigue a generation that was filled with angst. The lyrical ballad was inspired by Prudence Farrow Bruns. Although she grew up in a Hollywood family — her father was film director John Farrow, her mother was actress Maureen O’Sullivan and her older sister is actress Mia Farrow — Prudence has never been a seeker of the spotlight. Quite the opposite, in fact, as the now-famous song laments. Bruns’ father died when she was just 15 years old. At this time, she experienced “a very powerful spiritual experience that set (her) sails.” She began a personal quest to fill the void she felt with spiritual peace. At 16, she was reading “Siddhartha,” by Herman Hesse, and became “fascinated and enthralled” with India, Hinduism and Buddhism. While a student at UCLA, she pursued her passion for yoga and began practicing Transcendental Meditation (TM). Bruns had studied with Swami Satchidananda for two years and had begun teaching TM in a church in Boston when she met up with The Beatles in India during their six-week sojourn to study with Maharishi Mahesh Yogi. She was just 19 years old and one of few Westerners who had even heard of Transcendental Meditation.
In India, Bruns became so intently focused on her meditation that she turned into a near recluse, rarely appearing from her hut. John Lennon was asked to “contact her and make sure she came out more often to socialize.” As a result, he wrote the song, “Dear Prudence.” In the song, Lennon asks Bruns to “open up your eyes” and “see the sunny skies,” reminding her that she was “part of everything.” Not surprisingly, the song deeply influenced and, in many ways, defined Bruns. Her award-winning memoir, “Dear Prudence: The Story Behind the Song,” offers her personal telling of the story of the iconic song written during one of America’s most tumultuous decades. “It didn’t mean much to me at the time,” she reflects. “I was grateful and it was positive and very beautiful, but I was preoccupied.” And she still is. It has been 50 years since The Beatles released “Dear Prudence” into the universe, but Prudence Farrow Bruns, the speaker, author, scholar, film producer and music muse, still relishes time spent in reflection. She formed the Prudence Foundation to further support the study of yoga and TM and is currently a director of the Northwest Florida TM Program. She leads TM workshops near her home twice a month and at local studios along the Emerald Coast several times a year. She and her husband, Albert, live quietly in Seagrove Beach, where they honeymooned in 1969 and where they spent their summer vacations with their three children. “Seagrove has been an anchor in our lives,” Bruns says. “It’s a very spiritual place and definitely has got something special going on. We like that it attracts the kind of people who care more about nature and less about waterslides and big buildings.” As for music, it’s still a “profound” influence in Bruns’ life. “It’s a very powerful medium and one of the closest things to the spiritual we have,” she says. “It reminds us that we are connected; we are one.”

In 1987, Lennon’s original handwritten lyrics of the song, containing 14 lines and some “doodles” in the margin, sold at auction for $19,500. “Dear Prudence” is one of 17 songs recorded by The Beatles that mentions the words “sun” or “sunshine.” English post-punk band Siouxsie and the Banshees released a cover version of the song as a single in 1983, which became one of their biggest hits.

eciding how to spend a few precious hours of “me time” can be a tough decision. You may ask yourself, “what will give me the most satisfaction — fitness and exercise or relaxing at the spa or salon?” Fortunately, there is an option in Destin that provides the best of both worlds. A visit to The Henderson leaves guests feeling fit, rested and revitalized. Guests are enveloped with calm and beauty the moment they enter the grand foyer. With the open-beamed ceilings overhead, cast iron chandeliers and floor-to-ceiling windows overlooking the state park, it doesn’t take long to feel the journey to wellness beginning. On this visit, I started with circuit training in the fitness center downstairs. The instructor, Kwandre Caldwell, has worked at The Henderson almost a year and customizes each session to the individual’s or group’s fitness goals and skill level. “We enjoy enhancing your existing fitness plan by introducing new exercises that focus on the same areas you’re already working on, but we keep it fresh,” said Kwandre Caldwell, a personal trainer at The Henderson. “We also have the Beach Boot Camp, which is very popular since it combines a full body workout with a beautiful setting on the beach.”
From fitness on the water with “Paddle Fit,” featuring exercises on a stand-up paddleboard to “HIIT,” a highintensity interval training to boot camps, the resultsorientated workouts burn calories and tone the entire body in a beautiful and relaxing setting. For those seeking to calm the mind while strengthening the body, The Henderson also offers yoga classes in all styles of practice. From the “Gentle Flow” class for beginners with Vinyasa-style basic poses to “Flow Yoga” focused on breathing to “Stretch Yoga” aimed at loosening muscles, The Henderson’s highly trained instructors offer classes both inside, on the lawn and on the beach. With the workout complete, it was time to head to the Salamander Spa for some relaxation. Each spa experience begins with the ritual of ringing the Tibetan singing bowl. Upon ringing the bowl, gentle vibrations enter through the hands and the melodic humming brings guests into a trancelike state as the mind focuses and the stress and demands of life dissipate. “Wellness envelopes all areas at The Henderson — art, fitness, dining, relaxation,” said April Smith, spa director

at Salamander Spa. “When you come to The Henderson, you don’t want to just get a massage and leave. You want to spend the whole day here and enjoy a holistic experience that empowers and energizes you on a path to well-being.” With so many treatment options, I decided to try the “Henderson’s Dreams” from the body collection. This service is a customized treatment developed by Kerstin Florian specifically for Salamander Spa. The journey to calm begins with the olfactory glands. Each guest personalizes the experience by selecting a scent from the Kerstin Florian essential oils. The selected oil is then used within a mineral salt scrub (for me, the eucalyptus with ginger was the perfect mix of invigoration and relaxation). After the scrub, guests enjoy a full body massage, which is enhanced with warm rose quartz stones to further relax the body and center the mind. During the process, the scalp is massaged and head wrapped. The treatment concludes with a soothing foot massage. Once complete, the therapist mists refreshing Neroli water to slowly rouse you by awakening your senses. Before or after any treatment, the wet room features amenities that combine heat and water to sooth muscles and release toxins. Guests can begin in the whirlpool tub or sauna and then move to the experiential shower. This is a unique spray experience with light display, which combines water spray volume from the walls and overhead with temperature settings for a soothing or invigorating effect. An ideal place to meditate and embrace inner healing is the Lavender 30

Lounge. With six luxurious chaise lounge chairs, the room is bathed in natural light, creating a beautiful serene setting for relaxation. This was the perfect opportunity to nourish my body. I ordered fresh-from-the-Gulf grouper tacos off the Horizons menu. Coming soon, the new spa menu will include build-your-own bento boxes with a wonderfully diverse mix of greens and proteins. The best part was topping off the experience off with some bubbles. Lavender Bubbles, a mix of lavender simple syrup, La Marca Prosecco and Miraval Rose was the perfect complement to a day at the spa. Spa goers may also continue their journey of transformation by visiting the salon for hair, makeup or nail treatments to leave looking as beautiful on the outside as you feel on the inside. “Craft”
has become a household word thanks to the rise of the craft beer movement the past decade. The popularity of craft beers has paved the way for craft spirits to follow. In fact, the American Craft Spirits Association’s Inaugural Craft Spirits Economic Briefing, released in August 2016, revealed there were 1,315 active craft distillers in the U.S., producing 4.9 million cases and generating $2.4 billion in retail sales annually. Northwest Florida’s leading wine and spirits expert, Chan Cox, describes the evolution as a natural one. “It is similar to what we saw with wine 25-30 years ago, when everyone was getting interested in wine. They wanted education; they wanted to learn more and started getting passionate about wine,” said Cox, owner of Chan’s Wine World and The Craft Bar. “Two to three years after the craft beer movement began, we

began to see people come into the store doing research and becoming educated about craft spirits. Bourbon is leading the charge, but it is spreading to other categories.” “In the early ’70s, bourbon was king,” continued Cox. “Now there is huge interest in bourbon again, but it’s different. Back then, you could run an ad for Early Times and sell 50 cases. Today, consumers are not seeking the mass produced bottle of bourbon. They are seeking premium brands and craft spirits.” What makes a product “craft” is not yet clearly defined. Some say it’s a product that is handcrafted by a qualified, passionate expert. Others believe the product must be made from the highest quality ingredients or materials while others say it is a product made with precision. But most agree that craft is a combination of the above.

On a national scale, many of today’s craft spirits producers are owned by large beverage companies. For example, Angel’s Envy is owned by Bacardi Limited, the largest privately held spirits company in the world. Even winemakers are joining the craft spirits movement. Dave Phinney of Orin Swift Cellars sold his wine business to E&J Gallo and launched a craft spirits company called Savage & Cooke. With an emphasis on brown spirits — bourbon and whiskey, Phinney is using the same techniques that he used to make wine. Using grain that is grown on his property in Solano County, he is milling it on site, monitoring each stage of the distillation process and then aging the spirits in wine barrels. For many distilleries, the focus is on quality ingredients. When Camden Ford was exploring the idea of opening a distillery in Northwest Florida, having access to quality ingredients was paramount. Discovering that farmers from Florala, Alabama, to Pensacola were producing the quality grains needed for premium spirits, including vodka, gin, rum and bourbon, Ford teamed up with master distiller Aaron Barnes and launched Timber Creek Distillery in Crestview, Florida, just north of Destin, in 2015. “We are blessed with some fantastic local crops in the Florida Panhandle,” said Ford, who serves as co-owner and president of Timber Creek Distillery. “We have corn, wheat and oats here. Rye grows in Central Florida. For our vodka and whiskeys, we use local red soft winter wheat, local Yellow No. 2 Dent Corn and local Florida 401 Black Rye. For our rums, we use the best Gulf Coast Cane Molasses from Louisiana.” “In addition to great grains, we have great water,” continued Ford. “In Kentucky, they talk about how the limestone spring water distinguishes Kentucky bourbon from competitors. We have spring water from a Florida limestone aquifer. It is filtered and pumped right to us.” While Timber Creek is a young distillery, the focus is not the age of the product but the quality of the ingredients and the distilling process. “We have custom-designed our distillery to take the greatest care of the fruits and grains to preserve and extract the purest flavors,” said Ford. “We have a custom-designed pot still and the copper worm condenser to allow the bold flavors of our raw ingredients to shine through.

Not only are craft spirits gaining more shelf space at Chan’s Wine World and other package stores along the Gulf Coast, but craft cocktails are also gaining fans at a rapid rate. Cox opened four Craft Bars in Northwest Florida since 2014. “What has happened in the three years since opening our first Craft Bar location (in Destin) is that we have gone from selling a higher percentage of craft beer to now selling a higher percentage of craft cocktails,” said Cox. “Everything we do is craft. Gone are the old days of powders and mixes. Every ingredient is fresh. We make our own bitters. We have a machine to make fresh citrus juices. We use herbs and fresh fruit — all craft ingredients.” “Everything is precision cocktails. No free pouring — not like in movies years ago,” continued Cox. “Our team is excited about the craft movement. They are very passionate about everything craft. Last year, Cuvee Kitchen and Wine Bar was purchased by local restaurateurs, Christopher Ruyan and Tyler Jarvis, from Tim Creehan. As part of their vision to bring a fresh and local twist to this favorite local gathering spot, they hired beverage director Zach Bingham, who was a student of the craft cocktails movement before moving back to Destin. “I was in Chicago at the height of the movement,” said Bingham. “James Beard moved to Chicago. the precedent. One of my mentors was David Disney at Salero. He was working on new cocktails. He was making consummates from scratch. He took my creativity to a new level. “Cocktails are stories and narratives,” continued Bingham. “Nothing is really new. It is reimagination of something that was used in the past.” Bingham has been building the beverage program at Cuvee Kitchen & Wine Bar to not only support the menu, but also to tell a story. “Our craft cocktail menu is defined by three parts,” Bingham said. “First, historical significance: Is there history behind it? An aperitif from Italy, a fortified wine cocktail from the 1920’s pre-Prohibition. Second, the ingredients themselves must be fresh. Third, it is intentional to the program itself. Seasonal, historical, themed … does it fit the narrative? “Guests who have been coming here for years will find ‘something new to crave.’ For example: Take the Manhattan: a classic cocktail made with bourbon, rye, vermouth. Our version is approachable to the Manhattan lover. Named the ‘The Corrupt Bargain’ after the 1930’s W Hotel Manhattan, which was notorious for splitting the (bitters) base. We looked at the flavor profile blend of three bitters — vanilla, bark and cherry. We use orange bitters for a lovely floral note with acidity along with Jerry Thomas’ Own Decanter Bitters for molasses and oak. Then, instead of a skewered maraschino cherry, we give it a Florida vibe with a flamed oil peel for aroma of burnt orange. “Take the traditional and turn it on its head,” said Bingham. “We’re in the business of asking questions. Why do it that way? What can be changed? Consistency is the challenge. Viscosity must be just right, must be exactly the same every time.”

Founded by Chan Cox, the Craft Beer & Spirits Jam was launched in 2014 as part of the South Walton Beaches Wine & Food Festival. “We wanted to appeal to younger audiences and bring in iconic legends,” said Cox. “We’ve hosted Michter’s Master Distiller Willie Pratt, Master Distiller Wess Henderson of Angel’s Envy and Jimmy Russell of Wild Turkey. We like this trend because people are drinking less but drinking better.”

Artificial reef submerged
A crane lowers part of an artificial reef into the waters of the Gulf. The structure soon became home to a menagerie of undersea life.
ONE SUNNY DAY late last fall, Andy MacAlexander stood on the side of his boat in his wet suit, a scuba tank slung over his shoulders, a pair of rubber flippers on his feet. He peered down into the dark blue water.
Though invisible from the surface, about 60 feet below, 6,000-pound hunks of limestone, concrete and metal rested in the sand. Just four months earlier, MacAlexander had been in this exact spot, watching a giant crane hoist the pyramid-shaped structures from the deck of a barge and then lower them slowly into the Gulf of Mexico. This project is MacAlexander’s brainchild: a series of artificial reefs, sunk nearshore and in deeper waters, to create perfect ecosystems for snorkeling, scuba diving and fishing. Now it was time to dip under the surface and see what those hunks of submerged construction material had become. He splashed into the water and dove down. A rainbow of vibrant colors was alive, pulsing with action. Red and black snapper swarmed in large numbers. Dozens of grey triggerfish and gag grouper darted around. Varieties of airy plankton drifted by. He spotted spindly arrow crabs, the daddy longlegs of the sea, black-and-white-striped spadefish, bright, blue tang with their fluorescent yellow tails. MacAlexander was blown away. He dove the reefs shortly after they were sunk, but at that time they were still nearly barren. He knew on this dive he would see fish, but the quantity was staggering and completely unexpected. He and his dive partners were giddy with excitement. “It was almost silly, just ridiculous how many fish we saw after only four months,” he said. “No one really ever imagines it. I mean, you put something out there, and it instantly has an impact. As soon as you put it in the water, the fish know it’s there.” DESTINVACATION.COM B E M AGA ZINE 2018

SHARKS AT THE REEFS? No. Sure, there are sharks in the Gulf of Mexico, and the reefs attract sharks because the reefs attract their food source— small fish. However, sharks are beautiful creatures and can be an exciting experience for scuba divers and snorkelers. The International Shark Attack File investigates alleged sharkhuman interactions occurring worldwide each year and reports that you’re 75 times more likely to be killed by lightning than a shark. HERE'S SOME TIPS ON HOW TO STAY SAFE: » If a shark is sighted, stay calm. Most sharks are merely curious and will leave on their own accord. However, if a shark is showing signs of aggression, leave the water. » Always stay in groups since sharks are more likely to attack a solitary individual. » Avoid being in the water during darkness or twilight hours when sharks are most active and have a competitive sensory advantage. » Do not enter the water if bleeding—a shark's olfactory ability is acute. » Wearing shiny jewelry is discouraged because the reflected light resembles the sheen of fish scales.

MacAlexander’s passion for what’s below the water’s surface began at a young age. He grew up in Memphis, Tennessee, but he and his family took regular trips to the Caribbean for diving adventures. “There has always been an emotional tie to it,” he said. “Maybe it was just the way I was born, but I can’t get away from saltwater. Some people dig the mountains. Some people dig New York City. I dig the Gulf.” It was this love for the Gulf that brought him to South Walton where he could
snorkel and dive and raise a family, fostering in them their own love of the salt and the sand. Then in 2010, the Deepwater Horizon oil spill happened, leaking over 4 million barrels of oil into the Gulf over three months. “Everyone was freaking out about the oil and the impacts on tourism and the impact on the economy,” MacAlexander recalled. “Everyone was thinking from a financial perspective: There are going to be penalties and fines, and everybody’s either losing money or making money.”

5 SAFETY TIPS FOR ENJOYING THE REEFS
“But what about the fish?” MacAlexander knew the spill would affect the ecosystem thriving under the water’s surface. Much of human action has an effect on the environment, and for almost half the country, those effects drain into the Mississippi River and then flow right into the Gulf of Mexico. The motor oil that drips from a car, the tons of discarded plastic, the chemicals used to treat crops. As MacAlexander mulled these thoughts and continued to dive and spend hours underwater, he came up with an idea. Maybe they could build artificial reefs, places where fish could find refuge and people could snorkel or dive and experience all the life thriving under the sea. Those people might gain a greater appreciation of how humans and the environment interact. Over 3.5 million tourists visit South Walton each year. If 10 percent of those people — 350,000 people a year — went home with a new perspective, that could make a difference, he thought. “If it’s in front of you, you can’t neglect it. You can’t say it’s not beautiful when you go down there to look at it,” MacAlexander said. “It’s not just a
cool place to go boogie board or body surf; it’s not just somewhere to lay on the sand and get sunburned. There’s actually life under those waves, and it’s amazing. It’s super-freaking cool to see. And it’s something worth protecting.”
A REEF IS BORN
People got on board with MacAlexander’s vision almost immediately. In 2013, the South Walton Artificial Reef Association (SWARA) began with the generous support of a handful of local donors and county, state and national organizations. By the end of last year, they had spent $2 million building reefs off the coast of Walton County, and the program has grown to be one of the most ambitious in the state of Florida. This summer alone, the group sunk over 2.5 million pounds of concrete, steel and limestone. The grassroots organization has one paid staff member, the rest of the group are all volunteers. “There’s a heck of a lot of backbone in this organization,” MacAlexander said. “I’m passionate about it because it’s just who I am, but it’s the whole community that has made this happen.”
1. Always have a dive flag whether you are snorkeling or diving. It is not only required by law, but it’s smart. 2. Always have a flotation device like a kayak, paddleboard or even a boogie board. Take something with you just in case you get tired or get a cramp. 3. Don’t go alone. Bring a partner if at all possible. 4. Have a plan, just like with any outdoor activity like hiking or biking. Make sure someone on shore knows your plan. 5. If the water is rough, don’t go. If it is going to storm, it’s probably not a great time to snorkel or dive.

THE REEF BREAKDOWN 4 SNORKEL REEFS: Good for: snorkeling, free diving How to Get There: swim, paddleboard, kayak Four inshore snorkel reefs are complete off Miramar Beach, Topsail Hill Beach, Grayton Beach and Inlet Beach. The 12 dive reefs, which are 19 percent complete, are sprinkled farther off the coast, from half a mile to a mile out, stretching along the county’s coastline. The first reef the group completed is located at Grayton Beach State Park. A sign on the shore and yellow pole visible from the Gulf gives directions to its location about 200 yards offshore. (Coordinates and maps for all the reefs are available at waltonreefs.org.) When swimming past the sandbar out to the reef, it’s incredibly quiet underwater. Aside from the waves, there aren’t any sounds at all. “When you get closer to the reef, you start hearing this crackling noise,” MacAlexander said. “When you get over the reef it sounds like you’re in a giant bowl of Rice Krispies. It’s the barnacles and everything feeding and eating. It’s loud. It’s the sound of marine life.” All the reefs are designed to be reached by kayak or paddleboard to make them accessible
to everyone, even if you don’t own a motorized boat. The snorkel reefs are close enough to swim. For visitors without equipment, first-timers or anyone looking for a fun, group adventure, some local companies, like Rent Gear Here, offer guided tours to the snorkel reefs. “A lot of people don’t realize it’s pretty easy to get out there,” said Erika McCracken with Rent Gear Here. “If they can go out at least once with a guided tour, they will feel more comfortable to go out and do it on their own.” The company’s guides are well-versed in the marine life at the reefs, and they explain what is swimming, scuttling or floating by during their tours. Whether seasoned at snorkeling or diving or just starting out, MacAlexander said the experience is like nothing else. “It’s the only place on earth that I know of where no other thoughts exist,” he said. “Not your mortgage payment, your kid’s grades, if you left the garage door open. Nothing else but what you see right before your eyes.”

Recollect the peaceful mornings when each daughter not only had her own bathroom, but also her own bed? The convenient location belies what most often strangles a trip to the Emerald Coast:
traffic. Bike riding and walking is incredible in this area. Scenic Highway 98 features wide sidewalks and slow-moving traffic, and inside the community gates, there is virtually no traffic at all. We rented four bicycles from Coastal Cruisers, and they were delivered to and picked up from the rental home. Henderson Beach State Park is less than 2 miles west, and the nearby public beach with its sugar-white sands is less than a quarter mile from the front door of Estate of Tranquility. More conveniences in close proximity are longtime favorite restaurants:

The Crab Trap Destin, Captain Dave’s on the Gulf, Camille’s at Crystal Beach and 790 on the Gulf. Indian Bayou Golf Club also is just 4 miles away. Some bucket lists include deep sea fishing, and while seeking the elusive blue marlin off the coast might be a dream for some, the girls in my family were fine with a communal party boat like the Destiny or Destin Princess. Both are docked at the Destin Fishing Fleet Marina and can accommodate individuals, small or large parties. We chose a six-hour trip with all bait, tackle and license included in the price of your trip ($65 in the winter, $80 in the summer). After cruising 10 to 15 miles offshore, signals were given so that our group could begin fishing. Bait your hook, drop your line near the bottom of the Gulf and look for a sign. After a slow start, our group caught amberjack, Vermilion snapper, red snapper, white snapper and triggerfish during the excursion. When required, the friendly crew was handy with a gaffe and amicably untangled crossed lines. This kind of fishing doesn’t require trolling or a long wait for action. The captain and the crew need to find the fish and the bait that will attract the fish. The rest is up to you. Once the excursion was complete, our fresh catch was expertly cleaned, bagged and put on ice for an additional 35 cents per pound. The fun had just begun!
Hook, Line and Sinker
After showering and dressing back at the Estate, we returned to the marina for dinner at Brotula’s Seafood House & Steamer. Truly one of the greatest ideas of all restaurants convenient to charter boats is Brotula’s hook-and-cook option for all who wish to enjoy their fresh catches of the day. Our server, Alex, whisked the fish away to the kitchen, took our drink orders and provided us with good intelligence about the appetizers and sides offered. What ensued was an extraordinary display of culinary execution. Fried pickles, lobster-and-spinach dip and fried green tomato Caprese led the way. Our fresh catch, which was nicely prepared in three different ways — broiled, blackened and fried — was served on a huge platter. Accompanying the main trio of were scrumptious Brussel sprouts, mashed potatoes, cheddar cheese grits and
asparagus. There was no way Alex could handle everything by himself for our group, and no fewer than five others chipped in at some time during our meal. Chef de Cuisine Thomas “Tommy” Lemasters checked on us twice during our meal. Born and raised in the local area, Lemasters was totally invested in seeing that we were pleased with our meal. And although there was way too much fish (I suggest you bring no more than eight ounces per person), we still dove into Brotula’s signature Key lime pie and seasonal cobbler for dessert. The 5,500-plus square-foot restaurant offers lunch and dinner daily with indoor and outdoor dining options, live music and Sunday brunch specials. Although Brotula’s focuses on steamed and boiled seafood, there are other options for those who don't enjoy shellfish or seafood, such as meatloaf, chicken potpie and Delmonico ribeye. Partners Christopher Ruyan and Tyler Jarvis have done such an impeccable job with Brotula’s and at nearby Jackacuda’s Seafood & Sushi, that renowned Gulf Coast Chef Tim Creehan asked the pair to take over his Cuvée Destin, which reopened this spring as Cuvée Kitchen + Wine Bar. Back at the Estate, movie watching, board and card games ensued. Five days in comfortable surroundings, with the freedom to walk the beach, safely bike and spend time with family under the same roof made for a nice reunion. Personal space, unfettered bathrooms and a private pool made for a reunion that everyone looks forward to repeating for years to come at a property that perfectly mirrors its name.

Paddler’s Paradise Stand-up paddleboarding enjoys a strong following on the Emerald Coast BY KARI C. BARLOW
B
ack in the mid-2000s, the sight of a stand-up paddleboarder gliding her way across Pensacola Bay in the morning sun or navigating Destin Harbor at twilight would have had most people doing a double take. Fast forward a decade or so —particularly one in which there was a recession that drove many to set aside their gas-powered toys for less pricey modes of recreation—and this once-curious pastime is everywhere.
“It has become super, super popular, because everyone can do it,” says Rhys Sharp of Liquid Surf and Sail in Fort Walton Beach. “We tell customers every day, it wouldn’t be so popular if it was hard to do. If you walked into the store, you can paddleboard.” Stand-up paddleboarding, or “SUP” for short, has its deepest roots in Polynesian culture, but it first gained mainstream popularity in Hawaii in the late 1990s, when big-wave surf legend Laird Hamilton and others used it to oversee surf classes. Today, people of all ages, backgrounds and physical abilities are using SUP to pursue a wide range of adventures, from backcountry expeditions to tournament fishing to cruising their local bay. sleeker, lighter, tougher and even more inflatable than ever before, and they’re also readily available at big-box stores and popular online retailers. “Everybody’s got one,” says Sharp, who, having worked with Liquid Surf and Sail since it opened in 2005, has witnessed the SUP explosion. “Market saturation is there. … Any place that has a coastline has a paddleboard company.” Florida’s Emerald Coast is no exception. In fact, it’s home to two major players in the SUP industry: the pioneering YOLO Board, which started in Santa Rosa Beach, and leading innovator BOTE Board, out of Destin.
A Long Adventure
When YOLO Board founder Jeff Archer describes his introduction to SUP, it makes perfect sense that he went on to build one of the most successful brands on the market. “My first time on a paddleboard was something of a spiritual encounter,” he says. “I paddled up on a mother dolphin teaching her young ones how to fish. It was such a powerful moment that I felt that everyone should have the chance to feel this incredible connection to nature.” Fueled by their motto, “You Only Live Once!,” Archer and his team started YOLO Board in 2007. “We just saw what seemed to be an obvious void,” he says. “Incredible waters, great weather, hospitable locals and visitors with active souls that craved sun, salt and beauty. I felt compelled to add paddleboarding, period. I soon realized that it was going to be a long adventure.” Ten years later, YOLO Board has become known worldwide for paddleboards that are not only highly functional, but works of art in the eyes of their customers. Bold colors are paired with YOLO Board creative director Jake Meyer’s custom designs to reflect the company’s love of nature and adventure —
whether that takes the form of touring, fishing, yoga or racing. In 2017, YOLO Board will introduce 17 new board models in celebration of its 10th anniversary. “If I stop and think about all the people who have given so much of their time and spirit to this dream, it chokes me up a little,” Archer says. “Celebrating this year, working on new things and planning for next year and beyond really keeps me stoked every day.” A r c h e r ’s t e a m o f employees happily spread the SUP gospel, holding beginner’s classes, offering tips and answering questions at its main retail store, YOLO Board & Beach, on U.S. Highway 98 in Miramar Beach and at YOLO Board & Bike on 30A in Santa Rosa Beach. The company also has expanded its YOLO Adventures program through which it partners with other brands, communities and resorts to provide activities such as kids’ camps and SUP yoga. “The YOLO Tribe is how we think of our family, friends and followers,” Archer says. “The tribe gets together to ride bikes, paddle, workout and just hang sometimes. Everyone is welcome, which is perfect for the newbie that wants to absorb a little paddle culture!” With SUP at its core, YOLO Board has grown into a full-scope lifestyle brand, thanks to those loyal and close-knit customers. “Passion draws everyone together and embodies a way of life,” Archer says. “We’ve designed and produced bicycles, custom paddles, apparel, signature coffee — all born out of the vibe of the tribe!”

What I really wanted to achieve was a hybrid vessel.” At the time, the country was also reeling from an economic downturn, and folks were spending less money on recreation. “This was a very simplistic and minimal way to get out on the water and enjoy what our area offers,” he adds. After eight years in business, BOTE Board now sells to more than 350 retailers across the country and is known for simple yet groundbreaking advancements in customization. “The idea is, the board starts off as a bare bones platform, and we make a variety of accessories to outfit your life,” Corey says. “You can pack a cooler on it. You can load it full of gear. You can fish from it. It’s essentially a man-powered boat.” While rugged enough for duck hunting and fly-fishing, the boards are also stylish and unique, with vibrant color schemes and wood inlays, and easier to carry than ever before. “Honestly, it’s becoming what we wanted it to be when we first started,” Corey says. “Paddle with your kids, paddle with your dog. Go fishing, go hunting. … Our theory was this was going to be the platform for your water life.” The Coopers love hearing about their customers’ adventures and innovations, and like YOLO Board and so many other brands today, they showcase those stories on their company website. “That’s how you keep something going and moving forward,” Corey says.

BOTE Board, which has a retail shop on Mary Esther Cut-Off in Fort Walton Beach, also holds on-water SUP demos at its main location on U.S. Highway 98 in Destin. “People can come, and we’ll have all of our board models out and they can try them,” Corey says. “We joke that it’s almost like fitting a suit to someone. It’ll put you on the right track from the start. We don’t want you to have a bad experience on a board that’s not fit for you.”

Ultimately, for many locals, SUP has become a fun, affordable way to interact with the local environment. “It literally opens up a whole new world to you,” says Jason Kelts, a Fort Walton Beach resident and avid paddleboard fisherman. “You can go places where boats can’t go. … It’s a therapy session, honestly. It’s quiet. You can see ospreys flying. You don’t have a motor running behind you.” Stand-up paddleboarding also offers an up-close look at marine life. “We’ve had dolphins swim right underneath us. We’ve gotten in the middle of hundreds of ducks,” says Mark Wise, who tried SUP with his wife Anita about 10 years ago during a vacation in Blue Mountain Beach. Now the Pensacola Beach couple is out on their boards every couple of weeks in Santa Rosa Sound. “We just love the leisureliness of the paddling,” Wise says. “You can go as slow or as fast as you want.”

First Quarter For Newman-Dailey’s first quarter project, all divisions teamed up to support Habitat for Humanity of Walton County. With two build days scheduled back to back, the Newman-Dailey team divided and conquered, helping to build a new home for a family of five who lost everything in a fire.

Second Quarter As part of Newman-Dailey’s involvement with the Destin Charity Wine Auction Foundation (DCWAF), including volunteer hours and sponsorship, the 2017 auction raised a record-setting $2.7 million for children in need in Northwest Florida. By hosting celebrity chefs and vintners from around the world, Newman-Dailey provided the warm welcomes and lodging so the experts could share their talents through wine dinners and auction lots that raised critical funds for 15 local children’s charities. Since 2005, DCWAF has donated more than $15 million to local non-profit organizations, making BIG impacts with children in the community.
Members of the Newman-Dailey Team also entered a team in Relay for Life. With numerous Newman-Dailey team members, friends and clients impacted by cancer, the Vacation Vixons raised $8,670 for the American Cancer Society and earned the honor of "Most Money Raised by a Team & Most Money Raised Online by a Team." Overall the event raised more than $53,000 for American Cancer Society in the fight against cancer.
Third Quarter Newman-Dailey Resort Properties team participated in Food For Thought’s Stock the Pantry Party collecting food items for local students to fight child hunger and help local students as they go back to school. The team rallied their friends, neighbors, vendors, partners, owners and guests to help achieve their goal, resulting in the donation of more than 16,000 food items and earning 4th place in the local competition! Throughout the school year, Food for Thought provides backpacks filled with healthy, easy to prepare foods for students who are dependent on free or reduced school meals. Food For Thought currently serves 30 schools in Walton and Okaloosa Counties, providing backpacks for 2,850 students each week.

Fourth Quarter The Newman-Dailey team adopted a family for the holidays through the Fresh Start Program. The mom, Tashiana, with two beautiful sons—Aaryn (age 2) and Aaiden (age 8 weeks) had fallen on hard times. Through the team’s big hearts, NewmanDailey raised $1,150 donating $650 directly to Tashiana and additional funds to the Fresh Start program to help two additional families! How did your childhood influence your love for food and entertaining? As a child, I spent a lot of time in the kitchen with my mother, learning to cook and the importance of using fresh ingredients. From a young age, I understood that food and the family table were extremely important. What is the farthest or most exotic location you’ve traveled in your career? I travelled to South Korea for my show "Eat the World" with Emeril Lagasse. It was an amazing experience that I feel fortunate to have had.
Why did you decide to move to Florida, and when did you make that decision? We decided to move to Florida about five years ago. We have spent a lot of time in Florida over the years, and it’s where my wife and I wanted to raise our children. I’m also a big fisherman, and the Northwest Florida Gulf Coast is a great place for me to be able to fish when I have some time off. What do you enjoy most about being a South Walton local? The Gulf of Mexico is basically in my backyard, which allows me to bring fresh fish to my family table and to the restaurant. What led you to the decision to open Emeril’s Coastal Italian in Grand Boulevard? I love this community. It’s primarily where my family and I live, and I wanted to bring something new to the area. Why did you select an Italian concept for your new restaurant, when you’re far more well known for your Cajun and New Orleans inspired restaurants? Why not? Really, the menu is Italian and Gulf Seafood inspired, but there are definitely still many dishes with inspiration drawn from Cajun cuisine and New Orleans.

How did your famous phrase “Bam!” come into such heavy use? It started when we were shooting eight shows a day for "The Essence of Emeril." During the lunch break, the crew would eat so much and start getting tired, so saying, “Bam!” came about as a way to wake everyone up.
Tell us a little about the Emeril Lagasse Foundation. Are there any plans to bring programs from the Emeril Lagasse Foundation to South Walton? The Emeril Lagasse Foundation is a 501c(3) public charity founded in 2002 by my wife Alden and I. The foundation is headquartered in New Orleans and has granted more than $8 million to children’s charities to support culinary, nutrition and arts programs. Our mission is to create opportunities to inspire, mentor and enable
